ctober is Internationally recognised as Breast Cancer Awareness Month, a time when public service groups and medical professionals work together to promote awareness of the disease. Promoting awareness involves education about prevention and fundraising efforts to help find cures, and support for survivors and those dealing directly with the disease.

Breast cancer is the fifth deadliest form of u

cancer worldwide, it is the most common cancer among women and approximately 1 in 8 women will get breast cancer at some stage during their lives. It is a reminder to women everywhere of the importance to practice regular breast self-examinations and to schedule regular visits for well woman checks and breast scans to increase the early detection of breast cancer.

Every October, there is an explosion of pink ribbons across the globe as the international community recognises October as Breast Cancer Awareness Month with various fund raising events.

A recently formed Breast Cancer Charity is now in operation covering the Axarquia area. The Asociación de Mujeres con Cáncer de Mama de la Axarquía u

This is a friendly group of women who have come together with first hand knowledge of breast cancer, all having battled through it themselves. They are able to offer help and guidance from the initial discovery right through to post operative care. They can offer support and understanding on a physical level as well as a psychological level. They have the knowledge and sensitivity needed to help guide the breast cancer sufferer and their family through a very distressing time.

“ESPERANZA” is actively encouraging women to join their group and get involved with fundraising ideas and activities to make a difference to our local community.

Donators and sponsors are also in great demand to help make this charity grow and make a difference to the lives of breast cancer sufferers.

The group meets in Velez Malaga on the second Wednesday of every month at 5.30pm.

Don’t Worry... ...Be Happy No te preocupes... ...sé feliz.

ife is a drag - What’s the point of anything? - I’ll never

be happy!

Do any of these gloomy thoughts sound familiar? It’s likely they do. The occasional case of the blues is perfectly normal, but that doesn’t make dealing with it any easier. If you allow them to, negative thoughts can fester and lead to serious depression. That’s why it’s important to take action early to bust yourself out of a slump. While these suggestions won’t eliminate your problems, they can help you break a negative thought pattern and stop feeling depressed. (Naturally, if you think your moods are more serious and you might be suffering with a mental health problem, don’t hesitate to see a medical professional).

1. Understand the emotional cycle – Life is an emotional roller coaster. Some days you feel like nothing can stop you. Other days you feel utterly hopeless. Most of the time you’re somewhere in between.

and negative emotions will help you put your feelings in perspective. Next time you feel down, just remember that it’s a natural emotion that will inevitably pass.

Knowing that a feeling of depression is only temporary makes it less dreadful.

2. Spend time with positive people – Nothing affects the way you think and feel more than the people you interact with.

Thoughts (both positive and negative) are contagious. If you are surrounded by negative people, it’s only natural that you’ll start to think and feel the same way. To improve your outlook on life, spend time with positive people. Search them out and try to understand the way they see the world. Chances are their happiness will rub off.

3. Reflect on past success – In the wake of a colossal failure, it’s easy to forget everything you’ve ever done right. Take a few minutes to remember your past accomplishments and build yourself up. What made you successful before?

What are your strengths? Frequently, this

exercise will build self confidence, help you figure out what went wrong, and generate ideas for success in the future.

4. Focus on gratitude – It’s human nature to measure ourselves against those ahead of us on the social ladder. Studies have shown that people care more about being richer than their friends than actually making more money. When you consider everything good in your life and compare it to the problems of less fortunate people, the issue that’s making you depressed won’t seem as serious.

5. Change of scenery – One of the best ways to change the way you feel is to change your environment. When you get in a slump, you start to associate your problems with everything around you. It can get to the point where your environment is a constant reminder of your problems. This can be a dangerous cycle.

The solution is to change things. Change doesn’t have to be radical. Cleaning up, adding more lights, or including pleasant decorations can completely change the u

a vida es una carga – Por que hacemos lo que hacemos? – Nunca sere feliz! A que les suena algunos de estos pensamientos? Lo mas seguro es de que si. Estar tristes de vez en cuando es perfectamente normal, pero eso no hace que tratar con ella sea mas fácil. Si dejais que estos pensamientos negativas se te meten en la cabeza y su vida al final llegaras a tener depresión grave. Por esto es muy importante sacarse a si mismos de esa caida antes de que pueda ocurrir. Mientras que les estamos contando no pueden eliminar a sus problemas, si que podran ayudar a romper su rutina de pensamientos negativas y dejar de sentirse deprimidos.

