hirty years ago, Colin and Darlene Fong left their home in Canton, China, and went as far west as they could before settling in the middle of the Pacific Ocean.

Colin: This is a great location for expansion and we have a lot of customers from the East Oahu area like Kahala, Hawaii Kai and Kaimuki. It’s very convenient for them.

Darlene: Yes, a lot of loyal customers have also been passing on the word. We have a great space here and we can seat about 180 people.

Dining Out: Golden Duck recently opened the doors to its new Kahala location this past October. What are your thoughts on this expansion?

and garlic, while the Crab with Salted Pepper is seasoned with chopped garlic, fresh chili pepper and Chinese parsley. If the customer requests for it to be spicy, we can do that as well, but usually it’s very mild.

The Minute Chicken Cake Noodle is another customer favorite, and the tender chicken, ong choy, gravy and garlic really bring out the flavor of the dish.

The Lamb Stew with Dried Bean Curd Casserole is one of our specialties and customers love the shiitake mushrooms, green onion, parsley, dried bean curd, won bok and tender pieces of lamb that are featured in this dish. We use a lot of vegetables in our dishes, so for the most part it’s really healthy.

DO: What are some of your personal favorites on the menu?

Colin: I especially like the Salt and Pepper Pork Chop ($9.50), Shrimp with Honey Glazed Walnut ($11.95) and the Roast Duck Chow Mein ($8.95).

DO: What sets the Kahala location apart from the South King Street location?

Darlene: The South King Street location is always busy with diners dining in and taking out. Here at the Kahala location, we have a great

room for parties that holds about 110 people, so we specialize and host a lot of events and special occasions. We host a lot of wedding/baby showers, graduation parties, anniversary parties and birthday celebrations. We have a prix-fixe dinner party menu that usually can serve a dinner for 10.

DO: That makes party planning a lot easier. What are a couple party menus frequently selected by patrons?

Darlene: For $198, customers receive our most popular dinner option, which consists of the Seafood Tofu Soup or Scallop Soup; Chinese Chicken Salad; Barbecue Pork and Roast Duck Platter or Peking Duck; Crispy Chicken or Hot Ginger Chicken; Steamed Sea Bass Filet or Sweet and Sour Sea Bass Filet; Salt and Pepper Shrimp or Shrimp Canton; Tenderloin Beef with Twin Mushrooms or Black Pepper Tenderloin Beef; House Special Chow Mein; Steamed Rice; and Almond Float or Tapioca for dessert.

Colin: He does, but you can request your order without any MSG as well

Pho Kitchen turns up the heat with shabu shabu

P

ho Kitchen, located in Market City Shopping Center, is famous for its authentic Vietnamese cuisine — particularly, its fabulous pho. Owners Sandy Lin and Alex Chong, however, are expanding their menu starting today by offering customers hot and tantalizing shabu shabu, otherwise known as hot pot.

“Our shabu shabu is very simple, healthy and easy to make,” Chong says. “The shabu shabu is custom-made and we have many options available. Better yet, our broth contains absolutely no MSG.” For a limited time only, customers will receive the shabu shabu broth free of charge if they order it during Happy Hour (2 to 5 p.m.) and Late Hour dinner (8 to 10 p.m.).

Step 2: Choose Broth

Select the broth of your choice — be it beef, ox bone, chicken, chicken with Chinese herbal medicine, chicken with lemon grass, Chinese parsley with tofu, veggie, curry or Szuchen spicy broth.

“The chicken broth with Chinese herbal medicine is very beneficial to your health,” Sandy Lin says. “It consists of Bei Qi, codonopsis, dried longan, red dates and goji berry.”

“And for the spice in Szechuan spicy broth, we feature amomum, cinnamon, fennel, star anise and our homemade satay sauce,” Alex Chong adds. “This is a very spicy hot pot, as in it creates a burn and numb feeling in your mouth.”

So, you better be able to take the heat!

Step 3: Add rice or rice vermicelli to the dish, along with a variety of a la carte items.

The restaurant has 22 a la carte items (starting from $2.50) that people can add to their shabu shabu, “including fish ball, shrimp, tofu, beef ball, fish filet and more,” Lin states. Among the most sought-after choices is the the rib-eye beef steak.

Savoring the soups at Saigon House M andy Nguyen, owner of Saigon House, is taking pho to the next level. According to Nguyen, her goal is to present diners with the most authentic Vietnamese cuisine possible at the South King Street restaurant.

