o be frank, this week I’m talking wieners, as in anything and everything hot dogs! Things are definitely heating up this summer as everyone’s favorite “dog” in a bun takes front and center. Regarded as one of America’s signature foods, the basic hot dog concept began in 1874 when Charles Feltman, a Brooklyn resident, began serving beef sausages in a way that was never before conceptualized: in the form of sandwiches! Add to that ketchup, mustard, onions, relish, what have you, and it’s comfort food at its purest. However, nowadays many food establishments are teaching old dogs new tricks and churning up revolutionary masterpieces featuring none other than America’s top dogs. Imagine a fusion of flavors such as kim chee, sushi rice, chili and more all encompassing a simple hot dog. My, how times have changed! So, this week on my quest for some delectable dogs, I dropped in on some of the best Ono, You Know establishments that are pushing the humble hot dog to even greater heights.

Ready to soak in hot dog glory sushi style, my appetite and I headed straight to Genki Sushi to take on the restaurant’s famous Hot Dog Roll. As Hawaii’s premier kaiten-style sushi establishment, and with 14 locations in the Islands — nine on Oahu, two on Maui, one on Kauai and one on the Big Island — this first-class sushi joint caters to all of your sushi cravings. At first glance you may wonder just how a Redondo’s hot dog fares with sushi. Well, let me tell you, it’s definitely a hot item! “It’s been on our menu since the beginning. Ever since we opened Genki Sushi,
Hot Dog Roll has been popular with everyone, especially the kids,” says director of purchasing, David Moon. Priced at $2.20, you can’t go wrong with this unique sushi creation. Referred to as an inside-out-roll, Hot Dog Roll consists of flavorful pieces of hot dog combined with chunks of scrambled egg nestled within sushi rice, nori and sprinkles of furikake. This Genki favorite, served in four bitesized pieces, is a great option for those on the go and in need of a convenient, nononsense meal. It’s a local take on an American classic. Opulicious Restaurant Hungry for some ono local grinds? Well, twist on over to Opulicious Restaurant on Coolidge Street for a oneof-a-kind dining experience complete with mouth-watering local favorites just like mom used to make, and impressive balloon creations that never cease to wow new and loyal patrons. “Opulicious is the first balloon-themed restaurant in the nation,” says owner and chef Kelli Kay Chun, who also is a skilled balloon artist at that. “The kids really take to the balloon animals.” And while the array of adorable balloon animals is quite astounding, with hot dog on the brain, I couldn’t think of anything
finer than Opulicious’ famed KC Waffle Dog ($3.50), which features a scrumptious hot dog bundled inside a special waffle batter, which Chun explains is made from a secret recipe. The dish is served a la carte and is accompanied by a zesty relish for dipping. Add cheese to your KC Waffle Dog for an additional 50 cents. According to Chun, this longtime local delight is a “blast from the past,” as KC Waffle Dog was the dish of choice during the ’50s, ’60s and ’70s. – See page 15

