ongiorno, Ono readers! Being that my father is full Italian, I am proud to say that my love and affinity for authentic Italian cuisine is alive and well! Whether it be al dente pasta, gnocchi, ravioli or lasagna — I’m a fan of it all. Now, nothing beats the Italian food found in Italy, but I am very happy to say that this week, while in the mood for lasagna, I found some Italian/EuroAsian eateries around town that come remarkably close.

So, instead of traveling thousands of miles to Italia to lavish in layers of “Ono, You Know” lasagna, I took my taste buds to my favorite hot spots closer to home to marvel in this zesty dish— even a unique lasagna-like dish that stands in a league all its own.

Romano’s Macaroni Grill Classic Italian cuisine is what Romano’s Macaroni Grill is all about. Having opened its doors in November 2005 at Ala Moana Center’s Hookipa Terrace, this family favorite brings a taste of Italy right to our island home — all thanks to its talented chefs and kitchen staff, headed by executive chef Michael Longworth.

Gigantic portions are common here, so don’t be surprised if you’re headed home with a doggy bag or two. Romano’s Macaroni Grill specializes in plates of pasta, among other tasty treats, and it doesn’t take a rocket scientist to figure out that I’m crazy about perfecto pasta.

However, on this particular visit I just so happened to be wearing the wrong ensemble — white! Knowing that I’d probably splash tomato sauce on myself, I opted for lasagna instead of spaghetti — and a smart choice that was! Not only did I manage to keep my top marinara sauce-free, but Romano’s lasagna is deca-

Dining Out recently paid a visit to the famed Waikiki eatery originally known for its “Bahawaiian” cuisine, which showcases a taste of unique Hawaiian fusion. It was there that we obtained an exclusive interview with RumFire executive chef Brett Villarmia and Starwood Hotels & Resorts Waikiki public relations manager Diana Su who, for the first time ever, gave us a sneak peek into RumFire’s new and improved Pacific Riminspired menu set to be presented to the public later this week. So, turn up the heat and get ready to feast on immaculate cuisine that emphasizes

DO: So, before we dish about the new menu here at RumFire, tell us what this establishment is known for.

Villarmia: RumFire is known for its contemporary tapas that are designed to be shared and enjoyed by everyone — there’s a lot of spice in our cuisine.

DO: Chef Brett, you came on board in August, just in time to work on this new menu. What can people expect?

Villarmia: We’ve created a new concept with our new menu and we’re calling it social comfort food. Our menu highlights global influences with a distinct Hawaiian focus, and we display this by utilizing local products whenever possible. And since we are RumFire, there’s a lot of fire and spice infused into our food, so it’ll make you enjoy your drink a little more.

Su: We really wanted to bring back a lot of the local favorites while also putting a twist on it. You can find local products anywhere, but it’s rare to find a place that serves up to 70 percent of locally sourced produce in that local recipe, and that’s really what we’re trying to capture. RumFire is a local favorite — it’s a local bar that everyone hangs out at — it’s known for its cocktails and ambiance, so it’s only natural for us to really take a more local approach to the food and steer away from the “Bahawaiian” and just go for

DO: How does this new menu differ from the previous menu?

Villarmia: The previous menu concentrated on “Bahawaiian” cuisine, with a local, island, Tex-Mex flair, and now we’re going into another phase of the cuisine, really making use of the fresh, local ingredients that our islands have to offer.

Su: It’s now a lot easier for the local farmers here to become certified to sell to the larger hotels and we’re able to then purchase more produce, and that’s why today we’re able to come up with this locally sourced menu, whereas three years ago all of our products would have been shipped in from California or any other state.

If you’re to compare Hamakua tomatoes to tomatoes from California, you can literally taste the difference in the juiciness and the sweetness of the tomato. You take a vine-ripened tomato that was picked yesterday and a vine-ripened tomato that was picked a week ago, there’s a huge difference.

DO: Great! So, what inspired this change to the menu?

Villarmia: The changes came because we're trying to keep up with the culinary trends, and we’re doing our best to stay current. The previous menu was in place for two years, and we knew it was just time to make a change — to give RumFire a new life.

DO: What are some dishes on the new menu that patrons from all over the world can look forward to?

Villarmia: Well, first off we have the Sticky Chicken Wings ($12). The chicken wings are brined in buttermilk, brown sugar and a little bit of garlic, served with a macadamia nut Hawaiian chili pepper honey on a baby waffle that’s spread with some honey butter.

