Summer in southern Spain is not just a season; it is an invitation to dissolve the boundaries between the indoors and the world outside. Along the sun-baked hills and coastal stretches east of Málaga, where the rugged peaks of the mountain ranges meet the Mediterranean, decorating for the warm months is all about creating a seamless, sensory flow from the living room to the panoramic terrace.

Polished micro-cement or oversized, matte terracotta tiles keep terraces beautifully cool beneath bare feet. For lounging, low-profile modular
sofas in chalk-white, weather-resistant linens dominate the space, accented by oversized cushions in faded olive, deep indigo, or the warm ocher tones of the inland hills. Rattan and woven wicker make a triumphant return, not in the flimsy styles of the past, but in bold, sculptural armchairs and statement lighting fixtures that cast dramatic, skeletal shadows against whitewashed walls as afternoon gives way to twilight. When it comes to cliffside balconies and intimate village courtyards, the trick is scaling the atmosphere.

pots filled with aromatic rosemary or climbing bougainvillea can transform even the most compact footprint into a private sanctuary.
The modern coastal garden leans heavily into structural, drought-resistant local flora, using ancient olive trunks, agaves, and potted citrus to create a vibrant, low-maintenance connection to the surrounding landscape. The pool area, meanwhile, is treated with the same reverence as a boutique hotel hideaway. Gone are the days of the classic blue lounger. Today’s pools boast integrated daybeds, sleek timber decking, and oversized umbrellas in neutral cream tones that frame the sea view perfectly.
As night falls, the lighting strategy shifts. Instead of harsh, overhead spotlights, the modern terrace relies on a constellation of portable, rechargeable LED lanterns, amber-hued string lights hidden in pergolas, and heavy glass hurricanes flickering with candlelight. The result is an outdoor space that doesn’t just look beautiful, it feels alive, deeply connected to the rhythm of the coast and eternally ready for hosting. n
interiores.

Sun Kissed
besado por el sol
By Andrea Stone
There is an unmistakable magic to coastal dressing in the high summer, a wardrobe that demands very little of us but yields the highest aesthetic return. As the mercury rises across the Mediterranean, the true art of summer style lies not just in what we wear on the sand, but in that fluid, bronzed transition from the water’s edge to the shade of a vibrant chiringuito.
This season, beachwear steps out of the water to become the definitive protagonist, with a clear emphasis on understated luxury. The foundation, of course, begins with swimwear. Forget fussy hardware and neon distractions, because the current mood favors clean, sculptural silhouettes that celebrate form. Think asymmetric one-pieces in rich, earthy tones like terracotta, olive, and espresso, or classic bikinis crafted from textured, crinkle fabrics that double as bodysuits when the sun begins to dip.
Yet, the true alchemy of style happens when it’s time to leave the lounger. The cover-up is no longer an afterthought; it is the main event. Gone are the days of the sheer, synthetic sarong. In its place, we welcome the era of fluid, oversized linen shirts, worn unbuttoned to the waist, and billowy wide-leg trousers that catch the sea breeze as you walk. For those heading straight from the midday heat to
a lively beach club, a macramé or open-knit crochet dress offers the perfect balance of allure and elegance. It hints at the swimwear beneath while providing just enough structure for a late lunch reservation. Alternatively, a silk kimono in an abstract maritime print adds an instant layer of glamour, transforming a simple swim look into a dramatic lounge ensemble with zero effort.
The secret to a seamless beach-to-bar transition lies entirely in tactile, breathable fabrics that feel as good against warm skin as they look under the dappled shade of a pergola. Accessories are the crucial final punctuation marks. A structured, oversized raffia tote houses the essentials, while oversized tortoiseshell sunglasses lend an air of old-Riviera mystery. When stepping off the sand, swap rubber flip-flops for minimalist leather slides or low espadrille wedges. Add a flash of gold jewelry, perhaps chunky hoops or a sculptural cuff, and the transformation is instant.
As the afternoon ambient music drifts over the deck and the first pitchers of sangria appear on the table, you aren’t merely dressed for the beach. You are dressed for the entire theater of summer. Fluid, expressive, and fundamentally relaxed, fashion is at its most joyful here.
Summer Wellness
bienestar estival y el resplandor mediterráneo
By Steve Hardgrave
Whenthe summer sun takes up permanent residence over the dramatic cliffs and hills of our coastline, our relationship with wellness undergoes a seasonal shift. True vitality during the southern summer isn’t about grueling indoor workouts or restrictive regimes; it is about leaning into the ancient wisdom of the Mediterranean lifestyle, reimagined with a contemporary luxury twist. This season, the focus is firmly on cellular hydration and thermal balance. The intense summer heat demands a slower, more intentional pace, turning daily routines into a form of restorative ritual.
Wellness along our coast begins at dawn, before the heat settles heavily over the sea. Trends have shifted away from high-impact exercise toward mindful, gentle movement by the shore. Think private pilates or somatic yoga sessions on quiet wooden decks overlooking the water, where the focus is entirely on breath control and inhaling the ozone-rich sea air.
As the sun ascends, the strategy turns to proactive cooling. High-end villas and contemporary hillside homes are increasingly incorporating dedicated self-care suites. The luxury standard is no longer just a sauna, but a hydrothermal circuit, alternating between a heated magnesium pool and a customdesigned ice plunge bath. This rapid contrast instantly lowers systemic inflammation, boosts circulation, and resets the nervous system after a day in the intense sun.
The legendary Mediterranean glow depends just as much on what you put on your body as what you put in it. Nourishing the skin from the inside out with healthy fats is the ultimate secret to weathering the summer sun. Nutrition becomes a masterclass in elegant hydration. This summer’s health space highlights the extraordinary bounty of our nearby fertile valleys. Liquid wellness comes in the form of cold-pressed, locally sourced avocado oil drizzled over organic greens, and hydrating elixirs enriched with homegrown aloe vera, cucumber, and wild mint. To protect and elevate the skin, the most exclusive local spas are ditching synthetic chemicals in favor of botanical facials using active marine enzymes, crushed almond exfoliants, and orange blossom-infused mists distilled from the region’s orchards. The result is a luminous, natural vitality that mirrors the environment around us. It is a philosophy that doesn’t fight the summer elements but harmonizes with them perfectly.

