It’s also a time where Florida nature has burst forth, and the insects and wildlife, flora and marine fauna surround you in abundance and remind you that our city is merely built around their habitat. Over the past few months, we had been seeing – through events and press releases and the like – that environmental impact has been at the forefront of St. Augustine’s mind. So we decided to dedicate a good portion of this issue to the people and places going green.

There is no formal “feature story” in these pages, as you might have gotten used to seeing. Instead, many of the stories are just a little more cohesive and focused.

You’ll meet Tara Dodson, who dedicates her work to helping businesses become eco-conscious, and Ryan Murphy, who started the Green Hands movement at The Amp and the Ponte Vedra Concert Hall. The team behind St. Johns County recycling talk education and impact, and our resident garden guru gives tips on making your garden a little more green.

But alongside those stories, you’ll find an article on the new mayor and his history with the city. You’ll meet Kiara Williams, who teaches American Sign Language at Pedro Menendez, Aubrie Simpson-Gotham who began an organization to assist local foster families and children, and the team at SAFE Pet Rescue, who are changing the lives of local animals. Because caring for the environment isn’t the only way to make a positive impact. Take this summer to revel in the beauty of coastal nature and enjoy the stories here of those doing great things for our city and for the natural world that surrounds it.

e plan out and put together each issue a couple of months in advance, so the summer issue is always one of my favorites to work on. The design stage is filled with such anticipation – the promise of sand in your shoes and the sun in your eyes, the almost cleansing feel of sticky skin that you almost began to miss when the air was cool, the blinding blue skies, the nights filled with sounds of teeming nature just beyond your backyard. Sure, the unbearable heat can get overwhelming after a while, but summer really is a romantic sort of time in St. Augustine.

LIFE St. Augustine music festival CATHEDRAL BASILICA OF ST. AUGUSTINE June 20-22, 27-29

Hearing intricate and captivating classical music waft through the evening air has quickly become a summer staple thanks to the St. Augustine Music Festival. Continuing the beloved St. Augustine tradition of free concert series, the Festival will feature virtuoso violinists, pianists, and trios from all over the world giving their gift of music to the Ancient City. The Festival kicks off on June 20th with "Simple Beauty" featuring the clean simplicity of Wolfgang Amadeus Mozart and the beautiful melodies and harmonies of Franz Schubert. This concert will feature Festival favorite and violinist extraordinaire, Nigel Armstrong.

The Festival will close on June 29th with a concert called "Around the World," featuring "An English Suite" by Sir Charles Hubert Parry, Barber's "Adagio for Strings" in Memory of SAMF violist Colin Kiely, and music by Shostakovich and Carl Nielsen.

The largest free classical music festival in the U.S., this whole event is one you shouldn't miss out on this summer. Each event is free, but space is limited.

JUNE & JULY CALENDAR GIRLS LIMELIGHT THEATRE May 17-June 9 When Annie's husband John dies of leukemia, she and best friend Chris resolve to raise money for a new settee in the local hospital waiting room.

They manage to persuade four fellow WI members to pose nude with them for an "alternative" calendar, with a little help from hospital porter and amateur photographer Lawrence. The calendar is a success, but Chris and Annie's friendship is put to the test under the strain of their new-found fame. Shows will take place Thursday-Saturday at 7:30pm. A favorite annual local event, Music by the Sea lets guests relax in the ocean breeze, sample the delicious foods of local restaurants, and listen to some fantastic tunes. It’s a family-friendly celebration of all things St. Augustine Beach! Each week, a different restaurant sponsors the event and a different artist performs. Concerts take place rain or shine, though they may be canceled if the weather is severe. Entrance to the event is free, and meals are $10 or less per person. Food is served at 6pm, and the concert begins at 7pm.

LIGHTNER LEARNING LAB: DEGAS, PRINTS, AND I LIGHTNER MUSEUM June 9, 10am-2pm Children aged 5-14 are invited to tour and learn about the different types of prints on view in the Museum’s collection and in the Edgar Degas: The Private Impressionist exhibition. Lightner museum educators will provide a richer understanding of the types of printmaking while encouraging young visitors to truly look and appreciate why artists choose to work in their selected print media.

The tour will be followed by an enjoyable printmaking activity.

Few would have guessed that “Weird Al” Yankovic – who, as a

VIEWFINDER: EDGAR DEGAS’ PHOTOGRAPHIC VISION LIGHTNER MUSEUM June 12, 6-7:30pm Join Flagler College art history professor Chris Balaschak for a talk exploring the impact of photography on the Impressionists. As evidenced in the current Lightner exhibition Edgar Degas: The Private Impressionist, Degas regularly took and explored the possibilities offered by this new technology. Professor Balaschak will discuss how Degas and his circle used photography and its influence on their artwork. Tickets are $10 ($5 for museum members).

Mose Historical Society reenact the 1740 Spanish victory at the Battle of Bloody Mose.

Visitors can participate in the commemoration of the battle and enjoy reenactments of the 1740 battle that forced the British to retreat from Spanish Florida. The reenactments will take place at 12pm and 2pm, but there will be activities throughout the day like musket demonstrations and craftmaking – including blacksmithing, finger weaving, and pine needle basket weaving. ow in its 17th season, Music by the Sea gives residents and visitors the chance to kick off their flip flops and enjoy a wide array of musical genres while chowing down on local fare. Just a stone’s throw from the Atlantic Ocean, the popular free music series kicked off in mid-May with a 19show line-up featuring everything from ‘80s tribute tunes to jazz and Tie-Dye Rock.

Headed up by the folks at the St. Augustine Beach Civic Association, a volunteer group comprised of active community members like President Bill Jones, Executive Vice President Bob Samuels, Treasurer Frank Ward, Secretary Hester Longstreet and Director Rich Galik, Music by the Sea has been going strong since its inception in 2003. “The vision of Robert and Andrea Samuels, the Samuels’ noticed that there was this beautiful pavilion that was rarely used,” says Bill, a St. Augustine Beach resident and owner of ProShow DJ Service, of St. Johns County Ocean Pier Pavilion.

“Our first event was a three-piece band and a guy cooking hotdogs on a Coleman camping stove in the corner of the pavilion. Over time, the concert series grew and became a weekly event.”

year and has grown from just three concerts in that first year to now nearly 20.“With notoriety came more interest from entertainers,” Bill explains. “We receive solicitations from over 120 bands a year and have been able to book bigger names like Rock and Roll Hall of Famers Denny Laine [The Moody Blues]...or, this year, one of the world’s finest slide guitar players, Peter Karp of Atlanta.”

Produced and run entirely by volunteers, Music by the Sea has made a huge impact on the local community. Aside from once-ayear events like the Sing Out Loud Festival and Rhythm & Ribs, there aren’t a ton of opportunities for area musicians to play to large crowds. Music by the Sea gives groups like Grapes of Roth and Chillula a welcoming stage with a hometown audience.

Neighborhood restaurants also benefit.

With an average concert attendance of nearly a thousand people, local eateries feed a hungry swarm of music lovers.

“The first show had about 45 attendees, which included the band,” Bill says of the inaugural series in 2003. “Today, weather dependent, we welcome anywhere from 400 to 1,200 concertgoers. It’s been amazing to watch it grow over the years and a lot of it is thanks to Bob and Andrea Samuels, the series founders.” www.sabca.org

ringing a pet into your family is the kind of event that changes your life forever.