(Claramente, si piensan que sus humores son mas serios y creen que pueden estar sufriendo un problema de salud mental, no duden un momento en buscar ayuda medica profesional). 1. Comprender el ciclo emocional – La vida es una montana rusa de emociones. Algunos días sientes que nada te puede parar los pies. Otros en cambio te sientes totalmente sin esperanzas. La mitad del tiempo estamos en el intermedio. Comprendiendo las pautas de emociones positivas y negativas les ayudara a poner a poner sus sentimientos en orden. La próxima vez que se sientan deprimidos, acuerdense

de que es una emocion de lo mas natural y de que ya se les pasara. Sabiendo que sus sentimientos se sienten deprimidos y de que es algo temporal lo hace menos terrible. 2. Pasen el tiempo con gente positiva – Nada afecta la forma en que piensas y sientes con las personas con los que pases tu tiempo. Pensamientos (positivo y negativo) son contagiosos. Si estais rodeados de gente negative, es mas que natural de que empezareis a pensar y sentirse de la misma forma. Para mejor su punto de vista de la vida, pasen su tiempo con gente positive. Buscanlos y intentan omprender la manera en la que ellos ven al mundo. Lo mas probable es de que su felicidad te ira pasando a ti también.

3. Reflejar en triunfos/logros del pasado – En mitad de una equivocacion colossal, es muy facil olvidarse de lo que si habeis hecho bien en vuestros vidas. Tomense unos minutos para acordarse de sus triunfos/logros del pasaado y asi mejorar a su autoestima. Que te hacia ser exitoso/ a en el pasado? Cuales eran sus puntos fuertes? Frecuentemente, este ejercicio les ayudar a fortalecer a su confianza, ayudarte a averiguar que paso, y producir ideas para sus próximos triunfos/logros en el futuro. 4. Centrarse en la gratitud – Es de la naturaleza humana compararnos con aquellos que estan mas altos en

la escala social. Existen estudios que muestran que hay gente que les important mas ser mas ricos que sus amigos/as que hacer dinero. Cuando considerais todo lo bueno que nos da la vida y lo comparais con las problemas de las personas que no tienen tanta suerte como nosotros, la cuestion que les esta hacienda sentirse deprimido no les parecera tener tanta seriedad. 5. Cambio de escenario – Una de las mejores formas de cambiar como se sienten es cambiar su entorno. Cuando estais metidos en una caida, empezais a asociar tus con todo a su alrededor.

Puede llegar al punto donde su entorno les esta constantemente recordandoles a sus problemas. Esto puede llegar a ser un ciclo peligroso. La solución es cambiar las cosas. El cambio no tiene que ser radical.

Hacer limpieza, anadir mas luces, o incluso anadiendo decoraciones agradables puede cambiar el estado de animo de un habitacion. 6. Romper la rutina – Seguir con la misma rutina, dia tras dia, puede llegar a ser monótono y deprimente. A menudo les con lleva a estar atrapados en una rutina. Para salirse de ella necesitaran temporalmente cambiar a su rutina. Si pueden, pidan un dia libre del trabajo. Haz algo que normalmente no tienen tiempo de hacer o algo que nunca han intentado hacer. A lo largo del tiempo, pidiéndose un dia libre de vez en cuando les ayudara a no recaerse y les hara mas feliz y mas productivos. 7. 6. Break your routine - Going through the same routine, day after day, can be monotonous and depressing.

It often leads to getting caught in a rut.

To get out of it you need to temporarily change your routine. If you can, take a day off from work. Do something you don’t normally have time for or something you’ve never tried. In the long run, taking a day off every now and then to get out of slump will make you happier and more productive.

7. Interact with animals and nature – It’s funny when you consider how humans put so much importance on their own tiny problems. Animals don’t think this way. A little bird doesn’t mope around because it isn’t an eagle or because another bird beat it to a tasty seed. Animals live in the present moment and they show love unconditionally. Observing and interacting with them will help you get over your problems.

8. Get moving – As Johnny Cash famously suggested, “Get a rhythm, when you get the blues.” Moving to a beat makes everyone feel better. The same is true for movement 16 OCIO magazine

in general. Hitting the gym or going for a walk will help you shed the lethargy that comes with feeling depressed. The more enthusiastic your moments, the better you will start to feel.

