The Epiphany Mississippi Trip Full of Work, Games and a Mishap later tell us it was well worth it. Most of us stay at the school and play volleyball and basketball in the Holdermans’ gym. Out rotating schedule of play also leaves us time to get acquainted with the Holderman youth off the court. We thoroughly enjoy ourselves until shortly after 2015 comes.

Thankfully, I have a soft landing on the Mississippi turf and it appears the biggest damage is some splotched of bright blue paint on Doby Jones’ white door frame.

Then we load up and go back to Mashulaville Dormitory, where we have been staying. We, as young, gung-ho competitors are wont, play games yet before retiring late.

Today is Wednesday and therefore our third work day here in Mississippi. Three van loads of Amish youth, one from Nappanee, one from Pennsylvania and one from here in the civilized part of the country, are spending a week in rural Mississippi working on the houses of poverty-stricken locals.

We also rise late and wait to eat breakfast until 9 a.m. New Year’s morning. After eating, each one of us shares what inspired us this week. Some profound thoughts some out of this session. Mary Miller mercifully cuts her sermon short and there is no need to bring her any liquid refreshment.

Do not laugh when I refer to our area as being civilized. Had you met the groups from Nappanee and Pennsylvania, you would know exactly what I mean. They are crazy.

The only work we do today is making a bit of firewood. Then we load up and go tour Waverly, a local plantation mansion.

The local Holderman Mennonites have invites us to their school to dine on catfish on this New Year’s Eve. The Mennonites, including Dean Geisbrecht and Darryl Koehn and their families, greet us warmly and feed us fish and hush puppies. My first helping of catfish is tasty. As is the second and third. These are domestic catfish that the Mennonites raised in their ponds. After supper, Dean explains the industry to us briefly. We enjoy some sharing time, tour the school, and sing. The Holdermans can sing. That’s like saying Lebron James can play basketball. In fact, these Holdermans are exceptionally gifted singers who are a joy to listen to. This elegant, four-story white house used to be the head of a monstrous, prosperous cotton plantation. Forty acres still remain with the house and it is owned by a Robert Snow, a white-haired man who lives here and is around while a guide gives us a tour. Seven hundred mahogany spindles were used in the railing for the gloriously-curves staircases inside. We also hear some fascinating history about the mansion from the guide, including the story of the 4-year-old lass who dies by falling down the stairs one night. People claim they still hear her saying “Momma, Momma,” sometimes. We notice nothing of the sort during our visit. When we return to the dorm, little do we know we are in for one of the highlights of the week, a game of “What Would You Do If …”

Simply Delicious Potato Stack Casserole 2 pkgs. Ranch dressing mix 2 c. sour cream 2 c. milk

3 lbs. hash browns or 10 c. potatoes, cooked and shredded

Combine Ranch mix, sour cream and milk. Mix well and pour over potatoes. Mix, then put in roaster.

2nd Layer: 4 lbs. hamburger, browned

2 pkgs. taco seasoning

Brown hamburger and add taco seasoning. Put on top of potato mixture.

3rd Layer: 8 T. butter 4 c. milk 2 c. Velveeta cheese

8 T. flour 2 tsp. salt

Melt butter in saucepan; stir in flour. Add milk, salt and cheese. Cook until thickened. Pour over hamburger mixture. Bake at 350°until heated through. Before serving, top with 1 bag of crushed Doritos chips.

Fruit Pizza

7 1/2 lbs. hamburger 4 1/2 c. cracker crumbs 6 eggs, beaten

3 tsp. salt 3 tsp. pepper 1 1/2 c. BBQ sauce

Mix everything together. Put on E & S cookie sheets. Cut into pieces. Bake at 350° for 1 hour. Pour off grease. Layer pieces in roaster and cover each layer with gravy. Keep warm in 200° oven. Gravy: 3 cans cream of mushroom soup

4 cans milk

Heat together in a 6-quart kettle. Add 1/2 box of Velveeta and stir until melted. Mix about 2 cups country-style gravy mix with 1 1/2 cups cold water. Add to hot milk mixture to thicken. Simply Delicious Recipe Collection by Kathy Chupp

Crust: 1 yellow cake mix 3/4 c. butter-flavored Crisco

2 T. milk 1 egg

Mix all together. Batter will be stiff. Pat onto 2 pizza pans or 1 cookie sheet. Bake at 350° for 10 to 15 minutes. Do not overbake.

Filling: 1 (8 oz.) cream cheese 1 (8 oz.) Cool Whip

1 c. powdered sugar

Mix together cream cheese and powdered sugar until smooth. Add Cool Whip and spread evenly onto cooled crusts.

Glaze: 4 c. water and pineapple juice 1 1/4 c. sugar

1/2 c. Perma-Flo 1 pkg. orange Kool-Aid

Boil 3 cups water/pineapple juice. Mix 1 cup water, Perma-Flo and sugar together. Add to boiling water. Add Kool-Aid when thickened. When cool, add any fruit you like (apples, oranges, grapes, strawberries, kiwis, peaches, pineapple, blueberries). Put on top of filling.
