From beloved breakfast traditions to rum-laced desserts, BERMUDA’S FOOD CULTURE blends time-honoured recipes with global inspiration. SETTLE IN FOR A FLAVOUR-FILLED JOURNEY across the island.

Bermuda’s food scene is as layered and colourful as its history. Influenced by British roots, Caribbean warmth, African heritage, and Portuguese traditions, the island’s cuisine reflects centuries of migration, trade, and cultural exchange. Despite its small size, Bermuda delivers an outsized culinary experience, where humble homestyle dishes sit comfortably alongside refined restaurant fare and every meal feels infused with a sense of place.
Whether you’re enjoying freshly caught seafood overlooking turquoise waters, sampling comfort foods passed down through generations, or sipping a perfectly mixed rum cocktail as the sun dips below the horizon, dining in Bermuda is about more than sustenance — it’s about connection, tradition, and pleasure.
The Heart of Bermudian Hospitality
What sets Bermuda apart is not only what’s on the plate but the warmth that accompanies it. Meals are unhurried, conversations come easily, and visitors are often welcomed as if they were long-time friends. Chefs are proud to talk about their ingredients, servers are eager to share recommendations, and locals delight in pointing newcomers towards their favourite spots.

Welcome to Bermuda’s premier bar and grill restaurant located in the scenic beauty of the Belmont Hills Golf Course with spectacular views overlooking the Great Sound and Hamilton Harbour. Blû’s cuisine is bold American with generous Italian and Asian influences as well as a delightful sushi menu.

Food in Bermuda is inseparable from community. From family-style breakfasts and fish sandwiches to festivals that draw entire parishes together, eating here is a shared experience. It’s this spirit of hospitality that turns a simple meal into a lasting memory.
For a true introduction to Bermudian tradition, few meals are as meaningful as the classic codfish breakfast. Most often enjoyed on Sunday mornings, this hearty dish is a cornerstone of local culture. Salted codfish is paired with boiled potatoes, eggs, bacon, and onions simmered in a tomato-based sauce, then served with slices of banana and avocado.
The origins of this meal trace back to colonial times, when salted cod was widely traded throughout the

Caribbean and Atlantic world. Bermudians transformed this preserved staple into a comforting breakfast that balanced salty, savoury, and subtly sweet flavours. Today, it remains a beloved ritual, enjoyed at home with family or at local restaurants that honour the tradition.
More than just filling, the codfish breakfast reflects history on a plate — a reminder of resilience, adaptation, and the island’s ability to turn necessity into something deeply cherished.
If there is one dish that inspires friendly rivalry across the island, it’s the Bermuda fish sandwich. More than a lunchtime favourite, it’s a point of pride, with locals passionately debating where to find the best version.
At its core, the sandwich features a generous piece of local fish — typically wahoo, snapper, or haddock — either beer battered and fried until crisp or grilled to perfection. It’s usually stacked on raisin bread and layered with tartar sauce, coleslaw, tomato, and hot sauce. The raisin bread, lightly sweet and distinctly Bermudian, provides a signature contrast to the savoury fish.
Each establishment adds its own flair. Some go heavy on house-made sauces, others focus on spice, while a few let the fish speak almost entirely for itself. Annual competitions celebrating the fish sandwich only fuel the enthusiasm, encouraging chefs to refine their recipes and innovate while staying true to tradition.
For visitors, the debate is delicious — sampling multiple versions is practically encouraged.

// Sushi has also become a standout on Bermuda’s dining scene, with many restaurants embracing both classic preparations and creative islandinspired rolls.
Straight from the Sea:
Bermuda’s Seafood Bounty
Surrounded by the Atlantic, Bermuda naturally leans into seafood. The island’s waters provide an impressive variety of fish and shellfish that anchor menus year-round.
One of the most prized catches is spiny lobster, available during its regulated season from September through March. Unlike the clawed lobsters found farther north, Bermuda’s spiny lobster is all tail, known for its sweet, firm meat. It’s commonly grilled, served with garlic butter, or incorporated into rich chowders and pastas.
Local fish such as wahoo, rockfish, snapper, tuna, and mahi mahi are prepared simply to highlight their freshness — pan seared, baked, or grilled with herbs and citrus. For anglers, there’s a special satisfaction in catching your own fish and having it prepared by a local chef, turning a day on the water into an unforgettable meal.

