t’s been much too hot to burn yard waste or gather around a bonfire, but you’re out of luck now if you’re thinking of going that route: both Woolwich and Wellesley townships have instituted a burn ban due to the prolonged dry spell.

“It’s just too dry right now – we’re eliminating risks,” said Woolwich deputy fire chief Dale Martin following Tuesday’s decision to ban open burns. “We’ve put a ban on until we get a good rain, wet things up and get them green again.”

It’s hot, and it’s official as the dog days roll into town heat wave has enveloped most of central Canada and residents of Woolwich and Wellesley Townships are in the middle of it.

Environment Canada defines a heat wave as three or more consecutive days in which the temperature is 32 degrees Celsius or more.

As of July 22 parts of Saskatchewan to the Maritimes will have seen seven days where the mercury reached over 32 degrees.

Burn ban: No open fires; facilities can be shelters

Woolwich Memorial Centre, open from 6:30 a.m. until midnight, is an ideal spot given its recreational options, said township clerk Christine Broughton. The administration building on Church Street, as well as public places such as community centres and libraries are also recommended choices.

In a statement, Mayor Todd Cowan urged residents “to take precautions to keep themselves and their property safe over the next week by restricting burning, staying indoors and keeping hydrated.”

Region of Waterloo Public Health has issued warnings, pointing to Environment Canada humidex and smog advisories in the area. The high heat and smog levels forecast for this week can be dangerous.

The conditions pose a greater risk to children and seniors, as well as those with chronic heart and lung diseases. Pets are also at increased risk, the department notes.

The move helps protect against fires accidently spreading, setting off a natural vegetation, which is tinder dry at this point.

So far, neither township has had issues with grassfires, but both are taking a cautious approach.

Something as simple as the sun shining through a piece of glass can set off a brushfire at this point, Martin noted.

As well as the potential fire risk, open fires at this point would contribute to the levels of smog and other air-quality issues, he added.

The ban is in line with many other municipalities, including those in the region, that are taking precautions.

Likewise, the officials are warning residents to take care while outdoors, pointing to the potential health risks from the heat, humidity and smog.

In Woolwich, residents are urged to seek out airconditioned locations. The

Too many cats, not enough homes

alking into Creature Comfort Pet Emporium in St. Jacobs you are greeted with inquisitive looks and a few cocked heads, but it’s not from owner Chris Schaefer or her staff, it’s from the four rescue kittens that wander the store.

There is a cat overpopulation crisis in the region and Schaefer is trying to educate the public about a different method of adopting cats rather than going to a local pet store.

The kittens are available for adoption at the store through the non-profit cat rescue organization Cats Anonymous, based in Orton, Ontario.

“There is no shelter in Woolwich Township so the services for strays and homeless cats are nonexistent here. We want people to be aware that we have a venue that holds cats and that people can see them and hopefully help them,” said Schaefer. “We have always been heavily involved in rescue; fostering cats is very simple.”

Each adoptable kitten is spay and neutered, vaccinated, de-wormed, treated for fleas and ear mites and are tested for leukemia and FIV, the feline HIV. The store’s mission is “working together to provide creature comfort for pets in need.” Lately, they’ve adopted the saying “it takes a community to raise a child” and expanded

it to include the protection and shelter of the animals within.

“A lot of people don’t even realize that rescue exists so we are trying to increase awareness that there is another option out there,” she said. “We try to support rescue and encourage people to take that approach when it comes to finding a new family pet. I always say, ‘please adopt, don’t shop.’”

Shelters in the region are currently overwhelmed with cats. The Kitchener Waterloo Humane Society (KWHS) is over capacity by 40 adult cats at a centre that can normally house 119 cats at anytime.

Every year the KWHS is besieged with cats in the spring and summer, as that is the typical mating season for the animals.

People from all over the region find stray cats on

their property that have found a safe and warm place in a shed or near the house to have their litter and bring the strays to the humane society.

“We really need people to spay and neuter their cats.

Even if they have an indoor cat, if they get out and it’s prime mating season, it doesn’t take long to mate,” said Amy Gruber, community relations manager at the KWHS. “This is why we have a lot of feral kittens and stray cats.”

KWHS has set up a new summer program as a way to deal with the overpopulation crisis by allowing pet owners to adopt any cat for the regular adoption fees and have the choice to take home a second adult cat for $10.

“Adult cats don’t find homes as easily as kittens.

Kittens have that cuteness to them, they jump and play, they market themselves better,” said Gruber.

“If you are adopting a kitten, an adult cat can show it the ropes, show them how to be a cat and at the same time give the kitten a play-

mate.”

The adult cats at the shelter are not 18-year-old cats – in most cases they are only a year old and are considered by the KWHS to be tame toddlers that are still exploring and curious like kittens, but also take down time and know how to use a litter box.

“We really want to be able to give them great forever homes,” said Gruber.

People that are unable to adopt or do not want a cat but still want to help can do so by fostering, volunteering or donating to the KWHS at www.kwhumane.com.

Centre Wellington Township is $584,665 richer this week thanks to the latest installment of its share of revenues from slot machines at the Grand River Raceway. The payment represents five per cent of the revenues generated in the first quarter (April to June). To date, the township has received more than $14.5 million in non-tax gaming revenue since the Slots at Grand River Raceway opened on Dec. 4, 2003.

Since that time, it has attracted more than 4.6 million visitors.

The Ontario Lottery and Gaming Corporation issued more than $18.4 million in revenue last quarter to 23 host communities of slots at racetracks and charity casinos. To date, those communities have collected $778.1 million.

The tracks themselves receive 10 per cent of the gross slots revenue, with another 10 per cent going to the horseracing industry.

> Small extension for TV amnesty Township residents will get a slightly-extended amnesty period for disposing of old television sets with their curbside waste. The ban that went into effect July 1 with a one-month grace period will take a few more weeks to move through the rural areas.

The large item pickup dates in August will be township residents’ last chance to dispose of TVs with garbage, the Region of Waterloo announced last week. For North Dumfries, that’s Aug. 10-12; Aug. 8-9 in Wellesley; Aug. 1-5 in Wilmot and Aug. 15-19 in Woolwich.