“In the mid-’80s, my mom owned a Ba-Le restaurant at Fort Street Mall and ran it for many years,” she recalls. “I used to help her and that’s what got me into the restaurant business.”

With a varied selection of pho to please all appetites, including the Pho Special Combination of Beef ($8 medium, $8.50 large) and appetizers such as Chicken Salad ($7.50) and Finger Shrimp ($8), Nguyen says most of the recipes are all her own.

Still, she credits chefs Hong and Kim for their extraordinary culinary talents.

“What’s unique is our Spicy Beef Soup ($9.25). It’s made with a thick vermicelli noodle, spicy beef and a flavorful beef broth,” Nguyen explains. “We cook the soup with a lot of lemon grass and slow cook beef bone for at least eight hours, before marinating pieces of meat and adding that to the soup as well.”

This tasty Vietnamese dish has proven to be hot item on the menu — literally. According to Nguyen, the chili pepper, lemon grass and herbs, blended with the soup, really spice it up. Also, she recommends adding some cabbage, bean sprouts, basil, shredded banana flower and shredded ong choy to the soup, and you’ll be in for a refreshingly healthy treat.

hile most restaurants use music as an accessory to their menu options, Kani Ka Pila Grille in the Outrigger Reef on the Beach is all about showcasing awardwinning, live Hawaiian music.

hen Sergio Arellano was younger, his mother gave him some advice that made a lasting impression on the young chef.

“She said, ‘You can go to the best chef’s school in the world, but if you don’t have it here,’” Arellano says, pointing at his mouth, “‘then you don’t have it at all.’”

Born in East L.A. and raised in Mexico City, Sergio Arellano became interested in cooking when he was a child, watching his grandparents and his father in the kitchen. “I liked the intensity of flipping and stir2 ring!” he says.

By the time Arellano met his wife, Kailua native Claudette Cabral, he was a chef in Las Vegas, often cooking thousands of meals at a time for conventions. When the couple came to Oahu for a visit, and Arellano could find no Mexican cuisine that suited his finely tuned palate, he decided to bring the flavors of his childhood to Honolulu.

Serg’s Mexican Kitchen opened in September 2009, and it was an immediate hit in densely populated Manoa Valley. This past December, the Arellanos launched a new location in Waimanalo, in the space formerly occu-

“At the end of the day, it feels good,” Sergio Arellano says. “We’re doing it for ourselves and our family.”

Family’s a big word for the Arellanos.

Both locations of Serg’s Mexican Kitchen are staffed with their relatives — daughters, nieces, sisters.

Perhaps most importantly, many of the recipes come from Serg’s family back in Mexico City.

The refrieds are black beans, just like Arellano’s grandmother used to make. “I was raised on them,” Arellano says. “We start with dry beans; we get here at 6 or 7 in the morning just to get them going.” The carnitas (Mexican pulled pork) is also made according to a family recipe — his father’s, Arellano says. “And my grandpa made a living selling tamales. They were the best! My dad is coming here to show me how to make them.”

Ultimately, Arellano plans to introduce his family’s tamales as a special. He has already perfected his chiles rellenos and will offer them as a special during the first week of March. Other specials are currently in development, including sopes — thick masa tortillas topped with meat, salsa, queso fresco, and lettuce — and pambazos, rustic white bread dipped in guajillo chile sauce, lightly fried and stuffed with Mexican chorizo and potatoes.

order of the day Arellano. “I’ve never seen pambazos in Hawaii; I’ve only seen it made by my mother-in-law.” She smiles at a customer who orders lunch in heavily accented English. About 80 percent of the restaurant’s guests, she estimates, are Mainlanders; many are from the West Coast, some even from Mexico, and pretty savvy when it comes to Serg’s food. “It’s so fulfilling when one of them eats here and says, ‘Wow! This is good.’”

“I can honestly say I have the best Mexican food on the island,” Sergio Arellano claims with pride.

“Everything I serve is authentic.”

The focus is on traditional ingredients: guajillo and pasilla chiles, queso fresco (fresh cheese), chorizo that Arellano swears is the best he’s ever eaten, and therefore the only kind he’ll serve. Diners who order Burritos ($8.75) are offered a choice of grilled chicken, steak, shrimp, bean & cheese, vegetables, chile verde, carne asada, carnitas, or al pastor--seasoned pork cooked, like gyro meat, on a vertical spit.

Saturdays and Sundays for $5.95 per bowl. The Mexico City Style Tacos can be ordered with chorizo, carnitas, chicken, carne asada, chile verde, or al pastor ($2.75 each) or fish ($3.25 each).

