appy Sunday, Ono readers! I know, I know, it’s the last day of the weekend before the Monday blues set in, so enjoy today for all it’s worth! Spring is in full bloom, and before we know it warmer temperatures and sunny skies will hint that summer is well on its way. With that said, turn up LMFAO’s Party Rock Anthem and bring on them cocktails.

Wait. Hold up. I don’t drink alcohol, but that doesn’t mean the party should come to a screeching halt — it’s Easter, after all. Anyone who knows me knows full-well that I don’t need a drop of alcohol to have a good time. Trust me, natural highs are the best. Yet, I do love my virgin cocktails such as lava flows, pina coladas and more. They have this magic way about them and makes you feel like you’re on vacation with the very first sip. Maybe it’s the array of vibrant colors, fun straws and fresh fruit garnishing — whatever it is, when cocktails are involved it’s bound to be a blast.

Tropics Bar & Grill Whenever my work brings me to Hilton Hawaiian Village’s Tropics Bar & Grill, I know I’m in for a treat. This world-class dining establishment caters to both locals and tourists alike, and offers an invitingly picturesque view of Diamond Head, in addition to temptingly

delicious grinds and a super-sized bar — the perfect place to quench your thirst and enjoy a cocktail. Tropics Bar is open to patrons from 11 a.m. to 10:30 p.m. daily, and bartenders, such as Rocky Nago, are more than happy to serve up virtually any cocktail you can imagine, including the resort’s signature Blue Hawaii, Classic Mai Tai and more. Yet, being that I don’t consume alcohol, I would assume that there really isn’t much for me to enjoy. Well, guess what? Nago proved me wrong. There’s plenty for the non-drinker to sip on. Where do I even begin? First there are Book ’em Danno ($7), virgin Pina Colada ($8) and virgin Lava Flow ($8). My, oh my! “By far virgin Pina Colada is the most popular non-alcoholic drink,” Nago says. “It’s one of those cocktails that is definitely more established and it’s something that everyone is familiar with.” Sweet and creamy, it’s safe to say that yes, “I like pina coladas, and getting caught in the rain.” At first sip, you’ll definitely notice a strong emphasis on the coconut flavor blended with a hint of pineapple. It is absolute heaven! But wait … it gets better. My personal favorite when it comes to non-alcoholic drinks has to be a virgin lava flow, and Nago and his team can definitely mix up one of the best virgin lava flows you’ve ever tasted. If you thought the virgin Pina Colada was good, Nago adds a bit of strawberry puree to the resort’s Lava

Flow creating an eruption of flavors in your mouth. Now, that’s something to smile about. And after a sun-soaked day on the beach, cool off with Book ’em Danno, a one-of-akind drink created by Nago himself. Listed on the menu as a non-alcoholic refresher, this drink pays tribute to Hawaii Five-0, and the vibrant red and blue colors signify none other than police lights. “Book ’em Danno has been catching on lately and tastes just like an Otter Pop,” Nago says. “It features blue raspberry – See page 18

aormina takes your breath away as one of Sicily's top travel destinations since it became part of the European Grand Tour in the 19th century and claimed the title of Sicily's first-ever resort. This pristine haven lies 200 meters above sea level on Monte Tauro on Sicily's east coast, and offers remarkable views of the

The restaurant offers both indoor and outdoor seating, enticing guests with the finest in Sicilian fare. “We’re very adamant about entertaining guests in a true Sicilian fashion,” says Conan Paik-Rosa, general manager of Taormina. “We’re an authentic Sicilian restaurant, and a lot of people ask what’s the difference between Italian and Sicilian cuisine. When it comes to Sicilian cuisine, we use a lot of fresh ingredients. We don’t use heavy tomato sauces or cream sauces, instead we

use a lot of fresh tomatoes, fresh seafood, white wine and lots and lots of olive oil. Sicilian cuisine is a lighter cuisine — simple, but very elegant.” Taormina opened its doors in November 2007, and pays homage to the time-honored cuisine of Southern Sicily with contemporary style and flair all within an invitingly warm and modern, familyfriendly atmosphere (dress code is casual). And executive chef Hiro Mimura ups the ante on a daily basis as he expertly pairs the freshest of pastas with the highest quality seafoods and meats. “I’ve been to Taormina, Italy, many times. Food is the culture there, people are always eating,” says Mimura, who has dazzled

