know it’s summer and all, but who said we can't embrace the heat of the season and liven it up even more with dishes that are muy caliente? So, this week, I decided to spice things up a bit with some zesty chili to awaken your senses and your taste buds. Chili is probably considered one of the most versatile of dishes and can be paired with practically anything — chips, bread, rice, salad, you name it — I love everything about it. DO: Kenny’s Restaurant opened its doors to the public 45 years ago. What’s the concept behind the restaurant? Corcino: Here at Kenny’s we provide a combination of local, Japanese and American cuisine. I guess you could say that we’re really known for our fresh island fish that our local fishermen bring in two or three times a week. Sandobal: Kenny’s has been here since I was a child, and it seems like everyone knows of Kamehameha Shopping Center and Kenny’s Restaurant. This restaurant also brings back a lot of memories for folks, and they reminisce about sharing meals here with their families and loved ones.

DO: So, have you seen generations of families pass through here? Corcino: Oh yeah, I used to see kids who were below my knees and now they’re way taller than me! We’ve watched a lot of children grow up here, and they’re still eating the same favorites from when they were young. DO: Yes, Kenny’s is an iconic landmark, not only in Kalihi, but on the island

as a whole. What do you think has attributed to much of its success? Hutchinson: Definitely. The loyal customers that we’ve had all these years have played a big part in our success. Also, the people who work here — we all pull together to make everything a success — without the employees, we’re nothing. It’s a real family atmosphere here, and everyone gets along. It takes a lot of good people to make a good restaurant. The food also has brought everyone in time and time again. Yeban: Our job is to serve our customers the best that we can, so we always try to provide them with excellent food and service. DO: Chef Ernesto, please tell us about your culinary background. Yeban: Well, I guess you would call it “old school” (laughs). I've worked with

chefs from the Hale Koa and the Outrigger Canoe Club for the last seven years prior to coming to Kenny's, and I’ve been here for the past 18 years. Here at Kenny’s the local-style of cooking is similar to what I do, and it wasn’t hard for me to continue Kenny’s traditional style of cooking. I’ve also learned a lot from the other managers and employees here at Kenny’s who know a lot about cooking — everyone shares their insights. DO: Obviously, you and the rest of the staff at Kenny’s must be doing something right. This 110-seat restaurant is always packed. What are some signature favorites here at Kenny’s that have remained constant throughout the years? Sandobal: Most definitely our Chinese Chicken Salad, Oxtail Soup and Chopped Ribeye Steak. Yeban: The BBQ Beef Tri-Tip ($16.69) also is very, very popular among our customers, as well as the Kenny’s Korean Style Chicken ($11.99) and

Akule ($14.95). The Akule is dipped in salt, pepper and flour, and then grilled, or you also can choose to have it steamed with a nice shoyu and sugar sauce (patrons can request to have it sugar-free as well). The meal is served with miso soup, tsukemono and choice of white or brown rice. Our Korean Boneless Chicken also is very special to us. We specially marinate the chicken, tenderize it, coat it with flour and then deep-fry it. We season it with our specialty kal-bi sauce. Rice and a medley of mixed vegetables completes the dish. It’s important to us that when customers come back to dine they receive the same good food that they know and love. Being that 85 percent of our customer base is return customers, we’re hoping the new menu items will offer them something different to try, as well as help to bring in new customers.

menu and changing it up some. Can you elaborate on this? Sandobal: We’re taking some items off the menu and adding some new items as well. We’re still sticking with the favorites, but we're adding entrees that we think the younger generations will really enjoy. We have a great 12-inch Teriyaki Chicken Pizza ($12.50). Our teriyaki sauce is a signature item here at Kenny’s, so on top of our pizza made with fresh mozzarella cheese we have grilled yakitori chicken, white onions and green onions, drizzled with mayonnaise. You wouldn’t believe it, but the mayonnaise really adds to the dish — it really balances out the taste. Hutchinson: As far as other new menu items go, the Taco Salad and Turkey Cranberry Salad have been selling really well, in addition to our Strawberry Pancakes and Haupia Pancakes.

DO: Yes, you folks have been working on revamping the

raving an upscale meal without the hefty price? Well, look no further than Kahai Street Kitchen. Don’t be fooled by the Kalihi establishment’s basic exterior, inside, owners Bruce Watanabe and Nao Iwata, along with executive chef David Yamamoto and the rest of the

staff, are brainstorming and cooking up the latest and greatest in fine-dining plate lunches. “We have recently added a few new specials to our menu,” Iwata says. “They’re pretty unique and people can keep up with our specials by visiting our Website kahaistreetkitchen.com, where we post new specials every morning,” he adds.

