love livin’ it up! Fabulous food frenzies are a blast, so it’s no surprise I take to them just as a duck takes to water. It’s always exciting brainstorming different foods to feature in my column each week — it never gets old. So, this week racking my brain for something new, I got all my ducks in a row and decided to spotlight a local Chinese favorite, a poultry dish of abundant flavor: Yes, it’s finally time we ruffled up some feathers and gave a quack for duck. What exactly makes duck so Ono, You Know worthy? Maybe it’s the fact that being waterfowl, ducks have a layer of heatinsulating subcutaneous fat between the skin and meat, resulting in one delicious meal, no matter how it’s served. And deboned duck breast can actually be grilled like steak, usually leaving the skin and fat on for a more succulent flavor.

it’s easy to sample a bunch when dining family-style, but if you’re dining solo or prefer an individual entree, duck aficionados want nothing more than Aina Haina Chop Suey’s Soft Duck Noodle Soup ($13). This hot bowl of soup features a refreshing chicken stock soup base with assorted vegetables and succulent braised duck thigh meat.

“The meat is seasoned and is extremely tasty because it’s braised for a long time — it’s extremely tender,” says restaurant manager Julia Wong. “This soup is more well known by the older generation, but when people try it they really like it.”

“On Mondays, we offer Soft Duck Won Ton Noodle Soup as a lunch special from 11 a.m. to 2 p.m,” Wong exclaims.

he heavenly aroma of grilled meats, vegetables and an abundance of authentic Korean favorites permeate the air at Camellia Buffet on McCully Street. The dining concept is strictly yakiniku: a cook-ityourself Korean-style barbecue that is believed to have been founded by Korean immigrants who came to Japan after World War II. What’s most captivating about yakiniku dining is that it stimulates all your senses, as you can observe the cooking process, take in the smells and, of course, savor the delectable flavors. What more can you ask for? Not much.

Although here at Camellia Buffet, they take it one step further and offer an all-you-can eat buffet, comprised of just about everything you could ever ask for in Korean cuisine. Ha: Camellia Buffet is an authentic yakiniku-style restaurant that offers an all-you-can eat buffet. We can seat 200 people in the restaurant, and we’re always busy. There’s individual yakiniku grills at each table, so basically everyone can go up to the buffet line, select what they want and cook their own food on the grill.

DO: Congratulations on 26 years of business! You really have a wonderful thing going on here. What does

DO: It’s a great dining experience that’s fun for the whole family. There’s quite a variety of items offered as part of the buffet, correct?

Ha: Yes. We have more than 50 items featured in our buffet, mostly different raw meats and vegetables, and even desserts. Every six months or so we try to add new things so that our customers don't get bored.

DO: Camellia Buffet emphasizes flavor and fresh ingredients. Not only is the cuisine itself delicious, but you folks also make your very own sauces to complement the meats.

Ha: Yes, we have different homemade sauces — Kalbi sauce, bulgogi sauce, chicken sauce, wasabi sauce and yakiniku sauce — and the recipes are kept secret.

DO: There’s quite an assortment of cuisine to choose from. What are some of the most coveted items here?

Ha: Kal-bi is always popular, especially with the locals, along with our flap meat (sirloin steak). Both are high-quality, top-grade meat and extremely tender. Customers also love, pork, bulgogi, fresh sashimi and chop chae and fried mondoo. All of our meats are marinated in a special sauce that is very tasty.

We do want our customers to realize that flap meat and sashimi are only available as part of the dinner buffet.

DO: Korean cuisine is known for being very healthy and good for those seeking a well-balanced diet. In addition to a wide variety of meats, what kinds of vegetables and other healthy options are available?

Ha: We have an assortment of vegetables, like seaweed and bean sprouts, cabbage, zucchini, mushrooms, bell peppers, onions, carrots and more. We even make our own kim

for cooking on the grill — orange chicken, onion rings and spicy poke. Spicy poke is only offered for lunch, however, diners can have orange chicken or onion rings at all times. Orange chicken is really popular with the kids.

Do you think that is what keep customers always returning for more?

