Northern Lights

A

fter the hot, sticky, balmy summer we have all enjoyed (or not depending on your perspective of course), you may be craving a somewhat cooler environement, like Swedens ‘open all year’ ice hotel perhaps. Now, the teenage me, buried deep beneath midriff fat and caution, screamed yes at the thought of a trip to the Swedish Arctic, but the grown-up me started to risk assess. However, you only live once and all of that, so off I went. After two plane rides, I landed in Kiruna, leaving a short drive to the village of Jukkasjärvi and the Ice Hotel. Jukkasjarvi is just 200km north of the Arctic Circle. The village of Jukkasjarvi has a small museum and a pretty church. There isn’t much else nearby apart from picturesque scenery and the Homestead, a highly recommended rustic restaurant. Life here is very different. I found that with the addition of each thermal layer, (you usually wear three), you shed other, unnecessary rituals. Life becomes simpler, slower and no one really cares what you look like. Frankly, everything is about surviving. It is truly liberating. As with the original hotel, the rooms in the new Ice Hotel are individually crafted by 10 OCIO magazine

Sweden’s Arctic Wonderland artists and they are simply beautiful. I had seen pictures of the Ice Hotel, but to see it in the flesh, and understand the feat behind it, is incredible. The activities on offer are astounding: husky rides, survival courses (I can now light a fire without a match and make pine needle tea) and snowmobile tours across frozen lakes. There is a fabulous sauna near the cosy Homestead restaurant where I rolled in snow in my swimsuit. You can also jump into a hole cut in the frozen lake, but even my teenage self wouldn’t have done that. I was advised to make sure that I take a moment at some stage to just stand still, quite alone, and stare at the apricot-coloured sky, it is nothing short of fantastic. This is not a good place to be if you are on any kind of food restricting diet. The food here is hearty, which you need in order to help beat the outside cold. You can eat and

drink to your hearts content and, at 11.30pm, the northern lights come out, like the Wizard of Oz behind a heavy green curtain shining his torch. Words cannot descibe the view, this is truly a sight that must be seen to be believed. My press trip was only a short one and on returning home I started to miss the scenery. The thing is, when you’re there it’s so huge, so different, you can’t really take it all in. And now that I know what is in store for me there, I will be mentally better prepared for my next visit and, there will be a next visit. I am already planning to visit Kebnekaise, Sweden’s highest mountain. Our guide told us all about it and when we return, he has promised us a trip on snowmobiles to a nearby frozen lake where we can drill fishing holes in the ice and try and catch some local fish. Now that will be a good profile picture for my facebook page! n

D

espués del caluroso, húmedo y agradable verano que hemos disfrutado (o no, dependiendo de tu perspectiva por supuesto), estarás deseando un ambiente algo más fresco, quizá como los hoteles de hielo ‘abiertos todo el año’ de Suecia. Lo cierto es que mi yo adolescente, generalmente oculto bajo mi tripita y la prudencia, se emocionó al pensar en un viaje al Ártico Sueco, pero mi parte adulta comenzó a evaluar los riesgos. Sin embargo, solo se vive una vez, así que finalmente me fui. Después de dos vuelos aterricé en Kiruna,

a poca distancia en coche del pueblo de Jukkasjärvi y el Hotel de Hielo. Jukkasjärvi está tan solo 200 km al norte del círculo ártico. El pueblo de Jukkasjärvi tiene un pequeño museo y una bonita iglesia. No hay mucho más por las cercanías aparte de un paisaje pintoresco y el Homestead, un recomendadísimo restaurante rústico. La vida aquí es muy diferente. Descubrí que, aparte de tener que vestir una capa de ropa térmica adicional (normalmente llevas tres), uno abandona otros rituales innecesarios. La vida se vuelve más sencilla, tranquila, y a nadie le importa demasiado tu aspecto. Francamente, todo se limita a la supervivencia. Y es verdaderamente liberador. Como en el hotel original, las habitaciones del Nuevo Hotel de Hielo están diseñadas por artistas de forma individual, y son simplemente preciosas. Había visto fotografías del hotel, pero verlo en persona y comprender la proeza que hay tras él, es increíble.

