HIS YEAR, LIGHT UP OCALA CAME WITH AN EXTRA BIT OF SEASONAL FUN. A SKATING RINK MADE OF SYNTHETIC ICE PANELS PREMIERED THAT NIGHT, AND IS READY FOR SKATERS TO TAKE A SPIN RIGHT IN CITIZEN’S CIRCLE. The wanna-be ice panels are actually a polymer

plastic, which require no refrigeration or major maintenance except an occasional hose-down. Once they’re installed, their seams disappear. When skaters glide across, friction releases a lubricant to keep those skates moving. One 30-minute trip around the rink will cost $5, including skate rental. NEW MEMBERS NAMED The City of Ocala would like to formally welcome new council members JIM HILTY and BRENT MALEVER. These new council members will begin their service to the citizens of Ocala this month. “I have a vision of an Ocala with effective leadership, unity of purpose and the teamwork to bring it about; a community that encourages citizen involvement and investment in its people,” says Brent Malever. Malever is a retired business owner and is now representing district seat 1 on Ocala’s City Council.

BRINGING THE HARVEST HOME

On December 6 a team of local government, fire rescue and law enforcement agencies will be holding a holiday food drive on the Ocala downtown square from 7am-3pm. The food drive is the grand finale to a monthlong campaign called “BRING THE HARVEST HOME.” Citizens of Ocala/Marion County are asked to participate by donating food and toiletry items to help restock depleted food pantries and provide aid for Marion County’s most needy residents. Citizens can donate food at various drop-off locations (including public libraries and fire stations) and then come downtown on December 6 to donate as well. Disney’s Soccer Showcase is a proving ground for talented competitive soccer teams from around the nation. The Ocala Lightning will be pitted against their division’s top 30 teams in the nation—with some opponents traveling all the way from California and Colorado. The top four teams receive awards for their hard work and achievement throughout the showcase. However, for the players of the Ocala Lightning team, this event goes beyond achieving first place in this prestigious event—they’re playing for their futures. “Four years ago, we made a commitment to the parents that our goal is to give the girls an opportunity to play in college,” Dave said. “I don’t care if they play college soccer, my goal is to give the girls the opportunity to say yes or no.”

Disney’s Soccer Showcase is an annual event that draws an estimated 800 college scouts to Central Florida to watch some of the best athletes showcase their talents. These scouts can give players the opportunity to compete on a higher level. College coaches can then pave the way for players to receive scholarships to their schools. Dave understands that only a small percentage of college athletes are given athletic scholarships and says the coaches are more likely to hand out academic scholarships instead. He has been encouraging the girls to maintain high GPAs and to start taking ACT and SAT exams since the girls were 14 and 15 years old. And this strategy seems to be working for Dave’s team. Last year, four former players of the Ocala Lightning signed with colleges and have received over 180 emails from colleges. This year, the Ocala Lightning has nine high school seniors that will be looking to sign with colleges, and Disney’s Soccer Showcase is their chance to shine.

However to prepare for the showcase, Dave isn’t overloading the players with practices on top of their high school team’s practice. Instead, he is encouraging the players to research their favorite colleges and prepare letters to send to the coaches. The most important aspect of the recruitment process is to stand out, according to Dave. And that’s exactly what the Ocala Lightning plans to accomplish.

“I realized her breathing was labored, and when I went to pick her up, her belly felt like a bag of rocks,” Tracy Barth, Logan’s mother, says. “We went into Shands on a Sunday, and by Friday, they knew exactly what cancer she had.” Logan went through six rounds of chemotherapy when a CT scan revealed the damage caused by the cancer was extensive—Logan needed a liver transplant. Three weeks later, 1-year-old Logan underwent transplant surgery. The surgery went well, and just 24 hours later, Logan was up and moving around.

By collecting soda tabs for the Ronald McDonald House of Gainesville, Logan and Hunter hope to give more families this opportunity. The debilitating journey through family illness is something the Barth family has experienced firsthand. At only 10 months old, Logan was diagnosed with hepatoblastoma, a rare form of liver cancer.