Ha: Oh definitely. Lunch costs $16.95 and dinner costs $24.95 — it’s all-you-can-eat!

Locals love this restaurant. In fact, 95 percent of our clientele are locals, but we also have a tourists who dine here from Korea, China and Japan. We can seat a lot of people, and we cater to a lot of large groups and parties. I would highly suggest people make reservations — we’re always busy from when we open until closing. We’re thankful that business has been doing very well!

ny restaurant that waits 40 years to start an appetizer menu should take care to do it right. Kobe Japanese Steakhouse & Sushi Bar has got it right. The varied menu contains any number of tasty options that span the range of simple snacks to near meals. A perfect example is Sixty Nine Roll ($17) that features tender braised unagi over a large California roll that is cut into eight pieces.

Reaction to this combo was one of wide eyes, mostly muted “mmm’s” and “oh my’s”, and followed by a large smile with claims of undying devotion. Yeah, it’s good.

Mimi’s Famous Mini Lumpia ($8) has to be the coolest thing on the menu because it is made each day by chef Kevin Pagadoan’s aunt, Mimi Gozor. The crispy wraps are lightly seasoned and filled with ground pork, minced onion, garlic and carrots and served with a sweet chili sauce. Unlike most similar snacks that are dependent on dipping sauces for flavor, Auntie Mimi gets it right with a wrap that is light but has a slightly tangy flavor to boot.

Another simple finger snack is Sweet Potato Fries ($7). The simply prepared fries are naturally sweet and lightly salted. Pair with either the Dynamite or Firecracker aioli, and

you have quite a combination.

Looking for something a bit more filling or something with greater sharing potential?

Try Emperor Appetizer ($23.95). The highly decorative platter comes stocked with ahi, yellowtail, salmon, snapper, clam, shrimp and salmon roe sushi to go with six small tuna rolls, wasabi and shaved ginger.

The fish-to-rice portion is just right as is the sushi rice mixture, which has a perfect vinegar and sugar blend that is neither too sweet nor too sour. An error either way can practically ruin the seafood accompaniment.

One final option to consider before rushing out the door is Ahi Poke Salad ($10). The large mound of fresh tuna is mixed with green onion, fresh garlic, onion, cucumber, sesame oil, salt, sugar and shoyu, and served over a bed of baby greens, sliced tomato with a light vinaigrette. The buttery fish is creamy, plentiful and is nicely paired with the cucumber and onion to create a varied texture profile that is both soft and crunchy.

New to the menu is a Keiki Sports Pack ($3.25) with teriyaki chicken and half of a hot dog on a bed of rice with furikake.

“My sister and brother-in-law are sports parents, and they are always looking for something that is reasonably cheap and a good snack for the kids when it’s their turn to provide the snacks for the team,” explains co-owner Stephen Ichioka on the inspiration for this new bento. “Everything we serve is pretty much homemade, except for the hot dogs. My mom taught me how to cook and I just ran with it, so a lot of the dishes are from my mom with some changes.

“Our smoked meat with onions is also very popular. We try to keep the prices reasonable, and we try to make comfort food. Everything is made and served with aloha.”

Ichioka, a former flight attendant for Aloha Airlines, opened the restaurant last August with his childhood best friend Clyde Higa, who is an auto mechanic by day.

They also have a lunch wagon that they plan to have running within the next few weeks.

“We are a family-oriented restaurant, homey and warm,” adds Higa.

“Everybody who works here, we’re like a little family, and we want it to be comfortable for the people who come in, too.”

Something To Crow About hen I first got the assignment, it really ruffled my feathers: What? A restaurant with chicken in its name? I knew I was really going to have to wing it with this one.

But after I contacted Choon Chun Chicken manager Theresa Kim, I stopped squawking and realized there’s nothing afoul — you’ll find much more than just chicken at this friendly Korean eatery.

Kim recommends Spicy Cold Noodle with vegetables ($8.95). “We can take out the meat and egg,” she assures me.

It’s a dish that has customers clucking with pleasure. The noodles are mixed with lettuce, cabbage, apples and/or carrots, onions and cucumbers, spiced up with

just $15.95, which, considering the cost of a dinner for two in most restaurants these days, is really just chicken feed.

