Declare your Independence with Hot Ribs, Fireworks

ooking for ways to celebrate our nation’s Independence Day? Here’s a suggestion: Kick off your evening with some good old-fashion barbecue ribs while enjoying a blazing-hot fireworks show over the Pacific Ocean.

For those too lazy to fire up the grill, we scouted the town for the best ribs around. And while these selections may leave your fingers a bit sticky, we found racks with meat that slid off the bone and sauces so zesty, they’ll leave you begging for more.

Armed with a cutting-edge dessert menu, Zippy’s patrons are saying ‘wow!’ in Waiau

hen Zippy’s in Waiau opened its refurbished doors this week, regular customers, who’ve been without their fix of the restaurant’s famous comfort foods since January, rejoiced.

Boasting a bright, contemporary look, newly designed uniforms for staff and a gourmet dessert menu, this new-look Zippy’s is paving the way for the future. Sure such local favorites as saimin, chili, spaghetti and beef stew are still staples on the menu, but Zippy’s has so much more to offer its dedicated customers these days.

I went to the Waiau location and met up with the restaurant chain’s president, Paul Yokota, to talk about the unique bond of loyalty Zippy’s has with patrons and how the culinary team continues to ensure that Zippy’s favorite recipes stand the test of time.

JM: I’m thinking I’d describe the new-look Zippy’s as incorporating contemporary diner style with a touch of Hawaiiana. A bit of the old with the new.

PY: (smiles)That’s about right. This Waiau restaurant is very representative of our company. We’re moving forward, but we’re also deeply rooted in the tradition of Zippy’s.

JM: The tradition of Zippy’s, of course, began with Francis and Charlie Higa, who really had a vision for their restaurants. When I interviewed Charlie a few years ago, it was very clear that he and his brother knew precisely the kind of food they wanted to serve when they began in 1966.

PY: Charlie and Francis Higa put all their efforts into the aspect of comfort. They wanted a menu that people were comfortable with, a place that people would be comfortable sitting … that’s what’s endured. Zippy’s is the ultimate neighborhood restaurant. It’s the food that you come home for.

JM: What are the dishes that will always be on the menu?

PY: Well, certainly the chili is a hallmark of the menu. But our chicken is very popular.

The chicken recipe is something that we protect, and it’s something that we make sure has the kind of consistency that people expect from Zippy’s.

And the oxtail soup and the oxtail stew are other pillars of the menu.

JM: While most people associate Zippy’s with these kind of comfort, simple foods, not as many people know that Zippy’s actually has a state-of-the-art food-processing plant, Food Solutions, in Waipahu, that utilizes some pretty high-tech food technology.

PY: Yes, it’s been a major investment of ours to develop the plant to provide consistency with all of our food. It’s a state-of-the art facility and is run by people who keep very much on the cutting edge of new food technologies and techniques.

JM: There’s a very vibrant, energetic feel about the new Waiau location.

PY: A lot of people have been waiting for this location to reopen. And Waiau is the site where we’re introducing our new dessert menu. That’s extremely exciting for us.

PY: We take a lot of care to do exactly that. The food is tasted every day to keep consistency, and with the items that are prepared on site we’ve gone back to the all important basic recipes. As much as possible, we keep everything, from the presentation to the taste, true to the original recipes.

JM: What would you recommend people try at the new store?

PY: My favorite is the island flavors ice cream roll; it’s excellent. And there’s a honeydew cream parfait that has a summer flavor that’s really refreshing. And there’s a recipe our chef came up with — a deep fried cheesecake. When we tried it, we all agreed that we had to have it for our customers.

JM: Deep fried cheesecake … I can see that becoming an instant Zippy’s favorite! Apart from dessert, what do you order when you’re eating here?

PY: I gotta have the chicken (laughs) and I love the beef stew. I always recommend our salads, too. We have a partnership with Nalo Farms, and Dean Okimoto makes sure we have excellent, locally grown salad greens.

JM: So are we going to see more of the new-look Zippy’s anywhere soon?

PY: At this point we’re really fortunate that people want us to be part of their new developments, so we’re constantly looking at new locations. And we are investing in refurbishing our existing locations, too. Right now we’re spending a lot of time evaluating and refreshing what we do. |

t’s the ultimate leftover dish, and we love it.

Fried rice has its origins in Chinese cooking, but Islanders know how to be creative with scraps from last night’s dinner. Generally, there are bits of luncheon meat, fish cake and char sui in the stir-fry mix. But on a recent fried rice safari we tasted diversity, ranging from a

veggie version to a marvelous musubi. Fried rice can be a side dish or a meal in itself with satisfying taste and ingredients.

Topped with a fried egg, it’s broke da mout’ for breakfast.

Owner-chef Colin Nishida dries the rice in the refrigerator or freezer for one day before preparing fried rice that has Portuguese sausage, bacon, peas and carrots, char sui, oyster sauce and hon dashi.

Wailana Coffee House There’s no better way to celebrate our nation’s birthday than with a bountiful feast and a frontrow seat of fireworks displays at Ala Moana and Waikiki. And that’s just what hungry patriots can find at Wailana Coffee House and Cocktail Lounge this Fourth of July.