So, what are these alluring entrees that Iwata speaks of? Well, if you savor your seafood, you’ll surely love Kahai’s Opakapaka Acqua Pazza and the Crab Stuffed Calamari. And why not sink your teeth into the Prosciutto Wrapped Meatball Bomb? “We will feature these three dishes over the course of the week,” Iwata explains, noting that each entrée is served with your choice of white or brown rice and potato-mac or tossed salad. e all know the challenge when it comes to joining the family or a group of friends for breakfast. Depending on the restaurant, the menu choices are usually meats, eggs, pancakes, waffles, etc., maybe with some fresh fruit on the side. You want to go along with the crowd, but you keep a low-fat, meat-free diet. What to order? IHOP may have the answer. It has recently added “Simple & Fit” choices to its menu, breakfast included, reflecting the change in eating habits as healthconscious diners tend toward a low-fat diet. The menu offers under600 calorie versions of

Cooking over a tabletop hot pot is fun for diners, giving them free rein over what flavor combinations they want to create at any given moment. It also is a healthy way to eat, as most ingredients are fresh vegetables, seafood or lean cuts of meat that are cooked in soup broths rather than oil or butter.

But at many local shabu shabu establishments, the full experience of dining out is dampened by limited food choices and the lack of service, as customers must oftentimes serve themselves from cold, industrial refrigerators housed in a dining room surrounded by bright, flashy neon lights. Not so at Shabu Shabu Bangkok. Located on the mauka end of Kapahulu Avenue, Shabu Shabu Bangkok is decidedly contemporary-casual in design. The calming wall colors, collection of Asian-inspired artwork, soft music and dim lighting beckon diners to slow down, relax and savor every bite over interesting conversation. For those who wish to escape the crowds in the main dining room, there are three private rooms that can seat six people, and a larger room with a seating capacity for 40 that can be sec-

tioned off by sliding glass doors. Though the concept of shabu shabu is the same as in most places, Shabu Shabu Bangkok steps it up a notch by having a friendly wait staff bring orders to each table. Soup broths come in five flavors — beef, chicken, vegetarian, Thai curry and the house Tom Yum broth — and cost $2 per person, with free refills available. There are the typical menu combo choices of seafood, meat or vegetarian sets, as well as a la carte offerings like vegetables (from $3.75), meats ($4.75) and seafood and mushroom plates ($5.75). Every entrée comes with five different Thai dipping sauces — Cilantro Lime, Tom Yum, Thai Soy Sauce, Ginger Onion and the house Red Bean Sauce — to kick up the soup base, and for even more spice, each table has a bottle of fresh Thai chili peppers on the side. Per diners’ requests, Shabu Shabu Bangkok introduced a full menu of Thai cuisine last month to accompany its extensive list of shabu shabu options. From appetizers, soups and salads to entrees, Thai curries, noodles, rice dishes and desserts, the

new menu has something for everyone. Seafood lovers will rejoice with an order of Crispy Shrimp Wraps ($7.95), a mild combination of shrimps, water chestnuts and spices wrapped in pastry shells and deep-fried served with cool cucumber slices and a vinaigrette dipping sauce, and the Fish Patties ($7.95), local fresh fish minced with string beans, red pepper, lemon grass, shallots and fresh spices. For those who like their meals hot, there is the Evil Jungle Prince, a famous dish that combines fresh basil, coconut milk and red chili with choice of shrimp ($14.96), chicken ($12.95) or vegetables and tofu ($9.95) served over a bed of chopped cabbage. Or sample the Panang Curry, a fragrant and brightly colored medium-to-hot curry made with shrimp and scallops ($16.95), chicken ($12.95) or as a vegetarian option ($10.95). Other standouts on the new menu include Vegetarian Spring Rolls ($7.95), Spicy Lemon Grass Soup (Tom Yum, $4.50-$5.95), Green Papaya Salad ($6.95), Long Eggplant and Sweet Basil Stir-Fried ($9.95-$12.95), Green Curry Seafood ($16.95), Pad

