The contest kicks off this month with four regional stages.

A butcher apprentice and a young butcher (who must have completed their apprenticeship and be 30 years or under) will be selected from each regional contest to go head-to-head against other regional winners at the Grand Final in August.

Entrants competing in the regional stages must complete a practical cutting test in which they will have two hours to turn a whole beef sirloin, pork shoulder and a size-20 chicken into a display of products similar to what would be viewed in a butcher shop serve over.

The competitors who make it through to the Grand Final will then have another chance to display their knife skills.

Entrants will also be put through a written examination and interview to assess their theoretical knowledge and communication ability. Luka Young,

runner-up in the 2015 Alto Young Butcher category and winner of the 2014 Competenz Butcher Apprentice category said he’s hoping for a hat trick this year.

“For me, it’s another chance to improve the skills I already have.

“Each time I enter I’m forced to raise the bar even higher and bring another level to the competition than perhaps what I’ve done before.”

The Grand Final will be held at Shed 10 in Auckland on Thursday, August 25. The overall winners will be announced at a black-tie dinner following the competition.

The regionals will be held in the South Island on Saturday, June 18; Central Districts/lower North Island on Wednesday, June 22; Waikato on Wednesday, June 29; and the upper North Island over the weekend of July 2–3.

New slice on slice expansion opens Fonterra today celebrated the official opening of its new slice on slice cheese expansion at Eltham, with the plant now able to produce enough cheese to fill more than three billion burgers each year.

The expansion opening, which was attended by Fonterra farmers, staff, iwi and central and local government representatives, was officiated by Whanganui MP Chester Borrows and South Taranaki District Council Mayor Ross Dunlop, along with Fonterra CEO Theo Spierings, director David MacLeod and managing director global operations Robert Spurway.

The first cheese marks the successful completion of the 10-month build to install two new lines that will double the site’s sliced cheese production. The new individually wrapped sliced cheese line was completed last year.

Fonterra managing director of global operations Robert Spurway said the new line will help the co-operative to be more responsive to customers’ requirements.

“Each of our customers has slightly different requirements and uses for the cheese we make for them, and this additional capacity will allow us to meet more than 350 different product specifications — that’s 350 very exacting recipes.

“For example, one of the things McDonald’s tests us on is how quickly they can peel the cheese off the block.

Our ability to consistently provide above their brand standard of quality is what makes us a preferred supplier.”

He said the expansion supports the co-operative’s growth in foodservice and is helping drive Fonterra’s V3 strategy.

Adventure awaits AT MAKOWHAI STATION

Makowhai Station has a long history as a sheep and beef farm. More recently the property has made use of its expansive size and features, opening the gates for visitors to enjoy the great outdoors.

F

our generations of the Matthews family have run the 22,000 acre Waitotara Valley property since Joseph Haddow and his wife, Sophie, settled in the area in the early 1890s.

Four other farms, Matemate, Takiri, Kapara and Angiwa, have been added to the station over the years. Some of these properties were originally farmed

by WWI returned servicemen under the New Zealand government’s farm settlement scheme.

The station is now operated by Henry Matthews, his sister Melody, and Melody’s husband Eon. Although Melody was raised on the station, she spent 12 years working in the dairy industry

before returning with Eon and their three children. Henry, Melody and Eon ventured into ecotourism five years ago, offering a wide range of activities and a couple of accommodation options.

Melody runs the adventure tourism section of the business.

“The decision to diversify was to add another source of income,” she said.

“We conform to the New Zealand Safety Audit Standard for Adventure Activities 2013, through AdventureMark.

“We can operate guided quad biking and trail biking tours.”

Makowhai Station is a popular venue for horse-trekking

brand. Both bush and manuka honey are processed on the property. Settlers Honey development manager, Bryn Hudson, said the placement of hives around Makowhai Station is worked out on the density of manuka in the area.

“We generally use the formula of one hive per hectare of manuka, although

this can vary depending on access and site conditions.”

After the manuka has flowered, beekeepers remove the honey boxes from the hive and transport them back to the honey extraction plant, located on the station. Bryn said the hives are then shifted on to a new home for

autumn, winter and spring. Tours of the plant and bee sites are available to visitors.

Melody said they’ve always received positive feedback from visitors to Makowhai Station.

“They love to hear the history and are amazed by the scenery and wildlife.”

Private groups regularly bring their own horses, bikes and four-wheeldrive vehicles.

“They can either self-guide or we can provide a guide,” said Melody.

Makowhai Station’s range in altitude, starting at sea level and climbing up to around 500 metres, along with its varied terrain, includes numerous geographical features. Its native bush, lakes, and streams create an outdoor adventure playground for visitors.