PEDIATRIC CANCER FAST FACTS

Thinking it would take longer than two weeks before she could take Logan home, Tracy looked into staying at the Ronald McDonald House. She found out that construction had limited the number of families they could provide rooms for and was put on a waiting list. When they called to offer her family a room, Tracy declined and decided to camp out on a yoga mat for a couple weeks instead. “Other families needed it more than we did. There were people at Shands who traveled from Texas and Oklahoma,” Tracy said. “The Ronald McDonald House does so much for so many people.” Occasionally, Tracy and her family would take advantage

The sisters are working hard to spread the word about pediatric cancer and their soda-tab fundraiser by gaining exposure from media outlets around Florida. Their first donation of tabs, which included tabs sent from as far as Australia, weighed in at 234 pounds. But they’re by no means done helping the Ronald McDonald House and are seeking your help in collecting even more soda tabs.

Dangerous scenarios from drug dealers, parked cars and owners searching for lost dogs dotted the half-mile route to Emerald Shores Elementary at daybreak. Dinner. CREATING A MEMORABLE EVENING WITH A THEMED PARTY WRITTEN BY

I

n this season of celebration and festivities, the idea of one more “must-attend” event will probably make you cringe. The thought of hosting a group of friends for dinner? Not even remotely possible, you say. OK, you’re off the hook this month, but why not pull out your calendar and pick a date early in the new year to “do dinner” with some of your favorite people? Even better, think beyond the “typical” dinner party. Instead, let your imagination off its leash and throw a party with a theme. And no, we’re not talking the stereotypical pirate or princess kids’ party. A themed adult dinner party provides focus for planning your menu and décor. Plus, guests love the idea of getting into a specific theme, too. But won’t a themed party be more expensive than a “regular” dinner party? Not necessarily. The secret is to be inventive when planning your menu and determining decorations. For practical suggestions, I turned to local expert Cindy Dinges, a classically trained chef and owner of Decadence A La Carte who specializes in themed events. A self-proclaimed “Army brat,” Cindy spent her childhood in multiple states but graduated from high school in Gainesville and considers Florida her home. Cindy graduated from the Florida Culinary School and has been a chef since 1995. She launched Decadence A La Carte that same year and has been doing weddings, receptions, cocktail parties, showers, corporate functions, children’s events and private parties ever since. Among Cindy’s favorite assignments are destination events. Her

passport is always current so she’s ready to fly anywhere and cook once she arrives. Cindy loves the fact that her job is never the same. “It lets me be creative on a daily basis. I basically get to do anything with food, so I never get bored, which suits my ADHD self,” she laughs. When decorating for a themed party, look at what you already have with new eyes. Then fill in the gaps and shop for a few additional props. In her ongoing quest to find unusual and funky décor items for parties, Cindy frequents local shops like The White Elephant, a thrift boutique. Don’t overlook Goodwill and similar thrift stores, along with discount outlets like Big Lots and, of course, craft/hobby stores. Cindy loves papermart.com, “a great online source for any type of decorating.” When it comes to menu planning, it’s easy to go overboard but totally unnecessary. Always have a signature drink. This saves money by eliminating the need for a full bar. Then all you’ll need is beer, wine (if serving alcohol) and standard beverages, such as soda, tea, water and coffee. Unless you’re having the entire event catered, just pick a couple dishes to make yourself. You might even print out recipes for the one or two featured dishes you made so guests can take the cards home and recreate the dishes themselves. Round out the menu with items that can be ordered from a caterer and dropped off the day of the party or picked up ready-made from your local grocer or specialty foods store. For unique serving pieces, gourmet food items, wines, cheeses and more, Cindy relies on Stella’s in downtown Ocala.