The establishment specializes in pho, but you can find oxtail soup lovers thoroughly enjoying a piping hot bowl of Pho Kitchen's Oxtail Soup ($12.95) as well. “There are many health benefits to this soup,” Chong explains. “It's good for your kidneys, and helps strengthen your bones and muscles.” And better yet, the soup is delicious to boot. The broth is light and clear, abundant with onion, green onion, raw peanuts, mushrooms, carrots and, of course, tender pieces of oxtail where the meat falls off the bone. A meal in itself, the soup is garnished with green onion, Chinese parsley, a

touch of grated ginger and a dash of soy sauce. “Star anise and dried tangerine peel also helps to bring out the flavors in the soup,” Chong adds. For a refreshing appetizer, indulge in refreshing Summer Rolls ($5.25), featuring a chewy rice wrap filled with ingredients, such as lettuce, bean sprout, shrimp, basil and fried onion. Customers also may substitute the shrimp for tofu upon request.

Maple Garden’s two other signature dishes are the Smoked Tea Duck ($15.50, half; $30, whole) and the Braised Pork Thigh in Shoyu ($30). “The Smoked Tea Duck … I don’t think a lot of restaurants do it,” Lam says. “It has the smoky flavor and it’s crispy inside. For the Braised Pork Thigh, it’s the thigh part, so there’s not much fat. We cook that one for about six hours to make it soft. We also offer a lot of seafood options, like crab and lobster.” Other menu favorites at Maple Garden include the Honey Walnut Shrimp ($13.50), the Fish with Black Bean Sauce ($13.50) and the Sautéed Crispy String Beans ($9.95). Besides its authentic Szechuan cuisine, Maple Garden is unique in that it offers its customers two different dine-in options: either ordering à la carte or partaking in a gourmet buffet. The buffet is available from 11 a.m.-2 p.m. for lunch ($11.95 for adults, $7.50 for children) and from 5-8 p.m. for dinner ($15.95 for adults, $9 for children). The buffet menu includes

many items on the regular menu, such as Kun Pao Chicken and Salt & Pepper Shrimp. Several entrees, however — such as the Smoked Tea Duck, Cold Ginger Chicken and Garlic Shrimp — are only available during dinner. “Customers are about 50-50 (when choosing between the buffet option and à la carte),” Lam says. “The average price range per customer is about $20 or less. We have a senior discount for the buffet — 10 percent off every day.” In addition to the senior discount, Maple Garden offers its customers lunch and dinner plate specials. From 10 a.m. to 4 p.m., customers can get the lunch plate for $8.25, which includes a choice of two entrees — including selections like Crispy Fried Chicken, Chili Garlic Shrimp, Spareribs in Honey Sauce and Sweet & Sour Pork — along with rice, tea and Hot & Sour Soup. Customers have the same option for the dinner

plate, which costs $9.25. Maple Garden is not only a local favorite because of its cuisine and specials, but also because its facilities are accommodating for banquets, meetings and parties, especially during the graduation season. Weekends — Fridays, Saturdays and Sundays — are usually the restaurant’s busiest times, due to the various scheduled parties and meetings, according to Lam. “We have two private rooms,” he says. “One room holds up to 20 people and the other private room holds up to 70 or 80. We do a lot of meetings — we have a projector, microphone and podium; everything is ready for use.” Maple Garden’s various banquet specials range from $108 to $398 and include chef specialties, such as the Scallops ala Maple Garden, Winter Melon Soup and Braised Pork Thigh. A Unbeatable deals at the end of the rainbow

meal at Rainbow Drive-In is akin to stopping by your parents’ house for a quick bite to eat. The food is simple and unpretentious, but somehow recreating those homemade dishes is impossible to do on your own. The reason for this familial feel is because Rainbow Drive-In has been a family operation since it was founded by Sejiu and Ayako Ifuku in October 1961. “Rainbow Drive-In is still in the same family today,” says vice president Jim Gusukuma, who also happens to be the Ifukus’ son-in-law. “The second generation is still running it and looking to pass it on to the third generation.” Another part of the Rainbow Drive-In ohana is its dedicated staff of 42 that helps the tiny drive-in run smoothly from 7 a.m. to 9 p.m. every day. In fact, many of the employees have been with the company for more than 20 years, such as kitchen manager Pam Martin who started with the company in 1983. “I think people would be surprised by how many employees we have,” Gusukuma states. “Because our trademark is quick service, we have to hire a lot of people to have fast service and get the plates out.” Though bustling all year long, summertime signals the start of busy season for the drive-in due to its close proximity to Waikiki, Kapiolani Park and Diamond Head. “We’re fortunate to be in Kapahulu and be so close to the beach,” Gusukuma says. “And our business noticeably spikes when there’s waves!” he adds with a laugh. arly on a Wednesday morning, Rod Ohira and Mary and Harry Chang sit on a table outside of Fendu Boulangerie, leisurely chatting after they had finished up breakfast.The three are regulars at the quaint European bakery in Manoa Marketplace. Ohira was the first customer when the venue opened in 2009 and has been eating here at least a couple mornings a week with a group of friends, including the Changs. For breakfast, Fendu Boulangerie offers an array of pastries, including bis-

