Winter Throws

W

ith winter in full swing it’s time to add some warmth to the inside of your home and a great way to do this is with a pile of soft throw blankets, enough to make any room feel cosy, comfortable and inviting even on the coldest days of winter. Both functional and fashionable, throw blankets are a budget friendly way to upgrade your space by mixing and matching styles, plus you can switch them up from season to season. Bright or patterned blankets bring pops of colour, while chunky knits and sumptuous fabrics exude comfort on a chilly day. Not to mention, flinging a blanket or two on a bed or couch — plus a few chic area rugs and luxe accents — offers a change of scenery without giving it a complete makeover. I 06 OCIO magazine

Mantas de sofá Words: Julia Pulson

have throw blankets in almost every room of my house and even in my car (because you never know!). There are so many options that everyone can find something that suits their style and their home. There are the standard throw blankets, which are generally lighter weight and are utilised more commonly as decor accents. These can be colourful, printed, and fun to add interest to a room. While neutral tones and fun textures are on trend right now, bold patterns and

hues can add a splash of colour any time of year. I also think mixing prints and colours can bring more dimension into a space, so don’t be afraid of trying different styles, colours, patterns and fabrics, the results can be quite stunning. Of course throw blankets are more for comfort than looks so do keep in mind the functionality of these accent pieces, too. For example, if you tend to shiver all winter long, swap your lightweight throws for toastier fabrics, like wool or cashmere and, don’t underestimate a heftier cotton blanket, either, they can be surprisingly good. So, is there a secret to a perfectly-tousled toss I hear you ask. Well yes and no. The most important aspect is not to think about it too much, just literally throw them onto the arms of your couches or the end of u

C

your beds and usually they look pretty natural and great. Less is more. However, if you require a more organised and structured look then the bedroom throws could be folded horizontally at the foot of the bed, used as a bed runner, or perhaps draped neatly along a bench where they look nice but are also easily accessible. When it comes to these boudoir accessories, don’t be afraid to opt for knitted blankets. These chunky looks are plush, oversized, and incredibly cozy on the bed. Faux fur is also great here and a fun way to soften a contemporary bedroom space and accentuate a more rustic styled room. A less talked about but none the less useful aspect of throw blankets is that they can hide a multitude of home decor sins, including worn out fabric and scratched furniture legs. If you can’t bear to part with a beloved piece of furniture and upholstering isn’t an option, the right throw can cover the problem as well as enhance the chair. Remember, throws are seasonal in terms of both colours and textures and much the way you swap out bedding and couch pillows each season, throw blankets can be an easy way to update your home 08 OCIO magazine

decor for the season. Change up your space for the festive holidays, for a new season, or just because you want to. Just make sure that when you swap out a throw, you clean it according to the manufacturer’s directions and then fold it in tissue to store, so it is ready to use the next time you need it. Of course, throw blankets are perfect for your outdoor spaces too. They can amp up your outdoor style while being a practical accessory for those chilly nights. Wool, in particular, is a great outdoor fabric. Just make sure you store them correctly. As with any outdoor furniture or accessory, you don’t want your blankets ruined by the elements. Keep them in an

airtight container outside or in a basket inside the door. And speaking of a basket by the door, when your indoor throws aren’t in use, try keeping them rolled up in a pretty basket or hang them on rungs on a bamboo or wooden ladder leaned against the wall, they can make a great interior design element to your home, even when not in use. n Sin embargo, si buscas un aspecto más organizado y estructurado puedes colocar las mantas de la cama dobladas horizontalmente a los pies, como un camino de cama, o quizás colocadas a lo largo de una banca donde

New Year’s Resolutions... T

he New Year is upon us and many people will be starting on their New Year’s resolutions. It is a great time to think about the important lifestyle changes you have promised yourself that you will make in 2019. However, the sad truth is that so many of these promises simply fail. This is due to a number of factors but, primarily, the cause of the failure year after year, is a lack of preparation and genuine commitment. To help with both of these issues, start by making your goals realistic and achievable. What follows is a list of common New Year’s resolutions along with some advice on how to keep to your promises. Get in shape: Losing weight is the top resolution for the new year, combined with “exercise more”. It’s easy enough to start 16 OCIO magazine

an exercise and diet program, but the trick is to find a decent one that will give you steady results. Again, be realistic on what you can and want to acheive. Earn more money: Next to losing weight, earning more money is at the top of most people’s list. Fortunately there are plenty of options available for earning some extra cash, you just have to be a little creative

and brave. Meet new people: It is so easy to find yourself in a routine that revolves around the home and the odd trip out but of course this type of lifestyle means you are missing out on a lot of interesting opportunities for networking and having fun. Don’t be afraid to get out there and make some new friends. Look around for clubs and classes that focus on your own interests, that way you will be meeting like minded people. Reduce stress: Stress is one of the biggest health issues and it can have a very destructive effect on your relationships as well as your health. It may be an unavoidable side effect of our hectic modern lifestyles, but it can be effectively managed with a calm u

