appy April, loyal readers. I just returned home from a much-needed mini-vacay to Los Angeles, and now I’m back and ready for all things delicious! The City of Angels happens to be one of my favorite cities. The dining there is superb, and what can beat those enormous turkey legs from Disneyland, the happiest place on earth? And while I’m missing my friends I left behind in L.A., it’s good to be home and enjoying local food once again.

This week, I was going crazy for loco mocos. Therefore, I took my grumbling stomach and gigantic appetite to some of the best restaurants in town — many of which are highly regarded for their “Ono, You Know “ loco mocos.

So without further ado, grab a fork and get ready to dig in with me. You’ll be glad you did!

Who would you trust more when it comes to cooking up a tantalizing loco moco? None other than world-renowned chef Sam Choy, of course! I also put all my faith in Sam Choy’s Breakfast, Lunch & Crab’s executive chef Aurelio Garcia, who has been creating delicious masterpieces at this Nimitz restaurant for the past eight years.

“Da Hilo Original” Loco Moco ($12.95) has always been a good seller here, we make about 30 to 60 orders per day,” says dining room manager Gordon Medeiros.

This local-style loco moco tempts customers with its homemade half-pound hamburger patty with rice, generously covered with sauteed onions and Sam’s brown gravy. The dish is finished off with two large farm-fresh eggs, and garnished with green onions.

Southeast Asian food meets French flair at J2, where customers delight in combo meals and the restaurant’s newest menu item — gourmet pizzas or JJ Luangkhot, his culinary practices are a work of awardwinning art as he fuses Asian flavors with the aesthetic appeal of European presentation. Diners will find all this and more at J2 Asian Fusion, an upscale restaurant Luangkhot recently opened along Waialae Avenue.

Born and raised in Laos, Luangkhot creates dishes from the heart. He confesses to feeling blessed by his culinary experiments, pointing to the vast melting pot of flavors and ingredients that Hawaii has to offer.

Dining Out recently paid a visit to J2 Asian Fusion and Luangkhot was more than happy to give us a glimpse of his edible masterpieces.

DO: J2 Asian Fusion opened its doors earlier this year. How has business been since January and what is the concept behind the restaurant?

Luangkhot: Basically this restaurant is to expand our dining area and expand our menu from JJ Bistro & French Pastry (located on the same block) to J2 Asian Fusion, seeing that JJ's is always overbooked. Right now we're trying to align both restaurants along the same concept so diners can choose whether they'd like to dine at the quieter location (J2 Asian Fusion)

or the busier location (JJ's).

DO: That sounds like an excellent deal! What specific dishes would you recommend patrons order?

Luangkhot: For starters, the South Beach Blue Crab Rangoon ($7.95) is a great appetizer, featuring a sweet corn, red onion and cream cheese plum sauce. As for entrees, I highly recommend the Poached Opaka Confit ($12.95), served with rice. This exquisite dish is topped with ginger and green onion with a light shoyu sauce over fresh choi sum. DO: What type of cuisine can people expect here at J2 Asian Fusion?

Luangkhot: People can expect a good mix of Eurasian food — Southeast Asian food with a French flair. Currently at J2, we're working on a three- and four-course meal combo that a lot of customers seem to really enjoy. The three-course

showcases a baked brioche stuffed with honey-glazed char siu topped with Asian-style pickles and a hoisin chili sauce. On the other hand, South East Meets West ($12.95) consists of a baked brioche served with lobster, zucchini, bamboo shoots and red bell pepper with a green curry sauce.

Finally, the Grilled Pork Chop ($9.95) is an excellent option as well.

Customers can select from various sauce choices like leek and shiitake black bean sauce, mushroom cream sauce or a chili lemongrass sauce.

Our desserts are spectacular and there's a wide array to choose from, like the Cream of Matcha with a green tea mousse served in a martini glass.

The Le Cafe also is a winner, this sinful dessert features ladyfinger cookies soaked in espresso topped with a mocha mousse. Many of our dessert options are gluten-free.

