Dom’s team was amazing but also all the subcontractors he uses. It was a really enjoyable work site. We’d drop by and everyone was really friendly, they were really invested in our vision and our desires for the place. They went the little extra steps with absolutely everything and we’re ecstatic with the result.

Dr Nicholas Milton AM and the Willoughby Symphony Orchestra on the steps of the Concert Hall at The Concourse, Chatswood. Inspired by traditional European designs, the visually spectacular and acoustically superb Concert Hall can seat up to 1000 music lovers.

TO JOY AN ODE

Celebrating 60 years of Willoughby Symphony Orchestra

For the past six decades, the Willoughby Symphony Orchestra has been striking a chord at the heart of the north shore. What began in 1966 as a local ensemble has become one of Australia’s oldest orchestras where world-class talent meets community spirit in perfect harmony.

Taking centre stage is the WSO’s Chief Conductor and Artistic Director, Dr Nicholas Milton AM. Under his baton, the orchestra has fine-tuned its artistic standards and expanded its audience, delivering the thunder of Tchaikovsky and the sweep of Wagner as well as delighting families with film scores and accessible concerts designed to spark a lifelong love of music. It’s this versatility that keeps the orchestra in perfect pitch with the northside community.

“The Willoughby Symphony Orchestra is made up of musicians who love what they

“AS AN ORCHESTRA, IT’S OUR JOB TO CREATE MOMENTS IN TIME THAT OPEN PEOPLE’S HEARTS”

do and want to bring joy to the community,” Dr Milton tells northsider. “There’s a word for it in German – Spielfreude – the joy of playing - and it spills from the stage to the audience. As an orchestra, it’s our job to create moments in time that open people’s hearts; to become an oasis where you can switch your phone off and completely immerse yourself in the experience.”

Nicholas’ relationship with the WSO spans nearly four decades. A talented violinist from an early age, he made overtures to join the ensemble and started playing with the orchestra as a teen while studying at the Sydney Conservatorium of Music. By 19, he was appointed Australia’s youngest-ever concertmaster of a capital city orchestra at

the Adelaide Symphony Orchestra. He pursued further studies at the Juilliard School in New York and holds a Doctor of Musical Arts degree from the City University of New York. In 2016, he was appointed a Member of the Order of Australia for significant service to the arts as a musician, conductor and artistic director and in the same year, he became the first Australian conductor to be nominated for a Grammy Award for his recording of Piano Concertos by Grieg and Moszkowski with Joseph Moog.

Today, despite a packed international schedule of appearances in his overseas role of Chief Conductor and Artistic

“IT’S SO SPECIAL TO HAVE AN ORCHESTRA LIKE THIS RIGHT HERE AT THE HEART OF THE NORTH SHORE”

Six decades of musical delight

The 80 musicians of the WSO are often joined on stage by the Willoughby Symphony Choir, widely recognised as the one of Australia’s finest community choirs. For more information on the WSO’s 60th anniversary program, to book tickets and become a subscriber, head to their website willoughbysymphony.com.au

Director of the Göttingen Symphony Orchestra in Germany, Dr Milton remains passionately committed to the Willoughby Symphony Orchestra, which he has led for 25 years.

“The WSO has evolved from a top-notch community orchestra to a community orchestra that plays at a professional level,” he says. “The musicians are remarkable and it’s so special to have an orchestra like this right here at the heart of the north shore.”

With a commitment to encourage others to explore their musical passions, education and accessibility are central to the WSO’s mission. Initiatives such as the Young Composer Award give emerging Australian talent a platform to be heard alongside established masters. For over two decades, the program has been a springboard for the next generation, with winning works performed live as part of the orchestra’s subscription season.

Dr Nicholas Milton AM has been conductor of the WSO since 2001

Audiences can also expect to see the WSO joined on stage by acclaimed guest artists from around the world for performances that blend local identity and global artistry.

“We bring people into the family of the orchestra and see them blossom when they create and perform,” Nicholas says. “It’s incredibly fulfilling to be part of that.”

With the support of Willoughby City Council, the orchestra also reimagines concert experiences, particularly for younger audiences.

“The Council are so creative,” Milton enthuses. “We’ll come up with ideas for a children’s series for example and they will explode the concept with all sorts of wonderful and special ideas - such as involving clever arts and crafts activities. My jaw always drops when I see what they put together to complement the music.”

Popular recent performances have included live scores to films such as Disney’s Frozen to introduce children to the magic of music.

