Readers will also get to fully know, including detailed pictures of his dishes, the gastronomic experience by the hand of the 3 Michelin-starred chef Quique Dacosta. His restaurant is in Dénia, only 15 minutes from Oliva Nova. ON Magazine is up on the latest fashion trends, and we also offer a sensitive approach towards art. The golf course Oliva Nova is one of the best courses in the Valencia Region. It offers every attraction of a top-level course: 18 holes, a varied natural landscape, more than 300 sunny days a year and… the sea only some metres away.

It was designed by Severiano Ballesteros, the best Spanish golfer of all times. The golf course Oliva Nova is a real wonder. The Golf Club is right in the middle of the itinerary and it has amazing panoramic views. Ballesteros made that design on purpose: each hole has its own attractiveness, every part of the golf course is on its right place and, thus, long distances become short.

If you are a beginner in this sport, there is a driving range next to the Club House, with experimented instructors who will help you quickly define your swing. Only a few metres away, the putting green area is perfect for those who want to learn how to putt the golf balls. You’ll refine your technique to stroke and finish each hole successfully. There is also an area to practice how to get out of sand bunkers. And, last but not least, there is a 5-hole course, par 3, to practice pitch and putt. The best professionals in this sector are among the staff and the golf course Oliva Nova is a vital destination to make the best use of your clubs. The managers of the golf course are continuously improving the facilities giving top-quality to the course. In 2018, the golf course Oliva Nova has improved the irrigation system, the buggies fleet has been entirely renewed and some parts of the course

Hay mucho más para elegir. El Resort ofrece más de 150 villas y apartamentos para alquilar. No hay detalle que quede al azar en el campo de golf. El club acoge múltiples torneos, finales de circuitos y gestiona la utilización del campo para socios, abonados y jugadores de iniciación, que encuentran las máximas facilidades. Una vez están listos para salir a recorrer los 18 hoyos, pasan a ser abonados con derecho a jugar con total libertad.

l Centro Ecuestre Oliva Nova (CEON) es un referente mundial de la hípica. El Mediterranean Equestrian Tour (MET), la competición que ha alcanzado su octava edición este, la sitúa en el epicentro universal de este deporte durante el otoño y la. La evolución y la consolidación del MET no admite debate. Los datos son extraordionarios: más de un millar de jinetes y amazonas de 40 nacionalidades, con la presencia de 3.200 caballos, han participado este año en Oliva Nova. La competición ha repartido nada menos que 1,4 millones de euros en premios. El año 2012 marcó el punto de

partida del MET en Oliva Nova. El inicio de un camino exitoso por la relevancia deportiva y social de una competición que, además, deja un relevante impacto económico en la zona. El evento reúne todos los requisitos para que acudan los mejores del mundo en la especialidad. Lcompetición Spring, finalizada el pasado mes de abril, incluyó distintas pruebas clasificatorias de la Federación Ecuestre Internacional, que tiene en el CEON una de sus mejores embajadas. El Longines World Ranking y otras pruebas clasificatorias para los Juegos Olímpicos son algunos de los reclamos irresistibles para los jinetes y amazonas de primera fila mundial, con todo lo que ello conlleva. he Centro Ecuestre Oliva Nova is a worldwide benchmark in the equestrianism. The competition of the Mediterranean Equestrian Tour (MET), reaching its 8th edition, has placed these facilities in the global epicentre of this sport during spring and autumn. The evolution and consolidation of the MET is beyond dispute. Data are impressive: over a thousand of riders from 40 different nationalities and more than 3.200 horses have taken part in the Spring MET competition this year in Oliva Nova. Prizes have been valued in no less than 1,4 million Euros. 2012 marked the beginning of the MET in Oliva Nova. The start of a successful path in terms of sport and social significance of a competition that is also leaving an important economic impact in the area. The event meets all the requirements so that the best riders in the world of show jumping want to come. The Spring competition ended last April and there were some FEI-approved classificatory events, as the facilities of the CEON are considered one of the best headquarters. The Longiness World Rankings and other classificatory events for the Olympic Games are some of the most irresistible lures for elite horsemen and horsewomen from all over the world, together with everything it stands for. Thus, it is explained the increasing number of people over the years. “The best sportsmen in the world of show jumping choose

La ubicación, junto al mar; el clima y las excelencias de las instalaciones, convierten al CEON en una referencia ineludible.

Hay motivos de sobra para no faltar a la cita. “Los jinetes y amazonas aprecian las instalaciones y las excelentes pistas que tenemos, donde cuentan con todo lo necesario para el mantenimiento de sus caballos”, añade Pölhs. Unos “200 camiones residencia” se movieron en Oliva Nova en abril pasado.

De la quinta de 1982, el año que España acogió el Mundial de Fútbol, Alberto Contador nació en Madrid y se crió en Pinto, un pueblo cercano a la capital. Fue su hermano mayor el que le contagió la afición por las dos ruedas. Otro hermano, Raúl, le ha enseñado a ser fuerte ante las adversidades. Tiene parálisis cerebral.

Being born in Madrid in 1982, the same year Spain hosted the Football World Cup, Alberto Contador grew up in Pinto, a town near the capital city. His older brother passed the twowheel passion on to him. Another of his brothers, Raul, taught him not to surrender against adversities. He has cerebral palsy.

El clima y la orografía, con llanos y montaña, le permitía devorar kilómetros por la zona. El campeón español organiza, por segundo año, la Marcha Alberto Contador en Oliva Nova. La próxima será el 29 de septiembre, con la presencia asegurada de más de 2.000 participantes. Oliva es tierra de ciclismo. Los ciclistas afrontarán 167 kilómetros con el tráfico totalmente cerrado durante el recorrido.

Con 15 años, Contador ya destacaba sobre la bicicleta en categoría juvenil. En 2002 ganó la Campeonato de Es-

here is a special bond between Alberto Contador and Oliva Nova. A solid connection. The Spanish cyclist, after having retired from professional competition last year, has a weakness for the resort. He chose the resort as the headquarter for his demanding training sessions long time ago, when he was still fully active as a professional cyclist. The climate and the layout of the land, where the plains meet the mountains, allowed him to get on the road for kilometres and kilometres around the area. The Spanish champion is organising, for the second consecutive year, the spectacular course Marcha Alberto Contador in Oliva Nova. The next edition is on the 29th September, with more than 2.000 participants attending. Oliva is the background for cyclists. The participants will be able to enjoy a route of 167kms that is completely closed off to traffic.