Su oferta de actividades es asombrosa: trineos con huskys, cursos de supervivencia (ahora puedo encender fuego sin cerillas y hacer té de pino) y tours en moto de nieve por lagos helados. Hay saunas fabulosas cerca del acogedor restaurante Homestead donde pude rodar por la nieve en bañador. También puedes lanzarte al agua en un agujero hecho en el hielo del lago, pero ni siquiera mi parte adolescente tuvo el valor para eso. Me aconsejaron que me asegurara de reservar un momento para simplemente quedarme en pie, a solas, y observar el cielo color albaricoque, que no es nada menos que fantástico. Este no es un buen sitio si estás haciendo dieta. La comida aquí es abundante, lo que es necesario para enfrentarse al frío exterior. Puedes comer y beber sin miramientos y, a las 11.30pm, aparecen las auroras boreales, como si el Mago de Oz hiciera brillar sus antorchas tras una pesada cortina verde. No hay palabras para describir esta imagen, es una vista que verdaderamente debes ver para creer. Mi viaje de prensa fue bastante corto, y al volver a casa comencé a extrañar todo aquello. Lo cierto es que, cuando estás allí es todo tan impresionante, tan diferente, que no te da tiempo a interiorizarlo. Ahora que sé todo lo que me espera allí, estaré mejor preparada mentalmente para mi próxima visita. Y sin duda la habrá. Ya estoy planeando visitar Kebnekaise, la montaña más alta de Suecia. Nuestro guía nos habló de ella y cuando regrese, nos ha prometido un recorrido en moto de nieve a un lago helado cercano en el que puedes hacer agujeros de pesca en el hielo e intentar conseguir algún pescado local. ¡Desde luego será una buena foto de perfil para mi página de Facebook! n OCIO magazine

Fiat Panda Cross W

hen handed the keys to a brand-new car, most owners become obsessed with keeping it clean. They think nothing of spending every weekend visiting their local car wash ensuring their new pride and joy remains in pristine condition. And woe betide anyone who drops the tiniest spec of dirt on the newly vacuumed carpets or leaves an innocent sweet wrapper in one of the door bins. Nothing wrong with that I hear you mutter, but when I finally got my hands on the fleet’s new Fiat Panda Cross, the first thing I wanted to do was to get it as dirty as possible. And it didn’t take me long to find a muddy puddle or two to put the chunky little 4x4 to the test. The cheeky Panda is as much of a hoot to drive on the road as off it. Its lively twocylinder 875cc TwinAir engine thrums 32 OCIO magazine

Fiat Panda Cross Words: Leo Malorini along tunefully and together, we’ve already embarked on several fairly highmileage journeys, which have included a mixture of motorways and A and B-roads – all of which the Panda has tackled with relish. Plus, we’ve definitely had fun on the more challenging muddy stuff. With just a turn of the terrain control switch, the Fiat becomes a very capable off-roader – albeit a small one. Not only does it feature a locking rear differential for extra traction in the really slippery stuff, it also has the same sort

of electronically regulated hill descent control found on much larger (and much more expensive) SUVs. Plus, I love the chunky, bright-red towing eyes that poke out from the front bumper. Not only do they look great, they’ll come in handy in the unlikely event that the car needs to be pulled out of the mud. Another neat touch is the optional Winter Pack. This incorporates a heated windscreen – meaning no more freezing hands scraping the ice away – plus, my favourite, heated front seats, which warm up quickly and help keep me toasty even on the chilliest of days. So far, then, I’m loving the Panda Cross, and I’m certainly in no hurry to clean it. In fact, when those around me are spending their Sunday afternoons at the car wash, I’ll be heading off the beaten track in search of more muddy adventures. n