We’re really utilizing every aspect of the hotel, and all of our food and beverage outlets. We’re putting together an amazing celebration.” The Kahala’s Julia Child Tribute culinary series will include a gourmet French dinner benefiting the James Beard Foundation; French cooking classes and demonstrations at the resort’s Universite Patisserie; Julia Child’s famous recipes featured on the menu at Hoku’s, a special Chef’s Table Grand Experience custom five- or six-course dinner, and so much more. and it speaks volumes as to where we’re going as a culinary society.” As for Hirabayashi, he believes Child helped pave the way for many aspiring chefs, including himself. “Julia Child really brought French cuisine into the homes of America. She made it look so simple and made people realize that it wasn’t impossible to create. Foundation Dinner is set for Aug. 12 from 5:30 to 10 p.m. in The Kahala’s Maile Ballroom. The James Beard Foundation was founded in 1986 to celebrate and cultivate America’s diverse culinary heritage and cuisine. According to Grippo, this exquisite dinner (early bird reservations before July 1, $275 per person; reservations after July 1 $325 per person), will showcase the divine masterpieces of Hawaii’s regional chefs, including the hotel’s own Team Kahala comprised of executive chef Wayne Hirabayashi and pastry chef Michael Moorhouse. Other local celebrity chefs being featured are Warren Uchida, Colin Hazama, Ryan Loo and Patrick Okubo. “We have an amazing pool of talent, and another special guest for the evening will be Mitchell Davis, Ph.D., executive vice president of the James Beard Foundation in New York City. We’re delighted to have him here,” Camara explains. “Working with the James Beard Foundation and giving back to the community is so important. Who or what inspires you as a chef and owner? My biggest inspiration is the cuisine itself. We aim to offer our customers really good, Hong Kong-style Chinese food. With our family-style establishment, we love to see our customers come in with their family and friends to try some authentic cuisine. I am happy to give them that experience. If you could serve food to a celebrity, who would it be and why? What dish would you serve? If I could serve a meal to any celebrity, it would have to be Jeremy Lin because I love to watch basketball and I really admire his awesome skills. I would serve him some of our highest-quality seafood, including my specialty Cold Combination Platter, Live Lobster, Crab and Fish Maw soup.

Is there a dish that you create that’s not on your menu, but available upon request? Some of our regular customers often request our Deep Fried Mochi Duck even though it is not on the menu. The duck is de-boned and stuffed with fried mochi rice to give it a delicious flavor.

ith Paesano’s popular Manoa restaurant undergoing renovations, its long list of fans will need to take the short drive to its Waimalu location. That’s OK. The oh-so-good appetizers are worth a little added effort. Upon arrival you may want to try Homemade Cold Antipasto ($10.90), especially if you are dining with friends. The fresh salad is made with romaine lettuce, roasted bell peppers, carrots, olives, homemade sweet and sour pickles, salami, prosciutto, anchovies, Fontinella cheese and topped with an olive oil vinaigrette. The sweet peppers and carrots balance out the flavors of the salami, prosciutto and anchovies, and the dressing is bright, slightly sweet and tangy. You can try eating this massive plate yourself or share it to save room for Fresh Clam Hamakua ($13.90). The clam dish isn’t on the menu, but feel free to order it.
Fresh clams are sauteed in garlic, Hamakua mushrooms, chili flakes and a white wine butter sauce. The flavor is just awesome as each bite is soft, sweet and salty with a fresh hint of citrus. That pool of butter sauce on the bottom of the plate serves as a delicious dipping destination for the homemade bread that is baked each morning and delivered hot, flaky with a soft, buttery interior. Another, slightly more spicy dipping option can be found in

Children also jump into the soup, so to speak, without even realizing they are consuming green things that are good for them. “The kids get a fully balanced meal, and it’s kind of fun for them to choose an item and cook it themselves,” Mitsuyoshi says. “Of course, some of them also head straight for the hot dog bowls and the shave ice.” Shave ice? Yes, every shabushabu customer can help themselves to as much shave ice as
they want — with several flavor choices, of course — at no extra charge. A good way to top a warm meal. Still other tempting desserts can be had for $1.50 each. Sweet treats on display recently were Mocha Chino Deelite with 100 percent Kona coffee, chocolate and an Oreo crust; Banana Crunch with peanut butter, chocolate macadamia nuts and Oreo crust; Mauna Kea Deelite with haupia, fudge, coconut, mac nuts, Dutch chocolate and Oreo crust; Melona ice cream bars; and the newest dessert, Green Tea pie with azuki beans, vanilla and