“Lots of young, local people come here for dinner and have a drink,” says Kim, adding that a nice cold beer goes really well with spicy Korean cuisine, and large groups are always welcome.

And, Choon Chun Chicken is happy to hold the meat from nearly any dish on the menu. Now that’s something to crow about.

So, veggie lovers, don’t let the name fool you.

Placed throughout the menu are influences of Italian, French, Pacific-Rim and fusion cuisine. Stemming from signature appetizer Bacon Wrapped Asparagus, Ribao and business partner Walden Butay were chatting one evening and wanted to incorporate the exquiste appetizer onto the sushi menu. Viola, the “W” Roll ($7) was created.

“It essentially is a California roll with bacon wrapped asparagus in the middle,” says sushi chef Bronson Lizares.“I also have a lot of fun preparing our salmon skin and spider rolls.”

Being creative but not overwhelming is a point of interest for Lizares, who started as a dishwasher at Kobe Steakhouse, where he

crossed paths with Ribao and learned the art of sushi under the tutelage of Sushi Master Mamoru Yamamoto.

Other favorites of Ribao and Lizares are the sushi bowls, such as Unagi and Spicy Ahi, both served for $10.95, which move pretty fast off the menu.

hiro Matsuo, known locally as “Mistah Saimin,” gained Islandwide fame in the 1960s after transforming saimin from a traditional snack into a complete meal for Hawaii’s diners.

Shiro’s Saimin Haven, his restaurant now managed by grandson Bryce Fujimoto, still serves the comforting soup and more to a community of adoring patrons.

Alongside Matsuo’s imaginative culinary vision is the warm spirit he spreads to his customers — and his craft. “Be pleasant and do something good. That is my philosophy,” he says.

this eatery offers more than 80 pasta dishes alone, and that’s not counting the chef’s special Cioppino ($30.90), a tantalizing dish of sauteed mixed seafood with Hamakua mushrooms, cherry tomato, peas and capers simmered in wine, lemon grass, saffron, fennel and tomato broth, served with slices of fresh garlic bread.

“Our chef’s specials do well here. Our customers really like them,” says owner Billy Rattanasamay. “I really recommend Osso Bucco and Shrimp Scallop Alla Bolla ($30.99).”

This customer favorite features veal shank braised for three hours with onion, white wine, beef stock, tomato sauce and celery. Brought to a slow simmer, it’s then seasoned with salt and pepper to taste. The dish also includes two jumbo shrimp and four sea scallops, served with snap peas in a white wine and butter sauce over linguine.

“The restaurant (at both locations) can get really busy, so people should make

reservations just to be safe. We also do takeout orders,” Rattanasamay says.

A

s one of the most well-known steakhouses in Hawaii, Hy’s Steakhouse has been in existence for more than a quarter of a century. Vice president and general manager Bob Panter has been with Hy’s for almost 35 years, and he takes pride in both the establishment’s ambiance and food.

When you step through the doors, the pieces of wood interior designer Arthur Fishman brought from a mansion in Philadelphia captivate you. From the Tiffany stained glass ceiling he brought in from a chapel outside of Cleveland to the artwork adorning the deep-brown wood that surrounds guests, it makes one feel right at home with family and good friends. In Panter's opinion, the décor is a big part of Hy's success. “It’s a strong selling point for us. I don’t think they make them like this anymore, and this makes our dining very unique,” he explains.

One thing that sets Hy’s apart from all other fine-dining steakhouses is the kiawe broiler that cooks the steaks and chops.

gives the meat a unique flavor. The broiler is a brass and copper caldron and sits surrounded by a wooden frame with glass walls.

A fresh green salad sits on top of a bed of steak filets, and this Steak Takaki ($22.95) will satisfy any palate. The flavors of the radish sprouts, peppercorn and ginger mix well with the ponzu sauce, and this combination gives the filets a refreshing jolt. This speciality salad is perfect for two and makes for a great appetizer or starter salad.