uando se entregan las llaves de un coche nuevo, la mayoría de los propietarios se obsesionan con mantenerlo limpio. Ni por un segundo consideran pasar por el autolavado de la zona el fin de semana, para asegurarse que su nuevo juguete, motivo de orgullo y alegría, se mantenga en perfecto estado. Y ay de todo aquel que haga caer la más mínima mota de suciedad en las alfombras recién aspiradas, o deje el inocente envoltorio de un dulce en el bolsillo de una puerta. No pasa nada por murmurar, pero cuando finalmente llegó a mis manos el nuevo Fiat Panda Cross de nuestra flota, lo primero que quise hacer fue ensuciarlo lo más posible. Y no tardé mucho en encontrar unos charcos de barro para poner al pequeño 4x4 a prueba. El descarado Panda es delicioso de conducir tanto en la carretera como fuera

de ella. A su animado motor TwinAir de dos cilindros, de 875 cc, se suma un armonioso sonido y juntos, ya nos hemos embarcado en varios viajes de alto kilometraje, que han incluido una mezcla de autopistas y carreteras A y B - todas abordadas por el Panda con gusto. Además, definitivamente nos hemos divertido con las cosas más difíciles. Con apenas un giro del interruptor de control de terreno, el Fiat se convierte en un todoterreno muy capaz, aunque pequeño. No solo cuenta con un diferencial trasero de bloqueo para la tracción extra en las cosas realmente resbaladizo, sino que también tiene el mismo tipo de control de descenso de colina regulado electrónicamente que se encuentra en todoterrenos mucho más grandes (y mucho más caros). Además, me encantan los gruesos faros

de remolque rojo brillante que salen del parachoques delantero. No solo se ven muy bien, sino que serán útiles en el caso poco probable de que el coche tenga que ser sacado del barro. Otro toque elegante es el paquete de invierno opcional. Este incorpora un parabrisas con calefacción - lo que significa que no habrá necesidad de más manos heladas raspando el hielo - además, mi favorito, la calefacción en los asientos delanteros, que se calientan rápidamente y ayudan a mantenerme tostado incluso en el más frío de los días. Hasta ahora, entonces, amo el Panda Cross, y ciertamente no tengo prisa por limpiarlo. De hecho, mientras los que me rodean están pasando las tardes de domingo en el lavado de autos, yo voy a estar saliendo de los caminos trillados en busca de más aventuras fangosas. n OCIO magazine

W

hisky has truly become a global phenomenon, with countries from nearly every continent offering at least one competent local product, but how did this occur? The vast spread of the high end cocktail culture could be the main culprit, along with a dash of loosening local laws and a desire to create locally recognisable products to rival the famous Scottish brands. Then again, it could just be that people around the world are tired of trying to pronounce “Laphroaig.” While Scotland and Ireland boast all the history and accolades, many other countries also have a good whisky distillery. In europe alone there are three in particular that are making a big name in the whisky business. France: Brenne. Whisky marketing is mainly about telling great stories (if not fanciful tall tales), and this French whisky company surely has one of the best: It was started by a New York based ballerina, Allison Parc, who wanted to create a French single malt. Brenne uses local grains, and it is aged in Cognac casks. Products like the fruity and oaky Brenne Estate Cask, intentionally target the U.S. market, a bold strategy in a country already awash with quality local whisky. But it’s actually France, yes France, that drinks the world’s most whisky per capita! Sweden: Mackmyra. Scandinavia is known more for vodka, aquavit, and whatever the heck “punsch” is, but Sweden’s top whisky distillery is actually a pretty great one. Opening just before the Millenium as the country’s first ever whisky producer, Mackmyra has definitely honed its skills over the last two decades. It produces uniquely local single malts, like the smoky and herbal Svensk Rök, made from all Swedish ingredients, including a juniper smoked malt. Today, Mackmyra is publicly traded, because who doesn’t need a Swedish whisky in their retirement portfolio? Spain: Nomad Outland Whisky. We all know about the world renowned Spanish wine, 40 OCIO magazine