At the age of 15, Contador was already standing out on the bike as a junior. In 2002, he won the Spanish National Time


“Querer es poder”, fueron las primeras palabras del ciclista de Pinto nada más despertar de la anestesia. Un año después, Contador ganaba la etapa reina del Tour Down Under, en Australia. Despegó como un cohete en propulsión. En 2007 conquistó su primer Tour de Francia. Al siguiente, hizo doblete con un Giro y una Vuelta a España. Con 25 años, era el quinto en ganar las tres grandes vueltas. Y en 2009, su titánico duelo con Lance Armstrong en la ronda francesa, del que salió ganador el español, que sumaría su segundo Tour. De repente, otro revés: un positivo por clembuterol, argumentado por el ciclista en el consumo de carne contaminada. Tras suspensiones y apelaciones, en 2011 conquistó su segundo Giro. Otra vez el Alberto Contador que se sobreponía a todas las adversidades. En 2012 y 2014 repitió corona en la Vuelta a España. En la primera, su esfuerzo fue sobrehumano. Ganó la Vuelta tras aquel antológico ataque de Fuente Dé cuando ya nadie apostaba por él. Con Contador en el pelotón, nadie respiraba tranquilo. Todos sabían que, en cualquier momento, podía atacar. Resultaba admirable saber que iba a reventar cualquier etapa. Repitió triunfo en la Vuelta a España en 2014 y, en los últimos años, la falta de fortuna le impidió volver a coronar en París. Aún así, en 2016 regaló su último gran servicio al ciclismo de élite, al dejar en bandeja el triunfo a su compañero Nairo Quintana tras otra heroica escapada. Trial Championship U-23 and, only one year later, he was riding as a professional cyclist with the ONCE-Eroski team. A versatile cyclist started to emerge, he climbed well on inclined roads as easily as Perico Delgado and he stood up in time trial races. In 2004, Contador faced an unexpected race: after falling from the bike in the Vuelta a Asturias, he was diagnosed with a cavernoma, a brain bleeding which put his life at risk. The surgery was a success. A scar going from one side to the other over the top of his head and two titanium plates are with him since then.

“When there is a will, there is a way”. These were his first words right after waking up from the anaesthesia. One year later, the cyclist from Pinto won the most important stage of the Tour Down Under race in Australia. As a thruster, he took off. In 2007, he won his first Tour de France. He obtained both the Giro d’Italia and the Vuelta a España the following year. At the age of 25, he was the fifth cyclist in history winning the three most important races. And in 2009, after a titanic fight with Lance Armstrong in the French tour, Contador was the winner and went home with his second Tour. Suddenly, another setback: a positive test for clenbuterol, which was argued by him because of the consumption of contaminated meat. After a period of suspensions and appeals, in 2011 he won his second Giro d’Italia. He overcame hardship once again. In 2012 and 2014, he repeated his win in the Vuelta a España. The first victory is known because of the way he turned the race into his favour during Fuente Dé stage, when nobody took his side. He made a superhuman effort. Nobody kept calm when Contador was in the bunch. They all knew that, at an unguarded moment, he could attack. It was commendable to know that he was going to fluster any stage. He won again in the Vuelta a España 2014 and, the latest years, misfortune prevented him of being on the top in Paris. Even though, in 2016, he made his last demonstration to professional cycling with a heroic breakaway making easy to win for his colleague Nairo Quintana. His contribution to the history of cycling are two Tour de France, two Giro d’Italia and three Vueltas a España. No less no more.

“ME APASIONA SUPERAR LAS EXPECTATIVAS DE CADA HUÉSPED” Víctor Rubio es el Guest Relation Manager (GRM) de Oliva Nova Beach & Golf Hotel. Su función es dar respuesta a todas las demandas de los huéspedes, que los hay de todos los perfiles (desde el vacacional familiar hasta el equipo deportivo). Con una experiencia de más de 20 años en el sector y una empatía innata, el jefe de recepción disfruta con su trabajo de anfitrión. Más bien, le apasiona. Superar las expectativas de cada huésped es su labor de cada día. 22

—Cada huésped tiene sus preferencias. Imagino que personalizar con cada uno es una virtud obligada para un GRM. Totalmente. Es una exigencia prioritaria personalizar con cada uno y crearse un histórico de peticiones y preferencias de nuestros huéspedes. Eso nos ayuda a adelantarnos a cualquier preferencia o petición. —El GRM, ¿es la función de mayor responsabilidad del hotel? Si no la de mayor responsabilidad, sí es la más visible. Es el primer recurso al que acude el huésped y el departamento obligado a dar siempre una respuesta. Representamos la figura del “solucionador” y, aunque no tenga las manos ni las herramientas para darle solución a todo, soy el primero al que acuden y del que esperan una solución. Mi función es dirigir y coordinar al resto de implicados para que la respuesta final sea óptima —A ver si me puede concretar. ¿Cuáles son las funciones de un GRM? Entre mis funciones principales están controlar los estándares de calidad en los distintos departamentos del hotel, así como dar respuesta a las principales demandas del cliente. Lo resumiría en control de calidad y respuesta rápida. Para ello afortunadamente cuento con un equipo de profesionales muy preparados e implicados en todo esto. —¿Es fácil personalizar el trato con cada tipo de huésped? Es tan complicado como agradable. Cada persona es un mundo. Es una labor de servicio, en la que son muy importantes las sensaciones. Tenemos muchos sectores de huésped: el familiar vacacional, los equipos deportivos y los MICE (el turismo de reuniones, incentivos, bodas, congresos y exposiciones), y cada uno es distinto. La dificultad radica en la capacidad de adaptarse y dar una respuesta acorde a cada uno. —El GRM es una función de mucha responsabilidad. ¿Es el filtro más exigente de un hotel? Es el primero y el último y, por lo tanto, el que está obligado a dar una respuesta. Pero es un eslabón de una cadena que ha de estar muy bien coordinada. En Oliva Nova el equipo es perfecto. La selección y formación de personal estos últimos años nos ha llevado a tener en el equipo humano nuestro punto fuerte y así nos lo hacen saber nuestros huéspedes. —¿Qué perfil debe tener un miembro del equipo del GRM de Oliva Nova? ¿Qué cualidades debe tener el personal de recepción?

