Dos años después de la reinauguración de sus instalaciones y con una importante inversión, Oliva Nova se ha confirmado como un referente de calidad en el mercado turístico. Su directora comercial, Sandra Düster, analiza en esta entrevista las principales razones por las que estamos hablando sin duda de un resort de referencia en la Comunidad Valenciana. La calidad del servicio, la ubicación, el clima, la renovación de las instalaciones y la desestacionalización son las bases que lo explican todo. Ahora también con mucha presencia como destino para eventos empresariales. 26

After a significant investment and just two years after the reincorporation of its facilities, within the Tourism Market, Oliva Nova has been confirmed as a reference for quality. In this interview, the chief commercial officer (CCO), Sandra, Düster analyses the main reasons why we are without doubt saying that Oliva Nova is a Resort of reference in the Valencian Community. The quality service, the location, the climate, the refurbishment of the facilities and the deseasonalisation are the main pillars that explain everything else. Now it is gaining presence among businessmen as a MICE destination.

Tenemos una ubicación privilegiada en la costa mediterránea con un clima suave durante todo el año que hace que este sea un destino atractivo y apetecible para la distinta tipología de clientes con los que trabajamos.

Además, nuestras comunicaciones facilitan que todo el mundo nos pueda visitar desde cualquier destino ya sea nacional o internacional. Tenemos los aeropuertos y estaciones de AVE en Alicante y Valencia, así como autopista próxima y con salida en Oliva y Dénia. Nuestros 9 km de playa son un espacio que se puede disfrutar durante todo el año sin sufrir las aglomeraciones que, cada día más, tiene el turismo de costa. El verano es, sobre todo, muy familiar y vacacional, aunque afortunadamente se mantiene en mayor o menor medida durante todo el año. El sector de deportes y empresa está en auge y nos escoge cada día más gracias a que, además de la ubicación que a todos gusta, tenemos unas instalaciones, una oferta gastronómica y una muy diversa oferta de alojamiento que responde perfectamente a sus necesidades. A todo, hemos de sumar la parte imprescindible de nuestro servicio: un personal especializado cada uno en su área que responde con una atención integral a cada uno de nuestros visitantes. —¿Cuáles son las estrategias de Oliva Nova para la comercialización del resort?

— What are the reasons that have turned Oliva Nova into a resort with an influx of tourists throughout the year?

We are in a privileged spot in the Mediterranean coastline, with mild temperatures all year round. This turns the resort into an attractive and appealing destination for the wide range of clients and guests we work with. Apart from that, excellent communications provide people from all over Spain and foreign countries with good access to the Resort. The international airports and the highspeed train station in Valencia or Alicante are only 1 hour away and access by road is possible too as the motorway is really close, with an exit in Oliva and another in Dénia. There are 9 kilometers of beach to be enjoyed all year long without suffering the overcrowding caused by coastal tourism that other beaches have. Summer is above all a family and holiday destination, although fortunately to some extent the tourist flow remains constant all year round. Sports and business events are increasing every day. La playa es ese espacio que muchos se pasan todo un año anhelando pisar. Sentir la arena en los pies, mirar al frente y ver el mar es uno de los mayores placeres que existen. Lo puedes hacer en Oliva Nova (casi) los 365 días del año, durante todas las estaciones, en una de las playas vírgenes de la Comunidad Valenciana mejor conservadas. Allí donde no hay bullicio, sino tranquilidad; donde no hay ladrillo, sino dunas naturales que adornan el litoral. ¿La calidad del agua? Solo hay que verlo: un mar azul con un fondo claro. Pero Oliva Nova no solo es su playa. A total pleasure for “breakfast lovers”: excellent and varied juices; baked bread; home-made pastry; freshly ground coffee in a porcelain cup; fresh juicy fruit; typical products of a European breakfast such as eggs bacon, and beans; as well as local Mediterranean products. Here you can say that life is a long, quiet breakfast.

The beach is the place that some people miss stepping on for almost a year. Feeling the sand between your toes and looking ahead to the sea is one of the biggest pleasures in life. In Oliva Nova, you can experience it (almost) the whole year round as we have one of the best preserved beaches in the Valencian coastline. No hustle and bustle, but serenity; no concrete, but natural dunes decorating the coast. The quality of water goes without saying. You just need to check it: a blue sea with a whitish bottom where you can swim among fish. However, Oliva Nova is much more than the beach. A prestigious golf trainer who comes to his new “home” with a challenging project. Not only for him, but also for every player who steps on the golf course no matter if he is a beginner or a player with years of experience. His recent recruitment marks a milestone in Oliva Nova, a new beginning. “We are having a living school of golf.This implies a facility with constant updates in terms of technology (new equipment and an exclusive technology room) and in terms of teaching too. My team is going to fully suit every player”, one of the most prestigious golf professors in Europe affirms enthusiastically. “We teach the swing that best suits the physical capacity and the training

I’ll be present in Oliva Nova as I want to standardise criteria with the team of experienced professionals in golf and to draw technical guidelines for the academy students”, he explains from the USA, where he is collecting new teaching experiences. “I am not only giving my name to the Academy, but I also want to show my working methods”, he clarifies.

Por algo es, también, miembro del comité de formación de la federación, lo que significa que no sólo forma a jugadores, sino también a profesores. Un referente ineludible del que se benefician, desde abril pasado, los golfistas de Oliva Nova.

This is the reason that he is the trainer of Blume, Spanish golf school for the last 21 years or the trainer of the Royal Spanish federation junior team. It is not for nothing that he is a member of the Training Committee in the Federation too. This means that he is not only teaching players, but he is also participating in teacher training programmes. Golf players in Oliva Nova have the opportunity to use this vital golf reference for their advantage since April.

What is Kiko Luna’s working method? Why does everybody want to learn with him? “We offer golf on demand, with the guarantee provided by the Luna brothers. A fully customised methodology for every player. No matter if he is an experienced golfer living in the area or one of the players attending a

Somos un equipo que hace un chequeo continuo tanto técnico, de preparación física, como mental (área que dirige Óscar del Río, psicólogo deportivo de equipos profesionales). Marcamos unas pautas de trabajo y luego montamos campamentos y cursos intensivos para distintas épocas del año. También vamos a dar un producto específico exclusivo para el cliente del hotel, esté 2 días o 2 semanas. Por eso lo del ‘golf a la carta’. Si quiero mejorar el juego largo, o el corto, o el aproach… , pues hacemos grupos de 4 o 5 personas a la carta. Los programas en paquete están bien para ponerlos en un folleto, pero luego hay que programar, y eso es lo que vamos a hacer”, asegura. Del 30 de junio al 13 de julio, por cierto, Kiko Luna dirigirá un campamento de alto rendimiento para jóvenes jugadores en Oliva Nova. Será el primero de muchos. “Nosotros no tenemos un método, sino un sistema. Conocemos los métodos de las mejores escuelas del mundo. No es lo mismo un jugador de paso que únicamente viene unos días que otro, para construirle su swing. No me planteo hacer un cambio drástico con un jugador que viene un día, eso no es efectivo. Lo que queremos es garantizar la mejora deportiva de cada uno”, explica. Kiko Luna elogia las condiciones del campo de Oliva Nova. “Tiene muchas ventajas. La primera es que es un campo que puedes jugar andando, porque es totalmente plano. Es un campo que te hace pensar, esos son los buenos. Como tiene diferentes tees, puedes jugar con diferentes opciones de dificultad. El clima es buenísimo. El diseño, de los mejores de Severiano Ballesteros. Y es muy importante que sea un campo asequible para el mundo amateur, para todos los niveles”, apostilla.