Lastmonth, I shared the start of my fitness journey with personal trainer Chantelle Barraball. At the time, I was just a few weeks into the programme and feeling encouraged by the early results. Fast forward another month, and I can honestly say that the experience has been both rewarding and eye-opening. One thing I have learned is that progress is rarely a straight line.
Over the past month, I have trained consistently five to six times per week. My routine has been a combination of padel for cardiovascular fitness, gym-based strength training and a weekly one-to-one personal training session with Chantelle. Together, we have worked hard to build strength, improve fitness levels and establish habits that will support long-term results. Of course, life has a way of testing your commitment.
Earlier in the month, I suffered a fall while playing padel and twisted my knee. Just as I was beginning to recover, I then strained my Achilles tendon a couple of weeks
later. It would have been easy to let those setbacks derail my progress, but one of the biggest lessons I am learning is the importance of consistency. Rather than focusing on what I couldn’t do, I adapted my training, rested when necessary and continued moving forward wherever possible.
Nutrition has remained a major part of the process. I have consistently hit my daily protein targets and maintained my goal of walking 10,000 steps per day. Having clear targets and accountability has made a huge difference, and Chantelle has been there every step of the way with regular check-ins, encouragement and advice whenever I have needed it.
The results are now becoming increasingly noticeable. Having completed seven weeks since starting my journey, I have lost four kilos and reduced my waist measurement by two inches. My stomach is visibly flatter, my clothes fit more comfortably, and I feel stronger, healthier and more energised. Perhaps the biggest surprise has been
achieving these results without putting my life on hold. During this time, I have attended social events, enjoyed meals out with friends, shared a few drinks and embraced all the occasions that make life enjoyable. The difference is that I now feel in control. I have learned that healthy living doesn’t mean deprivation. It means making better choices more often and nourishing your body while still enjoying life’s pleasures in moderation.
What has become clear over the last seven weeks is that this isn’t about a quick fix. It is about creating sustainable habits and making lasting changes that will benefit my health and well-being for years to come. What sets Chantelle apart is her practical, realistic approach. There are no extreme diets, miracle solutions or unrealistic promises. Instead, she focuses on education, consistency and helping people create habits that fit around real life and deliver long-term results.
I am delighted with my progress so far, but I know there is still plenty of work ahead. Over the coming months, I will continue sharing my journey with OCIO readers, documenting both the successes and the challenges as I work towards becoming the healthiest and strongest version of myself.
For those inspired to start their own journey, Chantelle offers several options. Her popular 8 Week Challenge provides structure, accountability, a supportive WhatsApp community and expert guidance for those looking to kick-start their transformation. She also offers personalised one-to-one online coaching tailored to individual goals, as well as group fitness classes for those who enjoy training in a motivating and supportive environment.
So if you have been thinking about making a positive change to your health and fitness, perhaps now is the perfect time to take that first step. Get in touch with Chantelle and discover how the right support, guidance and accountability could help you achieve your goals too.