—Each guest has his own requirement. I guess it is a mandatory virtue for a GRM to establish a personal connection with them. Of course, it is. Establishing a personal connection with every guest is the main demand, as it is also creating a historical record of their demands and references. This helps up to foresee their need and go a step ahead if any demand occurs. —Is being the GRM the role of greatest responsibility in the hotel? Maybe it’s not that I have a greater responsibility, but it is indeed the most visible role. The GRM is the first person to be contacted by the guest and the department is always obliged to respond. We play the role of the “trouble-shooter” and, although I have no hands nor tools to solve every problem, they first come to me and they expect me to find an answer. My main role is to lead and coordinate the departments involved so as to offer the best solution.

—Let’s see if you can be a bit more specific. What are the functions of a GRM? Among the main functions assigned to me is to control the quality standards in the different departments of the hotel, as well as meeting the demands of our guests. I would sum it up as quality control and quick response. Luckily, I have the best professional team working with me, they are skilled and well-trained. —Is it easy to personalise the treatment to every guest? It is both difficult and pleasant at the same time. Every person is unique. It’s a service work and feelings become very important. There are many kinds of guest: families who come on holidays, professional teams and MICE (meetings, incentives, conferencing and exhibitions) and none of them are the same. The difficulty here is that you need to adapt and give an appropriate response to everyone. —The GRM is thus a great responsibility role. Should we consider it as the most demanding filter in a hotel? It is the first and the last contact. Thus, the GRM is obliged to react. However, it is a link in the chain and this chain needs to be highly coordinated. The team is perfect in Oliva Nova. In recent years, the staff has been carefully selected and trained. Our main strength relies on the people and, thus, guests let us know about it. —Let’s talk about the profile of a member of the GRM team. What qualities does the front office staff need to have? Interacting with people is the most important, the social ability of empathizing with every guest. They need to feel passion for their job. Por encima de todo, el trato con la gente, esa habilidad social para empatizar con cada huésped. Hay que tener pasión por el servicio. El hacer de cada petición un reto y una preocupación propia es la actitud obligada para mantener una mejora continua de nuestro servicio. —A veces, ¿la recepción es la ‘conseguidora’ de cosas imposibles? Sí, es así. La función principal de nuestro equipo humano es superar las expectativas del huésped y para ello tenemos que dar respuesta a innumerables peticiones. Conseguirlo o no es la diferencia entre el éxito y el fracaso. Somos la versión actualizada y adaptada al avance del turismo en general, de la figura de aquel conserje que conseguía entradas para el fútbol o cualquier otro espectáculo cuando era imposible, o la reserva de aquel restaurante con una lista de espera interminable. Todo esto con las nuevas exigencias que se nos plantean y el seguimiento muy cuidado de toda la estancia del huésped en nuestro hotel, desde que llegan hasta que nos dejan, en cualquiera de sus detalles.

—Can the reception staff be considered as the “troubleshooter” of impossible things? Yes, it can. The main role of our staff is to surpass the expectations of every guest and, thus, we need to respond to their demands countless times. Going beyond or not is the difference between success and failure. We are the updated version of the concierge who gets the tickets for football match or any other show when it seems impossible or makes a booking in a restaurant with an endless waiting list; but we are adapted according to the progress of the tourism sector. We do so with the new requirements raised and a careful follow up of them during the stay of our guest in the hotel, from the moment the step into the hotel to the moment they go home. —Summer and winter. They are two completely different settings in your department, aren’t they? Yes, indeed. The type of guest is not the same. It is usually full-house as an average occupancy during summer and guests are families who come on holiday; they need a continuous follow up. Otherwise, in winter, average occupancy is different but then quality is focused in other tourism sectors. Requests change in the same way as the type of guest.


Sí, porque cambia la tipología del huésped. En verano hay ocupaciones full house, de entorno familiar, que requiere mucho seguimiento. En invierno la ocupación es diferente, pero mantenemos la calidad más centrada en otros sectores. En la medida en la que el perfil de huésped varía, las exigencias cambian. —Oliva Nova es una referencia en hospedar a equipos deportivos, muchos de ellos de primera fila. Lo somos. Vienen equipos punteros de ciclismo, de rugby, golf, eventos hípicos de primer nivel y, por supuesto, de fútbol. Algunos vienen a prepararse antes de grandes torneos y nos eligen porque les damos las respuestas que buscan a un servicio tan integral. La exigencia de los deportistas de élite requiere del mejor de los servicios, además de instalaciones y recursos acordes. —¿Qué es lo que más le gusta de su trabajo? La respuesta final del huésped. Lo más agradable de este trabajo es que todo va destinado al servicio, a algo intangible que convertimos en tangible. Y lo mejor es encontrar esa respuesta al final de unas vacaciones, el feedback con el huésped, que hayamos superado sus expectativas y sentirse parte de ello. —¿Ha cambiado mucho el trabajo del GRM de ahora al de hace 20 o 30 años? Muchísimo, en cantidad y en calidad. Hace 20 años ni siquiera existía el anglicismo (Guest Relation Manager). Ahora hay un mayor estándar de calidad, todo está más centralizado. La exigencia del cargo ha subido en la medida en la que ha subido la exigencia del público. —Cuéntenos alguna anécdota. Seguro que tiene una colección. Sí que son muchas… desde tener que arreglar el vestido de la novia la misma mañana de la ceremonia, hasta ser el “cómplice encubierto” para una pedida de mano. Qué responsabilidad, ¿verdad? En el capítulo de las anécdotas has de entender que la discreción es una máxima inexcusable en mi trabajo, pero me quedo con las de los niños y como disfrutan con su amigo Oli (nuestra mascota). Estos son los que tienen las mejores historias que contar… —¿Cuál ha sido su formación y experiencia? Mi primera experiencia en un hotel fue en Inglaterra, en 1997; después pasé a la cadena Sol Meliá, donde estuve 11 años en distintos destinos con diferentes responsabilidades. Después pase por otras dos compañías hasta llegar a esta que es mi casa desde hace 8 años. Así que aparte de haber sido formado, tengo mi formación propia gracias a haber trabajado en más de una docena de hoteles diferentes aprendiendo de los mejores profesionales y en destinos tan diversos. Toda esa experiencia da un plus. —¿Se siente como un vendedor de sueños? Yo lo llamaría un conseguidor. El equipo de recepción es un grupo de conseguidores. Somos los anfitriones para todo aquel que quiera disfrutar de su descanso, sus vacaciones en nuestra casa. Nuestro reto diario es hacer de un viaje una experiencia que recuerden.