Following these dates, TVs will no longer be accepted curbside with garbage. TVs (and all other e-waste) can be recycled for free at a number of drop-off locations throughout the region. More information about those spots can be found at www.recycleyourelectronics.ca.

Call from auction leads to pair of charges P

olice received a call on the morning of July 16 from the Mennonite school auction, where a Cambridge man was being held after he purchased items from the auction but did not pay for them.

The staff at the auction recognized the man from last year’s event where he had done the same thing.

Police charged the man with ‘possession of stolen property’ and ‘impersonation with intent to commit a criminal offence.’

The hot, humid weather is part of a large dome of air that is covering central North America.

“We are in the middle of the dog days of summer,” said David Phillips Environment Canada senior climatologist.

“We are going to peak on Thursday (July 21) with the temperature reaching 36 degrees and the weekend will see a drop of four or five degrees, still leaving residents in the region with temperatures above 30 degrees.”

With the humidex, the temperature may have felt like the 40s in many places across Ontario.

Phillips reminds people that heat, humidity and smog can have the potential to cause serious health issues especially to infants and the elderly.

“An infant does not have the sweat glands of an adult and should be watched closely during a heat wave,” said Phillips. “Seniors with poor

circulation should also be watched as well as members of the community with mental health issues as this heat can be very disorienting.”

Phillips advises people to limit their exposure to heat, drink lots of water, find a cool space and seek medical attention if they become dizzy or short of breath.

“We just have to use common sense. This isn’t the first heat wave of the summer: we had a few hot days back in June, and everyone should be conditioned to the weather,” said Phillips. “Everyone should just take it easy, put off doing any strenuous chores and avoid big meals and drinking caffeine-related liquids.”

The human body can lose up to a litre of water an hour during severe heat conditions, he noted.

Phillips said many people are suffering from heat rage and may have a short fuse during extended heat waves; he encourages everyone to be respectfully of one another and give each other space.

Parents looking for relief for their children

can now visit the Wellesley splash park, which opened on July 15. The park operates from 10 a.m. until 8 p.m. daily.

The official opening will be in mid-August when the parks fence and concrete pathways have been completed.

“It’s a great place to your kids, we are seeing a lot of smiling faces and both kids and parents are having a good time at the park,” said Jennifer Kay-Summer, the splash park coordinator and local veterinarian.

Pets are vulnerable too, she added of the heat wave. She suggests that owners give pets plenty of water and shade while the heat lasts.

“Do not take your pets out in the car right now, especially if you are going to the store. Even with the windows rolled down a pet can suffer from heat stroke,” said Kays-Summer. “If that happens, take them to your vet as soon as possible.”

hese days it’s hard to even buy a cup of coffee for a buck.

But next Thursday, residents of Woolwich will have the opportunity to turn one dollar into a world of change during the Woolwich Youth Centre’s ‘Pay to Play’ night at the Woolwich Memorial Centre.

For just one dollar, members of the community will be able to play two of the activities at the youth centre with all the proceeds going towards the Dollars for Dreams Campaign and the Save the Children Foundation.

“It’s a summer-long campaign and it runs along the idea that

every dollar donation that Save the Children receives, they can sponsor a child for the day and feed them and clothe them and provide healthcare,” said Dollars for Dreams president Kelly Lovell, who has also been actively involved with the KW Volunteer Action Centre and decided to develop the program to mobilize youth in the community for a good cause.

The activities at the youth centre include computers with internet access, a pool table, Wii Rockband, PlayStation, X-Box Kinect, board games, a basketball net and other sports activities. Beverages and chocolate bars will also be available for purchase.

Doing her part to tackle poverty in the developing world Wellesley woman joins the staff of Mennonite Economic Development Associates

ellesley-resident Marion Good has been named the provincial regional director of resource development for Mennonite Economic Development Associates.

Formed in 1954, MEDA has worked to design and implementing marketdriven economic development programs to help improve the livelihoods of millions of people living in poverty around the world. Good’s primary responsibility will be to spread the word of MEDA’s mission and to engage in fundraising initiatives for various projects in developing and impoverished nations.

“The part that really, really inspires me is how they make a difference in people’s lives and especially the programs that they have the help women in the countries that are really suffering through war or poverty,” said Good of her involvement with the organization.

“Women are the anchor of the home and that means that their children can have better food and better health and better education – it makes such a difference.”

She has been directly involved with MEDA for a dozen years and has served on the board of directors, making her the ideal candidate for the job, said Marlin Hershey, director of resource development for MEDA. “She knows the organization so well that she can tell the story and that’s all part of what fundraising is all about, and she tells the MEDA story well with much passion and conviction,” said Hershey.

The organization operates under the slogan of ‘business solutions for poverty’ and is present in more than 45 countries worldwide, including Nicaragua, Ukraine, Morocco and Afghanistan.

“The goal and our bottom line is that those projects have sustainability in the end. They are typically three to five years in length, and our goal is that they are sustainable when we leave,” said Hershey, adding that projects range from growing grapes and tomatoes in Ukraine to establishing small garden plots

Much of the work is done via micro-loans that small businesses can apply for and then re-pay when they have the means. Hershey said that MEDA has a 99 per cent repayment success rate.

“The whole idea of bringing them up to where they are able to get an education for their children, and

they’re able to be sustainable,” he said.

Good started her new position on July 11 and is still learning the ropes of the job, but is optimistic about the future and looks forward to the new challenges that await her.

“I am just thrilled to be working for this organization, it’s a wonderfully powerful organization that has been around for almost 58 years.”

With the dog days of summer comes the smog

S

o, hot enough for you? That question might just be enough to set some people off this week, as the area baked in a heat wave. Beyond the bottled water, ice cream and surging electricity bills, the hot, hazy and humid weather comes at a price for our health.

The Canadian Medical Association estimates more than 20,000 Canadians will die prematurely from the effects of air pollution. While most of those deaths will be due to chronic exposure over a number of years, almost 3,000 will be the result of acute, short-term exposure.

A CMA report entitled “No Breathing Room: National Illness Costs of Air Pollution,” shows the effects of poor air quality based on the concentrations of smog-related pollutants, ozone and particulate matter. Specific findings include: by 2031, almost 90,000 Canadians

will have died from the acute shortterm effects of air pollution; the number of deaths, due to long-term exposure, will be more than 700,000; 80 per cent of those who die due to air pollution will be over age 65; Ontario and Quebec residents are the worst hit Canadians, with 70 per cent of the premature deaths occurring in Central Canada, even though these two provinces comprise only 62 per cent of Canada’s population.