majestic coast and Mount Etna volcano. A visit to Taormina during springtime is ideal, when many travelers enjoy the wonders of this exotic town, including remnants of its Greek and Roman habitation, a fine medieval quarter and castle ruins, and, of course, its modern shops and outstanding restaurants. diners at restaurants across the globe with his extraordinary culinary techniques. “I’ve worked in Tokyo, Florence and Sicily,” he states. “My mentor is chef Luca Pecorini, who I worked with in Florence. He’s been an inspiration to me. “Sicilian cooking incorporates a lot of fruits, nuts, cheeses and seafood, in addition to a lot of herbs and spices such as coriander and cumin,” Mimura says. As the only Sicilian restaurant here in the Islands, it’s no surprise that this gem of an eatery is frequented by both locals and tourists alike. In fact, PaikRosa recommends diners make reservations at least a week in advance to guarantee a place at this hot spot,

especially during the dinner rush. “We have a grand menu aka our regular menu, a mid-day selections menu and a five-course menu for patrons to enjoy,” PaikRosa says, noting that the five-course menu and grand menu are available all day. “We highly recommend the five-course menu ($60 per person) because it’s the perfect amount of food with each course, and it allows our guests to sample some of the most popular items off of our grand menu.” Prepared especially for individual dining, the fivecourse dining experience begins with an anti pasto or appetizer of Misti, sliced Parma proscuitto and melon with mozzarella paired with a perfect por-

tion of marinated squid and octopus. Then cleanse your palate with a refreshing bowl of Chilled Green Pea Potage Soup topped off with olive oil, parsley and croutons. Next, your Sicilian culinary journey continues with a pasta of your choice, whether it be Spaghettini alla Taormina (spaghettini with pan-fried shrimp, fresh tomato, arugala and basil lightly tossed with garlic and olive oil) or Ricci di Mare (spaghettini with fresh sea urchin and garlic). “You can upgrade your pasta choice to Ricci di Mare for an additional $10,” Paik-Rosa explains. “We just recently added this to the five-course menu because this uni pasta is our signature dish. It’s really popular and a lot of people want to try it.” As for your main course, select from three exquisite entrees of Seared Ahi Tuna with Salsa Cecca, Hawaiian tuna filet with fresh tomato salsa served with mixed greens, beets and goat cheese; Filetto di Manzo, grilled beef ten-

derloin with a balsamic reduction; or Pan Roasted Duck Breast, thinly sliced duck breast drizzled with an orange balsamic reduction sauce. “Beef tenderloin would have to be the most requested of the three,” Paik-Rosa says. Finally, the five-course meal ends on a high note with the sweetest delight. Drum roll, please, for Cream Caramel with Italian gelato splashed with a homemade strawberry sauce. “We have regular patrons who never tire of this place and come in every week,” Paik-Rosa says, adding that the restaurant’s extensive wine list lures in many customers as well. “We’re a well-rounded restaurant,” he adds. “The ambiance is amazing, service is amazing and, of course, the food is amazing. We’re unique, and the majority of people really appreciate Sicilian cuisine and are willing to try it — and we’re happy because of that.”

Canton Seafood celebrates with specials

J

ust in time for Mother’s Day and graduation season, Canton Seafood Restaurant introduces new party menus and is offering a variety of one-year anniversary specials. The Chinese eatery specializing in authentic Cantonese-style dishes turns one this week, and in celebration will offer complimentary soup (egg drop soup or seaweed soup) with its lunch and late-night specials. Also, two of its signature dishes are being offered at a special price: Deep Fried Flounder with seasoning herbs

regularly priced at $15.99 is now $9.99, and House Crispy Chicken regularly $15.99 is now $4.99 (half). “Our food is real Cantonese-style, not chop suey,” says manager Edwin Chen. “We serve real Chinese food. A lot of Chinese people come and say our food is the best Chinese food here. Also, we give big portions, and our food is reasonably priced.” There also are some local favorites on the menu, such as Pork Chop with Salt and Pepper ($10.99) that is pleasantly juicy inside and perfectly

fter 14 years serving fresh baked goods and a variety of tasty and well-displayed meals, Panya has more than its fair share of fans. And why not? The bistros have become known as the places to go for light, healthy fare served among décor that is both modern and relaxing. If you didn’t know, Panya also has some darn fine pupus. Panya Homemade Gyoza ($6.25 for four pieces, $8.95 for six) are made of pork, shrimp and chives, and are steamed then pan-fried, which leaves the skin soft and crispy. The homemade citrus shoyu dipping sauce is a nice light complement to the fresh dumpling. Be forewarned, they go fast. Order the six piece. Or two. Curry King’s crowning moments By Alana Folen

