s we are all aware, the world has a lot of problems these days and our lives seem to move from one battle to another on what seems to be a daily basis. The deep thinkers amongst us may say that it is quite normal for humans to experience nothing short of a fight for their survival. It may be said that the hard times we live in help us to appreciate the good times. Well, I just wonder if we can’t have both at the same time.

Sure, we are living in very difficult times right now, but just take a moment and look around you, we are also living in a place of paradise.

You see, the thing is, I suspect that since the beginning of time we have had struggles to deal with and, one way or another, we always manage to get through them. As my parents would always say “this too will pass”.

¿Estás listo para relajarte?

Now I am not suggesting that the troubles we are dealing with can be just ignored and they will go away, but I am suggesting that with a little time to relax, unwind and appreciate the good things we have, we will in better shape to deal with the difficult things we are faced with.

Look around you for a moment, we have glorious sunshine and fabulous natural beauty all around us. Many of us are fortunate enough to have gardens to enjoy,

whether private or communal, and the beautiful stretches of beaches we have on our doorstep are a perfect place to relax and unwind... and they are free to use.

I know we all have a head full of troubles and worries and we have a mountain of jobs to attend to and a business that is quite possibly struggling to survive but, trust me when I tell you that you will be mentally better equipped to deal with whatever the world is throwing at you, after a relaxing day at the beach, in the garden or in the countryside.

So go and dust off your favourite beach bed or garden chair, grab your book, your music, a cool drink and go find a quiet spot somewhere and just relax a while. Let the world go about its business without you for a day. Tomorrow, you can once again join the battle, only this time, with a fresh new perspective and energy. n

omo todos sabemos, el mundo tiene muchos problemas estos días y nuestras vidas parecen avanzar de una batalla a otra a un ritmo casi diario. Los más pensadores entre nosotros podrían decir que es totalmente normal que los humanos experimentemos simplemente una lucha por nuestra supervivencia. Puede que escuchemos que los duros tiempos que vivimos nos ayudarán a valorar más los buenos. En fin, yo simplemente me pregunto si no podemos tener ambos al mismo tiempo.

Por supuesto que estamos atravesando momentos muy difíciles ahora, pero tómate un momento y mira a tu alrededor, también estamos viviendo en un verdadero paraíso.

Como ves, lo que quiero decir es que sospecho que desde el principio de los

tiempos hemos tenido problemas con los que lidiar, y de una forma u otra, siempre hemos logrado superarlos. Como mis padres solían decir: “esto también pasará”.

No es que quiera sugerir que los problemas con los que luchamos puedan ser ignorados y que desaparecerán, sino que, con un poco de tiempo para relajarnos, desconectar y apreciar las cosas buenas que tenemos, estaremos en mejor forma para enfrentarnos a los aspectos difíciles que nos vayamos encontrando.

Mira a tu alrededor por un momento, tenemos un sol glorioso y una naturaleza bella y fabulosa a nuestro lado. Muchos de nosotros somos lo suficientemente afortunados para tener jardines que disfrutar, ya sean privados o comunales, y las bonitas playas que tenemos a la puerta

de casa son el lugar perfecto para relajarse y desconectar… y están ahí libres para usarlas.

Sé que todos tenemos la mente llena de problemas y preocupaciones además de una montaña de trabajo que atender o una empresa que posiblemente esté luchando por sobrevivir pero, créeme cuando te digo que estarás mejor equipado mentalmente para enfrentarte a todo lo que el mundo te ponga por delante después de un relajante día en la playa, el jardín o el campo.

Así que sal y desempolva tu hamaca o tu silla de jardín favorita, coge un libro, música, una bebida fría y ve a buscar un lugar tranquilo en el que poder relajarte un poco. Deja que el mundo siga con sus asuntos sin ti por un día. Mañana podrás unirte de nuevo a la batalla, solo entonces, con una perspectiva fresca y nueva y energías renovadas. n OCIO magazine

he Alcaidesa Links Course forms a part of the fabulous Alcaidesa Links Golf Resort, and is one of the two courses on offer. Interestingly, Alcaidesa Links is the only links course in southern Europe. It is an 18 hole par 72 course. The course was designed

by Peter Alliss and Clive Clark and was inaugurated back in 1992. The topography of the land at Alcaidesa is formed by gentle slopes descending towards the sea, finishing on a beautiful 2km stretch of sandy beach. This means that most of 16 OCIO magazine

the holes are alongside the beach with spectacular views over the Mediterranean, Gibraltar and on to Africa. Views that are so beautiful, it is difficult to concentrate on your golf. But concentration on your golf is required as the difficulty of the course, like so many links courses around the world, lies mainly in the condition of the prevailing winds in the area and your ability to be able to deal with them. When we played the course this summer we did find the wind played a big part in our game but, with care and attention, we did

manage to bring in reasonable scores.

