Why not

lighten upwith fresh Ahi Salad?

fter last week’s amazing high of birthday cake indulgence, I’ll admit that I’ve been slowly falling back to earth from that overdose of carbs and sugar. That’s why I’m in desperate need of a cleanse — meaning, I need to partake in meals that are abundant in fresh vegetables and fish with lots of nutrients and omega-3 fatty acids. With that in mind, I decided to treat my body right this week with all the ahi salad my heart (and stomach) desired, and it was quite a welcome change, to be honest. I wound up venturing into some of our island’s finest establishments known for incredible ahi salads — and, without a doubt, they all were “Ono, You Know” worthy, of course! So after feasting on salad all week, I’m happy to report that I’m feeling a bit

lighter on my feet. And now that the sugar rush has subsided and I’m I’ve refreshed, decided to hike up Koko Head. I’m pretty sure I’ll regret this later, but maybe all of can meet me at the top? After all, I may need some help getting back down!

Atlantis Seafood & Steak Atlantis Seafood & Steak is the place to be these days as the eatery serves up everything from savory island-caught fish and whole Maine lobster to the most tender steak and prime rib. And while you would expect most of the alluring creations at Atlantis Seafood & Steak to be rich and hearty, there actually are a few options specially made for lighter appetites. Enter the Ahi Salad Nicoise ($16.95). As one of the premier salads on the menu, locals and tourists can’t seem to get enough it. And truth be told, neither can I. The Ahi Salad Nicoise features panseared fresh ahi tuna on Nalo greens,

accompanied by asparagus, black olives Now, many are familiar with Pagoda, and Okinawan potatoes topped with an establishment that serves as a your choice of dressing, be it ranch, blue cheese, balsamic vinegar or house – See page 16 Oriental. This refreshing salad also makes a great starter course before indulging in your main entree. Kamaaina also receive a 10 percent discount with a valid Hawaii ID. Dining Out is a weekly advertising

Food for Any Palate story by Alana Folen • photos by Leah Friel

ong Kong is a city-state situated on China’s south coast, enclosed by the Pearl River Delta and South China Sea. With a population of seven million people and growing, it’s safe to say that Hong Kong is one of the most densely populated areas in the world, renowned for its amazing skyline, deep natural harbor, and impeccable cuisine that features an exotic blend of East meets West. Ken and Cindy Wong, owners of Anytime Cafe in Market City Shopping Center, long ago recognized the culinary benefits of this former British colony and immediately decided to bring the Hong Kong-style cafe concept to the islands. Originally from Hong Kong and having opened the doors to their establishment in February 2010, the Wongs have extensive knowledge and experience in the restaurant business. “Seven years ago I owned Hong Kong Orchid Cafe, which was known for its more traditional Hong Kong-style cuisine and we brought the traditional style Won Ton Min here,” says Ken, who also previously owned the Banana Leaf Italian Bistro. Dining Out recently caught up with Ken and Cindy over refreshing sips of Hong Kongstyle milk tea inside their cafe, where we bridged the 5,000-mile gap between Hawaii and Hong Kong.

DO: Can you explain how Anytime Cafe is similar to the cafestyle in Hong Kong? Ken: The Hong Kong-style is East meets West, and we do offer Hong Kong-style cuisine, such as wonton noodles, which is very tra-

ditional, along with our Hong Kong-style milk tea. We do serve pasta as well, as do many Hong Kong cafes, but I believe our pasta can be deemed authentic Italian. Hong Kong cafes are open long hours, too. Cindy: There’s a variety of cuisines at Hong Kong cafes and that’s the concept that we aim for here. DO: What’s the difference between a “cafe-style cuisine” and “restaurant-style cuisine?” Cindy: I believe restaurants focus more on a specific type of cuisine, while here at a cafe we offer a bit of everything. Everything on the menu is available to our customers once we open — so they can easily have pizza or pasta for breakfast if they want. DO: Anytime Cafe specializes in Italian-style and Hong Kong-style cuisine, in addition to local favorites including oxtail soup and loco moco. What is the ultimate goal when it comes to this restaurant? Ken: Our goal is to offer a casual dining experience at a reasonable price where there’s something for everyone. We work to make this place very family-friendly, serving only the best-quality products. DO: You folks recently released a new menu. Can you elaborate on your latest culinary lineup?