Sushi has also become a standout on Bermuda’s dining scene, with many restaurants embracing both classic preparations and creative island-inspired rolls. Enjoy locally sourced seafood paired with bright citrus, tropical fruits, and delicate sauces, reflecting the island’s blend of Asian technique and Atlantic flavour. From elegant sashimi platters to inventive signature rolls, sushi has emerged as a favourite amongst locals and visitors alike.
Shellfish also plays a starring role. Mussels, scallops, and shrimp appear in dishes influenced by Mediterranean, Asian, and Caribbean cuisines, reflecting Bermuda’s global palate.
Fish Chowder: A Bowl of History
Bermuda fish chowder is more than a soup — it’s a culinary heirloom. Traditionally simmered slowly to allow flavours to deepen and meld,
this chowder is hearty, aromatic, and unmistakably Bermudian. What truly sets it apart is the finishing touch: a splash of Goslings black rum and a dash of Outerbridge’s Original Sherry Peppers Sauce. These ingredients connect the dish directly to the island’s rummaking history and spice trade, adding warmth and complexity with every spoonful.
In 1964, Yeaton Duval Outerbridge first created Bermuda Sherry Peppers for the Harbourfront Restaurant in Hamilton. Demand quickly followed from locals and visitors alike. Today, Outerbridge’s Original is synonymous with sherry peppers and remains a staple in kitchens across Bermuda and around the world.
Served in homes, restaurants, and at special gatherings, fish chowder offers a comforting taste of the past that remains firmly rooted in the present.

Voted ‘Best Seafood Restaurant’ for 3 years, Aurora’s seasonal menu features fresh local seafood, meat and produce from Bermuda’s best fishermen and farmers. We are committed to sourcing sustainable ingredients from local suppliers, ocean to table. We look forward to welcoming you to Aurora at Newstead Belmont Hills Golf Resort & Spa.

A Global Table with Island Roots
While traditional dishes are deeply respected, Bermuda’s food scene is anything but static. The island embraces global flavours, often blending them with local ingredients and techniques.
It’s common to find jerk-seasoned meats alongside miso-glazed fish, Portuguese-style grilled seafood next to Italian pastas, and sushi menus sharing space with classic burgers, steaks, and fresh salads. This culinary openness reflects the island’s diverse population and its long history as a crossroads of cultures.
Cassava pie stands out as a uniquely Bermudian dish, particularly popular during holidays. Made from grated cassava, eggs, sugar, butter, and spices, it balances sweet and savoury notes in a way that surprises first-time tasters. Recipes vary widely, and many families guard theirs closely, passing them down through generations.
British Influence on the Menu
As a British Overseas Territory, Bermuda maintains a strong culinary connection to the United Kingdom. Traditional pubs across the island serve familiar favourites like fish and chips, shepherd’s and steak and ale pie, bangers and mash, and carved roast beef with Yorkshire pudding. These dishes offer comforting familiarity, often paired with locally brewed beers or imported British ales. Enjoyed in relaxed pub settings or seaside dining rooms, they represent another layer of Bermuda’s blended food identity.

Rum at the Core of Island Culture
Rum flows through Bermuda’s culinary story, shaping both its history and its signature drinks. Two cocktails, in particular, have become synonymous with the island: the Rum Swizzle and the Dark ’n Stormy.
The Rum Swizzle, often called Bermuda’s national drink, is a vibrant mix of Goslings rums, citrus juices, and falernum, served over ice. The drink is widely associated with the historic Swizzle Inn, where it was first served in 1932. Its name is believed to come from the swizzle stick tree, whose branches had protruding ends that were perfect for mixing the cocktail.
Equally iconic, the Dark ’n Stormy pairs Goslings Black Seal Rum with Barritt’s Ginger Beer. With dark rum floating atop golden ginger beer, the drink evokes storm clouds rolling over the sea — bold, simple, and unmistakably Bermudian.
Cocktail culture thrives beyond these classics, with mixologists crafting inventive variations that honour tradition while embracing creativity.

