Check. This week’s food adventure was a marathon of “Ono, You Know” marathons.

And don’t think I didn’t eat to my heart’s content — because I did! Gym time, anyone?

et’s admit it, there are days when we want to eat everything in sight, from the doughnuts to the cookies, Cheetos, salad, chicken, crab, burgers, pasta and steak — we want it all! Greedy?

I think not — just incredibly starving! For me, days like these are anything but few and far between, in fact they occur on a regular basis. Thank God for great genes!

This week my appetite and tummy were comparable to a bottomless pit, so of course combo meals were the only way to go, allowing me to have it all! Steak and seafood? Check. A plethora of Japanese favorites? Check. Burgers, fries and

Although the menu is rather simple, comprising of ono burgers, fries and shakes, this topnotch burger joint has it all when it comes to quality food and customer service. My favorite Teddy’s combo meal of the alongside any of Teddy’s decadent moment features the Double Trouble burgers. DO: How did Maple Garden come to be?

Lam: Maple Garden has been around for decades actually. Robert Siu was the previous owner of the restaurant before he passed away, and we took over three years ago.

Prior to that, we owned Yen King in Kahala Mall and then the lease expired there. I was at Yen King for more than 20 years. I wanted to reopen a restaurant, so that’s when we 1

third anniversary by offering a special deal to our customers. If they buy two items off the menu or two people choose to eat from the buffet, then they get the third entrée or third buffet price half off.

DO: What type of Chinese cuisine does Maple Garden specialize in?

Lam: We specialize in Northern Chinese cuisine (Szechuan-style) DO: Many of Maple Garden Chef’s Specialties remain on the menu as originals. What are some new items you’ve brought to the menu?

Lam: Well, our menu is almost the same as it was at Yen King, but we’ve been able to upgrade the food and its quality with time. Our menu seems to be doing very well, but as far as the Maple Garden Chef’s Specialties, many people can’t seem to get enough of the Braised Pork Thigh in Shoyu ($30) and Eight Treasures ($11.50), among others.

priced below $10. What are some signature a la carte items on the Maple Garden menu that customers can look forward to?

Lam: Definitely the Mongolian Beef ($9.95), Chinaman’s Hat ($10.50), Chicken Five Spices ($9.95), Seafood Combination Sizzling Platter ($13.50) and Crispy String Beans ($9.95). The Mongolian Beef consists of tender beef with a medley of bell peppers, carrots, garlic and chili flakes.

It’s a spicy dish, but we can always cater the spiciness to the customer’s liking.

When it comes to Chinaman’s Hat, it’s similar to a Chinese burrito with pork, vegetables and long rice. People can fill the tortilla with this filling and add hoisin sauce for a bit of extra flavor. Drumettes are used in our Chicken Five Spices dish, it’s cooked in the old Maple Garden-style (Szechuan-style) and seasoned with five spice. One of our most popular items is the Seafood Combination Sizzling Platter, featuring shrimp, fish, calamari and scallops mixed with snow peas, onions and carrots, sauteed with a white gravy. Lots of loyal customers also enjoy the Crispy String Beans, paired with ground pork, Chinese pickles and dried shrimp, topped with a flavorful shoyu seasoning, in addition to Live Maine Lobster for $11.99.

DO: The buffet is available to patrons daily from 11 a.m. to 2 p.m. and 5 to 8:30 p.m. What can hungry diners expect from this gourmet buffet where more than 20 mouthwatering items are at their fingertips?

Lam: Our lunch buffet is priced at $11.95 for adults and $7.50 for children (ages 512), dinner is priced at $15.95 for adults and $9 for children. We offer soup and appetizers such as Hot & Sour Soup, Chicken Salad, Pickled Vegetables, Deep DO: The majority of the food here is Fried Gau Gee and Vegetable Spring Roll. In

terms of entrees, the buffet features Smoky Tea Duck, Cold Ginger Chicken, Garlic Shrimp (dinner only), Dry Fried Chicken, Honey Spareribs, Kun Pao Chicken, Spicy Eggplant, Beef Broccoli, Steamed Fish Fillet and more. Along with the entrees we also have Vegetarian Fried Rice, Vegetarian Chow Fun, Vegetable Chow Mein and Steamed Rice. For dessert we offer Almond Float and Jell-O, as well. For seniors over the age of 60 we also give a 10 percent discount.