—Verano e invierno. Son dos mundos totalmente diferentes en su departamento, ¿no?

—What do you like the most about your job? The final feedback of the guest. The most pleasant aspect of this kind of job is that you are always working to offer a good service, we turn something intangible into something palpable. The best sensation is to find a positive feedback with the guest at the end of their holidays, having surpassed their expectation and feeling part of it. —Is it different the job as GRM nowadays to the job as GRM 20 or 30 years ago? Of course, it is! It is completely different in quantity and quality. The term Guest Relation Manager was not even used in Spanish 20 years ago. There is a higher quality standard, it is now a more centralised role. The demand of this job has grown as well as the requirements of the people grow. —Tell us an anecdote, please. I’m sure you have a collection of them. There are many… from repairing a bride’s dress the same day of the ceremony, to be the secret “partner in crime” of an engagement. A huge responsibility, isn’t it? However, discretion is mandatory in my job. I guess you understand my position… In terms of anecdotes, I choose every experience with children and how they enjoy playing with our mascot Oli. I’m sure they are the guests who have the best memories to tell… —What about you career and your experience? My first working experience in a hotel was in England, in 1997; then I changed to the hotel chain Sol Meliá and I worked there for 11 years, changing destinations and assuming different responsibilities during that period. Then, I worked for two more companies before arriving to this hotel, my home for 8 years now. Apart from having studies and having been trained, I also have my own knowledge thanks to my experience in more than twelve hotels working together with the best staff and working in many different destinations. Experience is a plus! —Do you feel like a dream catcher? I would define myself as a “trouble-shooter”. In fact, the front desk staff is a group of “trouble-shooters”. We are welcoming all those who come seeking to relax and enjoy their holidays at our place. Our daily challenge is to turn a simple trip into an unforgettable experience.

Alejandra Prat siente una debilidad especial por el mar. Oliva Nova es uno de los lugares preferidos por la presentadora de televisión para pasar sus vacaciones. La hija del inolvidable Joaquín Prat piensa repetir estancia con su marido, Juan Manuel Alcaraz, y sus hijos. Con una figura envidiable, se mantiene en forma corriendo y… bailando.

Alejandra Prat is a particular fan of the sea. The TV presenter has put Oliva Nova as one of her favourite places to spend her holidays. The daughter of the wellknown Joaquín Prat is eager to come back again with her husband, Juan Manuel Alcaraz, and her children. With an enviable figure, she keeps fit by going for a run and… dancing.

—What do you need to get away from routine?

¡Muy poco! Mi familia, hacer deporte y una copa de vino relajada.

Not much! My family, sport and a relaxing glass of wine.

—¿Cuál es el secreto de su figura?

¡Uf ! Mucho esfuerzo... me cuido cada vez más. Según te haces mayor tomas conciencia de lo importante que es dar a tu cuerpo lo que necesita. Suelo comer sano, aunque hago excepciones de vez en cuando. Además, bailo 3 días a la semana 1 hora y media y 3 días corro entre 8 y 12km.

Phew! A great effort… I look after myself more and more. As you get older, you become aware of the importance of giving your body whatever it needs. I usually eat healthy, although I also make an exception every once in a while. Three days a week, I go dancing for 1 hour and a half and I also go for an 8-12km run, another three days.

—Con tres hijos, uno muy pequeño (Amaro), ¿cuál es el sitio perfecto para ir de vacaciones?

—With three children and one of them being a baby (Amaro), which is the perfect place to go on holiday?

Los niños no paraban de darnos las gracias por traerles después de este viaje. ¡¡¡El año que viene repetimos!!! —¿Cómo ha sido tu experiencia en Oliva Nova? Ya te digo que maravillosa. La piscina, la playa, el spa, el gimnasio... ¡¡¡una pasada!!!! Hemos sido capaces de desconectar mucho en muy pocos días. —¿Qué opinas de la oferta gastronómica? ¡Fantástica! Súper desayuno para empezar el día a tope, comida al borde de la piscina ( tengo que decir que el jamón estaba impresionante) y cena muy buena. Insisto que el servicio y todo el equipo que atiende fue inmejorable. También cenamos en Aura y nos encantó. ¡Una pasada! —Ser una cara conocida, ¿qué te supone en tu vida diaria? Al fin y al cabo es algo a lo que estamos acostumbrados desde pequeños. Yo lo vivo como algo natural, no me siento diferente. —El mar, la montaña, el frío, el calor… ¿Cuál es el estado ideal para estar de vacaciones? Playa y sol. Oliva Nova is one of my favourites. You find everything you need, and they find everything they need too. Leisure for the whole family is guaranteed. After our weekend trip, my children are continually being grateful for having been to Oliva Nova on holiday. We’ll come back next year! —How has your experience in Oliva Nova been? Absolutely amazing. The swimming pool, the beach, the spa and the gym… it’s just great!! We have been able to forget about routine in only a few days. —What do you think about the gastronomic offer? It’s fantastic! A super breakfast buffet to kick start your day, having lunch by the pool (I must admit that the Iberian ham was delicious) and dinner was really good too. Both, service and staff, were excellent! We also tried the restaurant Aura for dinner and we fell in love with it! Great! —You are a well-known face… how does it affect to you daily life? In the end, we are used to it since we were children. It seems only natural to me, I don’t feel different. —Sea or mountain, warm or cold… Which is the perfect condition to be on holiday? Beach and sun. I love skiing but, if I ever get lost, look for me near the sea and you’ll find me for sure.