cuits ($1), croissants ($1.75), bran and blueberry muffins ($1.30) and cranberry and mango scones (75 cents). For lunch and dinner, you can enjoy sandwiches like the oven roasted turkey ($7) or rustic gourmet pizzas like the classic pizza with tomatoes and mozzarella (8-inch pie, $7.99) and basil pesto and goat cheese (8-inch pie, $10.99). Fendu Boulangerie also has a variety of daily bread specials including rustic Kalamata olive bread on Tuesdays and Hamakua mushroom bread on Saturdays. And don't forget to try the artfully designed

desserts like caramel mousse with vanilla rum bananas ($4.75 per slice) and guava cheesecake ($4.50 per slice). For these three regulars, it's been the delectable pastries that have been bringing them back all these mornings. Rod Ohira: “This is the best biscuit in town. You can't beat it. We're always here and I always get the biscuit and the bran muffin.” Mary Chang: “The quality of the food is excellent. I like the chocolate croissants. The dough is so flaky.”

prices back to what they were in the old days,” Gusukuma says. Save the increase in menu prices, much has remained the same at Rainbow Drive-In as when it first opened for business a half century ago. Most of the recipes used today are the same ones Sejiu Ifuku cooked up back in the ‘60s, including the famous chili that is the focal point of many menu favorites, from the Chili Plate ($5.75) and Chili Dog Plate ($6.20) to the Chili Dog Boat ($3.95), Chili Rice or Chili Cracker Bowl ($2.75 each). “We like to think we have a really good product, and we make it fresh every day,” Gusukuma adds. “It’s the same recipe that my father-in-law developed, and we don’t vary that recipe. We haven’t tapered with that, and it seems to work.” One recent change on the menu, however, is the substitution of ahi katsu for mahi mahi filet in Rainbow Drive-In’s Mix Plate ($7.25).

“Mahi mahi is getting extremely hard to get right now, so we’ve changed to ahi,” explains Gusukuma. “Instead of the grilled mahi mahi, we’ve substituted ahi in the katsu form, just because it holds up better and is more tender than frying it.” Everything else is the same on this best-selling plate, which also comes with a boneless chicken cutlet and barbecue steak served with two scoops rice and choice of macaroni salad or cole slaw. “If people know us, they know we don’t add different items very often, so this is a major change for us,” Gusukuma notes. “But people should try it.”

Alaskan King Crab Cakes Thai Style with Fresh Island Salsa and Baby Greens By Chef Chai Chaowasaree Ingredients : List A • 10 ounces Alaskan king crab meat • 3 ounces ground pork • 1 tablespoon chopped celery • 1 tablespoon chopped bell pepper, assorted colors • 1 tablespoon chopped green onion • 1 tablespoon fresh corn • 2 tablespoons mayonnaise • 1 whole egg • ground pepper, to taste

List B • 1 cup tempura batter (3/4 cup all-purpose flour, 1/4 cup cornstarch, 1 whole egg and 1/2 cup of water, combined) • 1 cup bread crumbs • 2 cups vegetable oil for frying crab cakes • 2 cups Big Island baby greens or mesclun greens Preparation: • Combine ingredients from list A, divide to a 3ounce portion and form a

round pancake. • Dip crab cakes into tempura batter and coat with bread crumbs. • In a wok or deep fryer, pre-heat oil at 375 F, then fry crab cakes to golden brown and set aside. • On a plate, lay down salad as a bed then put down crab cake and top with fresh mango, tomato salsa.

Fresh Mango & Tomato Salsa Ingredients: • 1 tablespoon ripe mango, diced about 1/4 inch • 1 tablespoon tomato, diced about 1/4 inch • 1 teaspoon chopped onion • 1 teaspoon chopped Chinese parsley • 1/2 teaspoon lemon juice

• 1/2 teaspoon balsamic vinegar • salt and Tabasco, to taste

Preparation: • To prepare salsa, mix all ingredients together. • Serve with Thai Crab Cake.