With tech advances bringing new ways for audiences to connect with the WSO, locals can expect more innovations.

“We’re excited to continue engaging with the next generation,” Nicholas says. “There’s lots more we can do and I’m looking forward to creating programmes that reach even more parts of our community.”

The WSO’s celebratory 2026 season is currently hitting the right notes with locals as both a retrospective and an overture to the future. Audiences can enjoy a rich program spanning classical showstoppers, cinematic favourites and engaging family productions.

“Our Last Night Of The Proms event in August is always a highlight,” Milton says. “Everyone comes together and the audience gets very involved.”

“Our musicians play with a joy that lifts the room,” he concludes. “That’s our purpose: to make music that resonates beyond the stage to open hearts and enrich souls.” l

Neighbourhood TREASURES

Willoughby artist Julianne Abercrombie finds inspiration in familiar places

Clusters of berries gleam like jewels, gentle rosettes of cream unfurl like flowers and golden pastries glisten.

At Ganache Patisserie in Castlecrag, the housemade sweet treats are always deliciously picture perfect. The eye-catching (and mouth watering!) displays at the much-loved Edinburgh Road institution inspired local artist Julianne Abercrombie to beautifully depict the bakery’s colour and warmth in one of her latest paintings, which we’ve been lucky enough to feature on our cover.

“We’ve been going to Ganache for almost 15 years now and it’s more than a café,” Julianne tells northsider “You see the same friendly faces and they become part of your life. I really love the way that this business generates this feeling of community connection. The bakers are extraordinarily talented too - it’s hard not to be inspired by what they create on a daily basis - it’s all art!”

Wanting to share the scrumptious spirit of Ganache in her watercolour, Julianne posted a photo of the piece to her Instagram, @bongoartworks. It was here that Ganache’s co-owner Vianney spotted the piece. “The next time I was in getting coffee, he told me he loved the painting and asked to display it on their wall!” Julianne enthuses. “I was thrilled.”

A life-long northsider, and a Willoughby resident for almost 17 years, Julianne began to develop her art practice during long service leave from her job teaching English and Modern History at a local high school.

“I’ve always been interested in art and was always making something,’ she says. “While I was on leave, I had the opportunity to get more involved with my art. It made me realise I could invest my time differently. Now, even if I just do half an hour of sketching or drawing after work, I can relax and leave the work day behind me. That’s a real gift.”

Signing up for sculpture classes at the Willoughby Arts Centre, Julianne also began

Clockwise from left: Artist Julianne Abercrombie with a bird sculpture and Saxon, her Bernese Mountain Dog; a portrait of Julianne’s late pet and local identity, Bongo; a carved sea turtle; Julianne at the East Lindfield Markets and her rope sculpture, Downward Facing Dog

to carve out new skills. Encouraged to embrace the unfamiliar and take risks by her teacher Richard Byrnes, she started chiselling wood, shaping stone and even wrapping rope into expressive forms. One of her most ambitious works, the life-size ‘Downward Facing Dog’ rope sculpture, took six months to complete and was awarded Highly Commended at the Warringah Art Prize.

Animals and nature are central to Julianne’s broader body of work.

“They create such joy and I want to share that feeling with people through my art,” she says. “When I’m exhibiting at local markets, I love seeing kids’ faces lighting up when they spot their favourite animal or bird in my pictures. It makes me so happy to be able to use art to connect in that way.”

As well as markets and selling pieces via online art gallery, Bluethumb, Julianne’s art is often exhibited around the local area and

across NSW, with multiple pieces appearing at renowned events including the Warringah Art Prize, Ku-ring-gai Wildflower Garden Sculpture Walk, Sculpture in the Garden in Mudgee and the Hunters Hill Art Exhibition.

By capturing the bright, welcoming essence of Ganache Patisserie on paper, Julianne has framed a feeling that goes to the heart of the community she loves to celebrate.

“We live in the friendliest neighbourhood,” she enthuses. “When I take a walk in Harold Reid Reserve or through Castlecrag...seeing the birds, smelling the bush, hearing the Harbour…without fail, I’ll come up with an idea for a new piece. I’m always reminded of how lucky we are to have all this on our doorsteps and I’m driven to share the joy that it inspires.” ●

RAISING THE

How a group of locals are shaking up Castlecrag’s hospo scene

The small but spirited Bar 81 on Edinburgh Road started life the way many good ideas do: over a drink.

