Foreign demand pushes Spanish property prices up by 5%

B

uyers from Britain and Germany seeking bargains are pushing up property prices in Spain, new figures show.

According to Registradores de Espana (Spain’s property registrars), prices in June rose by more than 5% from the same month last year. Average prices in the second quarter rose 2.8% from the first three months of the year.

Foreign demand continues to be strong, and in the second quarter reached 12.8% of all home purchases, compared with 12.2% in the first quarter.

Buyers from abroad are also driving volumes higher. Between April and June more than 87,000 house purchases were registered, 11% more than in the same quarter of 2014.

Britons were by far the largest group of foreigners targeting property in Spain, accounting for 2.54% of sales, or about one-fifth of all overseas demand. France

(1%) and Germany (1%) were the next largest groups of buyers. Russian buyers, once among the most active, are dropping off the scale.

The data confirms the resurgence of the Spanish property market. The Central Statistics Unit in Madrid recently reported that the number of mortgages approved in Spain for June rose by 26.3%.

ith the colder months fast approaching, it is almost time to light up your fireplace and enjoy a little winter warmth. Nothing beats the magical feeling of being cocooned in front of the fire place and to let the warmth from the logs seep in through your skin. And, it’s sheer bliss if the warmth is generated by natural logs that also make the air around it wonderful with a pleasant smell and feel.

Instead of burning any logs that are available, olive wood logs provide that wonderful feeling when used in a fireplace.

Quite obviously, olive wood logs come from the Olive tree. In Spain and Portugal the trees felled for the purpose of creating logs for our fires, are usually over 500 years old. These trees are felled because they no longer produce good quality Olives. The felling of these trees makes space for new trees to be planted, sometimes up to 5 new trees being planted for each old one felled because of the dense trunks and root system they have after so many years growing.

For what seems like forever, the olive tree and parts of the olive tree have been used by Mediterranean civilizations for many aspects of life, not least of all as fantastic firewood.

Angela Stevens tells us more.

For what seems like forever, parts of the olive tree have been used by Mediterranean civilisations for many aspects of life and was always said to be therapeutic and pleasant.

Probably the other reason being that olive trees were grown in such abundance. But either way, the Olive tree has always been put to the very best use and not least of all in the creation of logs for our summer barbecues and winter fires.

Olive wood is very dense which makes it burn very well. It burns for much longer than most other woods, making it more economical as you need to use less. Also, it does not have a high sap content like other wood, making it ideal for our home fires and barbecues.

The good thing about olive logs is that they do not endanger the environment. At home

they also keep the environment from being polluted even though one may resort to using the fireplace almost on a daily basis throughout the winter months.

As a final thought, when your wood is delivered, do be prepared to store it correctly. Naturally you will want to keep it dry but beyond that, think about storing the logs on a wood pallet perhaps to get it off the ground. Wood left on the ground in a disorganised pile won’t allow enough airflow to keep the wood sufficiently dry from the damp and wet air of the winter months.

To properly dry your wood, or what’s called “seasoning’, the wood ideally needs a place where the sun can warm it and the wind can blow through it. This will properly season your wood giving you a longer burn time and lots more winter warmth. n

on los meses más fríos acercandose rápidamente, es casi la hora para encender la chimenea y disfrutar de un poco de calor en invierno.

No hay nada como la sensación mágica de ser arropado en frente de la chimenea y dejar que el calor de los troncos se filtren a través de su piel. Y, es pura felicidad si el calor es generado por troncos naturales que también hacen que el aire a su alrededor sea maravilloso con un olor agradable.

En lugar de quemar los troncos que están disponibles, troncos de madera de olivo proporcionan esa sensación maravillosa cuando se utiliza en una chimenea.

Obviamente, troncos de madera de olivo provienen del Olivo. En España y Portugal, los árboles talados para el propósito de la creación de troncos para nuestros fuegos, son por lo general más de 500 años de antigüedad. Estos árboles son talados porque ya no producen aceitunas de buena calidad. La tala de árboles hace espacio para nuevos árboles que se plantarán, a veces hasta 5 nuevos árboles

se plantan por cada uno viejo talados debido a los troncos densos y sistema de raíces que tienen después de tantos años de crecimiento.

