Located on Alakea Street, The Mandalay is embarking on its sixth year in business, and according to owners and husband-and-wife team Larry and Linda Chan, this acclaimed establishment caters to all your dining needs, especially when it comes to celebrating all of life’s special occasions — the restaurant boasts two stories and seats 320 people comfortably.

Dining Out recently sat down with Larry, who shared with us the majestic happenings this restaurant has in store for New Year’s and the upcoming Chinese New Year.

Mandalay, you’ll notice that it’s very contemporary and elegant. We want your entire dining experience to be of the highest quality, from the atmosphere to the taste of the food. DO: Prior to opening The Mandalay, you and your wife owned Eastern Garden Chinese Restaurant. How has business been for The Mandalay?

Chan: It’s been great! Being that we’re located right in the heart of downtown Honolulu, we cater primarily to businesspeople, and we’re extremely busy during lunch hour (from 11:30 a.m. to 1:30 p.m.) — that’s when the restaurant is packed. A lot of business meetings are held here, so we have private banquet rooms that people can request.

Gau is a Chinese sticky mochi rice that represents friends and family sticking together in the new year. The Gau is garnished with a red date that symbolizes good luck, and sesame seeds that are believed to bring an abundance of good fortune and wealth. In fact, we’re expected to sell more than 200 orders of Gau for this new year.

On Chinese New Year, The Mandalay also will host a lion dance at 6 p.m. — a New Year’s tradition.

DO: Fantastic! Regarding the other items on the Chinese New Year Special Menus, what are some of your favorite entrees?

Chan: Chinese dinners always start off with soup and an appetizer dish, and the appetizer dish that we’re featuring as part of our Chinese New Year Special Menu is The Mandalay Combo, consisting of five spice

DO: What are some of the most popular dishes that The Mandalay is known for?

Chan: Well, The Mandalay Delight Salad is always a favorite. It’s a shredded duck salad that also features fresh fruit such as honeydew, cantaloupe and apple slices.

The Honey Walnut Shrimp also is a best-seller, as well as House Special Seafood Noodles and dim sum. We have a variety of set menus for lunch and dinner that our customers can choose from, which eliminates the hassle of choosing

from a number of a la carte dishes.

DO: Of course, dim sum feeds the masses here. When is dim sum available and what are some of the must-try items?

Chan: Dim sum is served daily from 10:30 a.m. to 5 p.m. We have close to 50 items to select from, and we don’t have dim sum sitting in carts for extended periods of time — all of our dim sum is made steamed to order, meaning everything is served hot and fresh. Our most popular dim sum items are Steamed Shrimp Dumpling, Steamed Pork Dumpling, Steamed BBQ Pork Bun, and Steamed Scallop with Spinach Dumpling.

DO: What are you hoping for The Mandalay in the new year?

Chan: Of course, we’re hoping to get an increase in customers. We also hope that our customers continue to enjoy the food and customer service here.

“There’s also a little bit of fermented bean curd, oyster sauce and shoyu to enhance the flavor,” says Alice, noting the recipe is from their mom Wai King. “Also, everything is cooked separately and then at the end I put it together.”

There’s also the mini an doughnuts with red bean inside similar to jin dui, and festive shortbread cookies that are great for treats. “Usually jin dui is quite oily, but we use our doughnut bread so it’s not oily,” says Annie. “Also, it looks like a golden round ball, so it’s kind of like gold, and round is a good shape for New Year’s.”

While the gao, jai and mini an doughnut are offered only during Chinese New Year, customers can always count on Panya for its delicious pastries and regular menu favorites, such as the popular Laksa — Panya House Noodle ($13.95). The Malaysian-style noodle dish has shrimp, fish cake, aburage, bean sprouts, corn and aromatic herbs, served with two types of noodles. “People in Hawaii love noodles, and our Laksa is very rich in flavor, and the soup part is very comforting especially for people who enjoy spicy foods,” says Annie. “A lot of times people are even asking for extra spicy.”

Panya opened in 1997 as a bakery and later expanded to a full-service restaurant and catering company. Customers can find an international fusion menu of appetizers, salads, sandwiches, soups, noodle dishes, burgers, pasta, rice dishes and vegetarian delights. There also are some personal favorites of the Yeung sisters that they grew up eating, such as Won Ton Noodle and Baked Pork Chop Rice.

