Editor's rant of the day food waste. Doesn't everyone love leftovers?

When was the last time you threw out food? I let half a pot of cottage cheese go yesterday because it was green (and I felt ashamed of myself for doing it) and in January I gave the dog half a piece of toast because the cat had licked it.

And that’s about it, certainly this year. I have a husband and three sons, so obviously it’s easy for me to be holier than thou about this issue, but the fact is, I simply do not understand why there are so many news stories around about the colossal amount of food this country throws away.

Apparently, it’s all the fault of the supermarkets, because they do three-for-two offers, but surely we’re responsible to use what we buy? The supermarkets have plenty to answer for, but it’s moronic to argue that they are responsible for our shameful wastefulness.

I don’t know how many kids these days are served last night's tea for breakfast, but vivid experience tells me that once your breakfast comprises shepherd’s pie which

Yet Love Food Hate Waste sent me a press release today claiming that the UK chucks out 34,000 tonnes of beef every year, which tells me that, a. we're a feckless lot who no longer respect food, and b. no-one knows how to make shepherd's pie anymore.

I wouldn’t recommend my father’s Edwardian-style parenting (ie, last night’s tea for breakfast) to anyone, but I fully embrace his rule that you clear your plate and are grateful for it. My kids also love our transformed leftovers (I give you, dear reader, bubble and squeak), I also cook extra of many meals so I can freeze for later, and the leftover Sunday roast makes an easy Monday cottage pie or stir fry. Isn't this just what you do, or is it really okay to chuck out the equivalent of 300m burgers (according to Love Food Hate Waste) every year?

What a waste...

Ingredients 150g fresh wholemeal breadcrumbs 1 tbsp fennel seeds 6 large fresh sprigs thyme 3 tbsp olive oil 2 tbsp semi-skimmed milk 1.25kg rolled beef topside, trimmed of excess fat 1 tbsp wholegrain mustard 1 celeriac, peeled 2 sweet potatoes, peeled 4 carrots, peeled 300g shallots, peeled 100ml medium-sweet sherry, madeira or port salt and pepper Method Preheat the oven to 190C/Gas 5.

Mix the breadcrumbs and fennel seeds in a bowl with the leaves from two of the thyme sprigs and seasoning to taste. Sprinkle 2tbsp of the olive oil and the milk over the crumbs and mix thoroughly until they are moist and clump together.

Place the beef in a large, lightly oiled roasting tin and spread with the mustard. Press the crumb mixture on the top of the meat to make a neat, firm crust. Roast for about 1¾ hours for a medium result or about 2 hours for well-done,

juicy meat. Cover the crust loosely with a piece of foil after 1 hour to prevent over-browning, then remove the foil for the final 5 mins of cooking. Cut the celeriac and sweet potatoes into 3.5cm chunks and place in a large bowl. Halve the carrots lengthways, then cut them across into chunky sticks.

Add to the bowl with the shallots and the remaining thyme leaves and oil. Mix well. The vegetables require about 1 hour for roasting, so put them in the oven when the beef has been cooking for 45 mins to 1 hour. Arrange around the meat, placing any that won't fit in a separate roasting tin or ovenproof dish. Turn the vegetables and baste them once during cooking.

Remove the meat and vegetables to a warmed serving dish and cover with foil. Pour 300ml water into the roasting tin and bring to the boil, stirring and scraping up all the browned cooking residue on the bottom of the tin. Add the sherry, Madeira or port and boil steadily for 5–7 mins, stirring occasionally until the liquid is reduced by about half. Season, then strain into a jug. Serve with the roast vegetables and gravy.

Hey, little hen...

It's cold outside, but the hens are laying Hello again from Vallum in what’s been a very frosty month. Our gardener Caroline made the journey over a few weeks ago to start preparing for spring planting, only to find it exasperatingly frozen solid, even by 2pm, despite a beautiful winter sun doing its best.

Her broad beans and garlic which she planted last year are coming through well and the flower bulbs she planted are 90% damage free so all in all that's a good start! Caroline has suggested we take down some of the poly tunnels to open up the views from the soon-to-be refurbished tea room. We have also been debating a straw build -

just something dinky to sit in and enjoy the view so we can make tea and shelter from the elements, but I have been trying to persuade my husband Peter for a few years now, so don’t hold your breath.

The hens are on great form!