Summer Camp. We are continuously checking the technical aspects, as well as physical and mental training. The latest is run by Óscar del Río, a sports psychologist for professional teams. We set a standard and work guideline and then we organise campus and clinics in the different periods of the year. We will be also offering an exclusive product for the guests in the hotel, no matter if they stay for 2 days or 2 weeks. That’s why I like to use the expression “golf on demand”. If one wants to improve the long game, the short game or the approach, then we make customised groups of 4 or 5 players. Packaged programmes are ok to publish the information in a flyer; however, there is the need to schedule personalised activities and this is what we are going to do”, he asserts. From 30th June to 13th July, Kiko Luna is carrying out a Summer Camp for young players in Oliva Nova. It will be the first of many.

We haven’t got a methodology, but a system. We know the methodologies used in the best golf academies in the world. You cannot compare the steps to take to improve the swing of an occasional player with the swing of a constant golfer. I don’t think about making a dramatic change with someone who plays from time to time. It’s not effective because we want to work toward improving the individual competition in golf of each player”, he explains.

Kiko Luna praises the golf course conditions in Oliva Nova. “This golf course has many advantages. It is completely flat with gentle undulations, a total pleasure to walk along the golf course while playing. It makes you think about the itinerary and these are the good golf courses. As there are different tees, you can choose the difficulty level every time you play. Weather is almost perfect. The design of the golf course is by Severiano Ballesteros, one of the best Spanish golfers. And last but not least, it is an affordable golf course for amateur players, accessible to all levels”, he adds.

P

or su historia, por su ambiente y, sobre todo, por las sorpresas que ofrecen al visitante, los mercadillos, los rastros de toda la vida, enganchan. Tanto para los que acuden semanalmente como si fuera una liturgia como para los que no pierden ocasión de rebuscar todo tipo de objetos entre sus puestos. Muy cerca de Oliva Nova están algunos de los mejores bazares callejeros de la costa española.

RIURAU, UN MERCADILLO DE OBLIGADA VISITA El Mercado de Riurau está ubicado en Jesús Pobre, en las faldas del Montgó, entre Dénia y Jávea. Un bazar donde podemos encontrar, todos los domingos del año, productos frescos de la huerta: frutas, hortalizas, aceite, olivas, dulces y un largo etcétera, además de elementos de artesanía de la zona. El primer domingo de cada mes coincide con la feria de segunda mano y coleccionismo en la que encontramos todo tipo de artículos y curiosidades: muebles de todos los estilos y épocas, cerámica, lámparas, pinturas, artículos vintage, discos, máquinas de coser, cámaras de fotos, relojes o monedas de colección.

treet markets, the so-called flea markets, captivate visitors for their history, their background and for the many different elements of surprise. No matter if you routinely go to the market every week, or if you just drop by the market. Some of the best street bazaars on the Spanish coast are really close to Oliva Nova.

RIURAU, A MUST-SEE STREET MARKET You will find the Riurau Market in a town between Dénia and Xàbia, in Jesús Pobre a small village located at the foothills of the Montgó mountain. Every Sunday, the street market is full of stalls with fresh local products: fruit, vegetables, oil, olives, typical pastry and a long etcetera of stands, besides handicraft items typical from the region. All year round, the first Sunday of each month, there is also a secondhand and collectors fair where you can find all kinds of items for a collection: furniture of different ages and styles, ceramics, lamps, paintings, vintage items, records and discs, sewing machines, cameras, clocks and watches, or collector coins.


It started as an alternative during the crisis. However, it has turned into a complete success, not only economic but also cultural. The Riurau Market allows to know first-hand the farmers, gardeners, bakers, artisans and creatives who show their product with no intermediaries.

Junto a las frutas y hortalizas hay un elemento estrella en este mercado. En hornos de leña clásicos se preparan las cocas de la marina: una base de masa de harina extendida sobre la que se dispone tomate previamente preparado; hierbas naturales de la comarca, guisantes con cebolla o, simplemente, unas anchoas o embutido casero.

Together with fruits and vegetables, this is the star product in the market: coques, typical from the Marina Alta region, are prepared in classic wood-fired ovens. A dough made of flour seasoned with tomato, natural herbs and spices from the area, peas and onion, anchovies or homemade cold meat on top.

Los agricultores que acuden a este mercado, el pionero de los hoy llamados mercats de la terra, exponen sus productos aún con las gotas del rocío de la madrugada en que han sido recogidos. La creciente presencia de compradores les ha hecho involucrarse más en sus huertos, donde aplican fórmulas de trabajo heredadas de sus padres y abuelos, evitan los abonos químicos y cosechan respetando el entorno.

This is the pioneer market of those that show the region’s best produce, known as “land markets”. Dew drops can be seen in the surface of the freshly harvested products offered by farmers and gardeners. Because of the growing presence of purchasers, they are getting more involved each day in their crops. A clear example of it is that they avoid the utilisation of chemical fertiliser and harvest respecting the environment like their parents and grandparents did.

XALÓ, UN BAZAR MÁS EUROPEO QUE ESPAÑOL El Mercado de Xaló es, para algunos, el más importante de la provincia de Alicante. Un mercado de objetos que fueron despreciados y que, hoy, se valoran como oro en paño. Piezas únicas cuyo valor lo determinará, en muchos casos, nuestra capacidad de negociar con el vendedor. En el Mercado de Xaló, que se instala todos los sábados del año, podemos encontrar lo más sorprendente. La oferta de este rastro es infinita. Desde ropa usada y sin usar, fósiles y minerales, viejas máquinas de escribir, fotografías antiguas, muebles y menaje antiguos, monedas de otros países, objetos de labranza en desuso, vajillas, ropa de piel de segunda mano, utensilios de cocina, juguetes antiguos, artículos de decoración hechos a mano en mimbre, cámaras de fotos, artículos militares y un largo etcétera. Un gran número de puestos de este mercado tan singular son de residentes extranjeros de la zona, por lo que encontraremos objetos no sólo de la comarca, sino de otras partes de Europa. Un dato: si somos aficionados a la búsqueda de libros de segunda mano, abundan más los libros en alemán o en inglés que en castellano.

XALÓ, A MORE EUROPEAN THAN SPANISH STREET BAZAAR Some may think that the Xaló Market is one of the most important street markets in the province of Alicante. A flea market full of scorned and forgotten objects that are treasured as if your life depended on it nowadays. Unique items whose value is determined by our bargain power and negotiation skills with the seller in most cases. It is open every Saturday throughout the year and the most surprising items can be found there. There is an almost infinite range at the Xaló Market: secondhand and new clothes, fossils and minerals, old typewriters, pictures, furniture and tableware, foreign currency, antique farming tools, secondhand leather clothes, kitchenware, old toys, handmade wickerwork and decoration, cameras, military items and more besides. A great number of stalls in this singular street market belong to non-native people residing in the area. Thus, you find objects from all over Europe too. As a curious fact: if you are a secondhand book hunter, here books in German and English corner the market above books in Spanish.


DÉNIA AND LIVING OUTDOORS

En Dénia tienen lugar dos de los principales mercados callejeros de la Marina Alta, cada uno con sus propias características. Son el mercadillo de lunes y el rastro de los viernes. Ambos ‘abren’ durante todo el año.

Two of the main street markets in the Marina Alta region are located in Dénia, but each has its own specific features. The weekly market on Monday mornings and the antiquities flea market celebrated every Friday morning. They are open all year round.

El mercadillo de los lunes es el más grande de los que tiene lugar en la comarca, y tiene como nota característica la gran afluencia de público que lo visita, ya que no sólo vecinos de Dénia acuden allí a comprar, sino también de otras poblaciones próximas. Se instala durante toda la mañana en la explanada de Torrecremada, en la periferia de la ciudad, y allí se ofrecen todo tipo de artículos, tanto de ropa como de alimentación o utensilios para la casa.