Cat or dog or anything in between, that pet will love you unconditionally and the joy that they can give is unmatched. Of course, it’s no easy thing and the transition can be difficult (the shredded pillows in my house will tell you that), but the reward more than offsets all the work.

Just ask the incredible group of volunteers at SAFE Pet Rescue. In September of 2009, Robin Nordan opened the doors of SAFE with a mission to rescue animals set to be euthanized in surrounding animal control centers.

Since that day nearly a decade ago, she and her team have saved, rehabilitated, and found new homes for almost 14,000 animals. In four locations across the county, the organization has 22 staff members and more than 70 volunteers that keep the work going seven days a week.

Since SAFE is run entirely on donations, they depend on the tireless efforts of these volunteers (“superheroes” as Robin calls them) to run the resale shop in St.

Augustine Beach and handle the adoption events. A huge part of SAFE’s work requires the dedication of transport drivers who pick up the animals and take them to vet appointments. For the past five years, volunteers Chuck and Laurie start loading dogs at daybreak every Wednesday morning to drive them from St. Augustine to Jacksonville for surgeries and medical care.

The passion and enthusiasm of them and others like them are what keep the rescue going every day.

As we enter into the summer months, the kids are out of school, and we have a little extra time, this is the perfect chance to invite a pet into your home. S

t. Augustine is permeated by the beauty of Florida nature – sandy shoreline teeming with coastal wildlife, forests of pine trees and tropical flora, birds overhead and an entire animal kingdom below.

The natural beauty is part of what attracts visitors and new residents. But as it is everywhere nowadays, that beauty is under siege from mountains of trash and considerable pollution. And local businesses are fighting back. The green movement has planted itself firmly in St. Augustine, and it only continues to grow. Businesses everywhere and of all different kinds are making an effort to reduce their waste and their carbon footprint.

Local restaurants especially have started eliminating their single-use plastics and switched over to something more sustainable. A large number

of restaurants (like Mellow Mushroom, The Floridian, Back 40, The Conch House, too many to name here) carry paper straws. Spots like Beachcomber have brought in paper straws as well as cardboard to-go containers, leaving plastic and styrofoam behind. Places like The Press and Dessert First Bistro use a cornstarch derivative for a biodegradable straw that feels like plastic, while restaurants like Llama and The Kookaburra have chosen hay straws. Mojo’s Tacos has eliminated straws all together.

But the movement isn’t only confined to the restaurant industry. It isn’t all that difficult to find eco-friendly businesses to satisfy a number of your everyday needs. Diane’s Natural Market carries a substantial range of sustainable products (from household cleaners to compostable trash bags), and if you pop into many St.

Augustine retailers, you’ll be able to find eco-friendly options.

And local creators and artisans have made it easy to go green with everything from natural deodorant to recycled sandals.

And Island Prep is an eco-conscious preschool and primary school where kids can learn to care for the environment, and the facility is run in a sustainable way. The Amp and Ponte Vedra Concert Hall have made huge strides in their efforts to reduce their waste and create green venues.

The movement is growing in St. Augustine and only getting greener. Residents are encouraging the practices and recycling and reducing waste on their own. It’s an exciting thing to watch the community come together to maintain and revive the beauty of the world around us.

Organic gardening is an inherently sustainable hobby, but you can make your garden even greener by sourcing local ingredients and eliminating single use plastics. Using homemade worm castings and compost as soil amendments prevents food scraps and yard waste from making it to the landfill and producing methane (a harmful greenhouse gas) while eliminating throwaway packaging. Peat pots and popsicle sticks make great alternatives to plastic plant pots and labels. If you do buy plants in plastic pots, make sure to wash and reuse them or return them to the nursery!

Finally, use mulch from local tree trimmers instead of buying dyed mulch in bags. Not only are you eliminating more plastic, you’re choosing a superior, local product that will add nutrients to your garden.

ara Dodson had just reached Kilimanjaro's summit during a breast cancer survivor climb when she timidly asked to check her email with the help of a satellite phone. Lo and behold, the news she was anticipating reached her inbox – St. Johns County was inviting her to a second interview for a position as an environmentalist.

So Tara relocated from Lake Tahoe after working as an environmental planner for an engineering firm and began overseeing sea turtle protection. Like many St. Augustinians before her, Tara fell in love with the coastal gem that became her home – a gem teeming with wildlife, boasting sparkling waterways and flush with foliage. It isn’t lost on Tara that these treasured features are at risk lest the community at large live as responsible stewards of their ancient coast. “Sustainability is a holistic approach to managing our natural resources that we as humans depend on for survival," says Tara. "Our natural resources give us food, water, clothing and shelter...just because we can’t see what is happening on a global scale doesn’t mean what we are doing locally isn’t affecting the change – albeit positive or negative."

Her involvement with habitat conservation permeates not just her day job but also her downtime, which she spends volunteering with a local turtle patrol. She is responsible for the stretch of beach between Pope Road and A Street, so once a week, she bikes to her assigned

area and runs its span scanning for nests. If one is spotted, she contacts the appropriate permit holder then heads to her office.

It was a natural progression for Tara to ultimately build her Full Circle Resource Management business after years of work reporting on and examining St. Augustine’s rich ecology. A fitting opportunity to showcase her business' value came during a recent tiny house festival, where Full Circle Resource Management oversaw both waste and recycling operations. This efficient approach enables cost reductions that can negate expenses. Her organization also installed a water filling station that eliminates the need for bottled water. “You can actually save money," says Tara, "by skipping the straw, not selling single [use plastic] and not serving everything in Styrofoam."

Full Circle Resource Management was created to help businesses – like the festival – find small ways to positively impact the environment while still keeping their bottom line in mind. Small but purposeful changes like the ones Tara fosters can have a big effect on the well-being of our coast.

What is the organization’s purpose?

Ryan Murphy: Green Hands is a program that was put into place to help reduce the environmental impact of the Amp and the Ponte Vedra Concert Hall and all the events that we do. We felt that it was our responsibility to properly handle waste management and the footprint that we created with all the events we do. The purpose is not only that but to help educate people that it is possible to make great changes with small efforts.

What is your role with Green Hands? My role from the beginning was to make sure that the mission of Green Hands stayed on track and that we were doing all that we could to really push the boundaries of what was possible in this regard.

I helped start the program and have been making sure that it is growing in the way that it needs as well.

What inspired you to start the organization? After we did the Mumford & Sons concert downtown, we were so impressed with the way that they handled their waste and cleanup efforts and it dawned on us that we could be doing so much more at the AMP and at our events as well. It was around that time that Jack Johnson was looking to play one show in Florida...and to even be in the running you had to agree to carry out some of the greening initiatives that he had in his "eco-rider." This was the perfect template (and excuse) to really kickstart this program.

In a practical way, how does Green Hands carry out its mission? We continue to keep an eye on what industry efforts (music and greening) are out there to help with the program so that we continue to evolve. We also try to inspire

and educate as much as possible as I think people have the impression that to be "green" it is expensive and/or time consuming...which it truly isn't and the inconvenience of any of it is more perception than anything.