More than 200 kilometres of tracks cover the station, enabling visitors to venture into the back-country. The station’s historic homestead, built by the early settlers, offers a nonpowered accommodation option for visitors. Shearer’s quarters, located alongside the woolshed, provide another alternative to bunk down for the night.

The property’s higher country experiences frosts during the winter but the valleys, sheltered from the wind, form a microclimate. Melody said flash flooding is prevalent in the winter and the steep areas are prone to slipping.

“The wet weather causes tracks, which are largely papa subsoil, to become very slippery.”

rendon and Hayley previously grazed dairy heifers but due to the downturn in the dairy industry, turned their attention to purchasing their own beef stock and taking them through to slaughter. The couple buy in stock all-year-round, sourcing animals from saleyards and the Trade Me auction site.

They raise their stock on a 60-acre lease block near Normanby. Brendon said any time he sees stock that fit into their price range; he grabs them and doesn’t specifically look for any particular type.

“Preferably with four legs and a head,” he said. “If they’ve got a tail, well that’s a bonus.” It’s the price that tends to be the deciding factor.

“After paying lease, making silage/ hay, regrassing and general farm maintenance costs, there isn’t much coin left in the kitty.

“I think that’s why it’s called a hobby,” said Brendon.

The bulk of the Robinsons’ purchases are 100kg beef weaners which are taken through to 220kg dead weight.

Raised on his parent’s 165-cow dairy farm, Brendon now works shifts at the Kapuni gas plant but has kept close ties to his farming background.

“Farming is in my blood,” he said.

Hayley also has a connection to farming as her father, Kevin Bensemann, worked in the stock and station industry for 45 years prior to his retirement.

Hayley currently works for a chartered accountant. The couple have two children, Emily, 15, and Sterling, 10.

Not long after Brendon’s parents sold their dairy herd, his father suddenly passed away.

“Two years later, Mum gave my brother and I the opportunity to lease her farms,” he said.

“The block I lease was their 60-acre Normanby run-off, which is 16 kilometres away from the former dairy platform that my brother now leases.”

sprayed the entire property this past summer to kill Californian thistles.

“It’s about the only thing that grows when it gets dry,” he said.

He also regrasses when pastures require it. Silage and hay is made on the farm and some of this is fed out during winter. The remainder of the hay and silage is kept as summer supplement during dry periods. “My Dad always used to say hay in the barn is better than money in the bank.”

Brendon said the farm receives good rainfall and the grass grows well.

“The last four summers we have had dry spells and it is tough watching my stock go hungry. They will survive on hay and silage but they won’t put the weight on,” he said.

“This last summer, I tried plantain for the first time.”

Brendon said this has turned out to be the best decision they’ve ever made.

“So next summer we will be spraying out and doing more.”

The Robinsons are currently running a mixture of cattle on their farm, taking them through the winter. Hayley said their stock are really quiet and follow Brendon around.

“They are quiet, well-fed, loved and happy,” she said. “We both enjoy the sound of grass growing and the company of happy livestock.”

Brendon is considering splitting any risk when selling his cattle this year.

“I might send the boys to Stratford sale, keep the girls, finish them off and then through to the works. We will see what the market is doing later in the year.”

“When we got two animals into the top 20, we were ecstatic to get that far,” said Brendon.

“We were then absolutely blown away to win our class.” Brendon said it was

Head of Farm Environment Trust steps down in October After a decade at the helm of the New Zealand Farm Environment (NZFE) Trust, general manager David Natzke is stepping down in October.

NZFE Trust chairman Simon Saunders said Mr Natzke has made a huge contribution to the trust since his appointment in March 2006.

During conversation about the growing trend towards organic production, Murray produced a copy of the Ashburton Guardian, a farming journal dated May 2016. This group’s common birth range is 1982–2000. According to the paper the Generation Y consumers are waiting in the wings to hold power and shape future markets. Conventional producers should be very concerned about their future direction as the chemical age

There is a wide variety of education providers in the Taranaki region, from early childcare through to tertiary institutions. This gives parents of school-age children the choice of co-educational or single sex, boarding or day, religious or secular schools. education institution. WITT is the only state tertiary institution in Taranaki and offers courses from certificate to degree level across a wide range of areas, including nursing, hospitality, maori, art, electrical, engineering, automotive, welding, carpentry, architecture, computing, hairdressing, beauty therapy, early childhood education and social sciences.

What are we to make of the latest pay promise of $9.20/kg ms for organic milk a 60 per cent rise from the current organic payout and a staggering 235 per cent higher than the payout for conventional milk.

It means there has been a massive worldwide shift in the mindset of dairy product consumers. The fact that they’re willing to pay a lot more for organic milk is a sure sign they’re no longer comfortable ingesting the chemicals found in typical milk products.

