THE NEW INTREPID RESTAURANT AT THE HAMILTON PRINCESS IS A VENUE FIT FOR THE REFINED TASTES OF 007 HIMSELF, AND THE RESTAURANT’S NAME IS A NOD TO THE REAL-LIFE INSPIRATION FOR THE DEBONAIR BRITISH INTELLIGENCE AGENT.

 INTREPID, WHICH BORROWS ITS MONIKER FROM SIR WILLIAM STEPHENSON’S BRITISH INTELLIGENCE CODE NAME, EMBODIES THE STYLE, GRACE, AND SOPHISTICATION OF HIS PROTÉGÉ’S FICTIONAL CREATION.

SIR WILLIAM STEPHENSON, a British intelligence agent who established Camp X, a training school to prepare covert agents for clandestine operations, is widely believed to be the inspiration for the James Bond character created by Ian Fleming — who himself is believed to have trained at Camp X. Stephenson went on to head the Allied Forces’ Atlantic censorship station based out of the Hamilton Princess during World War II. He took up residence in Bermuda after WWII, and eventually passed away at his home in Tucker’s Town, called Goldeneye Estate.

Hamilton Princess’ Intrepid, which borrows its moniker from Stephenson’s British intelligence code name, embodies the style, grace, and sophistication of his protégé’s fictional creation. Exclusively serving dinner, Intrepid is an upscale steak, seafood, and raw bar restaurant spearheaded by the Hamilton Princess’ new Executive Chef de Cuisine, Antwan Ellis.

Intrepid is situated in the hotel’s Gazebo Wing, offering a refined steakhouse atmosphere with panoramic harbour views and stylish floor-to-ceiling art deco décor. The new menu’s focus is on steak, including expertly dry aged prime cuts. Seafood fans will also find something to love amongst Intrepid’s temaki sushi station and raw bar, which specialises in oysters, caviar, and freshly caught local fish.

Menu highlights include Lump Crab Cake with Cajun

Remoulade; the Intrepid Maki Roll with lobster, shrimp tempura, and lemon butter; Oysters Rockfeller; and, to finish, the Goldeneye Baked Apple Galette. End your night in James Bond fashion with an Intrepid Martini made with Absolut Elyx Vodka, lemon peppercorn Lillet, and Castelvetrano olive served — how else? — Shaken, not stirred.

Fresh Catch

Bermuda’s crystal-blue waters are home to some of the freshest ingredients around. If you’re here from September through March, when the spiny lobster can be harvested, be sure to give this crustacean a try. This species doesn’t have claws, unlike its Maine counterpart; but there’s plenty of meaty goodness in the tail.