There’s also a financial cost, estimated in 2008 at more than $8 billion. By 2031, the cost of air pollution will have accumulated to more than $250 billion.

Smog is a complex mixture of pollutants, mainly ground-level ozone and fine particulate matter.

Ground-level ozone is different from the stratospheric ozone layer, which protects us from the sun’s harmful ultraviolet rays. At

ground-level, ozone gas is toxic to the respiratory system, and is the pollutant that has historically triggered nearly all of the smog alerts in Ontario. Fine particulate matter consists of tiny specks of liquid or solid particles that are suspended in the air, and contain soot and acids, which can lodge deep in our lungs.

The main sources of the manmade chemicals that make up smog are automobile emissions, coalburning power plants and heavy industries. The toxins may be local, or from as far way as the U.S.: prevailing winds often carry pollutants from the Ohio valley up into the province.

Since polluted air masses cover large areas, and usually move slowly, the smog problem is not only confined to cities and industrial centres. That’s why the haze of the worst smog days can be seen out in

Ironically, the air quality is worst just as we want to be outside. We’re encouraged to be active – walking, hiking and cycling – but also warned about the increased stress on our lungs due to the pollutants.

A quick jump on a bike in the thick of traffic, even on the best of days, will let you know why that is.

The heat and exhaust pouring out of cars, buses and trucks can be stifling. A bout of that makes you appreciate the wide open spaces and sparse traffic to be found on township roads. But with the kind of weather that enveloped us this week, we’re being warned against all kinds of strenuous activities, and advised to stay indoors as much as possible.

Not the ideal summer lifestyle, but a reminder of what we’ve done to the environment.

The end of the American adventure in space

T

he sun always shines in space, so it was no surprise when Sir Paul McCartney called the crew of Atlantis, the last space shuttle, on July15 and sang “Good Day Sunshine” to them.

Later in the day President Barack Obama called and told the astronauts that their mission “ushers in an exciting new era to push the frontiers of space exploration and human spaceflight.” Pity it was all happyface lies.

The last shuttle mission actually ushers in an era when the only hope of getting into space for the few remaining American astronauts will be to hitch a ride on a Russian or Chinese rocket. Most of them will have to find jobs elsewhere. And however brightly the sun shines, the day when the United States finally gives up on manned space flight is not a good day.

U.S. rockets will still put satellites into orbit. The older ones were built by the military or the National Aeronautics and Space Administration (NASA); the newer models will be built by private companies that claim they can boost cargo into space at a much cheaper price. But they won’t be able to put a human being in orbit for a very long time, if ever.

This is not to say that the U.S. should have kept the shuttles going indefinitely. They weren’t safe: two of the four original shuttles were lost, with 14 crew, in a total of only 135 trips. They were not cost-effective either: they each flew on average only once a year during their 30 years of service.

NASA had perfectly sensible plans to replace the shuttles. In 2004, former president George W Bush approved an ambitious NASA plan

International Affairs GWYNNE DYER to build a new generation of powerful rockets to deliver people and materials into near-Earth orbit more cheaply, but also to put a permanent manned base on the moon by 2020.

NASA calculated that the “Constellation” program would cost about $8 billion a year until 2020 (the U.S. defence budget burns through that much every five days). Maybe the cost would have risen considerably over time, but that’s not such a big deal: creating big, new technology always takes longer and costs more.

When President Obama cancelled the “Constellation” project in 2010, he talked about doing things in a “smarter way,” and how private enterprise would develop “space taxis” that would put people into orbit more cheaply. In reality, however, he was ending federal government support for manned space flight – though he did promise to invest a little more than a billion dollars a year in those “clever” private companies.

That is not serious money: the U.S. defence budget gets through that much every 12 hours. Lacking federal financial support, the clever companies will concentrate on doing things that make a profit. Putting people into space does not make a profit.

Not in the short run, anyway, and the bean-counters are notoriously uninterested in the very long run.

The space entrepreneurs – Virgin Galactic, Northrop Grumman, In-

terorbital Services, XCOR, Orbital Sciences Corp. and all their rivals – make well-honed pitches about how NASA was a bloated bureaucracy, and how private enterprise will do the same jobs more cheaply and more safely. Which may be true for launching communications satellites and the like, but is certainly not true for manned space flight and deep space exploration.

When Christopher Columbus had this idea for a new way to reach Asia, he did not talk to some Spanish fishermen about scaling up their voyages (making a profit at each stage) until eventually they would cross the entire ocean. He went to the Spanish court and got state support for his venture. Almost all of the early European voyages of discovery had state backing, because the profits were not going to flow for quite a while.

The analogy is less than perfect, but it is relevant. Building a permanent space station, establishing a human base on the moon, designing and funding the first voyage to Mars – such things are not going to be undertaken by clever companies operating out of old hangars at the Mojave Air and Space Port in the California desert. They haven’t the resources, and it makes no commercial sense.

Does it make sense at all? That depends on whether you share the vision of the human future that Arthur C. Clarke brought to his collaboration with Stanley Kubrick in the film “2001: A Space Odyssey.” Back in 1968, most people assumed that that was indeed the future. It is much behind schedule, but many people still think it should be the future: that

It’s in opposition that politicians occasionally roll out a good idea I

t’s common practice for politicians to say one thing in opposition and to do another when in power – often just the opposite.

Those inclined to give them the benefit of the doubt argue politicians meant to follow through on their promises, only to be stymied by the realities of governing. Others take it as proof politicians lie as a matter of course.

There’s probably some middle ground. Politicians do tell us what they think we want to hear: lying outright or justifying it by rationalizing that the issue is too complicated for the public to understand. Often, however, it’s a matter of trying to sell too many things to an increasingly fragmented audience. Policies such as boutique tax cuts and incentives, for instance, are aimed at cultivating specific votes. That’s just too much to follow up on when in government.

We know we’re being bought – or at least bribed – with our own money, but we keep falling for it.

And politicians keep throwing ideas out there, seeing what will stick. It’s time, however, for politicians to scale back, focusing on more pressing issues.