Menos concurrido es el mercado de los viernes. En este caso, se trata de un rastro en toda regla, en el que lo que se ofrece son artículos usados y antigüedades. Tradicionalmente también se había realizado en Torrecremada, pero desde hace dos años se ha desplazado al centro de la ciudad, en la calle La Via. No obstante, durante el verano regresa a Torrecremada para entorpecer menos el tráfico en el casco urbano.

The weekly market celebrated on Mondays is the biggest of all the street markets celebrated in the region. It is visited by a huge number of people, not only people from Dénia go shopping there but also from nearby towns and villages. It is located in Torrecremada Esplanade, on the periphery of the city. A market with everything that a Spanish market has to offer from clothes, food and gifts to trinkets.

The flea market celebrated on Fridays is not so crowded. It is a street market in every sense of the word, as antiquities and secondhand objects are being sold. It was traditionally settled in the Torrecremada Esplanade too. However, it has moved from the periphery to the city centre and it is now located in La Via street, except in the summer months not to hamper the flow of urban traffic when the city is busy.

La llegada del siglo xx transformó la ciudad de Valencia. En plena explosión urbanística, industrial y artística, los edificios modernistas irrumpieron entre la arquitectura ecléctica de la época. La influencia de la Sezession, escuela del modernismo vienés, es evidente en la Estación del Norte, el icono de esta corriente en España.

alencia es una de las ciudades españolas con un mayor volumen de arquitectura modernista, debido a la perfecta asimilación del estilo por parte de la burguesía valenciana. La personalidad del modernismo valenciano se caracteriza por la aplicación de las diversas tendencias: muy barroca y exuberante en ocasiones, geométrica y ordenada en otras, incorporando elementos clasicistas a menudo.

En plena efervescencia comercial y urbana, el modernismo penetró en Valencia a principios del siglo xx para confirmar lo que ya había sucedido en otras partes del mundo: un cambio de la concepción racionalista de la estética arquitectónica por una más romántica que exaltaba las costumbres valencianas. El modernismo llega a la ciudad, y a otros puntos de la Comunitat Valenciana, como un golpe de aire fresco. Aunque forma parte de una corriente general que surge en toda Europa, parte del modernismo valenciano viene influenciado por la Sezessión vienesa. Arquitectos como Demetrio Ribes, bebieron principalmente de la corriente del Jugendstil (estilo joven) o Sezession vienesa, un movimiento artístico cultural nacido en la capital austriaca a finales del siglo xix. La Estación del Norte es el icono de la influencia vienesa. Constituye de una de las entradas ferroviarias, en este caso hasta el corazón de la ciudad, más impresionantes de Europa. La terminal ferroviaria, inaugurada en 1917, es un emblema de la corriente modernista valenciana influenciada por la Sezession, desde el punto de vista arquitectónico y estético de una ciudad en ciernes. Destaca en su interior por la monumental marquesina de metal, una clara influencia vienesa. Su fachada, mirando hacia la plaza del Ayunta-

he perfect assimilation of modernism by the bourgeoisie in Valencia turns it into one of the Spanish cities with the greatest volume of modernist artworks. However, Valencian modernism is marked by the mixture of different tendencies: sometimes it is baroque and exuberant, other times it follows an ordered geometric configuration and other times it uses classicist elements.

Modernism arrived in Valencia at the beginning of the 20th century, a period of high commercial and urban spirits. It was the confirmation of what had already happened in other parts of the world: a step forward from the rational conception of architectural aesthetic to a more romantic point of view which praised the Valencian traditions. Modernism arrived as a breath of fresh air, not only in Valencia but also in other parts of the region. Although it is part of a mainstream which sprang up throughout Europe, Valencian modernism was mainly influenced by the artistic movement known as the Vienna Secession, the French Art Nouveau style and the modernist trends in Barcelona. Our architects drank from different international sources such as the “Jugedstil” (young style) or the Vienna Secession, an artistic movement raised in Vienna by the end of the 19th century. Modernist architecture needs to be understood from the influence exerted by the engineering design using iron, ceramics and glass. These materials are certainly visible in modernist buildings as decorative elements. Buildings also include symbolic or allegorical items related to the Valencian society: mosaics representing the participants of Fallas, the orchards, fishermen and oranges... The stark Valencia of that time was filled with colour. From that moment on, a renowned style was created in Valencia and in many other parts of the region.


La corriente modernista llegada de Viena se percibe también en todo su esplendor en otras construcciones: la Casa del Punt de Ganxo en la plaza de la Almoina –a la espalda de la Catedral–, el Edificio Ferrer, en la calle Cirilo Amorós, o la Casa Sagnier, en la calle de la Paz. La arquitectura modernista valenciana hay que entenderla desde la influencia que ejerció sobre ella el diseño industrial mediante las labores en hierro, la cerámica y el vidrio, perfectamente visible en los elementos decorativos de los edificios. Sobre las construcciones se plasman elementos alegóricos de la Valencia de la época: los mosaicos de falleras, la huerta, pescadores y naranjas llenaron de color una Valencia austera y crearon un estilo reconocible en Valencia y otras poblaciones de la Comunitat. Es la época de explosión urbanística de la urbe, con la ampliación del Ensanche y la mecanización de la huerta en el contexto de la ciudad. El modernismo valenciano se entremezcla con la construcción de otros edificios de estilo más ecléctico, pero con elementos modernistas. Es el caso del edificio de Correos (inaugurado en 1923), en la plaza del Ayuntamiento. De estilo más historicista, destaca por sus elementos predo-

The North Station was inaugurated in 1917 as the main railway access to Valencia, as it is in the city centre. The building is one of the main works of the Valencian modernism, in terms of architecture and aesthetics of a city in the making. It was built by Demetrio Ribes, one of the most relevant modernist architects in Valencia and the Vienna Secession has a clear influence on the monumental metal roof, the most notable feature inside. Facing the square where the city hall of Valencia is, the building façade is horizontally distributed: there are 3 different building sections characterised by its outstanding tower form. The building is packed with full-colour mosaics, ceramics and tiles representing the local customs and manners: oranges, orange blossom and the city coat of arms as the main emblem.

Only 200 metres way, there is another iconic building of the Valencian modernism: the Post Office, inaugurated in 1923 and located in the city hall square. In a more eclectic style, the building stands out for its modernist features. The use of metal in the structure and decoration is clearly reflected in the tower at the top of the building. Its monumental character symbolises the progress that was achieved by postal and telegraphic communications in the first decades of the 20th century. The oval room and the elliptic glass dome stand out in the inside. There are 370 glass panels representing at the coat of arms of the 48 of the provinces that form Spain and, right in the middle, a majestic brass coat of arms of the city of Valencia.

Heading towards the district of the Eixample, in the eastern area of the city, we find the Mercado de Colón (1916), one of the main works of the Valencian modernism. It was built to make provisions for the bourgeoisie in the area. The building is declared National Monument. Any of its façades make it different from any other building in the city: the façade in the street Conde Salvatierra has a large window and canopy protecting the access door; the façade in the street Jorge Juan is the most spectacular in terms of Valencian ceramics: trencadís, mosaic and ceramic tiles form an arch 16 metres wide representing traditional images such as the participants of Fallas and many coats of arms. Valencian customs again. The architect Mora Berenguer showed his taste for detail and clean ornamentation, clearly inspired by Gaudí as it recalls the Nativity Façade of the Sagrada Familia Cathedral in Barcelona. The open nature of the building is one of the novelties of that period, as its openness provides a delightful transparent sensation. It was refurbished in 2003 with an inversion of 33 million Euros to turn it into as a referent gastronomic point in the city.