If you’re looking for a more savory appetizer, Crab Cake with Roasted Garlic, Pine Nuts & Basil ($14.95) is just for you. As soon as you take a bite, the pine nuts give the dish a crunchy texture, and the butter and capers provide that rich flavor that makes this appetizer so welcoming. Hy’s even adds the light and flavorful Mint Jelly that complements the lamb so well.

Lamb rib chops, Lamb Chops A La Hy's ($69.95, full; $39.95, half), are seared over the hot kiawe broiler, which gives them that “wow” factor. “The full eight-rib rack is so large, but it's getting so expensive,” Panter says. He explains that the floods in Australia last year affected the lamb supply. “The four chops in the half rack are still very adequate. It’s a lot of lamb,” he says.

side. This is dish is just one of many, and Panter says there are a lot of different steak preparations. “I happen to like the Peppercorn Steak ($42.95) a lot.”

All of the entrees come with either a baked potato, Hy’s mashed potato, pan-fried O’Brien potatoes, french fried potatoes, steamed white rice, brown rice or rice pilaf. And if you’re not a starch person, Hy’s will substitute extra vegetable du jour.

It serves you well to save room for dessert as Panter says Chocolate Lovers’ ($13.25 per person) flambe for two or more is a favorite among customers. While

flambe desserts seemed to have disappeared from the fine-dining scene, Hy’s revels in its tableside flambe presentations.With a menu of such caliber, and a staff and dining experience that keep customers coming back again and again, it’s no wonder Hy’s is a staple in the Islands.

makes for a complete meal as its served with a mound of rice. And while all options are delicious in their own right, my favorite has to be Roast Duck with Char Siu. The sweet flavor of the pork and seasoned duck is a match made in heaven.

Golden Palace Seafood When you’re in the heart of Chinatown it usually means one thing: Good Chinese cuisine is just around the corner. Yes, that is totally the case when you find yourself at Golden Palace on North King Street — and you can’t miss it as there are gigantic Chinese pillars fronting the restaurant.

Best known for its dim sum that is worth every penny, Golden Palace sure knows how to draw in a crowd. Yet there are a couple of items on the menu that could

use some recognition as well. According to manager Gary Lam, Stuffed Duck ($30, whole) and Mochi Duck ($30, whole) are two decadent dishes that aren’t praised enough.

“Mochi Duck is one of those dishes that not many are familiar with, but it’s a very delicious dish,” he says. “The duck is deboned and then we stuff it with mochi rice, lap cheung, preserved meat, diced mushrooms and dried shrimp. Then we steam the entire duck, coat the duck with batter and fry it.”

It’s a comprehensive process, which is why Lam requests at least one day advanced notice when ordering this dish, along with Stuffed Duck.

Quite impressive. When preparing Stuffed Duck, chefs steam the entire duck and stuff it to the seams with a

hearty stuffing comprised of lotus nuts, barley, diced ham and mushroom.

Finally, the duck is steamed once again and doused in a special house gravy.

However, I’ll give you a little inside scoop: If you ask nicely, Golden Palace will gladly swap the gravy for Jai (monk’s food), and that in itself is onolicious!

“Stuffed Duck with Jai is a variation that a lot of people like,” Lam confirms, “especially locals!”

fter opening its first location in Waipio three and a half years ago, Thai Village has been wowing customers with its rich, flavorful dishes made with fresh, quality ingredients. The restaurant’s cuisine was such a hit that co-owners, husband and wife team Bo and Mang Sisounthone, decided to spread their good eats to other parts of the island.

They soon added a location in Kunia, and most recently, a place in Kalihi. The new location is the perfect place to stop for a restful lunch break or to enjoy an intimate dinner. The restaurant has an inviting atmosphere and a casual elegance, and Thai Village’s friendly staff will make customers feel right at home.

Thai Village offers an impressive array of traditional Thai dishes, including appetizers, salads, soups, entrees, curries, fried noodle and fried rice dishes.

Customers can start off their meal with a tasty appetizer of Spring Rolls ($6.95) or Larb (with tofu for $8.95 or with pork, beef or chicken for $9.95), which features a generous pile of meat and lettuce seasoned with various spices and herbs.

