The Moana Surfrider celebrates decades of impeccable service with a special four-course tasting menu, available through March 31

T

he Moana Surfrider, a Westin Resort & Spa, recently celebrated 11 hospitable decades of catering to Hawaii and its visitors from across the globe. Known as “The First Lady of Waikiki,” the Moana Surfrider is a renowned historical landmark, and in all its elegance and glory, the Moana doesn’t skip a beat in offering up the finest in island cuisine as well.

Beachhouse at the Moana’s executive chef Rodney Uyehara sat down with Dining Out to share a meal of all meals that he and his culinary team have expertly prepared in honor of this momentous occasion. This 110th anniversary, four-course tasting menu was conceived from menu options at the Moana dated back to the 1930s. Uyehara, who has served at the Beachhouse since its inception in 2008, took these original ideas and modernized them into culinary works of art that we see today.

DO: Chef Uyehara, you’ve served as executive chef here at the Beachhouse since its doors first opened. Can you explain the concept of the Beachhouse and what guests can expect when dining here?

Uyehara: What we work hard to present is an upscale boutique-style steakhouse with bold flavors. But at the same time, we try to keep the menu very simple and straightforward by not overwhelming diners with too much flavor.

We also want diners to feel comfortable when they dine here, as if they were at home. Also, watching the sunset over the ocean when you dine here is something that everyone is amazed at.

DO: The Moana Surfrider recently celebrated its 110th anniversary and you featured a fabulous four-course tasting menu to commemorate the event. Tell us about this.

Uyehara: The Bishop Museum presented us with archaic menus from the 1930s that were previously a part of the Moana Surfrider. These menus were greatly influenced by the European chefs of that time. So, what we did was take some of those ideas and incorporate them into our tasting menu.

DO: This month’s Beachhouse tasting menu made its debut as part of the anniversary celebration last week. But will the menu continue to be available to diners? And if so, for how long?

Uyehara: Yes, this particular menu will be available nightly until March 31 for $110 per person, not including tax or tip.

Uyehara: The first course is a Pan-Seared Prosciutto Scallop. The scallop is wrapped in prosciutto and we’ve incorporated a poi vinaigrette sauce served over Nalo greens. The second course is a Moyer Farms Steak Diane. Steak Diane was another one of the classics that the Europeans brought to Hawaii, so we’re changing it up some with Big Island baby spinach and Oregon morels. The third course is Roasted Veal Oscar served with seared foie gras and king crab tempura topped with a tawny port demi sauce.

Then for the fourth and final course, we’re featuring a Dark Rum Crème Brulee with caramelized sugar on macadamia nut short bread cookie.

Cabernet with the Moyer Farms Steak Diane, and pair our Beachhouse Riesling with the Pan-Seared Prosciutto Scallop. The Riesling has a nice citrus acidity to it, and it goes really well with the vinaigrette and the slight gaminess you receive from the prosciutto and the scallop.

DO: Being that the cuisine is inspired by menus dated back to the 1930s, how does this tie into the Moana Surfrider’s 110th anniversary?

Uyehara: The Moana Surfrider is a historical site, along with the Princess Kaiulani and the Royal Hawaiian. These hotels have a lot of history and Hawaiiana to them — so it’s really no surprise that Bishop Museum has kept great records of the properties, menus included.

DO: Many love the Wagyu beef found on the menu as well. What’s so special about this meat?

Uyehara: The Wagyu that we serve at the Beachhouse is actually from Australia, and we serve the Australian Wagyu strip loin and the Australian Wagyu rib-eye. It’s a premier, top-quality steak that our guests love.

DO: Do you have any plans to expand the Beachhouse in the future?

Uyehara: Yes, we hope to evolve the menu.

ince opening its doors to the public back in December, Jade Dynasty Seafood Restaurant has seemingly had a steady flow of customers on any given day, thanks to its lavish spread of Chinese cuisine.

Dining Out recently caught up with Jade Dynasty Seafood’s assistant manager Thomas Lung and checked out a few of the hottest items on the menu, including a new dish that’s sure to satisfy hungry diners.

Million’s new jun dish

M

ost of Million Restaurant’s patrons are familiar with the ever-popular meat jun and fish jun dishes, both of which stand as classics at the Sheridan Street eatery.

However, the eatery is now turning the tables with its menu and offering up something a bit different — oyster jun.