W

ith the recent opening of Curry King’s second location at Chinese Cultural Plaza, manager and chef Shane Yang can’t help but share in the delight. “We first opened at the food court at Ward Warehouse this past September, and now it’s great that we have another location for people to enjoy,” he says. According to Yang, Curry King’s driving mission is to offer the highest-quality cuisine at an affordable price. The restaurant specializes in favorites, such as paitan ramen, a delicious pork-

based soup served with ramen or udon, and, of course, an array of curry selections is a given as well. “People know us for our ramen and curry, but at our Chinese Cultural Plaza location we also have Tea Leaf Smoked Duck on the menu. Priced at $20, diners receive a whole duck, which is served a la carte. Yang says the duck is moist, tender and gives off an alluring smoked-tea flavor. “We marinate the duck overnight and then cook it for about 20 minutes or so. This dish is a hit with many Chinese customers, but we want others to try it, too.” Curry King also recently introduced Pumpkin

Tempura and Sweet Potato Tempura to its growing menu. “There are so many things at Curry King besides curry,” Yang adds. So, don’t let the name fool you.

The kaiten-style dining has been a big hit with customers upon Genki Sushi’s opening in Hawaii in 1992. The fried items are savory must-try dishes. Seafood dishes Ebi Fry ($3.80) and Ika Geso

Karaage ($2.20) are sure to please any customer searching for that comfortfood feeling. There’s also a new item that will be added to the new Genki Sushi menu — Shumai ($2.80), pork dumplings. Rolls at Genki Sushi are not your ordinary rolls. They’re packed with flavor, various ingredients and color — sometimes it takes more than one bite to finish

off a piece. Rainbow Roll ($4.80), Volcano Roll ($4.80) and Ebi Tempura Roll ($3.80) are among the local favorites that keep customers flocking to Genki Sushi on a regular basis. n any given day, you’ll find a bustling lunch crowd of businessmen and friends who’ve found the ideal lunch spot in Golden Duck Chinese Restaurant. A few hours later, tables of

families will gather for a dinner filled with the best in local Chinese fare. The common thread that pulls everyone toward the restaurant’s King Street and Waialae Avenue locations is a welcoming

atmosphere that owner Darlene Fong strives to maintain every day. “We have a lot of loyal customers. They come back and we know their names now,” she says. The eatery’s inviting

interior is perfect for family-style dining, and there are a few dishes in particular that leave patrons coming back for more. Honey Glazed Walnut Shrimp ($11.95) draws you in with an enticing blend of mayonnaise, honey and lemon juice coated shrimp, accompanied by a sweet bite of crisp walnuts. Another favorite is the well-seasoned Salt Pepper Chicken Wings ($8.50). “The pepper and garlic

have a lot of flavor, and the wings are crispy on the outside and really moist and juicy on the inside,” says Fong. New Dishes for Health-Conscious Customers

n a late afternoon on a recent weekday, various parties gathered to enjoy a late lunch in the relaxing, elegant atmosphere of The Mandalay. A couple groups of customers leisurely chatted over their meals, while others were there for a business meeting. The Mandalay serves up tasty Cantonese cuisine and Hong Kong-style dim sum in a convenient downtown location, making it the perfect place to enjoy a casual lunch with friends or add a little spark to a meeting. Small alcoves also offer a place for couples to enjoy an intimate dinner. The Mandalay boasts an extensive menu that features a range of dishes — from seafood and meat to a growing vegetarian selection. Linda Chan, who co-owns the restaurant alongside her husband, explains that The Mandalay offers traditional cuisine that can be found in Hong Kong, as well as locally inspired flavors. The restaurant serves dim sum, which is cooked to order, from 10:30 a.m. to 5 p.m. daily. The most popular dim sum dishes include Shrimp with Chive Dumpling, Scallop with Spinach Dumpling and Seafood Bundle, which includes fish fillet, shrimp, mushroom and baby corn wrapped with bean curd. Each dim sum dish is priced according to size (prices range from $2.50 to $4.95). “Everything is made by hand,” Chan says. “A lot of workmanship is involved with the dim sum.” Apart from dim sum, regular menu 14 | DINING OUT | APRIL 8-14, 2012

