hen it comes to lamb, where do you fall on the food spectrum? Do you consider it to be tender and succulent or gamey and, quite frankly, baaaad? Viewed as one of the most versatile of meats, lamb is surprisingly not a favorite among Americans. But ask any European, Australian or New Zealander and I’m sure they’ll tell you otherwise. And yes, although it may be a bit of an acquired taste, I’ve learned to enjoy this uniquely meaty morsel over the years. So if there are any of you who’ve yet to develop an affinity for lamb, you’re in for a treat. Read on and you may just change your mind after setting your palate on these irresistible lamb creations found at the following “Ono, You Know” establishments.

As a fan of lamb, I must admit that the Greek Marina has some of the best lamb I’ve ever set my chops on. Greek specialties such as the Lamb Souvlaki ($13.95 lunch, $15.95 dinner) grab at the taste buds of hungry patrons, as this tasty dish features savory pieces of
marinated lamb grilled to your liking and then placed on a large skewer with a colorful array of bell peppers. It’s then set atop a heaping portion of rice and Greek Marina’s famous salad. “The marinade consists of a garlic, vinegar, lemon and a Worchestershire sauce, and many people like to use the Taziki sauce that we also offer on the side,” says server Mako Takahama. The Lamb Shank ($15.95) is another popular dinner option that lamb enthusiasts gravitate toward. Soaked in a stewbased tomato sauce with sauteed onions and peas, the lamb shank entree also is served with rice, Greek salad and pita bread. So ono! t’s that time of year again, that special time between May and July when the air smells just a bit sweeter, the clouds appear just a tad fluffier, and weekends are filled with a never-ending array of celebrations.
I
Ah, yes, all of this can only mean one thing: Cake season is upon us. “May, June and July seem to be ‘cake season’ due to the many graduation parties, Mother’s and Father’s days and birthdays being celebrated,” says Jan Tsukazaki, Napoleon’s Bakery general manager. And what better way to start this most-delicious seasons than with a custom decorat-
ed cake from Napoleon’s Bakery? Available in quarter sheet (24 pieces, $40.75), half sheet (48 pieces, $61.25) and full sheet (96 pieces, $96.75) sizes, Napoleon’s Bakery decorated cakes come in flavors including Chantilly, Dobash, Chocolate Chiffon, Orange Chiffon, Vanilla Chiffon, Haupia, Peach Bavarian, Guava and Dream Cake. “Our cakes are special because they are chiffon cakes made from scratch using the best ingredients we can find,” Tsukazaki says. A tri-flavor Neapolitan creation also can be ordered for an added charge, while the popular, limited edition Red Velvet flavor is back, but only for orders made and picked up during the month of May. Standard-size Red Velvet cakes ($18.15) and cupcakes ($2.55 each) also are available. “We started offering the Red Velvet cake as a special flavor for Mother’s Day, and it gained in popularity so we added it to other special occasions
like Valentine’s Day and Christmas,” Tsukazaki explains. “Personally, Dobash and Chantilly are my favorites,” adds the self-proclaimed chocoholic. “But, when I have the Haupia cake, I can’t get over how good it is.” That mouth-watering flavor can be attributed to Napoleon’s commitment to quality ingredients. For example, the haupia for Napoleon’s classic Haupia cake is made every morning using fresh coconut cream rather than coconut milk, which gives the custard a richer, creamier texture and “real” coconut flavor. “By ‘real,’ I mean natural, much like eating fresh spoon meat coconut,” Tsukazaki says. “We cook each batch of haupia fresh here — it doesn’t come frozen or in a can from the Mainland. “And our Chantilly icing,” she adds, “is made daily from butter, cane sugar, milk and eggs,

7 which we cook very slowly over a long period of time to get it to the right consistency.” Every Napoleon’s Bakery dessert is made in much the same manner — fresh every day from ingredients that include C&H cane sugar, highquality cocoa, canola oil and fresh fruits like bananas and strawberries. And if the price of a certain product goes up, Tsukazaki says they continue to use it to avoid sacrificing the taste and quality of a tried and true recipe. “We made a conscious decision to use the best ingredients we can, even if it means our products cost more than the competition,” she asserts. “Our signature Napples are made with butter, which just cannot be

