For ten Petits Four s you will need: A 100g bar of mil k chocolate 10 regular-sized m arshmallows or 20 mini-marshmallows 10 petits fours ca ses (not that fanc y – they’re just ba cases.) by-sized bun What you do: 1. Break up the ch ocolate and put in to a small bowl ov simmering water. er a pan of Stir until the choc olate is melted. (‘ Techniques’, p 15 Ti .) ps & 2. Put the petits fours cases onto a flat tray or a big teaspoonful of mel plate. Put a ted 3. Place a marshm chocolate into each paper case. allo pressing down gent w into the soft chocolate in each pa per case, ly. 4. Use the scrapi ngs of the chocol ate bowl (if you ha clean by now) to ven’t licked it put one dot of ch ocolate on top of 5.