Going on towards Plaza de la Reina, we find the building Casa Ordeig (1907), a magnificent house with neo-gothic influences. It is inspired in the building of the Lonja (1483), a landmark building of Valencian gothic architectural style.

Al otro lado del Jardin del Turia, en la zona de la Alameda, sede de la Exposición Regional de 1909, podemos visitar el imponente y neogótico Palacio de la Exposición, construido en apenas 70 días en el año 1909. Muy cerca, Valencia nos enseña otras joyas modernistas como el Asilo de la Lactancia, La Lanera convertido en hotel y la Fábrica de Tabacos, hoy un edificio de atención municipal.

Back again towards the district of the Eixample and really close to the Mercado de Colón, right in Sorní street, there is the Casa de los Dragones (1901). It is named after its ornamentation, mainly flowers and dragons. The architectural style of this building is known as “fantastic medievalism”. Moving towards the Gran Via Marqués del Turia, it is worth visiting the buildings Casa Ortega and Casa Chapa. These are two of the best examples of the Valencian modernism applied to housing construction. Right on the opposite side of the Turia Gardens, by the Alameda area, the impressive building Palacio de la Exposición can be visited. It was the headquarters for the Regional Exhibition in 1909 and, incredible as it may seem, it was built in only 70 days that same year. Not far from here, Valencia hosts other modernist jewels such as the buildings Asilo de la Lactancia and Fábrica de Tabacos. Nowadays, the latter is a municipal building.

oaquín Sorolla (Valencia, 1863-Madrid, 1923) es uno de los grandes maestros de la pintura española, el pintor de la luz mediterránea por excelencia, el artista español más internacional entre Goya y Picasso. Desde que en 1908 expuso en las Grafton Galleries de Londres, y fue presentado como “el mejor pintor vivo del mundo”, no había vuelto a la capital inglesa. Estos meses expone de nuevo en la ciudad londinense, en la exposición que ahora le dedica la National Gallery con 60 de sus mejores obras, abierta hasta el 7 de julio.

Sorolla es un creador total, cuyo precoz virtuosismo le permitió ser a la vez un dramático pintor de temática social, un enorme continuador del retrato español y, por supuesto, un maestro que supo atrapar como nadie la luz del Mediterráneo desde el impresionismo, movimiento que ya estaba en pleno apogeo en Francia. Su estilo está perfectamente caracterizado: gusto por el aire libre y por lo momentáneo y fugaz, captación de los efectos de la luz, ausencia del negro y de los contornos, pinceladas pequeñas, sueltas e independientes. Sin olvidar su trabajo de retratista y escenas costumbristas. La temática de Sorolla es variada, pero dos temas son muy reiterativos: las playas y las costumbres y trajes populares, todo desde un luminismo único. Su uso del blanco como uno de los colores protagonistas ha logrado hacer que sus obras tengan una luminosidad inigualable y una marca propia que lo distingue fácilmente del resto. Nadie ha captado de forma tan perfecta en sus lienzos el Mediterráneo, su agua y su luz, como Sorolla. Hacía un tratamiento, cercano a la abstracción de las playas de Valencia, ante las que se instalaba durante horas, ajeno al

oaquín Sorolla (Valencia, 1863-Madrid, 1923) is one of the greatest master painters in Spain, the painter of the iridescent light of the Mediterranean par excellence. The most internationally known Spanish artist, in the period of time from Goya to Picasso. He hadn’t been back to London since his exhibition in the Grafton Galleries in 1908, where he was presented as “the best living painter in the world”. From March to 7th July, he is back in the English capital, as the National Gallery has organised an exhibition of 60 of his best paintings.

Sorolla is a totally accomplished artist whose precocious virtuosity allowed him to be a dramatic social-issue painter, a follower of the Spanish tradition of portrait painting and a master painter in terms of capturing the light of the Mediterranean form the impressionist style. Impressionism was enjoying a boom at that moment in France and Sorolla’s style of painting can be perfectly identified: preference for open-air, momentary and ephemeral settings; the capture of the many different effects of light; the absence of black colour and contour lines; small, loose and independent brushstrokes. It is worth considering his work as a portrait painter and the depiction of genre scenes of Spanish life.

Sorolla’s topics are varied, but there are two repetitive subjects: beach scenes and traditional scenes with folk costumes, everything seen from a unique luminism. The use of white as one of the dominant colours has managed to make his paintings incomparable in terms of light and has created his own stamp, which makes his works easily distinguished. Nobody has captured light in such a perfect way when representing the Mediterranean Sea, its water and light like Sorolla did. He was familiar to the abstraction of Valencia’s beaches, where he sat for

Niños en la playa, Baño en la playa, Después del baño, Idilio en el mar, El balandrito, El baño del caballo, Niña entrando al mar, Bote blanco son algunos de sus cuadros más característicos, todos pintados en la orilla de La Malvarrosa, con esa luz única, tan sorollesca, que también queda reflejada en obras costumbristas. “Cuando se entra en el estudio de Joaquín Sorolla, parece que se sale a la playa y al cielo; no es una puerta que se cierra con nosotros, es una puerta que se abre al mediodía”, escribió el poeta Juan Ramón Jiménez. Es imposible recopilar la serie laudatoria de frases y juicios sobre Sorolla y sus obras. Buena parte de sus pinturas pueden admirarse en el Museo del Prado, San Pío V de Valencia y en la Casa Museo de Sorolla, en Madrid. La imagen más conocida de la obra de Joaquín Sorolla habla de paisajes mediterráneos, mujeres con geranios, espuma y sol. Pero su papel en la historia del arte es mucho más que eso. Su dominio de la luz, su contundente denun-

hours and remained beyond the passing of time, the nuisances of working in the sun and the mosquito bites, in order to get the most out of even the last glimmer of light. Sorolla usually went to La Malvarrosa, a beach in his native Valencia, with his easel. In this setting, he uses the naked bodies of children to deal with the specks of light and shadow, the reflections and the wind. It’s worth highlighting the shadows in colours such as mauve, brown or even white, as well as the wonderful reflections of water on the childish skin under the sun. These are some of his most characteristic paintings: “Children on the beach”, “Bathing on the beach”, “After the bath in the sea”, “Sea Idyll”, “The little yacht”, “The Horse’s Bath”, “Girl entering the bath”, “The white boat”. They have all been painted from the shore of La Malvarrosa beach, with that magic light so typical from Sorolla, which is captured in other genre paintings. “When you get into Joaquin Sorolla’s studio, it seems as if you were going to the beach, open-air; it’s not a door which is shut behind us, it’s like a door which opens to midday”, the poet Juan Ramón Jiménez wrote. It’s not possible to gather together all the positive criticism about Sorolla and his paintings. Most of his work can be admired in places such as the Prado Museum in Madrid, the Museum of Fine Arts of Valencia and the Museum Sorolla in Madrid. The best-known image in the word of Joaquín Sorolla speaks about Mediterranean landscapes, women with geraniums, sea foam and sun. However, his role in art history is much more than that. His knowledge and control to represent light, his forceful

Hacia 1920, ya en el ocaso de su carrera, Sorolla firmó el contrato para un proyecto que le ocuparía la última década de vida: ejecutar para la sede de la Hispanic Society en Manhattan un mural de 70 metros de largo por 3 de alto sobre las distintas regiones españolas. En el Museo del Prado están sus principales cuadros. También en el Museo de Bellas Artes de Valencia encontramos algunas de sus obras.