As with the Heathland Course we played a short while ago, we found the Links course in superb condition. The team of greenkeepers and groundsmen clearly take pride in their work here. This is a course of natural beauty, presented in a way you can enjoy and respect.

The Alcaidesa Links Golf Resort boasts a magnificent driving range with 72 bays, half of which are under cover. The driving range is 300 metres in length so the big clubs are permitted. In addition,

Este es un campo de belleza natural, presentado de una manera que se puede disfrutar y respetar.

El Alcaidesa Links Golf Resort cuenta con un magnífico campo de prácticas con 72 puestos, la mitad de los cuales están cubiertos. El campo de prácticas tiene 300 metros de longitud, por lo que se permiten los palos grandes. s a keen golfer and resident in the local area I am very familiar with Añoreta Golf Club and have had the pleasure of playing the course many times.

Situated in Rincón de la Victoria in between the coast and the motorway, Añoreta Golf Club has a history spanning more than 25 years. The course was designed by José María Cañizares, winner of two World Cups and five European Tour tournaments and offers a wonderful combination of rustic charm and polished style. of it it is not a difficult course but it offers many challenges along the way with tight fairways and an abundance of trees to keep you focused. Off the yellow tees the course is a little over 5800 metres but is cleverly designed to test low handicappers but not necessarily to punish the high handicappers. The golfing expression of ‘keep the ball on the short stuff and you will be okay’ has never been more appropriate in describing a golf course than at Añoreta.

The course is beautifully integrated in the natural surroundings of the area, from

which one can view the Mediterranean sea below and the mountains up above and behind.

To enhance the playing experience at Añoreta Golf Club, all of the 18 greens were upgraded not too long ago, to offer a vastly superior putting surface. It was a time consuming and expensive process but now they have settled in and players have got used to the feel of the new greens, the exercise was clearly worth the cost and inconvenience.

de jugar en el campo muchas veces.

Situado en Rincón de la Victoria, entre la costa y la autopista, el Club de Golf Añoreta tiene una historia de más de 25 años. Para mejorar la experiencia de juego en el Club de Golf Añoreta, los 18 greens fueron mejorados no hace mucho tiempo, ofreciendo una superficie de putting muy superior. Fue un proceso largo y costoso, pero ahora que se han instalado y los jugadores se han acostumbrado a la sensación de los nuevos greens, el esfuerzo mereció claramente la pena, a pesar del costo y los inconvenientes.

The benefits of going barefoot!

I

t is summertime and with summer comes the desire to spend as much time as possible barefoot.

But after a winter in shoes, trainers and boots, barefoot can come as a shock to your feet and your body as a whole in fact.

Going barefoot has some advantages, apart from feeling great in heat of summer.

In theory, walking barefoot more closely restores our ‘natural’ walking pattern, also known as our gait. But if barefoot is natural why are the stores full of different pairs of shoes for all kinds of exercise, many of them with excessive cushioning and support? While this pillow type padding can feel pretty amazing when you walk in these types of shoes, they can prevent you from using certain muscle groups that can actually strengthen your body. So if you like the idea of ditching your shoes and going barefoot, you need to know of the potential dangers.

Firstly, without appropriate strength in the foot, you are at risk of having poor mechanics of walking, thereby increasing your risk for injury. Obviously you also need to consider the surface being walked on. While it may be more natural to walk or exercise barefoot, without additional padding from shoes, you are susceptible to injury from the terrain and foreign objects. You also take the chance of exposing your feet to harmful bacteria or infections.

Additionally, you will need to know how to properly walk and exercise barefoot.

You must start slow and introduce your body to the idea. Start with short 15 to 20 minute sessions of walking barefoot to allow your feet and ankles to adapt to the new environment. As your feet get used to walking without shoes, you can increase the distance and time. Ease up if you feel any new pain or discomfort. It is 26 OCIO magazine

a good idea to let your bare feet get used to the safe surfaces in your house first and then head outdoors in due course.

Once outdoors start with surfaces that are less dangerous, such as grass areas and sandy beaches. Take a little time every day to examine the bottom of your feet for injury, you will be surprised as to how many people have very little sensation in their feet, resulting in injuries going undetected.

You can expect a few aches and pains when you first start off but if you have any persistent pain when you walk or even after rest, go back to supportive shoes immediately and start slowly again when your feet have healed. Of course if the thought of shoes in summer offends you

then find a good pair of flip flops and wear those until your feet heal enough to try barefoot again.