Then there’s the Spicy Ahi Poke ($16) with caramelized Maui onion sambar, habanero peppers, slowly simmered and mixed with the ahi

poke. It’s then finished with a poke water and sesame wonton.

Also, we’re now featuring a Grilled Rib Steak “Pupu” Style ($28), with a Kau coffee spice rub served with smoked Kahuku corn puree and local garlic confit. And our “Angry” Mac n Cheese ($8) is something special here at RumFire — it’s like your traditional mac n cheese, only we utilize pepper Jack cheese and smoked jalapeno. We basically make it RumFire-style and kick it up a little by adding chipotle and other spices to it, and it also comes complete with a tomatopowder crust. It’s very hip.

DO: In addition to all these wonderful new items, can loyal diners be on the lookout for any RumFire originals as well?

Villarmia: We’ve changed 90 percent of the menu, but we’ve kept some RumFire classics. For instance, we’re sticking with the Kim Chee Fried Rice and the Chipotle BBQ Rum Baby Back Ribs, which are really popular among the local guests. Another

classic that we’ve kept on the menu is the edamame that a lot of people seem to return for.

DO: What specific local ingredients are utilized in RumFire’s new creations?

Villarmia: Our goal is serve as much locally sourced produce as possible and to be as sustainable as possible. The ribeye that we’re featuring utilizes sweet corn from the North Shore, the ahi poke also consists of the ogo from the North Shore, as well as the Kahuku sweet asparagus and Maui onions. The chicken used in our sweet chicken wings is from State Poultry and the honey itself is from the Big Island.

DO: Chef Brett, where do you find your culinary inspiration?

Villarmia: Well, I spend a lot of time in Chinatown, and every Sunday I walk around checking out the new fruits and vegetables they have, and I’m always watching Food Network and the Cooking Channel — those type of things really inspire me.

DO: What is your overall goal for this establishment? What do you want your customers to walk away with besides a full belly?

Villarmia: I want our guests to want to come back and eat more. I want them to have such a good time with the food and drink that they can’t wait to return.

DO: Chef Brett, you have an impressive culinary background. What brought you to RumFire?

Villarmia: Just the chance to redesign the menu. And although there’s been some stress in obtaining local products, the reward is that everyone will eventually be able to enjoy the food. It’s great to see my idea on a plate, which in turn puts smiles on the faces of many.

Su: Brett is very well known for his creativity and his local boy roots, and when you pair those

two together that’s exactly where we want our menu here at RumFire to be — we want it to stay local and we want it to be creative, and Brett has done an amazing job.

Signature dishes at Sekiya’s

By Ali Resich hat started as a place to share a few cherished recipes with family and friends has grown into an iconic local restaurant over the past 75 years.

Opened in 1935 by current owner Joy Morihara’s grandparents, Sekiya’s Restaurant and Delicatessen on Kaimuki Avenue is a community staple still serving up traditional favorites.

From soups and donburi to seafood dishes, burgers and more, there is always something to choose from at this eatery. “We offer a wide variety, the sort of food you can eat everyday,” says Morihara. And since all the delectable menu items are home-style and cooked from scratch, Sekiya’s has become a home away from home for many. “A lot of customers eat here all the time.”

The establishment also specializes in Okazu, or Japanese delicatessen foods. As the first items sold there, Okazu make up the food foundation of this legendary spot and are still offered today. Patrons can choose from an assortment of small dishes such as barbecue meat (85 cents a slice), miso soup ($1.75 small, $2.95 medium, $4.95 large), and vegetable tempura ($1.10). Frequenters also enjoy the various sushi options available at the delicatessen counter as you enter the restaurant.

For dine-in customers, the full course meal accompanying the entrée of your choice includes miso soup, rice, tsukemono, and a pot of green tea to complete your dining experience. However, save room for

Although Singha Thai was popular, Chaowasaree decided to open Chai’s Island Bistro so he could focus on fusion cuisine, something he always enjoyed because he “likes to come up with something different.”

“At Singha Thai, I would always come up with (dishes) that had a little Thai in it, but it was more Euro-Asian,” he recalls. “The guests loved it, but they said, ‘This is not really Thai food, but it’s really good!’ After a while, I

thought, ‘Why don’t we open another restaurant that’s not Thai, so we’re not limited to Thai cuisine only.’”

Indeed, customers who visit Chai’s Island Bistro for lunch or dinner will find a unique variety of Pacific fusion dishes.

The restaurant’s signature dish, according to Chaowasaree, is an appetizer — the Kataifi & Macadamia Nut Encrusted Jumbo Black Tiger Prawns ($10), which is served with fresh pineapple, pineapple vinaigrette and a bouquet of organically grown baby greens.