honey graham crust. Another choice: You can choose not to cook your own. Hanaki offers ample ramen bowls of all kinds from its own kitchen ($11.95 or $12.95), as well as donburi bowls ($11.95) and combination plates of two ($9.95) or three entrees ($12.95) served with rice and miso soup. The choices listed here also can come as side orders of $4.50 each: shrimp tempura, fried fish katsu, chicken kara age, tako yaki, homemade gau gee, deep-fried oysters, teriyaki chicken, vegetable tempura, grilled butterfish bones, teriyaki tofu and misoyaki butterfish.
Now for one final lesson on this culinary tour. The term shabu-shabu apparently was inspired by the swish-swish sound of cooking the meat in the pot. The name Hanaki means “precious flower.” So far, they have not put flowers on the menu — but some blossoms are edible, and they might taste great floating in a sukiyaki soup base and dipped in the house secret sauce. Hidden along Nimitz Highway is a seafood buffet that has been serving kamaaina, short-term hotel guests and military families since the 1970s, and is waiting to be indulged in every weekend. During the week, Plaza Cafe serves food a la carte, but when the weekend rolls around, out comes the buffet. This allyou-can-eat event is from 5 to 9 p.m. every Friday and Saturday, and features local seafood favorites such as snow crab legs, poke, mussels, its fresh catch and lomi lomi salmon. This seafood buffet costs $30.95 for adults and $16.95 for children (ages 4-10). If seafood isn’t really your preference, Plaza Cafe also offers its buffet for $26.95 (without crab legs) and serves other popular dishes such as kalua pork, island-style chicken and a pasta and salad bar. After a good meal, you can’t forget the best part — dessert. Max’s Packs Up the Perfect Summer Picnic

s of last week, it’s officially summertime, and Max’s of Manila has you all set for the season. If you’re short on summer travel funds, Max’s allows you to take a food tour of the Philippines — and you won’t even have to leave the island. Located in Waipahu and Dillingham, the restaurant offers authentic, homestyle cuisine that will transport diners to a classic Filipino kitchen. “We bring (customers) the traditional, homestyle Filipino food that they grew up with and miss,” says Max’s Dillingham operations manager Elizabeth Joven. “That’s the key, and I think that’s why people keep coming back.” In honor of summer, Max’s recently relaunched its popular Picnic Package ($26.99) option, which features a whole Max’s Fried Chicken ($13.50 for an individual order), Pancit Canton ($8.50 for an individual order) and Lumpiang Shanghai ($7.25 for an individual order). Not only is the Picnic Package an incredible deal, but it also highlights some of the restaurant’s most popular dishes. The chicken, for instance, is one of the all-time customer favorites and has been

one of the restaurant’s staples since it opened in the Philippines in 1945. “It’s really just fresh chicken that has been seasoned and fried,” Joven says, adding that it is made from a secret recipe.

ax’s of Manila first began as a small cafe in Manila in 1945. Although it had just a few menu items, it quickly became a hot spot for American troops living in the city. When the cafe created its original fried chicken recipe, its popularity soon spread. Today, there are Max's restaurants throughout the Philippines and in California. Locally, the Waipahu location opened in 2006, followed Daniel Domingo by the Dillingham restaurant two with Haloyears ago. Halo Although that little cafe has evolved into a franchised enterprise, it has not strayed far from its homestyle fare. “With all of the convenience goods available in the market, we still make it a point to start from scratch,” says Max’s Dillingham operations manager Elizabeth Joven, who first started working at Max’s corporate office in the Philippines. “Like with our lumpia, we start ours from scratch. “That is the trademark that Max’s has been known for. It’s not just about the business, part of it also is taking care of the priorities.” Those priorities, she says, are serving homemade Filipino favorites. “Pretty much everything is the same as in Manila,” Joven says. “Everything is modeled after the Manila restaurant. We try to keep the menu as much the same here as it can be.”