Take, for instance, the example of the federal Liberals. Rebuked by voters in May, the party is struggling to redefine itself. A strippeddown, nation-friendly platform might be in order. Some longerterm thinking, rather than simply eyeing the next election, is called for. At the end of the day, most of us are concerned with economic well-being and our futures, which don’t often jibe with political planning.

Priorities should include more governance, oversight and regulation, particularly of the financial services sector, the one that creates most of the economic ones. Unfortunately, it’s the corporate sector to which politicians are beholden, not

In that vein, there’s much to like in this week’s pronouncements from Judy Sgro, Liberal critic for seniors and pensions, keeping in mind the opposition-vs.-government formula.

She accuses the Conservative government of opting for pension reform that will ensure that banks and insurance companies reap the maximum benefit while Canadian workers continue to get left behind.

Pension reform’s not sexy, but it is something that will have an impact on just about every Canadian, and covers an issue that will have an impact on our long-term quality of life.

“After promising pension reform for four years the Conservatives have decided to go the easy route and just let investment fund managers offer a new type of savings plan to workers,” says Sgro. “The basic idea behind the Conservative’s pooled pension plan is to create another vehicle that will allow banks to chip away at the nest eggs of Canadians with their high management fees.”

We pay some of the highest management fees in the world on our mutual funds, she notes.

In a recent survey by investment research firm Morningstar that ranks 22 countries on the management expense ratios levied on their mutual funds, Canada was the only country to receive an F. “There is a better, low cost, high return, universal option that is trusted by Canadians from coast to coast to coast and that is to create a voluntary supplemental Canada

Pension Plan,” she says. “A voluntary CPP would have the benefit of not imposing the plan on workers who don’t need the extra coverage, which the Conservatives like, and provide the security and ease of use that the NDP likes. Most importantly it is the only vehicle that will deliver the results that Canadians want and need.”

She points to the Australian model as the downside of the Harper government’s proposal.

Australia introduced a superannuation system similar to the Conservative’s Register Pooled Pension Plan proposal in 1997.

“Over their first 12 years, Australia’s pooled pension funds posted a disappointing $161 billion in net investment earnings largely because plan providers scooped up a generous $105 billion in fees. Copying Australia by allowing the investment industry to eat up 39 per cent of the growth in Canadians’ retirement plans would be disastrous for our country.

“I think the Conservatives just want to be able to tax the high management fees of these pooled pensions with the GST or HST which they wouldn’t be able to do to a voluntary supplemental CPP,” she suggests. “They’ve decided to fill the coffers in Ottawa in order to fight the deficit they created rather than fuel the retirement dreams of their constituents.”

On the whole, we’re not putting

enough money away to secure the future of retirees.

There’s every reason for concern.

About two-thirds of Canadian workers don’t have a company pension plan. In fact, about a third don’t have any retirement savings at all – about 30 per cent of eligible workers didn’t contribute to an RRSP last year, for instance.

For those who have no savings of their own, relying only on government sources, retirement will be a meager affair. Or simply put off altogether.

The CPP provides 25 per cent of a worker’s average annual earnings – hardly enough for a comfortable retirement. That level has been consistent since the program was introduced in 1966. Payments for current recipients come partly from invested reserves and partly from contributions from today’s workforce. In order to ensure a more stable system and to provide a decent retirement income, we’ll have to start boosting CPP contributions.

Ideally, that 25 per cent figure would become 70 per cent, the figure most often cited as the level of income needed to preserve our standard of living in retirement.

Moving in that direction is the kind of promise – and action – we need from politicians: something to benefit those who vote for the politicians, not those who finance them.

That enterprise has not been abandoned. The Russians, who were the first into space, have not

given up on manned space flight despite their relative lack of resources. The Chinese are catching up fast, and the Indians plan to put their first person into orbit in 2015. Even the Japanese are not to be counted out. It’s just the Americans who are quitting.

Hamburger also offers her clients privacy that larger spas cannot. She has clients who prefer a place where she can give them one-onone service without having to sit next to their neighbour as they get their nails or a facial done.

Having a clientele that trusts her and knows the services she offers gives her the flexibility to offer new products. She’s gone with a clean product line called Eminence, a fully certified organic product meaning there are no parabens or artificial colours or fragrances.

In Canada only five per cent of the ingredients need to be organic in order for manufacturers to put “organic” on the label, whereas Eminence products are 98 per cent organic and are handmade.

“The skincare line is

Sensing a need for pure natural products, Hamburger wanted to stay away from any product that contained parabens, which are now being linked to hormone issues and cancer.

“Our drugstores have shelves full of products to help with skin problems; the problem is that no one knows where to begin and end up getting frustrated when they purchase an item that doesn’t work and know they need to spend more money on a second or a third product,” said Hamburger.

till wondering who made your eggs today? Here’s the answer: Professional farmers.

The popular “Who made your eggs today?” campaign, featuring eight of Ontario’s 400 egg farmers, is now taking the summer off. But when it starts up again in October, it will be hitting the ground running, having already moved public opinion in favour of those who produce eggs.

Polling by the Egg Farmers of Ontario, who were behind the campaign, report a 27 per cent increase in people who feel positive – and even passionate – about egg farmers.

This finding is consistent with the public’s growing, perplexing and distinct belief about farmers and farming.

Somehow, in people’s minds, farming is all about industrialization and profit. Yet they don’t equate that same negativity with farmers themselves, whom they consider noble and forthright.

This is certainly the case with egg farming, which despite producing a superb product, is viewed poorly in some circles. Following Europe’s lead, in North America the practice of raising commercial egg-producing chickens in small cages is under intense scrutiny, to the point of being put on the chopping block in California and, most recently, in Manitoba.

Yet egg farmers themselves are highly regarded. That’s underlined by the “Who made yours eggs today” campaign. It has the kind of homespun feel that localvores crave, the know-your-local-farmer approach, but behind it all is a sense of farmers’ professionalism.

That’s by design. The campaign’s message is that the people who produce eggs are not just dabbling in food production. They’re com-

Food For Thought Owen Roberts mitted professionals with families like yours, and they care as much about animal health and food safety as you do – maybe more, in fact, because unhealthy animals are poor producers, and unsafe food makes farming look bad.

