Mediterranean Sea

very so often, my mind wanders away from the stresses of daily life and back to my travels along the Mediterranean Sea and to the land of Greece, where I spent one of the best weeks of my life. My days consisted of relaxing by the pool sipping mimosas on the Santorini isle, enjoying the magnificent sunsets, and discovering the ancient ruins of the Acropolis and Parthenon in Athens. And while I took this journey to Greece more than a year ago, I remember it like it was yesterday. The people were so friendly, and the food was out-of-thisworld delicious — not to mention healthy.

There’s just something about the Mediterranean that I can’t get enough of.

The beauty of the countries bordered by this majestic sea is beyond words. I’m

currently planning an adventure to Spain, and it has always been a dream of mine to explore the pyramids of Egypt firsthand.

tomers coming back for more. The Fat Greek also has an additional location in Waikiki and a kiosk at Ala Moana Center’s food court, run by Provenza’s son, Darien.

Provenza and his business partner and adviser, George Stephanos, take their jobs seriously by only offering the highest quality of Mediterranean cuisine, which is why I couldn’t resist sampling the generous portion of The Fat Greek’s Taverna Shrimp ($14.95).

Served with pita bread, basmati rice and a refreshing Greek salad, this Sunday special is cooked to perfection with feta cheese, tomatoes, flavorful amounts of garlic, and a dash of chili flakes and lemon juice.

“This dish is definitely one of my favorites and it’s extremely popular,” says Waialae manager Daniel Provenza.

“We have a lot of customers who request this dish on a regular basis, and it’s really very good,” he adds.

1 hen thinking of your traditional saimin stop in Hawaii, visions of momand-pop, hole-in-the-wall type of noodle shops often come to mind. But last October, Joan and Paul Watanabe forever changed that image. The couple decided to turn away from yesterday’s look and modernize every aspect of the typical saimin eatery by opening Tanaka Saimin, a picturesque and spacious establishment located on Nimitz Highway next to Party City.

Booths and tables are contemporary and plentiful throughout the 5,000-square-foot restaurant, while exquisite artwork by Joan’s sister, Joyce Tanaka-Shields, lines the walls and graces the cover of each menu.

Yet although the eatery sports a brand-new decor, head chef Sing Lee continues to serve up a variety of triedand-true favorites.

Dining Out recently sat down with general manager Nani Lee Christian, who whet our appetites by not only talking about the classic dishes already served at Tanaka Saimin, but also the restaurant’s new fare coming in June.

DO: Tanaka Saimin seems like the classic one-stop shop for local Japanese food. What can customers expect from their dining experience here?

Christian: Customers can expect home-cooked meals that offer something for everyone — be it children, teenagers or adults. Our restaurant is very family-friendly and the ambience is very relaxing. We want everyone to feel comfortable here, so we always have music playing and big-screen TVs on for people to enjoy. However, it’s all about

Tell us about these delicious plate lunches offered from 6 a.m. to 9 p.m. (weekdays) and 6 a.m. to 11 p.m. (weekends).

Christian: We created Bento 1, consisting of teri beef, mahi mahi, Spam and chicken with furikake rice.

However, our most popular bento has been titled the Hearty Man bento with pork chop, hot dog, Spam and chicken with furikake rice. It’s not common to find pork chop included in a bento, so it’s very unique to us here. Customers can enjoy their bentos here or place orders to go.

Christian: Our famous dessert, Banana Cream Pie ($3.45), is homemade by Paul and the crust consists of macadamia nut shortbread. We also offer a variety of 20 different flavors, including strawberry, blueberry and mango, but Banana Cream Pie is our most popular. We also serve Häagen-Dazs ice cream, which nicely complements the pie.

DO: Is it true that Tanaka Saimin will be revamping its menu soon?

Christian: Yes. In the near future, we will be offering a Japanese breakfast, featuring salmon, mahi mahi or miso butterfish with egg, furikake rice, miso soup, ocha tea and tsukemono, in addition to an Ochazuke breakfast, which is very popular with locals. It’s served with salmon, furikake, crispy wonton strips and tea over hot rice. It’s set to be a part

1 t’s Memorial Day weekend, which can only mean beachside barbecues, backyard cookouts and potlucks at the park — in other words, three days filled with foods like greasy burgers, creamy salads and gooey desserts that leave most folks dreading the impending approach of swimsuit season.

Not to worry. There is still a way to fill up without filling out, and that’s with a delicious and nutritious meal from Hanaki Restaurant.

The locally owned restaurant first opened in Manoa Marketplace in 1996 as a Japanese allyou-can-eat buffet but switched to shabu shabu last year in order to accommodate customers’ changing tastes.

“We decided over a year ago to change over our Japanese buffet to a more healthy style of restaurant, yet still maintain great quality in food selections and especially in the taste,” explains general manager Mark Mitsuyoshi.

“With our new menu style, anybody can enjoy a great tasting and affordable meal.”

In shabu shabu, diners cook their meals in table-top hot pots filled with a bubbling broth or soup base. Not only does the boiling liquid cook the raw vegetables, meats and other ingredients to perfection, it also injects a healthy dose of flavor to the dish without adding a ton of calories or fat (depending on the soup).

