Having Erosion Problems? We have a GREEN SOLUTION! “We are suppliers of a unique grass called Vetiver (Chrysopogon zizanioides). This grass is used in fighting erosion. The grass has an incredible root system. The plant grows to about 1.5 metres in height and the roots grow to 3-4 metres in depth, building an underground wall. It needs no special soil, fertilizer or care, only water until established. There is nothing labour intensive. Once established, Vetiver Grass can tolerate a great deal of water or no water at all. ou don’t have to be an Eagle Scout to make a good fire in your fireplace. You just have to use a tried and trusted method. Let us assume that you’ve had your chimney inspected and cleaned so that there’s no build-up of flammable creosote to worry about, you’ve taken the old ashes to your compost pile and your fireplace is now clean and ready to begin. Firstly, look up your chimney to make sure the damper is open. A ‘throat damper’ is located at the bottom of the chimney and will

hearth of anything flammable. Now crumple 2 or 3 sheets of newspaper and put them in your fireplace grate. The fireplace grate enables your fire to pull in the air it needs to keep a good draft going up the chimney. Put a good handful of kindling strips on top of the paper. On top of the kindling, criss-cross 8 or 10 dry pieces of hardwood. These pieces need to be larger than kindling but not as big as logs. The next step is very important. Crumple two more sheets of newspaper and light them, holding them up inside the fireplace to warm the flue and establish an upward flow of air.

Then light the paper in your fireplace grate from each end. When the paper lights the kindling, and the kindling lights the hardwood, it’s time to add 2 or 3 logs. Place the logs toward the rear of the fireplace so it will reflect heat into the room as it burns. As the fire gets established, you can add more logs. Place your fireplace screen or spark guard in front of your fire to protect your family and home from stray sparks.

With practice, you will use just enough logs so that the fire burns down to glowing embers by bedtime. It is ok to leave a fire burning out during the night but please make sure a fireplace screen is standing guard over your 08 OCIO magazine

fireplace just in case. Here are a few good tips: Use just enough softwood for kindling to get the fire going. Commercial fire starters can take the place of kindling. For logs, use dry hardwood (oak, maple, cherry, hickory or olive). The ideal firewood has dried for about one year. Don’t burn plastics or paper with colour printing, such as magazine pages or gift wrap, because they may give off toxins. And finally, no matter what, never use flammable liquids in your fireplace. A well lit fire will add a warmth and cosiness to any room. Be safe and sensible and your fire will be enjoyed by all during the colder winter months. n

any people only think of sand, sea and sangria when they think of the Costa del Sol, but as part of Andalucia, it has a lot of culture, history and art to enjoy. Estepona in particular is making the most of this with many museums, 25 striking murals around the town, festivals to celebrate the music and food of Spain and the largest auditorium on the Costa del Sol which boasts a great programme of concerts and 16 OCIO magazine

events. A great way to start a cultural visit to Estepona is to follow the “Murals Tour”, a walking tour around the fabulous artworks which are painted on the side of buildings all around the town. This way you can get to know the town, while taking in some wonderful works of art. There is an easy to follow route, pick up the map at the tourist office at the Plaza de las Flores. There is also a “Poetry Route” where you can read

beautiful poetry in different languages while exploring the Old Town. There are four interesting museums, three of which are located in the bull ring and are free to enter, just up from the marina. The Bullfighting Museum features objects related to bullfighting, including photographs of important bullfighters throughout the ages and scenes in the ring that have gone down in history, historic posters and the stunning suits worn on u

fight day by some of Spain’s top bullfighters. The Ethnographic Museum, is a great way to understand Estepona and its history, as it explains the way of life, customs and economy of the inhabitants of the Estepona province over the centuries. Finally, also in the bullring, there’s a Palaeontology Museum, which is distinguished by its important collection of molluscs and invertebrates from the Pliocene Era found in Estepona, a coral reef from the Late Triassic period which is unique on the Iberian Peninsula, a collection of replica Argentinean dinosaur skeletons from the Mesozoic Era, and a fossil collection from the Miocene Epoch. You can also visit an Archaeological Museum located in the 19th Century “Casa del Aljibe”, with a collection of fascinating objects including the 5,000-year old small statue of the ‘Venus of Estepona’. Before you visit, check the constantly updated cultural calendar for any 18 OCIO magazine