From fresh-fruited stuffing to amber waves of prime rib, the restaurant’s Independence Day menu is as diverse as America itself. Specials include a Roast Prime Rib of Beef served with au jus and creamed horseradish sauce ($16.95); BBQ Hickory Smoked Ribs straight out of the Wild West and served with baked beans ($12.95); and a Roast Turkey with Smoked Ham, Macadamia nut stuffing, old-fashioned giblet gravy and topped with a grilled pineapple ring filled with cranberries.

You’re right. Always tip on the full amount of food ordered. When using gift certificates, even if your final check is as little as $1, you should always tip on the full amount you would have paid without certificates. Restaurant staff give you the same level of service, regardless of how you’re paying, and they’ll be taxed on your check whether you leave a tip or not.

Chicken Sate

with Thai Peanut Sauce and Cucumber Salad Ingredients: • 1 pound chicken, cut to bite size • 1/4 tablespoon curry powder • 1/4 tablespoon garlic powder • 1 tablespoon condensed milk

• 1 tablespoon fish sauce or low-sodium soy sauce • 1/4 cup coconut milk • 16 wooden skewers

Preparation: • Cut the chicken to bite-size 3/4-inch cubes and marinate with coconut milk, curry powder, garlic powder, condensed milk and fish sauce for about an hour.

• Skewer the chicken with the wooden sticks and grill with medium heat until it cooks perfectly. Serve with Thai Peanut Sauce.

Cucumber Salad: Ingredients: • 1 pound cucumber, slices • 1 ounce assorted color bell pepper slices • Chinese parsley, chopped • 1 shallot, sliced • 2 tablespoons white vinegar • 1 tablespoon sugar • 2 tablespoons water • Dash chili sauce or Tabasco • pinch salt

Preparation: • In a pot, add sugar, vinegar, water, salt and chili sauce and bring to a boil, then let it cool down. In a bowl, combine slices of cucumber, shallot, bell pepper and Chinese parsley and chill in the refrigerator. Combine with sauce before serving.

• To prevent the cucumber from getting soggy, do not add the dressing to cucumber until ready to serve. Chilled ingredients can make the cucumber salad crunchier.

A World of Cuisines at McCully Shopping Center

S

ome of the best ethnic food in Honolulu can be found in one very small area. At McCully Shopping Center, 11 of the 22 merchants are restaurants, including Thai favorite Phuket Thai, and late-night bastion of the best lobster deal in town, Fook Yuen.

To celebrate the diverse cuisines represented within the shopping center, an annual promotion encourages shoppers to eat, indulge and win an exotic trip (this year winners will travel to Japan.)

Terri Hansen, marketing director for the center, says the contest began as a way to promote the individuality of the specialty restaurants.

“The contest started when we were looking for something new to promote the center. It seemed easy to tie in the world of cuisines that we have here by sending people to a different destination each year,” she says, while enjoying lunch at one of the center’s newest restaurants, Hot Pot Heaven.

“We’re trying to send people to the places represented in the shopping center. This year it’s Japan, and previous winners have been to China, Canada and New York. We’re looking at Vietnam and Thailand as future possibilities too,” she says.

The contest is easy to enter, requiring no more effort than filling out an entry blank. You’ll find them at the shopping center and also in MidWeek, with entry details also on Oceanic cable.

“It couldn’t be easier to enter,” Hansen says. “People can even join the McCully Shopping Center

Facebook page for a chance to win.” Weekly supplemental prizes include gift certificates to restaurants within the center.

“We’ll be ‘tweeting’ prizes and giving away restaurant gift certificates through the month of July,” Hansen adds, “so for anyone who likes to eat, it’s a fun opportunity to win dinner or lunch at a great restaurant.”

Deciding where to eat might be your biggest problem, because it’s no coincidence that good restaurants are attracted to the McCully location.

“The merchants tell their friends who have restaurants here,” she says, “and whenever there’s an empty space we always have interest in filling it.”

And if you’re concerned about parking, Hansen’s advice is to choose your dining times to beat the crowds. “At 5:30 or 6 p.m. there’s always plenty of parking,” she says.

With a job that involves being around good restaurants every day, I asked Terri about her favorite dishes.

“What I notice about these restaurants is that they encourage cravings,” she says. “There’s the chicken katsu curry at Curry House, the Thai salad at Phuket Thai and the noodles at Yotteko-Ya, which I crave. And then at So Gong Dong there’s the wonderful tofu soup and the kalbi, which I love. At Bistro Ah Un, they’re known for the poke and Japanese fusion dishes, and Pho 777 has received incredibly good reviews since opening for really good Vietnamese food. I find there’s something in

every restaurant that I crave.”

Banana Leaf Pasta Café is perfect for heart-healthy lunches and an Italian-inspired dinner. Meanwhile, Regal Diner is a must-stop spot for Hawaiian food.

Additionally, The Snow Factory and Hot Pot Heaven, just opened to rave reviews.

“People are going to love them both,” says Hansen of the Asian-influenced shabu shabu-style restaurant, and the shave ice store that serves shaved slivers of ice topped with fruit.