The Rise of the Pre-Dinner Padel
There is a distinct sound that echoes through the valleys and coastal clubs of our region as the afternoon heat begins to yield. It is the rhythmic, hollow pop of a padel ball meeting a carbon-fibre racket. While golf has long been the historic anchor of luxury sport in southern Spain, padel has officially claimed the crown as the ultimate summer athletic and social ritual. Dynamic, inherently stylish, and deeply collaborative, padel is the perfect bridge between athletic energy and coastal leisure. It is a sport where the final score matters far less than the camaraderie forged on the court and the glass of chilled white wine that inevitably follows. The magic of summer padel lies entirely in its timing. No one plays under the blazing midday sun; courts are booked for the coveted 7:00 PM slot. As long shadows stretch across the blue turf and the sea breeze finally cools the air, players gather for fast-paced Americano tournaments, n

a fluid mixed-doubles format where you rotate partners after every short set. It is a lively, inclusive, dynamic and ideal icebreaker for summer gatherings. The aesthetic of modern padel has also evolved into a high-fashion runway. The days of generic, muted athletic wear are gone, replaced by a wave of bold outfits that bring a joyful sense of fun to the court. This season is all about colour and audicia. Players are stepping onto the court in vibrant tropical tones, electric neons, and daring geometric patterns that demand attention. It is fashion at its most expressive, where the gear is designed to match the high energy of the
game itself, all carried in premium, sleek racket bags that look just as good in the club lounge after the match.
In summer padel, power takes a backseat to patience. The warm air makes the ball extra bouncy off the glass, meaning the savviest players rely on subtle spin, tactical positioning, and the classic, dragged-down bandeja shot. But perhaps the most essential part of the modern padel ritual happens after the final ball is played. Elite clubs along our stretch of coast have transformed their facilities into lounge-style oases. Stepping off the court doesn’t mean heading home; it means transitioning straight to an open-air terrace to dissect the match. With a crisp Verdejo or a comforting Sherry Spritz in hand, players rehash the best rallies as the stars emerge over the Mediterranean. It is a sport, yes, but more importantly, it is an essential thread in the fabric of a perfect summer evening.

“Padel is a sport where the final score matters far less than the camaraderie forged on the court and the glass of chilled white wine that inevitably follows.”
Few football clubs embody the volatility of modern football quite like Málaga CF. Founded in 1948, the Andalusian club spent decades moving between divisions, building a passionate local following but rarely threatening Spain’s elite. That changed dramatically in 2010 when Qatari businessman Abdullah Al Thani purchased the club, promising investment, ambition and a glittering future.
For a brief, unforgettable period, those promises seemed to come true. Under coach Manuel Pellegrini, Málaga assembled a talented squad featuring stars such as Isco and Joaquín. The 2012–13 season became the greatest in the club’s history: Málaga qualified for the UEFA Champions League, topped a group containing AC Milan, and reached the quarter-finals on their debut appearance. They came agonisingly close to eliminating Borussia Dortmund, only to lose in dramatic circumstances in the closing moments of the second leg. Yet the glory masked deeper problems. As investment slowed, debts mounted and key players were sold. The club’s decline accelerated after relegation from La Liga in 2018. Financial instability became chronic, and by 2020 Spanish courts had removed Al Thani from active control, placing the club under judicial administration while investigations into alleged financial mismanagement continued.
The fall was painful. Málaga slipped into Spain’s third tier, a remarkable decline for a club that had been among Europe’s last eight only a decade earlier. Many feared the club would never recover. But beneath the turmoil, a rebuilding process was taking shape. The focus shifted towards youth development, financial discipline and restoring the connection between club and community.
Today, that patience has been rewarded.
In June 2026, Málaga completed one of the most remarkable turnarounds in Spanish football by defeating Almería 2-1 in the promotion play-off final and securing their return to La Liga after eight years away from the top flight. Goals from Chupe and David Larrubia sealed a famous victory and sparked celebrations across the Costa del Sol.
The triumph was made all the sweeter by the fact that much of the squad was built around young, home-grown talent rather than expensive signings.
For Málaga supporters, promotion represents far more than simply moving up a division. It is proof that the club has survived its darkest chapter. After years dominated by court cases, financial uncertainty and relegations, Málaga once again finds itself looking forward rather than back. Challenges undoubtedly remain, but for the first time in a generation, the future feels bright.