From prix-fixe menus and signature dishes to live island rhythms, Bermuda Restaurant Weeks invites diners to savour the best of the island’s culinary scene — one unforgettable course at a time.
BERMUDA TOURISM AUTHORITY plays the consummate host throughout the year, and winter is no exception. As cooler temperatures settle in, it’s time for Bermuda devotees to pack their colourful cashmere and hearty appetites for Bermuda Restaurant Weeks — an annual culinary celebration that will soon mark its 17th year.
Each year during a one-month stint between January and February, Bermuda showcases her culinary prowess and incredible restaurant scene by offering two- and three-course prix-fixe menus at attractive prices. With these offerings, foodies can dive into a delightful world of custom chef-inspired menus, signature events, and complimentary live entertainment.
Drafting a dining agenda for Bermuda Restaurant Weeks is a culinary dream. Whether
you select restaurants based on the location of your accommodations, cuisine, or places already on your “short list,” everyone wins in this mouth-watering scavenger hunt.
Bermuda Tourism’s artful website makes meal planning a breeze. There, you will find a list of participating restaurants and bars formatted in a grid design for easy menu browsing. Simply select Lunch, Cocktails, or Dinner, with the latter offering the option to choose a desired price point. This search process is ideal for guests looking to satisfy a certain craving, adhere to dietary restrictions, or simply stay on budget.
Bermuda Tourism has also recently introduced a Restaurant Weeks Passport available at any Visitor Service Centre. Now, any diner with three stamps on their passport receives a Bermuda-branded gift bag, offering even more incentive to expand one’s culinary horizons.
During Restaurant Weeks, lunch is a two-course meal, typically including an appetiser and an entrée. Dinner menus are three courses, including an appetiser, entrée, and dessert. As each establishment crafts its own unique menu, no two are alike. The fare served is limited only by each chef’s imagination — with an observable nod to heartier fare, considering the season.
A starter at lunch hour might consist of a hot bowl of Bermuda fish chowder, a refreshing panzanella, or island tacos filled with local wahoo. Appetisers become more indulgent at the dinner hour, including options such as escargot, arancini, coconut shrimp, and honey garlic ribs.
Entrées for both lunch and dinner will feature chef selections made with fresh local fish, lamb, steak, short ribs, and pasta alongside comforting curries, Wellingtons, and savoury pies. Patrons can easily locate Bermudian and Portuguese-influenced dishes, as well as menus catering to French, Indian, Italian, and Asian fusion cuisines.
In 2026, Bermuda Restaurant Weeks ran from January 16 to February 16. More than 50 restaurants participated across the island, making it a great chance to explore Bermuda’s culinary scene. For more information and 2027 dates, visit www.gotobermuda.com/ restaurant-weeks.
Last but certainly not least, desserts run the gamut from simple to delightfully decadent, starting with fruit-based desserts to cleanse the palate. Sweets will include pies and pavlova with fluffy meringue, molten chocolate delights, Bermuda rum cake, and sticky toffee pudding, to name just a few.
The performers providing the soundtrack for Bermuda’s annual culinary celebration include vocalists and instrumentalists across a range of musical genres, spanning from classic jazz to reggae, all of them Bermudian. This year’s event featured the Tino Martinez Quartet, Rivah, Sir Clarke, Katie Ewles, Serilina, and the Violin Sisters.

Bermuda’s food culture adds richness to any visit.
Festivals That Celebrate Flavour
Bermuda’s love of food extends into a full calendar of culinary events and festivals that draw locals and visitors alike.
Bermuda Restaurant Weeks, typically held from January through February, is one of the island’s most anticipated culinary celebrations. Participating restaurants offer special prix-fixe menus, giving diners the opportunity to sample top-tier cuisine at accessible prices.
Taste of Bermuda, held each autumn in Hamilton, brings together chefs, wineries, and food producers for tastings, competitions, and demonstrations. The event showcases both local talent and international influences in a lively, social atmosphere.

BEERMUDA has quickly become one of Bermuda’s most spirited annual festivals, inviting visitors to celebrate the artistry of local and international craft beer alongside live music and laid-back island vibes. Hosted by Bermuda Craft Brewing Company, the event blends tasting sessions with DJs and live performers, while daytime activities — from lawn games and bouncy castles to face painting and a mechanical bull — make it equally appealing for families.
Other gatherings, including the Bermuda Annual Agricultural Exhibition — often called the Ag Show — spotlight local farming, fishing, and artisanal food production, reinforcing the island’s commitment to sustainability and quality.