DO: Is it true that you’re in the

process of changing up your menu a bit?

Luangkhot: Yes. Starting today we also will be serving personal pan upscale pizzas (starting at $7.95) at J2 Asian Fusion. I tried to come up with another 3 type of gourmet pizza that is topped with anchovies and jalapenos. We have another pizza, which I expect to be extremely popular, that's served with honey glazed char siu — it's more like an Asianfusion type of pizza. I think the J2 Special Pizza will be a topseller as well, featuring seafood (scallops, salmon and shrimp) with a red curry sauce. We've been serving pizzas at JJ's for about eight years, and we're known for our thin-crust pizzas that are topped with fresh mozzarella cheese and a tomato sauce base. All pizzas will be available for lunch and dinner.

We also hope to add pasta to the menu in the very near future. Our pasta sauces are on the very light side and we're known for our rosemary sauce, green curry sauce and garlic sauce.

DO: It's obvious that you're keeping

Luangkhot: I just think that anything can be happen at J2 if we believe in our creations. I believe every single thing that we come up with will work very well. I love creating something new and different for our customers.

n today's go-go-go society, where instant gratification trumps the well-earned rewards time and patience bring, the art of fine dining has nearly faded to a memory.

But at Hy's Steak House, the charm and splendor of tradition are alive and well. In fact, they're flourishing.

“One of a very few restaurants in Hawaii, Hy's does lots of tableside preparations of salads, flambe desserts and carving of certain meat entrees right at the guests' tables,” says general manager Bob Panter of those extra touches that elevate a run-of-the-mill dinner out into a fullout experience.

What also adds to the meal, Panter emphasizes, is the décor of the restaurant.

“Hy's dining rooms are quite unique, from our Art Deco Green Room, which is a quiet garden-like dining area, to our signature dining area that showcases our kiawe broiler,” he says of the downstairs Broiler Room, which houses a custom-made brass and copper caldron that serves as an open hearth for the house spe-

“We use the native Hawaiian kiawe wood to broil all the steaks,” Panter adds. “Steaks are king at Hy's.”

A personal favorite of the GM is the Peppercorn Steak ($40.95), a 9-ounce New York strip that has been pressed with cracked black peppercorns, broiled and topped with a house-made peppercorn demi glace sauce. Panter notes that if guests prefer a different cut of meat, they can accommodate the request. (Go online for a full menu listing of cuts and preparation styles.)

“Hy's also offers many different kinds of salads, of which two — the Warm Spinach Salad ($11.95) and Caesar Salad ($13.95) — are done table-side,” Panter adds of Hy's lighter fare.

One of the popular salad choices is the Steak Tataki Salad ($19.95). A 5-ounce piece of prime filet mignon is first kneaded in a bed of cracked black peppercorns to make the meat tender, juicy and flavorful. The steak is then quickly seared over the crackling flame — done to cook the outside but keep the meat inside extremely rare — and sliced extra-thin, almost like carpaccio, before being plated with an assortment of baby greens dressed in a ponzu dressing.

Another noteworthy nosh is the Fresh Mozzarella and Vine-Ripened Tomato Salad ($9.95), a simple meal of WOW Farm vineripened tomatoes and fresh mozzarella drizzled with a balsamic vinaigrette.

Speaking of “wow,” Panter says that “Hy's Famous” Rack of Lamb ($59.95) has always made a real impact on guests, but finishing the entire full eight-rib Australian spring lamb rack proved difficult to many.

“Knowing that it is just too much for many guests, we now offer a Half Rack of Lamb (four chops) for $39.95,” Panter reports.

“The smaller portion has proven very popular.”

Also popular is the seafood selection, be it the Angel Hair Pasta with Tomato, Scallops and Basil appetizer plate ($8.95) or the filling Alaskan King Crab dinner (market price currently $85.95), which is a full 1.5 pounds of sweet steamed Alaskan King Crab legs served with drawn butter and lemon, as well as vegetables du jour and choice of any potato selections or rice offerings.