Dinner Party Basics There are certain basics that apply to any dinner party, themed or not. For starters, invite an interesting mix of people. Don’t worry if everyone doesn’t know each other; they all know you, and if you like them, the odds are good they’ll like each other. Plan ahead. The further ahead you plan and the more details you consider, the easier you make things for yourself. This includes knowing how much food and beverages to buy. As a rule of thumb, plan on each guest drinking a minimum of two drinks and eating two appetizers per item. “People always run out of ice, so buy double the amount you think you’ll need," advises Cindy. “It doesn’t go bad, and it melts!” Don’t forget lighting and music; both are key components of a successful dinner party. Plan the music around your theme and don’t skimp on candles. Keep the lighting as soft as possible, as this is most flattering. You can swap out plain bulbs for colored ones to immediately change the mood. (Think red or orange bulbs to add a sultry, stimulating ambiance, but avoid blue, which tends to be calming and diminish appetite... not exactly the effect you want for a dinner event.) Factor in help. Unless you’re Super Woman (and none of us is), you can use some extra hands for the prep, serving and/or clean up afterward. If you’re having a full bar, hire a real bartender. Caterers can recommend someone; you can even ask the bartender at your favorite restaurant if he or she is available for a side job. Beyond the bartender, you may be just fine hiring the neighbor’s teenage daughter to help serve food. Favors aren’t just for kids’ birthday parties. Don’t overlook the fun of having a little takeaway goodie for your guests, giving them another reason to fondly remember the evening. Favors can be left at each place setting, but the easiest method is to have them in a decorative basket or tray in an obvious place so each guest can pick one up as they walk out the door. They don’t have to be expensive or timeconsuming, but presentation is part of the fun, so chose favors you can put together a day or two ahead of time.

Pulling It Off Here’s the good news: It’s fully possible to host a fun and memorable dinner party that will be the talk of your friends. Not only will the event be delightful for your guests, but you can—and should—have a great time at your own party. The secret is all in the details. That means strategic planning so you’re not racing around like the proverbial chicken with her head cut off at the last minute.

No matter what theme you choose for your party, if you follow these basic guidelines, your guests won’t be the only ones enjoying the evening.

1 MONTH AHEAD: FF Decide on a theme. FF Finalize your guest list. FF Send out invites at least four weeks ahead so your guests can save the date; be sure to mention the theme and attire in the invite. FF Include your email address or cell number so friends can RSVP. FF Plan your menu, focusing on one or two standout dishes, with the rest being simple items you can make ahead or, better yet, hire someone else to make. FF Decide on a signature drink, and remember, it doesn’t have to be alcoholic. FF Hire bartender/server/ kitchen help, if needed. FF Start planning your music playlist.

2 WEEKS BEFORE: FF Order flowers, if purchasing, and arrange for pickup or delivery, keeping in mind that many florists aren’t open on weekends. FF Purchase any décor and “props” you don’t have. FF If you aren’t sure how something fits in, practice by setting everything

up; edit or add pieces accordingly.

FF Prep all food items that can be made ahead.

FF Order from caterer any food items you aren’t making yourself, and arrange for pickup or drop off on the day of the event.

FF Buy extra ice.

1 WEEK BEFORE:

FF Set the table completely; you can cover it with a clean flat sheet if you’re afraid of dust, but we’re only talking 24 hours.

FF Complete your shopping list for food and beverages; buy ahead everything that doesn’t need to be purchased just before. FF Finalize music playlist.

2 DAYS BEFORE:

FF Set up your décor and props; close off that part of the house if possible to keep curious kids and pets from “rearranging” your carefully designed scene.

FF Set up the bar, if you’re having one. FF Lay out your own outfit (accessories and shoes included) so you have no last-minute decisions about what you’re wearing.

FF Make your final shopping run.

DAY OF:

FF Clean the house (or at least all the parts guests will have access to!).

FF Arrange and set out flowers.

FF Tidy up the yard, walkway, porch and parking areas.

FF Complete final food prep.

FF Make sure there’s adequate lighting for guests to walk from their vehicles to your door. FF Package up party favors, if giving, and set aside in a basket or tray.

DAY BEFORE: FF Pick up the flowers or have them delivered.

