M

akino Chaya is an island favorite when it comes to buffet-style eating.

After opening nearly a decade ago, it has become the place to enjoy mountains of crabs legs, grilled salmon, lobster tails, calamari steak, all styles of shrimp, sushi and any other deep-sea creature you can dream up, all for an incredibly affordable price.

But, as Bob Dylan once sang, times are a-changing.

Now, in addition to all the items folks expect to find in the buffet line, Makino Chaya will be offering even more food with the re-introduction of a pre-set menu.

“We’re going back to our roots,” says Jo Makino, president of operations. “In the past, we used to have a menu along with the buffet, and everything was allyou-can-eat. Everyone really liked (the menu) — that’s what distinguished us from the regular buffets — and people always ask about it, and I think it’s time to bring it back.”

With the menu’s return to the dining room also comes the arrival of new items like Puri Puri Shrimp, Saba Shio Yaki, Sake Shio Yaki, Iddako Karage and Kuro Buta Sausage. Past buffet favorites like Miso Butterfish, Pork Katsu and Half-Shell Oysters also will be making a much-anticipated comeback.

“It’s pretty much all-you-caneat everything,” Makino exclaims. “It’s going to be food galore!”

In addition, some items currently found in the buffet line will be shifted onto the menu, like the tempura.

“The tempura we normally put on the buffet right now, but

photosby NATHALIEWALKER we’re going to do that to-order so that way it comes out nice and hot, nice and crispy,” explains Makino of the switch.

“All the stuff on the menu is cooked to order,” he adds, “so everything comes out fresh, hot, crispy — you name it.”

Cold items also will be made-to-order from the sushi bar: Maguro, Hokki Gai, Ebi, Tamago, Unagi, Soy Bean Roll, Ikura, Soft Shell Crab Roll, Sashimi Mori and more.

“We have all the udons and sobas, we even have curry, too,” Makino adds. “And we’re going to do a monthly special every month starting in May.” Dishes being considered as future features include King Crab, Live Abalone and Dungeness Crab with Black Bean and Garlic.

“I think we’re going to change the menu quite often,” Makino says. “It just depends how our customers like it and what’s in season.”

And the best part is, customers don’t have to choose which way they want to dine. For the regular buffet price ($13.98, lunch, weekdays; $16.98, lunch, weekends; $28.98, dinner, weekdays; and $29.98, dinner, weekends), people can eat to their hearts’ content from both the buffet line and the new menu.

“People can order off the menu and they can also pick from the buffet.

It gives people an option,” Makino explains. “It’s better, I think; it’s a whole different ‘buffet.’”

The chef also recommends Shanghai Bok Choy and Black Mushrooms in Black Bean Sauce ($16.95). A marvelous dish for monchong lovers

However, it’s the Fire Roasted Monchong ($29.50), Arugula Salad ($8.50) and Sizzling Ahi Carpaccio ($14.50) that Nagaishi couldn’t help but rave about.

Monchong is a Hawaiian big-scaled Pomfret with a beautiful flavor grilled with a Yuzu, oyster cream sauce, ginger, cilantro and served over jasmine rice,” Nagaishi says, “It’s really tasty and it’s a unique fish.

You won’t find monchong on too many menus.”

Lighter in fare, but full of flavor, the Fire Roasted Monchong pairs perfectly with the Sizzling Ahi Carpaccio, an appetizer featuring melt-in-yourmouth sashimi-style ahi served on a bed of radish sprouts, Maui onions and green onions. The dish is sprinkled with a blend of Hawaiian salt and togarashi, laced with a sizzling sesame and peanut oil, with a touch of shoyu.

“This is an extremely popular appetizer that our guests can’t seem to get enough of,” he says.

L

ocal Japanese fare meets contemporary elegance at Kochi Restaurant & Lounge, the ever-bustling eatery that caters to just about everyone.

Dining Out recently sat down with general manager Reid Mochizuki, who was eager to share how Kochi keeps bringing customers back time and time again.

DO: Kochi Restaurant & Lounge has proven to be a popular hotspot among locals craving tasty grinds. Tell us more about the restaurant’s philosophy.