Morocco: A Golf Escape Just Across the Water
by Jack McCullars
Forgolfers living on the eastern Costa del Sol, we are fortunate to enjoy golf almost all year round. But even in a place as privileged as southern Spain, there comes a time when every golfer fancies something different: new fairways, new scenery, first-class hotels, and the feeling of a proper golfing holiday. One of the most exciting and practical destinations is much closer than many people realise: Morocco.
From Málaga, Morocco is an easy escape, and Royal Air Maroc makes it especially attractive for golfers by including one golf bag in addition to a piece of checked luggage on many flights.
Morocco offers a remarkable variety of golf. In Marrakech, you can tee off beneath the Atlas Mountains on beautifully maintained courses such as Assoufid, Royal Palm, Noria, and Royal Marrakech. The golf is excellent, the hotels are luxurious, and after the round there is still a whole world to enjoy: souks, gardens, rooftop restaurants, spas, and the unforgettable atmosphere of the medina.
For golfers who appreciate tournament pedigree, Royal Golf Dar Es Salam in Rabat is a very special stop. It is the only venue where the PGA TOUR Champions and the Ladies European Tour are hosted concurrently, with the Hassan II Trophy and Lalla Meryem Cup taking place at the same time.
For summer, one of Morocco’s hidden gems may be even more appealing: Michlifen, near Ifrane in the Middle Atlas Mountains. This is mountain golf, with fresh air, cedar forests, and a cooler climate than the Costa del Sol in July and August. Michlifen Golf & Country Club is a Jack Nicklaus Signature course and offers a peaceful, elegant, and refreshingly cool Moroccan golf experience. Further north, Al Houara Golf Club near Tangier offers another excellent option, combining Atlantic breezes, resort comfort, and easy access through northern Morocco. With the Hilton Tangier Al Houara Resort & Spa beside the golf course, it is ideal for couples, small groups, or golfers who want a relaxed short break with everything close at hand.
For residents on the Costa del Sol, Morocco is not a distant dream. It is close, different, welcoming, and surprisingly easy. If your regular golf routine could do with fresh inspiration, perhaps it is time to look just across the water.

Coastal Driving with a Sea Breeze
To truly experience the dramatic geography of our coastline, where the sharp white peaks of mountain ranges plunge directly into the deep indigo of the Mediterranean, you need the perfect vehicle. This is not a landscape meant for mundane commuting or hurried highway driving; it is a region designed for the romantic art of the Grand Tour.
Driving here in summer is a sensory experience. It is about getting behind the wheel of a convertible, windows down on the sweeping mountain hairpins, letting the rich scents of stone pine, blooming jasmine, and salty sea air fill the cabin.
Consider the current luxury automotive landscape. While electric power continues to redefine urban driving, our open coastal roads call for a return to pure driving engagement. The absolute pinnacle of summer motoring is found
conducción costera con brisa marina

in hybrid grand tourers and classic V8 convertibles, machines that balance effortless torque with that throatier, mechanical soundtrack that petrolheads long to hear.
The perfect driving day begins by escaping the coastal autovía and heading inland toward our whitewashed hillside villages. On these sun-drenched, twisting mountain roads, a car with precision rear-wheel steering and active air suspension feels perfectly adapted to the environment, gliding effortlessly
over cambers and tight corners. Inside the cabin, the modern trend rejects sterile, giant touchscreens in favor of a highly tactile, haute-horology aesthetic. Knurled aluminum dials, openpore wood dashes, and sumptuously soft, ventilated leather seats keep you perfectly cool even when the sun is at its zenith.
For an unforgettable sunset route, track the coastal roads that snake high above the sea just as the sky turns to amber. The sheer drops down to the waves demand a car that offers both impeccable composure and instant throttle response. As you descend back toward the sea, pulling up next to a beachside venue or a local marina, your vehicle isn’t just transportation. It is an extension of the journey itself. Impeccable, beautifully engineered, and inherently stylish, it turns a simple drive into a celebration of the open road.