amaaina would agree that one of the best things about living in the islands is being able to savor the delicious tastes of the hearty plate lunch. And with plate lunch seemingly always on the brain, locals know that Rainbow Drive-In in Kapahulu is their best option for such a tasty meal. Founded by Sejiu and Ayako Ifuku in October of 1961, Rainbow Drive-In is today operated by vice president Jim Gusukuma, the Ifukus’ son-in-law. According to Gusukuma, the establishment offers patrons a wide range of options that span the rainbow. “For the most part we like to stick with the original recipes from years ago, but we have added a few things to the menu throughout the years,” he says. For example, Rainbow Drive-In’s much-loved Shoyu Chicken ($6.25) was derived from a recipe of a former chef years ago. Since then, the alwaysrequested dish has been satisfying the appetites of hungry diners from across the globe. “Our Shoyu Chicken features chicken thighs marinated in a sweet and sour sauce consisting of apple cider vinegar, shoyu, sugar and hints of ginger,” Gusukuma explains. “It’s not an original recipe at

Rainbow Drive-In, but it’s turned out to be one of our most popular dishes and people really seem to like it. It’s one of our standard plate lunches available on Mondays, Wednesdays, Fridays and Saturdays.” As for a Rainbow Drive-In original, the BBQ Steak ($7) is a difficult one to beat. Served daily, diners can expect tender slices of beef served on a bed of cabbage. “Our recipe is old fashioned, and we stick to a more traditional Japanese teriyaki flavor, using shoyu, sugar and a lot of ginger,” Gusukuma states. “This is a very typical 1 plate lunch in Hawaii.” All plate lunches come complete with two scoops of rice and macaroni salad. And in honor of Rainbow Drive-In’s 50th anniversary this year, the establishment also is rolling back the prices to those that were seen in the ’60s and ’70s. Upcoming anniversary specials include 25-cent Saimin Sept. 17, from 5 to 9 p.m.; and $1 Chili Plate Oct. 16, from 11 a.m. to 7 p.m. Anniversary specials will be sold only at the parking lot tent (limit five items each, no phone orders).

f there’s one food vegetarians can count on, it’s tofu. Stir-fried, deepfried, baked, broiled — there are endless ways to prepare it, and its subtle flavor lends itself well to marinades and sauces. And since it’s relatively

low in calories and fat, as well as a good source of protein, it’s quite healthy as well. Speaking of healthy, 123 Wok offers a “Healthy Lunch” menu from 10 a.m. to 4 p.m. daily that includes its popular House Style Tofu — crispy tofu stir-fried with snow peas, mushrooms, bamboo shoots, baby corn and carrots in a “special” sauce (they wouldn’t reveal the recipe for

Kozo Sushi

f you’re craving sushi, but don’t have the time to dine in, look no further than Kozo Sushi. With five convenient locations throughout Oahu — Pearlridge Center, Kahala Mall, Moiliili, Pearl City and Keeaumoku — Kozo and its takeout services are available to the masses. Maybe best of all, Kozo’s quality restaurant-grade sushi comes at reasonable prices. Kozo Sushi prides itself on serving up traditional Japanese dishes as well as concocting its own local-inspired flavors. Popular sushi items include Futo Maki ($3.69), Ahi Nigiri ($1.99), Shrimp Tempura Maki ($4.99), Ahi Lover ($7.15) and Spicy Ahi Maki ($5.99). Some of the more notable dishes are Dragon Maki (6.99), Dynamite Maki ($7.25) and Spicy Ahi Don ($6.15). These items were created by restaurant chefs looking to cater to local clientele, and the dishes have quickly become customer favorites.