GREAT WHISKY ...from countries you didn’t even know made whisky beer, sangria and cava, but Spain also has a unique relationship with the brown spirit, as many great Scotches are aged in Spanish sherry barrels. Nomad Outland figured, why not keep the sherry barrels in their homeland instead of sending them to Scotland? Set in the plains of Jerez, a humid city in the southwestern part of the country between the Atlantic and Cádiz Mountains, the distillery uses this unique micro-climate to produce some truly world-class stuff. Its namesake product, Nomad Outland, is a blend of thirty different malt and grain whiskies, aged in Gonzalez-Byass Fino, Oloroso, and Pedro Ximénez sherry barrels, and said to also pick up wild yeast present in the Andalusian atmosphere. Luxurious and rich, it is truly a

hybrid, toeing the line between sherry and whisky. Outside of Europe, India, with a population of 1.3 billion, consumes more total whisky than any other country on Earth. Most of the local stuff is cheap, lightly aged blends, distilled from molasses products that wouldn’t even be considered “whisky” in America or Europe. However, at least one Indian distillery makes genuine whisky though, Amrut. The distillery opened right after the country gained independence from British rule, but it wasn’t until 1982 that it produced India’s first single malt. Today, bottlings like the luscious, dessertlike Amrut Spectrum, win major awards worldwide. n

La mayoría son mezclas baratas, ligeramente envejecidas, destiladas de productos de melaza que ni siquiera se consideran “whisky” en América o Europa. Sin embargo, por lo menos una destilería india hace el whisky genuino, Amrut. La destilería se abrió justo después de que el país obtuvo la independencia del dominio británico, pero no fue hasta 1982 que produjo el primer maltés de la India. Arte y Copas Have fun painting while drinking!

I

t’s 5:30 in the afternoon. They’re seated at tables spread with fuchsia oilcloths, easels, canvases, brushes and acrylic paint, in a restaurant-bar facing the sea. They raise their brushes moving to the rhythm of laughter and conversation while sipping wine, cocktails or beer. Some paint works inspired by Dalí, Frida Kahlo, Da Vinci or Banksy, others express themselves with Buddhist forms, mandalas, geometric shapes, graffiti, curly wrought iron designs or even antique lace from a corset by Jean-Paul Gaultier. They’re not artists. In fact, they have no experience drawing or painting. Many haven’t painted a picture in their lives; most haven’t picked up a paintbrush since primary school, yet they’ve joined an Arte y Copas event: a company that organises social painting parties in bars, restaurants and places of leisure on the Costa del Sol. Their slogan: Have fun painting while drinking! It’s not an art class. It’s a party! Arte y Copas provides EVERYTHING participants need: easels, paint, brushes and about 100 stencils that correspond to more than 80 original works of art designed to inspire and encourage individual expression. he mojito is the Cuban cocktail beloved across the world -- from its birthplace of Havana, Cuba, to its adopted city of Miami, Florida. The rum-based highball is the unofficial trademark drink of Florida’s “Magic City,” which is renowned for its great nightlife. A trip to Miami wouldn’t be complete without a glass of minty magic on a rooftop bar -- so while in the city for a whirlwind 24 hours, Francis Leonald learned mojito secrets from the master, Grammy-winner producer and musician Emilio Estefan. Estefan’s career has spanned decades and industries, from heading up the Miami Sound Machine alongside wife Gloria Estefan to producing musical 48 OCIO magazine

events around the world. The Cuban-born Estefans are also the owners of several Cuban-themed restaurants and bars in their adopted hometown of Miami. Meeting in the renowned Estefan Kitchen, the Grammy winner and drinks maestro showed Francis how to rustle up the popular summertime drink. So how is Miami’s mojito different from

the Cuban edition? “it’s all in the flavour of the local produce” says Estefan. Estefan’s edition uses four local limes, a sprig of mint and homemade sugar syrup. The ingredients are mixed together, and Estefan is generous with the rum. But it’s the sugar cane that he pinpoints as the key ingredient. The mojito’s origins are disputed, but it was a Cuban mainstay by the time Ernest Hemingway proclaimed it his favourite drink in the mid-20th century. There’s a big Cuban immigrant population in Miami -- which is how the mojito became a mainstay in Florida. It’s now the staple of the beach city night out, and not only in Miami it has to be said! n