Por lo que parece una eternidad, las partes del árbol del olivo han sido utilizadas por las civilizaciones mediterráneas para muchos aspectos de la vida y siempre se dice que es terapéutica y agradable. Probablemente, la otra razón es que los olivos se cultivaron en tal abundancia. Pero de cualquier manera, el árbol de olivo ha sido siempre poner a la mejor utilización y no menos importante en la creación de los registros de nuestras barbacoas de verano y los incendios de invierno.

Madera de olivo es muy densa que hace que se queme muy bien. Se quema durante mucho más tiempo que la mayoría de otras maderas, por lo que es más económico que necesite usar menos.

Además, no tiene un alto contenido de savia como otra madera, por lo que es ideal para nuestros incendios en el hogar y barbacoas.

Lo bueno de los troncos de olivo es que no ponen en peligro al medio ambiente. En casa también mantener el medio ambiente limpio de la corrupción a pesar de que uno puede recurrir al uso de la chimenea casi a diario durante los meses de invierno.

Como reflexión final, cuando se entrega la madera, no estar preparado para almacenar correctamente. Naturalmente, usted querrá mantenerla seca, pero más allá de eso, pensar en el almacenamiento de los troncos en una palé de madera tal vez para tenerlo apartado de la tierra.

Madera dejada en el suelo en una pila desorganizada no permitirá suficiente flujo de aire para mantener la madera suficientemente seca del aire húmedo de los meses de invierno. Para secar correctamente su madera, o lo que se llama “condimento”, la madera ideal necesita un lugar donde el sol puede calentar y el viento puede soplar a través de él. Esto tratará adecuadamente la madera que le da un mayor tiempo de quemado y mucho más calor en invernal. n OCIO magazine

here has always been a link between the world of interiors and that of high-end fashion. However, while it used to take up to six months for the catwalk to be translated into home fashions, this transition is now virtually seamless (no excuses for the pun). This is, in part, thanks to couture houses and fashion designers who have their own home décor ranges, as well as those who are happy to contribute with fabric, wallpaper or rug designs.

But it is equally due to our increasingly 14 OCIO magazine

sophisticated tastes and genuine interest in design. As a result, we have renewed focus to go shopping ‘for the house’.

And what temptation! Interior showrooms have never looked so good. Displays of gorgeous colours and wonderful textures are enticing, and we dive in carefree and giddy. We visit showrooms, we sift through magazines, we order samples and we scour the internet, all in the name of a new living room. It is a long and complicated process which is ideally suited to an interior designer.

However, even with the help of a designer, the responsibility for the final coordination of chairs, consoles, cabinets and curtains is all ours. That is certainly easier said than done, especially if you have a budget to consider, or worse still, other members of the household to bear in mind in your design. For example, your children or your grandchildren are going to be using this room too and, while curtains long enough to create a pool of sumptuous fabric on the floor will look fabulous, your dog will think u

iempre ha existido un vínculo entre el mundo de los interiores y el de la moda de alta gama. Sin embargo, mientras se solía tomar hasta seis meses para que la pasarela se tradujera en la moda para el hogar, esta transición es ahora prácticamente sin costura (no hay excusas para el juego de palabras).

Esto es, en parte, gracias a casas de alta costura y diseñadores de moda que tienen sus propios rangos de decoración para el hogar, así como aquellos que están

dispuestos a contribuir con los diseños de tela, papel tapiz o alfombra. Pero es igualmente debido a nuestros gustos cada vez más sofisticados y genuino interés en el diseño. But must ‘being sensible’ mean being boring? A good cabinetmaker is my answer, surely. Someone who can carve wonders and who will light my Japanese flower arranging vases to perfection. Whilst he’s at it he can disguise the monster of a TV my husband adores but which dominates our lounge in a way our local cinema envies.

Then again, if the rather impressive piece of technology is out of sight and off the wall then some new art might be in order - at the very least a splash of paint on the walls or some of the metallic wallpapers that have shimmered their way into my affection. I am a strong believer that walls need colour and vibrancy, they are such an easy way to 16 OCIO magazine

express ourselves.

Rugs too can bring new life to a room and, given that they are (for the most part) designed to be walked on, should be robust enough to withstand a toddler’s birthday party or two. And there are endless designs to choose from, from the Oriental to a bespoke piece you can design yourself.