From there, diners can move on to main dishes such as Cashew Nut Chicken ($9.95) or Lobster Curry ($18.95).

“The Lookfun Pad Thai at this location is really popular,” Mang says. “It is our No. 1 seller … Panang Curry is also very good, and it’s very popular,” Mang says.

“I love it, it’s my favorite.” For both of these dishes, customers can choose among chicken, pork or beef ($9.95), tofu or vegetarian ($8.95), or shrimp, calamari, scallop or mixed seafood ($11.95).

Thai Village also offers a number of specials, including Udon Special ($13.95) and Pho Special ($13.95), which features either the udon or pho with three spring rolls or two summer rolls and a drink. The restaurant also offers various family specials, including Special for Two ($42.95), which features two house salads, four spring rolls, two servings of Toyum or Ginger Soup, Garlic Curry Chicken and Basil Beef.

lthough Thai Village’s Kalihi location is relatively new, the restaurant brings the longtime know-how of a seasoned chef.

Co-owners Bo and Mang Sisounthone explain that they attribute most of their recipes to Auntie Somboun, who owned a restaurant on the Mainland for 20 years before coming to the Islands several years ago. She’s now the head chef at Thai Village’s Waipio location.

“Auntie Somboun is the one who taught us how to cook everything,” Bo says.

Another thing that makes Thai Village’s food so tasty is the high quality ingredients. Bo and Mang always provide customers with fresh — and often local — ingredients. Mang explains that they use vegetables from local farms and select the best parts of chicken, pork and beef.

“All the vegetables that we cook over here, I pick it up in Chinatown and from the farm,” Bo says. “So everything is fresh.

I look for the highest-grade products that I one Co-owner Mang Sisounth can find. We want that high level of quality with Pad Kla Pao Pork Special because we want our customers to have the best.”

“Everything is freshly made from scratch,” Mang says.

And if there is any testament to just how good the food is, it’s one of Mang's observations: “I’ve noticed that our waitresses like our food, too, because even on their days off they still come in and eat.”

“These are served family-style, so customers can try out different dishes,” Mang says, adding that the restaurant also offers Special for Three ($66.95) and Special for Four ($82.95). “It’s a good mixture of dishes. When you order family-style, you get a variety of different foods to try.”

This week, Thai Village is adding a new special to the list: Pad Kla Pao Pork Special ($9.95). The dish presents Pad Kla Pao with pork, which includes stirfried long beans, bamboo shoots, bell

peppers, basil, kiffer leaves, a house sauce and pad kla pao leaves. And just for the new special, the dish is served with rice and an egg on top.

“I think a lot of people will like it,” Mang says.

Pad Kla Pao Pork Special is not on the menu, but it will be served at all three Thai Village locations from today until next Sunday.

here are many people who love the thrill of yakiniku dining, in which customers take the reins and grill meats and vegetables to their own perfection. This is especially true of the Koreanstyle yakiniku offered at Million Restaurant, where loyal patrons have jumped at the chance to fire up the Park family’s recipes for more than 25 years.

But for those who prefer to sit back and relax while the others grill away, the Sheridan Street eatery has an equally enticing a la carte menu to order from with ease.

Once nestled into the hole-in-the-wall’s cozy red booths, ask for Fried Yellow Corbina ($17.95, two fish), a new seafood dish. “In Korea, the yellow corbina you only make on special days,” explains restaurant manager Diana Paik, who imports the fish from Korea. With a well-seasoned flavor that comes from pre-marinating the crispy corbina, you’ll declare every day a special one just to order it.

Another a la carte musthave is Soon Du Bu Chi-ke (Soft Tofu Stew; $10.95).

This silky soup features highquality soft tofu (imported exclusively to Million) that heats up with a new and improved spicy sauce.

Customers may choose from spicy or non-spicy broths offered three ways: with kim chee, Spam or a combination of beef, clams and vegetables.

Whether you are ordering a la carte or manning the grill, all of the establishment’s meals are served with an assortment of banchan such as kim chee, cucumber, seaweed, raw crab, potato salad and long rice. That makes for one big table of Korean classics for every kind of diner.