M

y problem with the dreaded ‘dinner party’ is its subtext of one-upmanship, competitive cooking. Too often we spend the days before a dinner party fretting about how our meal will compare to the one our guests last cooked for us. I’m not dismissing the kindness that makes people want to return the favour of good hospitality, but why has it become a competition? Personally, I blame the likes of TV’s MasterChef and of course Come Dine With Me, it has set unreasonably high standards, made the complex appear simple and turned cooking into a gameshow. So a dinner party... no thank you! However, a feast. That is a different matter all together. A feast I can get behind: friends around a table piled high with sharing plates of fresh, seasonal loveliness. Unlike the dinner party, a feast is a convivial, messy, tuck-in-and-help-yourself evening of decadence and, with luck, revelry. A feast has personality, and if it’s you in the kitchen, that means your personality - simple, crowdpleasing dishes that reflect what you like to cook. My issue with dinner parties is that, if you want to win at them, and let’s face it that’s what they are all too often about, the food demands reverence because of the fancy ingredients or the time spent creating it. And reverence never helps conversation flow effortlessly. Plus, unless you are an 54 OCIO magazine

Dinner party? ...No thank you! award winning chef, this is unlikely to be your natural cooking personality which results in a menu that is soulless and you, most likely, fraught from the stress of trying to emulate something you have no passion for. Which is another thing that’s wrong with dinner parties. Done ‘correctly’, the number of elements in a dinner party requires the host-chef to be in the kitchen most of the evening or at the very least exhausted by the time the guests arrive. Souffles, beef wellingtons and the like won’t cook themselves; they require constant attention until they are served, leaving you sweating in the kitchen fussing over whether it will turn out ok. But your guests haven’t come for a show (if they have, you need better friends). You are not under pressure to perform cooking miracles. It’s not a stage. It’s your kitchen - a place of homeliness, joy and inclusion. Food for friends should reflect

that. So feasts, in my view, are the way forward. One pot roasts, stews, pies and the like are ideal for a feast. Sharing platters are also great and allow guests to help each other to food whilst passing plates around. Finally, focus on food that is relaxed and easy to eat. You don’t want people worrying about which fork they should use or whether it’s ‘rude’ to peel a prawn with your fingers. But a big bowl of mussels accompanied by ladles for juice, hunks of bread for dunking and a pile of big napkins beside is code for ‘get your fingers dirty and enjoy - no airs and graces at this table so relax’. So, down with dinner parties. Down with competitive cooking and kitchen stress. Food is a way of showing people you love them and a feast, with all its messy, crowded, relaxed revelry, is the best way, in my opinion, to do that. n

i apuro con las temidas “cena” es la creciente implicación de una práctica: la cocina competitiva. Con demasiada frecuencia, pasamos los días que preceden a una cena, preocupados por la comparación que harán nuestros invitados con la última comida a la que nos invitaron ellos. No estoy despreciando la amabilidad de aquellos que quieren devolver el favor y la hospitalidad recibida, pero ¿por qué convertirlo en una competición? Personalmente, culpo a MasterChef de la TV y, por supuesto, Ven a Cenar Conmigo, que han marcado unos estándares excesivamente altos, han hecho que lo complejo parezca simple y convertido la cocina en una puesta en escena. Así que una cena... no gracias! Sin embargo, una comilona... es una cuestión totalmente diferente: un nutrido grupo de amigos reunidos alrededor de una mesa, compartiendo estupendos platos frescos de temporada. A diferencia de la cena, una comilona es una convivencia,