What kind of impact do you hope the initiative has in the community and beyond? I am already, truly, seeing the impact that I thought I could have only dreamt of a few years ago and that is that other venues, cities, and organizations are reaching out to learn more and share anything that they have been doing. It feels like not only is this a modest effort that got started here to handle our immediate impact, but that it is becoming more of a industrywide and nationwide effort. It's amazingly inspiring.

Raised in St. Augustine and an alumna of Flagler College, the creative behind Sprout Kitchen spent several years traveling and pursuing her education before returning to the Ancient City. With progressive businesses popping up everywhere, she realized that her hometown was the perfect place to open a juice bar and plant-based meal delivery service. So Sprout Kitchen was born.

WHAT'S YOUR FAVORITE PART OF THE JOB? I really love working with fruits and vegetables! Creating unique plant-based dishes is my passion and I am grateful to have the opportunity to make a living doing what I love.

WHERE DO YOU GET YOUR INSPIRATION? I draw a lot of inspiration from the vibrant plantbased community, there are so many great plant-based businesses popping up all over the world and it's amazing that we are all able to share with and learn from each other through social media. s I turned off of State Road 207, toward Armstrong Park, I really didn’t know what to expect. I don’t make it over to Elkton very often, so the landscape was unfamiliar as I passed family homes, kids playing in the street with skateboards and balls, overhanging trees and dense Florida foliage on my way to meet the St. Augustine Social team at the Armstrong Park Trailhead of the Palatka to St. Augustine Trail.

This trail is a small section of the St. Johns River to Sea Loop, a project more than a decade in the making (and still in the midst of the work), and we wanted to explore our little portion. The trail in this little

Vrum Planning’s involvement has been widespread as well – from advocacy and volunteering to professional consulting.

It has truly been a community coming together to make this project happen.

This segment of the Palatka to St. Augustine Trail, which opened on April 6th, connects Palatka to Vermont Heights – running from Hastings to Vermont Heights, through Spuds, Elkton, and Armstrong. When the trail is complete, it will wind through West Augustine, the Historic District, the Beaches, and south to Marineland.

Free and open to the public, the trail is technically accessible 24/7 (though the trail itself is not lit, so headlamps are necessary after dark). Though it’s a popular trail for cyclists, it’s a great experience for walkers, runners, tricyclists, and anything in between. You’ll certainly need stamina if you plan to ride/ walk/run the whole Palatka-St. Augustine stretch, but the trail itself is welcoming to any skill level and perfect for all. Even furry friends can enjoy the trip – my dog, Reg, gives his personal canine endorsement.

Heather sees the purpose of the trail as a way to connect the community, a linear park that provides not only recreation but alternative transport options. For her, the impact of the trail is immeasurable. “From equitable access

to tourism, getting kids back outside, and giving the active retiree a safe place to ride and walk,” she says. “It builds up communities, economies, and property values. We truly can’t finish it soon enough. Use it, enjoy it. Park and explore the trail heads. Then talk about it and get involved.”

GREEN COLLAR RECYCLING EFFORTS THE WORLD OVER HAVE DRASTICALLY CHANGED IN THE LAST FEW YEARS THANKS TO SOMETHING CALLED THE “CHINA SWORD,” AND ST. JOHNS COUNTY IS GEARING UP TO HANDLE THE CHALLENGE.

emember when recycling was easy? You tossed a bottle, empty cereal box, and old newspapers in a bin and placed it at the end of your driveway. As environmental awareness gains momentum the world over, tighter restrictions and requirements have changed how St. Johns County manages the recycling load from over 5500 homes in one of the nation’s fastest growing counties.

St. Johns County has spent the last few years restructuring the recycling program to fall into line with changes in the recycling market, thanks to the stricter import requirements from China. Prior to 2017, most recycled materials were sold to China.

Now, however, all recycled items being

imported into China must meet certain “contamination” requirements. Previously, everything – whether it was considered recyclable or not – was sent to China. Now, the providers who collect and export the material must comply with China’s new regulations. Much of what was sent to China is now being sent to Vietnam, India, and other locales.

The biggest challenge for St. Johns County became how to educate the public and make them aware of exactly what is and is not acceptable in a recycling bin. The restructuring of the recycling program involves many aspects and has taken several months to roll out. But the resounding focus was to keep things simple.

The first step was to provide the large blue rolling bins for each household. On top of each bin, in large white lettering, are clear instructions detailing acceptable items to place in the receptacle. Next, the Department of Public Works is ramping up the current education programs. This involved purchasing a dedicated domain www.STAUGUSTINESOCIAL.com

name (recyclestjohns.com), upgrading the website and social media connections, holding more community meetings, and developing programs for local schools to get children involved in the process.

After a recent survey, the Public Works department realized that most people don’t recycle because they are forced to or have to pay for it. They simply do it because “it’s our county.” So the department added that to their logo – “Recycle St. Johns: It’s our county!”

The key point the program leaders, Greg Caldwell and Wendy Hicks, want to make the community aware of is that many things are recyclable — but not everything is accepted through St. Johns County’s program.

The day started with Flagler Hospital's Renee Wyden leading a short meditation exercise then leading an impassioned talk on overcoming burnout and roadmapping your own wellness. A quick break was taken for some highenergy laughter yoga with Amy Angellili of The Adventure Project before a nutrition intensive with Tasha Peters of By Design Catering. Barbara Trapp taught us how to clear the clutter, then the group headed out for a quick yoga session on the lawn with Seka Collins. After a quick break for a cocktail and some healthy snacks, the evening panel began with Dr. Susan Yarian, Flagler Hospital OBGYN, Lauren Giles, Fit Mamas Tribe Founder, Kelly Reid-Nesbeth, Zumba Instructor, Renee Wyden, and Tasha Peters. he 6th Annual Miracle on the Bayfront Gala raised $188,788 for St. Jude Children’s Research Hospital.

The gala, generously hosted by The White Room, was emceed by St. Augustine’s Patrick Canan and Jessica Clark from First Coast News and included rooftop cocktails, dinner, live entertainment, and both silent and live auctions. Tyler, a seventeen-year-old Floridian and St. Jude patient, told his courageous story about being diagnosed and treated at St. Jude in Memphis. His family, like all others whose children receive treatment at St. Jude, never received a bill. Not for treatment or travel or food because St. Jude believes no parent should worry about anything other than helping their child live. St. Jude Children’s Research Hospital is leading the way the world understands, treats, and cures childhood cancer and other life-threatening diseases. Kristen came to St. Augustine to visit her sister at Flagler College, where Sean was a fellow student. The two met, and in 2014 said their "I dos" at Serenata Beach Club. Though they spent a few years living in North Carolina, the couple knew that St. Augustine was where they wanted to call home.

So they moved back in 2017, and now they're raising 4-year-old Parx and newborn Rori to love life on the coast. When dad isn't working as a General Manager for local landscape design companies, The Hogan family pictured you can find this little family exploring from left: Parx 4, Sean some of their favorite local restaurants, (dad) 33, Kristen (mom) 32, enjoying the beautiful outdoors, catching and Rori 6 weeks up with the wildlife at the Alligator Farm, and savoring their time spent together.

I

’m going to play the piano like that,” said seven-year-old Bob Meade while Fats Waller played on-screen at the Matanzas Theatre.