We have seven laying hens, six of which our daughter Phoebe, seven, hatched from her original hen and (due to legislation) we are only allowed to sell them for cash into a ‘Phoebe pot’ in our Patisserie & Deli – we’re not allowed to put them on our breakfasts, which is complete lunacy - we would have to become a registered packing plant apparently. Anyway, Phoebe is chuffed to bits and coining it in.

She says she's taking us to see her sister poppy in Australia!

CRISPYMACKEREL,FENNELAIOLI &FENNELSALAD SERVES 4 Ingredients For the crispy mackerel 2 large mackerel, filleted, trimmed and pin-boned 50g plain flour 2 eggs, beaten 120g Japanese panko breadcrumbs oil for deep-frying For the fennel aioli 2 small cloves garlic, gently cooked immersed in oil until soft 1 tsp toasted fennel seeds, ground ½ tsp Maldon sea salt 2 tsp lemon juice 2 egg yolks 150ml rapeseed oil 25ml olive oil an extra squeeze of lemon For the fennel and pea shoot salad 1 fennel bulb, trimmed 2 handfuls of pea shoots juice of ½ lemon 50 ml Northumbrian rapeseed oil Method To prepare the crispy mackerel, place the flour, egg and

breadcrumbs in three separate bowls. Coat each fillet in the flour, egg and breadcrumbs and place on a plate. Set aside. For the fennel aioli, place the garlic cloves in a blender with the fennel seeds, salt and lemon juice and combine.

Add the egg yolks and with the blender running on a slow speed, add the oils in a steady stream until emulsified. Taste and if required add a touch more lemon juice. Set aside (this can be stored in the fridge for about a week). For the fennel and pea shoot salad, finely slice the fennel, using a mandolin if you have one. Place in a bowl with the pea shoots and dress with the lemon juice and rapeseed oil. With everything prepared, heat oil in a deep fryer or deep, heavy pan to 180C. Add the mackerel fillets and fry until golden. Remove from the fryer and drain on kitchen paper.

To serve, place the mackerel on a plate, spoon some aioli on the side and garnish with the fennel salad.

Tip: This also works really well with herrings and if you can’t get pea shoots you could use rocket.

Modern art Jane Pikett proves she’s the best mum in the world (again)

I

am the gift that keeps on giving, as I tell my offspring with great regularity. For never were three better-fed sons, treated to meals out ad infinitum, accompanied by my sparkling wit. Lucky things.

This week, number two son, 18, has been out for dinner twice on consecutive nights.

Number three son, meanwhile, aged eight, favourite food, oysters (I kid ye not), has been out for breakfast and lunch.

Number one son,19, who is at University in Bangor, North Wales, enjoyed brunch, lunch, afternoon tea, and the fruits of one of the best restaurants in Wales (the excellent Marram Grass Café, Anglesey), plus the privilege of having me to stay last weekend. As I say, lucky...

Number two says his best meal of the week was his steak at Artisan at The Biscuit Factory art gallery, Newcastle.

I say steak - it was described, without ceremony, as Grilled 8oz Beef on the menu – satisfyingly marbled, generously textured, proper country beef, packing a heavyweight flavour punch yet tender as the sweetest night.

Requiring no ornamentation but a finely frothed Bearnaise sauce on the side, bitter leaves, and proper homemade chips, halfway through the child began to eat very slowly. “Are you full?”

I asked. “No, I just don’t want it to end,” he replied, wistfully.

on our mum-son circuit. Head chef Andrew Wilkinson is among the best in the north of England, his dishes expertly executed, intensely flavoured, their ingredients sourced from the best in the region and served in an atmosphere which buzzes with enthusiasm.

He presents fantastic monthly Seasonal Showcase evenings, a glorious Friday fish menu, and outstanding Sunday lunches, while on our visit, he treated us to our first wild garlic of the year – tender and supple, an exquisite partner to succulent king scallops.

The bouillabaisse, meanwhile, with rouille, gruyère and croutons, was magnificently, profoundly flavoured. The sea bream crisply skinned, succulently fleshed, cleverly accompanied by crab, orange, samphire, and caramelised fennel. We shared the spoilt son’s chips, and took two spoons to an exuberant baked Alaska and a dish of velvety homemade vanilla and pistachio ice creams, and then sat back and admired the art on the walls and the artistry of food executed with imagination and flair.