FF Make signature drink.

FF Place favors near the door for guests to take when leaving. FF Do a final walk-through of all areas guests will see; tweak any last décor items and props. FF Light the candles 30 minutes before guests arrive. »» Don’t forget to eat something healthy during the day; don’t wait until dinner!

Pick A Theme

We’ve chosen three very different themes to highlight. Use all of the suggestions and follow the theme to the letter, or just pick and choose your favorite ideas. Although you’ll find a complete menu for each theme, due to space limitations, we’re not able to include recipes

for every suggested dish. Some items can be ordered from your neighborhood grocer or specialty foods store, and the beauty of the Internet is that you can “Google” recipes online for the remaining dishes.

Décor & Prop SUGGESTIONS:

Use an old barn door or similar weathered piece of wood for a serving table; simply place atop an existing table or buffet, or use sturdy sawhorses draped with burlap as a base. Rosemary topiaries as centerpieces

This theme lends itself beautifully to either indoor or outdoor (hello winter in Florida!) dining, so go with whichever works best for you. Guest attire can be cocktail or more casual, depending on whether you’re dining inside or on the patio.

Pound large boneless chicken breast until flattened. Lightly dust with flour. Sauté in pan with olive oil and butter until done and meat contains no pink. Remove chicken from pan; add tomatoes and spinach and sauté 5 minutes. Add 1 cup of white wine; cook until reduced. Add 1 cup chicken stock; cook until reduced. Add 1 tablespoon butter to thicken tomato and spinach sauce. Salt and pepper to taste. Arrange cooked chicken on each plate, and pour sauce over top. Garnish with thin strips of basil.

Décor & Prop SUGGESTIONS:

Go all out with energetic colors like tangerine and fuchsia, which happen to look fabulous together. Buy several yards of fabric in each color, and use them as tablecloths and drapes for the serving buffet. Buy an array of colorful, inexpensive boas. Greet each guest with a glass of the signature drink and her own boa. Find an inexpensive plaster bust at a thrift store or garage sale, spray paint it tangerine or fuchsia and include it as a prop in the serving area. Menu SIGNATURE DRINK: PINK STILETTO

Combine in a shaker: 1 jigger rum, a splash grenadine, 1 small can pineapple juice and a squeeze from a halved lime. Serve in a martini glass, and garnish with a cherry.

APPETIZERS: Cheese straws shaped like high-heeled shoes Phyllo cups with cilantro chicken topped with mango chutney Lemon & papaya sushi

MAIN DISH: Citrus Carpaccio with grilled salmon topped with jicamamango slaw and a citrus dressing drizzle

Scatter confetti “diamonds” and individually wrapped pieces of quality chocolate down the length of the table between vases. White dinnerware Tangerine or fuchsia colored napkins

Music An energetic mix of “empowered women” songs (everything from Aretha Franklin’s “R-E-S-P-E-C-T” to Lady Gaga’s “The Edge of Glory” with some great Indie music thrown in for a good balance). For additional fun, you might even want to rent a karaoke machine so your guests can belt out the tunes themselves.

Purchase a large shoulder or picnic ham. Make glaze by combining 3 cups bourbon, juice of three oranges (zest them first), 1 tablespoon dark rum, 2 cups brown sugar and a pinch of cloves. Cook over low heat until mixtures reduces down and thickens. Brush ham with glaze, and cover with foil. Cook at 325°F for 1 hour. Then, uncover ham and brush with glaze every 15 minutes, and continue cooking for another 45 minutes, or until done, to create thick, crusty, glazed coating. Garnish with orange zest before serving.

IF YOU BUILD IT... We’ve gathered enough tips and tricks to build an entire gingerbread neighborhood, so the sooner the baking begins, the better. First things first, it’s time to whip up some gingerbread construction materials. Here’s a recipe that will keep any cookie abode standing ‘til the New Year and one for the icing to hold it all together.