Ultimately delicious in its own right, oyster connoisseurs will marvel in the 12 pieces of savory oysters delicately fried in Korean egg batter. Owners Chang Hyun Park and Angela Park attest that locals can’t resist this bitesized delicacy.

hen you hear the words “comfort food,” what comes to mind?

If you’re from Hong Kong, you might think of authentic, perfectly textured wonton noodles. Born on the East Coast? Rich, creamy New England clam chowder could be the dish you dream about. And if you’re from Eastern Europe, your favorite comfort food might look like a big bowl of borscht, the traditional beet soup.

No matter where you’re from, you can probably find the flavors of your childhood at Panya, the restaurant, bakery and catering service owned by sisters Annie and Alice Yeung.

Chances are they’ll taste even better than you remember. The Yeungs have worked extensively to capture the traditional essence of every dish on their extensive menu. You won’t find much fusion cuisine here, and that’s by design; Alice Yeung believes fusion somehow lessens a dish’s ability to satisfy. platters to your clients during the holidays.” Elegant pupu or dessert platters may be ordered with just an hour’s notice; Panya also does pastry and sandwich platters for office parties.

Everything is house-made at Panya, including the bread — delicious fluffy Hokkaido-style loaves — and baked goods and desserts, consistently impeccable in conception and execution.

“All our salad dressings are homemade, our food has no MSG, and we’re 100 percent zero trans-fat,” confides Alice proudly. “We use premium, very

expensive rice bran oil from Japan, and we change it daily.”

Try the Strawberry Shortcake ($3.95), in which each mouthful of lightly sweetened crème frosting contains a perfectly ripe fresh berry slice; or the Crème Cheese Buns ($1.75), little sugar-dusted pillows stuffed with a secret treasure of cream cheese; or even the Vegetarian Curry Donut ($1.75), which could rival the samosas at the finest Indian restaurant.

Increasingly, report the Yeungs, Panya’s customers consist of moms and dads with busy schedules who

don’t want to endure another night of fast food. “These are people who aren’t very good at cooking or they have a family and business to run, so they order things to take home when they come in at lunchtime,” Annie says.

Terrific supper entrées include Coconut Curry Chicken ($13.95), Oxtail Stew in Red Wine Sauce ($18), and a traditional Hong Kong favorite, Baked Pork Chop with Egg Fried Rice & Tomato Sauce ($16.95).

Wailana’s holiday menu a big reason to go Irish

ON

nter a restaurant at 2 in the afternoon and you expect to find businessmen enjoying a late lunch, parents treating their children to a before-dinner snack, or surfers fueling up before going in for another set.

But what’s the crowd like at that same restaurant at 2 in the morning? Not too different, according to Wailana Coffee House co-owner Kenton Tom. The popular 24-hour restaurant opened in 1969 on Ala Moana Boulevard in the very spot the landmark Kapiolani Drive Inn was stood.

“Wailana’s lineage comes from Kapiolani Drive Inn,” Tom says. “Kapiolani Drive Inn stood on this very same spot and was opened 24 hours with car hop service. It was very popular with the late-night crowd, and that tradition continues today.”

Popular menu items at the casual eatery include Broasted Chicken ($10.95), Oxtail Soup ($11.25) and breakfast items served any time of day or night, including the Jamboree Breakfast ($6.35) and Eggs Benedict ($9.85).

“The key is the sauce, made fresh with egg yolks, drawn butter, lemon juice and spices,” says Tom of the egg, ham and English muffin treat.

“The Jamboree Breakfast (comes with) all the hotcakes one can eat with two eggs and two strips of bacon,” he adds. “Our pancake batter is our special recipe made every day. One can change to banana, macadamia nut, blueberry, coconut, pineapple or even combination pancakes for a $1 more.”

And with its close proximity to Waikiki, don’t be surprised if you find yourself bumping into a famous face or two.

“We have had many celebrities come through the restaurant, from movie stars to great athletes, people like Wilt Chamberlain and Shaquille O’Neal,” Tom confesses. “However, in general we notice that they like to be treated just like our regular customers and enjoy the local foods and ambiance.”

Spanakopita and the Tzatziki — both appetizers — for lunch and it was very light and refreshing. The Tzatziki is my favorite. It’s a yogurt dip seasoned with grated cucumber and mild garlic, and it goes really well with the pita bread. The Spanakopita has spinach and feta cheese all baked in filo dough.

“The service here is fast and efficient, and the location is very convenient. You also can’t beat the reasonable prices.”

ith all your local J a p a n e s e favorites on the deli menu (close to 40 items, to be exact), it’s no wonder Hawaii’s foodies are flocking to Fukuya Deli & Catering on South King Street for a taste of some of the best okazu items around.