concerts or performances taking place at the Felipe VI Auditorium, the largest performance space on the Costa del Sol. There are also regular flamenco festivals and performances, particularly in the summer and during Estepona’s feria in July including the “Cultural Summer” programme of dance performances in the streets. A highlight for lovers of the Spanish culture of enjoying the best food and eating and drinking late into the night, is the Spanish Jamon Festival in August. Over four days, 1.5km of stalls stretch along the seafront promenade, showcasing the best hams from around Spain, sliced by master carvers, in a wonderful atmosphere. The Kempinski Hotel Bahía is just 3km from the beautiful town of Estepona and is the only 5* Grand Luxe hotel in the area. They are passionate about art and culture, with works of art by local artist Pedro Rodriguez offering guests the chance to

Various arts events and exhibitions are held throughout the year at the hotel, and throughout the summer there are classical, jazz and flamenco guitar performances in the hotel’s restaurants.

W

ith the advancement in technology, reduced prices of cameras and other electronic devices, home surveillance systems have become a common household option. People may choose home surveillance systems for many different reasons. Here are the top five reasons for you to have one for your home and property. Feel safe and sleep well Most people are afraid of being robbed. It may not be a phobia but once in a while you may wake up in the middle of the night from strange or unfamiliar noises and then you find it hard to sleep without making sure that no one has entered your property. A home surveillance system will be the perfect answer to such worries. With a surveillance system installed, you can see all doors and windows and any other possible entry points from the comfort of your bedroom, be it live or on video playback on your smartphone. Your smartphone is your key, you can watch the intruder live and get in touch with the authorities at the same time. Discourage potential burglars You can catch criminals and provide evidence to court as a service to your community. All you want to do is discourage potential criminals from attempting to burgle and or destroy property. If you have installed a surveillance system with visible cameras, burglars will look for other targets. If you have 26 OCIO magazine

installed dummy cameras, be sure a thief knows the difference. Don’t count on fooling them. Insurance evidence Most of the time, people that are robbed find burglars leave no trace behind them. With a remote home surveillance system you will have hard evidence. The law enforcement agencies will trace the perpetrator using your videos. A remote system will record the videos at a distant location so the burglars have no chance to destroy any recorded data, even if they turn your house upside down. Monitor your home Leaving town for business or vacation can be nerve wracking even with a home security alarm. Being able to monitor your property at anytime from anywhere in the world, gives you a secure feeling that lets you sleep well and work worry free. Whether it is just a quick look at your property or swimming pool after a storm or simply verifying that the pool and home services you have contracted are

doing their job. Nobody wants to pay for services that are not being performed. Stay Informed Aside from anything else, some people just want to stay informed. They prefer to know who is at the front gate or door. If you feel the same, then you may appreciate a surveillance system which shows you who is standing by the door long before you stand up from your chair. Modern cameras send you an instant notification to your smartphone, if someone is crossing a predefined area of your property.

Winter Feet B

eing a fashion journalist and dedicated follower of fashion, I’ve always found it difficult to live in the fashion here and now. When it’s winter, I’m dreaming of sandals and summer dresses, and when it’s summer, I’m already thinking about soft cashmere sweaters and boots. I have worked hard to get this under control and live a little more for the day and then a few years back we came to live in Spain, and then it got really complicated. Living day to day with winter temperatures that are

drifting along pavements and a cold mid-afternoon breeze requiring at the very least a good sweater and a pair of tough denims. I have seen plenty of the favourite jetblack high heeled boots which regaled me with fashion stories of hard-edged motor cycle jackets and ripped jeans, teamed of course with a scarf and some bling. In terms of boot fashion the stores are filled with all shapes, sizes and colours, featuring a myriad of options for bootie fans. Over the-knees are popular as are the up to the knee options, some even with a front zip for a difference. Ankle boots will always be in style, especially in countries like Spain with warmer winters as they are so adaptable to any outfit. Mid calf boots have never managed to reach the heights of popularity as its counter parts but still should not be u