Wilkinson is one of the great talents of the North East and he has selected the perfect venue in which to showcase his culinary modern art. Meanwhile, I am probably the best mum ever.

THE GOOD LIFE Dean Bailey meets a new farmer who’s left a high-flying international career to make a very good life in the country

inding through the woodland just south of the village of Wylam in the Tyne Valley it’s easy to see why Danny and Jane Turner traded in their careers in plant hire and administration in favour of the good life at Daniel Farm.

Home to free-range hens, rare breed pigs, cows, alpacas, goats and a bustling tea room and farm shop, it’s hard to imagine none of this was here two years ago when they took on this 100 acre farm, which by happy coincidence shares Danny's name.

“I had a dream of owning a farm and couldn’t have found a better place for us to do it,” says Danny as we take it seat in the tea room he built on the dairy farm’s old slurry pit last summer.

“I’d worked in heavy plant on Siberian logging and African gold mining projects and achieved a lot, but I wasn’t nearly as happy as I am here.”

With no livestock on the farm and its outbuildings falling down, the first priority for the Turners was getting the 17th Century farmhouse habitable. “It was a big project,” says Danny. “We started with the

house, which hadn’t had a lot of love over the years and needed central heating and a new roof.” Getting the house ready to move into took six months before Danny, who had previously run his own plant hire business, got to work setting up the farm.

The 6,000 free-range hens are the core of the business and another 8,000 will arrive in April, “though I need to get back to putting the sheds up for them to live in,” says Danny, whose time is divided between running the business, building projects, learning how to rear his rare breeds, and being a farmhand.

The tea room is large yet cosy and attached to the farm shop, which is filled with produce from the farm and other local producers.

“The tea room is flying,” says Danny.

“People like our homemade food and the fact that we use everything we can from the farm.”

In addition to the hens, there are rare breed Belted Galloway and Beef Shorthorn cattle, and Tammworth pigs, and plans to introduce more breeds later this year. “These rare breeds aren’t

commercially viable for big farms, but they produce fantastic meat, which is well worth the extra effort,” says Danny.

There are also plans for an animal park with alpacas, pygmy goats, donkeys and Shetland ponies, plus a miniature railway line.

“Starting with the chickens was a steep learning curve,” says Danny. “The amount of feed you need comes in by the truckload, for a start. But we’ve had some great help from local farmers and breeders who’ve shared their expertise with us.”

Danny and Jane's son Joseph is studying agriculture at Kirkley Hall College in Northumberland and he shares his father’s passion for farming, while their daughter Harriet, 12, isn’t a farm girl just yet.

“She’s not overly fond of the smell,” admits Danny, who is clearly a man who has found, aged 47, his place in the world.

“It’s really amazing when you stand here and see what’s changed in two years,” says Danny. “I can’t wait to get out of bed in the morning and now, aged 47, I’ve got a new lease of life. I’m very lucky.”

to expand my weekend brunch repertoire recently. I’ve noticed places taking brunch pretty seriously recently, combining two meals into one generally sounds like a bad idea to me, but in fact I’m pretty keen on a lot of brunch-type dishes, these are a few I’ve been making recently.

THE GRAZER EGGS ON TOAST WITH AVOCADO AND..

I’ve been trying out a lot of versions of this recently and you don’t really need a recipe, just ideas. A couple of my favourite versions both start with some buttered sourdough toast, sliced avocado, a fried egg, wilted spinach cooked in the same pan, a dollop of live yoghurt, a drizzle of harissa and some coriander leaves. Leave out the coriander, add some crispy bacon or a bit of salt beef, perhaps some salmon and dill, or feta and pesto, the combinations are endless...

SHAKSHUKA A weekend favourite, especially on a cold morning; a bit of heat and spice with your morning eggs.

It’s a Tunisian dish of baked eggs nestled in tomatoes, soft peppers, and garlicky harissa spice.

Heat 2 tbsp olive oil in a frying pan, add 2 tbsp harissa (I used an amazing rose harissa I discovered recently), 2 tsp tomato purée, 2 diced red peppers, 4 cloves garlic finely chopped, 1 tsp ground cumin and ¾ tsp salt, then cook gently for about 10 mins. Add a tin of chopped tomatoes, then simmer for another 10 mins until the peppers are soft and you have a thick sauce.