“Quality is very important to us; we cannot give anything less than the best,” adds Annie. “We don’t use MSG, and all the ingredients we use is highquality. We eat here ourselves too.

hen your sweet tooth gets the best of you, Patisserie La Palme D’or is your answer for all the sweeter things in life. Located in Ala Moana Center, this upscale pastry shop opened its doors in 2006 under the direction of owner Hiromi Tanaka and head pastry chef Akiko Kimura. Together they’ve been able to create the perfect blend of French flavor and Japanese craftsmanship that’s presented in every edible work of art. The La Macha cake, for example, is proof in itself.

Priced at $4.45 per slice and $40 for the entire cake, La Macha cake delights diners with a layer of almond bitter chocolate sponge cake topped with another layer of alluring green tea and fine chocolate mousse.

“This is a really popular dessert,” Kimura says. “If you love green tea and chocolate, you’ll love this! I also added bits of white chocolate and dark chocolate to the cake, and sprinkled it with hints of cocoa and green tea powder.”

La Palme D’or is always full of festive cheer, so it’s no surprise that La Macha cake is adorned with New Year’s decorations as well. For Kimura, presentation and quality are key: In fact, she utilizes only the best available ingredients — many of which come directly from Japan — and her own personal recipes to whip up these tantalizing treats.

As the eatery approaches its 20th anniversary, executive chef and co-owner Russell Siu summed up the recipe for success that has kept 3660 thriving since it opened for business in September 1992.

“We have become well-seasoned in the industry,” Siu says.

“We’re still fine-tuning the restaurant and we’re always striving to upgrade it. We’ve established ourselves as a small, neighborhood restaurant. Our food is very simple, and we try to appeal to everyone’s tastes. The waiters we have, most have been with us for 13 to 15 years, and they’re very good to our customers. We try to keep our prices within reason; we try not to be stuffy.”

menu. The dish features sashimigrade ahi wrapped in nori, and is deep-fried until medium rare. The delectable pieces of fresh fish come served with a wasabi ginger sauce that provides a distinct punch from the pupu.

“The Ahi Katsu is our standard, our best-seller,” says Siu. “It’s been on our menu now for 19-anda-half years. People just love it; we can never take it off the menu.”

Soy Sake Fillet of Butterfish ($29.50) is another 3660 favorite, offering up a fresh catch marinated in soy and sake served with a stir-fry of Bok Choy, Haricot Vert and Asparagus, and Ginger Dashi Nage. Siu also recommends New York Steak Alaea ($31) that features Certified Angus Beef panseared with garlic, Hawaiian salt and butter, and topped with crisp onions.

“My favorite is the butterfish,” Siu says. “We marinate the fish with a little soy sauce and sake and let it cook slowly so it’s nice and caramelized.”

In addition to enjoying 3660’s enticing menu available from 5:30 to 8:30 p.m. Tuesday through Sunday, the eatery also offers diners an opportunity to partake in two special events this month.

On Wednesday, Jan. 18, Siu hosts his popular bi-monthly cooking class dubbed “Tomato Harvest Italian Style.” The class, which routinely sells out, allows diners to watch Siu prepare a fourcourse meal while also getting to enjoy the cuisine along with wine3 parings. This month’s class offers up four mouth-watering creations: Stuffed Tomato with Mozzarella and Balsamic Syrup, and Extra Virgin Olive Oil; Cioppino; Chicken Parmesan; and Panna

Cotta with Fresh Berries to cap off the experience. It gets under way at 6 p.m. and costs $65 per person, which includes tax and service charges.

According to Gale Ogawa, 3660’s proprietor, “Russell demonstrates each course, and we serve each course as well, so by the end of the evening they’ve had a full four-course dinner and three glasses of wine.”

the next edition of its immensely popular Gourmet Dinner held in the restaurant’s private dining room Thursday, Jan. 26, at 6:30 p.m. “Got Truffles?” serves up a host of dishes devised with the fruitful fungi. Most prized among these fungi are Oregon white and black truffles that are treasured for their pungent aromas and flavors. With proper harvesting and ripening, Oregon truffles share similarities to the

European truffle, according to the restaurant’s take on the dinner’s featured ingredient.