Sorolla was not only able to paint the Mediterranean light, but he also captured the typical light from Salamanca, Castile, Andalusia… Furthermore, he painted portraits and inner landscapes with great skill. All his work represents the joy of living. He also captured the most iconic images in New York: the Flatiron Building, the Grand Central Terminal, St. Bartholomew’s Episcopal Church… These images are used to prove that Sorolla, much earlier than Picasso, was the first Spanish artist who stood out in the United States of America, among the art collectors (there are more than 350 owners of his works) and in galleries and museums too. He created more than 4.000 paintings. “He had the ambition of capturing everything”, the Spanish essayist and politician Ramiro de Maeztu wrote about him.

In his youth, Sorolla created some of the model works in terms of social realism of that period. This is the case of the painting “And they still say fish is expensive!”, an imposing picture which shows two fishermen helping a sailor, in the hold of a boat, hovering between life and death after a work accident. The work “Sad Inheritance” crowned his socially engaged painting and his international standing with the representation of a group of many blind, mad or crippled children go into the sea under the watchful eyes of a friar. This scene was captured by Sorolla from the picture windows of his studio. Around 1920, entering the twilight of his career, Sorolla signed a contract for a project which kept him busy during the last decade of his life: a mural painting about the different Spanish regions, 70 metres long and 3 metres tall, for the Hispanic Society in Manhattan. The Prado Museum in Madrid hosts Sorolla’s main paintings. The Museum of Fine Arts of Valencia exhibits some of his works too.

Un terreno salvaje que escapó de la construcción inmobiliaria en primera línea que ayuda a conservar, con sus dunas naturales, la flora y la fauna de la costa donde limitan las provincias de Valencia y Alicante. Un buen ejemplo, sin duda, de cómo hay que mantener las playas, y el mar, en estos momentos de especial sensibilidad hacia la salud de nuestros mares y del planeta en general. Para ahondar en la conciencia colectiva, desde Oliva Nova recordamos algunas pautas para salvaguardar nuestras costas de la contaminación del hombre. Los mares son, en algunos puntos de la Tierra, auténticos vertederos. El pasado año, la prestigiosa publicación Science publicó un estudio en el que reflejaba que en el año 2010 se vertieron ocho millones de toneladas de plástico y se estimaba que la masa de residuos crecería cada año: se llegarían lanzar al mar más de nueve millones en 2015 y se acumu-

A wild landscape that escaped the building boom along the beach front. The natural dunes help to preserve the native flora and fauna of the coastline that shares the border with Alicante and Valencia. Without a doubt, it is a good example of how to maintain the beaches, and the sea, especially in these times of special sensitivity towards the environmental health of our oceans and world in general. Going deeper into the mass consciousness, Oliva Nova wants to share and recall some guidelines to safeguard our coasts from the pollution produced by humans. In certain parts on planet Earth, seas are big landfills. Last year, the renowned journal Science published research that showed that eight million tonnes of plastic were poured into the sea in 2010 and the waste mass was estimated to grow every year: more than 9 tonnes would be

Las cifras son, desde luego, preocupantes. Una playa virgen, como la de Oliva Nova, invita a disfrutarla y a respetarla para no variar su esencia natural. No es necesario dar pautas, porque las sabemos ya, pero sí recordarlas. Teniendo en cuenta que el 80 % de la contaminación de los mares está causado por el ser humano, hay una serie de comportamientos que ayudan a mantener limpias nuestras costas. Todo lo que podamos hacer desde la playa, más allá de la contaminación que llega a las aguas desde los desagües y los barcos, es sumar. No debemos olvidar ser respetuosos con el entorno. Nada de arrancar esa flor que te parece tan bonita para llevártela a casa o de importunar a los peces mientras buceas

Bearing in mind that 80% of the pollution of the seas is caused by human actions, there is a range of desirable behaviours which help to keep our beaches clean. Like the butterfly-effect, apart from all the pollution coming from drains and boats, any action that is done from the beach means contribution. Do not forget about being respectful of the environment. Do not pick the flowers you like to bring them home nor disturb fishes while diving or snorkelling. Special mention should also be made of butts and ashes. Do not leave

Intenta guardarlas en algún lugar que no sea inflamable y cuando abandones la playa tíralas en un recipiente adecuado. El problema del plástico en los océanos es uno de los más importantes. Esto ya lo sabes, pero no está de más insistir. Nada de dejar plásticos en la arena o en el agua. Todo a la papelera. Según Naciones Unidas, 8 millones de toneladas de plástico al año acaban en los océanos, causando estragos en la vida silvestre. Cuidado con las pajitas de plástico, ya que pese a su pequeño tamaño tardan en descomponerse hasta mil años. Muchas acaban en el agua y son ingeridas por diferentes especies marinas. Como dato, una botella de plástico tarda en degradarse de 150 a 500 años, dependiendo de si está a la intemperie o enterrada. Es importante recordar cuánto cuesta en que se degraden la basura que dejamos, a veces sin querer, en una playa. La definición de biodegradable es sencilla: son aquellas sustancias y productos que pueden descomponerse en ambientes naturales debido a la acción de plantas, animales, microorganismos y hongos. Sin embargo, no todos los materiales son biodegradables. A este segundo grupo de materiales se les engloba bajo la definición de sustancias recalcitrantes. La mayor parte de productos que tenemos en casa están fabricados con materiales biodegradables, sin embargo, el tiempo de degradación varía según su composición. A continuación, te recordamos las cifras aproximadas de los periodos de desintegración de nuestros principales residuos y basuras:

One of the most important problems is the amount of plastic in the oceans. You already know about it, but it is worth insisting. Do not leave plastics in the sand or in water. Throw everything away into the dustbin. According to the United Nations, 8 million tonnes of plastic rubbish are dumped in our oceans every year. This wreaks havoc on wildlife. Be careful with plastic straws, they take up to 1.000 years to decompose despite their tiny size. These plastic items end up in the water and the marine species ingest them. As a matter of fact, a plastic bottle takes from 150 to 500 years to decompose, depending on whether it is weathering or buried. It is important to bear in mind how long the rubbish we often leave on a beach “by mistake” takes to decompose. The word biodegradable is easy to define: all those materials capable of decaying through the action of living organisms such as plants, animals, microorganisms and fungus. Not all materials are biodegradable, though. This second group is known as recalcitrant substances. Most of the products in our homes are made with biodegradable materials but, on the other hand, the degradation time depends on their composition. More than 80 subaquatic sites have been found near Dénia, from Roman goods dating the 1st century B.C. to battleships of the War of Independence.

Más de 80 yacimientos subacuáticos se han encontrado en sus aguas, desde mercancías romanas del siglo I a.C. hasta navíos de la Guerra de la Independencia.

t is no exaggeration to say that Dénia is one of the biggest Mediterranean capitals in terms of subaquatic archaeology. One of the biggest archaeological heritage in Europe is found underwater on the coast of Dénia as a result of its atavistic relationship with the Mediterranean Sea. All over the Valencian coastline, the highest number of sunken battleships and subaquatic sites is concentrated under its waters. This data was decreed by the government in 2014 and there have been more discoveries since then. One of the last finds was just two summers ago. A French tourist aged 16 and her younger brother made an unexpected and surprising finding during their holidays. While they were snorkelling in the coastal region located to the North of the city, they found the remains of a battleship 350-metre long in the beach, at only 3,5 metres in depth. These remains belong to the pirate battleship Zephyr, wrecked in 1813 during the Peninsular War against the French. The ship got stuck and sunk in front of Las Marinas around 13th and 14th May 1813 with around a hundred of dead pirates on board.

A modo de cementerio de naufragios, en el fondo del mar reposan los restos de más de 80 navíos. Cada año, además, el lecho cambia. Aparecen cosas que después vuelven a quedar enterradas otros 20 años.