Campaign organizers have focused on reinforcing a sense of professionalism in the egg farmers chosen for the campaign. They know overall, farmers are a humble lot and seldom boast about the good things they do, day in and day out.

As a result, getting farmers to speak about themselves and their farms on camera can be tough.

So, organizers got inside the farmers’ heads, and asked them to think about their values. That’s what the public wants to know, rather than explaining production techniques, at least not in a television commercial.

And that approach turned out to be pivotal. When farmers connected their publicly lauded personal values and the way they produce food, walls came down and defenses were dropped.

“Getting farmers to speak on camera is much easier if they refer back to their values,” says Janet Hueglin Hartwick, director of public affairs and marketing at Egg Farmers of Ontario, who helped develop the campaign. “And that’s when the public really gets insight into them and what they believe in.”

It turns out egg farmers’ selfproclaimed values (as revealed in a survey of 40 producers) – integrity,

family, honesty, faith and compassion – closely match global values that are highly regarded by people everywhere, including compassion, responsibility, respect, fairness and truth. That connectivity promoted an aura of warmth and contentment, and made the campaign seem natural and comfortable.

But clearly, this campaign is bigger than eggs. It’s a lesson for all farmers and farm groups. We live

in a world of marketing and communications, and among professionals, farmers have a unique and desirable niche. Capitalizing on it will not be seen negatively – rather, it will help paint a more realistic picture of farming in the public’s eyes, and draw a straighter line between farmers and farming. You can’t have one without the other, and the public wants to know more about both.

Working with her clients and creating a routine of coming for regular pedicures or manicures help them with issues with their feet and hands like cracked heels or ingrown toenails and together they work to maintain it so that nothing gets worse. A simple crack on the heel if left untouched can grow deep

enough that an infection can set in.

“Having somebody who takes care of these issues and is able to do it professionally is something that my current clients need and enjoy.”

Having total control over her spa is something Hamburger enjoys, saying it is easy to walk in to work for somebody else and walk out at the end of day, but in the end they control how you are servicing clients.

“Working for yourself is very satisfying, and knowing that I can give my clients everything that I can and not worry about answering to somebody else is worth it.”

chool kids aren’t the only ones in Woolwich and Wellesley township who are enjoying their summer vacation, as councillors from the two townships are taking some summer R&R as well.

Wellesley council has been on hiatus since July 4 and isn’t scheduled to reconvene until Sept. 6. Likewise, their counterparts in Woolwich last sat around the council chambers June 28 and will be back at the table on Aug. 2.

Following a busy election last fall and a full slate throughout the winter and spring, most councillors are taking the time to enjoy some much-needed rest to recharge for the fall.

“I’ve been enjoying the heat. I love the summer with a passion. I complain all winter about the cold, and I just really enjoy the summer,” said Herb Neher, councillor of Ward 2 in Wellesley.

“We’re going to have a

family reunion and then I’ll go up to visit my brother in Orillia and do some fishing up there. We barbecue and just relax.”

The same goes for Ward 3 councillor Jim Olender, who has been enjoying some down time at his trailer near New Hamburg with his wife, Marilyn, and has been taking day-trips to Wasaga Beach and the Barrie-area to visit family.

Olender sits on at least four other boards within the region, including the Family Violence Prevention committee and is the chair of the Wilmot Family Resource Centre; while those committees are all taking a break for the summer, he is also taking the time to recharge his batteries and prepare for what should be a busy fall in Wellesley.

Although he and his fellow councillors are on vacation, the work never stops, Olender added. As the chair of the planning and works

committee at Wellesley council, he said he still goes into the township office at least twice a week to keep up to date with new developments in the township.

He said that not only does the township have to start rebuilding its capital reserves following the stimulus spending of the past few years, the township should begin planning for the future as well and cannot remain content with the status quo.

“What we want to do is develop a strategic plan for the next five to 10 years, so that we know where we’re going to be going as a township, and that is something we’re going to work on when we get back.”

Neher agreed with Olender, adding that councillors don’t get a holiday from their duties even though they’re not holding official council meetings.

Seasonal bounty provides for new take on chicken burger

T

his time of year the dinner possibilities at The St Jacobs market are endless. Smokey pork chops, beautifully marbled rib eye steaks, a wide variety of sausages, freshly dug new potatoes, Ontario garlic, and endless bushes of basil. I could fill the page with all of the amazing food finds at the market right now, but I want to share with you our recipe for tonight’s dinner.

He also enjoyed a family vacation to Newfoundland back in June and has taken frequent bicycle trips along the Kissing Bridge Trail between Elmira and West Montrose.

For Ward 3’s Bonnie Bryant, the summer has been a struggle to keep the flowers outside of her Maryhill home alive in the devastating heat that has struck southern Ontario the past few weeks.

“It’s been very quiet. I’ve been spending my time in my garden with my dogs and having a relaxing summer. It’s been so warm I don’t want to do too much,” she laughed.

Both councillors know that perhaps the biggest issue facing council when they reconvene at the start of August is the looming threat of gravel pits in the township.

“The gravel pit, as we know, is a big issue and that’s going to come ahead this fall,” said Bryant Bauman agreed, saying that he has spoken with some residents about the issue during the summer break and hopes to move the process forward in the late summer and into the fall.

“I think there will be some more things coming to council in early August, so I’m hoping to see that start moving again. Leaving it dormant creates uncertainty, and having a long-term answer I think is a more superior solution.”

Perhaps the busiest man in the township this summer has been

the mayor, Todd Cowan. He’s spent the summer running to event after event, meeting with constituents and trying to gain a clearer sense of the feelings and opinions within the township.

For example, he has scheduled a couple of ride-alongs with the local police force to get a clearer picture of how the reorganization of the rural police force influences the region.

“We have three more police officers on duty now all the time. Now that we have more cops on the beat I want to know what we are doing and where are we going,” he said.

He’s a constant face on the barbecue circuit as well, making appearances not only at Canada Day celebrations in Gore Park along with other township staff, but corporate open houses and functions such as when the University of Waterloo’s Federation of Students held their ‘Take a politician to school day’ this past Tuesday, where he had the opportunity to rub elbows with local and national political figures such as Elizabeth Witmer, MPP for Kitchener-Waterloo, and Montreal MP Justin Trudeau.