Mochizuki: Kochi opened a little more than three years ago and we brand ourselves as a local-style Japanese restaurant. Many of the dishes are quite reflective of our customer base and

incorporate many local flavors.

DO: What exactly brings out the local flavors in your food? Also, what are some of your mostrequested dishes?

Mochizuki: We use a lot of ingredients like fresh ahi, fresh salmon and fresh tako, for instance. There are many things here that locals who dine here will be very familiar with. We have the Shrimp Tempura Roll with Spicy Tuna ($13.95). It’s dressed with a Kabayaki sauce (sweet, soy-based sauce), that doesn’t overwhelm the dish — it has a really nice, clean flavor.

And the spicy tuna itself is a creation of our sushi chef Aaron Kumura. It has a nice kick to it and is a bit spicier than your average spicy tuna.

The Take Nigiri Set ($27.95) is a 10-piece assortment of fresh Nigiri sushi with hamachi salmon, New Zealand snapper, eel, scallop, squid and more.

Customers also can’t miss out on one of our signature dishes, the Kurobuta Kakuni ($18.95), the highest quality braised pork in a shoyu-ginger stock served with a hatcho miso reduction. The meat is fork-tender, and we work really hard on that dish. I also recommend our Spicy Garlic Furikake Chicken ($7.95, $11.95 family style). This dish features tasty boneless chicken filets served with garlic aioli and furikake.

The Blackened Ahi ($18.95) is another favorite.

The fresh ahi is flavored with a shichimi (Japanese red pepper) cream sauce and a kabayaki drizzle.

DO: Who’s the mastermind behind all these wonderful creations?

Mochizuki: Kochi’s senior partner Lee Takara is ultimately responsible for menu development. We have more than 100 items on the menu, so there’s pretty much something for everyone.

DO: Readers will be pleased to know that no MSG is added to Kochi’s cuisine. Many turn to you folks when it comes to celebrating special events as well as casual dinners with the family, correct?

Mochizuki: Yes, the restaurant is very accommodating to large groups. We can seat parties of 20 to 30 people for regular dinner service, and the weekends are when we cater to a lot of parties.

DO: Kochi also offers a special birthday promotion and a special deal for the keiki. What is that about?

Mochizuki: If you show your ID within five days of your birthday, you receive a free entree when accompanied by at least two paying adults. On Mondays and Tuesdays, kids eat free with at least one paying adult. Our kid’s menu offers a choice of chicken katsu, hamburger steak, teriyaki chicken, breaded mahimahi or teri beef for $4.95. All plates off the kids’ menu also come with a soft drink and ice cream.

DO: All entrees are served a la carte here, but there are dinner combination sets available as well?

Mochizuki: Yes. Everything here is served family-style, but we do have two-choice ($18.95) and three-choice ($22.95) sets that come with green salad, miso soup, rice and ice cream. Diners can select from a wide range of entrees, such as shrimp tempura, ahi poke, teriyaki chicken, shoyu garlic ahi, New York steak, sashimi, chicken katsu, misoyaki salmon and teri beef.

good selection of Japanese and domestic beers, sake, wine and cocktails. It’s a pretty extensive list.

Sold on the souvlaki

By Chris Fleck widely lthough known as the birthplace of democracy and the Olympic Games, Greece also is recognized for its scrumptious lamb dishes — from small souvlaki (skewered kebabs) to spit-roasted whole lamb.

The abundance of lamb in the European country is just one reason why the dish is so common there, says Greek Marina coowner Tarek Guirguis.

“It is a traditional meat in Greece,” he says. “It tastes a bit different, but we grow up eating it. In Greece, we love lamb.”

One of the most authentic ways to serve lamb is as souvlaki. Called kandaulos in ancient Greece, souvlaki was originally served along with other meat and pita bread.

More recently, however, souvlaki began to be sold more conveniently by street vendors on a stick or wrapped in pita bread.

Today, souvlaki — which can be prepared with a variety of meats — is a staple in nearly all Greek restaurants, including Greek Marina in Hawaii Kai. Served for lunch and dinner, Lamb Souvlaki ($13.95/15.95) comes with chicken, beef, shrimp or in combination.