The Cool Escape
Withthe arrival of July, a familiar transformation takes over our coastline. The world arrives at our doorstep. Local beaches fill with sunseekers, seaside terraces buzz with international accents, and the Mediterranean heat shifts from a warm embrace into an intense, midday haze. For those of us fortunate enough to call this beautiful stretch of coast home, mid-summer brings a paradox: we live in paradise, but sometimes, true luxury means finding a temporary sanctuary away from the holiday crowds.
The question is not whether to travel, but where to find that respite. This summer, the ultimate luxury travel trend for residents isn’t about crossing borders, but heading north to discover a different, wonderfully cooler side of Spain.
While the south basks in golden heat, the Atlantic coast of Asturias and Cantabria offers an emerald-hued refuge. Here, temperatures rarely top 24°C, the morning
air is blessed by soft sea mists, and the beaches are framed by dramatic, pinecovered cliffs and meadows rather than rows of sun loungers.
The ideal itinerary bypasses major cities, focusing instead on renting a beautifully restored stone casona hidden in the green hills of the northern coast. Mornings begin not with the hum of a beach club’s air conditioning, but with the sound of a cool Atlantic breeze rustling through apple orchards.
Days are spent exploring a landscape that feels delightfully untouched by mass tourism. You can wander through quiet fishing villages where seafood is caught on small local boats and served hours later in stone-walled sidrerías. Instead of the saline sharpness of a southern Fino, long lunches here are celebrated with the dramatic, highpoured splash of natural cider or a crisp white wine from northern vineyards. The perfect contrast to the rugged coast is
provided by the Picos de Europa mountain range, just a short, scenic drive inland. The limestone peaks and silent, green valleys offer a meditative stillness that feels a world away from a crowded July beach. For those who still crave the sand, the northern coastline offers vast, dramatic stretches of beach where you can walk for miles with only the crashing Atlantic surf for company. There is a wild elegance to these northern shores, like the historic sands of Santander or the coves of Ribadesella, that feels entirely exclusive.
As evening falls and a light linen sweater becomes necessary against the cool night air, you realise the true purpose of this journey north. It is not an escape from Spain, but an appreciation of its incredible diversity. By stepping off the beaten path, you find the space to breathe, recharge, and ultimately return to our beloved coast with your romance with summer fully renewed. n

Ice & Spice
When the Andalusian thermometer aggressively
nudges 35°C, and the rest of the world suggests you stop doing just about everything, the eastern Costa del Sol leans in. In this unique landscape where the mountain ranges embrace the Mediterranean, summer isn’t a battle to be won; it is a powerful force to be harnessed.
The definitive summertime strategy here doesn’t involve retreating from the heat. Instead, we master the art of contrasting it. Nowhere is this sensory rebellion more elegantly executed than on our dining tables. The season’s most sophisticated menus are defined by a brilliant duality: culinary physics that harness intense cold, juxtaposed against a surprising, strategic flirtation with heat, acidity, and botanical freshness.
We call it the era of Ice, Spice, and Everything Nice.
It is a sensory strategy where temperature is the main protagonist. Pushing beyond traditional gazpacho (though its restorative