DO: What makes Maple Garden stand out among other Chinese restaurants around town?

3 Lam: Well, for one thing we use no MSG in our food, which a lot of people appreciate. Our food also is on the spicy side, whereas many other restaurants offer a more mild cuisine. Being that our food is spicy is a good example of our traditional Szechuan-style. Keep in mind though that people can cater the spice to what they can handle, whether it be mild or very hot.

ocated at Newtown Golf Driving Range in Aiea, Newtown Drive Inn, formerly known as Newtown Pancake House, hits a hole in one when it comes to enticing your palate with delectable dining options for breakfast, lunch and dinner.

Owner Jini Ryu most recently took over ownership of the establishment from Jung Park, who is making a move to the Mainland.

“We cater to a great deal of golfers and families from around the neighborhood,” Ryu says, “breakfast is our specialty.”

Early birds can feast upon Newtown Drive Inn favorites, including a vast array of omelettes, eggs, pancakes, waffles and more. Perhaps a full stomach means a greater chance of shooting a birdie.

“The Loco Moco Fried Rice ($6.95) is a top pick here, along with our Banana Pancakes (short stack $4.95, full stack $6.50),” she adds. “Our Kim Chee Fried Rice with two eggs ($7) is another local favorite, as are our loco mocos.”

While I found it to be an acquired taste, it got me thinking — what’s the difference between foie gras and pate?

Is there any? If so, can you please explain? Thank you!

While I know there is a big difference in texture when it comes to foie gras and pate, I turned to chef JJ Luangkhot of JJ Bistro & French Pastry and Le Cacao Bistro for an in-depth response. “Foie gras is made of the liver of a goose or duck that has been specifically fattened,� he says. “It’s considered a French delicacy. Foie gras is very rich in flavor and doesn’t need seasoning, unlike pate. The texture also is smoother. “Pate, on the other hand, is made of ground meat and fat minced into a spreadable paste,� Luangkhot explains, adding that popular versions of pate are made with duck liver or chicken liver. “With pate, many herbs and seasonings are added, as well as liqueur.�

hen thinking about the possibilities for Napoleon’s Bakery, company CEO Jason Higa knew he wanted to provide his customers with a bakery product that was hot.

Thus, the Hot & Fresh operation was born in 2004 at the Napoleon’s Bakery at Ala Moana, in

which several hot bakery items were made fresh and promoted as such.

“When they (customers) come into our stores, we have doughnuts and pastries, but normally, those are not hot,” says Kris Campbell, retail bakery specialist for Napoleon’s Bakery. “That was the motivation (behind Hot & Fresh) — to make sure we could offer customers a hot item.”

The next Hot & Fresh

operations opened in the Napoleon’s Bakeries in Makiki and Ewa. Currently, Hot & Fresh can be found at eight select Napoleon’s Bakeries on Oahu.

“We opened (Hot & Fresh) at Koko Marina and Wahiawa; the newest three are at (Napoleon’s Bakeries in) Kapolei, Mililani and Kailua,” Campbell says. “Because we have 24 stores, we’re not equipped in the stores (to make all bakery products there), but there are a

few items we can do right there to have them hot for the customers.”

While the Hot & Fresh products originally included funnel cakes and other delicacies, three items remain — malasadas (70 cents each, $7.45/dozen), andagi (72 cents each, $7.65/dozen) and jin dui (three for $1.20, $4.25/dozen).

“We decided to take the three best-sellers of everything that we sold in the beginning and focused on that,” Campbell explains. “The malasada was our very first item.”

The Hot & Fresh malasada is unique from others, in that it is created at the bakery’s plant in Waipio and is then sent in its frozen dough state to the various bakeries that carry the Hot & Fresh operation.

Campbell’s responsibility is to train the bakery chefs

to prepare the products fresh at the different bakeries.

“The plant makes the majority of all the items and all our bakery items, and from there, it’s sent to the units,” she says. “The malasada (cinnamon/sugar) is made from scratch at the plant and then at the stores, we fry it. Our malasada only takes two to three minutes to fry, so customers would be able to get hot malasadas in their hands in about three-and-a-half minutes.”