...and how to achieve them E

and practical approach to your problems, worries and workload. It is so easy to focus on the negative things in life but instead, try taking just 30 minutes out of every day and go for a stroll along the beach, or a cycle ride, or even just sit in your favourite cafe and enjoy a coffee. Appreciating the simple things in life will keep everything else in perspective, helping you to control your stress. Give up cigarettes: A bad habit that a lot of people don’t know how to kick. Smoking will not only endanger your health, but can burn a hole in your wallet as well. Be prepared to dedicate a lot of will power to giving up cigarettes once and for all. Spend more time with the people that matter: There is just too little time in this life for us to waste it on the wrong people. Focus on the people who we care about 18 OCIO magazine

and who care about us. This is the best way to stay happy. Get out of debt: You can’t really move forward in life if you are weighed down by debt. The road to financial freedom is a rocky one, but it is always manageable with a bit of planning and self-restraint. Learn a new language: Not only will learning a new language help improve your communication skills, but it can be fun and very rewarding. These days there are plenty of resources that allow you to learn a language for free and in your spare time. Become more organised: It doesn’t matter how much time you have on your hands if you can’t manage it properly – you’ll just spend most of the day running around aimlessly. When you get organised there will suddenly be more time to spare and things will start falling

into place. Make it a habit and enjoy your newly found leisure-time. Well, there you have it, a short list of common resolutions along with some helpful advice to help you make some long term changes in your life. I wish you all a healthy, happy and prosperous New Year. n práctica a tus problemas, preocupaciones y cargas de trabajo.

eing a fashion journalist and dedicated follower of fashion, I’ve always found it difficult to live in the fashion here and now. When it’s winter, I’m dreaming of sandals and summer dresses, and when it’s summer, I’m already thinking about soft cashmere sweaters and boots. I have worked hard to get this under control and live a little more for the day and then a few years back we came to live in Spain, and then it got really complicated with 28 degrees in October. In the stores as I do my rounds I have found some delightful chestnut-hued knee high booties that really reminded me of winters in London, crispy leaves drifting along pavements and a cold mid-afternoon breeze requiring at the very least a good sweater and a pair of tough denims . I have seen plenty of the favourite jet-black high heeled boots which regaled me with fashion stories of hard-edged motor jackets, ripped jeans and asymmetrical, threequarter-sleeved tees and, of course, a scarf and bling. But back in the present, what could I wear these darlings with, right here, right now? Being my creative fashionable self I start to think about pulling on these boots with a kicky skirt, pretty peasant blouse and soft scarf. Or maybe a flouncy floral dress and petite jean jacket? And of course as the real winter kicks in then the boots will work with the more traditional winter wear. u 26 OCIO magazine

Crespine for osteoarthritis Crespine Para la osteoartritis Clinic-Concept Dr Wolfgang Schmitt Orthopaedic Surgeon

J

oints have the function to connect different bones. The ends of the bones are usually coated with a layer of cartilage. Aviscous and elastic liquid located in a space between the joints ensures frictionless movement. This synovial fluid contains Hyaluronic acid and acts as a shock absorber. The body has its own enzyme which is capable of quickly stabalising the Hyaluronic acid. In osteoarthritis, wear and tear, as well as wear and tear of articular cartilage are typical. But also the synovial fluid, changed due to illness, is thin and can no longer be relied upon to do its job effectively. The consequences are pain and movement restriction which can become stronger and stronger. Osteoarthritis develops slowly and insidiously. It occurs not only due to age, but may be in relation to obesity, lack of exercise, incorrect balance due to bad posture or deformity of the joints. Arthritis can occur in all large joints such as knees, hips or shoulders but it can also affect small joints like fingers and toes. Vertebral joints are often affected too. For several years, to treat arthritis and such like symptoms, Hyaluronic acid therapy and joint fluids are replaced or supplemented. The orthopaedic surgeon injects the Hyaluronic acid directly into the joint space to relieve pain and discomfort. For this purpose, the industry typically uses Hyaluronic acid either from animal proteins or from a full synthetic genetically manufactured product. The synthetic production has the advantage that it produces less foreign responses in 34 OCIO magazine