items include Award-Winning DeepFried Chicken Wing ($10.95), Peking Duck with Buns ($30 for a whole duck, and $16 for a half) and Mongolian Beef ($10.95). Chan says that one customer favorite is House Special Chow Mein ($10.95), which features fish fillet, shrimp, scallop, cuttlefish and mixed vegetables over noodles. For one interesting option, try Mixed Seafood in Taro Basket ($17.95 for a small; $38 for a large), which features various types of fish and vegetables — all in a tasty taro bowl. On top of all of these quality dishes, as of recently, vegetarians can enjoy a couple of new menu options created with nomeat diets in mind. Just a couple of weeks ago, The Mandalay has added two new dishes: Vegetarian Scallop with Baby Bok Choy ($11.95) and Shredded Tofu with Broccoli ($10.95). The restaurant also is looking to add more vegetarian dishes in the near future. “Nowadays, people are more health conscious, and they try to eat more healthy,” Chan explains. “People are looking for more vegetarian dishes, and we have had many requests for these items.” The Mandalay also has many more vegetarian menu items, such as Vegetarian Bean Curd Soup ($3.95). For more new options, customers won’t have to wait long. The Mandalay plans to unveil a new menu in June. Validated parking is available Monday through Friday after 5 p.m. and all day

lthough The Mandalay opened fairly recently, co-owners Linda Chan and her husband, Larry, are longtime restauranteurs. The couple moved to the Islands from Hong Kong in the 1960s and got their start in the restaurant industry bussing tables. In the 1990s, with the help of other family members who had moved to the Islands, they started their own restaurant — the now-closed chain Eastern Garden. After deciding to consolidate their efforts into one restaurant, the Chans launched The Mandalay in 2006. Server Located on Alakea Street, The Mandalay Wilfred has become a hub for downtown workers. Leung After all, The Mandalay has a number of features that appeal to the busy downtown set, such as the Pau Hana Takeout Special. The special is offered from 3 to 6 p.m. Monday through Friday, excluding holidays. Customers have a choice of three entrees from six different categories: Noodles and Rice, Fish, Chicken, Tofu, Beef and Pork and Vegetables. Samples of options are Crispy Gau Gee Mein, Stir-Fried Fish Fillets, Black Bean Chicken and Beef Broccoli. Three entrees cost $23 total. Another quick and easy option is the Express Hours menu, which is offered from 10:30 a.m. to 2 p.m. Monday through Friday. This features a plate-lunch style meal, and customers can choose one entree ($5.50) two entrees ($6.50) or three entrees ($7.50) per plate from options such as Eggplant with Pork, Orange Chicken, and Sweet and Sour Spare Ribs. In addition to serving the needs of the weekday workers, The Mandalay also has established itself as a premier place to host a party or hold a meeting. Co-owner Linda Chan explains that The Mandalay often hosts birthday, wedding or anniversary celebrations, in addition to large meetings for organizations. To fuel your party or meeting, The Mandalay offers lunch and dinner banquet menus; there are three set menus for lunch, and four set menus for dinner. Each features a variety of dishes and can feed up to 10 people.

uuanu Okazuya is known for serving the kind of traditional okazu and local dishes that remind you of childhood. As the eatery’s tagline suggests, one bite and it’ll taste “… just like home.” But owner Mark Kitagawa and manager Johnathan Mosley also have a few tricks up their sleeves when it comes to putting a new twist on an old favorite. Whether classic or inventive, each culinary pleasure is prepared with a dose of comfort. “It’s not always traditional, but that’s comfort food. Something that Mom might have made, or your aunty put together,” says Mosley. Take Oxtail Stew ($4.75, small; $9.50, large; $7.85, plate), for example, an irresistible stew version of a local favorite. Or there’s temptingly delicious Beef Stew ($4.50), the quintessential homey dish. Both meals are flavorfully prepared from scratch and served with rice. When it comes to ground-breaking eats, there’s one Nuuanu specialty Dining Out has been

dying to try — fishcakes (80 cents-$1.40). The eatery is fluent in up to 18 varieties and it’s not uncommon to encounter an entirely different selection of fishcake available from day to day. After taking over the more-than-30-year-old delicatessen from the Nagamine family in 2007, Kitagawa assembled his crew to build on the variety of fishcakes offered by the previous owners. “It’s always an expansion or twist, we don’t do one flavor,” explains Mosley. While the charming spot had already sold out of one of its best-sellers, Gobo Fishcake, by 9 a.m., Plain, Hot Dog, Boiled Egg, Vegetable, Furikake, Chives, Shrimp, Vienna Sausage and Crab and Onion took Dining Out to fishcake heaven. The cakes’ slightly crispy shell and soft, chewy interior make them the perfect base to add flavors to. For an extra kick, try Mosley’s Spicy Fishcake made with Chinese chili paste and sprinkled with cayenne pepper. Kitagawa has his own tasty interpretation of a Spicy Fishcake as well,

made with a variety of fresh peppers. As Mosley describes, “People buy out all of their favorites. Doesn’t matter what’s up there. It’s all comfort food.”