desordenada, una especie de sírvase usted mismo, una caída de la tarde y, con suerte, de juerga. Una comilona tiene personalidad, y si eres tú quien cocina, eso significa que tu personalidad - platos simples que gustan a los asistentes - refleja lo que te gusta cocinar. Mi problema con las cenas es que, si quieres ganar, y reconozcámoslo, es lo que queremos demasiado a menudo, la comida exige especial atención, debido a los ingredientes de lujo o el tiempo que hay que dedicar a su creación. Y es miramiento no ayuda a que la conversación fluya sin esfuerzo. Además, a menos que seas un chef galardonado, es poco probable que esa sea tu personalidad natural en la cocina, lo que resulta en un menú sin alma y te deja, muy probablemente, cargado por la tensión de intentar emular algo por lo que no sientes pasión alguna. Que es otra cuestión negativa de las cenas. Si se hacen “correctamente”, el número de factores que atender requiere que el anfitrión-cocinero esté en la cocina la mayor parte de la noche o por lo menos agotado en el momento en que los huéspedes llegan. Suflés, buey wellington y similares no se cocinarán solos; requieren una atención constante hasta ser servidos, haciéndote sudar en la cocina preguntándote si va a salir bien o no. Pero tus invitados no vinieron a un espectáculo

(y si lo hicieron, necesitas buscar mejores amigos). No debes estar bajo presión para realizar milagros en la cocina. No es un escenario, es tu cocina, un lugar cálido, hogareño, alegre y compartido; y la comida para los amigos debe reflejar eso. Así que, en mi opinión, los festines son el camino a seguir. Una olla de asados, guisos, empanadas y similares son ideales para un banquete. Los platos compartidos también son buenas opciones y permiten a los huéspedes servirse unos a otros la comida mientras se pasan los platos alrededor. Por último, se centra en la comida que sea placentera y fácil consumir. No querrás que la gente se preocupe por el tenedor que debe usar o si es “grosero” pelar un camarón con los dedos. Y un gran plato de mejillones, acompañado de cucharones para zumo, trozos de pan para mojar y muchas servilletas grandes a un lado, es el código para “ensúciense los dedos y disfruten -no hay aires de grandeza en esta mesa, así que relájense.” Así que, volviendo a las cenas. Abajo la cocina competitiva y el estrés en la cocina. La comida es una forma de mostrar a las personas que las amas y una comilona, con todo su desorden, lleno de gente relajada, es la mejor manera de hacer eso. n OCIO magazine

I

’ve been thinking a lot about wine lately, in particular since I am trying to drink less of it. (This is not because I am on a particular health kick, but rather in preparation for my upcoming trip to Portugal, where I will certainly drink ‘muito vinho’). But really what’s been on my mind is how wine is often a precious thing that requires knowledge, preparation, careful sipping and appreciation of the wine with words like “saddle leather.” Wine is a drink that should make you happy — and

that’s it. There really are no other rules. With that in mind, here are 10 wine rules you should totally ignore. 1. Don’t put ice in your wine. I broke this rule recently. It was hot and the bottle of rosé I picked up at the wine store was also hot (or at least room temperature). I could have waited for it to get cold in the fridge or popped it in the freezer, but I really wanted a glass of wine as soon as I arrived home. So I put an ice cube in my rose. It was delicious. 2. Drink pink only in the summer. u

(No porque esté cuidando mi salud, sino porque estoy preparando un viaje a Portugal en el que ciertamente beberé ‘muito vinho’) Pero realmente lo que más he tenido en mente es cómo el vino a menudo se convierte en un bien preciado que requiere conocimiento, preparación, una cuidadosa degustación y catas con expresiones como “retrogusto”. El vino es una bebida que debería hacerte feliz – eso es todo. Realmente no hay más reglas que esta. Con esto en mente, he aquí 10 normas del vino que definitivamente deberías ignorar. 1. No le pongas hielo a tu vino. He roto esta regla recientemente. Hacía calor y la botella de rosé que había comprado también estaba caliente (o como mínimo a temperatura ambiente). Ok, yes, I agree that traditionally rosé season is summertime but I believe in enjoying pink wine whenever you please — even in the dead of winter. (I also believe in drinking scotch in the summer, but that’s another story.) 3. Wine should come in a bottle. Just say yes to wine! If it comes in a box, in a can or even on tap. It is still wine so yes, yes, and yes to the above. 4. Don’t chill your red wine. Some reds want to be cool. Maybe not ice cold, but colder than you think. If you want to get technical about it, the correct term is probably “cellar temperature.” 5. There’s a right glass for your wine. The idea that there is a different glass for nearly every style of wine blows my mind. And while yes, it’s kind of nice when they bring out one of those really big-bellied Burgundy glasses at a restaurant, you absolutely do not need multiple wine glasses. In fact, when you are at a casual Spanish tapas bar and they serve you a glass of red in a tumbler glass, are you disappointed, no, you just accept the environment and enjoy the wine. 6. Don’t mix your wine. Mix it up, I say! If you’re doing some daytime, poolside drinking, adding lemonade or ‘limon’ to your wine is a super smart move: You can enjoy a little ‘tinto verano’ without getting drunk in the 60 OCIO magazine