Then make little dips in the sauce to add your eggs - I used 4 eggs, you can add up to 8 depending on how many you are feeding. Swirl the whites of the eggs into the sauce a little bit and simmer for about 8 mins or until the whites are set and the yolks are still runny. Serve with a big dollop of yoghurt and some fresh bread. The runny egg yolks in the spicy tomato sauce are delicious, with fresh tangy yoghurt and soft sweet red peppers.

BREAKFAST BURRITOS WITH AVOCADO, TOMATO AND CHORIZO I’ve been making these burritos for ages, and the combinations of filling can be swapped, changed, left in, left out, whatever you fancy really. Filling being the operative word, they will keep you going all day long and more. I like the combination of avocado, tomatoes and herbs with chorizo in this version, it seems a little bit more fresh than the more traditional Mexican burrito filled with beef, refried beans, cheese and sour cream.

A little leftover rice is preferable, but as I didn’t have any I cooked a handful of white long grain rice in some salted water. Chop some cherry tomatoes, a handful of coriander and dice some chorizo. Just make as much as you fancy, hunger levels and numbers of people depending. One packed burrito is enough for me.

Mash an avocado with a pinch of salt, a little splash of olive oil and a squeeze of lemon juice. Heat your tortilla wraps in the oven, wrapped in tin foil to stop them drying out. They only take about 10 mins in a medium oven.

Fry off the diced chorizo and lightly scramble 2 large free-range eggs while the wraps heat up.

Then simply assemble - a little rice, some eggs, topped with chorizo, tomatoes, avocado and coriander, down the middle of the tortilla. Fold the end up a little, then fold each of the sides inwards to form a wrap. I really like the colours in each of the bowls, it’s a pretty meal, a little kit of parts laid out on the table that you have to assemble yourself. The freshness of the tomatoes, coriander and avocado is delicious with creamy eggs and spicy chorizo.

SPICY MALAGUETA CHICKEN SERVES 4 Ingredients 500g boneless skinless chicken thighs 5 tbsp Spicy Malagueta marinade 1 large red pepper sea salt and freshly ground black pepper 1 quantity Honey Mustard Glaze Spicy malagueta marinade makes about 275ml 70g small red chillies (preferably Malagueta) 5 garlic cloves, lightly crushed 70ml light olive or sunflower oil 2 tbsp lemon juice 2½ tsp tomato purée 2½ tsp caster sugar ½ tsp dried chilli flakes 1 heaped tbsp sweet paprika 2 tsp sea salt pinch of dried oregano Honey mustard glaze - makes about 50ml 2 tbsp honey 1 tbsp cider vinegar 1 tsp Dijon mustard For the marinade, preheat the oven to 180C/Gas4. Split the chillies lengthways and place in a

small roasting tray with the garlic and olive oil. Cook in the oven for 10 mins. Leave to cool for a few mins, then put the chillies, garlic and oil in a small food processor or blender and add the rest of the ingredients. Blend to a smooth purée. Transfer to a clean jar, seal and keep refrigerated.

For the honey mustard glaze Stir all the ingredients together in a small bowl and brush over grilled meat to glaze it.

For the chicken Trim any excess fat off the meat. Place in a bowl, add the marinade and toss to coat evenly. Cover the bowl with cling film and chill for at least 4 hours, preferably overnight. Set oven grill to medium heat. Trim and de-seed the pepper then cut into 2-3cm thick strips. Thread peppers and chicken thighs alternately onto 4-5 metal skewers. Season then grill or barbecue for about 10-12 mins, turning occasionally. Baste chicken with the honey glaze and return to the heat for a few more mins until golden brown and cooked through.

Leave to rest for a few mins.

Serve hot.

CRUNCHY RICE BALLS – BOLINHOS

CRAZY LADY CAKE (NEGA MALUCA)

MAKES ABOUT 20-25 BALLS Ingredients 150g long grain rice 1 medium egg 4 spring onions, finely chopped 70g grated parmesan 1 tsp sea salt, or to taste 1 tsp baking powder 80g plain flour (extra for rolling) small bunch flat leaf parsley, finely chopped vegetable or groundnut oil, for deep-fat frying 4 limes cut into wedges Method Put the rice in a pan with 400ml water and bring to the boil. Simmer and cook, partially covered, for about 10 mins until most of the water has been absorbed. Turn off the heat, cover the pan with a lid and leave to steam for the rice to absorb any remaining water. The rice will be slightly overcooked and quite sticky, and you should be able to roll a small amount into a ball. Cool completely, transfer to a mixing bowl and add the egg, spring onions, parmesan, salt, baking powder, half the flour and all but 1 tbsp of chopped parsley. Mix well. It should be stiff enough to be formed into balls. If it is too sticky, add the remaining flour, until you get the right consistency. Roll the mixture into balls, about 30g each. Heat the oil in a deep pan or a deep-fat fryer until it reaches 190C. Fry in batches until golden brown then drain on a tray lined with paper towels. Keep the bolinhos warm in oven as you fry each batch.