Friends and locals Lawrance and Caroline Rykos, and Tim and Amie Hardwick, came together with a shared sense that Castlecrag was missing something.

“We all felt that we were missing a great local spot…a place where people could come together easily and feel at home,” Tim says. “There’s always been a strong sense of community here but the loss of The Quadrangle has left a noticeable gap, particularly in terms of places to gather. Bar 81 is our small way of helping stitch that back together. It’s about giving people a way to bump into neighbours and spend time locally rather than heading elsewhere.”

“WE JUST WANTED TO CREATE SOMETHING HONEST, WELL CONSIDERED AND GENUINELY LOCAL”

“Once the idea of opening a bar together took hold, it moved pretty quickly from “we should do this one day” to “we’re doing this now,” he continues.

Together, the Rykos and the Hardwicks, who became friends when their kids started Willoughby Public School together, set out to build more than just a bar. “We have similar views on what makes a venue work – simplicity, authenticity and a bit of soul,” Lawrance says. “We knew we weren’t trying to reinvent hospitality; we just wanted to create something honest, well-considered and genuinely local. A place where ‘good vibes only’ isn’t a throwaway line, it’s genuinely how things are done.”

With professional experience across design, hospitality, property and engineering, the two families – and their friends – got to work, with Bar 81 opening its doors in The Crag’s former real-esate office earlier this year.

The venue unfolds in chapters. A front bar leans fully into the Mexican spirit, lively and social, while the mid-room nods to the building’s mid-century P&O façade.

BAR

Inside, the walls are plastered with pages from vintage interior design magazines. They’re equal parts texture and conversation starters, collected over many years by Lawrance’s sister and finally given a home.

There’s a discreet “Side Hustle” room for private tastings, gatherings and the occasional poker night, and a covered courtyard that’s always a fiesta. Street seating in the alleyway catches the afternoon sun and invites locals to linger a little longer.

On the drinks menu, Margaritas are raising spirits, followed by sunshine-in-a-glass Aperol Spritzes and classic cocktails made just right, like Negronis, Martinis and Old Fashioneds.

There’s also ice-cold beers on tap and a wine list that keeps things approachable.

The food menu features snack-led, shareable items designed to keep conversation flowing. Think crowd-pleasers including gildas, Sal Sala fries, croquettes, char-grilled pork belly chorizo, Jamón with truffle Manchego

and pickles, plus a charcuterie board made for sharing. Amie’s guacamole has quickly become a local favourite and collaboration with Sam Young’s neighbouring bistro S’More brings an extra layer of flavour with oysters, scallops, spring rolls and ribs.

“We’re working with great local operators who care about quality and community,” Lawrance says. “It’s about building a network of good people doing interesting things and supporting each other. We want our customers to discover something new every time they visit.”

Ultimately, Castlecrag’s Bar 81 is a small bar witha big heart backed by good drinks, good company and good times. “The best bars are always the local ones,” Tim concludes. Cheers to that! l

Help shape the future of

lives HEALTHCARE

How supporting the NORTH Foundation transforms

Medical research, innovative treatments and compassionate care are transforming healthcare and saving lives. Before the end of the financial year, the NORTH Foundation is calling on the community to help shape the future of healthcare with a tax-deductible donation. For Carolyn Talbot, the impact of that research is deeply personal.

“Life becomes even more precious when you hear the words ‘you have cancer’,” Carolyn says.

First diagnosed with breast cancer in 2008, Carolyn faced a very different experience to her mother, who died from the disease years earlier. Advances in early detection, tailored therapies and new medications meant Carolyn could access more personalised treatment and recover with minimal side effects.

More than a decade later, Carolyn was diagnosed with pancreatic cancer.

“The care I received and the advances in treatment gave me hope when I needed it most,” she says.

Under the care of Professor Stephen Clarke OAM, senior medical oncologist at Royal North Shore Hospital, Carolyn received a personalised treatment plan that included surgery followed by adjuvant chemotherapy.

“Neoadjuvant or adjuvant therapy has become standard care on the North Shore campus,” Professor Clarke explains.

“Treating cancer cells before they spread has helped transform outcomes for patients. Our multidisciplinary approach has led to the best pancreatic survival rates in Australia.”

Six years later, Carolyn remains cancer-free.

“I am deeply grateful to be living a full life,” she says. “Medical research and innovative treatments gave me that chance.”