The five-course meal offers guests a slew of tantalizing dishes including Torchon with Black Truffle Slice on Toast Point; Pan Seared Scallop Studded with Black Truffle and Truffle Ravioli; Maine Lobster Medallions with White Truffle Nage and Yukon Chive Puree; Pan Roasted Halibut with Melted Leeks and Truffle; and for dessert, Grand Marnier Sabayon with Macerated Strawberries and Chocolate Truffle. Although always a fan of Korean cuisine, I had never set my taste buds on this exotic dish until now. With the first spoonful, the rice cake soup was very refreshing, and believe me, you’ll want to enjoy it to the very last drop.

“The soup isn’t spicy at all, so it’s served with kim chee on the side for an added spice,” Chang says.

So, take advantage of this once a year deal at Choi’s Garden; however, if you can’t make it to the restaurant today, don’t worry, the soup is a mainstay on the menu for ($9.98).

Max’s of Manila It's a Filipino fiesta this new year at Max’s of Manila, my go-to hot spot for all my Filipino favorites.

With more than 120 branches in the Philippines alone and additional locations nationwide, Max’s also calls the Islands home with one eatery on Dillingham Boulevard and another in Waipahu Shopping Plaza. Although the establishment is known for its famed fried chicken, it’s the pork and chicken adobo that also has mouths watering. According to Elizabeth Joven, operations manager of the Dillingham location, Max’s Adobo Festival is drawing in quite a crowd.

“Max’s Adobo Festival is a recent thing, and we’re featuring three different adobo

These dishes are absolutely delicious, but, when pairing an adobo with savory garlic rice, my preferred choice is Marinated Braised Pork Adobo (Pinatuyong Adobo), with marinated pork chunks braised in a vinegar and soy sauce reduction, and topped with savory garlic, peppercorn and other special seasonings. Finally it's dressed with bits of green onion, succulent diced tomatoes and chopped onions to make it a sarap (tasty) dish like no other.

enny’s Restaurant chef Ernesto Yeban credits his homestyle cooking skills to his mother.

“My mother is a good cook,” Yeban says.

Originally from the Philippines, Yeban grew up in the kitchen. “I would always cook for my friends.”

These days, Yeban likes to experiment with new dishes and is an expert in various types of cuisine.

While Kenny’s Restaurant has been a longtime local favorite, it’s certainly not stuck in the past.

Yeban and other Kenny’s cooks are constantly updating the restaurant’s menu and concocting new dishes. The restaurant offers a rotating set of specials — specials change every two weeks — for 20 percent off regular prices.

Right now, Kenny’s is creating a new list of specials that is based on customer input. Yeban explains that the restaurant has a loyal set of customers — many of its patrons are regulars who just can’t get enough of Kenny’s cuisine.

“I know we have some new menu items that people are asking for, and so I am trying to see how I can include these in the specials,” Yeban explains. “I try to work with the customers before putting up new specials.” He adds that a common request is for Japanese dishes, and the restaurant is currently working to add Yakitori and Tonkatsu to an upcoming specials list.

In the new year, Kenny’s patrons can expect to see some new customer-inspired 20 percent off specials for breakfast, lunch and dinner.

Another must-try is Kenny’s Hawaiian Plate ($16.89), which is offered every Friday. The plate includes lau lau, lomi lomi salmon, chicken long rice, kalua pig, and a choice of haupia, rice or poi. In the new year, Kenny’s is looking to offer the Hawaiian Plate on Thursdays as well.

ahoo’s Fish Taco, which started in 1988 in California, has been a local favorite in Hawaii since the early 1990s. The Wahoo’s brothers (Wing, Ed and Mingo) bring to the menu Mexican, Brazilian and Asian influences — and don’t worry, they have healthy vegetarian options, too.

Only minutes from Kahala Mall, Wahoo’s Fish Taco is a hot spot for both locals and visitors, and is perfect for a refueling session before doing more shopping. The friendly staff and great food make for an excellent dining experience.