It was 1937. So his cousin taught him a ditty on his grandmother’s piano, and the family said, “Give him that piano. That boy’s got music in him!”

His father’s work as an architect took him to various cities (Chattanooga being where Bob was born in 1930), but they made their way back to St. Augustine when Bob was four, where singing classes were part of the curriculum at Orange Street School. “Music is an expression. You’re building something, almost like architecture. It’s as if you’re painting a picture.”

Margaret Manford on St. George Street was Bob’s first piano teacher. Lessons cost six dollars a month, grocery money in those days. Then a pianist client of his father’s said, “I’ll give that boy lessons!”

“Granny Favor,” as Bob called her, taught him position and interpretation of music.

Mrs. Greenwood, “the best piano teacher in town,” taught him next. Then, at fourteen, he began as high tenor in the

First Methodist Church Choir and even participated in recitals in Flagler’s Kirkside home.

In 1948 his Baccalaureate ceremony was held in Grace United Methodist Church, where he met William Dixon, an organist from New Jersey. Bill taught Bob the organ, and soon he sang in the very first St. Augustine Community Chorus. He was nineteen. “Everyone in St. Augustine in a choir wanted to be in that one with Dixon.”

During the Korean War, Bob joined the Navy Reserve Seabees, playing at stations with a pump organ. Back in town he worked at a variety of churches, even earning the title Minister of Music at First Methodist Church. He oversaw the choir and organ for years. “With the organ you can embellish in any way. It’s like somebody adding trees or a moon to a picture.” He started at Grace Church later, serving 29 years, he said. His wife Jacquelyn did all the Alto Solos in his choir, played the organ, and taught piano to local children. Sadly, she passed away in 1980. www.STAUGUSTINESOCIAL.com

A major highlight of his career was physically installing a new four manual Aeolian-Skinner. “Music, architecture, mathematics, and medicine are all the same thing – it’s all one discipline,” says Bob, “Those four things go together, because music is time and notes.”

He resigned from Grace Church in September 2016 and Hurricane Matthew hit two weeks later. Thankfully the 1913 Chickering his father bought and his mother’s Wurlitzer survived unscathed.

Everything’s got to be liquid.” He still plays every day, settling in to play for me. I close my eyes and listen. The sound rolls from one side of my mind to the other, like water, swelling into mounds, flitting back and forth like tiny butterflies tapping their wings and touching my mind with warmth.

Coco Chanel once said, “An interior is the natural projection of the soul,” and that certainly rings true for Heather Aguilera and her 930 square foot, 2 bedroom, 1.5 bathroom bungalow.

Heather credits growing up in the “Bohemian artist” town of Laguna Beach, California for making her who she is today – proudly holding the titles of local artist, mother of one, and owner of Heather’s Living Art. Heather’s business has provided her the opportunity to travel the world, becoming a published and internationallytelevised artist. It’s no secret that travel experience, memorable destinations, and California roots play major roles in the style of her new home.

Heather’s business is body art, and she’s been renowned for her ability to pinpoint a person’s essence as she creates art around them and turns their body into an artwork all its own. This deeply personal artistic nature shows through in her home. At work, she brings out the art that speaks to a person, creating a spiritual connection and turning a person into a living canvas. ST. JOHNS AUDUBON SOCIETY

irds, birds, birds! That is our focus,” says Amy Koch, current President of the St. Johns Audubon Society. “Our primary mission is to get people out in nature to learn about and appreciate birds. Once you can identify something, you tend to want to protect it.” St. Johns County is indeed a special place for birds, with 330 (and counting) species identified.

The National Audubon Society was begun almost 120 years ago by a few individuals who were against the plume trade. Since then, almost 500 local chapters have sprung up nationwide, with Florida numbering at forty. Our very own St. Johns County chapter was incorporated as a non-profit in

1979. “It’s had its ups and downs and was languishing," says Amy, "until former President Jean Rolke brought it back to life.” Now, with about 600 members, the opportunities are endless!

erry Unwalla has been with State Farm for 30 years, but the last 21 years of his career have been in St. Augustine where he says he found his “true calling as an agent.” Perry says, “I love that I live and work in a pristine, unspoiled beach community where I can walk or bike almost anywhere. At my doorstep sits a 450-yearold downtown city, overflowing with her stories of the past…just paradise!”

It was in this paradise that Perry met his wife Sasha and where his family has bloomed. He says, “Sasha and I are surrounded by three beautiful children, twin girls Tatiana and Rainia (8), our son, Kai (5), and the greatest dog on earth, Rumi, a 10-year-old yellow lab.”

Part of Perry’s love of St. Augustine spills over into service for the community. He says, “I mentor a young man through the Big Brothers, Big Sisters program here in St Johns County. We also regularly work with Habitat for Humanity on homes in our area. And we are personally involved with providing, preparing, and serving meals at our local St. Francis House Shelter.”

E

mily Gober is tall and lithe with an athletic frame. A bright light of confidence shines through her as it often does in the rare teen who has complete clarity at an early age. As she prepares to graduate high school, a glance in the rearview mirror shows a string of both athletic and academic achievements.

April, she was presented the prestigious David Mathis Pursuing Victory Award, which is awarded to one outstanding varsity athlete from every school in St. Johns County who exhibits the six pillars of character.

One of the secret ingredients of Emily’s well-rounded high school years is the friendships she cultivated along the way.

“The most rewarding part of high school,” she says, “has been all the amazing friends I have made over the years, both in and out of sports.” She has been playing lacrosse with the same group of girls since elementary school becoming captain of the team in high school, and she has also been on the weightlifting team since her freshman year. Academically, she has been successful in the challenging, accelerated AICE program, where math is her favorite subject (tackling Calculus this year).

Emily’s parents have been a key ingredient in her success. “Both of my parents have always supported me in every sport I have ever played,” she says. “No matter what, they were always at my games or meets which meant a lot to me. I could not have done it without them.”

A star athlete, Emily won first place for St. Johns County at the weightlifting conference meet last December. This past

It's no surprise that Emily has already hatched some grand plans going forward.

She knows for sure she wants sports to be a primary focus in her life, so she plans on pursuing sports-related physical therapy.

Her five-year plan is finishing physical therapy school and getting her DPT. And then her ten-year plan is getting her doctorate in physical therapy and working with athletes. Looking at Emily’s achievements in high-school, these goals

are clearly all well within her reach.

As Emily prepares for her next phase of life, she says, “I am super excited to move on to college and have new experiences.

However, as my senior year comes to an end, I am realizing more and more how much I will miss high school and St. Augustine.”

A

s a young girl, Manila Clough lived in Puerto Rico surrounded by natural beauty that inspired her creatively.

Her parents recognized early-on that Manila needed outlets for her energy and creativity, though her interests were not just in drawing and painting but the literary arts as well (especially poetry). So Manila took classes to nurture her talents. She finished high school in Puerto Rico then completed her B.A. at Florida State University.

After college, Manila met and married a dashing young military officer who swept her off her feet – literally – by taking her all over the world on his many assignments. One of his early posts was in Gulfport, Mississippi, so that was an opportunity for Manila to obtain her graduate degree at Tulane in New Orleans.

Foreign assignments soon began, many associated with NATO in Brussels, but Manila never missed a beat in pursuing her own art career while raising a family. She became very much in demand for her fine renditions of beautiful European historical properties.