According to Arrison Iwahira, Fukuya president and great-grandson of the original founders, Jihei and Tsuya Takayama, the majority of the restaurant’s recipes have been in the family for generations.

“These rolls are something that we conspired and it’s really easy for the kids to eat in the morning on the way to school,” he explains. “The kids and adults love the Hot Dog Roll ($4.75).”

This irresistible roll features furikake, Spam and hot dog nestled in plain rice and wrapped in nori.

Barbecue meat fanatics, on the other hand, can’t get enough of the Teri Beef Roll ($4.75), featuring a barbecue meat filling in place of hot dog. Each roll is cut into eight bitesize pieces — great for people on the go.

For traditionalists who prefer classic homemade sushi, Fukuya Deli & Catering also has just what you want and need — be it maki sushi, cone sushi and everything in between.

“When it comes to our traditional maki sushi ($4.75), we use a special sushi rice with a hint of vinegar,” says Iwahira. “In the center of the roll you’ll find dried shrimp flakes, tuna, egg, kampyo, kamaboko and watercress. It’s sold at one roll per container.”

To celebrate the return of this yearly festival, The Willows Restaurant is playing host to two nights of good drink, food and fun, Scottishstyle.

On Friday, March 25, the Hawaiian Scottish Association and Fujioka Wine Times present The Grand Scotch Tour 2011. Now in its second year, this gathering serves as a

chance for locals to explore and enjoy nearly 20 acclaimed Scotch selections, including Aberfeldy, Dewars, Famous Grouse, Ardbeg, Balvenie, Caol Ila, Highland Park, Laphroaig, Macallan, Chivas, Clynelish, Cragganmore, Glenfiddich, Glenlivet, Scapa, Talisker, Signatory, Glenmorangie and Singleton.

“Everybody does wine tastings, but we wanted to do something a little different,” says Dan Peddie, chieftain of the Hawaiian Scottish Association.

“It’s not only an opportunity to taste good whisky, but it’s also an opportunity to learn about whisky,” adds

Bruce McEwan, association board member and chieftain of the nonprofit Caledonian Society of Hawaii, the largest Scottish organization in Hawaii.

To be a Scotch whisky, McEwan explains, the drink must be made in Scotland, be at least 3 years old and have matured in an oak cask.

However, every single-malt and every blended Scotch will taste slightly different, which is why there will be whisky experts on hand to help guide guests through the tasting.

“Whisky sort of goes with the mood you’re in,” McEwan says. “It’s a drink that can

The Willows executive chef Jay Matsukawa also is pulling out all the stops with a pupu buffet inspired by traditional Scottish fare but with his own twist. For example, Scottish Bangers traditionally are heavy pork sausages served over mash (mashed potatoes and turnips) or colcannon (cabbage). Matsukawa’s version is a daintier, lighter Scottish Banger Hot Dog made from beef and served atop fresh vegetables and cabbage slaw.

Other delicacies to try are Fish and Chips, Shepherds’ Pie, Corned Beef and Salmon Soup, Petite Scottish Meat Pies and Butterscotch Bread Pudding. There also will be unlimited soft drinks, iced tea and coffee provided.

The Grand Scotch Tour takes place from 5 to 8 p.m. in the main banquet hall. Cost to attend is $65 pre-paid, $75 at the door, but reservations are highly recommended by March 23, as space is limited.

“We’re hoping to get anywhere between 100 to 200 people at this event,” says McEwan. “It’s really for people who are interested in trying Scotch for the first time, and also for people who know and understand Scotch and want to try some fine Scotches.”

For those looking for a bigger celebration, wait a week for the fifth annual Taste of Scotland Ceilidh.

According to McEwan, a “ceilidh” (pronounced kay-lee) is a time to come together in celebration, and folks will do just that April 1 as the Hawaiian

Scottish Association takes over the entire property of The Willows from 5 to 9 p.m. for this official kick-off party to the next days’ festival and games.

In addition to food and beverage stations nestled around The Willow’s lush gardens and pools, there will be live Scottish entertainment from groups like the Celtic Pipes and Drums of Hawaii and Mainland band Mythica and Melissa Cox. Cost to attend is $25 in advance, $30 at the door, and includes access to unlimited pupus, soft drinks, iced tea, coffee and three drink tickets good for beer, wine or 1.5-ounce Scotch tasting.