Not only is the Napoleon’s Bakery malasada different because it’s prepared fresh at the bakery, but it stems from a unique recipe.

“We formulated this special recipe so that we could fry it (the malasada) at the units — not do it at the plant and deliver it — so the customer could have it hot,” Campbell says. “It’s a special recipe that we made from scratch. It was a collaboration of all our bakers, plus our head person at the plant. The malasada is the most popular of the three (Hot & Fresh) products; I get comments from customers saying that you can have our malasada the next day and it’s still good, it’s not greasy.”

Jin dui is prepared in a similar way 3 as the malasada, in that it comes from the bakery plant in a frozen, dough state and is then sent to each individual Napoleon’s bakery with

the Hot & Fresh operation.

“Jin dui is a Chinese ... dining out ... dessert,” Campbell explains.

“It’s mochi on the outside F E AT U R E and filled with a red azuki .................... bean and has sesame seeds on the outside. It’s deepfried, so it comes out light and crispy; it’s crispy but chewy because it has that red bean inside.”

In contrast with the malasada and jin dui, the Hot & Fresh andagi is made from scratch in the individual bakery units.

“I train the bakery clerks at the units: they have the yeast, flour and sugar,” she says. “They have all the ingredients at the stores to make it.”

Starting from Sept. 11, the Hot & Fresh operations will be introducing a newly flavored chocolate chip andagi.

“It’s something we’re already doing as far as andagi, but we’re just going to add a flavor to it,” Campbell says.

“Chocolate chip morsels are stirred into the andagi batter, which is then cooked to a golden crisp,” says Jay Crisologo, creative specialist for Zippy’s Restaurants’ marketing department. “Chocolate chip andagi are 82 cents each and $8.95 per dozen.”

Charro El lthough Mexicano Aiea Restaurant just celebrated its first anniversary, the cozy eatery offers customers a variety of Mexican cuisine through its expanded menu.

“We opened last year on Sept. 3,” says Sofia Ramirez, who owns the restaurant with her husband, John. “Our restaurant has a big sample of different Mexican flavors.”

El Charro prides itself on giving its customers exactly what they ask for.

“For example, if someone asks for a quesadilla in a certain way, that’s the way we make it for them,” she says. “They feel like we care for them and that’s our main thing — that people come and feel like they are eating at home. Everything in the restaurant is made from scratch; the only things that we don’t make are our tortillas and french fries.”

Ramirez and her husband take customer feedback seriously, frequently making changes to the restaurant’s menu to include highly requested dishes.

“When we realize it (a particular dish) is a big seller, we incorporate it into the menu,” Ramirez says. “We have not taken anything off the menu; we have only added

to the menu because pretty much everything has been a best seller in our first year.”

One of the most popular entrees on El Charro’s menu is the Combination Plate ($15.25), in which customers can choose three items, including enchiladas, Chile Rellenos, tamales, burritos, tacos, flautas or chalupas. The three choices, however, cannot include two of the same item.

Fajitas del Mar (one for $17.49; two for $26.49) is another popular choice, because of its size and variety of ingredients. The fajitas come with fish, shrimp, scallops, sautéed mushrooms, bell peppers and onions.

Customers often request Pollo Poblano ($11), or chicken breast sautéed in a cream sauce with poblano peppers and onions and served with rice, beans and the customer’s

choice of tortillas.

Although these entrees are popular, Ramirez says that people often enter the eatery asking about the restaurant’s Chile Relleno ($10 for cheese, $11 for beef or chicken) — a large poblano pepper stuffed with cheese and the customer’s choice of chicken — or Carnitas ($11.49), pieces of slow-cooked pork loin served with beans, rice, flour or corn tortillas and garnished with pico de gallo, guacamole and lettuce.

The most recent addition to El Charro’s menu is the El Charro Plate ($16.99) — chicken mole, one chicken tamale and one super chicken chalupa, accompanied by rice, beans and a choice of two tortillas.

Ramirez explains that this plate is popular because customers often enjoy the restaurant’s in-house mole (sauce) recipe in per-

fect portion sizes.

“Mole has ingredients that are really rich, so a lot of people like to eat mole.”

Two months ago, El Charro expanded its menu to include breakfast dishes.