Classic Gingerbread Makes about 3 lbs dough 5 cups bread flour 2 tbsp ground cinnamon 1 tbsp ground cloves 1 tbsp ground ginger 1¼ tsp baking soda

¼ 1 ¾ ½ ¼

tsp salt cup plus 2 tbsp granulated sugar cup light corn syrup cup (1 stick) plus 7 tbsp margarine cup plus 2 tbsp whole milk

Combine bread flour, spices, baking soda and salt in a large bowl. Set aside. Combine sugar, corn syrup, margarine, and milk in a large stainless steel or coated saucepan. Place pan over medium to medium-high heat. Stir until butter is completely melted and the mixture is the consistency of thick syrup. Remove pan from heat, and add half of reserved dry ingredients. Mix until smooth. Add remaining dry ingredients, and mix until flour is incorporated. Cover surface of dough with plastic wrap, and cool to room temperature. Flatten dough into a disk. Wrap tightly in plastic, and refrigerate several hours or until firm enough to roll without sticking. Position a rack in the center of the oven, and preheat the oven to 375°F. Line cookie sheets with parchment paper or baking mats, and set aside. Roll dough about 3⁄16-inch thick for sturdy cutouts but no less than 1⁄8-inch thick. Baking time will vary with cookie size and thickness. Bake until cookies are firm to the touch and lightly browned around the edges. For large-scale support pieces, it is especially important to bake cookies all the way through. Let cookies cool on cookie sheets before transferring to wire racks. Cool completely before frosting. So whose bright idea was it to build house replicas and tiny people out of baked goods? Gingerbread itself dates back to ancient Greeks and Egyptians, and crusaders brought it back to Europe with them in the 11th century, where it became immensely popular in Germany. The first gingerbread houses were erected in 1812 after the Brothers Grimm published a fairytale collection, which included “Hansel and Gretel.” When German settlers came to America, they brought their favorite tradition of building “lebkuchenhaeusle” with them, and it has continued here ever since. Deck The Table

This edible wreath brings seasonal foliage right to the table. Break from the sugar rush with this savory appetizer. It’s an easy food craft for kids to prepare, and they’ll be proud to tell the family it was all them. All it takes are some fresh rosemary sprigs. The toppings are dealer’s choice, but an even mix of olives, cherry tomatoes and fresh mozzarella balls incorporates the colors of the season. Interactive Crafting At this year’s family get-together, set up a crafting and snacking station at a side table to keep kids entertained. A few of the big kids may wander over to check it out, too once they see it’s loaded with goodies. But hey, there won’t be much to clean up if all the supplies get eaten. Serve up some cold milk in vintage milk bottles for a chic touch. This way kids will have something healthy to sip while they make and eat all their sweets. Dishing out supplies in glass jars takes the look up another level. Make the candy interactive by using ring-shaped sweets so little ones can run ribbons through the middle. Invest in candy ribbon and the real stuff so they can make their own candy ornaments and even a garland to string up after dinner. Chocolate-covered pretzels, popcorn, cranberries, cereal and peach rings are all great options. Encourage kids’ spirit of giving by supplying string to make candy jewelry to bestow on loved ones later on. Who doesn’t love a good Lifesaver necklace? stringing up popcorn What’s more traditional than homemade popcorn garlands hanging all over the house? Here’s a quick how-to to get every hall decked to the nines. Pop a large bowl full of popcorn. For extra no-crumble power, let it sit out for a day and get stale. Without cutting it from the spool, thread a needle and begin threading popcorn pieces onto the string. A Pop Of Sweetness

Cake pops are so easy to customize and are all the rage this season. Don’t leave it to the bakeries and domestic goddesses to bake up those yummy cake balls. Check out this recipe to create any flavor pops using a simple box mix as the base.

