WELCOME TO OH18! Oh18 (Oh One Eight) is all about local and our goal with this magazine is to promote local businesses and people. We want to instill value, strength and pride in our community, in Chickasha and in surrounding areas. We believe our smaller town has big things to offer and we can't wait to share them all with you. This is the first issue of many more to come. Our publication will feature local shops, restaurants, entertainment hot spots, venues, live music and the list goes on and on. This place, our hometown, it is bursting with local flavor and we are here for it! You may be wondering where the name, Oh18, comes from and it's as rooted in this area as we are. The central hub of our region is Chickasha with the zip code 73018 or seven-three-OH-ONE-EIGHT. This doesn't mean we stop with Chickasha though, we love all of the small towns and cool locations surrounding us so don't feel left out! We'll be coming to highlight you as well. That's it! Wilson and Bonfils Flying School
A
t the time of World War II, Wilson and Bonfils Flying School took up root in Chickasha, Oklahoma. During the war, cadets trained here in a ten we ek course to become U.S. Army Air Force pilots where approximately 250,000 student pilots graduated. Over 8,000 aviators trained here during the lifespan of the school. In August of 1945, the school closed after four years in action. The facility and fields became what we now know as the Chickasha Municipal Airport. Today, the hangars and concrete slab are all that remains of the school which on ce held a mess hall and classrooms. Blueberry-Pecan Galette the perfect summertime treat
Preparation
Ingredients
DOUGH
DOUGH • ½ cup pecans • 1 cup plus 2 tablespoons all-purpose flour • 2 teaspoons sugar • ½ teaspoon kosher salt • ¼ teaspoon ground cinnamon • ½ cup (1 stick) chilled unsalted butter, cut into pieces
Step 1 Preheat oven to 350°. Toast pecans until slightly darkened, 10–15 minutes; let cool. Pulse pecans in food processor until the consistency of coarse meal. Add flour, sugar, salt, and cinnamon and pulse just to combine. Add butter, pulse until mixture resembles coarse meal with a few pea-size pieces remaining. Step 2 Transfer to a large bowl; drizzle with 4 Tbsp. ice water and mix, adding another tablespoonful of water if needed until mixture comes together. Gently pat dough into a 6" diameter disk. Wrap in plastic and chill at least 1 hour. FILLING AND ASSEMBLY Step 3 Preheat oven to 375°. Toss blueberries, cornstarch, lemon juice, and ¼ cup sugar. Step 4 Roll out dough on a lightly floured surface to 12" round. Transfer to a parchmentlined baking sheet. Mound blueberries in center of dough, leaving a 2" border. Fold edges over, overlapping slightly. Brush dough with milk and sprinkle with sugar. Step 5 Bake galette until crust is dark golden brown and filling is bubbling, 45–50 minutes.