Grown Close to Home
Despite its reliance on imports, Bermuda places great value on local agriculture and fishing. Pockets of farmland and banana trees dot the landscape, particularly noticeable along main roads in some parishes.
Thanks to its mild climate and proximity to the Gulf Stream, Bermuda supports year-round growing. Alongside traditional farming, hydroponic methods have become increasingly popular, allowing farmers to maximise limited space.
Seasonal fruits include loquats, guava, Surinam cherries, passion fruit, pawpaws, and prickly pears. Vegetables familiar to visitors from North America and Europe also thrive, though planting and harvesting seasons may differ.
No discussion of Bermudian produce would be complete without the legendary Bermuda onion, prized for its sweetness and mild flavour. This heritage crop remains a point of local pride and still appears in seasonal dishes across the island, from fresh salads to classic fish sandwiches.
Farmers markets typically operate from November through March, with vendors selling produce at the Bermuda Farmers Market within the Bermuda Botanical Gardens or at farm stands across the island. Shoppers can also find local honey, goat cheese, loquat jam, and sherrybased hot sauces.
Fresh fish is sold at local markets and roadside stands year-round, while spiny lobster appears during its regulated season from September to March.

Dessert in Bermuda often circles back to rum. The island’s famous rum cake is rich, moist, and deeply flavoured, making it a popular souvenir and celebratory treat. Infused with dark rum, it perfectly captures Bermuda’s love for indulgent yet comforting sweets.
Beyond cake, visitors will find homemade fudge in a variety of flavours, ice creams featuring tropical fruits like mango and guava, refreshing sorbets, and pastries from local bakeries. Whether enjoyed after a long meal or as a midday treat, Bermuda’s desserts provide a satisfying finish.
One of Bermuda’s great pleasures is dining against a backdrop of natural beauty. Many restaurants embrace alfresco settings, allowing guests to enjoy ocean breezes and sweeping views.
From sunrise breakfasts by the beach and leisurely seaside lunches to candlelit dinners overlooking dramatic limestone cliffs, the mesmerising scenery enhances every meal. Casual cafés and refined dining rooms alike take advantage of Bermuda’s setting, ensuring that food and environment work hand in hand.

Bermuda’s luxury resorts elevate dining with world-class cuisine and attentive service. Guests can choose from elegant fine-dining restaurants, relaxed beach barbecues, decadent Sunday brunch, and curated tasting menus featuring locally sourced ingredients.
For something truly memorable, exclusive experiences such as private beach dinners or sunset cruises with gourmet meals allow diners to savour Bermuda’s flavours in intimate, unforgettable settings.
British influence is perhaps most elegantly expressed through afternoon tea. This tradition, dating back to 19th-century England, has been warmly adopted in Bermuda.
Served in hotel lounges, garden cafés, and historic settings, afternoon tea typically includes finger sandwiches, freshly baked scones with clotted cream and jam, and an
assortment of pastries. While formal attire isn’t required, smart-casual dress is encouraged, and gentle etiquette — no clinking spoons or raised pinkies — adds a touch of refinement.
Afternoon tea offers a quieter, more contemplative way to experience Bermuda, blending sophistication with island ease.
For travellers eager to engage more deeply with Bermuda’s food culture, there are countless ways to go beyond traditional dining. Foodfocused experiences invite visitors to connect directly with the people, places, and practices that shape the island’s cuisine.
Guided food tours offer a curated introduction to Bermuda’s flavours, blending tastings with storytelling as guests move between neighbourhood eateries, bakeries, and markets. These tours often include behind-the-scenes insights into how iconic dishes are prepared, along with conversations about the cultural

significance of ingredients like wahoo, cassava, and local peppers. For first-time visitors, it’s an excellent way to understand how food fits into everyday Bermudian life.
Those drawn to the water can take part in private fishing charters, where the experience begins with casting a line and ends with a freshly prepared meal. After a successful catch, local chefs at many restaurants will transform the day’s haul into beautifully executed dishes, allowing guests to savour seafood at its absolute freshest. It’s a uniquely Bermudian experience — one that highlights the island’s deep respect for the ocean and its resources.
Farm visits and agricultural tours provide another layer of appreciation. Meeting local farmers, learning about hydroponic growing methods, and tasting produce straight from the source reinforces the island’s commitment to sustainability. These encounters underscore how innovation and tradition coexist, ensuring Bermuda’s food system remains resilient despite limited land and imported goods.
One of Bermuda’s great pleasures is dining against a backdrop of natural beauty.