spring roll. “We make it from scratch,” Joven says. “The sweet and sour sauce is homemade, too. We cook our own sauces.” Complete with to-go boxes and a reusable bag, the Picnic Package is designed to be enjoyed outdoors. All customers have to do is call in their order and pick it up — and they’ll have a perfectly pre-made picnic. Another treat that is perfect for the season is Halo-Halo ($5.70), which is a delightful dessert with ube ice cream that comes with coconut, jackfruit, beans gelatin, flan and yam. “It's the most popular among all of the desserts,” Joven says. While customers are busy enjoying their tasty summer treats, the chefs at Max’s of Manila are busy in the kitchen concocting even more new dishes. Currently, the Waipahu location offers breakfast on Sundays, and the Dillingham location also is hoping to start offering breakfast soon. Joven estimates that the breakfast menu could be ready by early fall. She explains that it would be a popular homestyle Filipino breakfast that consists of beef, fried rice and eggs. ukuya Delicatessen & Catering has made Moiliili its home for more than 75 years, and it has provided customers with quick on-the-go lunches and extensive catering options since its beginning. What started out as a small okazuya restaurant has become an island favorite and now includes items such as bentos, mochi and homemade cookies on its menu. During the lunch hour one day, Dining Out caught up with Andres Albano. The Hawaii Kai resident says he visits Fukuya about once every two weeks. Andres Albano: “I like the Fried Chicken ($2.40) and Gobo ($1.85).

Kissaten — owned by cousins Jon Ishimi, Neysa Taba and Sean Ishizaki — opened in November 2010 and has catered to a variety of customers, thanks to its availability.

“We wanted a place to go to that’s 24 hours,” says Jon Ishimi, of the reason why the trio decided to open Kissaten. “We decided to open a coffee café that serves good, hot, quality meals 24 hours a day, seven days a week.” Kissaten’s around-the-clock service has indeed made it a popular spot for customers of all ages. Although kissaten translates to an upscale “coffee shop” in Japanese, the eatery provides much more than just coffee for its clientele. Taba points out that Kissaten has different menus for breakfast (6-11 a.m.), lunch/dinner (11 a.m.-9 p.m.) and latenight specials (9 p.m.-6 a.m.). Upon the eatery’s opening, Kissaten Melt ($9) — composed of shaved pastrami, mozzarella, caramelized onions and whole grain mustard aioli on sourdough bread — was its signature dish. However, Roasted Beet and Chicken salad ($9)
Ishimi notes that Turkey Pesto Melt ($8) — a medley of sliced turkey breast, bacon, mozzarella and pesto aioli on foccacia bread — is now the most popular among customers. Other customer favorites include Smoked Salmon Salad ($8) — smoked salmon, baby spinach, citrus and tarragon vinaigrette — and Clam Chowder ($6; additional $2 for soup in a toasted bread bowl). In addition to its regular menu items, Kissaten has a variety of specials that change daily. If the specials do well and are popular among customers, they eventually become items on the regular menu, according to Taba. Examples of specials include Roasted Beet and Chicken Salad ($9) — a mixture of beet chunks, baby spring greens, tomatoes, roasted chicken breast, toasted mac nuts and creamy bleu cheese dressing — Gnocchi ($9), with a
combination of asparagus, mushrooms, bacon, browned butter, garlic and a poached egg, and Linguini Bolognese ($9). “Now that we came up with so many specials, we don’t sell as many of the Kissaten Melt as we used to when we first opened,” Ishimi says. “We’re going to come up with breakfast specials, too.” For the hot and humid summer months ahead, Taba emphasizes the eatery’s unique and fresh salads, as well as Kissaten’s variety of drinks. Especially popular drinks include Green Apple Crème Soda ($2.75 small, $3.50 medium, $4 large) and Dark Chocolate Strawberry Latte ($3.75 small, $4.25 medium, $4.75 large). The items on Kissaten’s menu are available for dine-in or takeout. Catering services also are provided for customers. “We can do catering for parties or special events,” Taba states. “We cater for any size party; our customers can choose items

from the menu and customize their order. We can shut down for large special events as well.” She emphasizes that Kissaten also takes reservations for larger parties on a firstcome, first-serve basis. “We’re really family-oriented,” Taba says. “We’re able to take reservations for parties and we can accommodate groups up to 15 people.” Besides the ever-changing daily specials, other modifications are on the horizon for Kissaten. “We’re looking to expand our menu options — giving more options, as far as the combos and soup additions go,” Taba says.