Serve with a sprinkling of grated parmesan, finely chopped parsley and wedges of lime.

SERVES 8–10 Ingredients 360g good-quality dark chocolate 200g golden caster sugar 200g butter 3 large eggs, separated 150g ground almonds pinch sea salt Method Preheat the oven to 170C/ Gas 3. Grease and line a deep round 20cm-diameter springform cake tin. Break the chocolate into small pieces and place in a heatproof bowl with the sugar and butter. Place over a pan of barely simmering water, making sure that the bottom of the bowl does not touch the water. Stir until the chocolate and butter have melted and the mixture is smooth.

Remove the bowl from the pan and leave to cool slightly. Fold in the egg yolks, followed by the ground almonds. Put the egg whites and salt into a large bowl and whisk to soft peaks. Fold this through the chocolate mixture.

Spread the mixture evenly into the prepared tin, and place on a large baking tray. Bake for 40– 45 mins, until the cake is just set but still quite moist in the middle.

It should be firm on top but have a very slight wobble underneath when you gently shake it, and a few crumbs should stick to a skewer inserted into the middle.

Remove from the oven and immediately drape a clean kitchen towel over it (to prevent the top becoming too crusty).

Leave to cool completely before unmoulding to serve.

Elise Rana Hopper looks at the rise of teetotal socialising in the North East and beyond

S

omething’s changing in Newcastle’s party central - it’s drying out. When it comes to new openings, it isn’t bars or nightclubs, but cafés and restaurants that are on the rise, and of these some of the most interesting success stories share the distinct unifying factor of being pretty much booze-free.

But is this a fad - the hospitality industry equivalent of the odd month of detox - or the harbinger of a greater cultural shift?

The figures paint the picture. In 2015, the rate of pub closures as monitored by CAMRA slowed slightly to 27 a week, but this is compared to an ever-growing coffee shop market which for the last decade and a half has been one of the most successful in the UK economy.

Even pub chain JD Wetherspoon sells almost as much coffee as it does real ale, while Andy Harrison, chief executive of Costa parent

company Whitbread, has said that coffee shops have now filled a hole in British society that would previously have been met by pubs.

The growth of female spending power has been credited, but it isn’t just women who are picking pots of tea over pints of lager - it’s the next generation.

“Drinking has always been the default for students, but there are a lot of youngsters who are saying - that’s not for me,” says Patrick Quilliam, one of the three brothers whose eponymous late-night teahouse in Newcastle has proved a popular student haunt despite - or perhaps because of - the fact that it does not serve alcohol. Based on the teahouse culture of Budapest and borne of the brothers’ own frustration at not being able to find a decent cup of tea past 5.30pm in their hometown, the teetotal nightlife destination is a hit. “We thought, if this can be popular in a country where even breakfast culture includes half a

Again, it’s reflected in the figures: according to the Office for National Statistics, the proportion of young adults who are teetotal increased by more than 40% between 2005 and 2013, while binge drinking in the same age group has fallen more than a third. With decreased spending power and an uncertain job market, blithely getting hammered every night is no longer the default for the Instagram generation. While the Diamond Strip continues to twinkle for some, it’s a total turnoff for many young people, according to Pat Quilliam. “They get off the train and walk through the Bigg Market on a Friday or Saturday night and see 40 and 50-year-olds staggering around - they don’t want to be like that.”

still involve late nights. Newcastle University was apparently delighted to have the Quilliam Brothers providing an alternative to the casino, which is where many of its international students were ending up in search of tea in the evening. Sugar is still an acceptable vice, and catching up over ice cream sundaes or indulgent bakery products is also growing in popularity. 2015 saw not one but two lateopening dessert parlour chains opening outlets in central Newcastle just streets apart, with Grainger Street’s Creams following hot on the heels of Kaspa’s on Clayton Street.

instead. Even when alcohol is on the menu, it’s no longer the primary focus for some of the city’s more interesting venues. The recently revamped bar and café at Tyneside Cinema has a packed schedule of free screenings from cult classics to silent film, as well as knitting, book and language clubs.