They’re saying no to our penicillins, weed sprays and parasite pour-ons, and saying yes to clean organic milk.

Here’s what else it means. Farmers will need to take greater responsibility for adding value to the products coming off their farms.

With recent low commodity prices, we’ve been critical towards dairy companies for not producing and marketing value-added products from the milk sent to them. We’ve expected the factory to add the value and increase our return.

Fair enough. I think that’s a critical part of Fonterra’s job. But what if some of the onus is on us to supply Fonterra with a better value-added product to

Wouldn’t that put Fonterra in a stronger position to maximise our payout in a global market that clearly wants chemical-free products?

A small group of farmers are discovering that it does. These farmers, either certified organic or close to going organic, were brave enough to significantly alter their management practices some time ago — $9.20/kg ms will be the reward for their foresight.

Good for them. But where does that leave conventional farmers? We need a shift in our thinking.

It’s impossible to run a farm without penicillin, weed sprays and pour-ons, and urea?

I thought so when I first contemplated the idea. But I learned that I’d become brainwashed over the years by the companies that made the chemicals.

These corporate giants with their big marketing budgets were constantly promoting a version of science that lead me to think I needed the chemicals they

were selling. At some point however, I focussed on proving that good production was not determined by a high usage of nitrogen. At that time the farm was growing 14 tonne of dry matter per hectare while using 150 units of nitrogen per hectare. After adjusting my management, the farm grew 19 tonne dm/ha from applying only 30 units of nitrogen per hectare. A 35 per cent increase in production with 80 per cent less artificial nitrogen.

Over 10 years, I challenged and successfully changed a lot of conventional practices. Others went even further than I did. They’re the ones that will collect $9.20/kg ms next year.

If you’re thinking of joining the trend to move away from a heavy dependence on chemicals, can I suggest you take this first step: sack your conventional thinking consultant.

He can’t possibly think outside the chemical square because it’s the chemical system itself that gives him an income.

Do we have Laminitis?

I have just been running some trimming workshops on the West Coast and found myself regularly confronted with the continuing acceptance that physical force is the main contributor to lameness in New Zealand, together with a reluctance to accept that Laminitis is a very real problem here. So, do we have laminitis in New Zealand? There are people who believe we don’t because ‘it has not been proven’.

What difference would it make? Why would we care? I believe that if you really want to solve a problem, you need to know what causes the problem. How else are you going to solve it? I believe that if we try to keep lameness under control by solving all the physical issues then we are only solving the symptoms.

So, what is my point? When I talk about laminitis I am talking about an unhealthy live tissue in the hoof caused by internal imbalances.

The symptoms of an unhealthy live tissue are haemorrhaging, holes and cracks, deformed hoofs and just about anything else we see wrong with the hoof. Most people mistakenly assume that all those symptoms are caused by standing on stones and other ‘sharp objects’, or ‘pushing cows too hard’ and therefore adding too much pressure on the hooves. The problem here is that this has never been proven to be the case. However, the fact that those symptoms are mainly a domestic cow issue and not so much a wild cow issue shows that there has to be more going on than just physical forces. I would argue that a cow in the wild is a lot harder on her hooves than a domestic cow on our farms. The fact that those symptoms are more cow-related than

hoof-related raises questions. Why are those symptoms symmetrical on both feet on most cows? That doesn’t make sense if it was caused by physical force.

Also, why do we see haemorrhaging up on the dorsal wall? How could physical force be the cause of that? Why do we see the outer claw deformed much more often than the inner claw? Why do most cows go lame on the rear hooves if they only carry 40% of the weight?

Why do we see mostly the outside claws displaying these symptoms if this is supposed to be the claw with the most protection? Why does it have a positive effect on the cow when we take some of that protection away by trimming? Think about it. How do you explain all those things from a physical force point of view? Research overseas has shown that diet and stress have a major impact on lameness. I know we are in New Zealand, but if it looks like a duck, it quacks like a duck, it waddles like a duck and it flies like a duck it probably is a duck. We need to understand this properly because it will affect our management style — all of a sudden, controlled starvation becomes a problem rather than a tool, only one water trough may not be enough, and having cows out of the paddock for long

periods of time becomes an issue, and the list goes on.

I do not understand why people deny that laminitis is in dairy cows in New Zealand. I do not see any reason for that especially when the evidence so clearly points in that direction. Just for the record, I believe that just about

every cow in New Zealand has some degree of laminitis in their feet. In the majority of cases it is not severe enough to be a problem for the cow. However, I believe it is by far the biggest cause of lameness on our dairy farms. Let me know your thoughts, email me at fred@veehof.co.nz