So whether you’re doing the blanket coat, sheer hemmed skirt, shorts, wide leg jeans or a denim skirt, this winter season you’ll likely want to throw a trusted boot into your fashion plans. tiendas rebosan de todas las formas, tamaños y colores, incorporando millares de opciones para las fans de botitas.

nyone that follows my online site will know that I am not a big fan of the bathroom scales. I see too many amazing and beautiful women get wrapped up and consumed by a number on a set of scales. You should all know that the scale is not the only measure of success and in my opinion the least important. Yes it does give you some measure as to how your body is changing but it isn’t the only thing you should be looking at to try and see progress. If you have to have some sort of gauge or measurement on your weight try and find something else to measure, like your favourite pair of jeans, shorts or dress. The fit of your clothing can be a better reflection of your hard work and any body changes you have made. Not only is clothing a better tool but it doesn’t come with the anxiety and guilt that the number on a scale comes with. I have seen numerous people change in size and measurements but not much change on the scale, so don’t get stuck on those numbers, they don’t dictate your success. Use the scales as a tool by all means but not as a judge. That thing does not know how beautiful you are, how smart you are or how much you are loved, so if you let it change your thoughts about yourself to negative ones, you need to give your head a shake and take a step back. Stop stressing about it, stop stepping on it every day and certainly stop letting it ruin your day. The moral of this editorial is to not let a stupid number on a set of scales determine your happiness. You are the most beautiful when you are happy and love yourself. So just try to be the best you YOU can be...and relax. n

Q

34 OCIO magazine

Scales are the enemy!

Roman Sulphur Baths S

ulphur is the ninth most abundant element of the universe and is one of natures great jokes on the human race. Known to the ancients as “Brimstone” it is one of the elements essential to life as a constituent of various biologically active compounds. Pure sulphur is odourless but fun loving nature frequently combines it with hydrogen to produce hydrogen sulphide which has the odour of rotten eggs. Nevertheless sulphur has long been renowned for its medicinal properties. Bathing in sulphur springs to maintain or improve the condition of the skin or to cure some epidermal complaint has been common since antiquity. In the valley below Manilva are the Roman Sulphur baths of Hedionda. Interestingly, the baths are actually located within the municipality of Casares but can only be accessed and enjoyed from 36 OCIO magazine

Baños de Azufre Romanos Marcus Hyde Manilva. The high sulphur content of the baths is due to a sulphur spring which flows from a limestone outcrop above the valley. It attracted the attention of the Romans 2000 years ago and an arched bathing complex was created of which four chambers still exist, although other adjacent water channels can be seen which suggest the complex was once much larger. A canopy has been erected over what survives of the original Roman structure which can still be seen from the entrance by those not wishing to take the plunge. Hardy-types not put off by the less than pleasant smell still come to immerse

themselves in the cool, murky, healthgiving waters. In fact the baths are quite popular on fine Sunday afternoons all year round, and on summer days when a strong wind makes the beach uncomfortable. Families from the village picnic on the surrounding grass under the shade of eucalyptus trees and the children take over the baths. The baths can be reached carefully by car by turning off the A-7 at a roundabout by Lidl supermarket just west of Sabinillas village and east of the River Manilva. Follow the track road up the valley, under the large toll motorway viaduct past the Roman Oasis restaurant and the site is below on the right hand side. The site is not easy to find, it is minimally maintained and parking is not easy or well organised but still the trip is well worth it. A visit here is certainly one to remember. n

Located in the valley below Manilva are the incredible Roman Sulphur baths of Hedionda, and must be seen to be believed!

E

The All New SsangYong Musso T

hose with long memories might remember the Daewoo Musso of the 90’s. It was a rugged 4x4, intended to compete as an alternative to the likes of the Land Rover Discovery and Toyota Land Cruiser. It was also a rebadged SsangYong – and it’s that company that’s resurrected the Musso name for 2016. This time around, the Musso is a doublecab pick up truck. ‘Musso’ means rhinoceros in Korean, so there shouldn’t be any doubt as to the rugged qualities SsangYong wants to imply about its vehicle. The new Musso is really more of an update to the SsangYong Korando 44 OCIO magazine