A summer without shoes and opting for a barefoot style while walking and exercising has benefits and can be very liberating and natural, as long as you follow the safety precautions and participate in moderation. n

Pero si caminar descalzo es natural, ¿por qué las tiendas están llenas de diferentes pares de zapatos para todo tipo de ejercicio, muchos de ellos con excesiva amortiguación y apoyo? Si bien este tipo de relleno de almohada puede resultar bastante impresionante, cuando se camina con este tipo de zapatos, puede impedir que se utilicen ciertos grupos musculares que pueden realmente fortalecer el cuerpo.

Por lo tanto, si le gusta la idea de deshacerte de sus zapatos y andar descalzo, debe conocer los peligros potenciales.

En primer lugar, sin la fuerza apropiada en el pie, corre el riesgo de tener una mecánica deficiente para caminar, lo que aumenta el riesgo de sufrir una lesión. Obviamente, también debe

considerar la superficie sobre la que se camina. Aunque puede ser más natural caminar o hacer ejercicio descalzo, sin el acolchado adicional de los zapatos, usted es susceptible de sufrir lesiones por el terreno y los objetos extraños. También corre el riesgo de exponer sus pies a bacterias o infecciones dañinas.

Un verano sin zapatos y optando por un estilo de pies descalzos mientras se camina y se hace ejercicio tiene beneficios, y puede ser muy liberador y natural, siempre y cuando se sigan las precauciones de seguridad y se participe con moderación. n

e have all seen the unfortunate celebrity woman who looks like she ran afoul of some hideous bikini experiment and I know we all think well if she looks that bad in a bikini what on earth do I look like? Well, first of all we need to address the main issue and that is buying a bikini that fits and not one that just looks good in the store. So lets see how we go about doing this.

The first rule is to stop trying to cover up everything, the point of a bikini is that you are covering up very little which means there will be much remining uncovered. Do a realistic assessment of your assets. Go for a bikini that is daring and bold in showing off your good side. Get a girlfriend whom you trust to help you if you aren’t sure what your best feature is. If you are a big girl with a big bust then bikini season is 30 OCIO magazine

time to let the other ladies know who’s boss. And if the tummy isn’t so hot then get a tankini with a plunging neckline to create attention away from your less positive attribute. If your bottom is your best feature get a thong. Nobody will even see that small chest if you’ve got the best butt on the beach. Make the other girls envious.

Most older woman tend to feel that covering more is a good idea but only you will know at what level of exposure you are comfortable with. All I will say on this is to make sure you are getting the support you need where you need it.

Remember that sometimes being sexy is about the promise of things to come or a preview of coming attractions. That and a glowing, friendly smile will get you all the attention you need whatever your age.

rom the way a young child stares in open-jaw awe at the roof folding itself down, to the unmatchable thrill of driving with the sun warming your skin and the wind wafting your hair, there’s something quite magical about convertibles.

It could be argued, and anyone who rides a motorcycle will agree, that we’ve been insulating ourselves from the real experience of driving, ever since we started putting roofs on the early horseless carriages, back in the 1920s.

Convertibles, then, are the last bastion of proper driving, you might say, and to own one is to experience a particular kind of joy that other drivers are missing out on. Unless, of course, the weather turns bad.

The very first time you drive a convertible, on a sunny day, it all makes sense. Your headroom is as infinite as your happiness as you zip around feeling like a film star. It’s a fantastic buzz to be in your car

It’s a bit like a flashback to riding your bicycle, or a skateboard, fast down a hill. It’s the kind of childish, smiley fun that makes a comparison between the convertible version of any car and its roofed relative difficult, because it goes beyond mere logic.

Taking your top down, even in highly marginal weather, becomes a compulsive habit for owners, which is why even cold places like Scotland and England have a lot of drop-top drivers. Even just the tiniest sniff of the chance of a nice day out, roof down, is enough to lure them.

There are a couple of downsides though, sunburn being the most obvious.You have to really worry about your taste in music too as there are no secrets in a top down car and, don’t even think about singing in the car when you drive a convertible. From a technical perspective, because the roof is a separate piece that attaches via locks and latches, squeaks and rattles can emerge in the long term but, many drivers will say that this is no more than a minor inconvenience.

Convertibles may not be the most practical choice, and if you’re serious about your driving you’d probably look elsewhere, but then not all car purchases are made for practical purposes. If they were, Ferraris wouldn’t exist. n 40 OCIO magazine

I don’t use the word love lightly, as my previous boyfriend will tell you but, when it comes to beach clubs then yes, it is a full on love affair. I have had people ask me in the past what makes a beach club so special and why is it different from say, a beach bar or a chiringuito? The answer is simple...style!