Children’s tickets cost $15 each and include a separate children’s buffet and unlimited soft drinks.

“It’s a true Scottish evening,” McEwan says.

“The quality of the food is very good, as well as the venue,” Peddie adds. “It’s kind of hard to beat.”

Fresh Ahi Katsu

with Thai Yellow Curry Sauce & Fresh Mango Tomato Salsa

By Chef Chai Chaowasaree | Serves 2

Ingredients: • 8 ounces fresh ahi (fresh pink tuna) cut into an inch-long tube • 2 sheets nori (roasted seaweed) • 1/2 cup all-purpose flour • 1/4 cup cornstarch • 1 whole egg • 1/2 cup bread crumbs (panko) • 1 tablespoon furikake (if available) • 1 tablespoon chopped macadamia nuts • 2 cups vegetable oil, to fry fish

Preparation: • Wrap fresh ahi tube with nori, put aside.

• To prepare tempura batter, in a bowl, add flour, cornstarch and egg with 1/4 cup of cold water. Mix well until the batter has no lumps. Make sure batter is on the thick side.

• In a sheet pan, mix bread crumbs with chopped macadamia nuts and furikake. Set aside.

• Dip fish already wrapped with nori in the tempura batter, then quickly coat evenly with bread crumbs. Put aside.

• In a wok or deep-fryer,

preheat oil to about 375 F. Deep-fry fish until color turns light brown (shouldn’t be more than 2 minutes).

• Slice fish 1/4-inch thick.

Fish should still be raw inside (red-pink color).

Serve with fresh mango tomato salsa and Thai yellow curry sauce.

Ingredientss forr salsa: • 1 tablespoon ripe mango, about 1/4-inch size, diced • 1 tablespoon tomato, about 1/4-inch size, diced • 1/4 tablespoon chopped onions • 1/4 tablespoon chopped Chinese parsley • 1/4 tablespoon lemon juice • dash sugar, salt and Tabasco sauce, to taste

Preparation: • To prepare salsa, mix all ingredients, then set aside for about 10 minutes so all flavors can combine.

Expect hefty por tions when dining here, but also keep in mind that skipping out on dessert is absolutely forbidden when playing by my rules — especially when it comes to Romano’s famous Italian Sorbetto. Chef Michael was kind enough to share some of this irresistible goodness with me, and I was more than happy to experience the sweet and soulful flavors.

“We bring the sorbets in from La Gelateria, a local company, which uses primar y local ingredients,” Longwor th says. “What’s unique is that we are able to obtain local flavors that are unique to Hawaii.”

I don’t know about you, but after a heavy meal of lasagna or penne rustica, savoring each scoop of sorbet as it cleanses my palate is complete heaven.

An order of Italian Sorbetto is priced at $6.59 and features six mini scoops of Italian sorbet with an assor tment of flavors to choose from — be it guava, mango, coconut, Kaao orange or dragon fruit.

All are refreshing in their own right, but my absolute favorite is coconut sorbet.

It’s relatively healthy, minus the sugar, and made out of real coconut without sacrificing the creaminess of ice cream.

My second-best flavor pick would have to be guava. Sweet in taste with a bit of tartness to bring the sorbet to the next level, I’m sure all you foodies would agree that these sorbettos are melt-in-your-mouth delicious.

Chef Longworth ser ves this guilt-free dessert in a pristine martini glass and tops it off with mint leaf and almond biscotti. It’s

now clear why we save the best meal for last!

Ser g’s Mexican Kitchen A little piece of Mexico can be found here at Serg’s Mexican Kitchen tucked away in the heart of Manoa Valley. Chef and owner Sergio Arellano runs this restaurant, along with a second location in Waimanalo, with the help of his wife and business partner, Claudette.

As one of Hawaii’s go-to Mexican eateries, Serg’s Mexican Kitchen offers up the best of ever ything South of the Border with a bit of island flair evident in his mahimahi enchiladas and horchata, which is absolute perfection.

However, being that ice cream is now on the top of my list, I had to skip all this savor y good stuff and go straight for Serg’s Banana Tostada ($5.95). This decadent desser t is unsurpassed, featuring a sinfully ono deep-fried tortilla filled with creamy vanilla ice cream and caramelized banana topped with whipped cream, a drizzle of chocolate syrup and a sprinkle of cinnamon and sugar. This tempting tostada is big enough to share, but sorry, foodies, this one had my name written all over it and I’m still licking up the very last remnants of it. Muy, muy, muy bien!