Cowan also sits on numerous boards that continue to meet throughout the summer, including Waterloo North Hydro, St. Mary’s Hospital and the library board, which he chairs.

With all that, he still manages to get some family time in with his wife, Joanne, and three children, Brittany, Cassie and Luke. They’ve gone camping out at Laurel Creek and plan on going to the zoo and possibly Marineland or African Lion Safari as well.

The summer break marks the unofficial end of the first session of office for Cowan along with first-time councillors Bryant, Allan Poffenroth and Julie-Anne Herteis, but the mayor is happy with the way the group came together and created a more inviting and open atmosphere at council.

“You look at the encroachment legislation and we’re taking less of an adversarial role and we’re being more proactive,” he said, hinting that councillors had better be ready when they return to council on Aug. 2, because between pre-budget planning and the looming threat of gravel pits as well as the ongoing biogas debate, Cowan may have been understating the situation when he said, “we’re going to be busy.”

For serving the family I sliced the cooked chicken loaf and served it on thick slices of bread, so everyone could enjoy a “square burger” I used a combination of white and dark ground chicken. If you would like to keep this meal nice and lean use only white meat. Ground white turkey would also be a nice alternative. I bought the ground meat from Hilltop Acres Poultry.

Instead of traditional hamburger buns I found a beautiful organic Olive loaf of bread from Artisan Breads at the St. Jacobs Farmers’ Market. The bread is similar to

ciabatta buns: very crusty on the outside, with a firm, very flavourful spongy inside. They had a wide variety of bread from cheddar to potato, whole wheat to rye. Any of them would add some interest to a burger.

Oftentimes we get ideas for recipes simply by opening the fridge.

This is the inspiration of some of the burger toppings. Perhaps you’ve got a container of bruschetta or salsa in your fridge. Or some onions that need using up: simply fry these slow and low so they become caramelized. An avocado getting ripe?

Perfect for chicken burgers. There’s always the standard ketchup and mustard, or make your own garlic mayo: mix about half a cup of mayo with some local minced fresh garlic, chopped parsley, a squeeze of lemon juice and salt and pepper.

Mix all ingredients together well in a large bowl and form into burgers or a loaf the size of your loaf of bread. Form loaf on a parchmentlined baking sheet; Bake in 350 oven until cooked through, about 30 minutes. An instant-read thermometer should read 172°F; Let rest a few minutes before carving.

Lacrosse making inroads in Woolwich Township residents a big part of K-W league as Canada's national sport gains popularity James Jackson

I

t’s been called the fastest game on two feet, and it’s Canada’s national sport.

No, not hockey – but lacrosse, and with more than 100,000 players registered with the Canadian Lacrosse Association, the game that Canadian First Nation’s people put on the map nearly 500 years ago is now one of the fastest-growing sports in North America.

Despite the lack of an official association in the township, however, lacrosse

has made its way into the sporting conscious of Woolwich as well. Every year, more and more players are recruited to play in the Kitchener-Waterloo Minor Lacrosse Association, and the U19 Girls B field lacrosse team is a perfect example of the growing popularity of lacrosse across the region.

Six girls – Yi Wang, Amy Schwindt, Kristen Kaster, Kiirsten Barriage and sisters Jocelyn and Jessie Lubert – have become integral members of the KW United U19 girls’ team. They

all live in Elmira, except for Schwindt, who is from Maryhill.

In fact, the entire coaching staff of Ken Lubert, Brett Barriage, Lisa Collee and trainer Connie Kaster all hail from Elmira, making for a very tight-knit team.

The girls have jumped out to an impressive 8-3-1 start to the season following a pair of wins last weekend over Mississauga (12-3) and Burlington (6-4) at Budd Park in Kitchener. Head coach Ken Lubert isn’t surprised that lacrosse has caught on in

hockey-crazed Elmira.

“I’ve noticed an awesome transition from hockey and ringette to lacrosse because of all the stick skills, so it’s a really easy sell to those kids,” he said.

It’s clear that the girls love the sport, and although Wang and Kaster are both in their first year with the squad, they’ve become important components of the team’s defence.

“Lacrosse is different because almost everything goes in,” laughed the goaltender Wang, a five-sport

goalie now, including ice hockey, field hockey, soccer and ringette. “You have to not get depressed, so that’s a bit different.”

“I play baseball and hockey so it’s kind of similar to that with the hand-eye coordination, but again it’s totally different at the same time,” added Kaster. “It takes a certain skill to be able to catch and throw and cradle with this thing,” she added, gesturing to her lacrosse stick.

Elmira Tennis Club honours two long-serving members he Elmira Tennis Club held a ceremony on July 19 presenting two life time achievement awards for club treasurer Marg Donald and club director in charge of the memberships, Elwyn Bridge.

Donald served the club for over 20 years and has decided to step down from her position allowing Joyce Darosa to take over as treasurer.

“I love playing tennis and I haven’t been able to for the last few years,” said Donald. “It’s my body that is holding me back; the mind would love to play. I just feel that serving on the board of direc-

It takes the right stuff to be in a plum position

I

’m not the type of guy who has too many heroes. The kid who stood in front of the tank at Tienamen Square, Martin Luther King, humourist Patrick Mc Manus and the person who invented frilly lingerie, all fall into this category. But, for me, no one comes close to the great Howard Hill.

Hill was an archer and bowhunter extraordinaire – a guy so accurate with a long bow that he did the trick shooting for the original Robin Hood movie that starred Errol Flynn. He’s the guy who actually split the arrow down its full length in that iconic scene. That was not a special effect.

They just gave him a target and he did the rest.

As a bowhunter or trick shooter, he was unmatched.

I was reminded of this recently while watching a Youtube video, in which Hill shoots a plum off the head of a man and then does it again, only

If you’ve ever shot a long bow, you probably have a sense of how difficult this is – getting someone to stand there while you shoot a plum – or any type of fruit – off his head, I mean.

I’m pretty sure it’s not even legal anymore, and for obvious reason too.

Forget Jackass, this was stunt television at its most extreme. The man kneels down, Hill walks up and places a plum on his head. They look at each other and a palpable tension grows.