“I believe we are the only shabu shabu restaurant using traditional soup base such as konbu dashi, miso and curry, but with a blend of localstyle favorite flavors as well,” says Mitsuyoshi of the house-made broths that also include a light hanaki, medium sukiyaki and special spicy recipe.

All soups cost $5 each, which also includes access to a sauce station and shave ice bar in the dining room.

“We also have a healthy herb soup for $9,” he says of the refreshing blend of goji berries, dried dates, ginseng and special herbs recently added to the menu.

Once a soup is selected, customers pick out which vegetables and meats they’d like to add to the mix. Vegetable plates cost $2.50 to $3.50 each and include a variety of fresh produce — enough to fill an entire 6-by-6-foot refrigerator! — while meat and seafood plates start at $4.50 for items such as pork loin, prime rib, lamb, tsukune meatball, arabiki, hot dogs, chicken, fish balls, crab legs, shrimp, clams, oysters, squid, salmon, miso butterfish and baby octopus.

Rice, noodles, hot tea and desserts also are available, as is a long list of soft drinks, beer, wine and sake.

“For those who don’t want shabu shabu, we also have an a la carte menu with udon ($10.95$12.95), donburi ($11.95) and combo plates,” Mitsuyoshi says.

The freshly prepared combination plates ($9.95$12.95) are a true favorite at Hanaki, according to Mitsuyoshi, because customers get the chance to add even more items like fried fish katsu, tako yaki, homemade gyoza, deep-fried oysters, shoyu chicken and shoyu tofu to their meals.

“Most tables do the shabu shabu with side orders of shrimp tempura or chicken karaage,” he says.

And it is exactly this freedom to order what they want, how they want it that keeps customers satisfied, not overly stuffed.

“With our shabu shabu, guest can customize their whole meal to satisfy their own unique tastes,” Mitsuyoshi says. “‘Dare to Create’ may be our slogan, but it’s true; with our many selections of soups bases, meats, vegetables, seafood and noodles, it’s your own imagination that will create the best shabu shabu pot ever … if you let it.”

our midnight shifts are really busy, and from 10 p.m. to about 2 a.m., it’s pretty busy. The dinner shifts are steady throughout the whole week.”

Formerly Kapiolani Drive Inn (KDI), Wailana Coffee House opened in 1969 and became a casual family diner. When asked what makes Wailana different from other restaurants of its kind, Tom emphasizes the eatery’s originality.

“We make all our food from scratch; we make our own pancake batter, we cook everything fresh,” he says.

“Our pancake batter is original; we don’t use a mix,” says Tom. “Customers can order the banana, macadamia nut, blueberry, pineapple or coconut pancakes for just a little more. We sell hundreds of those a day.”

Another popular breakfast item is the Eggs Benedict ($9.85), which Tom considers one of Wailana’s signature dishes. “(In the Eggs Benedict), you have the hollandaise sauce, the poached eggs and the smoked ham and turkey breast atop a toasted English muffin,” he says.

While the restaurant is known for its hearty breakfast entrees, customers will not be disappointed by the restaurant’s choice of desserts. “That’s who we cater to … it’s (Wailana) maintained that theme all the way,” Tom says. “Of course, we’ve updated the menu and changed items, but the basic theme’s always been the same — casual family dining.”

The Mousaka features alternate layers of fried eggplant and ground beef topped with a creamy bechamel sauce. Served

with a fresh Greek salad and pita bread, this dish is divine.

Guirguis agrees that the mousaka is undoubtedly mouthwatering, yet he also notes that the Reiash ($19.95 lunch, $21.95 dinner) is a highly requested items by customers.

here’s pizza, and then there’s pizza from Shakey’s Pizza Parlor. Touted as the “World’s Greatest Pizza,” a slice from the international chain tastes distinctly different from other major pizza brands.

“The Shakey’s traditional thin crust is well-known, and the sauce is more on the sweeter side tomato sauce, which I think, with all the different kinds of toppings and specialty pizza options, really bring out the flavors of the pizza,” says local owner Brad Vandeman. “I don’t want to knock the competition, because we’re all different, but you’ll just have to try it for yourself!”

With a menu that boasts eight unique specialty flavor combinations, Vandeman says the No. 1 seller among locals is the Shakey’s Special. A true meat lover’s dream, the popular pie comes loaded with salami, pepperoni, Italian sausage, seasoned ground beef, mushrooms and black olives all piled atop Shakey’s traditional thin crust (a thicker pan crust may be substituted for $1 extra).

“Shakey’s was here 30 years ago, and I think a lot of people remember the Shakey’s Special,” Vandeman says.

Shakey’s pizza still ‘World’s Greatest’

hile Shakey’s Pizza Parlor may be new to foodies younger than 30, older generations hold fond memories of trips to the family-friendly franchise for some pizza, potatoes, fried chicken and fun.

The first Shakey’s opened in 1954 in Sacramento, Calif., by Sherwood “Shakey” Johnson, and by the 1970s, additional Shakey’s locations had sprouted up throughout the nation, including locally in Honolulu, Pearl City, Kaneohe and Schofield Barracks.