Through donations, the NORTH Foundation supports leading medical research, equipment and innovation that improves diagnosis, treatment and patient outcomes. In the past year alone, philanthropic support has helped deliver significant progress, including new cancer care initiatives, advanced surgical technology, enhanced rehabilitation facilities and improved training for clinicians.

As the end of the financial year approaches, the NORTH Foundation is urging Australians to support the next wave of breakthroughs. A tax-deductible donation before 30 June will help fund the discoveries and treatments that give patients hope. ●

Local foodie, TV presenter and cookbook author

Will Stewart is currying favour with this recipe...

Warming Indian spices are the inspiration for my Winter recipe. You can make this dish vegan-friendly really easily by using smoky, charred eggplants, potatoes, or even large field mushrooms to replace the lamb, and switching the meat-based stock for a vegetable alternative. Serve with some homemade or store-bought naan and steamed rice.

Wishing you all a warm Winter!

shanks all over until golden. Remove the shanks and set aside.

• Add some more oil to the pot and reduce the heat to medium and add in the onions. Cook until they begin to colour then add in the sliced ginger, sliced chillies and sliced garlic and cook for 2-3 minutes.

• Put the lamb shanks back into the pot with the onion mixture and then add the cinnamon stick, turmeric, cardamom pods, crushed coriander seeds, cumin, curry leaves and desiccated coconut and cook for a further 2 minutes.

• Add the chopped tomatoes, tomato paste, chopped coriander then pour in the stock

and coconut cream and bring to the boil. Cover with the lid, reduce the heat to low and cook for 2.5 hours.

• Remove the lid and the lamb shanks and set aside. Remove the cinnamon stick and using a stick blender, blitz the mixture to your preferred consistency. Reduce the mixture over a medium heat until it has thickened. Season with salt and pepper.

• To serve, place a shank on each plate and spoon over the sauce. Garnish with fresh coriander leaves and additional chillies if you like a bit more heat. Enjoy with some steamed rice or homemade naan to mop up all that delicious sauce.

The heart of the

COMMUNITY

Family recipes, nostalgia and neighbours all come together at

Papas Coffee

From toasted za’atar to caramelised onions, creamy tzatziki and silky olive oil, every item on the menu at Papas Coffee in Willoughby tells a story.

“Memory is probably our greatest source of inspiration,” owner Zeid Oweis tells northsider. “So many of our dishes trace back to moments from our childhood or family life. My mother was a wonderful cook, and the food she made wasn’t just nourishment, it was love on a plate. When we’re developing a new dish, a lot of the time we’re reaching back to the flavours and ingredients we were raised on. I think when food carries genuine heritage and is made with care, you can taste the difference. It’s more than just a meal, it becomes an experience.”

“MEMORY IS PROBABLY OUR GREATEST SOURCE OF INSPIRATION”

The Frenchs Road café delivers dishes that transport tastebuds across the Middle East and the Mediterranean.

“We draw deeply from the rich traditions of the Levant and reach across to the bold, spice-driven kitchens of North Africa, Turkey and beyond,” Zeid, who’s originally from Jordan, explains. “These are some of the world’s oldest and most celebrated food cultures, built on ingredients like sumac, za’atar, harissa, preserved lemon, tahini, and of course, exceptional olive oil.”

Before taking the reins at Papas 18 months ago, Zeid spent years as a film producer and photographer. He also owns an olive farm in Jordan and produces his own olive oil.

“I’d always dreamed of owning a café and bringing honest food and exceptional coffee together,” he says. “When the opportunity came up at Papas, I knew the time was right.”

Even Papas’ most familiar dishes carry a personal twist. “The Mediterranean Smashed Avo might sound like a simple choice, but there’s so much heart behind it,” Zeid says.

“It starts with a café classic, but we’ve added Jordanian za’atar and our own olive oil, which we toast into the multigrain bread. It instantly takes me back to the sandwiches my mum used to pack in my school lunchbox. Add to that avocado, cherry tomatoes, cucumber, fresh mint and feta, and you have something that bursts with flavours and memory all at once. It’s the dish that best captures who I am.”

Another local favourite is Papas’ signature Palestinian Musakhan - slow-cooked chicken with caramelised onions, sumac and olive oil, served with pita and homemade tzatziki.

“It’s a dish that’s deeply tied to Palestinian culinary tradition,” Zeid says. “My mother made it all the time and it reminds me of home in the most profound way. Olive oil is also central to who I am and this dish celebrates it beautifully.”