Meditation, art and dance classes are proving popular at ¡VAMOS! Social, the late-night cultural hub operating in the former Venue nightclub at the heart of the emerging ‘creative quarter’ around Newcastle’s Pilgrim Street, Market Street and New Bridge Street West.

“The scene in Newcastle has diversified

and developed its own ecology of authentic independent activity,” says Nik Barrera of ¡VAMOS!. “Nightclubs’ presence have lessened, but also audience tastes have developed to include food, film, dance and cultural activities.”

“The atmosphere in Newcastle has changed,” concludes Pat Quilliam. “People are taking more of an interest in what they’re eating and drinking, and if they are drinking alcohol, it’s often to enjoy the taste rather than to just get wasted. But it’s just a lot more acceptable to want to do something a bit more sociable when you’re going out. When I see people taking pictures of themselves to show they’re out drinking tea and playing Scrabble at 10pm, it’s really encouraging - I think that’s a brilliant thing to show off about.”

GARDENERS’ WORLD Rosie McGlade learns how to make a biryani at a gardening and cookery project that’s become an oasis of hope and purpose for asylum seekers in the region

T

he Comfrey Project began on a Newcastle West End allotment, its aim to bring together people who’d fled countries where their lives were in danger, and to help them heal through gardening.

It’s manager Yvonne Hartnett talks about recent research that links repetitive, rhythmic activities to significant improvements in mental health, and the power of small achievements, like stepping back to admire the row of plants you’ve just dead-headed, to promote positive feelings and a sense of esteem.

But most of all, this project is about companionship. “Isolation is one of the worst

things anyone can endure,” Yvonne says, “and that’s a very real danger for many people here.

Gardening is good for you in so many ways.”

The Comfrey Project, named after a nurturing herb and now into its 11th year, is also very much about cooking. Most days of the week, the small kitchen in its new centre is packed with people from all over the world - Iran, Syria, Eritrea, Afghanistan, Iraq, among others - and I find them learning the intricacies of chicken biryani, courtesy of Nadheera from Sri Lanka.

“When you’re cooking basmati rice, use the handle of a long wooden spoon to gently stir it, not the spoon end,” she says.

The rice is just over half boiled before it’s

taken off the heat and carefully spooned into a large pan, layered between curry and coriander before going in the oven for half an hour. It smells of cardamom, cinnamon, star anise and bay leaves. Next time, it’ll be the turn of a different participant from a whole other culinary tradition to be teacher. There is nothing like food for bringing people together, just as there’s nothing like it for leveling differences. Most people, whatever their nationality, love to share good food. We all love to laugh, too, and there’s plenty of that going on.

Gateshead, with an acre or so of land. In the distance you can see right up the Tyne Valley and even now, in late winter, you can tell the garden is going to be fabulous. Certainly, there’s no shortage of people prepared to put in the required hard work.

Sanja Ratkusic, a refugee whose family fled from Bosnia in the 1990s and who is now the project’s horticulturalist, gives us a tour. There’ll be a foraging hedge with seahawthorn, sloes and brambles which it is hoped will fill with birds and provide fruit for preserves in the autumn. There’ll also be beehives and honey, and great swathes of vegetable plots and poly tunnels. There’ll be space for a kick-about football pitch and a flower meadow, a wildlife pond, a wood-fired bread oven and a silkworm project.

Everything grown will be cooked and eaten on site, mostly out in the garden and on the allotments, with a couple of portable gas stoves by the sheds. Never do they eat cold sandwiches...

As well as all the usual allotment produce, project members raise countless varieties of gourds, sweet little exotic onions, and greens like kovo - a small spring-like cabbage. “We end up growing a lot of different chilli peppers, some really hot ones,” says Sanja. “Everyone has a favourite depending on which part of the world they’re from.”

don’t have the right to work in the UK. Many have come here alone, and ahead lies a kind of limbo and loneliness. To be members of the Comfrey Project, participants must be referred by organisations such as the refugee services, mental health specialists, or their doctor.