énia es una de las grandes capitales mediterráneas de la arqueología subacuática. No es ninguna exageración. En sus aguas se esconde uno de los mayores patrimonios arqueológicos europeos, producto de su atávica relación con el Mediterráneo. Su litoral concentra el mayor número de barcos naufragados y yacimientos subacuáticos de toda la Comunidad Valenciana. Así lo decretó su gobierno en 2014. Y desde entonces ha habido más descubrimientos. Uno de los últimos, apenas hace dos veranos. Una joven turista francesa de 16 años y su hermano de 14 hicieron un sorprendente hallazgo durante sus vacaciones. Mientras practicaban snorkel en el litoral norte de la ciudad, encontraron los restos de un navío a 350 metros de la playa y a solo 3,5 metros de profundidad. Pertenecían al barco corsario Zéphir hundido en el año 1813, durante la Guerra de la Independencia Española frente a los franceses, curiosamente. Embarrancó y naufragó frente a la costa de las Marinas entre el 13 y el 14 de mayo de 1813. Se trataba de un barco corsario y a bordo perecieron un centenar de tripulantes.

This shipwreck was not the only. The Mediterranean Sea hides wreckages of all ages in front of Dénia. The most ancient remains are some amphorae produced in Ibiza, dating from the 5th century B.C. The wreckages of over 80 ships lie at the bottom of the sea as if it was a shipwreck graveyard. Moreover, the seabed is changing every year. One year there are remains that appear and the following year they are buried again for over 20 years more.

¿Por qué Dénia esconde tantos tesoros? Obedece al lugar estratégico que su puerto, tan próximo a las Baleares, ha ocupado en la geografía del Mediterráneo Occidental y a que la ciudad siempre fue un enclave vital del comercio marítimo: en la Dianium romana, en la Daniya islámica y en la Dénia comercial más floreciente. Históricamente, además, ha sido refugio natural de las costas alicantinas que posibilitaban el hibernaje para que grandes navíos invernaran y, posteriormente, partieran, sobre todo hacia Italia, siguiendo la ruta de las islas. Dénia constituye el único puerto refugio natural en los más de 500 kilómetros de costa que separan el de Los Alfaques en Sant Carles de la Ràpita (Tarragona) y el de Cartagena (Murcia). Ello hizo que durante siglos las embarcaciones buscaran, no siempre con éxito, su abrigo en las tempestades. La imponente presencia del cabo de San Antonio y de la montaña del Montgó generan en la zona, además, un singular régimen de vientos que desde la antigüedad ha desorientado a los barcos y los ha hecho perderse. Las condiciones naturales de las aguas de Dénia, poco profundas, hicieron que Quinto Sertorio la eligiera como base marítima en la terrible guerra civil que lo enfrentó al Senado romano en el siglo i a.C. Y que, 1.000 años más tarde, Muyahid al-Amiri, fundara la taifa de Dénia y utilizara sus muelles para lanzarse a la conquista de las islas Baleares y después de Cerdeña. Dénia, siempre, como punto referencia marítimo. Como lugar de llegada y de destino de navíos cargados de riquezas. A todas esas cronologías, desde el Imperio romano hasta

Why does Dénia harbour so many treasures? This is due to the strategic point of its port in the western Mediterranean geography, being so close to the Balearic islands. The city was also a vital point for the maritime trade: the Roman Dianimun, the Islamic Daniya and currently known as Dénia became a flourishing place of commerce. Historically, it has been a natural refuge in the coastline of Alicante as large vessels could anchor and set sail to different destinations in the Mediterranean Sea. Especially, in the direction of Italy, following the Islands route. Dénia is considered as the only natural refuge along the 500 km of coastline extending from Los Alfaques in Sant Carles de la Ràpita (Tarragona) to the port in Cartagena (Murcia). This is the reason why ships sought refuge in the seaport of Dénia during great rainstorms, albeit not always successfully. The important presence of the cliffs in the Cabo de San Antonio and the Montgó massif create a particular wind regime in the area since ancient times. This misled the crew and many ships got lost. The Roman statesman Quintus Sertorius choose Dénia as the maritime base because of its natural conditions in the 1st century B.C. Due to the shallow waters, 1.000 years later, Mujahid al-Amiri founded a Muslim kingdom in medieval Spain, the Taifa of Dénia, and set out to conquer the Balearic islands and Sardinia from its dock. Dénia has always been a maritime landmark, as a finishing point and destination of ships loaded with gold and much wealth.

The wreckages date from all chronologies, from the Roman Empire to the 19th century. Two thousand years of shipwrecks: historical and trade wealth, but also war and naval battles. The sea amasses amphorae, ceramics, ribs, hulls, coins, golden ingots, cannonballs, the frame of the battleships, bells, artillery pieces… all this is treasured in Dénia.

La playa de arena más meridional de la población sirvió como fondeadero de buques entre el siglo i a.C. y el xix y alberga un notable número de pecios. Entre ellos, uno con ánforas de salsa de pescado procedente de Cádiz del siglo i u otro de la misma centuria con cargamento de aceite originario de Bética y localizado cerca de la escollera sur.

The sandy beach located in the southern area of the city was the anchorage of ships between the 1st century B.C. and the 19th century of our time. It treasures a huge number of wreckages. Foremost among these is a shipment of amphorae filled with fish sauce coming from Cadiz and also a load of oil coming from Baetica found in the southern breakwater, both dating from the 1st century.

Bajo el gobierno del emperador Augusto y sus sucesores, de Dianium partieron barcos cargados de mercancías a distintas latitudes del Imperio. Algunos jamás llegaron a su destino. Fue el caso del navío que el mercader Tiberius Claudius Amiantus había enviado repleto de vino a Cartago Nova y que naufragó frente a L’Almadrava. Hace 40 años, dos vecinos de El Verger hallaron un cepo de esta embarcación cuando buscaban pulpo en esas costas. Hay más pecios de origen romano en l’Almadrava. Un barco cargado con ánforas grecoitálicas del Nápoles del siglo i y también otro navío que zozobró con una carga de ánforas de Saguntum.

Más hacia la Punta del Faralló, existen elementos aún más antiguos: un conjunto de cerámica púnica que portaba como carga un buque procedente de Ibiza allá por el siglo i a.C.

Remains of the Roman ships are found all along the coastline in Denia. In the reign of Emperor Augustus and his successors, ships loaded with goods departed from Dianium to different parts of the Empire. Some of them never reached their destination. This is the case of a ship loaded with wine the merchant Tiberius Claudius Amiantus sent to Cartago Nova and wrecked in front of the beach l’Almadrava. Two residents of El Verger found a trap of this ship, while they were catching octopus in these shores 40 years ago. There are more Roman wreckages in this beach: a ship loaded with Greco-Italic amphorae from Naples dating from the 1st century and another ship which sank with a burden of amphorae from Saguntum.

Even more ancient elements are found in the area known as Punta del Faralló: Punic ceramics coming from Ibiza dating from around the 1st century B.C. Galleys from the 16th or17th centuries dropped anchor in these waters too. In the summer of 2016, a cannonball

En todo el litoral de Dénia se calculan al menos ocho naves datadas en un turbulento periodo entre dos guerras (la de Sucesión y la de la Independencia) que iban extraordinariamente armadas.