“That’s the one (entrée) we’ve won many awards for,” Chaowasaree states.

Other popular appetizers include the Baked Stuffed Quail ($15) — boneless quail stuffed with Portobello mushrooms, fresh herbs, sun-dried tomatoes and foie gras — and the dinner menu’s Sautéed Escargot & Prawns with Hamakua Mushrooms ($15), featuring Chaowasaree’s signature recipe.

“We have the best escargot, but it’s not with traditional garlic and butter,” Chaowasaree explains. “We do a roasted garlic, chili and ginger sauce with the escargot instead.”

In terms of entrees, Chaowasaree recommends the Crispy Whole Snapper ($34), served with sun-dried tomatoes, citrus buerre blanc and Asian stir-fried vegetables.

“Entrees run between $30-$40,” Chaowasaree says. “We don’t really have daily or monthly specials, but in our Dining Out ad, we do 50 percent off on the second dinner entrée on Sunday, Monday and Tuesday.”

For dessert, extremely popular are the Hawaiian Vintage Chocolate Pyramid with Fresh Berries ($10) — which is part of the restaurant’s four-course menu — as well as the Crème Brulee Sampler ($9), a mixture of Chocolate & Tahitian Vanilla Beans, Chai’s Tea and Thai Coffee.

While many locals opt to dine in at the eatery, Chai’s Island Bistro also is popular for catering. Various catering menus, including those for pupus and a luau, are available on the restaurant’s website, chaisislandbistro.com.

“The Baklava is the most popular (dessert), but everything is made from scratch in our restaurant,” Rizk notes. “There’s no canned food over here!”

At Greek Marina, lunch prices range from $6.95 to $12.95, while dinner prices range from $14.95 to $18.95.

The eatery also features weekend specials, providing customers with dishes that are not on the regular lunch and dinner menus.

“One of our weekend specials is a baked chicken, served with rice and salad,” Rizk says. “Our other special is a mixed seafood dish; it’s fried calamari, calamari steak, shrimp and fish, served with rice and salad.”

Greek Marina tends to be the busiest during dinner and on the weekends, according to Rizk. The restaurant offers takeout options for its customers, but the takeout menu varies slightly from the dine-in menu.

“The takeout menu is our lunch menu,” Rizk explains. “It’s a little different; the dine-in menu includes more items.”

Popular dishes include appetizers such as Namul ($6), which features three kinds of Korean style vegetables flavored with a sesame oil blend, and entrees including Samgyubsal ($24 for two servings), a pork belly prepared yakiniku style.

The creative cooks at Richo also have thought up a number of dishes that are unique to the Hawaii location. These dishes include Volcano ($18 for two servings), which Hanzawa says is a customer favorite. The Volcano is Teppan Nabe with a mix of vegetables, seafood and beef intestine — all surrounded by tofu. Other local originals include the Seafood Chijimi ($14), a crispy seafood pancake that customers rave about, and the Okage Cheese ($10), which includes cheese and garlic with rice.

It all has a really nice flavor.” Hanzawa anticipates that the White Nabe will be unveiled some time in October.

“We just wanted to put on the menu things (other Italian restaurants) didn’t offer — just thinking out of the box and what I would serve back home in New York,” says Brooklyn transplant and executive chef Joey Gonzalez.

Take, for example, the Stuffed Pizza ($26.95). True to its name, this literal pizza pie begins with a base dough layer and is stuffed with either a medley of meat (pepperoni, sausage, ham and bacon) or vegetable (spinach, tomatoes, mushrooms, onions, peppers and garlic), topped with fresh mozzarella and is finished with another layer of dough.

t’s no secret that surviving in the restaurant industry is a tough act. But when a business can not only flourish but has the popularity to expand to a second location, well, that’s an even rarer feat.

Bella Mia Italian Eatery has managed to accomplish all this and more over the span of two years. Opened in 2009, the casual Italian restaurant began with its first location on the first floor of the 11th Avenue Atrium in Kaimuki. Thanks to a simple recipe of homemade Italian favorites like Antipasto Salad ($8.95), Chicken Parmigiana ($16.95), Baked Ziti ($9.95), Shrimp Scampi ($18.95) and made-toorder pizzas paired with a side helping of warm, friendly service, Bella Mia was able to open an open-air restaurant on South Beretania Street last year.

“We’ve been doing this a long time, we have a lot of experience and we love what we do,” says executive chef Joey Gonzalez, who has worked in kitchens from his native New York all the way to Texas for the past 28 years.