Los programas van dirigidos a niños desde 1 hasta los 18 años. Oliva Nova es un resort turístico referente en la animación infantil. Es pionero en la costa mediterránea en programas de ocio familiar. Más de 30.000 niños pasan anualmente por los clubes, que se caracterizan por aunar diversión y deporte y son muy apreciados por el público familiar con una alta tasa de fidelización entre los visitantes.

En este sentido, y con la mirada puesta en ofrecer una propuesta de valor que suponga un plus en los tradicionales clubes infantiles, “hemos querido ofrecer el salto de innovación y abandonar la mirada tradicional de los programas de animación para ofrecer a los niños una herramienta que les ayude también en vacaciones a desarrollar su talento, en definitiva, enriquecer la diversión con el fomento de la creatividad”, ha señalado Luis Borho, Director General del Resort.

El objetivo de Kids in Action: Fun Learning Revolution, tal y como se ha bautizado el programa, es promover la conducta creativa a través de actividades enriquecedoras, donde los niños puedan aprender a través de actividades, música, deporte o lectura. Unos talleres encaminados a potenciar el talento y la expresión creativa, siempre con la transmisión de valores transversales como el respeto por el

l talent show culinario más popular de la televisión eligió Oliva Nova para una de sus famosas pruebas de exterior en un programa emitido el pasado 18 de junio. Un escenario que cautivó a los aspirantes y a la audiencia del programa. ¿Por qué la organización eligió el Centro Ecuestre de Oliva Nova? Por las excelencias del paisaje y por coincidir con la presencia de más de 50 jinetes y amazonas, que en ese momento se encontraban en pleno Mediterranean Equestrian Tour, el concurso de saltos de hípica más importante del mundo. Sin duda, un exigente grupo de comensales. Entre ellos, la medallista española Beatriz Ferrer-Salat, quien además es vegana y obligó a que los aspirantes tuvieran que improvisar un plato especial para ella, una dificultad añadida a la prueba.

he most popular cooking talent show went for Oliva Nova as the setting for the outdoors challenge in the programme broadcasted last 18th June. Both the contestants and the audience were enthralled by the setting. Why did the organization choose the Centro Ecuestre Oliva Nova? Not only because of the beauty of the setting, but also because of the presence of more than 50 riders who were competing at that moment in the Mediterranean Equestrian Tour, one of the most important show jumping contests in the world. It was, without a doubt, a demanding group of guests. Among them, the Olympic medal winner Beatriz FerrerSalat added difficulty to the challenge: she is a vegan and she forced the contestants to prepare a special meal for her.

Antes de salir de las cocinas y poner rumbo a Oliva Nova en la prueba anterior, el coco había sido el ingrediente protagonista. Los jueces Pepe Rodríguez y Jordi Cruz se ataviaron con la chaquetilla para participar en el reto, del que salió triunfador, el único participante valenciano de esta edición. Toni fue elegido capitán para elegir los platos para su equipo en la prueba de exterior, en Oliva Nova.

Before leaving the kitchen towards Oliva Nova, the previous challenge had the coconut as the main ingredient. The judges Pepe Rodríguez and Jordi Cruz put their chef coats on to take part in this first challenge of the programme too and the only contestant from Valencia taking part in this edition was the winner. Toni was appointed leader and he had to choose the dishes his team had to cook during the outdoors challenge, in Oliva Nova.

La imagen de los magníficos y bellos caballos en la playa cerró una exitosa entrega del programa que dejó huella en los más de 2.5 millones de espectadores que se reunieron frente a la pantalla para ver el MasterChef, el talent culinario producido por RTVE en colaboración con Shine Iberia.

This successful episode of the programme ended with an overview of the strong beautiful horses riding on the beach. Over 2,5 million viewers gathered in front of the TV to watch this episode of MasterChef, the cooking talent show produced by RTVE in cooperation with Shine Iberia.

El chef Manuel Alonso, con una estrella michelín, fue el encargado de crear un menú de 4 platos: coliflor con pulpo seco, quisquillas y albedo de cidro, pescadilla con hervido valenciano, arroz con costra de presa ibérica y un postre con hibisco, yogur y nieve de rosas. Toni, capitán del equipo azul sorprendentemente no eligió el arroz para su equipo y eso que como buen valenciano es experto en cocinarlo. Y le pasó factura, pues fue este el plato que más triunfó entre los jinetes.

The chef Manuel Alonso, awarded with a Michelin star, was in charge of creating a four-course menu: cauliflower with dried octopus, shrimps and citron albedo; white fish with a vegetable stew typical from Valencia; rice with Iberian pork covered with beaten egg to create a crust on the top; and a dessert with hibiscus, yogurt and rose-scented snowflakes. Being from Valencia and also an expert in cooking rice, Toni, the leader of the blue team, surprisingly rejected to cook the rice dish. However, he took a bad decision and he had to render an account for it, as it was the most successful dish among the riders.

Nuestra cocina hoy y aquí es la suma de muchas circunstancias. Esta temporada en especial viene del embrión “DNA La búsqueda” (temporada 2017) que es ya el alegato y brújula del camino que hemos decidido hacer y andar. El origen. Un grito de reafirmación y creencia en nosotros mismos, nuestros productos y nuestro lugar. Un territorio que es mucho más importante de lo que podamos llegar a crear o hayamos creado. Al fin y al cabo, este restaurante, mi equipo y yo, somos una circunstancia en el tiempo. Dénia me ha aportado todo para construir el cocinero y la persona que soy, el destino escrito en ningún lugar del que me alegra no haber tenido elección. El oficio me sedujo antes que el producto y este antes que el pueblo. Sin embargo, el pueblo me hizo a mí.