But back to that tableside service ...“One of our most popular flambe desserts is our Bananas Foster, my personal favorite,” Panter says. “It's a huge double scoop of vanilla Haagen-Dazs ice cream that is topped with our bananas cooked in our Foster sauce created from scratch at the table.

The finale is the

dark rum flame and sparkle of cinnamon before the bananas are placed over and around the ice cream.”

Meant to be shared by two or more people, the dessert costs $13.25 per person and has been voted one of the best desserts on the island.

An appetizingly noteworthy show

hat could be better than enjoying award-winning food and topnotch Hawaiian music while also helping raise money for the recovery efforts stemming from the recent devastating earthquakes and tsunamis in Japan?

The Willows Restaurant gives diners the aforementioned experience as part of its “Pakele Live! With Tony Solis” show every Thursday from 6 to 8 p.m.

The event, which is streamed live worldwide over the Internet, features a special pupu menu, live music from some of Hawaii’s talented musicians and, on April 7 and 14, The Willows will accept donations to the American Red Cross and the organization’s continuing relief efforts in Japan.

“The support shown by all these Hawaiian artists is amazing,” says Garret Kamei, administrative director at The Willows.

According to Kamei, the April 7 show will feature the music of ManoaDNA and Kaiaulu while Eric Lee, Heart and Soul and Waipuna are expected to perform April 14. During these special benefit performances, the concerts are free and diners may order from the unique “Pakele Live!” pupu menu, or enjoy the awardwinning Hawaiian-American buffet ($34.95) featuring prime rib, crab legs and ono Hawaiian food.

According to Kamei, customers are raving about the Chicken Katsu ($12) that is available as an appetizer during “Pakele Live!” Some customers have told Kamei that it’s “the best chicken katsu they’ve ever had,” and that the chicken breast meat used in the dish is “super juicy.”

Serg’s Offers Up Authentic Enchiladas

Moving forward, the enchilada evolved slightly with the addition of cheeses, chili peppers and various sauces. For Chef Sergio Arellano, owner of Serg's Mexican Kitchen in Manoa and Waimanalo, authentic enchiladas start from scratch.

“Enchiladas are very authentic, a very traditional plate in Mexico. I remember eating enchiladas at least once a week growing up at home,” says Arellano. “I started making my enchiladas when I was 10 years old, just helping my mom and grandmother in the kitchen.”

With a dash of Korean and a sprinkle of American, KoreaMoku BBQ keeps its patrons satisfied through culinary fusion dishes

t’s been a little over six months since the grand opening of KoreaMoku BBQ. With help from her children, Yuki and Thomas “Yoshi� Uehara, chef and owner Eun Hee Nam continues to refine and improve her menu, an amalgamation of popular Korean and American dishes. “My mom likes to call it fusion,� says Yuki Uehara, Nam’s daughter, who works at the small restaurant, located at the front of Samsung Plaza on Keeamoku Street.

ly Korean symbols. One is a gat, the traditional black, wide-brimmed horsehair and bamboo hat worn by men during the country’s Joseon Dynasty. The other is a taegeuk, the round “yin and yang� symbol that represents the unity of opposites.

The taegeuk seems an appropriate symbol for the culinary fusion that takes place here. “It’s not just the Korean way of cooking,� says Uehara. “Mom adds something else to make it a little American. The Kim Chee Pancake ($6.95) is a big dish in Korea; it’s very common. But my mom adds cheese and it tastes amazing.�

The fusion continues with KoreaMoku’s Cheeseburger ($4.99 for the burger only; $6.75 with fries and soft drink). “Mom has her own sauce for the cheeseburger; it’s kind of like a Korean recipe, but also kind of like an American recipe,� Uehara says. “It makes the whole burger! A lot of people ask for some on the side so they can dip their fries in it.�

Originally from Seoul, where she owned a yakiniku restaurant, Nam opened her Honolulu eatery at the urging of her children. “I’ve always told my mom she’s a good cook,� says Uehara. When Nam’s clothing store closed, Yuki and Yoshi — both raised

in Hawaii and graduates of Kalani High School — were ready with suggestions for a new business. “My brother and I said, ‘Oh, why don’t you open a restaurant? It’ll be fun!’�

Nam found a spot she liked in Samsung Plaza, fronting Keeamoku — a central location with free validated parking for customers. Deciding what to call their new restaurant was a fairly simple matter. “Mom said, ‘Why don’t we name it Keeamoku BBQ?’ So I just threw it out there: ‘Let’s name it KoreaMoku!’ People joke about it a lot, because there’s so many Korean stores and people here.�

with big new flavors. Regulars include workers from HMSA and Walmart, students from Heald College, and others who appreciate the convenience and ease of free validated parking.

Standout dishes include Crispy Garlic C h i c k e n ($7.95), Fried Tofu Beef Steak ($9.95, shredded steak with slices of sautéed tofu) and Duk Kalbi ($8.95), which is made with boneless chopped kalbi meat pressed into a patty, grilled and sprinkled with green onions, and served on a bed of rice, accompanied by vegetables. Those vegetables, it should be noted, are different every day, depending on the chef’s whimsy. “Today it was mac salad, cubed potatoes, seaweed and bean sprouts,” says Uehara.

“Sometimes it’s lotus roots or baby radishes. It’s whatever Mom decides to make that morning!”

“It has kim chee, soybean sprouts and a bit of meat; it’s on the spicier side.” She also recommends the Spicy Seafood Ramen ($7.95). “It has shrimp, mussel, ika (squid), bean sprouts and a little pork,” she says. “It’s spicy, and on a cold day, it’s really good.”

But Uehara’s personal favorite is the BBQ Pork Ribs ($8.95). “That’s a dish that not a lot of Korean places sell,” she observes. The ribs are parboiled, covered with sauce and finished in the oven. “My mom likes to call it a barbecue sauce; it’s a little sweet, a little spicy, a little salty — really good. They have a bone, but they fall off the bone.”

Six months after opening KoreaMoku BBQ, Nam is already planning a revision of her menu, removing some items and adding others. “My mom kind of outdid herself when she first opened,” Uehara says with a chuckle. “She puts a lot of effort into this place. If it starts doing really great, we’ll probably open another restaurant and call it KoreaMoku II!”

Kobe Steakhouse keeps doing it all obe Steakhouse & Sushi Bar pleases appetites from across the globe with its award-winning teppanyaki-style cuisine and vibrant array of pupus that recently hit the menu earlier this year.

Located directly in the heart of Waikiki, this family-friendly restaurant offers top USDA choice sirloins and tenderloins, along with some of the best crustaceans straight from the sea.

Kobe general manager Roy Nakamura says there are many dinner options to choose from, including the Emperor Steak ($36.95) and the Filet Mignon ($34.95), however, it’s the Steak and Scallops ($34.95) that has been highly requested by Kobe’s loyal dining patrons time and time again.

“We’re really proud of the Nova Scotia scallops that we have here,” Nakamura says. “They’re really dry, and because of that they don’t shrink on the grill and they don’t lose much water — they stay plump and juicy.”

These mouth-watering scallops are a perfect accompaniment to Kobe’s famous hibachi steak. The entire meal also comes complete with soup, a shrimp appetiz-

er, teppan vegetables, tsukemono, rice and green tea.

And while all this may sound like an ideal meal in itself, you’ll want to sample a few of Kobe’s top pupu picks as well, such as the Dynamite ($10.95) and the Mini Lumpia ($8).

The Dynamite features a succulent array of scallops, shrimp, zucchini and mushrooms all exquisitely baked in a mayo and tabiko sauce.

“This has been one of the longstanding items on the menu,” Nakamura attests, and with the explosion of flavors that come with each and every bite, there’s no second-guessing this notion.

On a different note, the Mini Lumpia is a newer item on the pupu 1 menu that guests have been gobbling up like there’s no tomorrow. Prepared taquito-style, this special lumpia creation was derived from a personal recipe of one of Kobe’s chefs.