Nadheera was an IT teacher at a secondary school in Kandy, Sri Lanka’s one-time capital, and her husband was an accountant. “You give up your family, your identity, your career, everything,” she says in perfect English. “I miss home. My mother’s there. I miss my career, but this project is a wonderful place. I’ve been in the UK almost four years, and coming to the Comfrey Project for two-and-a-half years. Asylum seekers live with a lot of stress in their lives and this gives people the opportunity to make friends and learn new things from different cultures. It’s a wonderful part of many people’s lives.”

When the growing season really kicks in, horticulturist Sanja thinks around 250 people will share the facilities. “We’ll plant enough for people to come and have a meal three days a week. But a big part of what we’re about is welcoming others in the community too, people with learning disabilities, veterans, women’s groups, and just ordinary neighbours who want to volunteer and help out.”

It’s lunchtime. Everyone sits at a large table in the communal area to eat Nadheera’s biryani, cooked on a budget and absolutely delicious. Then at 1pm a group of men and women leave to get the bus to the project’s allotment in Walkergate. There’s an air of purpose about them. They’’ll be sowing seeds for the afternoon.

Syrian Imad has stayed on a while longer. He had to leave his wife and five children in Syria. He doesn’t cook - where he grew up boys were never taught - but he likes gardening. It’s awful being on your own, he says in broken English, and shows us pictures of his family. Watching him head off later to his own four walls, you really realise what a lifeline this project must be. www.thecomfreyproject.org

GROWING COMMUNITY ASHAK, BY SAFIA, FROM AFGHANISTAN

CALALU DE PEIXE, BY BELMIRA, FROM ANGOLA SERVES 4 Ingredients 1kg dried smoked fish 1 onion, finely chopped 3 tomatoes, chopped 1 scotch bonnet chilli, chopped 500g okra, trimmed and sliced 500g sweet potato leaves (or spring greens or kale) 4 garlic cloves, chopped 1½ cups red palm oil salt to taste 1 tbsp lemon juice 1 sweet potato 1 cassava root 1 cup cassava flour (garri) Method Wash the fish thoroughly. Place in a bowl and cover with cold water and leave overnight. You might need to change the water a few times. Drain and set aside.

Peel potatoes and cassava and slice into 2cm discs. In a large saucepan, alternate layers of fish and all the vegetables.

Pour the lemon juice, palm oil, scotch bonnet chilli and salt (to taste) over the contents of the saucepan. Simmer for about 40 mins or until tender.

Dry roast the cassava flour until golden and serve on the side.

SERVES 4 Ingredients For the dough 1 cup plain flour half tsp salt half cup water For the filling 1 leek 1 tsp salt 1 tsp oil For the bean sauce half cup oil 1 tin kidney beans half tin chopped tomatoes salt For the kashk sauce 3 tbsp kashk (or sour cream) 2 cloves garlic, mashed dried mint black pepper fresh coriander leaves Method To make the dough, combine the flour, salt and water. Knead into a soft ball and leave to one side in cling film. To make the filling, slice leek finely, add salt and oil and squeeze it with your hands gently to soften it. Roll out the dough on a floured surface to a thickness of 2-3mm and cut out circles. In the middle of each circle place 1 tbsp of filling. Fold each in half to form half moon shaped parcels and stick the edges together. Sprinkle with flour and leave to one side while you make the bean sauce. Heat the oil in the pan and add the tomatoes. Simmer for 5 mins.

Add the kidney beans and salt before reducing until it forms a sauce. Boil the water in a large pan and slowly place the parcels in one by one. Boil gently for 7 mins then remove from the pan and drain. For the kashk sauce, combine the ingredients.

To serve: Spread 2 tbsp of kashk sauce on a plate, place four parcels on top of the sauce.

Drizzle with two spoons of kashk sauce folllowed by two spoons of bean sauce. Decorate with dried mint and black pepper, chopped coriander leaves and serve with lots of flat bread.

Spice trail Jane Pikett is transported to the land of spices thanks to Ury in Newcastle

I

t’s a hard life, all this eating out. At least, it is for the ones I leave at home for yet another Dad Curry - a freakish alliance of ill-matched constituents which could only be dreamt up by a man who considers Vesta Chow Mein a landmark in culinary excellence.

They sit there, three angelic faces turned to me, shining with a mixture of hope and fear. Hope that tonight they will be chosen to accompany me on my adventure in food, fear that they will be left behind to make the best of whatever abomination emerges from the kitchen.