The issues of practicality are not simply reserved for those who have kids and animals to consider though. Odd-shaped rooms and limited spaces also present problems of a practical nature. This can also be said for large rooms. Huge windows can appear to gape if they are not suitably dressed. Tall windows can almost swallow up the room if they are not shortened with pelmets or pole drapery.

The same can be said for furniture: if there is u

If the room is divided into areas of activities (what interior designers call ‘zoning’) then each zone will need its own furniture - desks, consoles, a card table, reading lamps, a computer cabinet. The well-thought-through design will not only be efficient and organised, it will make the room feel warm and welcoming.

Nothing warms more than a fireplace though. This ancient link between hearth and home often ignores all technological breakthroughs in heating as humans simply love to sit around a fire and listen to it snap, crackle and pop. And although a fire comes with a myriad of practical considerations of its own, it provides a wonderful focal point to a room. o you want to play Padel and you don’t know where

to start.

Well, if you have never played before the best starting point is to call into Vals Sports in Torre del Mar and ask to join a padel class for beginners. The cost is minimal because you will be in a class with 3 or 4 other players at the same level as you are.

The coaches at Vals are able to communicate and instruct in both English and Spanish, although in reality language is not really an issue as most of the instruction is based on action not words.

After just a few sessions of practise, your coach will arrange for you to take part in a match, often with the other players in your training group. You won’t remember half the rules, you will realise that you have been hitting nine out of ten balls either into the net or out to the car park and you will feel perhaps a little uncomfortable at the prospect of playing a game, but the results will astound you.

As I said a little earlier, this is not a difficult game to learn and you will surprise yourself at how much you have learned with just a few training sessions.

Once you have this basic grasp of the game you are ready to play against other players. Your coach at Vals will enroll you into the fantastic ‘Me apunto!’ which allows you to sign up for matches against other players in your catagory. Your playing partner will be automatically assigned, as will your oppononts, all you have to is just turn up on time and play. Your results are recorded and over a period of time your level is adjusted accordingly.

But before we get you involved in leagues and matches, we need to get you started.

So take yourself along to Vals, visit reception and book yourself in for a class... they will even loan you the equipment you need. See you on the court! n

Tal vez te sentiras un pelin incomodo jugando un partido pero los resultados te sorprenderan.

Como he dicho antes este deporte no es dificil de aprender y te sorprenderas cuanto has aprendido en tan poco tiempo.

Una vez que tengas el conocimiento basico de este deporte estaras preparado para competir con otros.

Ssangyong Tivoli T

he Ssangyong Tivoli is freshlooking, incredibly good value, nicely built and roomy, and inside it feels easily as premium as anything on the market.

So what’s the Tivoli like to drive I hear you ask? Well, it’s really quite good. There are two engines on offer, one petrol, one diesel, both 1.6-litre four-pots, a choice of 2wd or 4wd drivetrains, and two six-speed ’boxes, auto or manual. We tested the front-drive petrol version with the automatic gearbox.

The engine offers 126bhp, so it’s never going to be a quick vehicle but, if you drive it how you ought to be driving it, it’s perfectly capable. Unusually, the steering has three settings, the hardest of which is a real surprise. No car at this price in this market offers proper road feedback, except the Tivoli. This is a trend setting development for motors in this catagory and price range. Out on the road the cabin is quiet with very little noise from the engine, the road or even the outside world. Body control isn’t an issue, as it’s not the sort of car you throw around 44 OCIO magazine

corners. Again, if driven like it should be it has great feel and control.

Inside it is really spacious, front and back, and the seats are excellent. We drove the top-spec ELX model which, together with a red-leather pack includes heated leather, climate control, touchscreen sat-nav, keyless go, colour-configurable instruments, stop/ start, parking sensors, rain-sensing wipers, rear-view camera… All that, and the dash is pretty stylish too. Doesn’t feel like you scrimped on anything, including form and function.

As a brand, Ssangyong’s street credibility is not a particularly favourable one I am sad to say, but with vehicles like the Tivoli coming off the production line, attitudes towards this brand will change, I guarantee it. Taken at face value the Tivoli is a very impressive statement from Korea’s less rich car manufacturer, one that should rock Hyundai, Kia and, who knows, perhaps a few Europeans to their core. And if you don’t care about any of that, then it’s simply a good vehicle at a good price and well worth a test drive! n

l Ssangyong Tivoli tiene un aspecto fresco, muy bien de precio, muy bien construido y espacioso, y en el interior se siente fácilmente tan bueno como cualquiera del mercado.