Cooking classes and chef-led demonstrations are also gaining popularity. Hands-on experiences range from traditional Bermudian cooking and walking tours in Devonshire, where guests prepare a codfish and potato breakfast alongside a local host, to seasonal guest chef events at hotel restaurants like The Pink Beach Club at The Loren. These experiences allow participants to try local favourites first-hand, turning skills and stories into lasting memories.
Taken together, these immersive opportunities reflect the true depth of Bermuda’s culinary identity. Food here is not just something to be consumed — it’s something to be explored, shared, and understood. Whether through conversation, collaboration, or simple curiosity, engaging with Bermuda’s food culture adds richness to any visit and leaves travellers with memories that linger long after the last bite.

Executive Chef Carlos Meléndez brings global flavour, island freshness, and creative finesse to The Reefs Resort & Club’s newly reimagined dining experience.
CHEF CARLOS MELÉNDEZ grew up in Costa Rica, nearly 2,000 miles from the islands of Bermuda. As a child, he fondly recalls cooking cakes and pies with his “Granny” and the sweet delight of getting the last lick of icing from the bowl. Later, as a young man eager to travel the world, he found his calling in a creative and highly disciplined profession: the art of cuisine.
Since launching his career in Central America, first in Costa Rica and later in Belize, Chef Meléndez has built an impressive culinary reputation in hospitality. His work immersed him in the diverse flavours of the Caribbean, the U.S. Virgin Islands, Turks and Caicos, and the Bahamas, prior to landing in Bermuda.

In 2025, when The Reefs unveiled its newly renovated restaurant, Solaris, Carlos Meléndez was named executive chef. Referring to Bermuda as “the most beautiful island across the Atlantic,” Chef Meléndez cherishes his newest challenge.
As an island chef, Meléndez is well accustomed to procuring only the very best ingredients, including imports. “As per the conditions of the island,” he shared, “our ingredients are imported from different countries across the globe by several great vendors. However, we source great seasonal produce from local farmers.”
As a vital part of his culinary work, he recognises the quality of agriculture in Bermuda and the island’s “well-developed farming schedule.” Of particular importance is the “unbeatable freshness that local ingredients provide” to Meléndez’s menus, whether it be fresh-caught fish, farm-grown produce, or Tucker’s Farm goat cheese. His purveyors include popular local farms as well as individuals with a keen talent for fishing or growing crops.

As a well-travelled chef, Meléndez was delighted to learn upon arriving that Bermuda is home to a thriving culinary scene. “What I have found is that this is a vibrant foodie island, so there are many great restaurants, constant events, and there is always something happening somewhere.”
His passion for the art of cuisine shows. Solaris boasts a gorgeous menu with dishes to satisfy every palate and a scenic location that is simply to die for. The menu opens with showstopping starters, from Bermuda Fish Chowder and Wagyu Beef Tartare to Truffle Mushroom Arancini and Grilled Pear with serrano ham, nut-crusted fried brie, fresh herbs, and hot honey. Seafood shines with fresh-caught salmon, octopus, Popcorn Lobster, Lobster Catalina, and an indulgent Lobster Croque Monsieur, while poultry and beef lovers can choose from chicken, duck, veal, and premium cuts of steak, plus Lamb Shank Pot Pie. To finish, Chef Meléndez offers an internationally inspired dessert selection, highlighted by Carrot Cake, Rose Water Pavlova, traditional Bread Pudding, and a tempting line-up of after-dinner drinks and sipping spirits.
The chef’s personal favourites from the menu are the Arugula Salad with Parmesan, pine nuts, and dried cherry tomatoes, as well as the local fish and Grilled Octopus.

When asked what draws guests to dine at Solaris, Meléndez shared, “Our restaurant is a combination of great views, great service, very good food — ‘sexy-looking food,’ like one of our chefs always says — and great people always ready to amuse you.”
When dining at The Reefs, don’t be surprised if you are greeted by the chef himself. He believes that meeting his guests is “part of the experience of Solaris,” and he is always eager to hear about patrons’ experiences and share the creativity behind his menus.
When not on the clock, Chef Meléndez can be found touring Bermuda on his moped, enjoying a round of golf, and savouring his favourite island dishes.