“I started making my souvlaki dishes about 22 years ago. You cannot open a Greek restaurant without souvlaki. People come in and expect to see it on the menu,” Guriguis says.

At Greek Marina, the lamb is cubed and then marinated in salt, pepper, garlic, olive oil, cumin, red pepper and a variety of other Greek spices.

The meat is then skewered and barbecued. After barbecuing, the tender lamb is served on warm pita bread dressed with tomato and tzatziki, a Greek topping made from yogurt and spiced with grated cucumber and mild garlic. A tossed salad and rice come with the dish.

hen you think of pizza, “pure” is probably the last word that comes to mind.

However, zpizza is changing the definition of this infamous fast food item with its healthy and creative take on the popular pie dish.

The restaurant is innovative because of its organic and tasty products, but the Hawaii franchise in particular is undergoing a “pure pizza” revolution, according to owner Cesar Llarenas.

“We started our new tagline this year — ‘the pure one,’” Llarenas says. “It means that zpizza uses the highest-quality and best-tasting ingredients. Our ingredients are fresh, all natural, organic, free of any additives and lower in fats.”

“The ‘pure’ (part of the tagline) is all encompassing,” echoes Karen, Cesar’s wife, who helps with running the franchise. “It tells you what we are about.”

The zpizza chain opened in Hawaii in December 2008, with its first location at Ward Centre. The second zpizza store opened last November in Kailua. Cesar introduced zpizza in Hawaii after years of searching for the right restaurant franchise to own. The chain’s healthy aspect appealed to the Llarenases, as zpizza prides itself on serving delicious products using fresh ingredients.

The restaurant currently has several limited-time promotions.

From April 1 to May 24, zpizza is offering a “zpassport” to its customers, in which they receive a sixth pizza free after purchasing five large or extra large “zcreation” pizzas. On April 24, zpizza is offering a “Family Meal Deal for Four” for its Easter promotion.

For $48.95, customers will receive two Rusticas or any large pizza, choice of salad, an appetizer plate, four drinks and dessert for four.

While they acknowledge the franchise’s increasing popularity, the Llarenases know more changes are to come for Hawaii’s zpizza. These include opening more stores islandwide, rebranding the company’s image and altering the menu. Despite these future changes, the Llarenases remain committed to serving their health-conscious consumers with delicious gourmet pizzas made with the purest ingredients.

“Our target customers are people who appreciate high-quality gourmet foods that are healthy and nutritious,” Karen says.

“They understand the value is in the quality of ingredients and pureness of the product and the value of eating healthy.

“It’s nice that (with zpizza), you don’t have to sacrifice flavor and taste to do that.”

Those with a healthy appetite for something healthful and affordable need look no further than Shabu Shabu House on Kapiolani Boulevard.

One glance at the menu and you'll be hooked by the immense offerings of fresh seafood, lean cuts of meat and tasty vegetables that come in each shabu shabu set.

“The House Special Set with beef and pork is the most popular — it’s a customer favorite — and the price is very, very reasonable. There's more than enough to feed everyone,” says general manager Kenny Ikeguchi.

He’s not exaggerating. The Shabu Shabu House Special Set is a platter of thinly sliced beef and pork that looks like it could easily satisfy two or three people. And considering the total meat portions weigh in at 8 ounces (lunch, $11.95) and 12 ounces (dinner, $15.95), that estimate might not be too far off.

Another indulgent speciality is the Seafood Shabu Shabu Set ($21.75 at both lunch and dinner), a true ocean feast overflowing with shrimp, clams, squid, filleted basa and scallops.

“I believe we are the only shabu shabu restaurant serving this large of a variety of seafood in one plate,” Ikeguchi states with a grin.

urviving in the restaurant industry for eight years is a feat many cannot claim. But to flourish in a field where food trends go in and out of style faster than you can say “shabu shabu” takes determination, business savvy and a quality product.

So how does Shabu Shabu House do it? “(Our food is) simple, simple but healthy and delicious,” says general manager Kenny Ikeguchi of the straight-forward fare found within the Kapiolani Boulevard restaurant.