Filipino fare done right T he taste for Filipino cuisine is rapidly expanding internationally. Max’s of Manila has more than 125 locations in the Philippines, 10 locations in North America, and it has edged its way into the Middle Eastern market with two restaurants now open in Dubai. Whether it be the first restaurant, which was created by Maximo Gimenez’s niece Ruby, who as a child helped Gimenez run a cafe in Quezon City, Philippines, after World War II, or the newest franchise that opened last month in Vancouver, it is crucial that the menu and quality remain faithful to the heritage and tradition from which it originally blossomed. On Oahu, Max’s of Manila’s general manager Malay San Luis and her staff are doing their part to re-create the hospitality that Gimenez and Ruby offered to local Filipinos and occupational troops in the ’40s. Max’s is now offering an adaptation of the common Laing dish,

which is basically a taro leaf stew. Priced at $12.50, Max’s guests can enjoy Spicy Laing Tilapia. “It is a boneless tilapia filet that is prepared lightly crispy and topped with the laing or stew of taro that has been simmered in coconut milk and has a hint of spice,” says San Luis. If your stomach is grumbling for more of a meaty delight, Max’s Crispy Pata ($12.95 small, $16.95 large) is a hearty option. Crispy Pata begins with a ham hog or pork knuckles, the plump leg portion which contains a robust amount of meat. Max’s chefs begin by simmering the pork knuckles in spices and their special marinade for hours to tenderize the meat. After which they deep-fry the entire portion relinquishing a crispy skin exterior of a succulent and juicy meaty interior for 1 you, and your friends and family to enjoy.

or those stressed about finishing taxes, Ichirki Japanese Nabe Restaurant provides the perfect remedy. No, not free tax service ... a special on its delicious nabe! “On April 15-16, for tax day, we are promoting a special shabu shabu set,” explains restaurant cofounder Issei Kazama. “It’s going to be one pound of Kobe Beef Shabu Shabu for $17.95 for lunch and dinner, on just those two days. We’re calling it the ‘Tax Relief Day’ special … it’s just our way of helping out everybody who has to pay taxes.” Although the Tax Relief Day special only applies the weekend of April 15-16, Ichiriki offers its customers an Early Bird Special. “Our Early Bird Special is only Monday through Thursday from 5 to 6 p.m. at both of our locations,” Kazama confirms. “As long as they (customers) order before 6 p.m., they get 25 percent off their nabe.” Kazama and his partner, Riki Kobayashi, opened the first Ichiriki restaurant on Piikoi Street in 2006. Since then, the restaurant expanded and opened its

second branch in Westridge last June. Both locations tend to be equally crowded, according to Kazama, and reservations are recommended.

there’s another restaurant that specializes in Japanese nabe on the island,” he says. “We also emphasize our customer service; we don’t want our customers to go home unhappy.” At Ichiriki, an assortment of nabes is served on the eatery’s lunch and dinner menu. For these nabes, customers must first select a soup base and a choice of meat (chicken, pork or beef). For an additional $1.50, customers can choose to finish their meals with ramen, udon or zosui. Soup upgrades — choices such as Kimchi, Curry or Paitan (pork broth) — are available for an additional $2. Nabes are served with many different ingredients — including Chinese cabbage, tofu, chives and shiitake mushrooms — as well as rice. “We (Riki and I) opened it (our restaurant’s first location) because we really love nabe,” says Kazama of the Japanese hot pot. “Riki trained in Japan in a shabu shabu restaurant, and we thought it (a nabe

Amid the upcoming changes, though, Kazama emphasizes that good customer service will always be a priority at Ichiriki. “Our nabe comes from the heart,” he says. “We really care what our customers experience … we try to do our best to make sure it’s a memorable dining experience. Customers can expect to get a staff who will do 100 percent to make them happy … and good nabe as well.”