Each week Serg’s celebrates Taco Tuesdays, which begin at 4 p.m. and last till closing, by dropping those taco prices to $1.50 for chicken, pork, or beef, and $2 for fish. In Manoa, hungry college students begin lining up shortly after 4. In Waimanalo, word is spreading about the excellent new Mexican place next door to the post office. Both locations are low-key and friendly, and have elements often found in taquerias and mercados: brightly colored décor, mariachi music on the stereo, and a salsa bar with five freshly housemade varieties.

Patrons 21 and over may bring their own sangria or cerveza — there’s no corkage fee — and Serg’s also offers a variety of authentic non-alcoholic beverages.

“We have Mexican drinks only, ranging from Jarritos (a popular brand of soft drink, South of the

When it comes to plate lunch, many locals say don’t mess with what’s not broke. But 4Kings Kitchen is challenging this with a menu packed full of familiar favorites done up in a healthy, modern way.

“They definitely play on the local flavor palate with little twists here and there,” says Chef Kapolanialaimaka Kealoha of his recipes, many of which he describes as updated versions of the foods he loved to eat growing up.

“I got tired of waiting for my mother to make it,” says the local boy from Papakolea, “so I had to put it on my menu so I could eat it every day!”

For example, Chef Kapo’s Mochiko Chicken ($10) is an entire bone-in chicken thigh marinated and lightly dusted in a secret blend of seasonings, delivering the same flavors and crispiness of traditional machiko chicken but with a little something extra.

“You bite into a piece of chicken that’s actually moist on the inside,” he says, laughing. “My mom used to make (mochiko chicken), but she used to make it like everybody else — little bite-sized pieces of chicken that you deep-fried the death out of until

Dishes fit for royalty at 4Kings Kitchen

he road to achieving a dream is oftentimes a long and winding one, as Chef Kapolanialaimaka Kealoha can attest.

After graduating from Gros Bonnet Culinary Academy, the aspiring restaurateur was hired on at Waialae Country Club, where he got his “first glimpse of fine cooking” from Chef Tom Wong. After two years he moved to the Mainland to work at the Arizona Biltmore Resort and Spa in Phoenix, and a year later accepted a job with the Four Seasons hotel chain. That job would take him on a whirlwind journey from Jackson Hole, Wyo., to Miami, the Bahamas and eventually Palo Alto, Calif.

“By the time I got to Palo Alto, I was pretty much over the menu,” he says. “I had moved around so many times, I was just over it, so I decided to move home.”

Upon his return to Oahu, Kealoha took a position as executive chef at Tiki’s Grill & Bar in Waikiki, where he worked for four years before deciding to take the plunge and open a restaurant of his own. As luck would have it, late last year he found a small space for sale on South King Street.

“Every chef who thinks they’re going to open their own place has delusions of huge, obscene restaurants, straight fine dining, seats 140 people, and I did too. But realistically, this seemed a better fit for the first one — something small, something I could control, something that I can duplicate,” he says.

With a location secured, Kealoha and his business partner got to work on transforming the once-empty building into an inviting eatery filled with sleek, modern furnishings like black marble countertops, faux-leather chairs, stainless steel tables and creamy green walls lined with black-and-white photos of old South King Street and the by-

A month and a half later, on Jan. 25, 4Kings Kitchen officially opened for business. Its menu is simple, made up of local-kine comfort foods most of us remember from childhood — Chinese Steamed Fresh Island Fish ($11), Local-Style Beef Luau Stew ($10), Kulana Farms Meatloaf Sandwich ($9). But thanks to Kealoha’s diverse 15-year career, these dishes are all grownup. “(I was) born and raised in Hawaii, absolutely, but I learned how to actually cook on the Mainland, so a lot of things that I do have influences in American contemporary cuisine: Cuban, Southwest, California cuisines, America Northwest. I like to use ingredients and flavors that I picked up on the way through my career,” says the chef, citing Kulana Farms and Kuahiwi Ranch on the Big Island and MA‘O Organic Farms in Makaha as the sources from where he obtains the majority of his produce.

“I also use Kukui Sausage Co., Aloha Tofu and Taro Brand Poi for some of my specials,” Kealoha adds. “I’m always trying to look for locally grown items, locally raised items.

Sustainability is where it’s at.”

This commitment to keeping it local also means the 4Kings menu frequently features fish you won’t find anywhere else on the island.