The evolving menu also reflects Sydney’s multicultural energy, with flavours from around

the world sharing the same table. “The city’s rich mix of cultures, cuisines and communities constantly sparks new ideas,” Zeid says. “Our Winter menu is a perfect example, with dishes inspired by Turkish, Tunisian, Korean and Italian traditions sitting alongside Levantine classics.”

The seasonal refresh brings eight new dishes to the table. Think Turkish Chilli Eggs, Tunisian Ojja (Papas’ take on shakshuka), Truffle-Infused Three Mushroom Toast, Fish Tacos, Sesame Glazed Chicken Bao Buns and Armenian Arayes – crispy pita pockets stuffed with spiced minced meat.

“The people of Willoughby make this place so special,” Zeid says. “This community is truly extraordinary. From day one, there’s been such warmth and support from our locals. My vision for Papas has always been to be more than just a café. Our regulars can pull up a chair, slow down, catch up with a neighbour, read, linger…we’re here to be a sanctuary at the heart of this community. Seeing that vision come to life every single day is something I’m deeply grateful for.” l

From left: New Winter menu goodies include Tunisian Ojja and, above, Armenian Arayes, along with café classic and Zeid’s favourite, the Mediterranean Smashed Avo.

Ted the puggle, northsider’s ‘rover’ reporter, meets Shetland Sheepdog, Dr Skye, a Delta Therapy Dog specialising in Paediatrics at the Royal North Shore Hospital

“I thrive on having a job to do”

Ted: Thank you for taking time out from your busy day to chat, Dr Skye. Tell us about your job at the hospital.

Dr Skye: I visit the RNSH twice a week.

Mondays are for the Children’s and Adolescent wards, where I see all the children except those in isolation. I get lifted onto beds or cots as some children like me to lie close and cuddle, while others want to pat me and plait my long hair. I help calm children who are upset and keep them confident and happy during procedures. I also spend time with the medical team to reduce stress and share some puppy love during their busy day. I also visit the adult’s ICU Acute Cardiology Unit on Fridays.

T: How did you get involved in this work?

Dr Skye: I followed my older brother, Dr Sam, into the job. He was also a Sheltie and cared for hundreds of children in his 10 years as a therapy dog. I was assessed at 18 months old and passed all stages, including being

deemed suitable to work with children, which is an extra extension of therapy dog work. Sadly, Dr Sam passed away at the beginning of the year. He was my hero and taught me how to be a good boy and a good therapy dog. I miss him very much.

T: I’m so sorry to hear about Dr Sam. He sounds like a very good doggo. Tell us a bit about your paw-rent Robyn. How does she help you do such a great job?

Dr Skye: My mum is retired after a career in medical technology. She drives me to the RNSH, pushes the lift buttons and carries treats for patients to give me when I shake their hand. I couldn’t do it without her.

T: What do you learn in your training?

Dr Skye: I’ve learned to be very calm, gentle and careful, especially when I’m up on beds. I don’t go near arms with cannulas and stay away from IV lines. I always walk at Mum’s left side and I never jump.

Here’s me rocking my official Delta Therapy Dogs bandana, left, and pup and about with some of the RNSH theatre team on their well-deserved coffee break.

T: What do you like best about your job?

Dr Skye: I really love bringing smiles and calmness to patients and staff. As a Sheepdog, I thrive on having a purposeful job to do.

T: Are people surprised to see you doing your rounds at the RNSH?

Dr Skye: So many patients get excited when I walk into their rooms and some visitors are very surprised! Everyone wants a photo and families often say how wonderful it is to see their sick loved one smile again.

T: What do you love to do on your time off?

Dr Skye: I loooove going to the beach and to Tunks Park with my Sheltie friends. I’ve known them since I was a tiny pup.

T: Why are you so good at helping people?

Dr Skye: I think it’s because I’m calm, gentle and I really love being around people. I just want to make them feel better.

T: If another doggo wanted to help people feel a bit better, what should they do?

Dr Skye: To be assessed as a Delta Therapy Dog, you need to be at least 18 months old, very friendly, calm and obedient. You’ll need to pass different challenges you might face in the role and once qualified, you and your paw-rent work as a team and are assessed regularly. Animal MATTERS

Independently owned, Chatswood Veterinary Clinic has been your local vet since 1988. Dr Lesa Potten and her team offer a full range of veterinary services in a loving & caring environment.