8 | D I N I N G O U T | A U G . 2 1 - 2 7, 2 0 1 1

While these dishes may be found in other sushi restaurants, Kozo prepares its sushi differently, mixing a variety of sauces and ingredients that result in innovative sushi creations. The Dragon Maki, for example, includes shrimp tempura, lettuce, ahi, masago, green onion, spicy sauce, teriyaki sauce and sesame seeds. The Dynamite Maki, one of the newest additions to the Kozo menu, includes shrimp tempura, spicy ahi, masago, green onion, chili sauce and wasabi — all rolled up in a breading of barbecue potato chips. Another new dish is the Tsunami ($6.99), which combines a California maki (avocado, crab and cucumber) with ahi and chopped green onions, rolled in tempura chips and drizzled with sweet chili sauce on top. The chefs at Kozo Sushi are constantly inventing new dishes, so stop in often to discover their latest creations. The chefs enjoy drawing on local flavors, playing

with different ingredients and mixing things up. Kozo is in the process of inventing new sushi dishes right now and hopes to unveil the items next month. To keep updated on Kozo's new items, visit Kozo also offers a number of Party Plates to be shared with the entire family or brought along to a get-together. The Kamaaina Plate ($42), which can feed 10-12 people, has 98 pieces of sushi, including California Maki, Egg Maki, Futo Maki, Tempura Maki, Cucumber Maki and Cone Sushi. The Family Set ($23.99) is made up of 45 pieces of sushi that includes Ahi Nigiri, Shrimp Nigiri and Salmon Nigiri. Stop in soon to take advantage of Kozo’s Party Plate deal — 10 percent off each plate until the end of September. And if you want something else to go with your sushi, Kozo also offers a number of other dishes such as Spicy Ahi Kakiage Don ($5.99) Salmon Ikura Don ($6.99) and Ebi Tempura Soba ($5.50).

Delicious char siu leaves you Happy hether you are in the mood for breakfast, lunch or dinner, Happy Day Chinese Seafood Restaurant — a staple in Kaimuki for the past 11 years — offers a seemingly endless menu of traditional Hong Kong-style Cantonese meals that include soups, seafood, noodles dishes and dim sum. Two noteworthy dishes that display the quality and delightful taste of Happy Day are the restaurant’s Orange Chicken and Barbecue Roast Pork — both served a la carte for $9.95. “The Orange Chicken is covered in our sweet and sour sauce and gently stir-fried, and

As good as it gets G reek Marina, the creation of owner and chef Tarek Guirguis and business partner Nasser Rizk, offers a host of authentic Greek cuisine in a relaxing atmosphere within Koko Marina Center. As customers enjoy their meals, views of boats, inner tubes and paddlers within the bustling marina offer a picturesque backdrop. The eatery has a large selection of appetizers that go well as starters, and also can be enjoyed as a quick meal. The Hummus ($6.95) draws rave reviews from returning customers. The blend of garbanzo beans, tahini, fresh garlic and lemon is topped with olive oil and served with freshly baked pita bread. A hands-on eating experience awaits as customers dip the warm,

fluffy pita in the hummus to create a mouth-watering combination of flavors. Dive in for some Fried Calamari ($7.95) as the deep-fried morsels are served with a tangy garlic mayo sauce. The plentiful platter provides diners with a mountain of fried squid that gives the Acropolis a run for its money. Those looking for a vegetarianfriendly option will enjoy the Falafel ($6.95), a mixture of crushed chickpeas, parsley, garlic and spices fried in fresh vegetable oil. The Spanakopita ($4.95), or spinach pie, features fresh spinach and feta cheese baked together in filo dough. The result is a flaky pastry-like dish with a buttery crust that seems to melt in your mouth.