power is eternal), local chefs are redefining hydration. This summer, we see a focus on ultra-chilled, raw creations that use pure, clean flavors to lower the internal thermometer. At exclusive chiringuitos and terrace restaurants, you will find intricate ceviches and aguachiles fresh Mediterranean bluefin tuna or red prawns rapidly cured in vibrant baths of lime, coriander, and fresh chili served over shaved, flavored ice. This brings us to the most counterintuitive, yet essential, summertime secret: heat. It might sound paradoxical to eat spicy food when the air is already burning, but science begs to differ. Capaicin, the active compound in chilies, is nature’s ultimate cooling agent. By inducing mild perspiration, it rapidly lowers the body’s core temperature.
When paired with modern mixology, this heat/cold contrast is transformative. Our coctelería section highlights the trend, but on the food menu, we are seeing dishes that balance this heat with texture. Think of a rich, creamy ajo blanco (our local garlic and almond cold soup) subtly lifted by a drop of chili-infused olive oil and topped with ice-cold grapes.
The final element of the “Cool Down” is the botanical purge. Acidic and fresh herb notes act as culinary astringents, cleansing the palate and creating a persistent feeling of brightness that combats the ambient, heavy summer air. Citrus our world-class local lemons, oranges, and grapefruits takes center stage not just as a dressing, but as a structural component, built into vibrant salsas and sophisticated granitas that replace heavy cream desserts. Mint and, crucially, hierbabuena (a robust Andalusian mint) are being woven into everything from cold cucumber side dishes to fresh fig salads, leaving a lasting, cooling resonance on the tongue.
As the sun sets and we move off the hot sand toward a dimly lit rooftop terrace, the culinary theme remains focused on these three pillars. When the final pitch of ambient music floats over the deck, remember that the most luxurious way to beat the high summer heat isn’t by escaping it; it is by savoring every frosty, fiery, and flawlessly fresh bite the season has to offer.

Everysummer, the stretch of coast trailing east from Málaga surprises us with hidden culinary pockets that challenge the status quo. We recently visited El Morche to experience Neleo Moments. If first impressions dictate the trajectory of a meal, this lovely spot sets a wonderfully high bar.
From the moment we stepped through the entrance for an early evening dinner, the restaurant’s welcoming charm completely captivated us. It strikes a flawless balance between stylish, modern design and a genuinely relaxed, friendly atmosphere. Every corner feels flooded with a comfortable elegance that immediately tells you that you are in safe, efficient hands.
The service was excellent, executing that rare, coveted choreography of being incredibly warm, attentive, and smiling, making us feel at home from the very first minute.
The kitchen delivered a parade of four spectacular dishes that were exceptional in both their beautiful, unpretentious presentation and depth of flavour.
We initiated our evening journey with a vibrant avocado and tomato salad, a masterclass in highlighting the natural, sun-ripened sweetness of local coastal produce. Next arrived a spectacular ceviche, a brilliantly sharp and bracingly fresh dish that perfectly balanced the citrus cure with the meat of the fish.
For the mains, the kitchen truly showcased its mastery over fire and flavour. We were treated to a fabulous, chargrilled red tuna dish, boasting a flawless exterior sear while preserving that rich, melt-in-the-mouth, rubypink center that celebrates the raw quality of the catch. We followed this with a perfectly executed fillet steak, remarkably tender and seasoned to perfection.
To complement the evening, our glasses

were kept topped with crisp, effervescent cava and beautifully selected wine, each pour mirroring the clean profile of the food.
We passed on dessert as we were full from the previous four dishes, but instead opted for mint teas to aid digestion, which was accompanied with a chupito of Pasharan. Given the sheer caliber of the gastronomy, execution, and beautiful setting, the bill was very reasonable. Prices remain remarkably reasonable for an experience that feels special yet completely accessible. Neleo Moments hasn’t just opened a dining room in El Morche; they have created a warm destination.
For anyone seeking exceptional food served in an atmosphere of pure, relaxed coastal sophistication, your table at Neleo Moments is waiting.

Reseña de restaurante
...Restaurant Review

Tounderstand the culinary soul of the region east of Málaga during the high summer, one need only follow the unmistakable, smoky scent of olive wood drifting from the beachside espetos, where fresh sardines are skewered on bamboo canes and roasted slowly over sand-filled fishing boats. It is a timeless coastal tradition, but today, the gastronomy of this distinct stretch of the Costa del Sol is undergoing a fascinating, sophisticated evolution.
The modern local palate is beautifully dual. On one hand, there is a fierce reverence for zero-mile ingredients provided by the Mediterranean and the remarkably fertile agricultural valleys nearby.
On the other hand, there is a playful, cosmopolitan flair brought by a new wave of creative kitchens putting down roots in the area.
Summer dining here is defined by lightness, acidity, and vibrant colour. Traditional cold soups remain pillars of lunch, but creative chefs are reinventing them, infusing smooth gazpachos and salmorejos with the region’s world-class mangoes or local avocados, then topping them with crispy Iberian ham and a drizzle of early-harvest extravirgin olive oil.