9. Think about the big picture – As Carl Sagan made evident with the Pale Blue Dot, we’re insignificant creatures living in a vast universe on a tiny planet. In the long run, everything we do will probably be forgotten. Some might find this depressing, but it shouldn’t be. It means that all our problems are illusory. In a million years no one will remember what you did or didn’t do. What matters is the present moment and enjoying every second of life that we’re blessed with.

10. Do something to help yourself – Above all, the best way to stop feeling depressed is to take action. What is your biggest problem? How can you alleviate it? Once you decide to stop moping and start moving forward you won’t have time to feel depressed. Action will occupy your mind and give you something to look forward to. Once you get some results, you’ll build momentum and positive thinking will keep getting easier. n

Guests sipped some delightful wines provided by Dimobe Wines and enjoyed a fine selection of finger food prepared by Blue Rose Catering head chef Jose Marfil and his team.

The evening was a great success and was enjoyed by all who attended.

Entre, en colaboración varios negocios locales, apostó por un desfile de moda en un popular café, con música en directo de conocidas estrellas, en el Paseo Marítimo de Torre del Mar. Las empresas presentaron sus colecciones de otoño con la ayuda de estupendos modelos.

love handbags. No, wait. make that I’m OBSESSED with handbags! I just love a good bag whether it’s big, small, elegant or sporty and I’m in good company because I’ve yet to meet a woman who doesn’t! Now personally I try not to get to involved with seasonal trends as far as bags are concerned but as a dedicated follower of fashion I do respect that colours and styles do change with the season and, naturally, the big brand names must continue creating the latest ‘must have’ bag to keep their loyal customers satisfied.

So with all that in mind let’s have a look at some of the styles you should be watching out for this autumn.

THE CLUTCH: The clutch is an essential accessory in everyone’s wardrobe. For autumn, my advice is to update that solid black clutch that everyone has and purchase one that has more detail like an exotic skin or a patchwork clutch. Embellished clutches are huge right now as well and we are seeing Gypsy and Indian inspired looks becoming very popular. My favourite thing about clutches is that you can wear them day or night and they’re a great item to bring on your travels because they’re small and light and they can u 24 OCIO magazine

Simplemente adoro un buen bolso, da igual si es grande, pequeño, elegante o deportivo, y no soy la única, pues aún no conozco una sola mujer a quien no le gusten. Ahora, personalmente, trato de no estar demasiado pendiente de las tendencias de temporada, en cuanto a bolsos se refiere, pero como fiel seguidora de la moda respeto que hay colores y estilos apropiados para cada estación y, naturalmente, las grandes marcas se vean obligadas a crear el último “imprescindible” para tener a sus fieles clientes contentos.

De modo que, con todo esto en mente, vamos a echar un vistazo a algunos de los estilos que podemos encontrar este otoño.

EL BOLSO DE MANO: El bolso de mano es un accesorio esencial en el fondo de armario de todo el mundo. Para este otoño, mi consejo es actualizar aquel bolso de mano negro que todo el mundo tenemos con y comprar uno que tenga algún detalle más actual como una piel animal o un trabajo de patchwork. CROSS BODY BAG: This trend is still thriving as it just continues to be a chic alternative to the everyday bag. What’s more, it seems that tons of people love being hands free. It’s a very modern look and we see mums wearing cross body bags as well as teenagers so it seems to be incredibly versatile and appealing to women of all ages.

CANVAS: Everyone loves a casual and light bag which is suitable for all ocassions. Canvas feels easy but always looks chic and everyone from high street retailers to more expensive luxury designers carry their own version. My favourite bags in canvas are tote shaped – they always look classic, sometimes preppy but always on trend.

PRINTED BAGS: I’m seeing these incredible bold coloured Indian inspired bags everywhere. They make a huge statement and add major style to anyone’s wardrobe. My favourite look is jeans and a simple t-shirt with a super chic colorful, yet casual printed bag.

THE BACKPACK: Backpacks are back in a big way and they’ve definitely gotten trendier since the 4th grade!

A great leather backpack in a light or nude coloured leather is going to be huge this season and they’re great for everything from travel to every day wear. n

Se presentó como la pasarela más larga de Europa y el más excitante desfile de modelos que nunca hubieras querido ver y, desde luego, no se equivocaron.