Entonces, ¿cómo es conducir el Tivoli, le oigo preguntar? Bueno, es realmente muy bueno. Hay dos motores que se ofrecen, uno de gasolina, uno diesel, ambos 1.6 litros de cuatro cilindros, una selección de 2WD o 4WD transmisiones y dos cajas de seis velocidades“, automático o manual.

Hemos probado la versión de gasolina de tracción delantera automático. El motor ofrece 126cv, por lo que nunca va a ser un vehículo rápido, pero, si lo conduce cómo debe es perfecto.

Excepcionalmente, la dirección tiene tres valores, el más duro que es una verdadera sorpresa. Ningún coche a este precio en este mercado ofrece retroalimentación adecuada de carreteras, excepto el Tivoli. Se trata de

un ajuste de tendencia de desarrollo para motores de esta gama y precio.

En carretera la cabina es tranquila, con muy poco ruido del motor, la carretera o incluso el mundo exterior. El control del cuerpo no es un problema, ya que no es el tipo de coche que tirar en las esquinas. De nuevo, si es conducido como se debe tiene un gran control y sensaciones.

En el interior es muy espacioso, delante y detrás, y los asientos son excelentes.

Fuimos en coche modelo ELX-top de especificaciones que, junto con un paquete-de cuero rojo incluye cuero con calefacción, control de temperatura, pantalla táctil de navegación por satélite, ir sin llave, instrumentos color configurable, arranque / parada, sensores de aparcamiento, limpiaparabrisas con sensor de lluvia, cámara trasera... Todo eso, y el guión es bastante elegante también. No se siente como que escatimado en nada, incluyendo la forma y función.

Como marca, la credibilidad de Ssangyong en la calle no es particularmente favorable, me entristece decir, pero con vehículos como el Tivoli procedentes de la línea de producción, las actitudes hacia esta marca van a cambiar, te lo garantizo. A primera vista el Tivoli es una declaración muy impresionante desde el fabricante de automóviles menos rico de Corea, que debe oscilar Hyundai, Kia y, quién sabe, tal vez un par de los europeos a su núcleo. Y si no te importa nada de eso, entonces es simplemente un buen vehículo a un buen precio y bien merece una prueba de manejo! n

on el barco de crucero fabuloso Celebrity Silhouette atracado en el puerto de Málaga durante un 1 día, era una oportunidad perfecta para que el equipo de marketing para invitar a miembros de la prensa local y la industria de viajes, a bordo para un viajecita privado y para almorzar.

Nos embarcamos a las 10:00 después de mostrar nuestros pasaportes y presentar a nosotros mismos por los mismos controles de seguridad de siempre. Una breve presentación de bienvenida y luego nos empezamos una visita guiada del barco.

Yo personalmente no he estado nunca en un crucero antes, así que todo el concepto era muy nuevo para mi.

Lo primero que se hizo aparente para mí era la gran calidad y altos estándares de absolutamente todo a bordo. Visitamos varias barajas completas con piscinas al aire libre y interiores, salas de spa, numerosos bares, restaurantes, cafeterías, bares de jugos, un gimnasio e incluso un enorme teatro con gradas digno de un lugar en el distrito de los teatros de Londres! El barco era nada menos que impresionante.

Cuando nuestra visita guiada llegó a su fin, nos invitaron a almorzar en el increíblemente gran buffet restaurante, nuestra zona de asientos VIP fue acordonada en la preparación de nuestra llegada.

Nuestro grupo disfrutó de la libertad que el comedor de estilo buffet nos dio, ya

que se movia entre las estaciones de la elección de una selección de cocinas de todo el mundo.

Algunos de nuestro grupo eran experimentados viajeros del mundo de los cruceros y claramente puedo ver por qué. Es un gran concepto y, por supuesto, es increíblemente popular en todo el mundo ... Creo que he estado perdiendo algo hasta ahora. Una situación fácil para corregir, con una llamada * Mensaje al equipo multilingüe en Viajes Esencial Tours. ith the fabulous cruise ship Celebrity Silhouette docked in Malaga port for a 1 day stop over, it was a perfect opportunity for the marketing team to invite members of the local press and travel industry on board for a private tour and lunch.