El origen es también producto. Un argumento que siempre ha estado presente en nuestro trabajo y con el que hemos sido cómplices. Es otra brújula que no permite que nos extraviemos de este lugar. He conocido este territorio por sus productos, un mapa mental que me ha conducido al final a los pueblos, a sus gentes. Una manera intimista de conocer mi lugar, este lugar. Aprender de todo en conjunto, aprender que la materia prima te responde como la tratas. Te responde con romanticismo si la tratas con cariño, te responde con calidad si la tratas con conocimiento. Por esto

Our cuisine here and now is the sum of many circumstances. Particularly this season emerged from the seed of “DNA The Search” (2017 season) and it is now the basis and the compass pointing out the road to tread: Origin. A cry of reaffirmation and belief in ourselves, in our produce and in the place where we are. A land that is much more important than what we could ever create or have created. All in all, this restaurant, my team and I are just an occurrence in time. Dénia has given me everything needed to build the cook and the person I am; my unwritten destiny in which I am glad I had no choice. The profession seduced me before the produce did, and the produce before the town. However, it is the people who have made me become who I am.

Origin is also produce. It is the ever-present story line in our work and which has been our ally. It is another compass that keeps us here. I know this land because of its produce, a mental map that eventually led me to its villages, to its people. An intimate way of knowing my place, this place. Learning about everything together, learning that the produce responds the same way you treat it. It reacts affectionately if you treat it tenderly, it responds with quality if you treat it with understanding. That is why I believe in the innocence of the produce. It is because of

creo en la inocencia del producto. Y desde su inocencia y su envergadura gastronómica puedo construir esta historia que se expresa elaboración a elaboración, plato a plato.

La actitud de evolucionar es el detonante del trabajo de cada día. Trabajar con la intención de crear un bocado seductor y nuevo en algún parámetro. Creo en la evolución en todos los sentidos: en la evolución del pensamiento, de la cocina, de las artes, de la tecnología, de la ciencia. La creación es parte de la evolución. Disfruto y expreso con libertad lo que siento, por ser el reflejo de lo que hago y he hecho. Es el momento de mostrarlo.

Y también creo firmemente en el origen de las cosas. El legado de la historia y cómo ésta nos ha marcado y marca nuestra evolución. Somos el origen y al mismo tiempo su evolución. En nuestra cocina actual hay productos antiguos y elaboraciones ancestrales que conviven con la modernidad y la fantasía, nuestro lenguaje y estilo. Tenemos elaboraciones como los salazones o los encurtidos que ya existían. Les hemos dado nuestra mirada, un nuevo código y un sentimiento personal. Hemos investigado y creado sobre lo existente. Algo de tanta carga histórica y antropológica, apegada al territorio, nos seduce muchísimo. Hemos logrado resultados distintos. Pero reconocemos que el detonante es ancestral y además inspirador. Esta temporada te propongo una cocina cargada de fantasía sobria, meditada y estudiada. De productos excepcionales que representan nuestra región sabiendo además que aportan autenticidad a nuestra obra. Una cocina que busca a veces en la historia, pero sobretodo en los sueños, y que su intención evolutiva es finalmente conmoverte.

The capacity to evolve is what sparks our daily work. Working to create bites that are new and seductive in some way. I believe in every kind of evolution: evolution of thought, of cooking, of art, of technology, of science. Creation is part of evolution. I enjoy and freely express my feelings, a reflection of what I do and have done. It is time to show it. I firmly believe in the origin of things too. The legacy of history and how history has left a mark on us and marks our evolution. We are origin and its evolution, all at once. Our current cuisine includes ancient produce and ancestral elaborations that live together with modernity and fantasy, our language and style. There are preparations such as salting or pickling which already existed. We have given them our own approach, a new code and a personal feeling. We have researched and created over the existing techniques. Such an important historical and anthropological burden, connected to the territory, is attractive to us. We have achieved many different results. However, we reckon that the flashpoint is old as time apart from being inspiring. This season, I offer you a cuisine full of fantasy, both carefully considered and planned. We use the exceptional produce that represents our region, certainly giving authenticity to our work. A cuisine that sometimes stems not only from the past but also coming from dreams, and whose evolutionary aim is, in the end, that you overcome with emotion.

s una de las imágenes imprescindibles que todo turista enseña orgulloso cuando visita Valencia. El Mercado Central (Mercat Central para los valencianos), joya arquitectónica del modernismo y excelencia del producto fresco, está entre los lugares más seductores de la ciudad. Es el tándem perfecto entre arte y gastronomía. Veinte mil personas al día lo visitan . Exceptuando los viernes y los sábados, día más frecuentado por los valencianos para hacer sus compras de cara al fin de semana, el resto de días los turistas son mayoría. Desde la diseñadora Miuccia Prada, que celebró en su interior una gran fiesta privada con Demi Moore y Ashton Kutcher, hasta el multimillonario y expropietario del Mundial de Fórmula 1, Bernie Ecclestone, han quedado prendados por su belleza. Considerado como una de las catedrales comerciales del mundo, el Mercado Central de Valencia cumple 102 años sin haber perdido la función para la que fue construido: vender fruta, verdura, carne, pescado y otros productos de alimentación de primera calidad bajo una una espectacular estructura de hierro forjado, cerámica, madera y vidrieras. Con sus 8.200 metros2 de superficie, dispone de más de 1.000 puestos. Es el mayor centro de Europa dedicado a la venta de productos frescos. Y, quizá, “el mercado más auténtico y bonito del mundo” (según el chef Ricard Camarena). Efectivamente, sorprenden sus grandes dimensiones. Su gran superficie se divide en dos pabellones; en el principal, coronado por la gran cúpula central de 30 metros de altura, destacan los puestos de frutas y verduras, donde los valiosos productos de la huerta valenciana son estrellas. En la parte oeste, un pabellón de 1.400 metros cuadrados con los puestos de pescado.

La visita al Mercado Central es toda una experiencia sensorial. Un juego de aromas y colores que atrapan al comprador. Rojos intensos, verdes, amarillos, naranjas... Un homenaje diario a la policromía.

The Mercado Central (Mercat Central for the Valencian speaking population) is a modernist architectural jewel. Considered to be the excellence of the fresh products, it is one of the most attractive spots of the city. The perfect tandem between art and gastronomy. Twenty thousand people visit it every day. Except on Friday and Saturday, when people from Valencia who do the shopping for the weekends, tourists are in the majority the other days. From the designer Miuccia Prado, who celebrated a party in it with Demy Moore and Ashton Kutcher, to Bernie Ecclestone, the multimillionaire and ex-owner of the Formula 1 World Championship, have fallen in love with it. Considered as one of the most important trading cathedrals in the world, the Mercado Central de Valencia still preserves the same functionality it was created for, 102 years ago: selling fresh fruit, meat, fish and upmarket groceries, under a stunning wrought iron structure, ceramics, wood and stained glass. There are more than 1.000 stalls distributed around an area of more than 8.200 square metres. It is the largest centre in Europe dedicated to the sale of fresh produce. Perhaps “the most authentic and the most beautiful in the world” according to the chef Ricard Camarena.