Then, Hill, arguably the greatest archer of all time, steps back about 15 paces and draws his 90-pound long

bow and, quick as a flash, looses an arrow complete with razor-sharp broadhead. This splits the plum in half and, perhaps because the man with the target is wearing dark pants, there’s not any noticeable change is his appearance.

The fact that this is not done anymore just goes to show how far we’ve come as a species. Now we have far too much respect for fruit.

What’s truly fascinating to me is the confidence required to do this. I mean, it’s a very small target and a lot hangs in the balance. One wrong move, one minor change in form, one slight mistake in sight picture and you’ve ruined a perfectly good arrow, possibly for good. Oh sure, I suppose if you can find someone willing to kneel there while you shoot small fruit off his head, it shouldn’t be too difficult to convince him to split the cost of a replacement, but that’s beside the point.

The point is that people back then were far more proficient and disciplined in these unique skills and we’re willing to prove it in the most extreme way imaginable. They took risks that would horrify modern risk managers.

But though it seems reckless, those shots were the culmination of thousands of hours of dedication and practice. Hill only shot at the plum because he knew he could put an arrow in a grape at the same distance. It took iron will, incredible ability and a ton of trust.

Even the man kneeling there had to have that unshakable faith in the skills of Hill. And yet we don’t even know his name.

Which isn’t really fair. Hill’s name goes down in the history of archery as one of the greats. This guy is considered an idiot for risking his life.

But I’m here to tell you, that at either end, it took a lot of plums.

he 17th annual Jeanne Renault Memorial Golf Classic tees off on Aug. 11 with all the proceeds going towards the family violence prevention program at Woolwich Community Services. Tournament organizers are optimistic it will be one of their best years yet.

“Our goal this year is $16,000 so, of course, we want to reach for the sky and raise as much money for the program that we can,” said Leigh-Anne Quinn, community resource coordinator for WCS. Last year’s tournament saw more than 100 golfers play through the links to help raise some $14,000.

For $125, golfers will play 18 holes at the Conestoga Golf and Country Club, dinner, and the chance to win some prizes through a raffle and silent auction as well as oncourse activities such as closest to the pin and hole-in-one prizes.

The tournament is in memory of the late Jeanne Renault, an Elmira resident who was instrumental in organizing the family violence prevention program back in the late-1980s. The program

also has a bowl-a-thon in the fall to raise funds, but WCS executive director Don Harloff said the golf tournament is the program’s major fundraiser each year to allow WCS to continue the work they do

in the community.

“Foremost, it provides support to people who have been victims of domestic violence, or relationship violence,” said Harloff of the violence prevention program. “We work with women and men directly and in groups in order to support them through the difficulties that they’re facing.”

The program also supports and in-class educational component that sees Libby Barrie travel to each classroom throughout Woolwich and the north part of Wellesley to help educate children in Grades 1 to 8 on the importance of healthy relationships.

“For the younger group it might be how to play together in the playground and for the older group we might talk a little bit more about dating and relationships and the healthy aspects of that,” said Harloff.

The Jeanne Renault Classic starts at 12:55 p.m. Aug. 11. It’s not too late to sign up as organizers are still accepting golfers as well as sponsors and prize donations. For more information contact WCS at (519) 669-5139.

Lacrosse: Sport a natural fit for the many who participate in hockey > CONTINUED FROM PG. 19 years’ experience, Schwindt is by the far the most senior player among the six; she’s amazed by the growth in the sport in her past few seasons.

“The program in the past few years has improved so

drastically, and it’s amazing for me to watch it from when I started to now,” she said of the KW association, which has doubled in size in the past two years.

“It’s grown and become more organized and more developed and kids have been able to get more skilled

coaching, so it’s improved a lot.”

Many of the girls even tried to start a team at Elmira District Secondary School, but say they were stymied by the school’s administration despite having 35 players and a coach in place, and they’re not sure why.

The head coach said that the thought of setting up a lacrosse association in Woolwich had also crossed his mind, but added they are still a few players short of making that a reality. For now he just hopes that the sport will continue to grow and that the coaches will

continue to progress so that the sport can gain more visibility in the township.

“We’ve had very, very few kids come out and say ‘no I don’t like it, this isn’t for me.’

Usually when they come out they’re hooked. I think if we can just get people to come out we will get them to stay.”

St. Clements’ Jeff Brick to lead Siskins New GM/coach has extensive experience, including stint with the Sugar Kings James Jackson

n an effort to rebuild their once-proud franchise, the Waterloo Siskins have turned to St. Clements native and former Elmira Sugar King coach Jeff Brick as their new head coach and general manager.

Brick, who has nearly 30 years of coaching experience and won the Sutherland Cup in 2000 as a coach in Cambridge, acknowledges that the coaches and staff have a long road ahead of them in rebuilding the Siskins for their 78th season.

“I think right now we’re behind the eight-ball in just

trying to assess what we have and how we’re going to move forward,” said Brick. “You have to start somewhere, and we’re going to start at the ground level and work our way up.”

Former head coach Dean DeSilva left the Siskins to join the Kings as their new head coach at the end of May, in part because of the Waterloo club’s financial difficulties, which had it on the verge of folding. In late June, however, Waterloo council gave the team a 15year, interest-free plan to pay back $86,000 in outstanding ice rental fees along with a grant of $14,500 to help keep

the team afloat.

The Siskins lost some $50,000 last season and had their entire board resign before a new leadership group, referred to as the Siskin Six, pitched in $130,000 to help fund the Siskin’s 2011-2012 season.

The team’s new director of hockey operations, Curtis Clairmont, had high praise for the new head coach.

“I’d say he’s the best coach that I’ve ever played for or worked with personally,” said Clairmont who worked with Brick as his assistant coach in Guelph four years ago and also played NCAA hockey in Timmins and at

Cornell, as well as coaching minor hockey in Woolwich in the early 2000s.

“I have first-hand knowledge of Jeff ’s ability as a very strong tactical coach.”

Clairmont agreed with Brick that the ownership group and the coaches really have no idea of what the new season will bring, other than the fact they have 10 returning players from last year’s team that finished a disappointing 8th in the division with a 15-31-5 record after a 43-7-1 record in 2009-2010.

“The biggest thing we’re going to be working on is putting together a classy program and of course we’d like

to ice a competitive team this year,” said Clairmont. “It’s about rebuilding the program and getting the Siskins back to where they were.”