“One of the things that I wanted to do — and I own the place so I can do — is I wanted to carry the fish that I grew up eating when we went diving or when we went fishing — uhu, akule, weke, all of the fishes that I ate growing up that you don’t necessarily find nowadays,” Kealoha says.

Also offered are daily dessert specials made from seasonal fruit like starfruit, apple bananas, Kula strawberries and Ohelo berries, as well as take-out and keiki options for busy families. (Which, as the father of three boys, Kealoha can relate to.)

“The good part is the food is good,” he says.

“I have a very strong feeling that we can bring (customers) back once they see what we have to offer.

“It was a journey, big time, but it was fun,” Kealoha adds of finally seeing his dream become a reality. “Now we can concentrate on trying to get the word out that we’re here.”

they were nice and hard. So I took that and did my own spin on it.”

While the chicken may be 4Kings best-seller, its most popular menu item is the “Not Your Normal Loco” ($11). Instead of the “normal” hamburger patty, Kealoha creates his own burger made from a special blend of fresh-caught mahi mahi and Kukui Sausage Co. kim chee Portuguese sausage. The plate is topped with homemade Hamakua shiitake mushroom cream sauce and two eggs cooked in your choice of style.

“Upscale plate lunches are definitely what I’m aiming for,” Kealoha says. “I just want people to come in and say, ‘That’s just good local food.’”

The chef plays to locals’ cravings even more with his Kiawe-Smoked Baby Back Rib Sandwich ($9).

“Everybody likes braised ribs,” he says with a smile.

Kealoha starts this dish by slowroasting a generous portion of pork ribs until the meat is tender enough to pull off the bone. He then smothers the meat with a Lehua Honey barbecue sauce, adds on fresh vegetables and D I N I N G

serves everything atop a hoagie roll. The meal is made complete with choice of fries or MA‘O Farms sassy mix salad on the side.

“I don’t presume that I make the best plate lunches in Hawaii, but I do presume to think that my plate lunches are darn good,” Kealoha says. “I would eat it, and if I would eat it, I’ll serve it. And it’s not what you’ll find anyplace else.”

revamping the restaurant to go along with the new Big Aloha venture.

“I think with the additional venture it’s forced us to look inward so that we make sure both ventures go well. We know there’s going to be a lot of excitement about the beer garden, and we want to make sure this doesn’t get left behind,” he explains. “It’s a renewed focus on the food, the service, the ambiance, what the guest is experiencing.

“Basically what chef has been doing is getting back to where we were when we first opened 14 years ago. You’re going to see a lot more local products being incorporated into the new menu that will be coming up.”

Some new dishes include the Luau Benedict ($11.95). Available on the lunch menu, this ono treat also is perfect for a late breakfast. The kalua pork is made in house from Sam’s own original recipe and layered between a toasted English muffin, sauteed spinach and poached egg, and topped with a large spoonful of fresh hollandaise sauce.

“People love it,” Garcia notes.

But as the saying goes, you can’t mess with a good thing. Several of Sam Choy’s personal favorites and signature dishes will remain on the menu, like the Onolicious Rack of Ribs ($29.95), Crabmeat Stuffed Island Fish ($28.95), Ahi Salad ($17.95) and the 1-pound Bumbucha Alaskan King Crab Legs ($37).

“We try to get the biggest crab here in the islands,” Garcia says, citing that they have a crab on their logo for good reason.

“We also have New York Steak ($25.95), Grilled Lamb Chops ($27) and Macadamia Nut-Crusted Chicken ($19.95),” Garcia adds. “And the Banana Lumpia ($7) is Sam’s favorite dessert. It is made with bananas wrapped in rice paper and served a la mode with vanilla ice cream and chocolate sauce.”

All entrees are served with dinner rolls, sauteed vegetables and choice of steamed white rice, brown rice, french fries or Sam’s original Kapakahi Mashed Potatoes, a creamy, kicked-up blend of potatoes, garlic, spinach and corn.

Sam Choy’s Breakfast, Lunch and Crab is open for breakfast, lunch and dinner, with private banquet seating available for up to 150 guests.

There also is a Monthly Brewer’s Dinner held on the third Thursday of every month in the private dining room to educate patrons on food and beer pairings. Garcia prepares different items for the five-course menu each month to help bring out the subtle nuances of the beer, which folks can see go through the distillation process on group tours planned to start this summer.

“We’re very flexible, we have so much to offer,” Garcia adds. “There’s so many things going on in a day, we get so many kinds of menu (items) to choose from.