the joints during daily use. 2 years ago this product was created in a German Laboratory. I was able to check the outstanding efficiency as the first orthopaedic surgeon in Spain. Meanwhile, CRESPINE has now become the chosen therapy in many European countries, the Middle East and Russia. With this product, the natural purpose of synovial fluid is restored and compensated on the cartilage surface, creating a joint function that is mostly back to normal after completion of therapy. In the comparsion to other methods, stem cell therapy for example, still no

reliable studies exist about its efficiency. CRESPINE however is always available, sterile and inexpensive by comparsion. n

L

W

inter pursuits, particularly the snow dependent ones, do tend to demand an awful lot of kit to keep out the cold and wet but, the bulk and weight of such equipment is getting smaller and lighter all the time. Advances in fabric technology and fashion styles mean that we can own clothes that work superbly for a number of activities and are not left in storage for eleven months of the year because they are “exclusively” skiwear. On the ski slopes I have seen people in jackets that do all the right things when worn with skis or snowboards but still look smart and comfortable around the town u

L

and nightspots. Because of this new styling and technology in fabrics these clothes will keep you warm, weatherproof and neatly styled for pretty much any outdoor activity you desire. There is little to beat smart, quilted or two-ply trousers made from quick drying, breathable materials beloved of walkers and campers in countries of cooler climes and adapt well to pursuits on horseback, archery, shooting, sailing and even hang-gliding. If your middle is likely to be threatened by a clothes gap it’s no problem to fix with a basic all-in-one outfit that weighs little and packs easily so you can then set about enjoying yourself. If the choice of colours and styles is huge then the add-ons or accessories, both decorative and practical, can only be described as incredible. As all winter pursuit lovers will know, it is really important to make sure the neck, wrists and the top of the head are warm and covered when temperatures drop. Women are far more skillful at accessorising than men so once the size and shape of your hat, gloves, scarf or “snood” have been identified gentlemen, leave the ladies to do the rest and, whatever you do, avoid surprising your better half with a gift of a military camouflage bandana, to complement her new pastel pink ski-jacket. Men are best left to cope with other accessories such as neat powerful little torches to clip on clothing or head bands, pouches and belt kits to hold wallets, mobile phones, cash 46 OCIO magazine

and drink flasks. And while you’re at it, a good “Sat-Nav” is a must if you are going on an adverture. Electronic mapping has come a long way in recent years so wherever you are and whatever your location, being lost need no longer be an issue. When it comes to health and safety, I always think it is best to talk to the experts who use it and know what they’re talking about. Many of the shops and hire places in the Sierra Nevada for example are run by genuine enthusiasts rather than impersonal (and frequently uninformed) high street chains or internet retailers. Sure it uses up a little of your fun time to organise yourself but a little time in good preparation can save you a lot of time later on. Be safe and enjoy the winter season. n

market must not be missed. The smells, sights and sounds are a feast for the senses. To this day, there has been nothing in the way of fresh produce that I haven’t been able to source in this large food market. From lemongrass to lenguado or rabbit to roquefort, you’ll surely find it here. Even if you are not buying, a wander around the market is an experience in itself. From here it’s probably the perfect time for a little pick me up! Almost opposite the entrance to the market is a side street where you will find another of Malaga’s iconic destinations tucked away: ‘La Casa Antigua de la Guardia’. Here you can sample the local Malaga sweet wines, sherries and vermouth from the barrel. A great winter warmer. Famous as being one of the oldest bars in Malaga, they write your tab on the bar in chalk! From here we take a stroll around the shops. The two main shopping streets in Malaga city centre being Calle Larios and Calle Nueva, run parallel to one another. However, don’t be afraid to explore the side streets where you can find some of the oldest and most interesting stores in the city from haberdashers to milliners. After a good look around the shops you will have probably worked up a bit of an appetite again. For lunch, try out one of Malaga city centre’s fabulous tapas bars. My insider tip: head to one of my favourite foodie spots, Calle Moreno Monroy - referred to as “Eat 50 OCIO magazine