Basic Cake Balls Makes about 4 dozen cake balls 1 box of cake mix 9x13 inch cake pan 1 Large mixing bowl 1 16-oz container ready- made frosting Large metal spoon Wax paper 2 baking sheets

Plastic wrap 32 oz (2 pounds) candy coating Deep, microwave-safe plastic bowl Toothpicks Resealable plastic bag or squeeze bottle (optional)

Bake cake as directed on the box, using a 9x13-inch cake pan. Let cool completely. Once cake is cooled, slice into 4 equal sections. Remove a section from the pan, break in half and rub the two pieces together over large bowl. Crumble any large pieces that fall off. Repeat with each section until the entire cake is crumbled into a fine texture. Add threequarters of the container of frosting. Mix into crumbled cake, using the back of a large metal spoon, until thoroughly combined. Do not use the entire container, as the cake balls will be too moist. Roll into 1 1/2-inch balls by hand, and place them on baking sheet lined with wax paper. Cover with plastic wrap, and chill for several hours in the refrigerator or place in the freezer for about 15 minutes. Do not decorate until firm.

TASTY TIP: If there is candy coating left over, pour it into a squeeze bottle or resealable plastic bag and snip off the corner. Drizzle even more coating over the tops in a zigzag motion to add an extra touch of texture. Use a mini ice cream scoop to get cake balls that are uniform in size. While That’s Baking…

Cookie cutters are cute, but if they’re only for a one-time use, get them out of the kitchen junk drawer by turning them into a wreath. This is a food craft unlike the rest and the perfect way to kill time waiting for the cookies to finish baking. All it takes is some metal cookie cutters, thin wire, spray paint and a pretty ribbon. Take those cookie cutters outside and spray ‘em down in any seasonal color. Once dry, join them together in a circle using the wire. Attach the ribbon where it looks best and voila! This new wreath is perfect for the front door—but even better for the oven door. Source: kraftrecipes.com

While cake balls chill in the refrigerator, melt white candy coating in a microwavesafe bowl on medium power for 30 seconds at a time, stirring with a spoon in between. Coating should be about 3 inches deep for easy dipping. A double boiler works as well. When ready to dip, remove a few cake balls at a time from the refrigerator, keeping the rest chilled. One at a time, dip about 1/2 inch of the tip of a lollipop stick into melted candy coating, and insert stick straight into the bottom of a snowman, pushing no more than halfway through. Dip cake pop into melted coating and tap off excess by holding pop over bowl in one hand and tapping wrist gently with other hand. Rotate stick so coating doesn’t build up on one side. While coating is still wet, attach a sunflower seed in position for a nose and 2 chocolate jimmies in position for arms. Hold each in place for a few seconds until coating sets, and place in Styrofoam block to dry. Repeat until all snowmen have noses and arms. When pops are dry, use a toothpick to dot a small amount of melted candy coating in position for buttons, and attach 3 blue confetti sprinkles to each snowman. Draw on eyes and smiles with an edible-ink pen and let dry completely in the Styrofoam block. Pour remaining melted coating into small squeeze bottle. Squeeze a small amount onto the top of a snowman’s head. Attach 1 chocolate cookie. Squeeze another small amount of coating in the center opening of the cookie. Push 1 chocolate chip, pointed side down, into the center. The melted candy coating will be forced up the side, creating a white rim for the hat. Place in the Styrofoam block to dry completely. TASTY TIP: If snowmen aren’t the right style, some adorable alternatives would be to paint those pops like peppermints. Rolling them in coarse sugar or rock candy would create bite-size snowballs, or for the naughty snackers, dress up some cake pops like lumps of coal.

In RA, the immune system mistakenly attacks the joints and the membrane lining the joints, called the synovium. This causes an inflammatory process that eventually destroys the joint lining and the cartilage, leading to bones painfully rubbing against each other. The joint inflammation causes warmth, swelling, redness and pain. RA can develop quickly or gradually over years; some people have symptoms for a short time and then go into remission. ADDRESSING ADDICTION Sugar activates the brain’s reward center and causes the release of neurochemicals such as feel-good dopamine and pain-killing beta-endorphins. It also makes it easier for the amino acid tryptophan to convert to serotonin, which has a calming effect on us. The problem starts when these neurochemicals dissipate and our brains get a little agitated, so we eat more sugar to get another fix. Bingo! And the addictive cycle begins. “There are three main essential qualities of addiction,” says Shriner. “One, there is a problem with tolerance, meaning the more we use, the more we want just to get the same effect. Two, there are withdrawal issues in the brain and body when we are unable to get the substance of desire. And three, people continue to participate despite the knowledge of dangerous results. Sugar addiction meets all three.” Shriner also adds, “And brain images of someone who is morbidly obese look very similar to those of someone with a drug or alcohol addiction.”