El Desfile de Moda “Pasarela Málaga” recibió a miles de personas sentadas en filas de sillas alineadas a ambos lados de una punta a la otra de la calle Larios. La alfombra azul extendida a lo largo de esta famosa calle, creó un elegante paseo de modelos impresionante, vestidos de pies a cabeza con las colecciones de un buen número de diseñadores.

Algunos asistentes elegían ver el desfile de pie, otros muchos prefirieron sentarse en los numerosos cafés y bares, saboreando cava fresco y disfrutando del show. La música, las luces, los modelos, todo ayudó a crear una noche inolvidable.

It was presented as the longest catwalk in Europe and the most exciting fashion show you could ever wish to see, and they were absolutely right.

The Malaga Fashion Show ‘Pasarela Malaga’ was attended by thousands of people which were seated neatly in rows of chairs which lined both sides of Calle Larios from one end to the other. The striking blue carpet which stretched the length of this famous street would create the elegant path for the stunning models, which were dressed head to toe in collections from a number of designers.

Some of the visitors chose to stand and watch the parade whilst many more were seated in the numerous cafe’s and bars sipping chilled cava and enjoying the show.

The music, the lights, the models all helped to create an unforgettable night.

Q: Would I like to take a Porsche Boxter for a test drive along the coastal roads of Southern Spain?

A: Is that a trick question?

ew things in life are as much fun as driving a fabulous car in glorious sunshine, along the beautiful coastal roads of southern Spain. So, when Claus Krojgaard (proprietor of Coches Claus in Sayalonga) invited us to take a Porsche Boxter for a test drive, we simply couldn’t refuse.

We were to collect the car from his office in Torre del Mar and when we arrived it was standing in the forecourt as proud as a peacock, love at first sight is an expression that springs to mind. Of course we are all familiar with the Porsche Boxter and we have seen them on the roads and read about them in magazines, but to be up close and personal with one is a very different thing entirely.

We settled in and headed off along the coast to our destination of Cerro Gordo.

Even as we drove through the streets of Torre del Mar we were, unsurprisingly, receiving admiring glances from just about everyone we passed. Driving a Porsche you expect to receive a certain amount of attention but a jet black Boxter with the top down seemed to turn the heads of just about everyone.

We weaved our way through Torre del Mar, Caleta, Algarrobo, El Morche, Torrox and Nerja and whilst we were unable to turn her loose on the roads just yet, (I didn’t fancy trying to expalin to the Guardia Civil that I was driving at 120kmh through the village 42 OCIO magazine

because I am test driving the handling... can you imagine?) in no time at all we were through Nerja and onto the more open coastal road and the chance beckoned to open her up a little and really enjoy the wind in our hair.

If you have never driven a Porsche, and up until today I hadn’t, it is very difficult to explain just how good the car is. I know I shouldn’t be surprised given the pedigree of the manufacturer but still, it comes as a surprise just how good a motor car a Porsche really is. I am not talking just about the speed (I can’t say how fast I was driving because Claus will be reading this as well, but it was fast enough that the Guardia would have something to say about it), no, I am talking about the complete package.

Sure the speed is thrilling and the handling just superb but it’s the driving experience as a whole that I was most impressed with.

The quality of the build and design, the interior styling, the feeling of contentment knowing you are driving a car built by one of the most famous names in motoring history, all comes together to give you a car that you want to drive, anywhere.

The excitement takes me back to when I first learned to drive when I would go anywhere with anyone for any reason, just to get behind the wheel. The sensation is just the same. Whether it’s meandering through the village, tearing it up on the open road or just taking a few hours out of

your busy schedule to go for a drive with your loved one... a Porsche Boxter, without doubt, puts the fun back into driving. n

About the car: The Porsche Boxter we drove is currently for sale through Coches Claus with a price tag of 43,900 euros. It is a 2009 model with only 12,000kms on the clock. It has a manual gearbox and uses petrol fuel for the 2893cc engine.

ocas cosas hay en esta vida más agradables que conducir un fabuloso coche, en un estupendo atardecer, a lo largo de las preciosas carreteras costeras del sur de España. Por eso, cuando Claus Krojgaard (propietarios de Coches Claus, en Sayalonga) nos invitó a tomar un Porsche Boxter para un test de conducción, sencillamente no pudimos rechazarlo.