Dental Care Matters

Did you know dental disease is the most common illness affecting pets? It doesn’t just cause bad breath, left untreated, it can affect your pet’s heart, kidneys and lungs. Around 80% of dogs and 70% of cats show signs of dental disease by age three.

Keeping Pets Healthy

Poor dental health can lead to various health issues including gum disease, tooth decay, jaw fractures and losing teeth. Bacteria from dental infections can enter the blood stream and affect organs like the heart and kidneys leading to serious health complications.

Dental Disease Signs

Symptoms can be subtle, especially in the early stages, and include bad breath, bleeding or redness of the gums, disccoloured or plaque-covered teeth. Many pets will continue eating even when their mouths are sore, so regular checks are essential.

Trusted Locally

We are the only independent, 100% vet-owned practice in Willoughby and the surrounding area. We promise gold standard care from an experienced and compassionate team who provide continuity of care and stress-free visits with same day consults. ●

FREE Dental Checks!

As part of our gold standard care commitment we offer FREE DENTAL CHECKS with a vet even if you’ve not visited our clinic before.

PPET CARE

Lesa Potten shares her

ets, like people, move through life stages, each bringing its own health needs and challenges. At Chatswood Veterinary Clinic, we believe that understanding these changes and partnering with you at every stage is key to helping your pet live a longer, healthier and happier life. Is my young pet developing as they should? In puppies and kittens, the focus is on growth and development. Vaccinations, parasite prevention and proper nutrition build the foundation for lifelong wellbeing, while regular vet visits ensure bones, joints and organs are developing correctly. It’s also important to discuss socialisation and desexing. If my pet seems healthy, do they still need check-ups?

Absolutely! Routine vet visits, including weigh-ins, dental checks and blood tests, can detect changes early and establish health benchmarks.

When does my pet become a “senior”?

Pets enter their senior years from around the age of seven and become more susceptible to conditions such as arthritis, diabetes, kidney disease, heart disease and cancer.

Why are blood tests so important?

Our furry friends can’t tell us when something’s wrong and often hide illness, especially cats. By the time symptoms appear, disease may already be advanced. Regular blood testing helps detect subtle internal changes early, when treatment is more effective.

Blood tests can help identify:

• Early kidney or liver disease

• Diabetes or blood sugar issues

• Anaemia or blood disorders

• Some cancers or chronic diseases What can I do to protect my older pet? Frequent vet visits, combined with routine blood tests, can dramatically improve quality of life. We’re offering new clients 50% OFF a Wellness Blood Test (valued at $180) when your pet (7+ years) has their first consult. FOR SELF-EMPLOYED AUSSIES

At Rate Money Chatswood, Branch Principal Cheeseth Chey is changing the game for self-employed borrowers

or many self-employed Australians, purchasing property can feel like something that needs to wait for “the right time.”

Between changing market conditions, running a business, and uncertainty around borrowing options, it’s common for plans to be put on hold before exploring what may be possible.

Understanding Your Options

Trying to perfectly time the market can sometimes stop people from taking the first step. While market conditions will always change, gaining clarity around your current position and exploring your options early can bring confidence to future decisions.

According to Cheeseth Chey from Rate Money Chatswood, one of the most common misconceptions among self-employed borrowers is believing they may have limited options available to them. “A lot of selfemployed people assume they need years of perfect financials before they can even consider purchasing property. In reality, there’s often more flexibility available depending on their individual situation.”

That’s where Rate Money Chatswood aims to help. By working closely with clients to understand how their income is earned, what their goals are, and what potential pathways may exist, both personally and through their business.

“TAKING THE TIME TO UNDERSTAND YOUR OPTIONS CAN BE INCREDIBLY VALUABLE”

“There’s no single ‘right time’ to purchase property,” says Cheeseth. “Every client’s situation is different, which is why taking the time to understand their options can be incredibly valuable.”

At Rate Money Chatswood, the focus is on helping clients understand what may be achievable based on their individual circumstances, whether they’re considering purchasing, refinancing or consolidating existing debts.

Opportunities Many Borrowers Overlook

• Refinancing May Create Greater Flexibility

Refinancing is not always just about securing a sharper interest rate. Depending on individual circumstances, it may help some borrowers restructure debts, improve cash flow, or better align their finances with current business and personal goals.

Rate Money Chatswood works with clients to review their existing lending and explore whether loan options exist that may be better suited to their needs today. “We often

speak to clients who feel financially stuck, when there may be opportunities they weren’t aware of to move to a more flexible structure.”