duplicated with any margarine or butter replacement — it just wouldn’t be the same flaky, buttery product we have all come to love.” Customers also have come to love the designs that grace the tops of each custom decorated cake. Design options range from Standard Decoration (confetti, roses or lei) to a more elaborate Photo Cake, in which customers can upload a photo of their choice at napoleonsbakery.com and have the picture transferred to their cake. Or opt to have a combination of the two. “Each cake design is unique to what the customer wants,” says Tsukazaki, who began her career at Napoleon’s as a pastry chef when the restaurant chain
first opened in 1983. “Our cake decorators are very talented artists; they have the intrinsic artistic talent and over the years have learned to transfer their technique from paint brushes to icing and decorating bags. It takes practice, practice, practice to hone their skills.” Once the cake is taken care of, grab a sweet party favor or two from Napoleon’s Hot N’ Fresh operations, conveniently located within select Napoleon’s locations. “We wanted to offer hot, freshly made dessert items like malasadas and andagi that would be ideal for people to pick up and take home,” Tsukazaki explains. The first Hot N’ Fresh opened in 2004 within the Ala Moana Napoleon’s Bakery, and soon more popped up in
Ewa, Makiki and most recently Wahiawa and Koko Marina, adding local favorites like sugar and cinnamon malasadas ($7.25 per dozen), andagi (70 cents each) and jin dui ($1.15 for three pieces) to the restaurant’s already impressive resume of confectionary treats. “Customers are saying our malasada is the best they ever had,” Tsukazaki says with pride. “Each order is made fresh, so there is a wait time, but there’s nothing like a hot malasada. “The other favorite is the andagi, an Okinawan donut,” she adds. “It’s something you find at carnivals and special occasions, but now you can have it any time at Hot N’ Fresh.” Ah, yes, it truly is the most wonderful time of the year.

he lines that regularly stream out the door — particularly on Saturdays — from the crack of dawn to right after the lunch rush, leave little doubt that Fukuya Deli and Catering remains a preferred eatery for Honolulu’s hungry. Credit the variety of food selection available, says owner Arrison Iwahiro. “We’re trying to keep a traditional style of local Japanese food, which refers to the term okazuya,” he explains. “That means you can choose the items that go into your bento or your lunch. We’re trying to keep that tradition; it’s an older style. If you come to an okazuya or any other type of deli, every place has a few items that others don’t have, and that’s what makes you different. We put out a fair amount of items,

selection-wise.” While Iwahiro has been the restaurant owner for a little more than a decade, Fukuya Deli and Catering has been his family’s business since 1939. From a small business that once served quarry workers at the University of Hawaii, Fukuya Deli and Catering has since expanded its menu and services. “We started going into catering, and during the early ‘60s to maybe the mid-’70s, we got very popular with weddings,” Iwahiro says. “Every weekend almost, we would do weddings.” Iwahiro acknowledges that, with the transition in choice of many wedding venues — from churches to more hotels — weddings are no longer the business’s prime event, in terms of catering. But the restaurant remains a popular choice for many on other occasions. “Funeral catering is the biggest part of our business right now, as far as the catering side is concerned,” Iwahiro confirms. Some of Fukuya’s most requested menu items for both catering and walk-ins include the different varieties of chicken, among other sushi and à la carte items, according to Iwahiro. “Our chickens are really popular — mochiko chicken, fried chicken, nori chicken,” he says. “The shrimp tempura goes out a lot; the potato hash and our fish selection are pretty popular. We don’t have a real ‘sig-
nature dish,’ but we’re known for our sushi and mochi.” Because of Fukuya’s reputable mochi, special events like Girls’ Day, Boys’ Day and New Year’s Day are especially important to the eatery.

“Boys’ Day and Girls’ Day are tied to mochi, so that’s why we do this (special snacks),” Iwahiro explains. “New Year’s is another big mochi day. For Christmas, we basically have our regular items — the snacks and cookies — and try to dress them up a bit.”

For walk-ins at Fukuya Deli, the average price range is $6-12, according to Iwahiro. With the delicatessen’s custom-order bento style, consumers determine the price of their meals. Deli selections range from chow funn noodles ($1.50) and potato hash ($0.95) to fish patties ($1.65) and egg maki ($4.90). “It depends on what you get; it’s a wide range,” Iwahiro says. “Certain items, like the miso butterfish, are expensive, and some people will get two, so that plate lunch (price) goes real high already.” Iwahiro is looking to add a few more items to the

Regardless of possible menu changes, however, Iwahiro continues to emphasize the quality of his products’ appearance. “We take a lot of time and effort to make things as presentable and as nice as possible,” Iwahiro states. “We try to do a good job, presentation-wise and service-wise. It’s not just quantity (that’s important) … it’s the quality.” 9