Lovin’ the treats at Larry’s W

Larry’s Bakery Where: 4369 Lawehana St., B-2, Honolulu, HI 96818

Hours: Monday-Friday, 6 a.m.-1 p.m.; and Saturdays, 8-9 a.m. (pre-order pick-up only)

1 Cake froster Jan Achiu helps decorate Cupcake Bouquets ($33.95) to the customers’ liking.

hoever coined the term “a little slice of heaven” undoubtedly was talking about Larry’s Bakery’s White Chantilly Cake ($13 for an 8-by-8-inch cake). “We created the cake for people who cannot have chocolate,” explains Iris Yafuso, who co-owns the bakery with her brother, Lance. But even chocolate fiends will find this one unbeatable. Light, fluffy and moist, the delectable treat is filled with a white chiffon frosting and sprinkled with macadamia nuts on top. While this may be one of the bakery’s most well-known concoctions, it’s certainly not all Larry’s has to offer. Larry’s has a vast menu of treats, including pastries such as Cinnamon Twist ($1.40) and Apple or Coconut Halfmoon ($1.40); pies such as French Apple ($11), Pear ($11) and Coconut Custard ($10.50); and cakes such as Haupia, Guava and Dobash. Larry’s has been a family-run operation since the late ’60s, when Yafuso’s father opened it. Yafuso and Lance have been in

charge for about the past decade. But they haven’t strayed too far from their roots as they still use oldschool, baking techniques and still offer up customer favorites that people remember from back in the day. “We brought back a whole bunch of stuff that we did years ago,” says Yafuso. The Long John ($1.30), for instance, returned to the menu after customers kept asking about it. “The nicest compliment that we get is when customers say, ‘The pastries still taste like they did 1 when I was little,’” Yafuso says. Another blast-fromthe-past pastry is the Butterhorn Danish (99 cents), one of Yafuso’s favorites. “I had that every day before school when I was a kid,” she recalls. The resurrection of original favorites upon popular request exemplifies Larry’s Bakery’s unwavering commitment to its customers. This kind of customer involvement is everyday fare for the bakery — Yafuso

and her staff will work with customers to conjure up specialized desserts, including cookie lei, customized birthday cakes and hand-decorated cookies, for any occasion. “We can personalize the order to what you want,” says Yafuso. “We do a wide variety of cookies — jungle animals, fish,

honu, baby bottles.” The personalized items are popular for graduations, baby showers and birthdays. Plus, Larry’s designs treats tailored to each holiday, most notably, pumpkinshaped shortbread cookies for Halloween and cupcakes with red frosting for Christmas. Larry’s daily menu also includes Lilikoi Loaf Cake ($5), Apple Cinnamon Bread ($5), Chocolate Brownie Packs ($5) and breakfast items such as Bentos with egg, sausage or bacon, and white rice ($3) or fried rice ($3.50). And because they’re so good, Larry’s treats are also available at several stores, including Don Quixote and Tamura's. Yafuso enjoys the collaborative process of helping her customers celebrate special occasions. “It’s fun because you get to grow with the customers,” she says.

place of nostalgia for many locals. And while the ambiance here has remained the same throughout the years, guests also have been delighting in new menu options and a plethora of ingredients brought about by Pagoda head chef Jason Takemura. Takemura features a variety of tantalizing dishes daily, highlighting the best of Asian, Hawaiian and Western fare. My absolute favorite health conscious dish, however, has to be Pagoda’s famous Ahi Katsu Salad with Sesame Wasabi Dressing ($12). “This is our most popular salad,” Takemura states. “Our fresh ahi katsu is served rare with Nalo greens, cucumbers, local tomatoes, avocado and crispy Hasu chips and drizzled with our 1 6 | D I N I N G O U T | A U G . 2 1 - 2 7, 2 0 1 1