Fuimos a coger el coche desde sus oficinas en Torre del Mar y cuando llegamos, allí estaba, en el patio delantero, como un pavo real, amor a primera vista, esa es la expresión que me viene a la mente. Por supuesto, todos estamos familiarizados

con el Porsche Boxter, lo hemos visto alguna vez en la carretera, hemos leído acerca de él en revistas, pero estar tan cerca y en persona con uno de ellos es algo completamente diferente.

Nos acomodamos y condujimos por la costa hasta nuestro destino, Cerro Gordo.

Como era de esperar, por las calles de Torre del Mar percibíamos miradas de admiración de todo aquél que nos veía pasar. Conducir un Porsche produce cierta admiración, pero conducir un Boxter negro azabache descapotable, hace que todo el mundo vuelva la cabeza.

Entretejimos nuestro camino a través de Torre del Mar, Caleta, Algarrobo, El Morche, Torrox y Nerja y, aunque no pudimos alcanzar todo su potencial por las carreteras –no fue nada divertido tratar de explicar a la Guardia Civil que iba conduciendo a 120km/h por ciudad, porque estaba realizando un test de manejabilidad... ¿te imaginas?- en nada de tiempo pasamos de estar en el centro de Nerja a estar en carretera abierta, con la atractiva oportunidad de acelerar un poco y disfrutar del viento en la cara.

Si nunca has conducido un Porsche, como yo hasta la fecha, es muy difícil explicarte cuán bueno es este coche.

Sé que no te sorprendería relatándote la calidad de su manufactura, pero aún así, es sorprendente lo realmente bueno que es el motor Porsche. No estoy hablando

de velocidad (no puedo decirte cuán rápido conduje porque Claus podría estar leyendo este artículo, pero sí fue lo suficientemente rápido como para que la Guardia Civil tuviera algo que decir al respecto), no, estoy hablando del conjunto.

Te aseguro que la velocidad y el manejo son soberbios, pero es más la experiencia de la conducción como un todo lo que más me ha impresionado. La calidad de la carrocería y el diseño, el estilismo del interior, la sensación de un conocimiento contenido de que estás conduciendo un coche construido por uno de los nombres más famosos en la Historia del motor, todo junto te proporciona un vehículo que quieres conducir en cualquier parte.

La emoción me recuerda a cuando aprendí a conducir y podía ir a cualquier sitio con cualquiera por cualquier motivo,

The popullar Restaurante Belgaña in Torre del Mar has recently introduced a selection of hot stone dishes to their already impressive menu. Serving the finest beef in portions of 200g at just 11 euros, 400g at just 15 euros and 600g at just 17 euros the new addition is already becoming a big hit with the regular diners.

Another new addition to the winter menu is the menu del dia at an incredible 5.50 euros per person.

50g Aceite de oliva 20g Ajos 150g Cebolla 50g Pimiento Rojo 50g Pimiento Verde 50g Berengena 50g Calabacin Laurel 300g Bacalao 2 Placas de Hojaldre 20g Piones 150g Tomate frito Perejil o cebollino.

Preparación:

Lo primero que debemos de hacer es un pisto con todas las verduras, eso si cortadas en pequeÒito, una vez esten bien pochadas le aÒadimos el tomate frito. Por otro lado cogemos el bacalao y lo confitamos en aceite de oliva a baja temperatura ( confitar es como cocer ) durante 20 minutos mas o menos. Una vez confitado lo demenuzaremos y lo aÒadiremos al pisto.Por ultimo le incorporamos el perejil y ya estar· listo el relleno.

Para montar la empanada estiramos el hojaldre, rellenamos con la masa y tapamos con otra capa de hojaldre, la pintaremos con huevo, le damos unos cortes al hojaldre y espolvoreamos con piÒones. Al horno 20-30minutos a 180∫ y listo para comer.

Sugerencias

La empanada podremos comerla fria o caliente, para acompaÒarla usaremos ensalada, salsa de tomate, ensaladilla....en definitiva lo que nos apetezca. Al relleno podemos aÒadir un poco de huevo duro o queso. Mas o menos esto es todo amigos, hasta la proxima.Un Saludo.

BARTER The exciting world of...