Popular breakfast dishes include Huevos Rancheros ($6.99) and the Mexican Loco Moco ($5), which is not on the menu but customers can order it.

“Huevos Rancheros is two corn tortillas with beans and rice on top of it, two overeasy eggs and is topped with cheese,” Ramirez explains. “The Mexican Loco Moco is Spanish rice, ground beef and two overeasy eggs served with salsa and cheese.”

Items on the breakfast menu can be served all day, but early risers can enjoy special breakfast prices.

“Everything after 11 a.m. will be different — what you see for $5 will be $8.50 and what’s $8.50 will be $10.50,” Ramirez says. “The average price per customer is about $10.50.”

While El Charro’s menu has already changed considerably since the restaurant opened, more additions are in store.

“Soon, we’re going to have our own margaritas,” she says. “Right now, we don’t have our liquor license, but in a few months, we’re going to be able to sell margaritas and Coronas.”

Opened by co-owners chef Kapo Kealoha and Christopher Kegler about nine months ago, the South King Street eatery offers classic plate lunches with new, healthier spins.

One such dish is the Not Your Normal Loco ($12), a twist on the classic Loco Moco that is made with a locally grown and raised mahi mahi fish burger and served with shiitake mushroom gravy and two eggs.

“I love regular loco mocos,” he says. “I love them, but they are not very good for you. So I just took the idea of the original dish and re-created it using things that are really healthy for you. It’s basically a Loco Moco redone … that still tastes fantastic.”

Many of 4Kings Kitchen’s dishes also use local ingredients. “Sustainability should be important to everybody,” says Kealoha. “The biggest reason that I do it is that local ingredients are just better, and it’s all readily available here.” For example, the 4Kings Fish Tacos ($10) uses fresh island fish. And the Local Style Beef Luau Stew ($11), which Kealoha says is one of his favorites, uses locally raised beef. Kealoha explains that for other dishes, 4Kings also uses grains and vegetables from MA‘O Organic Farms.

Hinone Mizunone I recently ventured to this family-friendly Japanese restaurant on South King Street during lunch hour and entered into an ever-bustling dining room, where loyal patrons were feasting on homemade local Japanese delights such as Teishoku lunches, udon, Japanese curry, curry/udon combos and more.

M Feast on Max-ificent Filipino Flavors he popularity of Max’s Fried Chicken at Max’s of Manila is hard to deny. In fact, the restaurant — once a tiny cafe in the Philippines that today has exploded into an international franchise with locations in California, New Jersey, Hawaii, Canada and Dubai — is affectionately known as “The House that Fried Chicken Built.”

In honor of the secret recipe that started it all, this month both Max’s of Manila Hawaii locations in Waipahu and Dillingham are offering an All-You-Can-Eat Chicken deal for just $9.99.

“Max’s of Manila first ran this special in the Philippines last year in June. It became very successful, so they ran it again this year, and I guess through the other branches and through social media, other people heard about it and asked, ‘Why not have it here?’ So we just started running it in North America this year and here in Hawaii this month,” says general manager Maly San Luis.

“For our restaurant, it’s a big day because many Asian cultures (live with) the whole extended family,” says Maly San Luis, Max’s of Manila Hawaii general manager. “We just try to recognize the day and provide a way for families to celebrate with a big dinner out with the grandparents.”

For those extra-large clans of 10 or more members, San Luis recommends ordering one of Max’s of Manila’s pre-set menus ($139-$159), which are each good for up to 10 people and include Max’s Fried Chicken, Soup of the Day, Steamed Jasmine Rice, a variety of side orders and house specialties, dessert and beverages.

“To make things different, sometimes people will take (the catering menu) and add on the dishes that they like that may not be on the set menu. So every party, the food is different depending on the host,” San Luis says.

“And, you know, right now it’s tailgating time, so the whole catering menu or one of our takeout specials is great for that,” she adds enthusiastically.

In addition to a catering menu that includes options like Filipino Bisteak ($125 full pan/$64.50 half pan), Fish Fillet in Black Bean Sauce ($114.50/$57.95), Chicken or Pork Adobo ($86.50/$43.90) and Pancit Palabok ($78.95/$39.95), new to the Max’s of Manila lineup this summer is the Max’s KO-To-Go Pack ($15.99).