EL NAUFRAGIO QUE CAMBIÓ LA HISTORIA DE DÉNIA Un naufragio cambió la historia de la población dianense. El 16 de marzo de 1799 a las 4 de la madrugada, la fragataGuadalupe de la Armada del rey de España naufragó entre las rocas de Les Rotes cuando huía de unos navíos británicos. Murieron 147 de sus 327 tripulantes. Los vecinos se volcaron en el auxilio a los supervivientes llevándoles ropa seca y comida. Aquel naufragio puso al descubierto en todo el reino el lamentable estado del puerto, lo que provocó que Carlos IV incorporara en 1804 la ciudad a la Corona ante la negativa de la duquesa de Medinaceli a dragar la dársena. Otro de los descubrimientos fue el vapor La Felguera. Perteneciente a una compañía de Gijón y construido en astilleros británicos. Fue botado en 1876 y se fue a pique cuatro años más tarde tras ser abordado por el vapor británico Ardantine en las proximidades del cabo de San Antonio.

was found in the beach Les Albaranes. It was first dated from the Spanish Civil War, but it actually belongs to the 18th century. Along the coastline in front of Dénia, there are at least eight ships dating from a turbulent period between the War of the Spanish Succession and Peninsula War, two excessively armed battles.

THE SHIPWRECK THAT CHANGED THE COURSE OF HISTORY IN DÉNIA There is a shipwreck that touched the lives of people in Dénia. On the 16th May 1799, around 4 a.m., the frigate La Guadalupe belonging to the Spanish Armada run aground in the area of Les Rotes, while fleeing British ships. 327 men were on board and 147 lost their lives. People from Dénia came to the aid of the survivors with clothing and food. This shipwreck revealed the obvious poor condition of the port. As a consequence, the Duchess of Medinaceli rejected to carry out the dredging of the dock and Dénia was joined to the Crown by Carlos IV, the king of Spain, in 1804. One of the hundred shipwrecks documented is the steamboat La Felguera. It was acquired by a company from Gijón and it was built in Middlesbrough’s shipyard. The steamer was launched in 1876, but it went under only 4 years later, after being rammed by the British steamer “Ardantine” near the Cabo de San Antonio.

In 2019, a transversal program is being developed to provide a richer experience to visitors and raise awareness of the most fascinating animal in all oceans: the shark. Over 100 individuals of more than 20 shark species are on show in every habitat in the oceanographic museum. This implies an exhibiting effort to place sharks and visitors face to face. The Oceanogràfic Foundation extends the work that the Oceanogràfic carries out such as the incubation, breeding and recovery of sharks and rays since they are in the egg. Commonly called the “shark farm”, this work is developed in close partnership with the Polytechnic University of Valencia and it ends up setting the animals free into the open sea. It is a worldwide referent in the care of marine tortoises. It is the easiest animal to carry to the Oceanogràfic facilities. There is a “tortoise hospital”, the biggest facility in Spain and one of the greatest in Europe devoted to care and tortoise rehab.

SCIENCE MUSEUM PRÍNCIPE FELIPE The Science Museum Príncipe Felipe is the most monumental building in the avant-garde architectural complex of Ciutat de les Arts i les Ciències. It promotes the dissemination of many science-related activities, a sure bet to keep children entertained. They can get closer to basic scientific and technology concepts through experience, while they learn. The stunning building itself is worth visiting, it looks like a giant whale´s skeleton.

Cualquiera que se haya fijado un poquito al aterrizar en Valencia desde el mar, lo ha visto. Ha visto a Gulliver, en su estado gigante, tumbado sobre la parte este de la ciudad. Situado en el Parque del Turia, antiguo cauce del río Turia, y muy cerca de la Ciudad de las Artes y de las Ciencias, se encuentra el parque de Gulliver de València. Basado en el cuento Los viajes de Gulliver de Jonathan Swift, representa la figura del gigante Gulliver tendido en el suelo e inmovilizado con cuerdas. Los niños que juegan a su alrededor serían los liliputienses del cuento de Swift. Todo el gigante está cubierto de toboganes y escaleras. El material con el que está construido es relativamente blando, y de formas redondeadas, para aumentar la seguridad de los niños. Pero no hay ningún peligro. Los tramos de los toboganes con mayor pendiente tienen un recubrimiento.

If you have come to Valencia by plane, you have surely seen it from the air: a giant Gulliver tied to the ground in the eastern part of the city. Located in the Turia Garden, the former Turia riverbed, and really close to the architectural complex of Ciutat de les Arts i les Ciències, there is the Gulliver Park. Based on Jonathan Swift’s satirical novel “Gulliver’s Travels”, this giant figure represents Gulliver lying on the floor and being tied with ropes to the ground. Children playing around could represent the tiny inhabitants of the country of Lilliput. The giant is full of slides and stairs to slip and climb. However, it is built in a soft material and with rounded shapes to keep children safe. There is clearly no danger, at the greatest slopes are coated with soft material.

Eran los primeros de la bodega, de ahí el nombre de Protos (‘el primero’, en griego). Fue un bautismo de fuego para el vino de la zona, por lo que resulta excepcional que consiguiera la medalla de oro en la capital catalana. Pocos saben que en la historia de Protos destaca el haber dado nombre a la Denominación de Origen Ribera del Duero. Fundada en 1927 por 11 viticultores y establecida como la segunda denominación de origen de España por detrás de Rioja, si de algo puede presumir Ribera del Duero es de contar con un pasado de una solidez incuestionable. ext to the road which goes from Valladolid to Soria, right in the heart of Castile, the names “La Bodega la Primera” (original name) and “Bodega Ribera del Duero” are still in the front of the winery building. However, almost from the start, Protos is the name by which the company is known. It was named after the 1927 and 1928 wines presented in the 1929 Barcelona International Exposition. The first wines produced by the winery, hence the name of “Protos” meaning “the first” in Greek. Winning the gold medal in Barcelona was unusual, as it was a litmus test at the very beginning for the local wine. Few people know about the fact that Protos gave the name to the certificate of origin Ribera del Duero. The certificate of origin was founded in 1927 as a cooperative of 11 winemakers and it is consolidated as the second best-known classes of Spanish wine, after Rioja. Thus, if there is one thing Ribera del Duero can boast of, it is the unquestionable solidity of its past. Archaeological

Sorprende mucho al enoturista porque son 2 kilómetros y medio de cuevas y galerías subterráneas naturales que, a modo de laberinto, conserva la clave del éxito de sus caldos: la temperatura y la humedad que la naturaleza ha regalado a este emplazamiento. Se accede por una puerta de tránsito independiente del castillo y algunas de sus galerías datan del siglo xvi, cuando un tal Cristóbal Colón ya se había adentrado en el Nuevo Mundo. Son las mismas bodegas que usaba la Orden del Císter en Peñafiel para esconderse y para criar ya el vino en una forma rudimentaria.

Protos’ parent company is a vintage winery, dug in the mountain right at the foot of the monumental castle of Peñafiel, one of the most important fortresses in the region and the headquarters of the Museum of Wine. Tempranillo es la variedad por excelencia para la elaboración de los tintos de Protos. A continental Mediterranean climate with dry and hot summers and long rigorous winters with night frosts that can plunge to minus 18 degrees centigrade. Experts agree that large temperature fluctuations between day and night benefit the slow ripening of grapes, which contribute to a higher accumulation of sugars as well as a great concentration of tannins and polyphenols. Grape harvesting is completely manual. No hay ninguna bodega más visitada de esta denominación de origen. o que un día, en plenos años 80, fue un merendero en la playa de Daimús (a 15 minutos en coche de Oliva), hoy es un referente gastronómico de primera fila. Un restaurante ineludible para los paladares exquisitos con unos platos creados por las sabias y afanosas manos del chef Manuel Alonso. El restaurante Casa Manolo, con dos Soles Repsol y una estrella Michelin, nada menos, tiene una insólita historia detrás que viene a explicar por qué hoy es un lugar capital de la gastronomía valenciana. Un lugar de culto al producto cercano, de la huerta y del mar.

n the middle of the 80s, it was a picnic area on the beach at Daimús (only 15 minutes away from Oliva by car). Nowadays, it is a leading gastronomic reference. This restaurant is a must for the refined palates. A major place to enjoy the best dishes created by the wise and dedicated hands of the chef Manuel Alonso. Awarded two Sun-ratings by the Repsol Restaurant Guide in Spain and one Michelin star, the restaurant Casa Manolo hides an unusual history. The clear reason why it is the capital of the Valencian gastronomy, a place of worship of the local produce coming from the sea and the orchards.