A beach club offers a certain level of style, sophistication and luxury. Even in it’s most basic form and without some of the thrills that the more exotic beach clubs around the world may offer, a beach club still has style and comfort. It is a way to enjoy the beach and all of the natural beauty around you but with a certain level of luxury. It is a luxury experience, a way of enjoying so much more

My day of luxury at a beach club will always include a Balinese beach bed, obviously, and getting everything I need, from a glass of cava and a great meal to a freshly made Piña Colada and a relaxing back massage, all offered to me in surroundings that are nothing short of stunning. A day at the beach club for me offers the chance to relax in my own company, read a book and recharge the batteries. Often I will go with someone special and together we can reconnect away from our busy lives. Mojito O

ne of the most ordered cocktails in the world, the mojito has the ability to transport you to a sun-drenched beach with a single sip.

But more often than not, mojitos made at home fall short of those served in bars, so we asked some of the best bartenders in the business for their top tips, so you can up your mojito game!

A classic mojito is made with rum (traditionally white), sugar, lime, mint, ice and soda water, served in a highball glass. The key with this drink is balance: you want to be able to taste each element, with each element working in harmony with the others.

White rum is the order of the day and although there are many to choose from, I have it on good authority that the Spanish style of rums (also referred to as Cuban style rums) are perfect for the mojito.

Traditionally a mojito would have been made using crystalline sugar but, without fail, all of the bartenders I talked to advocated the use of sugar syrup for a clean, consistent finish. As far as the type of sugar used, it seems that a white sugar cane syrup or an unrefined golden sugar are the popular choices.

When adding the lime you will need freshly pressed lime juice straight from the cut lime wedges. This is so much better than adding the lime wedges which then need to be muddled. The problem with

muddling, when it comes to any citrus fruit or green leaves, is that it can release a bitter taste. If you want to add a couple of lime wedges for aesthetics though, do go ahead, just give them a gentle squeeze before adding them to the glass.

Pero la mayoría de las veces, los mojitos hechos en casa se quedan cortos en comparación con los servidos en los bares, así que le pedimos a algunos de los principales barmans del negocio que nos dieran sus mejores consejos, ¡para que usted pueda perfeccionar su destreza en el mundo de los mojitos!

Un mojito clásico se hace con ron (tradicionalmente blanco), azúcar, limón, menta, hielo y gaseosa, servido en un vaso

elevado tipo collins (también llamado zombie). La clave de esta bebida es el equilibrio: se quiere poder degustar cada elemento, con cada elemento trabajando en armonía con los demás.

El ron blanco es la mejor opción y aunque hay muchos para elegir, sé de buena tinta que los rones españoles (también conocidos como rones cubanos) son perfectos para el mojito.

Tradicionalmente el mojito se hacía con azúcar cristalino, pero sin excepción, todos los camareros con los que hablé al investigar este artículo, recomendaron el uso de jarabe de azúcar para un acabado limpio y consistente. En cuanto al tipo de azúcar utilizado, parece que un jarabe de caña de azúcar blanco o un azúcar dorado sin refinar son las opciones más populares entre los camareros y todos están de acuerdo en que hay que alejarse de los azúcares más pesados si se utiliza un estilo de ron ligero, ya que es muy probable que se impongan en el mojito y cambien a un tono marrón turbio oscuro. Cuando agregue la lima, necesitará jugo de limón recién exprimido procedente de los trozos de limón cortados. Esto es mucho mejor que añadir gajos de limón que luego hay que mezclar. El problema con la mezcla, cuando se trata de cualquier fruta cítrica u hojas verdes es que puede liberar un sabor amargo. to flavour your drink. You want to avoid heavy-handed muddling, which grinds the mint into a pesto-like consistency. Less is more - think a gentle press. A great trick is to place the leaves in the palm of your hand and slap them. This awakens the flavours, and will give your drink that instant ‘zippy’ flavour you dream of from a mojito. And don’t forget the crowning glory of the mojito: another mint sprig. Slap this sprig between your hands first to release the flavour and position it right next to the straw so that every sip will be accompanied with the aroma from the mint, which will accentuate the taste.

As mojitos are served on crushed ice, you’ll get dilution in the drink. Often by this point there’s little room for soda and I’d argue a splash isn’t going to make any noticable difference. It’ll also go flat almost immediately. However, if you do have space and prefer your mojito with soda, make sure it doesn’t include artificial sweeteners or flavourings, and don’t add too much or you’ll drown the rum.

Ice is of course very important and it needs to be crushed ice, straight from the freezer.