The military assignments came to an end in 1994, and it was time to find a place to settle down. While on a visit to Florida, they came across St Augustine, where they fell in love with the flora, the beautiful bodies of water, and the lovely Spanish-

influenced historical structures. They built a home on Anastasia Island, and Manila joined the faculty at Flagler College. She loved the students and the ambience of downtown St. Augustine.

Teaching English Literature didn’t give Manila enough time, however, to devote to her applied arts. It was time to begin negotiations with her husband for a studio. He recalls the words being, “Either divorce me, shoot me, or give me an art studio to work in.” He certainly didn’t want an unhappy wife, so he relented and built a studio where she could lock the door and work for hours overlooking the Matanzas River, which serves as a primary inspiration for her art.

Manila was game, but now she had to deal with a large unwieldy installation that was going to hang vertically but was created horizontally. Lots of gritty wet grout was trekked through her house! Over time, experience gave her a knack for it.

And serendipitously, another mosaic form presented itself. One of Manila’s neighbors was an accomplished stained glass artist.

She then began to cut stained glass to create large very unique mosaics.

Soon, commissions arrived, not just for private homes but also public spaces. You can now find her work in many schools, Flagler Hospital, and private clubs and churches throughout the state. D

ressed in black athletic shorts, a white V-neck t-shirt, and backwards black baseball cap, Mike Sullivan looks more like a youth umpire than the owner of Commander’s Shellfish Camp in Crescent Beach, a clam farm and fresh seafood restaurant that’s become popular with locals. Mike isn’t an overly tall man, but he certainly commands a presence.

Sporting white hair and a bushy white mustache, this father of four daughters spent much of his “professional” career writing accounting software. Armed with degrees in mathematics and computer science from the University of North Florida, Mike traded in wingtips for Wellingtons in 1992. “I started clam farming down in New Smyrna Beach,” Mike says of the early days. “I built it into such a successful operation that, eventually, I was planting eight million clams a year and selling 50,000 clams a week to Disney Resorts, Ritz Carltons, Hyatts, Marriotts, and all different high-end hotels.”

When pollution and other water quality issues destroyed Mike’s farm, he struggled

with what to do next. But clam farming was what he loved and what he was good at. “This is a really good spot. It’s the only spot left on the East Coast where you can grow hard clams with any consistency,” Mike explains of the Matanzas River. “Over the 28 years that I’ve been in this industry, I’ve seen all of the shellfish areas go out of production because they can’t grow a clam for a yearand-a-half without some type of event that comes in and kills them.”

Referring to algae blooms and industrial runoff, Mike found his current location and fought hard to make it his own.

Commander’s Shellfish Camp, named after his father, a successful Commander in the Navy, offers up clam chowder, raw clams, oysters, and Jambalaya.

It’s a labor of love and without the help of his devoted fiancé and one of his daughters, Mike says he would have stuck to clam farming and moved on from the restaurant he opened in March of 2017.

It’s interesting to note that planting one million clams costs approximately $30,000, so Mike has a lot invested in his clam farming operation. And aside from producing clams for his restaurant and nearby eateries, Mike sees the benefit to the environment these northern quahogs afford. “Our rivers are changing because of population growth,” Mike explains. “Some European countries are already doing this and the local GTM Research Reserve is making headway, but we need to place some serious focus on shellfish growth.

Clams syphon the water around them and clean it better than you can imagine.”

AUBRIE SIMPSONGOTHAM BELIEVING THAT A STRONG, LOVING FAMILY IS THE FOUNDATION TO A HEALTHY, HAPPY, AND SUCCESSFUL LIFE, SHE DEDICATES HER LIFE TO STRENGTHENING FOSTER FAMILIES.

I

nitially, Aubrie SimpsonGotham's career centered around teaching. But after spending a few years working with students in high poverty areas, she began to discern a lack in social services for these students. Over the years, she saw the number of students in foster care trend upwards, largely due to the opioid crisis. After scouring what resources were currently available to foster families in St. Johns County, Aubrie soon realized that her passion for helping underserved communities outweighed available opportunities to get involved. The answer was obvious to her – she would have to start her own organization. And this past February, Aubrie formed Fostering Connections St. Johns.

An inspiration behind her work with the foster community, Aubrie's friend became a foster kid at age 8. The friend shared the difficulties of being in foster care and how often she was without help growing up. That made a strong impression on Aubrie, but she never knew what to do to make a change.

The immediate goal of the nonprofit group is to provide care packages for children newly-placed in foster care. Realizing that most kids arrive in a new foster placement with only the clothes on their backs and not much more, Fostering Connections provides age-appropriate care packages to ease the transition. The packages include basics like toothbrushes and other toiletries for the

necessities, but throws in stuffed animals, coloring books and other comfort items to make the kids feel special and, hopefully, loved.

Aubrie has big plans for Fostering Connections, but for now, she is focused on working with the Family Integrity Program in St. Johns County to distribute care packages, honor foster parents with gift cards, and build a volunteer base for future events. A big moment will come in August when Fostering Connections hosts an outreach event for foster families and students to help them gear up for school, providing them with items to help them have a successful year.

While the current focus is continuing to work on delivering care packages, Aubrie envisions a big future for her organization.

of foster care, typically between the ages of 18-25. There are no support services for this age group anymore, and this is one of the most vulnerable times in a foster kid’s life.

Statistics show that without continued support and intervention, many foster kids end up homeless, involved in criminal activities, and susceptible to drug addiction, human trafficking, and at-risk pregnancies.

This is where Aubrie really hopes to make a difference.

When I asked her why she focused on the fostering community, Aubrie mentioned a friend from college. Her friend became a foster kid at age 8. s an American Sign Language instructor, Kiara Williams hopes to bridge the communication gap between the hearing and non-hearing communities. While she somewhat stumbled into this noble calling, her position has also led to her touching the lives of every student, coach, and fellow teacher at Pedro Menendez High School.

Growing up in Jacksonville, she was fascinated with teeth and dreamed of one day becoming a dentist. After testing out the career field during a summer internship however, she had a change of heart. At that point, Kiara had taken two years of ASL and slowly realized she possessed a natural aptitude for the language. Her confidence grew and, just as she tells some of her students today, her teacher suggested she pursue a career in that field.

After earning a Bachelors’ Degree in Deaf Education from the University of Central Florida, Kiara completed an internship at the Florida School for the Deaf and Blind.

It was then she realized her ultimate goal.

“I love sign language, and I want to teach

She was working for a screen-printing business when she received a call from her high school ASL teacher letting her know about an opening at Pedro just a few days before the fall semester began. Her now boss was out of the country at the time, so Kiara had to interview for the position over the phone. It is a testament to her grace and magnetic personality that she was able to land the position without being able to demonstrate that she actually knew sign language.

Almost 15 years later, several students say she made a profound impact on them.

Many explained a situation in which they were the only person at a location that could communicate with a deaf person.

use it in their own lives…I love that.”

Until she retired last year, Kiara was also Pedro Menendez’s cheerleading coach.

In 2015, she led her squad to become the first team in school history to win a state championship. “It was like leaving a little piece of me with each athlete,” says Kiara, “Just knowing that I touched their lives in some way, it’s amazing.”

