DO: Can’t believe it’s been 14 years since Panya first opened shop. Take us back in time to the birth of this popular eatery. Annie: Panya started with a bakery at the McCully Shopping Center in 1997. The following year, we opened a café-style concept, and added some soups and salads — basically light meals — to the menu. Then we moved to Ala Moana Center in 2003, and the Queen Street location also served as our headquarters, where we still do all the baking of our products. Five years later, we opened a downtown location in the Remington College courtyard on Bishop Street. The Royal Hawaiian Center location then opened the following year. Now we have four locations.

When asked to summarize the essence of Golden Duck Chinese Restaurant, owner Aaron Fong emphasizes these three qualities. “Our average price range per customer is $8,” Fong says. “Also, 90 percent of our customers are locals. Our food is different from other restaurants because of the style — it has a more local style and is more local tasting.” Golden Duck Chinese Restaurant, which was originally located by Aloha

Stadium, moved to McCully and then moved once more — after Fong became the owner in 1992 — to its current location on South King Street. Last year, however, the eatery’s newest location opened in Kahala, located on Waialae Avenue. While Fong operates the Golden Duck on South King Street, his brother-in-law oversees the Kahala location. “Our (latest) branch opened last year in October,” Fong says. “I did not make many changes to the King Street restaurant (after I became owner), but there have been many changes in the Kahala restaurant.” One of the main differences between the two restaurants is the menu. While

the Kahala location offers the same popular entrees as does the South King Street location, it differs slightly in that it offers a greater variety for the customer as well as a larger dining space. “For the Waialae Avenue location, we have more seafood — like lobster and Dungeness crab — and a live seafood platter,” Fong says. “The restaurant on Waialae Avenue is also bigger.” Unlike the restaurant on South King Street, Golden Duck Kahala serves liquor through its wine/beer bar. ago, around March.” Whether customers go to the South King Street or Waialae Avenue restaurant, however, several of the entrees remain “classics” at both. Among the most popular dishes are the Minute Chicken Cake Noodle ($7.95), Duck Noodle ($7), Chicken with Bittermelon ($8.25) and Shrimp with Honey Glazed Walnut ($11.25). Of all the entrees, the Minute Chicken Cake Noodle is the most requested. “The Minute Chicken Cake Noodle is our signature dish; it’s very popular,” Fong says. “The pan-fry cake noodles itself are one of our most popular items.” While Golden Duck is the busiest during the weekends for dinner, Fong says that the restaurant’s different specials continue to attract the crowds. Golden Duck’s specials, which change daily, include entrees such as Roast Duck & Ginger Chicken on Rice ($7.50), Chicken Oyster Sauce Noodle ($7), Chicken Chow Fun ($7) and Roast Duck Wo Mein ($7.50). Golden Duck offers catering services as well as 4 takeout options. In fact, Fong acknowledges that take-out is just as popular as dining in the restaurant itself. “We have a lot of takeout orders,” he says. “We do 50-50, dine-in and takeout, and the menu is the same.” While Fong admits that Golden Duck on South King Street is more

popular because of its longevity, he is mak10 a.m.–11 p.m. ing efforts to increase awareness of the (Fridays–Saturdays) restaurant’s newer Kahala location. Starting this summer, customers can look forward to additional menu items at Golden Duck on Waialae Avenue, according to Fong. “We want to establish the Kahala location a little bit more,” Fong explains. “We’re going to be having dim sum in the morning starting June 1. We’re changing the menu a little more and introducing something different.”

A Noodle Dish That’s Spot-On A veg’nout s a vegetarian here in the Islands, where Chinese food plays a such big role in local cuisine, you’ve likely eyed fellow diners with envy as they’re chowing down on minute chicken cake noodle. There’s just something about cake noodles. Their palate-pleasing texture complements just about any stirfry they’re topped with.

Norman Wong, who owns and operates On On at McCully Chinese Restaurant with his parents, Cowan and Faith, and sister Julia, knows a thing or two about cake noodles. It’s On On’s signature dish. “We’re famous for our cake noodle,” he says. “Crisp on the outside and slightly soft on the inside.” Exactly. On On offers eight dishes

featuring those renowned noodles. Although usually topped with chicken or seafood, Wong assures Dining Out readers that On On offers several vegetarian dishes — including Tofu Vegetable Cake Noodle ($9.95). This meat-free dish is loaded with an assortment of veggies — choi sum, bamboo shoots, water chestnuts, Chinese peas, baby corn, carrots, mushrooms

and more — served on a bed of the delightful crisptender noodles. And if you prefer your noodles soft, On On offers an economy-size version of same dish for only $6.50.