Bartering is back and in a big way. Forget cash and credit cards, the new currency is barter euros.

Andrew Duque explores the concept and tells us how we can turn our excess inventory and time into profit.

oy ha vuelto el trueque, pero de una forma un poco más avanzada. En la actualidad, el trueque es un sistema que se lleva a cabo a través de una organización que reúne a las personas y que se encarga de llevar a cabo el intercambio. “Es una de las mejores cosas que he hecho por mi negocio”, dice Sharon Malin, dueña de un restaurante que lleva años participando en este sistema. “Lo bueno de una organización dedicada al trueque, es que uno no está limitado a hacer negocios con una sola persona, sino que podemos realizar trueques con un grupo entero de personas”, dice Malin, “ un grupo que está creciendo, pues los pequeños negocios como el mío tienen que centrarse cada vez más en controlar el flujo de gastos”. Ahora Malin realiza sus operaciones comerciales con Club Barter, uno de los numerosos grupos dedicados a poner en contacto a comerciantes.

he barter system is an old system making a strong comeback. It may seem like a blast from the past, but an old system of getting what you want without having to pay cash is back and is being welcomed with open arms. Bartering is a way of exchanging products or services instead of cash and the concept is growing in popularity... once again. Since the beginning of time bartering has created a way of trading between individuals that need each others goods or services. A good stonecutter for example might have made a few extra tools and simply traded them for furs or other things he wanted or needed. It’s so simple that the cavemen did it.

Bartering today is a little more advanced than the caveman era. Bartering now is done through a network or organisation that brings people together and manages the transactions between them, but with a difference. “It’s one of the best things I’ve done for my business,” says restaurant owner Sharon Malin. She’s

been bartering for years. “The benefit of a bartering organisation is that you’re not limited to bartering between just you and me. It’s a whole group,” says Malin, “and a group that’s growing, as small businesses like mine are are having to focus more and more on controlling cashflow”. “Organised bartering is an alternative form of currency,” says Club Barter Director Raymond Watts.

Raymond says for a small fee, businesses are networked to a database stretching across Spain, putting their goods and/or services up for a cashless trade. At Sharon Malin’s restaurant for example Sharon trades gift certificates and vacant tables for what the company calls barter euros. She then uses those barter euros at member businesses for things like airconditioning maintenence, accountancy fees, specialist kitchen cleaning etc and when Sharon has a day off she enjoys lunch out with her friends - and all cash-free.

Raymond says “before coming to Spain I was involved with BarterCard in England, so I have many years experience of barter

between businesses and I can honestly say that there is no downside to barter.

Bartering is the best way to move excess inventory without having to discount. We bring you new business, you spend less cash. It uses up your excess inventory and you gain new cash business through members referring you. It’s win-win-winwin”.

With today’s tough economy issues, bartering can give you that all important edge. Some may say that bartering is old fashioned and a little dated, but when the times get tough , sometimes the old ways might just be the best ways. n

electing a steak is perhaps not as easy as it should be.

Steaks come in all different shapes and sizes and are sold at varying prices. To further confuse matters, marketeers have also invented fanciful names for different steaks, further muddying the water.

However, with a little knowledge you will be able to identify which steak is right for you.

Chuck Steak These small tender steaks are cut from the shoulder area of the cow and each has a line of gristle running down the center. They are inexpensive and perfectly suited to grilling or sautéing. The chuck section, or shoulder area, includes ribs 1 to 5 as well as the shoulder blade bone.

Rib Eye Steak These have an oval shape with a narrow strip of meat that curves around one end. Rib-eye steaks, like other steaks from the rib section, contain large pockets of fat and have a rich, smooth texture. The rib section is located just 56 OCIO magazine

behind the chuck, or shoulder area, and contains ribs 6 to 12. Its claim to fame is the prime rib roast. The steaks from the rib section are of high quality, with a rich, smooth texture and pockets of fat in the meat.

Short Loin Steaks The short loin section is located behind the rib section, in the middle area of the back. Steaks cut from the short loin are of very high quality.

Tenderloin Steak The tenderloin, a long, cylindrical muscle that is the most tender meat on the cow, may be cut into a number of different steaks, each of which has its own name but all of which are very expensive, since many people prize tenderness above all else in their steaks. *Chateaubriand is a 3-inch-thick steak cut from the thickest part of the tenderloin, usually large enough to serve two. *Fillet or fillet mignon steak is typically 1 to 2 inches thick, cut from the narrow end of the tenderloin. *Tournedos are the smallest tenderloin

steaks, about an inch thick, cut toward the tip end.