Additionally, Kiara is a senior class sponsor, helping plan events like the homecoming dance and Grad Bash and also coordinating the annual Mr. and Mrs. Menendez Pageant. Her volunteer efforts have made her a local celebrity, receiving greetings from students and parents throughout St. Augustine. “Being able to touch students that aren’t mine in the classroom is definitely rewarding. If I was not teaching at Pedro, I probably would not be teaching,” says Kiara. “I love the school and the people here and the kids so much.” www-pmhs.stjohns.k12.fl.us

I

’m just a wanderer crossing the field of time,” says Sam Pacetti, displaying that sense of deeper understanding that has gained the St. Augustine native and acclaimed musician a following of fans and friends reaching far beyond the threshold of our historic city gates. “Music was never anything I had intended,” he says.

“My grandfather and my father played guitar, and I started taking lessons when I was eleven, but it wasn’t until I was thirteen that I really became interested.”

However, perhaps Sam’s love for mankind is his greatest attribute. He says, “I want every person who reads this to find some small way everyday to lessen suffering in the world.”

Though he’s had a wide range of musical influences, the one that stands out to many who know Sam is the Florida native storyteller and folk musician Gamble Rogers, with whom Sam took lessons and became friends in his sophomore year of high school. “For years, people called me his protégé. I resisted that term because I misunderstood the definition of it. Then, I realized there was truth to it because Gamble had gone before me and, in a sense, I was carrying on what he had started.” Rogers died unexpectedly on October 10, 1991. They had known each other just one year.

In the years surrounding his short time with Rogers, Sam was a student at St. Augustine High School, where he attended guitar class with the classically trained Gary Piazza.

And as an adolescent, the guitar became a tool of personal well-being for him. “On

one level, it allowed me to escape some uncomfortable personal situations,” he says.

“On another, it helped me discover focus and concentration. The guitar became a method to organize my inner world, which was turbulent and chaotic.”

After graduation, Sam spent almost a year living in Ireland that “awakened his sense of creativity.” Upon his return stateside and finding that his musical career had begun to take shape, Sam went through a selfdescribed “transformative challenge” and began to deal with the effects of emotions and painful memories that had been suppressed for many years. What resulted was a skepticism of fame and fortune and a three year hiatus from music. “Eventually, I realized that if I stopped playing and performing, part of me – perhaps the most www.STAUGUSTINESOCIAL.com

important part – would atrophy and die,” says Sam. “Luckily, the music stayed with me, but I never recaptured the need for recognition.”

Growing from those struggles, Sam has shaped a unique style that he describes as “Musical Chameleonship,” combining the styles of the baroque, Celtic and Irish music, Bluegrass, and American fingerstyle guitar.

He describes his own material as “quasitranscendent influenced.” His authenticity and humility have become his signature and the basis of his fans’ admiration.

However, perhaps Sam’s love for mankind is his greatest attribute. He says, “I want every person who reads this to find some small way everyday to lessen suffering in the world.” www.sampacetti.com

LOCALS LOCALS also elected to the State Legislature. “I followed in the footsteps of my father and grandfather but I never felt like I was expected to do those same things,” explains Tracy. “However, my father gave me a lot of practical advice that has served me well.”

That practical advice might come in even more handy now – Tracy has just assumed mayoral duties for the second time, filling in for the position that Nancy Shaver vacated due to health issues. How does he see his role? “I want to facilitate the success of the other commissioners and support community visions. One issue is mobility. We have to be more creative to make the downtown area more hospitable and user-friendly, and I think there are some ways to do that.” He also believes in conducting meetings in a welcoming and respectful way while maintaining a sense of order and decorum. “You have an obligation to get through the agenda but also to make sure people know they’re welcome to be heard.”

T

o understand the impact of the Upchurch family, we need to start with history. Back in 1925, Frank D. Upchurch, Sr. and his wife Esther settled in St. Augustine with their young son, Frank, Jr. Shortly after, they welcomed son Hamilton, and the new roots of their family tree grew deeper. Frank, Sr. served as a state senator and mayor and laid the foundation for the Upchurch family law firm; Frank, Jr. was appointed as Judge

for the 5th District Court of Appeals; and Hamilton was an assistant state attorney, elected to the city commission, served two years as mayor, and spent 10 years in the Florida House of Representatives.

In fine family tradition, Hamilton’s son, attorney and Flagler College professor Tracy Upchurch, was also voted to the city commission, also served as mayor, and was www.STAUGUSTINESOCIAL.com

Looking back, one of our new mayor’s more memorable moments is – unsurprisingly – family-oriented. “Coaching soccer,” says Tracy. “One of the great joys of my life was coaching my kids in soccer. It was just a lot of fun with very special memories.” And where does he go to rejuvenate? Conch Island and Anastasia State Park.

“Several times each week I walk Conch Island. You don’t have to go very far before you are substantially the only person around. My mother was a shell collector, and I would walk Conch Island with her, so I have wonderful memories there. It is far and away my favorite place.”

Those family memories are often the building blocks for successful communities. As Tracy explains, “We talk a lot about preserving a sense of space, but we must also build a sense of community, a sense of belonging – not only to a physical space but to each other as well. And that comes from being involved in our community.”

Working for the good of St. Augustine and for the furtherance of community, Mayor Tracy Upchurch is glad to be back.

here are some things that just say “summer” to us, and really fresh seafood is one of them. Now there are a lot of places in St. Augustine where you can find really fresh seafood, but there are very few where you can eat that really fresh seafood right on the beach.

Beachcomber just happens to be one of those places. And the really fresh seafood that we’re craving from Beachcomber is the Ruby Red Shrimp.

This striking dish is a popular one at the beachside restaurant, and it isn’t difficult to see

why. The Ruby Red Shrimp (also sometimes called Royal Red Shrimp) are seasoned, marinated, and steamed, coming out of the kitchen piping hot. There isn’t much added to them because not much is needed. The natural flavor of the quality shrimp speaks for itself.

Add a little butter, a squeeze of lemon, even some cocktail sauce, but you won’t need more than that.

f you’re a local or even just a frequent visitor, you know that there are a few things that The Floridian always does right. And vegetarian dishes are at the top of the list. Maybe it’s the creativity of the chef and co-owner Genie McNally or maybe it’s the fresh and local ingredients or maybe it’s a little bit of both. But whatever the reason, we knew we could count on them for some vegetarian deliciousness, and the Cornbread Stack with Tofu was no exception.

the dish any other way, and sometimes it feels like it was an afterthought and merely a vehicle for the rest of the ingredients. The Cornbread Stack with Tofu definitely falls into the former category. The blackened tofu has a flavor on its own, a flavor that pairs perfectly with the sweetbut-still-savory taste of the cornbread, a flavor that is only enhanced by the aioli. It’s like this concoction of flavors was made just for it.

A tribute to the coastal/Southern blend of the restaurant’s menu, the Cornbread Stack starts with some cheddar and veggie-stuffed cornbread. It’s then topped with slices of blackened tofu, a drizzle of the housemade Chimichurri Aioli, and some fresh and delicious greens. On the side you’ll get a small jar of house sweet pickled veggies – just the metaphorical cherry on top.