Street”. Try ‘gourmet’ tapas at ‘KGB’ for modern, fusion gastro-dishes, and make sure you order a glass of Botani wine to accompany them. After lunch, you might fancy a bit of culture to round off your day. Malaga has a huge number of Museums. I love the glass museum for its quirkiness. Also recommended: Carmen Thyssen Museum which is small and easily manageable in an hour or two. To finish your day off, take a stroll through El Pimpi - Malaga’s largest restaurant - through to their huge terrace facing the Alcazaba and Roman Theatre - here you should take some photos of the beautiful ruins. If you fancy a final refreshment, El Pimpi’s sunny terrace is a great spot. Alternatively, try out one of Malaga’s many roof top bars. n

Many of the fairways are bordered by steep ravines and the course is dotted with several streams, water hazards and strategically positioned trees, carefully positioned to demand careful calculation and accuracy rather than risk taking. The whole course offers impeccably kept fairways and greens and the scenery is nothing short of spectacular. We played the course for the first time this year on a beautiful sunny day in November and we were very impressed. We are a four ball of mid handicappers with no

more than 4 shots separating any one of us, so at only 5306m it was going to be a manageable course...if we could just keep the ball on the fairways of course. After a very enjoyable 4 and a half hours of golf, where we managed to explore the countryside in quite some detail, we did indeed return satisfactory scores for the day and we have vowed to return for a second attempt in the very near future. campo de golf.

Hyundai Kona Electric by Marcus Williams T

he Hyundai Kona Electric is one of my favourite electric vehicles. It has a punchy performance, a genuinely useful range and decent levels of comfort and practicality. What is more is that the Kona Electric boasts a bolder look than many of its rivals, it is very well made and comes complete with Hyundai’s excellent five-year, unlimited mileage warranty. Hyundai has plenty of experience with alternative fuel vehicles, the Ioniq hatchback being a particularly successful model for them. The Kona Electric is a practical small SUV powered by a single electric motor. There are three trim levels to choose from: SE, Premium and Premium SE. Whilst each 56 OCIO magazine

of the models offer various extras, each of them come with great performance and smooth, relaxed road manners as standard. On the road the Kona is surprisingly fast, it rides nicely and handles very neatly indeed. It’s not the last word in driver involvement but that is more by design as the Kona takes a more relaxed approach to driving but, there’s enough grip and agility to help you make the most of the impressive power and torque on hand. Much like other electric cars, the Kona benefits from low running costs when compared to conventional internal combustion cars. l Hyundai Kona eléctrico es uno de mis vehículos eléctricos favoritos.

in turn, keeps maintenance costs low. Plus, all electric cars are exempt from road tax as there are no local emissions to worry about, so there you will have another saving on your motoring costs. In terms of electric range and battery life, Hyundai quotes a maximum range of 279 miles for the larger 64kw batteried Kona and a full charge will take nine hours and 35 minutes via its on board charger, or just 75 minutes to get to 80 per cent if you have access to a 50kW fast charger at a service station. The smaller battery will take less time to charge of course. The Kona Electric comes as standard with a Type 2 charge cable that’ll work with most public fast chargers. An emergency domestic cable is also supplied, but a full charge will take around 31 hours for the 64kW battery and again less for the smaller one. So let’s talk about styling. The Kona 58 OCIO magazine

Electric is just as stylish as its petrol and diesel engine siblings, with build quality and tech to match, and that’s key to the Electric model’s appeal. On the inside, once again, it doesn’t deviate wildly from its siblings. Designed from the ground up to house an electric drivetrain, the Kona electric still leaves ample room inside for its occupants. Elsewhere, a good driving position is easily found and visibility is good. All in all, if you like the Hyundai Kona then you will like the Hyundai Kona electric...it’s the same great car but with all the benefits this type of vehicle brings. n mantenimiento, en comparación con los coches de combustión interna convencionales.

Exclusive Travel Destinations A

t this time of year it is quite common for our thoughts to turn to sunny getaways but, instead of the usual trips you plan, why not try something special and whisk your loved one away to one of the most fabulous and stunning swimming pool locations in the world? From gold tiled floors to water the colour of blood, from luxury infinity pools to an inner-city oasis, there is a swimming pool out there to suit all tastes...and budgets. The Pool At Deplar Farm, Iceland: Have you ever wanted to see the Northern Lights from an outdoor thermal springs pool? This indoor/outdoor pool, heated to 38 degrees from thermal springs,

