The croquette burger is our new creation at THE GALLERY, inspired by the philosophy of the Naito family while emulating the creative drive from their storied heritage as well.

A type of Yoshoku, Western style cuisine that was adopted in Japan during Westernization of the new Japan in Meiji period. As a huge wave of Western influence entered Japan, a new and unique food culture started to blossom. Some of the most notable types of Yoshoku are curry rice, omurice, and croquettes.

The croquette burger we will be offering at THE GALLERY is passed down from the Naito family, who originally used the recipe of a famous Japanese writer, Kuniko Mukoda. The burger is finished with a shibazuke (Japanese pickle) tartar sauce, a staple from Kyoto. Having the opportunity to collaborate with a respected family and using our creativity and passion and build upon their recipe to create something new for this event is such an honor.