middle of the day. 7. White wine should be cold. You know how we say you can chill your red wine? Well, it’s also true that you can drink your white wine at much warmer temperatures than you might think; you’ll get more flavour that way. Although, of course, if it gets too warm, refer to rule 1 and feel free to put an ice cube in it. 8. Don’t drink red wine with your fish. Or white wine with your steak. I’m not going to lie: The idea of white wine with steak doesn’t really appeal to me, but if it’s your thing, do it and never mind the opinions of others. 9. Champagne and Cava are for special occasions. Make no mistake, Champagne and Cava

are for all occasions or even no occasion. They also go well with absolutely everything. They go with oysters and caviar, fried chicken and pizza or even served chilled with a loved one as you enjoy a great sunset on a terrace for two. 10. Don’t judge a wine bottle by its label. Yes do judge. Whoever put that label on the bottle wanted it to say something to you. Whether it’s the fine print, or the cute animal on the label, go ahead and judge. So that’s about it, my 10 wine rules that should be ignored at all costs. You may not have agreed with my opinions but as you have probably realised by now, other peoples opinions are not really something I worry too much about! Glass of wine anyone? n

Si prefieres un tecnicismo para describirlo,

el término correcto probablemente sea a “temperatura de bodega”. 5. Hay una copa para cada vino. La idea de que existe una copa diferente para prácticamente cada vino hace que me vuelva loca. Y aunque sí, desde luego es agradable cuando te ofrecen una de esas voluminosas copas de Borgoña en un restaurante, definitivamente no es necesario que tengas un millar de copas de vino. De hecho, en los típicos bares de tapas españoles cuando te sirven un vino tinto en un vaso normal, ¿te decepcionas? No, te adaptas al entorno y disfrutas de tu vino. 6. No mezcles el vino. Yo digo ¡mézclalo! A mediodía, o bebiendo en la piscina, añadir limonada o gaseosa a tu vino es un movimiento inteligente: puedes

disfrutar de un rico ‘tinto de verano’ y no emborracharte a mitad del día. 7. El vino blanco siempre frío. ¿Recuerdas que hemos hablado de enfriar el vino tinto? Bueno, pues también puedes tomar un vino blanco más caliente de lo que podrías creer; así incluso conseguirás más sabor. Aunque, por supuesto, si está demasiado caliente puedes retomar la regla número 1 y añadirle un cubito de hielo. 8. No bebas vino tinto con pescado. O vino blanco con un filete. No voy a mentiros: La idea del vino blanco con un bistec no me parece demasiado apetecible, pero si a ti te gusta, hazlo, sin importarte lo que opinen los demás. 9. El Champán y el Cava, para ocasiones especiales. No nos engañemos, el Champán y el Cava apetecen en cualquier evento, incluso si no hay ningún evento. Encajan con absolutamente todo. Van bien con ostras y caviar, pollo frito, pizza, o incluso solos y fresquitos disfrutando un hermoso atardecer en la terraza con alguien muy querido. 10. No juzgues un vino por su etiqueta. Sí, júzgalo. Quienquiera que puso esa etiqueta en la botella quería decirte algo. Ya sea por su bonita impresión, o el animalito que aparece en la etiqueta, adelante, haz tu juicio. Y eso es todo, mis 10 normas del vino que deberían ser ignoradas a cualquier precio. Puede que no estés de acuerdo con mi opinión, pero probablemente ya te habrás dado cuenta de que las opiniones de los demás no son algo que me preocupe demasiado. ¿Una copa de vino? n OCIO magazine