Revamping Romano’s Macaroni Grill

omano’s Macaroni Grill is ready for a fresh start with its brand new lunch and dinner menus. All the classics are still available, but the establishment has introduced more than 25 Italian-American inspired menu items to sink your teeth into.

From 11 a.m. to 4 p.m., the new lunch menu offers enticing options such as brick-oven flatbread and paninis. The Smoky Shrimp Flatbread delights with the exciting flavor combination of smoky mozzarella and slightly spicy tomato sauce.

Pancetta and seared shrimp deepen the flavor experience.

The flatbreads, great for sharing, have been among the most popular new items, with savory options such as Wild Mushroom & Goat Cheese Flatbread ($15). A bed of caramelized onions replace tomato sauce and is richly layered with pre-marinated, seasoned wild mushrooms, goat cheese and a drizzle of truffle oil for the finishing touch.

ith the start of a new year, people often make the resolution to “eat healthier” … but what exactly denotes “healthy food?”

At Kaew’s Thai Villa, customers will find out.

While it only opened about seven months ago, with “Healthy Thai Food” as its tagline, Kaew’s Thai Villa, located on Liliha Street, has quickly attracted individuals craving healthy Thai dishes that do not compromise on taste or flavor.

Restaurant owner and chef Kaew Anuttsara offers customers her perspective of what makes a healthy dish.

“In our restaurant, we use lots of fresh vegetables and lots of fresh Thai herbs,” she explains.

“We make everything homemade-style — very fresh and healthy. To me, healthy means eating a lot of vegetables

… but meat and fish also can be healthy. We don’t use MSG in our dishes. ‘Healthy’ ultimately means balanced meals for your body.”

Not only are the meals at Kaew’s Thai Villa healthy, but the eatery provides dishes at reasonable prices. Anuttsara is quick to point out that the restaurant features daily lunch and dinner specials ($7 for lunch, $8 for dinner). The majority of the specials are served with Thai Jasmine or brown rice and customers can choose the degree of spice (mild, medium or hot). Of the restaurant’s specials, the Pad Thai — famous Thai noodles with egg, tofu, bean sprouts, peanut crunch and the eatery’s pad Thai sauce (made fresh daily) — and the Green Curry (kang

kaiew wan), or sliced meat marinated in green curry sauce, non-sweetened coconut milk, kaffir lime leaf, basil, peas and eggplant, are some of the most popular items.

“People love the curry; the Green Curry is the most popular,” Anuttsara says. “People also love the Hot Evil Jungle Prince (pad peth) — stir-fried with curry paste, vegetables and lightly non-sweet coconut milk.”

In addition to its daily lunch and dinner specials, Kaew’s Thai Villa offers customers a variety of appetizers, soups, salads, entrées, curries, rice and noodle dishes on its dine-in menu. The Fried Calamari ($9) is a popular appetizer, while Basil Calamari ($10.95) is a hit entree.

Anuttsara also mentions the restaurant’s daily chef signature dishes are frequent orders among customers.

“The Crab Fried Rice ($12.95) comes with the crab claw and the natural crab meat,” she says, of the dish that includes stirfried rice and green onions.

“The Tom Yum Hi So Seafood ($16.95, serves two to four people) is very healthy with fresh vegetables. It’s in a Thai hot pot and served family-style.”

After Jan. 1, the eatery will offer its customers a new dinein menu. While the new menu will feature most of the same items as the current menu, it also will include new dishes such as the chef special Thai Steak with Grilled Shrimp.

“The new menu will have a few changes, just to try out the different dishes,” Anuttsara says.

While the eatery currently offers both dine-in and takeout menus, Anuttsara says the takeout menu differs slightly, as it does not offer the daily chef signature dishes. She says that Kaew’s Thai Villa also provides customers with a catering menu, which can be found online (kaew-

sthaivilla.com). The catering menu includes customer favorites such as Vegetable or Pork Spring Rolls ($35), Spicy Fried Rice with Green Curry ($40) and Grilled Salmon Panang ($75).

mately six orders, and the eatery’s catering service is perfect for special events, parties and conventions.

“People can look at our website and order online,” Anuttsara says.