“It brings us a lot of joy and happiness to see customers enjoying our food, because we enjoy it too.”

The chef recently gave customers even more reasons to smile when two months ago he introduced even more menu items, including Bruschetta Chicken ($17.95), and a slew of vegetarian options such as the Vegaboli ($10.95), Veggie Lasagna ($11.95), Spinach Alfredo Pizza ($13.95), Eggplant Parmigiana ($14.95) and Eggplant Rollatini ($17.95).

“There are a lot of healthy people on the island, and they love eggplant,” Gonzalez says. “It’s nutritious and delicious, as I like to say.”

The new menu also offers a little something for those with a sweet tooth, including Tiramisu ($6.95), Cheesecake ($6.95) and multiple gelato and sorbet flavors including mango, lemon basil, coconut, spumoni, Kona coffee and Tahitian vanilla ($5.95 each).

“We have a very large menu,” Gonzalez says, noting there is a no corkage fee for BYOB. “You bring the bottle, we got the glass!” he says with a laugh.

“And then we do what the customer wants,” Gonzalez adds. “If they want to sub things we can do that, or if there’s something they don’t like on the dish, we take it off.”

The reason the chef can be so flexible with his recipes is because all items are made fresh by hand every day, from the meatballs to the dough to the sauce.

And to continue accommodating customers, earlier this year Bella Mia began offering free delivery service to anywhere in the Honolulu area.

“We’re the only ones to offer free delivery on the island, lunch and dinner,” Gonzalez notes.

“We also just started catering, and we’ll cater to anywhere on the island within 24-hour notice. Just call the Kaimuki location and ask to speak with the chef. We can work with any budget. There’s no order too small!”

Gonzalez highly recommends ordering the Puttanesca ($11.95), a spicy pasta dish made with black olives, capers, plum tomatoes, red onion, basil, garlic, olive oil, white wine and anchovies.

“What happens is the anchovies break down into a sauce and mix with the other ingredients, the olive oil, the marinara, the white wine ... It’s delicious. It’s very good,” he says, adding a Chicken Puttanesca ($17.95) and Shrimp Puttanesca ($18.95) also are available.

“We just started a new menu two months ago, and the Puttanesca’s the new kid on the block,” Gonzalez says. “So far everyone loves it; it’s the most popular dish right now.”

As prices in our slowly improving economy have risen Rainbow Drive-In has done its best to stick to the standards and values it opened the restaurant with many years ago.

“It has been hard but we always want to give our customers fast service, large portions and a good price so we try to hold on to those values,” says Pam Martin, who has been working at Rainbow Drive-In since 1983.

Dining Out featured Hanaki Restaurant in last week’s issue (Sept. 18) and mentioned the diverse shabu shabu selections available at the restaurant. However, the article mentioned a “shabu shabu buffet” when actually all shabu shabu items are served a la carte and priced individually.

Mongolian Style Lamb Chops with Brandy Demiglace Serves 4 | by Chef Chai Chaowasaree Ingredients: • 2 racks of lamb, cut into double chops • 3 tablespoons chopped green onion (prefer the white part) • 1 tablespoon whiskey • 1 tablespoon sesame oil • 1 tablespoon toasted sesame seeds • 1 1/2 tablespoons hoisin sauce • Pinch black pepper • 4 cups mashed potatoes • 4 cups sauteed vegetables Preparation: • Cut and trim fat from the lamb rack and then cut into double chops; set aside.

• In a bowl, add green onion, whiskey, sesame seed, sesame oil, hoisin and pepper and mix together. With your hands, squeeze the green onions along with mixture to release the oil from the onions until onions soften. Use as a marinade.

• Put the lamb into the bowl and rub the marinade over the lamb evenly. Let it sit for an hour minimum or you can let it sit overnight • On medium heat, grill your lamb for a minute on each side.

Put in a preheated oven at 350 degrees for about three to five minutes or longer, depending on how you like your lamb cooked.

• To plate the dish, put one scoop of mashed potatoes and vegetables. Lean the lamb chops against the potatoes to let it stand up. Surround with the sauce and garnish with a stem of fresh herb.

For the sauce Ingredients: • 1 cup red wine • 2 cups veal stock • 1/4 cup brandy • 1/4 pound unsalted butter • In a sauce pot, combine red wine and brandy, and bring to a boil to reduce the liquid by half.

• Add veal stock and reduce the liquid to quarter, then add butter to thicken the sauce.