SsangYong Musso Words: Thomas James

Sports, but the changes go deeper than just the obvious new nose and new name. The biggest change is the new 2.2-litre diesel engine. It’s received a bump in power, pushing it up from 153bhp in the Korando Sports to 176bhp in the Musso. The updated engine is less rattly than its predecessor and quite refined most of the time, though it can’t disguise the

Musso’s commercial vehicle status. It offers flexible performance and ample pulling power to make the most of the Musso’s 3,000kg towing ability. It’s available with a choice of load covers, too – including a fully-windowed and painted hard top to make the Musso look a little less like a truck and more like an SUV. The manual model has a rather stiff shift action for our liking, so for this reason, we prefer the six-speed automatic, which is a new addition and an upgrade from the five-speed box on the Korando Sports. The Musso’s interior has received quite the upgrade too, even on basic models. Our EX was luxuriously equipped with u

For the materials used inside the cabin, the company has opted for hard wearing and practical, with wipe-clean upholstery preferred over fabric, a good decision in our opinion bearing in mind the vehicle is a work horse more than anythng else. And if all this wasn’t enough to convince you, the price tag will for sure. Competing with the popular Mitsubishi L200 and the Ford Ranger, (both of which are down on power and equipment) the Ssang Yong Musso is looking very good value indeed and thoroughly deserves a test drive. n 46 OCIO magazine

pain produces an astonishing 40m hams a year, including excellent varieties of the famous jamón serrano made from the dry-cured legs of the white pig and produced in regions such as Teruel and Trévelez in eastern Spain. But, it is to the west you have to look for the finest jamón, to the vast tracts of land known as the Dehesa, an ecosystem of prairie-like grazing land dotted with encina trees, known as holm oak in English, which once covered almost 90% of the country but now only remains in the regions of Salamanca, Extremadura, Andalucia and across the border into Portugal. It is here that the black Iberian pigs thrive, 48 OCIO magazine

Across in Portugal they are known as “porco de raça Alentejana”, but to everyone in Spain, these fat pigs with slender legs are known simply as “pata negra” because of their trademark black hooves. The production of jamón ibérico is strictly regulated. The Denomination of Origin (DO) covers four regions. To the north, Salamanca

and the town of Guijuelo, home of Joselito, arguably the most famous name in jamon and certainly the best known to ham lovers in the UK. To the west, the province of Huelva and particularly the town of Jabugo. To the east there is the less well-known denomination of Valle de Los Pedroches and finally, bordering on Andalucia, is the dusty region of Extremadura known also as the home of the conquistadors, Cortez and Pizarro. Although each region would claim that the hams they produce are the finest, the rules which govern their production are the same and the end results indistinguishable to all but the most experienced palate. Iberian piglets are fed on a diet of cereals u

The final three months or so of their lives are spent out in the Dehesa during what’s known as the montanera, a period from October 1 to January 1 when acorns fall from the oaks. The pigs must feed on enough acorns and reach the DO-specified weight of 160kg to gain the coveted title jamón ibérico de bellota. The regulations also specify that there should be no more than two pigs per hectare of land to ensure that each pig can eat the required amount of between 6 and 7kg of acorns a day. The acorns from the encina oaks are rich in oleic acid, the same chemical which can be found in olives. The flavour finds its way into the fat of the animal, so much so that the locals refer to Iberian pigs as “olives with legs”. The curing and ageing of the hams is no less important than the rearing and butchering of the animals. The front legs, the paletas, and the rear legs, the jamones, are chilled overnight to allow them to firm and then covered in Andalucian sea salt for approximately one day per kilo of weight. They are then washed and hung to dry allowing the natural flora to form on the surface. This final part of the curing process can take up to three years, after which they are ready for sale. But not before one final check from the DO inspectors, who test the hams one more time by inserting a sharpened beef bone and sniffing to check 50 OCIO magazine

the quality of the cure. The results of this five year journey from the Dehesa to the plate are incomparable. The oleic acid in the acorns on which the pig feeds makes the fat of the jamón ibérico de bellota one of the truly magical taste sensations as it dissolves in your mouth.