this award-winning establishment offers the best spread of all for any seafood fanatic, especially when it comes to its Seared Sashimi Grade Ahi Salad ($17.95). When I’m in need of something substantial but not overly filling, this is always my preferred choice. “Our Seared Sashimi Grade Ahi Salad is very popular among our customers,” says manager Sean Simpson. “We get our fish from the Honolulu fish auction six days a week, so our ahi is always fresh.” Executive chef Geoffrey Arakawa serves the freshly seared ahi on a bed of mixed greens topped with a flavorful Oriental dressing. The ahi itself is pure perfection and is exquisite when paired with a bounty of

fresh greens. What I love most about this creation is that it’s absolutely guilt-free, leaving me to marvel in and enjoy each and every bite. And while you’re at it, be sure to sample sushi chef Ernie Gray’s decadent Tei Maki and Special Rolls, such as Hamachi Jalapeno, Poke on the Pier and Spicy Tuna, to name a few. uring the steamy summer months, diners request one thing — simple, flavorful dishes that are neither too heavy nor too light, something that will fill you up but not weigh you down. Soup, believe it or not, is the perfect remedy. Toss any combination of ingredients into a pot, add a bit of liquid and spices to taste, boil till tender and voila!, your meal is ready in less time than it takes to say “soup’s on!” Sikdorak Korean Restaurant may have made its name with yakiniku, but the Keeaumoku Street eatery also has an assortment of soups that are ideal for this time of year. “Soup is very popular with Korean people,” says restaurant co-owner Andy Chang. As proof of this statement, he immediately mentions the traditional Seolleongtang ($3.95), a Korean broth soup similar to the local stand-by, oxtail soup. “It tastes very good,” the chef says with a smile. Another soup Chang highly recommends sinking your spoon into is the Soft Tofu Soup ($7.95). Made with an anchovy base and loaded with chunks of soft tofu and seafood, if you could blend summer into a soup, this would be it. “Lot of seafood goes into the Soft Tofu Soup,” Chang

ome Oct. 22, Sikdorak Korean Restaurant will be celebrating one year of business, and so far, so good, to hear co-owner Andy Chang tell it. “We’ve been doing pretty well; business has been going up,” says Chang, who started Sikdorak with partner Patrick Choi last year. Located in the Samsung Plaza on busy Keeaumoku Street — commonly called “Koreamoku” for the abundance of Korean eateries found around this bustling downtown neighborhood –— Sikdorak is a haven for those craving a bit of Korean yakiniku cuisine. Best of all, it is open 24 hours, seven days a week, perfect for those late-night dinner crawls. “We have an all-you-can-eat buffet, 24 hours a day,” says Chang, referring to Sikdorak’s never-ending supply of brisket, rib-eye, short rib, pork belly, seasoned beef, barbecue chicken, spicy pork, tripe and beef tongue. Priced at just $19.95 per person (minimum two people), the meal also comes with “lots of lettuce, peppers, garlic, kim chee and four kinds of side dishes that are different every day,” Chang adds. As if the promise of comforting “Seoul” food at all hours of the day isn’t enough, Sikdorak also invites customers to bring their own beer or wine to accompany their meal selection.

And if you’ve had one too many drinks at a late-night paina, no worries; Sikdorak has a soup for that! Filled with bean sprouts, green onions and tons of succulent meat, the Hangover Soup ($5.95) is a surefire cure for whatever may ail you. “Korean people, after a lot of drinking, they always eat the Hangover Soup,” notes Chang. My biggest goal for Liu’s Chop Suey was to introduce our tasty and affordable dishes to everyone around the island. I decided to promote my dishes by advertising a coupon in Dining Out featuring a specific dish each week. I tracked my coupons on a daily basis and the results I achieved were amazing! Each week, we sell over 100 of our weekly featured dish! Our sales for March are usually very low due to tax season, however, this year our sales were up by 25% thanks to Dining Out! We have also seen a lot of new customers from Ka¯ne‘ohe, Kahala and the West side who have now become “regulars” at our restaurant.