Indeed, the building surprises for its dimensions. A large area divided into two differentiated spaces. The main building, with a dome on the top at about 30 metres in height, hosts the fruit and vegetables stalls, where the star products are the products from the Valencian lands. On the west side, a building which covers 1.400 square metres houses the fish market. The visit to the Mercado Central is a sensory experience. A gameplay of aromas and colours that traps the purchaser. Intense red, different tonalities of green, yellow, orange… A daily polychromatic homage.


REPORTAJE OLIVA NOVA Levantado en pleno centro histórico de la ciudad, en la plaza Ciudad de Brujas, el Mercado Central es un muestrario del potencial artístico y agrícola de la Valencia emergente de principios del siglo xx. Su ubicación, en el epicentro comercial de la Valencia antigua, no es casualidad. Se levantó frente a la Lonja de la Seda, obra maestra del gótico civil valenciano y Patrimonio de la Humanidad. Construida a finales del siglo xv, la Lonja es el emblema del Siglo de Oro Valenciano, un símbolo del poder de la ciudad para atraer a los comerciantes. Enfrente, en perfecta armonía arquitectónica y cultural, se presenta majestuoso el Mercado Central, como si de una catedral del comercio se tratara. La construcción combina todos sus elementos (metal, las cúpulas, el vidrio, las columnas) con el recuerdo gótico del modernismo. Su enclave está históricamente argumentado: sobre el mismo terreno, se celebraban los mercados ambulantes en la época musulmana.

Con una superficie de 8.162 metros cuadrados, el mercado resultó en su momento un proyecto muy costoso. Se inauguró en 1921, pero la decisión de levantarlo se había tomado 47 años, en 1881. Hoy es el mercado de producto fresco más grande de Europa, con ventaja sobre otras lonjas de referencia como la Boquería. Mientras el mercado de Barcelona ha sido prácticamente engullido por el turismo, el de Valencia ha logrado mantener, de momento, el equilibrio de convivencia entre visitantes y residentes. Su gran superficie y sus pasillos anchos, permiten una mayor movilidad de gente entre sus puestos, un muestrario permanente de los mejores productos mediterráneos. Los clientes habituales recomiendan una visita pausada para disfrutar de sus productos, comparar precios y disfrutar de los sentidos.

Standing in the historic heart of the city, in a square named Ciudad de Brujas, the Mercado Central is an example of the artistic and agricultural potential in the emerging Valencia at the beginning of the 20th century. It is currently situated in what used to be the trading hub ever since the initial expansion of Valencia. The emplacement did not come out by accident, it was settled right in front of Lonja de la Seda, a gothic master piece and currently listed as a UNESCO World Heritage Site. Built in late 15th century, this building is a symbol of the Valencian Golden Age and powered the city to attract traders.

Right in front of it and perfectly matching in architectural and cultural style, magnificently stands the Mercado Central. As if it was a trading cathedral, the building combines every element (iron, domes, glass, columns) with the gothic remembrance of the modernism. Historically, its location is well-argued: the same ground was used as the regular location for a travelling street market in the Muslim period. Covering a surface of 8.162 square metres, this market was a really expensive project at that time. It was inaugurated in 1921 but the decision of its construction was made 47 years before, in 1881. Nowadays, it is the biggest market of fresh product in Europe, standing out among other markets such as la Boquería in Barcelona. While the market in Barcelona has been taken by tourists, Valencia is managing to maintain the tricky balance between tourists and local people. Its large surface and wide corridors allow people to move easily around the stalls which are a permanent showcase of the best Mediterranean products. The regular customers recommend a leisurely visit to have a look to its products, compare prices and enjoy with your five senses.

utodidacta, alejado de clichés artísticos, Andreu Alfaro (Valencia, 1929-2012) es uno de los grandes artistas de la escultura en espacios públicos de la segunda mitad del siglo xx. Todo un referente de la geometría de los espacios, un renovador de la posguerra española que devolvió la modernidad al arte en España tras un largo periodo de ausencia de las estéticas contemporáneas en nuestro país.

La rebeldía de Alfaro nació en el papel, como un delicado dibujante, y esos trazos al carboncillo pasaron después a ocupar el espacio en forma de esculturas. Escapó del destino que tenía marcado en la industria cárnica de su padre. Presumió, precisamente, de haber tenido en el matadero su

elf-taught and far away from the artistic clichés, Andreu Alfaro (Valencia, 1929-2012) is one of the biggest artist devoted to sculpture in public spaces in the second half of the 20th century. A benchmark of spaces’ geometry, a revolutionary man from the Spanish post-war era who reincorporated modernity to the art in Spain after a long period of absence of the contemporary aesthetics in our country. Alfaro’s rebellion was shaped from the paper, as a meticulous drawer; then, these charcoal lines were dimensioned and turned into sculptures. He escaped from his determined fate in his father’s meat industry. However, he boasted of having had the best education at the

mejor formación, donde aprendió a pintar anatomía. Pasó por la publicidad y el diseño gráfico y eso, precisamente, le permitió aplicar la racionalidad a la creatividad y alejarse de los excesos del barroco que nutrían su entorno. Un viaje a la Exposición Universal de Bruselas en 1958 –donde quedó fascinado por el Atomium–, despertó su sensibilidad por la libertad de crear. “Aquello me enseñó a opinar por mi cuenta. Me trastornó”, confesó. Alfaro elaboró a partir de ese momento su propio lenguaje, identificable desde sus primeras obras escultóricas.

Fanático de Pablo Picasso (“es un señor que en un trozo de cualquier cosa veía un señor o un niño, o lo que sea… No ha habido nadie igual”), la obra de Alfaro está influida por la abstracción de Kandinsky, las enseñanzas de la Bauhaus y el Constructivismo ruso, por encima de todo. No así del minimalismo, porque Alfaro siempre ofrecía una respuesta más compleja en todas sus obras: “Mi vida es lo que se refleja en mis esculturas”, llegó a decir.