New Year’s Resolutions and how to achieve them T

he New Year is upon us and many people will be starting on their New Year’s resolutions. It is a great time to think about the important lifestyle changes you have promised yourself that you will make in 2017. However, the sad truth is that so many of these promises simply fail. This is due to a number of factors but, primarily, the cause of the failure year after year, is a lack of preparation and genuine comitment. To help with both of these issues, start by making your goals realistic and achievable. What follows is a list of common New Year’s resolutions along with some advice on how to keep to your promises. Get in shape: Losing weight is the top resolution for the New Year, combined with “exercise more”. It’s easy enough to start 54 OCIO magazine

an exercise and diet program, but the trick is to find a decent one that will give you steady results. Again, be realistic on what you can and want to acheive. Earn more money: Next to losing weight, earning more money is at the top of most peoples resolutions. Fortunately there are plenty of options available for earning some extra cash, you just have to be a little

creative and brave. Meet new people: It is so easy to find yourself in a routine that revolves around the home and the odd trip out but of course this type of lifestyle means you are missing out on a lot of interesting opportunities for networking and having fun. Don’t be afraid to get out there and make some new friends. Look around for clubs and classes that focus on your own interests, that way you will be meeting like minded people. Reduce stress: Stress is one of the biggest health issues and it can have a very destructive effect on your relationships as well as your health. It may be an unavoidable side effect of our hectic modern lifestyles, but it can be effectively managed with a calm and practical approach to your problems, worries and workload. It is so u

easy to focus on the negative things in life but instead, try taking just 30 minutes out of every day and go for a stroll along the beach, or a cycle ride, or even just sit in your favourite cafe and enjoy a coffee. Appreciating the simple things in life will keep everything else in perspective, helping you to control your stress. Give up cigarettes: A bad habit that a lot of people don’t know how to kick. Smoking will not only endanger your health, but can burn a hole in your wallet as well. Be prepared to dedicate a lot of will power to giving up cigarettes once and for all. Have better sex: Any healthy relationship requires a good deal of intimacy, and sex can actually help keep us mentally and physically healthy. The idea is to make it a fun and rewarding experience, and this is something that comes with practice and exercise. Spend more time with the people that matter: There is just too little time in this life for us to waste it on the wrong people. Focus on the people who we care about and who care about us. This is the best way to stay happy. Get out of debt: You can’t really move forward in life if you are weighed down by debt. The road to financial freedom is a rocky one, but it is always manageable with a bit of planning and self-restraint. Learn a new language: Not only will 56 OCIO magazine

learning a new language help improve your communication skills, but it can be fun and very rewarding. These days there are plenty of resources that allow you to learn a language for free and in your spare time. Become more organised: It doesn’t matter how much time you have on your hands if you can’t manage it properly – you’ll just spend most of the day running around aimlessly. When you get organised there will suddenly be more time to spare and things will start falling into place. Make it a habit and enjoy your newly found leisuretime. Well, there you have it, a short list of common resolutions along with some helpful advice to help you make some long term changes in your life. I wish you all a healthy, happy and prosperous New Year. n

And the City with the most Michelin Starred Restaurants is... W

ith the release of the 2017 Michelin Guide, Tokyo continues its domination as one of the leading food capitals of the world. Ten additional restaurants in the city gained stars this year, bringing its total number of Michelin-starred restaurants to a staggering 227—more than any other city in the world. Even more remarkable? This is the 10th year in a row Tokyo has held this coveted position. Three star restaurants on the list include Joël Robuchon’s Tokyo outpost. When asked to comment on what makes his cuisine special he commented “to make a grand meal, you have to make it simple. But to look simple is very complicated. You must have the highest quality products, the best equipment, and you must stay focused on the original flavour of the produce. Only then can the artistry of a great chef create grand dishes.” This philosophy has carried over into everything Joël Robuchon has done, from his days at Jamin in Paris when he was regularly designated the best chef in the world, to the careful writing of his several cookbooks. Meanwhile, back to the 2017 Michelin 60 OCIO magazine