After opening its doors in 2009, Canton House has since received rave reviews from customers. “We offer all kinds of dim sum and serve it made-to-order every day from 7 a.m. to 4 p.m.,” says manager Peggy Li. “Our most popular dim sum are spare ribs, shrimp with chives dumpling, spring rolls, fried shrimp and sticky rice.” With close to 40 varieties of dim sum all priced at $2.08, it’s no wonder that both locals and tourists constantly return for more. Also new to the menu is the Lamb Cave ($9.95), a colorful amalgamation of thin, tender slices of roasted lamb leg with crisp romaine lettuce, cucumber, fresh-diced tomatoes and sour cream wrapped in a grilled tortilla cave and served with roasted potatoes. Kit n Kitchen also offers a special discounted menu for those interested in trying some of the eatery’s other popular

“With the pork hash, we fill the dumpling wrap with a mix of pork and mushrooms — it’s very tasty,” states Li, noting that diners also can pair it with a hint of shoyumustard or chili sauce for an added kick. “Our manapua can be ordered baked or steamed and is filled with pieces of barbecue pork marinated in a special sauce,” she says. “Usually customers will order entrees to go along with their dim sum, like Look Funn ($2.88), Rice Soup ($4.35), Noodles and Fried Rice ($6.72-$7.68),” Li adds. And while it can be a bit difficult to come across food as equally delicious as it is good for you, Li says all dishes at Canton House are made with the customers’ health in mind. “We really focus on making our food healthy, using less salt and MSG,” she explains.

Located within the Outrigger Reef Hotel, the beachfront eatery serves a mix of traditional and local breakfast favorites, including Eggs Benedict ($14), Paniolo Morning Wrap ($14) and the Neptune Omelet ($16). To make this one-of-a-kind dish, the chefs at Ocean House start with specially seasoned blue crab meat, then add tomato, Porcini mushrooms, zucchini, apple-wood smoked bacon and jack cheese to the mix. “If that isn’t enough to make you hungry, the omelet is then topped with our wild mushroom lobster cream sauce,” says breakfast manager Chris Cole. For those who prefer their breakfast on the sweeter side, Cole notes that Ocean House recently added a macadamia nut cream sauce and toasted coconut flakes to its already-popular Belgian Waffle ($15). “It is a delightful upgrade from maple syrup,” he says, “and the nuts/coconut flakes add a great texture to the waffle.”

Would the Sizzling Ahi Carpaccio ($14.50), Seafood Lau Lau ($26.50) or Crab Stuffed Mahi Mahi ($28.50) have caught their eyes? Those seeking slightly lighter, healthier fare can delight in the Fresh Fruit Sunrise ($13), a fresh assortment of honeydew, cantaloupe, pineapple, berries and papaya topped with a touch of Greek yogurt, granola and a drizzle of honey, all served within a pineapple bowl. “We recently started baking small loaves of bread,” adds Cole of the new specialties that are served as a side dish ($4) or as part of Ocean House’s Continental Breakfast ($11). “Right now, we have a Banana Nut Bread and a Macadamia Nut Bread,” he adds. “We bake them
fresh daily and add just the right amount of nuts for the perfect texture. We are really excited about them and have received great reviews.”

Butternut Squash & Lobster Bisque with Crispy Seafood Dumpling Serves 4 | by Chef Chai Chaowasaree Ingredients: • 4 cups diced butternut squash • 2 cups lobster stock (can substitute with vegetable or chicken stock) • 1 tablespoon vegetable oil • 1/2 tablespoon chopped garlic • 2 tablespoons chopped onions • 2 tablespoons chopped celery • 2 bay leaves • 2 springs fresh thyme • 1 cup heavy cream • pinch of pepper • salt, to taste (some lobster or chicken stock may already be salty) Preparation: • In a soup pot with medium heat, add vegetable oil, celery and onion. Sauté for a minute, then add garlic and sauté for 30 seconds.
• Add butternut squash and chicken stock and cook about 15-20 minutes until squash is soft. • Add heavy cream, salt and pepper and puree in blender until soup is smooth.
Crispy Seafood Dumpling Ingredients: • 8 spring roll wrappers • 4 medium-size shrimp, finely chopped • 2 scallops, finely chopped • 1/2 cup crab meat • 1/2 whole egg, beaten • 2 tablespoons chopped green onions • 1/4 tablespoon garlic powder • 1/4 tablespoon onion powder • pinch of paprika
• pinch of pepper and Aloha shoyu, to taste • 2 cups vegetable oil for deep-frying dumpling Preparation: • Combine shrimp, crab meat and scallop with one-half of beaten egg, garlic powder, onion powder, paprika, green onions, pepper and shoyu sauce. • Scoop in one-half tablespoon of mixture and wrap with spring roll skin. Repeat for all wrappers. • Pre-heat oil to 320 degrees and fry dumpling about 2 minutes, or until golden crisp. Set aside. • When ready to serve soup, add a big dot of whipped cream and top with fried seafood dumpling.