Top Loin Steak: This long, narrow, triangular steak may be sold bone-in or boneless. The top loin steak is a bit chewy, with a noticeable grain and is slightly less fatty than the rib-eye steak.

Sirloin Steaks: The sirloin section is just behind the short loin section and is sometimes referred to as the hip area.

Sirloin steaks are fairly large but thin, and the meat is only moderately tender with decent flavour. The meat tends to be lean and rather dry, but it is good value.

T-Bone: The T-shaped bone in this steak separates the long, narrow strip of top loin and a small piece of tenderloin. Since it contains top loin and tenderloin meat, the T-bone is well balanced for texture and flavour.

Algunos mercantes hasta incluso ponen unos nombres muy extravagantes para asi confundirlos aun mas. Pero con un poco de ayuda sabran poder elegir el bisteak/ filete adecuado para ti.

Chuck Steak: Estan cortadas de la zona del hombre de la vaca y cada una tiene una pequena linea de cartilago por el centro. No son caras y son muy buenas para la plancha o para freirlas. Incluye hasta 6 costillas, y tambien el hueso del omoplato.

Filete Rib Eye: Estas tiene una forma ovalo con una estrecha franja de carne que en

una punta es curvada. Contienen unos huecos de llenos de grasa y una textura suave y rica. Esta localizada justo detrás del chuck, o zona del hombro, y contiene 6 costillas mas. Es mas famosa por su asado. Son de alta calidad.

Filetes de lomo cortos: Esta localizada en la seccion detras de las costillas, en la zona cenral de la espalda. Son de muy alta calidad.

Solomillo de Lomo: Es un musculo largo y cilindrico y es la zona mas tierna de la vaca, se puede cortar en varios tipos de filetes, cada uno tiene su propio nombre pero todas son caras. *Chateaubriand es un filete de 3 pulgadas de gordura, normalmente es lo suficiente para compartir entre dos personas. *Filete o filete mignon es de 1o 2 pulgadas de gordura, cortada de la punta mas estrecha del solomillo. *Tournedos son los solomillos mas pequenos, sobre 1 pulgada de gordura, cortada en el extremo final.

La carne tiende a estar seca y magra, pero es de muy buena valor.

T-Bone: El hueso en forma de T en este filete separa la larga franja carne. Esta muy bien equilibrada por su Buena textura y sabor.

If you were to condense the Italian experience into a single, keepsake moment, that memory could be of a visit to Palermo’s vibrant Il Capo street market.

James Harley-Woods tells us more.

T

he sounds, smells and colours of the Il Capo street market create one of the most authentic snapshots of Italy. Housewives spread laundry from overhead windows. Threewheeled Piaggio Apes honk through the pulsing crowd of determined shoppers and feisty vendors. And everywhere: abundance.

This is what sets Il Capo apart. It is a showcase for the country’s bounty, in the overproportioned size of the vegetables, the bright saturation of the fruit colours and the sheer variety of seafood and shellfish on display.

It comes as no surprise that Sicily, at the heart of the Mediterranean, played a role in the lives of all the goddesses dedicated to fertility, from Ceres to Demeter, and Venus to Aphrodite. From the time of the ancients who spun those myths, Sicily has evolved a highly sophisticated and complex culinary tradition that matches the impressive caliber of other hot-climate cuisines, like those found in India, Mexico and Morocco.

James Harley-Woods nos cuenta más.

“The sun provides us with the key to understanding Sicilian food,” says Anna Tasca Lanza, who has written several books on her native island’s cuisine and founded its most important cooking school. “The sun is a powerful natural force that blesses everything that grows in Sicily with intense flavour and shapes the daily life of its people.”

Besides its favourable climate and fertile growing conditions, Sicily is heavily shaped by the outside forces that skirted its perimeters throughout civilisation. Its strategic positioning made it a natural resting spot for the Phoenicians, Greeks and Romans. The Greeks are said to have introduced olive trees and grapevines for oil and wine, while the Romans accumulated vast stockpiles of durum wheat and other grains. The most significant growth in Sicilian cuisine came with the Arab domination of the island that started in A.D. 827 and continued for hundreds of years.