We embarked at 10.00am after showing our passports and presenting ourselves for the usual security checks. A brief welcome presentation followed and then we were on our way around the ship for a guided tour.

Now I personally have not been on a cruise ship before, so the whole concept was very new to me.

The first thing that became apparent to me was the quality and high standards of absolutely everything on board. We visited

various decks complete with indoor and outdoor swimming pools, spa rooms, numerous bars, restaurants, cafeterias, juice bars, a gymnasium and even a huge theatre with tiered seating worthy of a place in Londons theatre district! The ship was nothing short of stunning.

As our guided tour came to an end, we were invited for lunch in the incredibly large buffet restaurant, our VIP seating area was cordoned off in preparation of our arrival. Our group enjoyed the freedom that the buffet style dining afforded us as we moved between stations choosing from a selection of cuisines from around the world.

Some of our group were seasoned travellers in the world of cruises and I can certainly see why. It is a great concept and

of course is fantastically popular all over the world...I think I have been missing out so far. A situation easily corrected though with a phona call to the multi lingual team at Viajes Esencial Tours. Classic Salmorejo Angela Perth lives in Spain and writes for many cookbooks that are published around the world. Here Angela shares with us a recipe for the classic ‘Salmorejo’.

S

almorejo, a typically Andalucian, dish originating from Cordoba. The dish is without doubt more of a purĂŠe than a soup and is often served in restaurants as a starter when dining out.

Much like Gazpacho, Salmorejo consists primarily of tomato and bread mixed with olive oil and garlic.

It is served cold and often it is garnished with diced Spanish serrano ham, diced hard-boiled eggs and even tuna if you desire.

It is very popular and simply delicious in both summer and winter months.

Here is the basic recipe which I have based on a two person serving.

Ingredients: 680 gr tomato ripe 2 cloves of garlic 125 gr of bread 35 ml of Wine vinegar 80 gr of cured ham 2 hard-boiled eggs 1 tin of tuna Parsley and sunflower oil

Preparation: (2 Persons) Put the tomatoes, garlic, salt and the bread soaked with vinegar into a bowl and mix it all up until it starts to look like a liquid. Then, put the liquid through a colander and blend well to achieve the desired texture (this will probably take

about 7 minutes).

After finishing that step, add the oil and blend again for half a minute. Keep refrigerated until ready to serve.

To achieve the green oil, fill a blender cup halfway with fresh parsley and then add sunflower oil to a further quarter.

Blend it all together until it becomes a lovely soft liquid.

Next, boil and dice some eggs. One trick I have learned regarding boiling eggs perfectly, is to put them in just as the water is about to boil, not when it is boiling.

Finally chop your serrano ham and prepare the tuna.

Serve the whole dish chilled! n

El clásico Salmorejo Words: Angela Perth

S

almorejo, un plato tipico andaluz original de Cordoba, es mas un pure que una sopa y muchas veces se sirve como plato primero. Como el gazpacho, el salmorejo consiste de tomates y pan mezclado con aceite de oliva y ajo. Se sirve frio y puede que se añade jamon serrano, atun y huevos duros cortado en cubitos. Es muy popular y sencillamente deliciosa. Aquí esta la receta basica, sirve dos:

Ingredientes: 680gr de tomate pera o maduro 2 dientes de ajo 125 gr pan cateto 35 vinagre blanco 50 gr aceite oliva 80 gr de jamón 2 huevos duros 1 lata de ventresca de atún perejil y aceite girasol

Elaboracion: (para 2 personas) En un bol ( cubo olla, etc...) pondremos los tomates, ajos, sal y el pan empapado con el vinagre y lo batiremos todo hasta crear una masa homogénea que pasaremos por el xino para conseguir la textura deseada

(con Thermomix se tardarían 7 minutos a velocidad 10).

Terminado este paso, añadiremos el aceite y batiremos medio minuto.

Guardar en refrigerado. Para conseguir el aceite verde, en un vaso de batidora, pondremos hasta mediacion de perejil fresco; iremos añadiéndole aceite de girasol hasta la mitad de la cantidad de perejil. Batirlo todo hasta conseguir homogeneidad. Siempre quedará genial.