All four Hawaii Shakey’s closed before 1980, but by 2010, Brad Vandeman decided it was time to reintroduce Shakey’s to the local dining scene.

“It’s been 30 years since Shakey’s has been in Hawaii, and I thought it would be a great opportunity to bring it back,” says the Hawaii franchise owner.

“My plan is to open two more,” he adds, “and it can be anywhere in the state. I don’t have exact locations yet, but we have started to put feelers out there.”

Shakey’s opened last February in Waipahu Town Center, near American Savings Bank and Longs Drugs fronting Farrington Highway. Housed within the 5,624-square-foot space is a dining room equipped with long, communal tables and cushy booths for more private gatherings. There also are five flat-screen TVs that broadcast sports games and, immediately behind the eating space, a game room filled with numerous pursuits for keiki and keiki-at-heart.

“Shakey’s is very big on family, food and fun, and what’s great about that (concept) is that parents can come here to watch a game and kids can go have fun in the game room,” Vandeman says.

Another way Shakey’s puts its patrons first is through offering fundraising opportunities to sports teams, schools and other organizations.

“We call it ‘fun-raising’ because you can basically come in here and we do everything — we cook to order, they have a 2-hour time period to raise their funds, and 20 percent of food sales goes back to the charity,” Vandeman explains. “And what’s great about it is that people can come in here, eat and leave, and we take care of all the cleanup."

“My favorite pizza is the Firehouse,” Vandeman admits, referring to the hot ’n’ spicy dish made with hot sliced sausage, spicy Italian sausage, pepperoni, red onions, diced tomatoes and fresh basil.

“We also have a Garden Veggie pizza that’s really popular with the vegetarians,” he adds.

“Really, you can’t go wrong. I love any of the pizzas.”

he Malaysian-style dish known as laksa is a comfort meal that is generally difficult to find outside of Southeast Asia. Providing the warmth of a herbal soup along with the robust satisfaction of a shrimp and noodle dish, laksa also serves up a kick of spice to consumers, thanks to an accompanying dash of curry powder.

And according to at least one local restaurateur, the dish may also be beneficial to those experiencing alcoholconsumption overload.

“It is especially good for hangovers,” says Panya co-owner Alice Yeung of the soup, before adding, “You look at it and you get a craving for it.”

There are many variations of laksa, which is highly popular in Malaysia, Cambodia and Indonesia. The two most popular types of laksa are the Curry Laksa, which features a coconut milk base, and the sour fish soup Asam Laksa, which gets its bitterness from tamarind paste.

herbs, including lemon grass. Two types of noodles, a rice and yakisoba noodle, are then added to the broth, followed by shrimp, homemade fish cake and fish balls. Topping the dish is corn, aburaage and bean sprouts.

“I have been making this dish for more than 10 years,” Yeung says. “We made this dish for the first couple of months, trying to get the right proportions of all our ingredients and finding balance.”

ne doesn’t need to travel far to enjoy the bountiful flavors of Euro-Island cuisine at 3660 On the Rise. Located at the corner of Waialae Avenue and Wilhelmina Rise, the popular eatery has been serving loyal customers since the early 1990s with its award-winning menu.

Chief among the number of dishes is the Ahi Katsu ($14),

Pan-Seared Salmon with Coconut Ginger Rice and Pineapple Salsa

By Chef Chai Chaowasaree Ingredients: • 6-8 ounces salmon filet seasoned with salt and pepper • 2 tablespoons vegetable oil or butter • ¼ cup steamed broccoli • 2 tablespoons diced pineapple • ½ tablespoon diced red bell pepper • ½ tablespoon chopped onion • ½ tablespoon chopped Chinese parsley • dash Tabasco • sugar and salt, to taste • 2 cups coconut ginger rice

(see ingredients below)

Coconut Ginger Rice Ingredients: • 1 cup long grain jasmine rice • ¾ cup coconut milk • ½ cup chicken stock • 1 large piece of ginger • 3 cloves garlic • salt and pepper, to taste Preparation: • Combine all coconut ginger rice ingredients and steam for about 1/2 hour to 45 minutes or until rice is cooked. Set

coconut ginger rice aside.

• To make pineapple salsa, combine pineapple, bell pepper, onions, Chinese parsley, Tabasco, sugar and salt. Taste salsa and add sugar or lemon juice if needed, depending on the sweetness and acidity of pineapple.

• In pan, sauté salmon on medium-high heat for about 23 minutes on each side or until fish is cooked. Set aside.

• Place coconut rice in center of plate and top with fish and pineapple salsa.

he throne awaits customers at 4Kings Kitchen, where owner and chef Kapo Kealoha knows exactly what it takes to feed royalty. The Honolulu eatery opened earlier this year, specializing in upscale plate lunches.

Kealoha derived his menu from family recipes taught to him by his mother, and says customers can expect local favorites with a modern twist. Signature dishes include Chef Kapo’s Mochiko Chicken ($10) and the “Not Your Normal” Loco ($11). 4Kings Kitchen is located at 2671 S. King St. and is open Monday through Saturday from 11 a.m. to 9 p.m. Call 951.5464.