Last night, The Chosen One was particularly fortunate, blessed with a trip to Ury, newly settled on Newcastle Quayside and home to the extraordinary food of Kerala,

India’s land of spices, famed for its Bounty bar beaches, its diversity, and its food, which is marked by an abundance of coconut, rice, tapioca, cloves, cinnamon, cardamom, nutmeg, and ginger.

The dishes of Kerala are variously infused with the culinary traditions of Islam, Syrian Christianity, Hinduism, and international traders drawn here for its prized spices for many hundreds of years. This is the foodie adventurer’s paradise, and at Ury, the influence is predominantly of northern Kerala, the menu a travelogue in its own right.

It tells us, for example, that our exquisite Cheena Chatty Meen fish curry is a delicacy in Syrian Christian-populated hill areas, people thronging village bars to enjoy this dish of king fish prepared with tamarind and spices with

steamed tapioca root, curry leaves, mustard seeds and grated coconut.

Half way through our evening at Ury, I lose count of the number of dishes we have tried (the photos above show a few of them). Save to say, a lot goes home for the pathetic souls we’d left behind.

Each dish brings a new serendipity - the Chicken Pakora red and hot and unlike any you’ve had elsewhere; the seafood soup creamy and sweet with crab, prawn and coconut; the Aloo Bonda potato balls laced with fresh ginger, curry leaves, coriander and black mustard seeds, dipped and fried in chickpea flour batter and served with coconut chutney.

If you try anything here, make it Vazhuthanangha Curry – a Pattambi recipe of aubergines in a paste of roast onion, coriander seeds, chillies and tamarind, mixed

with yoghurt and cashew nut sauce - and tell me it was not created by God himself.

We have a huge spiced potato dhosa which would have fed us both on its own, and despite the fact that we can’t finish, we are still given sweet rice pudding to finish.

No room? Try saying that when this taste of heaven is set before you.

Ury is incredibly special – a wonderful taste of what many consider to be India’s finest foodie region run by a team who love nothing more than sharing their unadulterated joy in the produce of their homeland. VIVA STRAWBERRIES, ROASTED RHUBARB AND ROSEWATER LABNEH BALLS Viva strawberries are in season by April, coinciding with the Yorkshire rhubarb season.

Rhubarb and Viva strawberries are wonderful together and adding the rosewater makes this healthy dessert extra delicious. Enjoy!

SERVES 6-8 INGREDIENTS

For the labneh 50g icing sugar ²⁄3 tbsp of rosewater to taste pinch of salt 500g thick Greek yoghurt For the rhubarb 200g rhubarb 3 tbsp sugar 5 tbsp water To serve 400g Viva strawberries, hulled and quartered rose petals (optional)

METHOD

Start making the labneh a couple of days in advance. Line a sieve with a clean doubled piece cheesecloth or soft fabric, and place over a bowl.

Stir the icing sugar, rosewater and salt into the yoghurt then pour the yoghurt into the centre of the cheesecloth. Pull the four corners of the cheesecloth up and tie it into a bag with string.

Suspend the tied cheesecloth over a bowl overnight to allow the whey to drain out. If your kitchen is cold enough, you can drain the yogurt outside the fridge, otherwise put it in the fridge overnight. The longer you leave the labneh the firmer it will become - after 12 hours it should be the consistency of cream cheese.

Remove the labneh from the cloth the next day, cover and store in the fridge until needed.

To make the labneh balls, make sure that the labneh is firm enough to use a small spoon to scoop out little walnut-sized balls. Roll them in your hands to shape and place on a clean clothlined tray. Store in the fridge.

ON THE BALL To make the rhubarb, preheat the oven to 160C/Gas 3. Trim and cut the rhubarb into short lengths. Put the pieces into a baking dish, then sprinkle over the sugar and water. Cover the dish with a piece of foil or a lid and bake for about 25 mins, or until the rhubarb is soft but still keeps its shape. Allow the rhubarb to cool in its juices. When the rhubarb is cool, drain it and reserve the juices.

To serve, place a few labneh balls on each

serving plate alongside a pile of rhubarb. Dress the Viva strawberries with a few spoonfuls of the rhubarb juices and then spoon the strawberries and rhubarb juice over the labneh balls and rhubarb.

Scatter over the rose petals and serve.

Tip - in place of the labneh balls, you could use a dollop of thick Greek yogurt flavoured with sugar and rosewater.