• Using Equity Strategically For self-employed people who already own property, equity may potentially support future plans. This could include renovations, investing, consolidating debts or exploring business opportunities.

The team at Rate Money Chatswood help clients understand how equity works and whether leveraging may support their long-term financial goals.

• Debt Consolidation May Help Simplify Finances Managing repayments across personal loans, business-related debts or credit cards can be difficult. In some situations, consolidating debts may help simplify finances and improve manageability of repayments.

• Flexible Alt-Doc Pathways Traditional lending processes don’t always reflect the way self-employed Australians structure their income. Depending on the lender and individual circumstances, there may be alternative documentation (Alt-doc or Low Doc) pathways available for eligible applicants. “Self-employed operate differently to PAYG employees, which is why understanding the range of options can make a big difference.”

Rate Money Chatswood specialises in helping self-employed borrowers navigate these more complex lending scenarios and understand the income documentation requirements and pathways that may be available to them.

• Starting the Conversation Earlier Many people delay speaking to a lending specialist because they assume they may not qualify or be ready. However, having a conversation earlier may help provide greater clarity around what loan options might be available now or what steps may help improve their position over time.

Whether it’s refinancing, exploring investment opportunities, understanding equity or navigating Alt-doc pathways, Rate Money Chatswood works closely with self-employed Australians to help them better understand their options and create strategies aligned to their goals. ●

of home A TASTE

From MasterChef to her kitchen table, Anastasia Zolotarev’s celebration of Eastern European cuisine goes full circle

Savouring the taste of a sour cherry or the aroma of coldpressed sunflower oil instantly transports north shore local Anastasia Zolotarev thousands of kilometres away.

“I’m back at my late babushka Lida’s dacha (summerhouse) in her village in Belarus, where people sell delicious sour cherries from the side of the road” she says. “Or I’m in the golden sunflower fields of Ukraine, where my father grew up.”

Cherished memories like these, and a deep love of Eastern European food, form the foundation for Anastasia’s first recipe book, Sour Cherries and Sunflowers

“When I was thinking about the title of the book, I wanted to express nostalgia of home, cooking and ingredients,” she says. “These two beautiful ingredients came to mind straight away. They’re very meaningful to me.”

Born in Belarus, Anastasia moved to Ukraine with her family after the Soviet Union dissolved before they relocated to

“RECREATING THE FLAVOURS OF HOME WAS ONE WAY OF BRINGING FAMILY CLOSER” >>
Anastasia Zolotarev, centre, with daughter, Isabella, on her knee, making blueberry varenyky with her babushka, Liana, and mum, Elena.

A family table

Recipes in Anastasia’s book include roasted stuffed peppers packed with cheese, sour cream and herbs; fried hand pies filled with eggs, spinach, spring onion and dill, and a honey, walnut and soured cream cake.

Australia when she was six. Settling on the northside, she attended Artarmon Primary School and remembers childhood weekends centred around the kitchen, gathering friends and celebrating the flavours of Eastern Europe.

“The kitchen was the heart of the family and food was one of the things that connected us immediately with our roots,” Anastasia says. “Back then you couldn’t WhatsApp or video call with family, so recreating the flavours of home was one way of bringing them closer.”

Her parents adapted traditional recipes with new ingredients, learning to make things like pot-set yoghurt, curd cheese and pâté from scratch. “If they couldn’t find specific ingredients, like blue fenugreek, a Georgian herb, for example, they’d adjust the recipe with the next best thing, adding coriander or more garlic,” Anastasia remembers. “Food is always evolving. It moves with people, it crosses borders and recipes adapt. Being in the kitchen, cooking, creating and enjoying meals with my family shaped so much of my childhood.”

“FOOD WAS ONE OF THE THINGS THAT CONNECTED US WITH OUR ROOTS”

Anastasia’s career with food began in her late 20s when she appeared as a contestant on the Channel 10 show, MasterChef Australia

“MasterChef was so immersive,” she says. “You’re doing life as normal then you enter this intense, creative space. I just wanted to absorb it all and learn as much as possible. I’m so grateful for that experience.”

Stints doing work experience at some of Australia’s best restaurants, including Firedoor and Quay, followed, with Anastasia experimenting with flavours and techniques far removed from the home-cooked food of her heritage.