Años 60, Alfaro comienza a crear esculturas con hojalata, hilo de hierro y alambre de cobre. El “Torsimany de metalls” (el intérprete de metales, como se autodefinía) empezó a hacer “lo que me daba la gana”, pero siempre con un sentido comunicativo. Utilizó el hierro y el acero para sus generatrices, estructuras que consistían en series de múltiples varillas o tubos de acero inoxidable o de aluminio, desplegadas como en complejos abanicos de tres dimensiones. Obras que son visibles en numerosas ciudades de España (Valencia, Alicante, Barcelona, Girona o Burgos, por citar sólo algunos de

He made incursions in the world of advertisement and graphic design and, thus, he learnt how to apply rationality to creativity and how to move away from the exaggerated baroque style prevailing in his circles. A trip to the EXPO 58 Brussels World Fair, where he was fascinated by the Atomium, sparked his sensitivity for the freedom to create. “I was taught to think on my own. I lost my head”, he admitted. Alfaro developed his own language, clearly recognisable from his first sculptures.

Crazy about Pablo Picasso (“he is a master who saw a man, a child or whatever in a piece of any material… There has been no equal”), Alfaro’s artwork is influenced by Kandinsky’s abstraction, the doctrines of the Bauhaus and Russian constructivism, above all. Nothing to do with minimalism, as Alfaro’s always offered a more complex answer in all their words: “My life is what my sculptures reflect”, he said.

During the 60s, Alfaro started making sculptures with tin, metal wire and copper wire. The “Torsimany de metalls” (he defined himself as the interpreter of metals) started to do “whatever he pleased”, but always in a communicative sense. He used iron and steel to build the generatrix of the sculptures, structures consisting on multiple stainless-steel rods or aluminium bars which spread out forming a complex 3D fan. These artworks are displayed around many cities in Spain (Valencia, Alicante, Barcelona, Girona or Burgos, just for mentioning the most

Aunque sus grandes obras públicas pueden visitarse por multitud de espacios y ciudades, incluyendo la propia Estación de Renfe, la avenida de Aragón o los Jardines de Viveros, todas ellas en Valencia, una parte importante de su obra puede visitarse en el que fue su propio estudio en Godella, donde su hijo, el diseñador Alfaro Hofmann, ha creado un museo singular, el Espai Alfaro (www.marchvalencia.com).

Even though his great artworks can be viewed at thousands of public spaces and cities, such as the sculptures in the train station, Av. Aragón or Jardines del Real in Valencia; a great part of his artwork can be visited at his studio in Godella where his son, the designer Alfaro Hoffman, has created a unique museum: Espai Alfaro (www.marchvalencia.com).

A propósito del sentido público de sus obras, a Alfaro –uno de los grandes propulsores de la creación del Instituto Valenciano de Arte Moderno (IVAM)– se le deben también otras muy importantes contribuciones que nada tienen que ver con las generatrices y sus derivados, como se hace evidente, por ejemplo, en obras como la Puerta de la Ilustración en Madrid, u Onades, las olas del puerto de Barcelona, en las esculturas que hizo para el edificio del Banco de Santander en Nueva York, en la imponente Columna Olímpica de Barcelona, o en sus Tres Gracias, a manera de tres sensuales columnas salomónicas de mármol, en Valencia. El mármol, la madera e incluso la piedra (el material que refleja la eternidad en la cultura egipcia) los adoptaría más tarde como materiales (“uno debe expresarse como artista utilizando el material adecuado para aquello que deba expresar”). Hay también un Alfaro de composiciones modulares de aspecto abstracto. El escultor valenciano dio un giro a su producción, introduciendo la figuración, a partir de reflexiones sobre grandes motivos culturales que le inspiraban: el cuerpo humano, el barroco, la figura de Goethe, el jazz, el tiempo y la memoria, los kuroi...

Regarding the public sense of his artworks, Alfaro -one of the great promoters of the creation of the Insititut Valencià d’Art Modern (IVAM)- should be given many other important contributions. They have nothing to do with his generatrixes and their derivatives, as it becomes evident in works such as the Puerta de la Ilustración (“Gate of Enlightenment”) in Madrid or Onades (“Waves”), representing the waves of the marina in Barcelona; also in the sculptures made for the Banco Santander building in New York, in the impressive Olympic Column in Barcelona or the alluring sculpture of three Solomonic marbled columns known as The Three Graces, in Valencia. Marble, wood and stone (the later considered as the material which reflects eternity in the Egyptian culture) were taken at a later stage (“an artist must express himself by using the appropriate material to express whatever he wants to express”). There is also an Alfaro in terms of abstract modular compositions. The Valencian sculptor took a turn in his production, as he introduced figuration by means of his thoughts about great cultural grounds: human body, Baroque period, the leading figure of Goethe, jazz music, time and memory, the kouroi sculptures…

DEM, Escuela de Empresarios, es una fundación sin ánimo de lucro de carácter privado que nació en 2002 en el entorno de la Asociación Valenciana de Empresarios y cuya misión es la formación de empresarios, directivos y emprendedores así como el fomento del liderazgo, el espíritu emprendedor y la cultura del esfuerzo. “En estos momentos más de 100 reconocidas empresas nos apoyan”, afirma el director general de EDEM, Antonio Noblejas. Con más de quince años en funcionamiento, su formación se divide en dos grandes áreas: la universitaria y la senior. El Centro Universitario EDEM oferta el Grado en Ingeniería y Gestión Empresarial, adscrito a la Universitat Politècnica de València, y el Grado en ADE para Emprendedores, adscrito la Universitat de València. Its mission is to train business leaders, executives and entrepreneurs and to promote leadership, entrepreneurial spirit and the culture of endeavour. “At the moment, over 100 well-known enterprises support the project of the EDEM by means of their Patronage and their Member Assembly”, affirms the general director of the EDEM, Antonio Noblejas. After more than 15 years of proven experience, the courses offered at the EDEM are divided into two main areas: the University Center and the Senior Training Programmes.