En 1985, dónde hoy encontramos Casa Manolo, no había más que un merendero de playa. Una modesta construcción de madera sobre la arena donde la gente pedía las bebidas para acompañar el bocadillo que traía de casa. Allí llegaron los padres de Manuel desde Madrid, con sus dos hijos pequeños. Uno de ellos, Manuel. Poco a poco, la madre, Matilde, comenzó a cocinar arroces y esos platos típicos de los lugares de playa mediterránea.

In 1985, there was only a small picnic area by the beach where the restaurant Casa Manolo stands today. A modest wooden structure on the sand where people used to buy the refreshing drinks to eat with the sandwich they had brought from home. There landed a family directly from Madrid, with two little children. One of them was Manuel, the chef. Little by little, the mother of the family, Matilde, began cooking rice and typical dishes from the Mediterranean beach enclaves.

Inquieto, con una sensibilidad especial por la cocina, Manuel disfrutaba ayudando a sus padres, enredar en la cocina y entre las mesas del merendero. Aquellas recetas, sus enseñanzas, el olor embriagador de sus pucheros, el borboteo celestial de las ollas a fuego lento consolidaron el arraigo inherente de la tradición en su cocina. “Toda la vida he querido esto”, explica ahora el Manuel adulto.

With a great sensitivity when it comes to cooking, the vivacious child Manuel enjoyed helping their parents, messing everything in the kitchen and playing around the tables in the picnic area. Those recipes, those teachings, the heady scent of soups and stews, the heavenly bubbling of the simmering pots strengthened his roots in the traditional cooking. “I have been wanting this for my entire life”, explains the adult Manuel.

Casa Manolo, y el resto de la oferta gastronómica que posee en esos metros cuadrados de playa, se encuentra en una ubicación inmejorable: junto al mar calmado y la franja azul infinita que se ve desde cualquiera de los lugares en los que uno se puede sentar.

Just like the extensive range of gastronomy offered in those square metres of beach, Casa Manolo is in an unbeatable location: by the calm sea and with the infinite blue horizon as a background. This landscape can be appreciated form any of the tables in the restaurant.

Fue en 2011 cuando Manuel Alonso, que hasta esa fecha había sido más maître que chef, toma las riendas de la cocina de Casa Manolo, donde desde entonces vuelca todo su conocimiento y perseverancia. Sus inquietudes, siempre latentes, afloran pronto. En pocos años, la evolución es espectacular y llegaron los reconocimientos. El cambio de concepto del restaurante fue meteórico.

Manuel Alonso took the reins of the kitchen in Casa Manolo in 2011. Since then he had been more a maître than a chef, but from then he threw himself into the restaurant with determination. New curiosities quickly aroused, although they had already been dormant in him somehow. Evolution was spectacular in just a few years and awards arrived with it. A meteoric change of the restaurant concept.

El restaurante Casa Manolo figura hoy entre los cien mejores restaurantes clásicos europeos, según la Opinionated About Dining (OAD). En esa relación, correspondiente a 2019, el establecimiento de la playa de Daimús se ha posicionado en el puesto 60. Además, el local es, junto con el Restaurante Sant Celoni del chef Óscar Velasco, que figura en el número 94, la única representación española en este ranquin de restaurantes de calidad. Esta guía fue creada por el neoyorquino Steve Plotnicki en la que originariamente documentaba sus aventuras gastronómicas.

Casa Manolo is now among the hundred best classic restaurants in Europe, according to the list published by Opinionated About Dining (OAD). The restaurant located on the beach at Daimús is ranked 60 in the 2019 list. Moreover, it is the only Spanish representative in this range of quality restaurants, together with the Restaurante Sant Celoni by the chef Óscar Velasco in the 94th position. This list was created by the Steve Plotnicki, a New Yorker who started documenting his own gastronomic experiences in a register.

necesita ver el alma del producto, entenderlo, y a partir de ahí crear y conceptualizar cada uno de sus platos. Es amante incondicional del producto de temporada y muta su cocina en función del mercado. Lleva al límite la palabra sabor. Su reto es potenciarlo al máximo, sin máscaras ni disfraces. Detallista, tenaz, creativo, inquieto, busca la perfección. ‘Un plato no ha de ser nunca producto del azar, todo está pensado, meditado; todo tiene un porqué’, indica el maestro cocinero. Manuel se formó en la cocina para hacer postres. Eso fue lo primero; lo demás llegó poco a poco. Anduvo en la cocina del restaurante Ca Sento, que ya era entonces un restaurante singular y prestigioso de Valencia, pegado a su chef, Raúl Alexandre. Tiempo después hizo lo mismo pero en la cocina. “Aprendí con Raúl a tratar el producto, la perfección de los acabados, el punto de los pescados, la cocción exacta”, apunta. Manuel Alonso es fruto de esa experiencia y de la que tiempo después tendría en las cocinas de Arzak o Martín Berasategui. Los dos lo acogieron sin problemas y de los dos aprendió muchas cosas: la importancia de la jerarquización de la cocina, por ejemplo, o la disciplina. “Yo quería un restaurante en mayúsculas, un restaurante gastronómico, así que me puse a ello. Aquí, en lo que había sido el chiringuito siempre se había comido bien. En realidad el camino difícil lo hicieron mis padres, que tenían un sendero sin asfaltar. Yo me puse en la autopista. Yo lo que metí aquí fue la creatividad técnica, un nuevo concepto –ese que yo había visto al salir de casa– y poco a poco construí mi camino”. En 2014 llegó la estrella Michelín. “La estrella te pone en el mapa gastronómico, adquieres un compromiso. En realidad tú haces lo mismo que hacías. La casa no cambia, como no había cambiado con el Sol Repsol” (ahora tiene dos).

to know it. Then, he can develop the thought and create all his dishes. He is an unconditional lover of the seasonal product and his cuisine is determined by the marked. The word “flavour” is pushed to the limit. His main challenge is to play the flavour up to the maximum while preserving it at the same time. Perfectionist, tenacious, creative, restless… He looks for perfection. “The produce of a dish can never be selected at random. Everything needs to be thought and meditated. Everything has a meaning, a reason” explains the master chef. Manuel studied for making desserts. This was his first step and, step by step, everything else followed. He worked as a pastry cook in the kitchen of the restaurant ‘Ca Sento, a singular and prestigious restaurant in Valencia, stuck to the chef Raúl Alexandre. Sometime later, he worked the same way but as a kitchen assistant. “I learnt how to cook produce with Raúl, the cooking time, the doneness in fish and meat, the perfection of details” he declares. Manuel Alonso is the result of the aforementioned experience and also of the later experience gained in the restaurants of Arzak and Martín Berasategui. It was an easy-going experience with both, and he learnt a lot: the importance of hierarchical organization in a kitchen or discipline, for example. “I wanted to have a restaurant in capital letters, a gastronomic restaurant, and thus I started working for it. People had always eaten well in our outdoor restaurant. In fact, my parents started trudging in an unpaved track. I started on the highway. Here I put in technical creativity, a new concept- what I had seen by going out of the house- and little by little built my pathway. In 2014 the Michelin star arrived. ”The star puts you on the gastronomical map, you acquire a commitment. In reality you do the same as before. The house doesn’t change, just like it didn’t with the Sol Repsol” (now he has two).