It was a trip to visit Belarus and Ukraine with her mum in 2017 that became a culinary turning point. “When we arrived in Kyiv I just couldn’t believe all the food,” Anastasia recalls. “And it suddenly hit me that I’d forgotten the food of my childhood. Why didn’t we talk about the food culture of Eastern Europe more? That moment changed my life. I knew then that I wanted to write a recipe book to share this food and to celebrate family and culture.”

Sour Cherries and Sunflowers was born, a modern collection of recipes showcasing dishes from Belarus, Ukraine, Lithuania and beyond.

Anastasia in Belarus with her babushka Lida and Lida’s best friend, Monica.

“I was passionate about creating the book and wanted to have an understanding of each dish on a deeper level so I could write about it correctly,” Anastasia says. To do this, she enlisted the help of her parents and grandma, friends, and the local Eastern European community. “A lot of cooking and eating was involved!” she laughs. “I wanted to showcase original recipes in authentic ways, with the slight twists and adjustments that come as they evolve. It was a labour of love.”

Among the 80 recipes featured in the book, you’ll find recipes for iconic dishes including borscht, honey cake, and cabbage rolls, along with less well known dishes, such as fried hand pies packed with spinach, dill, eggs and spring onions, buckwheat pancakes and Ukrainian varenyky dumplings.

“I hope to inspire people to come together and give Eastern European food a go,” says Anastasia. “Food and cooking keeps memories alive. It’s how we can always bring our loved ones to the table, no matter where we are.” ●

MAGDA’S EURO DELI, ROSEVILLE

This Polish focussed deli is famous for its plum jam filled doughnuts! You’ll find lots of Eastern European ingredients and foods here, including hams, smoked sausages, pâtés and more. Go early as their homemade cabbage rolls and pierogi-dumplings are always snapped up quickly.

THE DELI HUB, ST IVES

A really great place to find ingredients for Eastern European cooking. They have frozen sour cherries, delicious dumplings, freshly baked poppy seed rolls, pickled tomatoes, toasted buckwheat and lots more.

Local’s last word.

My favourite place for coffee is…SML on McMahon Street and I’ll have an almond cappuccino. My go-to on their food menu is the ‘Wog Boy Eggs’ which is middle eastern mince, eggs, labneh, spices and focaccia, so delicious! The service is always excellent and friendly and you’re guaranteed a fab chat with owner Richard about the latest basketball scores and weekend happenings. The best meal I’ve had in the area recently was at… Braci Italian on High Street. Their Killa Beez pizza with spicy sopressa and hot honey is a huge hit and their Brussels sprout entrée and tiramisu are winners every time.

If I want to have a cocktail, I go to…Bar 81 in Castlecrag and I order either an Aperol Spritz or a spicy margarita. The crew are really fun and the heritage building is a unique spot for a catch up. My fave local takeaway is… Fish Bowl in Crows Nest for their miso salmon nourish bowl. If we order in at home, we go to Mathew Peacock Gardens for their steak with honey walnuts, crispy skin chicken in shallot sauce and special fried rice.

My favourite local walk is… laps around Willoughby Park with a coffee, the kids and our bordoodle Ziggy.

My top three favourite local shops/services in the area are…Ivy League Florist are the absolute best florists around, I’m always happiest when I have a bunch of their creations on my kitchen bench. Their bouquets are always incredible and last for ages. Technically Carla and her team have moved out of the area to a bigger premises but they deliver in Willoughby daily. City Cave Crows Nest is great for a infrared sauna or magnesium float. It’s quiet, private and a really restful regenerative place. Gelateria Gondola on Archer Street in Chatswood has some of the best gelato I’ve ever had in Australia. My youngest loves their Nutella crepes and they have an incredible hot chocolate in Winter.

The secret spot I love to go to locally is…Northbridge Sailing Club. It has a huge public deck which is a fabulous spot to relax with a book in the sun. I’ll often head there with my laptop and edit images for clients while the water laps against the pier. It’s a quiet, calm little corner.

I love living in this area because…the beautiful village feeling makes everyone feel welcome. We’re surrounded by stunning bushland and parks and on weekends, Willoughby Park is full of families playing sport, and hanging out so we always bump into friends and the kids’ school mates. We have so many excellent small businesses looking after the community so personally. Our kids are growing up in a safe, friendly neighbourhood and they love to ride their bikes to meet friends or shoot hoops at Willoughby Leisure Centre. It’s also incredibly convenient to the city, just a quick bus ride or Metro from Crows Nest that makes weekend adventures and commuting to work easy.

Three words I’d use to describe this area are... friendly, fun and welcoming