Seafood, naturally, is the star of any summer menu. While the local pescaíto frito, perfectly crisp and golden, remains an essential pleasure to enjoy with your toes in the sand at a chiringuito, dinner reservations demand something more refined. Think wild bluefin tuna tartar from the nearby Almadraba catch dressed with local citrus, or wild sea bass baked in a thick crust of sea salt, cracked open tableside to reveal incredibly succulent, delicate meat. The secret weapon of local summer cooking is contrast. Enhancing the natural sweetness of freshly caught shellfish with the clean, sharp bite of local citrus infusions creates an instantly refreshing dish. The grand finale of a long, lazy meal increasingly champions the area’s incredible agricultural wealth. It is a celebration of sun-ripened fruits, including sweet figs with local cane honey, refreshing cherimoya sorbets, and goat cheeses from the nearby sierras paired with moscatel grape reductions. Whether dining at a rustic wooden table on the sand or under the sleek, mist-cooled canopy of a rooftop terrace overlooking the sea, high-summer gastronomy here is

an exercise in mindful indulgence. It is food that doesn’t weigh you down but elevates the spirit, leaving you perfectly revitalised for the long, warm evening ahead. n n

Let’sbe honest: our love affair with pizza is eternal, but sometimes, a long summer lunch calls for a relationship upgrade. Enter the pinsa (pronounced peen-sah). If you’ve been strolling through the sun-drenched squares of Rome recently, or keeping an eye on the trendiest menus along our own coast, you’ve likely spotted this cloud-like, ovalshaped masterpiece. It looks like pizza’s glamorous, free-spirited cousin, and it’s officially taking over the summer table. So, what’s the gossip on this culinary newcomer?
If you ask a Roman local, they’ll spin you a beautiful, romantic yarn. They’ll tell you that the pinsa is an ancient recipe resuscitated from the Roman Empire, crafted by peasants who crushed wild grains, mixed them with water, and baked them over hot ashes. It’s a fabulous story, the kind that makes you want to sip a glass of chilled white wine and gaze at the sea.
But here’s the delicious twist: it’s total marketing genius.
The pinsa as we know it didn’t debut in 44 BC; it was actually patented in 2001 by a clever Italian baking maestro named Corrado Di Marco. He realised modern foodies wanted something lighter, engineered a brilliant blend of flours, and wrapped the launch in a mythical empireborn backstory. The public swallowed it whole, and frankly, once you taste it, you won’t care about the timeline either.
The real magic of the pinsa lies in why it leaves regular pizza in the dust, especially if you’re looking to avoid that post-lunch “dough coma.”
First, it’s a shape-shifter. Ditching the classic round disc, the pinsa is pressed with the fingertips into a rustic oval. In fact, the name comes from the Latin word pinsere, which literally means to crush or press out.
Second, it’s a triumph of baking science. Regular pizza relies heavily on standard refined wheat flour. Pinsa, however, uses a holy trinity of wheat, soy, and rice flours mixed with an incredibly high volume of icecold water. This creates an ultra-hydrated dough that gets fermented for up to 72 hours.
For anyone who usually side-eyes a heavy bread basket or worries about gluten sensitivity, this is where the angels sing. Because of that epic, slow-fermentation process, the complex starches and glutens
are broken down before they ever reach your plate. It is spectacularly easy on the stomach, drastically lower in fats and calories, and lacks that heavy, bloating weight of standard pizza dough. It’s practically a health food (if you ignore the extra drizzle of truffle oil, which we highly recommend you don’t).
The result? A crust that is blistered and shatteringly crisp on the outside, yet miraculously light, airy, and pillowy on the inside. Top it fresh out of the oven with cool stracciatella, ribbons of Mortadella, and a rain of crushed pistachios, and you have the ultimate, guilt-free summer indulgence. Pizza, we love you, but this summer, our hearts belong to Rome. n

“ It’s a shape-shifter. Ditching the classic round disc, the pinsa is pressed with the fingertips into a rustic oval.”