Read labels on everything you buy and you’ll likely be amazed how many products have sugar/sugars in some form added to them. Sugar content on product labels is usually in grams per serving, so remember 4 grams equal 1 teaspoon when you’re trying to regulate your sugar intake.

FD A FA CTS O N S U G A R L A B ELI N G SUGAR-FREE Means the food contains less than 0.5 grams (about 1/8 teaspoon) of sugar per serving. This definition also applies to “no sugar,” “zero sugar” and “sugarless.”

SUGAR VS. SUGARS: According to the U.S. Food and Drug Administration (FDA), the term “sugar” specifically means sucrose (table sugar) that is half glucose and half fructose. “Sugars” includes all sugars, including lactose in milk, fructose in fruit, as well as honey and corn syrups.

LACTOSE LINK: Our predisposition to sweet stuff may be thanks to lactose, the sugar found in breast milk and most infant formulas. FRUCTOSE VS. HIGH FRUCTOSE CORN SYRUP: Found in small amounts in fruits and vegetables, fructose is not a health problem in this natural state, as the fruit/ veggie fiber helps blunt the sugar effect on the body. But high-fructose corn syrup (HFCS), which is man-made and consists of 55 percent fructose and 45 percent glucose, is a cause for concern. The red flag is in the term “high-fructose.” While glucose in sugar is metabolized throughout the body, fructose is processed in the liver. Too much fructose in your diet causes your liver to produce fats called triglycerides, which are then pushed out into your bloodstream. This leads to high blood pressure, obesity and type 2 diabetes. “High-fructose corn syrup consumed in large quantities, and Americans do just that,” says Shriner, “has nothing but severe negative effects on the body.”

LEARN THE LABELS

These are a form of sugar also called polyols that are poorly digested so they provide about half the calories and have a reduced impact on blood sugar levels than regular sugars. But this doesn’t mean they get a free pass, so restrict their intake as much as possible. Look for the terms xylitol, mannitol, isomalt, sorbitol and maltitol.

GOOD GLUCOSE: Made up of sucrose and fructose, glucose

is one of the most abundant sugars in foods, mainly plants. It is also present in our blood, hence the term “blood sugar.” Our bodies, particularly our brains and muscle cells, need glucose to function optimally. For good health, our bodies circulate about two teaspoons of glucose through our bloodstream at any given time. When we ingest sugar-containing foods that raise the glucose (blood sugar) levels in our body, our pancreas releases insulin to regulate that level. If we consistently eat too much sugar, the pancreas can’t handle the load and our blood-sugar levels become dangerously elevated, leading to type 2 diabetes, heart disease, cancer and immune system disorders.

NOT-SO-SIMPLE SUGARS: White bread, white rice, white pasta and white potatoes are problematic. They are quickly metabolized and digested as sugar, so your body responds just as it would if you ate a candy bar. Ditto for alcohol. AXE THE ARTIFICIAL SWEETENERS: Their selling point is little or no calories, but artificial sweeteners are designed to stimulate the sweet receptors in the mouth and are up to 600 times sweeter than sugar itself! In a recent study, neuroscientists at Yale’s School of Medicine found that artificial sweeteners did not trick the brain into responding to them like real sugar. Instead, they caused the brain to intensely crave real sugar. So you may save a few calories initially, but you’ll crave sugar even more and end up eating more calories in the end. It’s a no-win situation.