Un truco para cocer bien los huevos y que queden en su punto es meterlos en el agua justo cuando ésta rompa a hervir; sólamente habrá que dejarlos 9 minutos y medio para que queden para chuparse los dedos. n OCIO magazine

Spanish Cheese Queso español Words: Louise Wilson

Just like wine and jamon, Spanish cheese is now appreciated as much abroad as it is here in Spain.

here in the past the demand for Spanish cheese was concentrated mainly on Manchego, nowadays foreigners ask for Cabrales, Idiazábal, Tetilla and more.

Making cheese is a simple process; however making quality cheese is complex and an art. There are so many regions and so many cheeses. I believe every autonomous region in Spain nowadays is known for at least one cheese, if not more. The big difference between Spanish cheeses though is determined by its local climate. You may have guessed that one of the first requirements for an excellent cheese is high quality milk but also it is

what to do with the milk. In the production process, some important decisions are made in the development of the cheese.

For example, whether raw, pasteurised or sterilised milk is used for its production.

Then, the use of heating, pressing, salting and curing of the cheese. And finally, a difference in taste can by obtained by adding herbs or spices, by curing in olive oil, by smoking the cheese or by inoculating moulds.

This article would get too long if we’d talk about all Spanish cheeses, so let’s take a look at some cheeses with a Denominación de Origen that are gaining respect. u

ientras en el pasado la demanda se concentraba en el queso Manchego, hoy en día los extranjeros solicitan Cabrales, Idiazábal y Tetilla entre otros. La fabricación del queso es un proceso simple, pero elaborar un queso de calidad es complicado, y a su vez un arte.

Hay muchas regiones y muchos tipos de queso. Creo que cada comunidad autónoma es conocida por lo menos por un tipo de queso, sino no son más.

Cabrales: Because of its name, many people think this must be goat’s cheese. Not true! Although goat milk is sometimes used as a component, it’s a truly cow’s milk cheese. Cabrales is situated in the heart of the Picos de Europa (Asturias), famous for its impressive landscapes with high peaks and gorges, beautiful and intimate. This is a mould cheese made from raw milk. The result is a cheese with a strong smell and a pronounced, spicy flavour. A typical cheese that accompanies well with a strong red or a sweet dessert wine.

Manchego: The king of Spanish cheeses and the first one mentioned by many foreigners. Its ‘denominacion” includes the provinces of Toledo, Cuenca, Ciudad Real and Albacete. Watch out: the characteristic cylinder shape and the lineal imprint is copied by many other cheeses that have nothing to do with Manchego. The best recommendation is to always study the label carefully. As a minimum, it should say “queso puro de oveja” (the true Manchego cheese is elaborated with sheep milk). A stamp of the regulating council “consejo regular” should also figure on the label. Raw milk is used in the traditional production process, whilst industry-made Manchego is elaborated with pasteurised milk. This leads to a significant difference in taste: raw 64 OCIO magazine

milk cheese has a typical and spicy taste, highly appreciated by the experts.

Zamorano: Zamora is a beautiful antique city along the Duero river in the community of Castilla and Leon and very near Toro, an upcoming wine-region with red wines that seem to be made to accompany these cheeses. Zamorano cheeses are very similar in form to the Manchego cheese and made from best quality sheep milk.

Some would say it’s a more sophisticated cheese, because it’s not as salty and spicy as Manchego can be.

Tetilla: The Galician Tetilla is a cheese that has a particular moulding, obtaining the form of a women’s breast. Very popular among children for its soft and creamy consistence and light-salted taste. This cheese is traditionally made in the provinces of Pontevedra, La Coruña and Lugo. Raw or pasteurised cows milk is used for its elaboration, depending whether farmhouse or industry-made. You shouldn’t accompany this cheese with strong wines or spicy food, as its taste is very fine and its nuance not pronounced.

Andalucian cheese: There are some excellent cheeses right here on our doorstep. Queso de Antequera and Queso de Aracena are two very reasonable goat cheeses, although they don’t have a Denominación. The village with the

highest average rainfall in Andalucia, Grazalema, does have the Denominación and deserves it for cheeses that admit both sheep and goats milk.

And from the islands: Worth a try are the Maó from Menorca, a very tasteful cheese elaborated with cows-milk and the less famous, but just as nice, is the “Queso Majorero” from Fuerteventure, a 100% goats milk cheese, just like the lightly smoked cheese from the island La Palma “Queso Palmero”.