“The lumpia stays crispy, whereas many other lumpia tend to get soggy after a while,” Nakamura states, adding that each piece is filled with ground beef, veggies and bean sprouts. “When dipped into our sweet chili sauce or patis sauce, it’s really delicious.”

First-timers stepping into Yakiniku Camellia Buffet may be slightly overwhelmed by the numerous items found behind the refrigerator doors in the buffet line.

The best advice owner Mihee Jeon can give is to start at the beginning.

At the front of the buffet line are the raw meats, which include generously sliced pieces of pork belly, marinated kalbi, barbecue beef, marinated chicken, dried squid and whole shrimps. There is even fried tofu flavored with a special homemade sauce for the vegetarians.

Once customers make their selection, they can take their plates back to their tables to cook the meat over a built-in burner.

Next up are the sliced vegetables, which include green bell peppers, onions, cucumbers and more. There also are whole pieces of garlic fresh from the clove, crispy bean sprouts, choy sum and mung beans that help add texture and flavor to the meal.

ocated right next to the Japanese Cultural Center on South Beretania Street, Yakiniku Camellia Buffet has been a fixture for local buffet aficionados for the past 26 years. And for the last six years, owners Mihee and Chang Hik Jeon have been carrying on that tradition of excellence in food quality and quantity.

The couple use their own recipes in all of the pre-made dishes, which Mihee and Chang Hik prepare themselves every day. In fact, before moving to Hawaii from Korea, Mihee voraciously studied the culinary arts so that she could create foods that both taste good and are good for you.

The result is a menu that is healthy and extensive, with a little bit of something for everyone.

“We have something for vegetarians, something for the meateaters and something for the seafood lover,” Mihee says with a beaming smile.

Among the 50-plus choices in the buffet line is pork belly, which resembles bacon in taste and taste alone. Each piece of pork is cut thicker than your average slice of bacon, and thanks to the ingenious yakiniku cooking technique, any fat and grease is drained out of the cooking pan, leaving only a crisp, tasty piece of meat for diners to enjoy.

Another local favorite is the shrimp. Anything but tiny, these sea creatures are bought fresh each morning from the local fish market, along with other seafood delights like squid and ahi for poke and sashimi.

Other protein choices include marinated kalbi, barbecue beef and fried tofu, which Mihee says most customers enjoy wrapped in the palm-sized lettuce leaves, taco-style.

The Jeons constantly change up the items in the buffet, which allows Mihee to experiment with new flavor profiles and marinades, which, she contends, are the secret to their success.

But one item that is a pleasurable constant at the Beretania eatery is Mihee's homemade kimchee. Not too salty or sour, the kimchee is so popular, customers return almost daily for a taste.

“I’m always developing new things, depending on what is healthiest for the customer,” Mihee admits, making sure to note that they do not use MSG. “There are so many other restaurants (out there). That’s why we have to work so hard to offer something different.”

Salt & Pepper with Fresh Kahuku Prawns

by Chef Chai Chaowasaree | Serves 2 Ingredients: • 1 pound fresh Kahuku prawns • 1.5 tablespoons cornstarch • vegetable oil, for deepfrying prawns • 1 tablespoon chopped garlic • 1 tablespoon sliced red jalapeño pepper • 1/2 tablespoon salt and pepper seasoning (use one part garlic powder, one part sugar, one part fine ground black or white

pepper and two parts fine salt mix together) • 2 tablespoons chopped green onions Preparation: • In a pot or deep frying pan, heat oil to 350 degrees.

• Toss prawns into cornstarch and remove excess cornstarch. Then fry prawns until they are cooked, about one or two minutes, depending on heat of stove, or until

shell is crunchy. After the meat is cooked, set aside.

• In a sauté pan on medium-high heat, add 1 tablespoon vegetable oil, garlic and red jalapeno pepper, and cook for 30 seconds.

Then add fried prawns.

Sprinkle seasoning evenly to cover shrimp, add green onions and toss for 10 seconds before turning off heat.

• Perfect with a bowl of rice.