AN ESSENTIAL MEDICINE Peppermint essential oil is a potent cure for a wide range of ailments. When the hustle and bustle of the winter season becomes overwhelming, keep some on hand. A few drops are an age-old remedy for indigestion, headaches, stress, congestion and sore muscles. Apply it topically in a gentle massage, or add it to a warm bath for a relaxing soak.

THE SCENT OF THE SEASON If the overwhelming amount of cooking is leaving your home smelling like the back of a restaurant kitchen, incorporate the sweet, minty smell of peppermint. A few drops of peppermint oil added to a diffuser will quickly have your home smelling seasonally fresh. Don’t have a diffuser? Soak a few cotton balls in peppermint oil for a similar affect. You can also add a drop or two to your garbage can to mask any odors.

A TEMPTING TEA Although peppermint hot cocoa is certainly all the rage this month, a tea made from fresh peppermint leaves is not only far healthier from a calorie perspective, but comes with the added bonus of aiding with your nighttime Zs. A cup of peppermint tea before you hit the hay can ease your stress, relax your muscles and prepare you for a good night’s rest. To brew up a batch, simply boil two tablespoons of peppermint leaves in 8 to 10 ounces of water. Let steep for 20 minutes, strain and enjoy.

AN ADDED HINT OF MINT Want to add a hint of mint to some of your favorite treats? Try some of these ideas that will spruce up some of your go-to recipes. »» Add crushed candy cane pieces to your sugar cookie batter for a minty twist to this classic cookie. »» Layer peppermint patties in your brownie mix before you bake for a minty surprise in each bite. »» Create a minty milkshake masterpiece by blending crushed mint candies with two scoops of vanilla ice cream and a cup of milk. You can also use peppermint patties for a chocolate twist. »» Peppermint bark is an easyto-make, must-have winter treat. Simply heat up your favorite chocolate (milk, white, dark or all!) until fully melted and add chopped mint candy pieces. Spread over a cookie sheet and refrigerate until firm. You can also add pretzel or cookie bits for an added crunch.

Calling all area princesses! The annual SUGAR PLUM PRINCESS TEA PARTY will take place at the Ocala Civic Theatre. Little ladies and knightly lads are asked to don their favorite princess dresses or nutcracker finery and enjoy tea with the cast of The Nutcracker. An animated reading will acquaint the young guests with the story of Clara while they enjoy a sweet treat. N CONJUNCTION WITH THE CITY OF OCALA, THE JR. MAGIC BASKETBALL PROGRAM WILL SOON START ITS 15TH SEASON AND IS LOOKING FOR YOUTH PLAYERS WHO ARE EAGER TO SHOOT HOOPS AND LEARN ABOUT THE GAME. THE PROGRAM’S SUPERVISOR, KELVIN RICHARDSON, IS HERE TO GIVE US THE 411 ON THEIR UPCOMING SEASON.

What is the Jr. Magic Basketball Program? It’s a part of the Orlando Magic basketball program; children will learn the fundamentals of basketball. We have also included a four-day skills camp that is implemented by local high school coaches, their players and the College of Central Florida’s men’s basketball team. This year, we will be taking two teams to play during halftime at the women’s Gators basketball game on January 19 against the Georgia Bulldogs.

When is registration and who can sign up? Boys and girls ages 5-15 can register. For $55, each participant will get a reversible Magic jersey and a ticket to a Magic basketball game at the end of the season. Parents and chaperones may also attend the Magic game for $10 a ticket. Registration is open until January 13. Participants may register in person at the E. D.

How long is the season? The season lasts six weeks. The skills camp starts January 6, and league play will start on January 13. The season will last until February 18. The teams will play twice a week against other teams in the program in their perspective age groups. The City of Ocala recreation department requires that the team practices at least once a week. The practices are scheduled by each team’s coach. Games will be played at the E. D. Croskey Recreation Center.

What do you want participants to gain from this program? We want the youth to, first and foremost, have fun and meet new friends that will create lifelong relationships. We also want them to learn skills that can be beneficial during the course of their lifetime.