Bronte Rock Pool, Australia: Bronte Baths is one of Sydney’s oldest rockpools, having opened in 1887, and it’s free to swim there. Built into the rocky cliffside at the southern end of Bronte Beach, stairs lead down to a shallow saltwater pool overlooking the crashing waves of the Pacific so you can swim next to the ocean without the risk of riptides (or sharks). Wanna Jungle Pool and Bar, Bali: Beach clubs and Bali go together like gin and tonic – and they’re a dime a dozen on the Indonesian island’s southern coast but the newly opened Wanna Jungle Pool & Bar, set amidst the Ubud tropical valley at the Kayon Jungle Resort, is arguably the best, with a three level terraced infinity pool. The San Alfonso del Mar Seawater Pool, Chile: Once the largest pool in the world, this 3,323 ft long pool contains 250 million litres of seawater that’s pumped, filtered, and treated from the Pacific Ocean. The Pool At St. Regis Lhasa Resort, Tibet: Constructed from real gold tiles, the illuminated pool uses salted water heated to 28-32°C to create the ultimate swimming experience, and when you’re done gliding around you can relax with a poolside foot massage. High opulence in every sense. The Pool At The Library, Thailand: While we’re on the topic of coloured pools, the Library hotel in Koh Samui is home to one the same colour as the stuff running through your veins. Yup, this pool’s unique 62 OCIO magazine

combination of orange, yellow and red tiles creates a spectacular (if slightly disturbing) illusion, letting you bathe in water that looks like blood. Five stars for creativity. The Tolantongo Cave Pools, Mexico: The Tolantongo Caves are a collection of hot spring pools built into cliffs about 200km north-east of Mexico City. The pools are filled with warm, mineral-infused water that’s heated by the surrounding volcanic mountains. There are also caves and a tunnel to explore for a dose of adventure, a hot spring river to swim in. And if that wasn’t enough, there is also a child friendly pool with a waterslide. The Infinity Pool at Hotel Caruso, Italy: This refurbished 11th-century palace in Italy has an infinity pool that seems to drift suspended above the Mediterranean Sea. You get 180-degree perspective views of the mountains and the Amalfi coast

down below from this magnificent curved infinity pool. Don’t plan on proposing here unless you’ve got a ring to back up the unparalleled beauty of the surroundings. The Pool At Sant Francesc, Spain: Don’t outrule city breaks when deciding on your next dip. Set within a former Mallorcan mansion, this stunning roof terrace and pool overlooks the Sant Francesc Basilica and offers impressive panoramic views across Palma. Enjoy sundowners at the rooftop bar alongside seasonal dishes from a pop-up of one of the island’s most popular eateries, all while never getting fully dressed. Cavo Tagoo Cave Pool, Greece: For the ultimate in luxury, eat your breakfast off a tray floating on water in one of the iconic cave pool suites at Cavo Tagoo, Santorini. Each cave suite is built around the pool so you can literally swim from (almost) your

bed straight outside, and comes with the majestic backdrop of the volcanic caldera and spectacular hillside views, tumbling down into the Mediterranean Sea. The Infinity Pool At Six Senses Yao Noi, Thailand: Six Senses is not a hotel brand that flies under the radar if you know anything about infinity pools. Their Koh Yao pool looks out onto Thailand’s Phang Nga Bay with views of the bulging limestone formations which jut out from the turquoise waters of the Andaman Sea (and will easily take up major photo space on your phone memory). With an aesthetic that’s very much incorporated into the natural landscape, the pool’s lush surroundings, seclusion, and panoramic views will make you pinch yourself every time you swim to the edge. So there you have it, inspiration indeed for your next travel adventure. Happy travels! n

Wanna Jungle Pool and Bar, Bali: Los

Feliz viaje! n

CAVA

The secret is in the bubbles!

C

ava...undoubtedly one of the world’s greatest sparkling wines but, it’s not champagne is it, I hear you say. Well, no and yes. Cava dates back to the 1870’s and used to be called champán but, perhaps unsurprisingly, the French champagne growers took umbrage at this. Despite their grouches, it wasn’t until 1986, when Spain joined the EEC, that bureaucracy decreed that the name had to be dropped, and a new name, cava, (meaning underground cellar), was given. All cava is made by the method that used to be universally known as the méthode champenoise. Perhaps rather tetchily, the French took noisy exception to this too, and it had to go. Now it has to be called the método tradicional. What that means 70 OCIO magazine

