Bone-In Pork Loin Roast

Large, lean and mild, this roast can be cooked whole or cut into chops. Brining helps keep the meat moist and imparts extra flavor. For best results, opt for dry heat cooking methods, such as grilling, roasting or broiling.

Established in 1861 near the Sacramento River in Butte County, Rancho Llano Seco has a legacy of responsible family farming six generations in the making. Dedicated to environmental stewardship, they humanely raise their pigs in open air with GMO-free, vegetarian feed grown right on the ranch and with no antibiotics or added growth hormones. Through their holistic approach to ranching, they produce premium pork while taking care of their people, land and animals.

Grilled Mojo Pork Loin This classic Caribbean flavor combination is loaded with garlic and balanced by citrus, olive oil and oregano.

INGREDIENTS

P R E PA R AT I O N

1½ cups orange juice

Combine orange juice, lime juice, garlic, onion, oregano and salt in a blender. Puree for 15–20 seconds, then add oil to emulsify.

½ cup lime juice 8 cloves garlic 1 onion, chopped

PREP TIME:

COOK TIME: YIELD:

10 minutes plus 12 hours marinating

½ bunch oregano, picked

1½ hours

½ cup olive oil

6–8 servings

1 pork loin roast (3 pounds)

2 tablespoons salt

Place pork loin roast in a resealable plastic bag, add the marinade, squeeze out any excess air and seal. Place in a container to catch any leaks and refrigerate overnight. Heat grill to medium-high heat. Remove roast from marinade and discard marinade. Grill on all sides to achieve grill marks, then turn heat down to 250°F and cook covered for approximately 1 hour, or until the internal temperature of the roast reaches 145°F. After grilling, let roast rest 20 minutes before carving.

BBQ Wines & Beers Cline Farmhouse White With tropical fruit aromas and a golden straw color, this refreshing, off-dry white has just enough light, fruity sweetness to pair perfectly with mildly spicy barbecued foods.

Toad Hollow Rosé

Meandro Do Vale Meão

Although this rosé of pinot noir is considered dry, there’s more than enough heady fruit flavors of watermelon, raspberry and strawberry to make it a match for your summer BBQ favorites.

This Douro red wine is focused, intense and elegant all at the same time. Loaded with ripe dark fruit notes and youthful tannins, it’s made for something charred off the grill.

When picking pairings for your barbecue fare, remember sweet beats the heat and acid cuts the fat!

Sudwerk Northern Pilsner

Samuel Smith Oatmeal Stout

The light, malty sweetness and crisp acidic finish in this local, Northern German-style pilsner make it ideal for pairing with lighter, leaner meats.

Heavier and smokier roasted barbecue flavors are met well by the roasted coffee notes and creamy texture in this big and rich English stout.

SUMMER'S SECRETS

Infused Waters!

During these warm summer months, your body’s need for fluid can easily go up twofold with the climbing temps. DIY Summertime Skincare Longer days, warmer weather and summer vacation all mean fun in the sun—just don’t get burned! Even with sunscreen, it’s all too easy to take your tan a little too far and wind up sun-kissed and then some. When that happens, try these easy DIY solutions to help cool and soothe sunburnt skin.

YOGU RT COOLING M A SK

Plain yogurt is cooling and contains natural lactic acid that helps gently exfoliate dead skin without scrubbing (which can do even more damage to sunburnt skin). To make the mask, combine 1 cup full fat Greek yogurt with 5 drops lavender essential oil and mix well. Spread mixture on your skin, let dry slightly, then gently wash off.

You can also add a small handful of mint leaves before steeping for an extra refreshing sip or spray.

Tomato & Caramelized Onion Hand Pies For a savory spin on hand pies, balance the sweetness of caramelized onions and roasted tomatoes with the tang of fresh goat cheese. PREP TIME:

25 minutes

P R E PA R AT I O N

Heat oven to 250°F. Place all tomatoes cut side up on a lined baking sheet. Season with thyme, ½ teaspoon salt, sugar and olive oil. Bake for approximately 1 hour, or until tomatoes have lost about half of their moisture, then remove from oven and let cool to room temperature.

1 pint Sun Gold cherry tomatoes, halved

In a 2-quart sauce pot, melt butter, then add onions and 1 teaspoon salt. Cover pot and cook over medium heat for 20–30 minutes, or until onions have released all of their liquid. Remove lid and continue to cook, stirring frequently, until all of the liquid is gone and the onions begin to caramelize. When onions are completely caramelized, remove from heat and chill to room temperature.

1 teaspoon fresh chopped thyme

Heat oven to 350°F.

1½ teaspoons salt

Lay dough circles out and brush the outer 1 inch of each with beaten egg. Place approximately 2–3 tablespoons of caramelized onion in the center of each circle and spread into a half moon. Top with 3–4 tablespoons cherry tomatoes and ½ ounce goat cheese. Fold the dough over the filling to create a half moon and gently press the edges together.