Then we have to talk about the cornbread. As any proper Southerner will tell you, cornbread is an art all its own. No matter where you get it, your cornbread should taste like your wizened little grandma just scooped it out of her ancient cast iron skillet. And true to expectations, the cornbread is all you could want it to be. Cozy and delicious, sweet and savory. Once again, The Floridian has lived up to its vegetarian reputation and brought something truly special with the Cornbread Stack. What are you waiting for? Dig in.

ew culinary experiences parallel tasting fresh seafood above the dunes of the Atlantic, but what many people don’t consider while dining at The Reef is the man behind the curtain – in the kitchen, that is. Chef Bob Henle isn’t one to boast, and he doesn’t need to. His food and his team speak for themselves in the most delicious way.

Following a non-traditional start to his culinary career, two decades in Spain greatly influenced the chef’s international understanding and inspiration for many of the locallydriven delights offered at The Reef.

Many chefs grow up apprenticing with family members in the kitchen as a legacy career, but not Bob. His Dad served in the Navy while his mom served up the best fried chicken Bob and his sisters have tasted since. He has fond memories of eating together as a family during the younger childhood years. But when his parents became overweight and embarked on losing 300 pounds between them, he was challenged to enjoy roast chicken with no salt as a substitute.

Once his father completed his time in the Navy, the family relocated from his birthplace of Fall River, Massachusetts to California in a 1956 Oldsmobile, and he began the third grade near Santa Barbara.

In high school home economics classes, his teacher, Mrs. Dowd, encouraged him to attend culinary school.

From mussels and clams to calamari and spiced pork, each was made to delight the palate. Chef Bob continues the tradition at The Reef with starters like the Smoked Duck Stuffed Piquillo Peppers with grated Manchego and a balsamic reduction or the Pan Tomato, made in-house with fresh tomatoes and garlic rubbed French bread.

school journey after wife Maria spotted Spanish flags on the Lion’s Bridge and declared it home. Soon thereafter, through a nationwide culinary school competition, he won the opportunity to go to school in Barcelona while staging at 5-star restaurant Gaig.

Chef Bob began his Reef career in August 2001. Today his team of eleven includes star nighttime Sous Chef Jessica Green, to whom he extends a special thank you along with Sous Chef Greg Cooper and Pastry Chef Ashley Speer. Of the loyal staff, four of the line cooks are currently attending culinary school. He says none of this would be possible without General Manager Jeremy Twicehurst and the Usina family who believed in him since the beginning.

Charity involvement is a huge element of the restaurant’s community focus. From the Datil Pepper contest, Chowder Challenge, Taste of St. Augustine, Great Chefs of St. Augustine and beyond, being a part of the St. Augustine Independent Restaurant Association, SAIRA, offers an opportunity to set the bar and make a difference.

t. Augustine is home to more than its fair share of food trucks, and you can find nearly any food that your heart desires being served a la carte and on the go. But though some local trucks have permanent residence, you’ll often have to search around to find where your favorite truck is parked for the day. So Brendan and Kelly Schneck decided to do something about that. In order to not only give food trucks a place to set down some roots but also give locals a comfortable spot to enjoy their fare, the two opened the Village Garden Food Truck Park.

The Village Garden is home to three permanent trucks as well as rotating guest trucks, so you can always find eclectic and exciting dishes to try out. You may recognize Brendan and Kelly’s names because they’re also the culinary creatives behind Big Island Bowls, which happens to be one of the park’s permanent trucks.

It also happened to be the first stop on our culinary tour of the food truck park.

Since we’re fans of fresh and delicious food,

this certainly wasn’t our first time dining with Big Island Bowls but we were still wowed by their flavors. Brendan and his team treated us to the Maui Bowl with a little twist. Instead of the traditional acai, they blended dragonfruit for the base and topped it with granola, pineapple, kiwi, and strawberry. The base is tangy and sweet, the fruit adds a burst of freshness, and the granola offers a perfect little crunch. A St. Augustine staple for sure.

Next, we made our way to Pele’s Wood Fire, where pizzas and burgers reign supreme.

The Vegas was slipped into the wood fire oven (hence the truck's name) for us, and it came out beautifully charred with that delightful hint of smokiness. The pizza starts with a garlic riccota base that's then topped with mozzarella, fontina, lemon arugula, bacon, and roasted mushrooms.

And if that weren’t enough, they drizzle just a hint of truffle honey for good measure.

We plan to become regulars.

and dinner go-to. We tried The Captree (that could, frankly, work for any of those meals) – roast beef, turkey, ham, cheddar cheese, and bacon all sandwiched between two slices of an Everything bagel. It’s classic, delicious, unpretentious, and totally filling.

And last but certainly not least, we crossed the foliage-shaded eating area to sample the fare of that week’s guest truck – What’s the Catch. And their Pork Belly Tacos did not disappoint. They start with braised, blackened pork belly that's topped with an organic spring mix and honey sriracha slaw, then garnished with cucumber and pickled onion. We hate to tell you how good it was since they’re just a guest, but we’ll tell you anyways.

Just off the beach, this park is a little culinary oasis. With something for everyone and always new dishes to try, it’s a spot you can’t miss this summer.

Like all businesses, franchise operations have specific challenges and rewards. The formulaic aspect can be a plus as far as daily operations go – but the misconception that franchise establishments are somehow not quite ‘local’ can be frustrating.

“We don’t always go by the book,” says Matt. “And we live here, work here, and contribute to our local economy. We’re raising our family here. We provide jobs here, hire from within our area, and fully participate in community life. We love living here.”

Fishing boats, franchises, and chicken school aside, for Matt and Tara, it really is all about the people. "Any success we have is because we know how to work hard and we have great employees,” says Matt. "We don't ask anyone to do anything we haven't done, and we are firm believers in giving people the tools they need to do their jobs properly." Matt handles much of the dayto-day operation of the restaurants while Tara spends most of her time behind the scenes.

or Matt Strickland, it was love at first sight. His wife, Tara, sees things just a bit differently. But, first sight or not, he won her over and true love grew! As did their family and a successful business enterprise, both based on foundations of love and respect. And fishing. There’s definitely a love of fishing.

In fact, Matt says that he and Tara got into the restaurant business to buy a fishing boat!

It was over 20 years ago that Matt and his then-business partner applied for a Zaxby's franchise, were approved for two, and were off and running. Tara was totally onboard, and laughs when she says, "We got married in April 2000 and Matt left to

go to 'chicken school' the week we got back from our honeymoon. We opened the first Zaxby's in November 2000 and the second in February 2001."

But wait. Chicken school? "It's a management program" says Matt, "but we weren't worried about the management part. Our belief system is that management is just how you treat people. If you show people respect and dignity, you can manage any situation properly. What we really needed to know were the recipes."

They must have learned their lessons well – the Stricklands currently have a total of four Zaxby’s (three in Florida and one in Georgia) and one Mellow Mushroom (here in St. Augustine), with a fifth St. Augustine Zaxby’s slated to open soon. www.STAUGUSTINESOCIAL.com

They appreciate the support they receive from the local community and feel a strong connection with their St. Johns County neighbors, through both their business and personal lives. “We love what we do here and we love being a part of this community," Tara explains. "It's our family." Matt and Tara have two children, ages 10 and 13, and are very active in their church and in their kids' school. Tara is especially passionate about supporting local organizations that focus on meeting the needs of children in St. Johns County.