As you see, even the smallest places in Spain make great cheeses, it is no wonder the cheese eating population of the world are starting to take notice of Spanish cheeses...anyone for tapas? n

Después, el calor, la presión, la sal y el proceso de curación. Y finalmente, se puede obtener una diferencia en el sabor añadiéndole hierbas y especias, curándolo en aceite de oliva, ahumando el queso o inoculándolo con hongos.

Este artículo se alargaría demasiado si habláramos de todos los tipos de quesos españoles, así que vamos a echarle un vistazo a algunos de los tipos de queso con Denominación de Origen que se están ganando un respeto.

Cabrales: debido a su nombre, mucha gente piensa que se trata de queso

de cabra ¡pero no es cierto! Aunque la leche de cabra a veces es uno de sus componentes, en realidad es leche de vaca. Cabrales se encuentra en el corazón de los Picos de Europa (Asturias), famosos por sus impresionantes paisajes con altas montañas y desfiladeros. Un lugar bello e íntimo. Cabrales es un queso de molde fabricado con leche no pasteurizada. El resultado es un queso de olor fuerte con un sabor pronunciado y especiado.

Un queso típico que se acompaña bien con un vino tinto robusto o un vino dulce para acompañar postres.

Manchego: el rey de los quesos españoles y el primero que mencionan muchos extranjeros. Su “denominación” incluye las provincias de Toledo, Cuenca, Ciudad Real y Albacete. Pero cuidado: muchos quesos que no tienen nada que ver con el Manchego copian su forma cilíndrica y su corteza de impresiones lineales. El mejor consejo es estudiar su etiqueta cuidadosamente. Como mínimo, debería decir “queso puro de oveja” (pues el verdadero queso Manchego está elaborado con leche de oveja). Un sello del órgano regulador, “el Consejo Regulador” también debería figurar en su etiqueta. En su elaboración tradicional se utiliza leche no pasteurizada, mientras que el queso fabricado industrialmente se elabora con leche pasteurizada. Esto lleva a una significativa diferencia en su sabor,

pues el queso elaborado con leche no pasteurizada tiene un sabor especiado muy apreciado por los expertos.

Zamorano: Zamora es una preciosa ciudad antigua situada a lo largo del Río Duero, en la comunidad autónoma de Castilla y León, una destacada región de vinos tintos que parecen haber sido creados para acompañar a estos quesos.

Los quesos Zamoranos tienen una forma similar a la del Manchego y son elaborados con leche de oveja de la mejor calidad.

Algunos dirían que es un queso más bien sofisticado, pues no es ni tan salado ni tan especiado como puede llegar a ser el queso Manchego.

Tetilla: la Tetilla Gallega es un queso que tiene la peculiar forma de un pecho de mujer. Muy popular entre los niños por su consistencia suave y cremosa, y su sabor ligeramente salado. Este queso se elabora tradicionalmente en las provincias de Pontevedra, La Coruña y Lugo. Se utiliza leche pasteurizada o no pasteurizada en su elaboración, dependiendo de si se elabora tradicionalmente o industrialmente.

No debería acompañar este queso con vinos demasiado fuertes en su sabor, o con comidas muy especiadas, pues su sabor es muy suave y su matiz no muy pronunciado.

Queso andaluz: hay algunos quesos excelentes aquí mismo, en la puerta de casa. El queso de Antequera y el Queso de Aracena son dos buenos quesos de cabra, aunque no tienen Denominación de Origen. Este pueblo con la media más alta de lluvia de Andalucía, Grazalema, sí tiene la Denominación y se lo merece por sus quesos, que admiten ambos tipos de leche, cabra y vaca.

Y procedentes de las islas: vale la pena probar los quesos Máo, de Menorca, un sabroso queso elaborado con leche de vaca; y menos famoso, pero igual de rico, es el “ Queso Majonero” de Fuerteventura, un queso elaborado al 100% con leche de cabra, al igual que el queso ligeramente ahumado procedente de la isla de La Palma, el “ Queso Palmero”.

Como puede ver, incluso en los lugares más pequeños de España se elaboran grandes quesos, por lo que no es sorprendente que los consumidores mundiales de queso estén comenzando a fijarse en los quesos españoles.... ¿Alguien se apunta a unas tapas? n OCIO magazine