Dining Out caught up with Alex Ho and Caleb Fortune one afternoon for lunch at Pho My Lien. They both enjoy the pho, which comes with up to five different choices of meats (slices of rare steak, beef well-done brisket, beef soft tendon, beef tripe and beef balls).

Alex Ho: “I get the combination (pho). It’s what I eat every time I come.

Also, the seating and availability is another priority that makes a difference for lunch, and the service is good, too.”

Flavorful Pho and Other Vietnamese Favorites

Upon entering the eatery located on Liliha Street, customers will find a tranquil haven in which they can take a break from their busy schedules and indulge in Vietnamese comfort foods.

Saigon Cuisine opened last March, according to Jennifer Tran.

“This is the restaurant’s only location,” Tran says. “I’m the manager and my husband, Taylor, is the cook.”

When asked what sets Saigon Cuisine apart from other Vietnamese eateries, Tran explains that the eatery’s peaceful ambience and twists on traditional dishes make it unique.

“We’re known for our pho and we have a Saigon House Special Chicken Pho ($6.50 medium; $7.50 large),” Tran says.

“Our chicken pho is special. A lot of people cook (pho) with beef broth, but we use chicken broth.”

Pho at Saigon Cuisine — a healthy customer favorite — comprises light-bodied broth ladled over rice noodles, is accompanied with the individual’s choice of beef and is garnished with cilantro.

Made with fresh and natural ingredients, the pho dishes at Saigon Cuisine — including Sliced Beef Steak and Meatballs (all $6.50 medium, $7.50 large) — are increasingly popular selections.

“We have an Oxtail

Pho ($9.75) too,” says Tran of one of the eatery’s most recent menu additions. “We cook the bone (for the phos) for a long time, like one day.”

Besides its pho dishes, Saigon Cuisine is well known for its appetizers. While many Vietnamese restaurants feature spring rolls and summer rolls, Tran says that this eatery has “four seasons” rolls — Autumn Rolls ($4.99 for two) and Winter Rolls ($4.99 for two), in addition to Summer Rolls ($4.99

for two) and Spring Rolls ($4.50 for two, $7.25 for four). Autumn Rolls feature shredded pork, fresh mint, sliced cucumber, lettuce and bean sprouts; Winter Rolls are made with grilled pork hash, rice noodles, sliced cucumber, lettuce and bean sprouts.

“No other restaurant has Autumn Rolls and Winter Rolls,” says Tran, of the appetizers made with fresh rice paper wrapping (opposed to the deep-fried Summer and Spring Rolls).

Another popular appetizer is Green Papaya Salad ($7.25), a mixture of freshly grated green papaya topped with boiled pork, shrimp, mint leaves and toasted peanuts and tossed with the eatery’s special sauce. Customers also often order Chicken Salad ($7.25), a simple salad with steamed boneless chicken, shredded white cabbage, toasted peanuts, fresh mint and onion flakes, tossed in the eatery’s special lemon sauce.

Other main courses at Saigon Cuisine include varieties of vermicelli noodles — served on a bed of fresh lettuce, vegetable garnish, bean sprouts, roasted peanuts and fish sauce with your choice of topping — and rice dishes, or steamed Jasmine rice served with fresh lettuce, sliced cucumbers and tomatoes.

Vermicelli noodle dishes can come with Lemon Grass Chicken ($7.50) or Garlic and Onion Beef ($7.50). The most popular rice dish, however, is House Special: 3-Choice Combination Plate ($8.50), in which customers can select three of the various meats available, including Barbecue Pork Chop, Barbecue Chicken and Shredded Pork.

“For the 3-Choice Combination Plate, you can have Lemongrass Chicken, Barbecue Pork Chop, Garlic Shrimp … any three (under the Rice Dishes category),” confirms Tran.

Although Saigon Cuisine has not yet made its one-year anniversary, the eatery will hopefully have daily or monthly specials in the future, as well as continue to expand its menu. For now, though, the restaurant continues to cater to local crowds with its flavorful food and budget-friendly prices.

“Most of our customers are locals, and the average price per customer is less than $10,” says Tran.