Ikeguchi and owner Toshimitsu Matsuzaki opened Hawaii's first hot-pot house in 2003 after seeing a need for a convenient and quick-service restaurant that could serve both the single and family set.

Eight years later and despite the emergence of other shabu shabu restaurants, Shabu Shabu House remains the only serious Japanese-style shabu shabu eatery in town.

“There never was this type of restaurant before I opened (Shabu Shabu House),” Matsuzaki says. “Now, many shabu shabu restaurants have opened, but they are not Japanese-style, all Chinese-style shabu shabu.”

In Chinese-style shabu shabu, according to Matsuzaki, diners select various meats and vegetable plates from coolers and cook their food in a flavored broth. With Japanese shabu shabu, however, there is a preset menu of items that are delivered to the table, and boiling hot water is used to cook the food quickly without adding any salt or oil to the meal.

And if the enormous shabu shabu sets don't completely satisfy your hunger, there also are extra side orders of meat — like rib-eye beef ($12.95), lamb leg ($7.95), beef tongue ($7.95) — and seafood — large shrimp ($10.95), small shrimp ($6.95), lobster balls ($5.50) and scallops ($5.50) — to be had, along with side portions of vegetables, tofu, noodles and rice.

Starting it up right with ‘feel-good’ food, drinks

The siblings aim to create “Delicious and Memorable Moments,” as the tagline reads on their menu, and take pride in pleasing firsttime customers to loyal regulars.

At Panya, everything down to the bread is made fresh daily, and all items are cooked without trans fat. This approach to cooking allows customers to “feel good about eating,” says Annie Yeung. The eatery offers a hodgepodge of 1 dishes, cooking styles and presentations, and when asked how she would describe Panya’s style, Yeung concludes: “Hawaii is such a melting pot. Yeung added that she and her sister were influenced by cuisine in their home of Hong Kong, and in many cases, whatever comfort food or favorite meals they are craving end up being served at Panya. “Whatever we miss from home, we bring here!” Yeung quips.

located in Kamehameha Shopping Center on North School Street, as I recall enjoying many meals here with my grandparents some years ago. I must admit, it’s been a while since I’ve been back, but upon my recent return I was happy to know that the food was still as onolicious as ever.

Kenny’s Restaurant opened its doors 45 years ago and with a friendly staff and vast menu that is constantly improving and changing over time, it’s safe to say that Kenny’s caters to just about everyone. The menu can leave the indecisive diner stumped for days, however, being the breakfast lover that I am, I stuck to my gut — French toast, please!

Shoyu Chicken with Stir-fried Sugar Snap Peas

By Chef Chai Chaowasaree | 1 Serving Ingredients: • 1 piece (12-14 ounces) Tyson Cornish game hen • 2 cups Aloha low-sodium soy sauce • 2 cups chicken stock • ½ cup sugar • 1 tablespoon ginger • 1 stock green onion • 1 stock Chinese parsley • 1 whole garlic, cut in half • 1 tablespoon chopped garlic • ½ tablespoon whole black pepper Preparation: • In a sauce pot, combine Aloha Shoyu, chicken stock, sugar, ginger, green onions, Chinese parsley,

garlic and black pepper.

Make sure hen is submerged in sauce. Bring to a boil.

• For presentation, tighten the legs of hen together with a string, (this will prevent legs from spreading out), drop in shoyu stock and bring to boil at medium-high heat for a couple of minutes. Remove any scum. Then, simmer for 1520 minutes, depending on the size of the hen.

• Remove hen from pot and let it rest a few minutes before serving.

Stir-fried Sugar Snap Peas Ingredients: • 1 cup sugar snap peas • ¼ cup young baby corn • ¼ cup red bell pepper, cut to bite-size • 1 tablespoon vegetable oil • ½ tablespoon oyster sauce • 2 tablespoons white wine or chicken stock • ½ tablespoon Aloha Shoyu • pepper, to taste

Preparation: • In heated sauté pan, add oil and sugar snap peas, and sauté for 30 seconds.

Add bell pepper and young corns, and sauté for a few seconds. Add chicken stock, oyster sauce, shoyu sauce and pepper, to taste.

• Cook for a minute or two or until the snap peas is cooked.