C

Belgian Beer & Rabbit Stew T

his is a fantastic winter dish that is easy to prepare, easy to cook and tastes simply delicious. My recipe is for 2 to 3 persons but it can easily be expanded to accommodate more persons. Your shopping list for 2 to 3 persons: A whole rabbit 2 onions (chopped into chunks) Pepper, Salt, Thyme and 2 Bay Leaves A small amount of balsamic vinegar Dark sweet brown beer Dark sugar (2 soup spoons) Real butter (not olive oil) Flour Beef cube Potatoes Note: If you don’t like rabbit you can also make this dish with beef - use a cut that is perfect for simmering! 64 OCIO magazine

Step-by-step recipe: Cut up the rabbit, leave the liver and kidneys on the side. Some people put the head in also, but that is up to you. Put salt and pepper on both sides. Take a big frying pan and brown off the butter. Then put all the rabbit pieces (except the liver) into the pan and fry for 5 minutes on each side. Put a little bit of flour over the rabbit and stir with a wooden spoon. Put the onions over the rabbit and add one

bottle of dark brown SWEET (very important for the taste!) beer (30cl) into the pan. Add the two bay leaves and thyme, the beef cube and the two soup spoons of dark sugar. Fill the pan with water so that the rabbit is completely covered. Add a little bit of balsamic vinegar. Simmer for one and a half to two hours without covering the pan, if necessary add some more water. During the last half an hour put into the pan the kidneys and when the rabbit is almost ready add the liver too (the liver needs only 10 minutes). The sauce should be slightly thick, if not add some flour or gravy granules Serve with your choice of potatoes. I hope you are successful and that you and your family thoroughly enjoy this classic Belgian dish. n

E

T

he exciting and very popular ‘detalles’ bar and restaurant in Torre del Mar, which is already famous for it’s amazing selection of tapas, has recently launched a new ‘Fondue’ menu to complement the existing range of fresh and innovative dishes available. OCIO magazine went along to try out the new menu. We were a table of four persons sharing a Thai style fondue for 2 persons and 2 traditional style meat fondues. Interestingly, the Thai style fondue presented us with a seasoned soup like liquid in which to cook our food as opposed to the traditional oil - the results were quite spectacular. The combination of the seasoned soup and the meat was a taste sensation that needs to be experienced. Anyone that is familiar with fondue will appreciate the fun element in this style of dining. The confusion of whose sword is whose is easily avoided if you want to but, in our case, we found the entertainment value of stealing neighbouring swords simply too good to miss. The meat or fish choices can be accompanied with a selection of delicious vegetables and potatoes. The ready to eat seasoned and salted potatoes were simply the best I have ever tasted... really! We finished off our meal with the chocolate fondue dessert which came with a platter of strawberries, melon, banana and orange to be dipped into the warm melted chocolate. Now that last sentance alone 68 OCIO magazine

‘detalles’

The (R)evolution of Tapas should be enough to entice you along to detalles. And whilst you are going, invite a few friends and make night of it, I promise you, it will be a night to remember. n

E

The 10 Most Popular Cocktails in the World D

o you have a signature cocktail? If not, then you need to find one. Few things make you feel more sophisticated than casually ordering exactly what you want while your friends hopelessly peruse the menu, trying not to ask for something they won’t like. But which to pick and make your own? It depends on your tastes and the occasion, of course, but as with everything in life it’s useful to consider what everyone else is doing. Drinks International have once again surveyed 100 bars around the world to find out what the most popular cocktails are. Here’s the top ten list starting in 10th place. 10. Old Fashioned - 9. Moscow Mule - 8. Sazerac - 7. Margarita - 6. Whisky Sour 5. Dry Martini - 4. Manhattan - 3. Daiquiri - 2. Pina Colada and the top cocktail from around the world, for the second year in a row, is the Mojito. Unfortunately for cocktail bartenders around the world, it takes longer to make a Mojito than almost any other cocktail on the list. The Mojito is robust yet delicate. It is a classic that packs and punch and, unlike many others, feels substantial in the hand thanks to the chunky glass. 72 OCIO magazine

A good rule of thumb when it comes to drinking cocktails is that you ought to be familiar with all of the above, giving you a broad range of classics to draw on depending on your mood. After all, there’s only so many beers and wines that one can drink! n

T

Old Fashioned – 9. Mula de Moscú – 8. Sazerac – 7. Margarita – 6. Whisky Sour - 5. Martini Seco – 4. Manhattan – 3. Daiquiri – 2.