“Right now we have the momentum, we can feel it,” he adds. “We have a lot of repeat guest and a lot of good comments, so that’s a good sign.” |

Jihei and Tsuya Takayama founded the establishment on South King Street in 1939. Today, Arrison Iwahira, Fukuya president and great-grandson of the original founders, says there are close to 40 items on the deli menu.

“You create your own bento here and can basically choose whatever you want or whatever you feel like eating for the day,” Iwahira says, reminding customers to come early for the best selection.

“A lot of people come in before work or school, bring their kids and pick up a bento,” he adds. “It’s not your traditional bacon-and-eggs kind of breakfast.”

And while I love bacon and eggs, sometimes I just have to get my fix of Nori Chicken ($2), shrimp tempura, teri ahi and hot dog roll ($4.25). All recipes have been in the family for generations.

“Those are some of the local-Japanese favorites here,” says Iwahira, adding that everything is sold a la carte. He also credits the hard work of the many chefs and 13 dedicated employees on staff who are up before the sun to ensure that the appetites of Hawaii’s foodies are met.

Makino Chaya

Most know Makino Chaya for its allyou-can eat buffet that leaves foodies like myself stuffed for days. However, it’s the restaurant’s wide variety of bentos that got me this time around.

Owner Jo Makino opened the first Aiea establishment in 2005, then a year later opened the doors to Makino Chaya’s second location in Aloha Tower Marketplace.

“Lots of people come here to celebrate parties and family gatherings, but we started selling bentos about a year ago,” Makino says.

All bentos are made fresh daily with your choice of Miso Butterfish ($4.97), Baked Salmon ($4.97), Barbecue Pork Ribs ($4.97), Lemon Chicken Katsu ($3.97), Garlic Ahi ($3.97), Crab Meat Salad ($3.97), Crab Meat Omelette Fukuya Deli & Catering ($3.97) or lastly Makino’s Tokyo 2710 S. plete with shrimp tempura, rice, spaghetti, potato croquette, mung bean noodle salad, tamagoyaki (egg omelette) and beef mondoo. At such affordable prices, these bento options are really hard to beat.

According to Makino, the Miso Butterfish bento is the top seller among locals and tourists, and he says a Pork Katsu Curry bento ($3.97) also will be added to the lineup starting today.

“I recommend customers to preorder their bentos because we sell out really quickly,” Makino says, adding that when you buy a $4.97 or $3.97 bento, then you receive a $5 or $4 gift card for the restaurant as well.

Ingredients • 4 cups steamed white rice • 1 carrot, juliennes • 2 cups cooked bean sprouts, blanch for a minute in hot water, then season with little sesame oil • salt • 4 cups spinach, or choi sum, sautéed in a little sesame or peanut oil and seasoned with salt • 8 shiitake mushrooms,

recipe all ingredients with some gochuchang paste, to taste.

• The bibimpap should be moist, not dry.

By Chef Chai Chaowasaree Serves 4 thinly sliced and sautéed in peanut oil and seasoned with salt • 4 eggs, cooked sunny side up • 2 tablespoons sesame seeds • 2 tablespoons dark sesame oil • soy sauce, to taste • Gochuchang paste, to taste • 1 pound bulgagi

Directions • Put cooked rice in large, slightly shallow bowl. Place bulgogi and veggies on top of rice, but place separately so you can see each ingredient.

• Place egg on top.

Sprinkle with sesame seeds and drizzle with sesame oil and soy sauce.

• When ready to eat, mix

Bulgogi: Ingredients • 1 pound rib-eye, slice to bite-size Marinade: • 1/2 cup soy sauce • 2 tablespoons finely chopped garlic • 1/2 small white onion, grated or sliced • 1 tablespoon grated fresh ginger • 2 tablespoons lightbrown sugar • 2 tablespoons sesame seeds, toasted • 2 tablespoons toasted sesame oil • 1/4 teaspoon groundblack pepper • 2 green onions, thinly sliced

• 1 tablespoon grated ginger Directions • Combine and whisk all marinade ingredients together in a large bowl.

• Add thinly sliced beef and turn to coat. Cover and refrigerate for at least 2 hours or overnight (best if marinated overnight).

• Heat grill to high.

• Remove beef from marinade and grill each side for 1 to 2 minutes.

• Remove from heat and set aside until ready to compile bibimbap.

Tips: Bibimbap can be placed in a regular bowl or a hot stone bowl. If it’s in a hot stone bowl, expect the rice to be crunchy, as it’s still cooking.