ular menu, the dish has worked its way onto the restaurant’s impressive banquet menu as well. So, just what is it about this tofu delight that has diners begging for more? For starters, the Pei Pa Tofu ($13.95) showcases a simple, soft-silken tofu, which is then mixed with minced shrimp and Virginia ham. This magnificent paring is then quickly deep fried and served over a bed of spinach, with a zesty cilantro topping. “This is a real healthy dish, especially because it is not greasy. We use yellow soybeans, which do not have much cholesterol or fat content, so it is a special dish for

healthy people,” says Hee Hing general manager David Koc. With the origins of tofu dating back nearly 2,000 years ago to China, it’s safe to say that this traditional vegetarian dish has evolved over the centuries. In fact, a variety of options are now available for meat lovers. “Pei Pa Tofu is a very traditional Chinese dish. It has a little crunch on the outside, but is still soft and tender inside,” adds Koc. Other tofu choices at Hee Hing include Ma Po Tofu, Golden Fried Silky Tofu, or the restaurant’s specialty Medium Fried Tofu, served in a taro basket with vegetables.

is available on the catering menu only. According to Matsukawa, this delectable delicacy is a popular item among locals and is regarded as one of The Willow’s most highly requested items on the catering menu. So, whatever your heart desires, expect to be dined to the nines when it comes to all things “ahi-rific!” “We’re known for our poke, so I would say that yes, ahi is one of our signature items here at The Willows,” Matsukawa says.

The Willows When you think of The Willows, what is the first thing that comes to mind? Ono food? Live music? A peaceful and relaxing atmosphere within a beautifully lush setting? How about all of the above? Yes, The Willows is all of this and more, having made its way to the top of my list for savory local favorites. In all honesty, the ahi here is to die for. Thanks to executive chef Jay Matsukawa, The Willows serves up an array of ahi that is out-of-this-world delicious. Matsukawa’s famous Ahi Poke and Sashimi are showcased as part of the restaurant’s dinner buffet, offered 24 | DINING OUT | JUNE 5-11, 2011

Kozo Sushi The ahi addict and sushi lover in me couldn’t be any happier with Hawaii’s premier choice for takeout sushi. Kozo Sushi’s magnificent array of ahi samplings has long been a classic for any party or celebration. My favorite sushi pick has got to be Kozo’s Dragon Maki ($6.99), which offers

the perfect combination of sweet and spicy. This zesty masterpiece is a feast for all the senses, and features eight pieces of shrimp tempura maki paired with fresh lettuce and seasoned with a sweet teriyaki sauce. It’s then topped with fresh ahi, masago, green onions and sesame seeds, drizzled with an extra bit of teriyaki and spicy sauce to give it an added kick. The Dynamite Maki ($7.25), a shrimp tempura maki with ahi and masago, topped off with barbecue potato chips, sesame seeds, green onions and drizzled with a spicy sauce with wasabi mayo is also among my favorites. Trust me, you can’t just take one bite without wanting more — you’ll be hooked on this ahi cuisine. Without a doubt, Kozo’s sushi makers display pure and utter talent, and with locations throughout Oahu, you won’t have to go far to partake in Kozo Sushi wonders.

his week’s Foodie Fare comes to you from the Golden State (Palm Desert, Calif., to be precise), where healthy food and fresh options are in ample supply. Taking a cue from the West Coast lifestyle, it is only fitting that our featured restaurant is California Wok. Located on the first level of Ala Moana Center near Macy’s, the tiny dine-in, take-out eatery serves uniquely inspired dishes made with only the finest, freshest ingredients available. “The items on the menu are all cooked to order,” says manager Winnie Li of the creations cooked up by California Wok’s own chef. Among the list of one-of-a-kind Chef’s Specialties are the Dragon and Phoenix ($12.29), Hoisin Four Delights ($12.55) and a House Special Pan Fried Noodle ($12.55). A combination of large shrimp in a Szechwan sauce and General Gau’s chicken, the Dragon and Phoenix is a spicy-sweet, light meal, perfect for the impending summer months when diners crave something full of flavor but not fat. Another healthy option is the Hoisin Four Delights, a medley of stir-fried beef, shrimp, chicken and pork

C California dreamin’ of fresh, scrumptious Chinese cuisine

alifornia Wok has been a mainstay with locals and tourists alike who seek healthy, tasty cuisine since the Chinese eatery opened in Ala Moana Center 10 years ago. After a recent two-month renovation, the restaurant reopened May 26 with new counters, floors, flat screen TVs and dining tables. But one thing regulars can count on staying the same — California Wok’s commitment to serving food that tastes good and is good for you. In appreciation of customers old and new who pass through the brand-new space, California Wok is now offering a 20 percent discount with the purchase of $5 or more on items such as Curry Chicken ($7.45 half-portion, $10.49 large), Sweet and Sour Pork ($10.49), Garlic Shrimp ($8.39, $12.29) Bean Curd with Spinach ($8.59), Singapore Rice Noodles ($9.25) and Chicken Fried Rice ($7.25). “We also have Party Pans and a Lunch Menu we make cooked-to-order,” adds manager Winnie Li. Priced from $7.35 to $8.29, items on the lunch menu include Sweet and Sour Chicken or Pork, Chicken with Broccoli, Kung Pao Chicken, Mongolian Beef, Shrimp with Garlic Sauce, Chow Mein, Shrimp with Lobster Sauce and General TZO’s Chicken. Each meal is served with steamed white, brown or fried rice and choice of salad or spring roll. (Add 50 cents if you’d rather have two chicken wings or a bowl of Egg Drop or Hot & Sour Soup in place of the salad.)