This seasonal Bermudian favourite blends childhood memories with bright, tangy flavour — and the promise of spring.
AS A CHILD, I often came home with the lingering taste of loquats on my tongue and bright orange stains splashed across my school shirt. Loquat season was something we anticipated all year. The trees would suddenly grow heavy with fruit, their branches dotted with beautiful globes of yellow and orange.
If you ever went loquat hunting with friends, you know what usually followed — loquat fights. We would search for the ripest, softest fruit. The juiciest loquats became our ammunition. We flung them at each other’s shirts and backs, watching them burst into sticky splashes. The loser was the one most covered in dripping pulp and seeds. Looking back, it’s surprising no one lost an eye. We never worried about anything except who had the best aim and the fastest throw. But what exactly is a loquat? It’s not the easiest fruit to describe. If I had to compare it to something familiar, I’d say it
Loquats are not only delicious; they’re also packed with vitamin A and other nutrients.
tastes like a blend of apricot and pineapple when fully ripe. The flavour is sweet yet slightly tangy — bright and refreshing without being overwhelming. When ready to eat, the fruit is a deep orange and slightly soft to the touch. Bite into a perfectly ripe one and you’re met with juicy, fragrant flesh. Pick one too early, though, and you’ll quickly regret it. A yellow, underripe loquat has a sharp, bitter taste that lingers far too long in your mouth.
Loquats are not only delicious; they’re also packed with vitamin A and other nutrients. Originally from southeastern China, the fruit now grows in many parts of the world. In Bermuda, loquats are put to good use. They’re turned into jams, jellies, chutneys, pies, cakes, and our all-time favourite — liqueur!
The only sad part about loquats is that they appear just once a year, in winter. But when they arrive, we celebrate. Their sweetness is more than a treat — it’s a promise that spring is just around the corner.

A hidden Hamilton hotspot channels speakeasy charm with inventive cocktails, tapas, and an irresistible air of mystery.
THE RESURGENCE OF THE SPEAKEASY has hit Bermuda, with several island establishments now seeking to satisfy guests’ desire for a forbidden night out, complete with craft cocktails, live music, and a tangible sense of intrigue.
History tells us that the speakeasy originated during the years of Prohibition in the United States, spanning from 1920 to 1933, when drinking alcohol was strictly forbidden in American society. Those still intent on drinking spirits, socialising, and listening to the exciting emergence of jazz music had to head underground — sometimes literally.
All around America, secret clubs and lounges began to arise behind or below reputable business fronts for the sole purpose of entertaining party seekers. Guests were told to “speak easy,” lest the police hear them and learn of these
discreet establishments.
Ironically, during this restrained period, alcohol was flowing freely and legally in Bermuda. In fact, Bermuda was home to “rum-runners” who supplied forbidden spirits to the United States during Prohibition, thus inadvertently fuelling the success of the speakeasy.
Evolve is a modern take on this clandestine vintage establishment, retaining all the allure of a seductive, dimly lit lounge while adding modern elements such as imaginative cocktails, light bites, and an ambient experience that is perpetually changing. Live entertainment takes place weekly at Evolve, while the delightful Sunday Brunch occurs once per month.
Highlights on the cocktail menu include fresh takes on retro classics, such as an Old Fashioned or a Lemon Drop Martini, as well as new spins on

trendy drinks like an espresso martini. Signature drinks, mocktails, and shots are each crafted by mixologists with a wide range of fresh ingredients and bold flavours at their disposal. Traditional cocktails, wine, and beer are also available.

To complement their extensive selection of libations, Evolve serves tapas — a variety of small plates that make the perfect accompaniments to these artful, decadent cocktails.
On the heartier side, appetisers include Spiced Chicken Wings, Seasoned Fries, Marinated Lamb Skewers, and Beef Wellington Bites, while the lighter fare includes a Caesar Salad with Chicken, Mozzarella-Stuffed Peppers, and a Curried Chickpea Salad on homemade almond crackers.
Evolve is located within the City of Hamilton on the second floor of the Bermudiana Arcade on Queen Street.
Patrons seeking admission to the bar and restaurant should note that the entrance is hidden in plain sight.
Cheers to mystery and discovery!