is that cava is made in exactly the same way as champagne – but in a different country with different grapes. Fermented in the bottle, wine designated cava is of a superior quality and must adhere to strict production standards. There are many independent bodegas producing superb cava but the two great rivals are Freixenet and Codorníu. Both produce complete ranges that rival each

other for quality and value. Between them, they account for 80 per cent of Cava sales. Freixenet takes the prize in terms of sheer volume. It is the leading cava exporter and the largest sparkling wine-maker in the world. Codorníu, on the other hand, takes the prize for just how long it has been blowing those intoxicating bubbles. It began making wine in the 16th Century, laying down the first wine in Spain on the model of champagne in 1872 So as for which is superior, champagne or cava, well actually, it may not be important. Researchers at the University of Surrey in England have proved that any sparkling wine gets you drunk more quickly. The study concluded that after five minutes, the fizzy drinkers had an average of

0.54 milligrammes of alcohol per millilitre of blood, while those drinking flat wine averaged just 0.39 milligrammes. One theory is that the bubbles speed the flow of alcohol into the digestive system. So cheers – let’s raise our glasses to bubbles and to a sparkling year! n

E

This is far earlier than historians and archeologists first estimated, based on evidence previously found. Our deepened insight into soup’s history is due to a discovery archeologists made in 2012 in a Chinese cave containing ancient cookware that had been exposed to fire. Historians believe these early humans were boiling meats and other foods to break down the fat and create a sort of broth from bones and nuts. Of course due to its age scientists can’t be certain what exactly these people were boiling in the pottery but the waterproof and heatproof nature of the artifacts 74 OCIO magazine

makes their purpose clear. Cooking soup held certain advantages to our culinary ancestors, and became quite appealing when trying to draw out different flavours. Unlike the hot air rising from a roasting fire, boiling water comes into full contact with submerged foods. This allows for a quicker cooking time and more complete, even cooking. When they were lacking in ingredients or overall flavour, our ancestors had to make do with the simple things that were readily available.

The word “soup” comes from French soupe (soup or broth), which stems from the Latin “suppa” or bread soaked in broth. If you look back far enough you’ll find that these forms come from a Germanic source, from which also comes the word “sop”, a piece of bread used to soak up soup or a thick stew. Soups were consumed for their herbal properties and were regarded as treatments for certain physical ailments or sickness.

Soup is also a popular food for people striving for a healthier diet and for good reason as well. Studies show that simply starting meals with a healthy soup promotes healthy weight loss. Because soup contains so much water, it fills you up with fewer calories - giving a lot more satiety for a lot less calories. A large plate of chips will keep you reaching for more, while you can just have one bowl of soup and feel satisfied and fuller for longer. Soup’s simplicity makes it an ideal meal for hard times when food is scarce and people have limited ingredients. Soup’s simple constitution makes it accessible to rich and poor alike, and simple ingredients make it easy to digest in good times and bad. Throughout history, cultures have adopted their own variations with the ingredients on hand. From Russian borscht to Italian minestrone, the basics remain the same. Though every soup is extremely similar to one another, at their core we still see how soups have become points of pride for certain cultures, because they reflect the ingredients and tastes available to a region. Advancements in science enabled soups to take many forms: canned, portable, dehydrated and microwave ready. Canned 76 OCIO magazine

and dehydrated soups were available in the 19th century and supplied the military, covered wagon trains, cowboy chuck wagons, and the home pantry. Today, nothing can compete with a delicious soup recipe, well made with premium ingredients sourced locally whenever possible. n

muchas razones.

Recipe for Chicken Soup Receta para sopa de pollo Everyone has their own favourite chicken soup recipe, but rarely have so few ingredients added up to so much comfort. This version has classic flavours and, thanks to a simplified method, cooks more quickly than traditional chicken soups (the dish is ready in a little over an hour). There’s no need to make a separate stock; the vegetables and meat form their own satisfying broth. Ingredients (Serves 6 people) 1 whole chicken (about 4 pounds), cut into pieces (including back) 8 cups water Coarse salt 3 medium onions, thinly sliced (4 cups) 2 celery stalks, sliced crosswise 1/4 inch thick 4 garlic cloves, crushed 6 medium carrots, sliced 1/2 inch thick Directions Step 1: Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for 30 minutes. Step 2: Remove breast, and set aside. Add carrots. Simmer, partially covered, for 40 minutes. Step 3: Remove remaining chicken; discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces. Step 4: Stir in desired amount of chicken; reserve the rest for another use. Skim fat. Season with salt.

OCIO magazine