For a twist on the classic mojito try adding Angostura bitters to the top of the drink, it will add a new dimension to the aroma and taste. Alternatively, try adding a few berries to the glass before the mint (you’ll want to muddle these before you add the mint). Raspberries, blackberries and strawberries work well, and you can also substitute half of the sugar syrup for a fruit liqueur in these cases to further amplify the fruity flavours. n 54 OCIO magazine

ummer is upon us and we are moving right through it. Although June has already passed, which is the month that most ice cream is produced, it’s important that we take the time to enjoy the nice weather and all the activities that make summer great. That includes indulging in as much ice cream as humanly possible. But why do we love ice cream so much?

Well, to begin we need to accept that we could essentially get ice cream twice a day for the next 10 years and always have new flavour options to try. There are so many flavours on their own and you can easily mix and match all kinds of flavours, ingredients, and anything else you want with your ice cream. In addition to the hundreds of delicious flavour options you have, there are also plenty of fun ways to actually enjoy the ice cream itself. Whether you’re grabbing ice cream spoons and dessert cups, enjoying a banana split, or crunching on the biggest waffle cone you’ve ever seen, it’s hard not to enjoy ice cream when it comes in so many fun varieties. I think we can all agree that there is simply nothing u

Chargrilled whole squid with chilli and mint I

ngredients for 4 servings:

4 medium-sized whole squid, from sustainable sources, ask your fishmonger, cleaned and prepared, wings left on.

1 tablespoon fennel seeds sea salt freshly ground black pepper 2 lemons , zest and juice extra virgin olive oil 2-3 red chillies , deseeded and sliced 1 handful of fresh mint , finely chopped 1 lemon , cut into wedges, to serve

Method: This is a wonderful dish. Usually people cut squid into rings - try my method as it looks great and is easy to cook, serve and eat!

Turn the first squid upside down so that its wings are flat on your chopping board.

Push in a large knife and leave it inside flat on its side. With a sharp knife, slice the squid as if you were going to chop it into rings. The knife that is lying inside the body of the squid will prevent you from cutting right through it. You end up with a concertina effect with the squid sliced, but still holding together. Repeat with the other three.

In a pestle and mortar, bash the fennel seeds into a light powder with a good pinch of salt and pepper. Sprinkle this all over the squid, making sure it gets into all the cuts you’ve made. Place immediately on the hottest part of the grill or BBQ, turning every 30 seconds or so or every time it starts to char, until the squid firms up and turns from opaque to white inside.

Add the lemon juice to a bowl with 3 times as much extra virgin olive oil and whisk together. Stir in the lemon zest, chilli, mint and a pinch of salt and pepper. Drizzle this over the squid, then serve with lemon wedges on the side for squeezing over. n

4 calamares enteros de tamaño mediano, procedentes de fuentes sostenibles (pregunte a su pescadero), limpios y preparados, con las alitas dejadas.

1 cucharada de semillas de hinojo sal marina pimienta negra recién molida 2 limones, cáscara y jugo de aceite de oliva virgen extra 2-3 pimientos rojos sin semillas y cortados en rodajas 1 puñado de menta fresca, finamente picada 1 limón, cortado en rodajas, para servir

Método: Es un plato maravilloso. Por lo general, la gente corta los calamares en anillas ¡prueba mi método que tiene muy buena pinta y es fácil de cocinar, servir y comer!

Dar la vuelta al primer calamar para que

sus alas queden planas sobre la tabla de cortar.

Mete un cuchillo grande de lado (plano) y déjalo dentro del calamar. Con un cuchillo afilado, corte el calamar como si fuera a cortarlo en anillos. El cuchillo que está dentro del cuerpo del calamar le impedirá cortarlo. Terminas con un efecto de concertina con el calamar cortado en rodajas, pero aun así se mantiene unido.

Repite con los otros tres.

En un mortero, tritura las semillas de hinojo hasta obtener un polvo ligero, con una pizca de sal y pimienta. Espárzalo por todo el calamar, asegurándose de que entre en todos los cortes que haya hecho. Colocarlo inmediatamente en la parte más caliente de la parrilla o barbacoa, volteando cada 30 segundos más o menos o cada vez que empiece a carbonizarse, hasta que el calamar se endurezca y pase de opaco a blanco por dentro. Esto no debería llevar más de unos minutos.

Añadir el zumo de limón en un cuenco con 3 veces más aceite de oliva virgen extra y batir. Añada la ralladura de limón, el chile, la menta y una pizca de sal y pimienta. Rocíe esto sobre el calamar, luego sirva con rodajas de limón a un lado para exprimir. n
