efore I moved to New York City, the most exotic dining tip I knew was that you can ask for half chicken and half steak at Chipotle. As awe-inspiring as that dish may sound, it was obvious that I had a lot to learn about eating out.

Your family may be unfamiliar with the city and want you to pick a place you all will love. This is a chance to try the spots you pass with your friends on the way to dollar-slice pizza. Here are some criteria for picking the perfect spot.

Do they take reservations? Depending on the kind of restaurant, this rule doesn’t apply, but it can be a sign of class. Second, see if there’s any kind of dress code. Swanky clothes can lead to swanky food. Next, note if the restaurant is inside of a nice hotel, as there are many of them in New York. Fancy hotels often attract award-winning chefs of diverse culinary backgrounds.

The New York food scene shifts, so whether you want perfectly plated Korean fusion or old-school Italian ambiance where the waiters wipe off the table between courses, it’s all here. Show off the diversity of New York’s population not just by showing your family unique neighborhoods, but by trying food that can be difficult to find in other areas around the globe.

Lastly, with all the restaurants New York has to offer, see which ones are crowded. When people have a choice about where to eat, they’ll eventually flock to the same places, hopefully because of the quality of the food. Getting into the most popular places will take extra planning, but the gastronomical pay-off can be worth it.

Be aware that the decor of a restaurant and the price of a plate don’t always correlate with good food. Some of the best meals are hole-in-the-wall places.

What really matters is that you’re spending time with people you care about.

But don’t miss out on a fun chance to try a new place, or new food, that is normally just out of reach.

Such stuff is a far cry from the fried state fair comfort food enjoyed by much of the country at this time of year. But even for jaded foodies, there are dishes that press pause on mealtime chitchat — foods that become the main event. For those with "No Reservations," there is a seedy underbelly of New York cuisine to be explored and devoured.

Particularly trendy right now is offal — glands, guts, or, euphemistically, the animal's "inner meats." These are not just your standard chitlins or sweetbreads.

You can get those at any cozy nouveau Brooklyn eatery claiming "soul food" inspiration. More shocking are the dishes that provide a lesson in animal anatomy.

More biology lessons come via restaurants that introduce patrons to new species. Head out to Queens for a smattering of Peruvian restaurants that serve cuy, a guinea pig-like mammal that is roasted for its tender meat. Learn about the diversity of mollusks at New Combination, a Nigerian restaurant on Utica Avenue in Brooklyn. They serve gigantic, meaty black snails in spicy tomato and onion sauce — not your momma’s escargot.

For those who like to stamp

off different cuisines, passport-style, perhaps no global region provides more consistent thrills than Southeast Asia. While the area's lumpia isn't far from an egg roll, they're also known for the acquired taste of a spiky melon called durian. In some Southeast Asian countries durians are banned in public places for their obnoxious smell. Head to Spice Market on West 13th Street for durian-infused ice cream to see what all the stink is about. Perhaps most formidable of the dishes featured so far is a Filipino dish called balut, a duck egg

whose embryo has already started forming — truly not for the faint of heart. You can get it at Maharika on First Avenue.

For those overwhelmed by entrails and embryos, there is the tamer side of culinary exoticism. Check out Bareburger (various locations), where meats run the gamut, but never into the outlandish. Boar and bison are both present, and if you're looking for poultry but tiring of turkey, try the ostrich. It’s banal compared to balut, but they say it tastes just like chicken.

Do you take food seriously? For aspiring foodies, Steinhardt’s Department of Nutrition, Food Studies and Public Health offers hands-on classes for food preparation, and the College of Arts and Science’s Arthur L. Carter Journalism Institute offers classes on food writing. Here is what’s on the menu.

Introduction to Foods and Food Science (NUTR-UE 85) This is a prerequisite for many of the classes offered by the Department of Nutrition, Food Studies and Public Health. The class introduces students to foods from various parts of the world through lectures, field trips and labs. You even learn basic cooking techniques.

Steinhardt sophomore Caty Schnack said the final exam is conducted “Iron Chef-style.”

Beverages (FOOD-UE 1025) Steinhardt junior Audrey Yung describes Beverages as “a bit like a wine tasting class.” The course discusses basic principles of developing beverage systems and drink menus through firsthand experience. The class teaches you about the pricing of the drink, legal issues and how to use different equipment to prepare drinks.

For aspiring mixologists, Beverages sounds like a perfect class. You must be 21 or over to take the course.

Food Photography (FOOD-UE 1271) Rather than learning about gaining more followers on Instagram by improving your portfolio, Food Photography delves deeper. In just two sessions, this class teaches you everything you need to know about organizing a successful food photo shoot. While the first session is all about learning how to operate the equipment — from DSLR cameras to professional lighting — the second session is geared towards hands-on experience. Students can come up with a concept for the photo shoot, prepare food and take pictures with expensive cameras.

The Beat: Food Writing (JOUR-UA 201) One of the perks about living in New York City is its vibrant food scene. In The Beat: Food Writing, students explore the foodie capital of the world, observing dining trends, reviewing restaurants and learning about the politics behind food

production. Exploring New York City restauarants while developing personal writing style and voice? Sounds like a sweet deal. Note: this class is typically only open to Journalism majors and requires two prerequisites -Investigating Journalism and Journalistic Inquiry.

Eat NY / Style NY (JOUR-UA 204) During Summer Sessions, the Journalism department offers other food writing electives as well. Last Summer, Daniel Maurer (co-founder of Grub Street) and Barbara Fairchild (former editor-in-chief of Bon Appétit) taught a course that explored both the fashion and dining scene of the Big Apple. They also helped students hone their skills through writing magazine-style short blurbs and essays. An impressive lineup of guest speakers included Steve Cuozzo, restaurant critic for the New York Post, and Patrick Martins, founder of Heritage Foods USA and the Heritage Radio Network.

Sustainability and decreasing environmental waste are part of NYU’s mission to go green Thousands of undergraduate students eat in multiple dining halls every day. For every meal that is eaten and enjoyed in an NYU dining facility, there is waste that goes along with it.

A 2008 NYU Waste Characterization Study Report found that three-fifths, or about 59.2 percent of waste from NYU is compostable. Over the past several years, NYU dining facilities have brought compost initiatives into the lives of NYU students.

Third North Courtyard

Cafe, Downstein, U-Hall Commons Cafe, Rubin and Hayden dining halls all have compost bins or receptacles placed next to trash bins. to gather food and fiber waste such as paper, plates and napkins. There are also compost bins in the Kimmel Center Market Place and two NYU Law School residence halls.

“I think the fact that many of the dining halls [have] a composting system is a step in the right direction,” Gallatin sophomore

Emma Spett said. “I don’t think students properly use the composting bins.

There is a lack of education [and] lack of care when it comes to the option of composting.”

While it does not have a dining hall, Carlyle residence provides a compost tumbler for students in its courtyard.

“This tumbler allows Carlyle residents to turn their organic waste into local compost, with all compost generated from the tumbler donated to the NYU Community Agriculture Club,” information on the NYU Sustainability website says.

Compost gathered at NYU is given to McEnroe Organic Farm located in Millerton, N.Y. There, it is turned into fertilizer.

In 2011, NYU received a gold rating from the Association for the Advancement of Sustainability in Higher Education as a participant of the Sustainability, Tracking, Assessment and Rating System.