For Brick, who grew up watching the Siskins play, he is proud to become such an integral part of the rebuilding in Waterloo.

“I believe strongly that this organization and its leadership group is going to turn it around and we can only move up from here,” he said.

“I think it’s an opportunity to be part of a good cause – keeping the Waterloo Siskins going – and also an opportunity to be successful at this level.”

Tennis: Doing their part to promote the sport locally

READY TO MEET ALL COMERS Following a strong showing at regional swim meets in Fergus on June 25 and Kincardine on July 9, the Elmira Aquaducks have been hard at work training on Tuesday and Thursday evenings in preparation for the South Western Ontario Recreational Swimming Association (SWORSA) semi-final swim meet today (Saturday) at the Elmira pool between 9 a.m. and noon. They will be hosting swimmers from Fergus and Kincardine.

“We have seen a lot of changes with the club over the years and I have been honoured to be apart of it for all these years,” said Bridge.

The club has been operating for over 50 years in Elmira at the courts beside John Mahood Public School.

Club membership ranges from 60 to 70 people over the year, with weekly mix-and-mingle nights held every Tuesday.

“That’s where you get to know a lot of the members and there are people at different levels of experience and everyone is willing to share tips and tricks on how to get better,”

said Bridge.

The club offers different membership packages including singles for both junior and adult players, family packages and a couple’s package.

“It just a great way for people to come out for some recreation and socialization,” said Donald.

Members are free to play at the courts anytime during the season up until 11pm when the court lights go out.

“We have members that are here first thing in the morning and some that prefer to play until the lights go out at night,” said Bridge. “It’s a very active sport and great for the whole family to be a part of.”

Outdoors part of the festival at Hillside

On this weekend, event now in its 28th year offers a range of music and Earth-friendly activities ummer is all about outdoor music festivals, and you can’t get more outdoorsy than the Hillside Festival, on this weekend at Guelph Lake. More than just music, the festival is an experience: workshops, artisans and activities with a decidedly Earth-friendly bent.

Featuring more than 80 performances on five stages over the course of three days, Hillside offers a mix of well-known names, up and coming artists and local talent. The festival is known for showcasing rising artists, who played to Hillside crowds before making it big.

That list includes Arcade Fire, Broken Social Scene and Feist, for instance.

This year’s outing, the 28th since the first, one-day festival in a Guelph park back in 1984, features a real mixed bag, though without some of the bigger names that have appeared other times.

“There aren’t as many headliners this year as there have been in past years, but if you’re into indie music and world music, then there are headlining acts,” said Marie Zimmerman, Hillside’s executive director.

Sloan is the headliner to wrap things up on Sunday night, and there are performances by the likes of Hollerado, Kevin Drew & The Beauties, and The Sheepdogs to keep fans of radio-played

Challenges come during the festival’s workshops: unexpected pairings of artists tossed together on one stage for a madcap jam session.

Though once upon a time, Hillside made these matches by pulling names out of a hat – they were even called “hat bands” – now programmers curate performers who would never have jammed otherwise.

Twenty-two musicians joined reggae legend Burning Spear to chant down Babylon one year during the festival, while Calexico and members of Los Lobos rocked out together another time.

“You can’t buy or plan that kind of spontaneity,” Baijal said. “These things just happen here.”

Alongside the commitment to adventuresome music is an equally important commitment to the environment.

Hillside has been recycling seriously since the ‘80s and has used solar power to run events since the early ‘90s. The festival has stopped allowing plastic bottles, bringing in water trucks, not only to avoid waste,

alternative happy. But there a whole lot of gems to be discovered, she said, noting the serendipity of discovering new acts and new sounds is one of the big draws.

Given the diversity, there’s pretty much something for everybody. Fans of strong female voices, for example, will enjoy the likes of Hannah Georgas, Lights and Shannon Kingsbury, she suggested.

Hillside is really about an indie vibe, which extends beyond the music to undertakings such as the Neighbourhood Tent, which offers space to community, environmental and grassroots organizations to provide information about their goals and activities.

The festival’s setting encourages a certain earthy Bohemianism. Held on an island in the middle of a reservoir and wooded nature preserve, there is no sign of urban development visible from the site. “The island is the perfect symbol for the festival. When you walk through those gates, you feel you are really getting away from it all,”explained artistic director Sam Baijal This refuge makes for openminded audiences and for performers eager to hang out and have a good time. “Bands walk out on stage, and even though no one has ever heard of them, they’ll get an amazing response,” he explained.

And you won’t find Styrofoam or plastic disposables on the island: Food is served on dishes that are washed by hundreds of volunteers.

Though hip, Hillside keeps it homegrown, right down to refusing all corporate sponsorship: You’re likely to catch seniors raving about how they loved the beatboxer they just heard, or see kids sliding through mud puddles. There is hand drumming, a First Nations circle, and spoken word performances. Festival fans practice yoga or get goofy cita-

tions from a self-appointed, tongue-in-cheek fashion policeman.

Although Hillside’s 4,000 weekend passes sold out the same day they went on sale back in the spring, there are still single passes available, ranging in price from $40 to $70. Full information, including performance schedules, can be found on the website, www.hillsidefestival.ca.

New to the Hillside experience, Zimmerman has a few suggestions: “Bring a hat, a water bottle, sunscreen, a comfy blanket and an open mind,” she laughed.

In “lupara bianca” or “white shotgun” murders, the subject is known to be dead but a body is never found, says Rachel Ehrenberg in Science News magazine. Contrary to claims from within the Sicilian Mafia, sulfuric acid will not dissolve a corpse in minutes, a new study finds.

Experiments conducted on pig carcasses, a common stand-in for human bodies, showed it takes days to melt flesh in the acid, though the process can be speeded up by adding water, which dissolves muscle and cartilage within 12 hours and turns bone to dust within two days.

True enough, this will render a corpse completely unrecognizable but won’t completely destroy it, at least not in minutes, said Massimo Grillo of the University of Palermo in Italy.

While the research suggests that members of the crime clan were not particularly good at judging time, noted Atlanta medical examiner Michael Heninger, at least “they’re smarter than some Georgia criminals who think they’re destroying a body but actually do things that preserve it.”