“It’s more like finger food,” San Luis explains of the meal, which includes six pieces of fried chicken thighs or chicken legs, one order of Lumpiang Shanghai and Crispy Chicken Skin.

“We also have one that we started running in the summer that was doing so well, we kept it,” she adds. Called the Picnic Package ($26.99), this takeout option includes one whole chicken, choice of Pancit and one order of Lumpiang Shanghai packaged in an eco-friendly reusable Max’s of Manila bag.

“It’s an easy, take-home thing,” San Luis notes. “You don’t necessarily need to be going to the beach or anything like that.

“And,” she adds, “since (they’re both) still so popular with people, we’re just extending it.”

Or, San Luis suggests, pair the chicken with a side order of Ensaladang Kangkong ($6.50).

Available every day on the regular menu, this refreshing salad is made with steamed ong choi and tomato bits tossed in a sesame soy vinaigrette sauce.

“It’s a nice vegetable side dish, and it’s light,” she says. “Since the is deep-fried, (the chicken Ensaladang Kangkong) is a good one to go with.”

Another Max’s specialty that goes well with the fried chicken is Miki Bihon ($8.95), a blend of egg and rice noodles stir-fried with fresh vegetables, pork, chicken and shrimp, all topped with a sprinkling of green onions.

“Filipino pancit, there’s a variety of them, and normally we have

either the egg noodle, which is the Canton ($8.50), or the rice noodle, which is the Bihon ($8.50), but the Miki Bihon is a combination of the two, so you have the egg noodle and the thin rice noodle,” San Luis explains, noting this pancit also can be made vegetarian per request.

“The seasoning and the sauce don’t have meat anyway, so we just leave out all of the chicken, pork and shrimp,” she says.

The All-You-Can-Eat Chicken offer began Sept. 6 and runs till Sept. 30, with the possibility of it becoming a recurring deal Hawaii diners can happily anticipate for years to come.

“That’s what they did in the Philippines,” says San Luis. “So if it’s well-received here, maybe we can do it again for a month next year.”

“People like our salads because of the ingredients that we use. We try to make the most of local ingredients,” Llarenas says. “The farm-totable concept is really important to us.”

Pan-Seared Sea Bass with Citrus Beurre Blanc and Carrot Linguini Serves 4 | By Chef Chai Chaowasaree

Ingredients: • 2 pieces sea bass filet, 7-8 ounce portion • 2 tablespoons vegetable oil • 2 tablespoons butter • 1 large zucchini strip (linguini shaped with shredder or Mandarin) • 1 large carrot strip (linguini shaped) • pinch of chopped garlic and shallot • salt and pepper to taste • ½ cup of Citrus Beurre Blanc sauce Preparation: • In hot pan sear sea bass with oil, butter.

• In another hot pan, sautée zucchini and carrot with one tablespoon of butter, garlic and shallot for a minute or two, then season with salt and pepper.

• Spin carrot, zucchini linguini noodles into a ball, place in center of plate.

• Top with sea bass, pour sauce around it and garnish with shredded carrot.

• 1 tablespoon chopped fresh herbs • 2 tablespoons unsalted butter

Ingredients for Sauce • ¼ cup orange juice • 1 juice of lemon • ¼ cup of white wine • 1 cup chicken stock • 2 cloves chopped shallot • 1 clove chopped garlic • 1 tablespoon chopped celery • 1 tablespoon chopped carrot • 2 bay leaves • 10 whole black pepper corns • 1 tablespoon sugar • pinch of salt to taste • 1 tablespoon chopped sun-dried tomato

Preparation: • In sauce pot on medium heat add orange juice, white wine, chicken stock, garlic, shallot, celery, carrot, bay leaves, and pepper corn, bring to a boil, then

simmer until liquid reduces to onefourth. Strain and keep liquid only.

• Add sugar, salt and sun-dried tomato, stir for a few seconds, then add butter, stir, turn off heat. Add chopped herbs.

ini Garden has long been known as one of the best places to find authentic Chinese and vegetarian cuisine. After a long residency in Chinatown, the restaurant moved to its Beretania Street location in 2005. Luckily for its loyal patrons, all original recipes were brought along as well. The restaurant is located at 2065 S. Beretania St. and open daily from 11 a.m. to 10 p.m.