While the rest of Europe was experiencing the Dark Ages, Sicily experienced its own gastronomic renaissance.

The Arabs brought the technology for irrigation aqueducts and smaller, more diversified farming plots. They also imported key ingredients such as noodles, citrus, rice and, most importantly, sugar.

These opened new horizons for Sicilian food. Sweet and sour contrasts, found in such dishes as eggplant caponata with vinegar and capers, originated during this time. The Arabs were also responsible for the island’s famous desserts, which feature honey, almonds and pistachios.

“Sicilian cuisine is a blend of different cultures and races,” says Chef Ciccio Sultano, who infuses many classic recipes with a modern touch at Ristorante Duomo in Ragusa Ibla. “It really is the most complex and complete in Europe.”

After the Arabs came the Spaniards, who introduced the flavours of the New World: peppers, tomatoes, potatoes, corn, beans, courgettes and aubergines. In the mid19th century, the British established a benign military presence in Sicily’s port city of Marsala. As they did with Port and Madeira, the British experimented with u

fortifying the local wines; the seeds of Sicily’s powerhouse wine industry were sown at this time and the rest, as they say, is history. n

Es un escaparate de la generosidad del campo, con sus vegetales tan grandes; la sobre-saturación del color de las frutas y la auténtica variedad de pescados y mariscos expuestos.

No es nuevo que Sicilia; en el corazón del Mediterráneo, jugó un papel fundamental en las vidas de todos los dioses dedicados a la fertilidad, desde Ceres a Demetrio y Venus a Afrodita. Desde la Antigüedad, donde aparecieron estos mitos, Sicilia ha desarrollado una tradición culinaria altamente sofisticada y compleja, que está a la altura de otras cocinas de estas latitudes, como pueden ser las que encontramos en India, Méjico y Marruecos.

“El sol es el que nos permite comprender el secreto de la comida siciliana” dice Anna Tasca Lanza, quien ha escrito varios libros sobre la cocida de la isla donde nació y quien ha fundado una de sus más importantes escuelas de cocina. “El sol es

la fuerza natural que bendice todo aquello que crece en Sicilia con su intenso sabor y moldea la vida diaria de sus gentes”.

Además de por su agradable clima y su fertilidad, Sicilia está fuertemente marcada por fuerzas externas que delimitan su perímetro a través de la civilización. Su estratégica localización, hizo de ella un enclave natural para el descanso de fenicios, griegos y romanos. Se dice que los griegos introdujeron los olivos y las vides, mientras que los romanos acumularon vastas áreas de trigo y otros cereales. El crecimiento más significativo de la cocina siciliana llegó con la dominación árabe de la isla, que empezó en el año 827 a.C., y continuó durante siglos. Mientas el resto de Europa se sumía en los oscuros años de la Edad Media, Sicilia experimento su propio renacimiento gastronómico.

Los árabes trajeron la tecnología de riego mediante acueductos y sistemas de parcelado agrario más pequeños y diversificados. También introdujeron productos clave como los fideos, cítricos, arroz y el más importante, el azúcar. Esto abrió nuevos horizontes a la cocina siciliana.

Contrastes agridulces que encontramos en platos como las berenjenas caponata con vinagre y alcaparras, se originaron en esta época. Los árabes también son

responsables de los postres más famosos de Sicilia, cuyos ingredientes básicos son la miel, la almendra y el pistacho.

“La cocina de Sicilia es una mezcla de diferentes culturas y razas”, nos comenta el chef Ciccio sultano, quien funde recetas clásicas con un toque actual en su Restaurante Duomo, en Ragusa Ibla.

“Realmente es la cocina más compleja y completa de Europa”.

Tras los árabes, llegaron los españoles quienes introdujeron sabores del Nuevo Mundo, tales como los pimientos, el tomate, patatas, maíz, alubias, calabaza y berenjena. A mediados del siglo XIX, los británicos se establecieron como una presencia militar pacífica en la ciudad portuaria de Marsala. Del mismo modo que fortalecieron el puerto y Madeira, los británicos se dedicaron a fortalecer los vinos locales, las semillas de la gran industria vinícola de Sicilia germinaron en esta época y el resto, como se suele decir, es historia... n OCIO magazine