What have they learned from living and working in St. Augustine? Their response is immediate – “The biggest thing we've learned is that this is a very special place full of welcoming and caring people – finding ways to give back is important to us." And when they get to have just a little fun, he fishes (and fishes!); she loves the beach. And while they don’t diss the Gators, they are both Georgia Bulldog fans.

Oh...and did they ever get that boat?

“Yes,” says Tara, “...but it was a long time coming!”

F

rom the chefs and owners behind the Cuban Bakery comes a little spot that’s home to nothing but churros, 904 Churros. And we couldn’t be happier. For those who are as yet unfamiliar (we encourage you to change that soon), churros are a Spanish fried dough pastry, and they come straight from dessert heaven. But this couple wasn't just content with plain old churros, oh no. These are specialty churros with fun and flavorful toppings, churros made for those that want the classics in a new and creative way.

Case-in-point – the S’Mores Lover. This rather large cinnamon sugar loop churro is covered in a chocolate spread and graham cracker crumbs then placed upright in a cup of ice cream where it’s then garnished with a graham cracker, chocolate kisses, and toasted marshmallows.

As with all their signature churros, you can choose your own ice cream. We went with Dutch Chocolate (which we feel was an excellent choice on our part).

This churro will transport you – in the most delicious way – to campfire stories and chilly nights under the stars even though you’re sitting in a comfortable table in a dessert shop in the middle of a city. It’s all the best parts of a s’more without all the hassle of tending to a fire, roasting your own marshmallows, and inevitably burning more than you actually eat.

The churros are expertly made and oh-sofreshly fried, and the ingredient pairings are spot on.

If you’re more of a traditionalist, you needn’t add all the accoutrements to your churros. Opt for a loop churro on its own or even one of the filled options – in Nutella, dulce de leche, or strawberry – with different sugars – matcha, cinnamon, and plain. The owners of 904 Churros have created something truly special with a dessert that’s sure to capture the hearts (but mostly stomachs) of St. Augustine.

O

ur city is blessed with an enormous range of dining options – from authentic tacos to Southern fusion to fine dining seafood and everything in between. But sometimes we get the urge to explore beyond our borders.

Whether we’re purposefully planning an adventure or just out of town for practical reasons, we get curious about the restaurants just past the county line. That, I suppose, was the impetus behind adding this new regular column to our pages – Worth the Drive, a story that pushes your geographical dining limits just a little bit.

When this column was first proposed, the immediate reaction of the publisher was to suggest Bistro Aix in the historic San Marco neighborhood of downtown Jacksonville. Bistro Aix was named after Aix-en-Provence in southern France and serves a menu of French and Mediterranean-inspired dishes. The restaurant has been open since 1999 and has a long history in the neighborhood, but the current owners, Fraser Burns and Jacques Klempf, purchased it in 2015. They kept the ingrained atmosphere and culinary inspirations intact while adding their own dose of Southern charm and hospitality.

The space is welcoming and elegant, a refined but rustic feel advanced by a blazing wood fire oven and open kitchen, original exposed brick from the 1940s, and the monastic shape of the chairs. It’s easy to be mesmerized by the quick skill of the chefs

visible in the kitchen, the rise of flames from pans, and the flash of knives on cutting boards. It draws you in with comfort and warmth and the promise of something tasty.

In slight contrast, walking through the door in the far wall labeled “Bar X” reveals a distinctly contemporary glowing white onyx bar and open wine cellar. It’s a space of understated interest, unusual but cohesive.

Bistro Aix is a favorite of the neighborhood and a dining destination for all of Jacksonville. But it isn’t just their distinguished atmosphere that draws such a large and consistent crowd. when he was seventeen. His seasonal dishes are creative and thoughtful while still maintaining the French-inspired flavors that bring people back every night.

In order to get a feel for what the whole Jacksonville population was on about culinarily-speaking, Chef Shaun sent us out a sampling of some menu favorites. The first dish was Sesame Ahi Tuna Tartare, a striking little appetizer for both its color and its garnish of three large togarashidusted crispy wontons. The lightly-seasoned Ahi tuna rests on a bed of avocado in a pool of soy dressing. Like many of the dishes here, it doesn’t need anything too flashy to be delicious – just uber-fresh ingredients and a skillful preparation.

The Seared Duck Breast is slightly more substantial, with traditional flavors brought to life by creativity. The duck is served with a fennel puree and an assortment of fava beans, baby heirloom tomatoes, and wild mushroom. The flavors are earthy and suit the rustic surroundings. It’s a dish that transports you to the heart of rural France, as if you could be dining around a French farm table (if that farm happened to be populated by highly-trained chefs).

The Braised Short Rib is rich and comfortable. Impossibly tender and delightfully aromatic, the short rib is accompanied by basil whipped potatoes (in a very herbal shade of green), served

with wild mushroom and rainbow carrots, and finished with a savory braising jus. It’s hearty but polished, elegant but distinctly pastoral.

Like the duck breast, the Braised Short Rib embodies the atmosphere of the place as it inhabits two worlds.

Dinner wouldn’t be complete without dessert and a drink. The cocktail came courtesy of the two dapper bartenders mixing drinks behind the onyx bar, and it was called the Basil Rum Smash. It started with spiced rum and ginger liqueur then gets a splash of orgeat (a syrup of almonds and rose water) and a little guava puree www.STAUGUSTINESOCIAL.com

and basil. It made a nice partner for the Chocolate Praline Torte – a black cocoa cake with praline feuilletine (thin, crispy crêpes flakes), caramel mousse, and berry coulis.

We urge you to join the throngs of Jacksonville as they flock to Bistro Aix. Its unpretentious elegance and its to-die-for menu elevate the experience and make it stand out among the rest.

helby Dixon has grown food in one capacity or another since starting Dog Day Gardens in 2010. While the goal was always to provide healthy compost and organically grown seedlings to her fellow St. Augustinians in an effort to create better home gardens, one unseasonably large lemon harvest changed the game. When Shelby and her husband moved to St. Augustine, her foundation for gardening was already sturdy. After starting her first home garden, Shelby spent time reading and researching to perfect her product, and has taken the time to work on different farms and get involved in volunteer gardening organizations to ensure she is only producing the best.

One season, Shelby stumbled upon a recipe for shrub while looking for ways to preserve her lemon harvest. For those of us not perfecting our own home gardens, shrub is a food preservation method, also known as drinking vinegars, comprised of fruit concentrate and apple cider vinegar. After perfecting a few of her newfound shrub recipes, Shelby decided to start regularly producing the new product.

Of course, being a rock star botanist and organic living enthusiast, Shelby produces all of the shrub on her own (with occasional help from friends and family members). Just a few short years from the time it all began, the shrub from Dog Day Gardens can be found in stores from Jacksonville, Orlando, and even into South Florida (and it’s made with certified organic fruits from Florida and Georgia in every batch!). Our own little slice of Dog Day that stays local to St. Augustine however, is Shelby’s gardening services, compost program, and seedlings.

Dog Day Gardens is currently on the move, and while it takes roots in its new home, Shelby is ready to continue pouring herself into her work. Plans for the move include a large teaching garden, nursery, and compost garden, and will be open for workshops.
