DEMOCRATS CONTENT TO LET INMATES CONTINUE TO RUN THE ASYLUM

In a stunningly knee jerk vote, the Democrats in the Senate voted to replace Harry Reid with Chuck Shumer of New York and the House voted 134 to 63 to retain Nancy Pelosi as their Minority Leader. Now this once progressive party is in worse shape than the Republicans were said to be in just a month ago. If you are from either coast, you should be happy that the Fringe vote has won again, with less than centrist “leaders” and no hope of exploring the vast portion of the United States known as the Area Between the Coasts. Fine. As Forrest Gump once said, “stupid is as stupid does” and not even ISIS has as strong a wish to enter the Hereafter as the Democratic Party’s passe’ leadership does, while passing out PlayDough and puppy dogs to the politically distraught. If rumors of Hillary looking for a third run at the White House are true, the Dems might as well pack it in. In eight years, whether it’s after Trump or another Republican, it certainly won’t be a septuagenarian Hillary or an 82-year old Bernie Sanders winning for the Democrats. Pelosi is also in that age range as well as is the Social Security-eligible Shumer. The next four years, minimum, will be Trump over Gump, as cries of ‘racist’ and ‘foul play’ continue to come from those who said they would be leaving for Canada before Trump’s inauguration. Please do so now, because construction on the Wall might be hindered with your meanderings towards Mexico ( I know - Mexico is south, Canada is North. But try explaining that to leftists who will never understand any type of direction including the direction that the common, everyday person in this country wanted this year and hopefully voted into office with Trump - “a piece of the pie.” ) With Trump’s win, they hope to get that piece and some peace from the Politically Correct on Ritalin. People - including lovely Sally Field - get a grip and understand this election from the standpoint of the average American. For more on this subject, here is Jeff Crouere.

DEMOCRATS REMAIN STUCK ON STUPID

In the aftermath of another devastating electoral loss, Democrats have not learned their lessons very well. In the U.S. Senate, Democrats elected 66-year old Chuck Schumer of New York as their Minority Leader, replacing the outgoing Harry Reid of Nevada. Schumer will offer more East Coast liberal leadership to a party that desperately needs to move ideologically to the center and geographically to the country’s heartland. In an even worse move, House Democrats re-elected super liberal Nancy Pelosi of San Francisco as their Minority Leader. Pelosi has been leading House Democrats since 2003 and has been at the helm as her party has lost control of the House. Despite her horrible track record, Pelosi defeated Representative Tim Ryan of Ohio by a comfortable 134-63 margin in a closed-door session. In response to Pelosi’s re-election, Donald Trump’s Campaign Manager Kellyanne Conway tweeted, “What a relief. I was worried they had learned from the elections & might be competitive and cohesive again.” Of course, Conway is right, Democrats remain stuck on stupid. Instead of expanding their base, they chose to remain wedded to political correctness and hard core liberal leadership. Soon, they will name a new Democratic National Committee Chairman and the leading candidate is radical Congressman Keith Ellison (D-MN), a former spokesman for the Nation of Islam, who once praised anti-Semitic Minister Louis Farrakhan as a “role model for youth.” If Ellison is elected, the Democrats will have the type of leadership team that will have little chance to win back Rust Belt voters who defected to Trump in the presidential election. Hillary Clinton was unable to inspire blue collar Democrats and they voted for Trump in surprising numbers, even turning Michigan into a red state. Despite her devastating loss to Trump, there is some speculation that Clinton is contemplating a third presidential run in 2020. This could be why her lawyers are participating in the Wisconsin recount effort. Republicans should be delighted at the news that a two-time loser who has failed at every job she has ever held would be itching to run for President again in four years. Instead of Hillary making another presidential run, Democrats need to figure out why they keep losing elections. Since 2010, Democrats have lost three national elections, with their only victory coming in 2012 when voters returned President Obama to the White House. Democrats are now in the minority in both the House and Senate in the U.S. Congress. On Saturday December 10, it will get even worse for Democrats as Louisiana voters will almost certainly elect Republican State Treasurer John Kennedy to the U.S. Senate seat. This will give Democrats only 48 seats in the upper body, a major disappointment.

SURPRISE RETENTION OF ORGERON HAS TIGERS STABILIZED For once, Tiger Athletic Director Joe Alleva got it right. Backing away from the money game being played by former Houston coach Tom Herman, Alleva and other members of the Tiger brain trust were blown away by the presentation from Ed Orgeron, whose more than 30 years of coaching has been wrapped up in a series of binders from those who mentored him. From Pete Carroll to Jimmy Johnson, Arkansas to USC, Orgeron tempered his behavior and became the studious Cajun coach the Tigers chose to replace Les Miles. The next step is to find the offensive coordinator necessary to provide consistent fireworks to make the Tigers more of a threat against the Alabamas of the world. It may not be Lane Kiffen, but perhaps a young head coach who would be willing to be the OC at LSU for the next five years under Orgeron with the commitment by the school to hire him after Orgeron’s tenure. This was done by Florida State with Jimbo Fisher and its worked out fine for the Seminoles. The Tigers can ill afford stupid, Les Miles-style thinking, which they showed against Florida in November. They also can’t afford to surrender five rushing touchdowns to any team, which happened against Texas A&M. Now the things that need to be done. First, the coaching brain trust needs to disallow Cameron Gamble, a really aptly named player, to continue to show why LSU has the worst kickoff return containment in the country. This junior Texas from Flower Mound apparently doesn’t have any flower power in his leg: he couldn’t even find the South end zone while kicking with an 8 to 15 mile-an-hour tailwind from the north against Florida. He’s only hit the end zone about six times this year and it would take mental gymnastics to honestly remember when he actually kicked it out of the back of the end zone ever in his three-year career. Second, it’s a puzzle why the Tigers think sophomore Donte Jackson is worth starting at a cornerback when, even with his great speed, the kid gets his lunch eaten way too often, giving up a school record 98-yard touchdown reception to Florida. He tackles like Deion Sanders but Deion wouldn’t let you catch the ball. Jackson also is as much a liability on kick returns as a plus. Third, this team still doesn’t know what edge containment means. Aranda or no Aranda, the Tigers get their asses handed to them around the end far too often for a so-called elite defense. Fourth, the defensive line is not the unit LSU can depend on. Greg Gilmore is doing his best at nose tackle but Davon Godchaux is worn out at tackle and Lewis Neal is generally overmatched on the edge. Arden Key also needs to shut up and quit talking sacks when he’s not even a shadow of a Jonathan Allen from Alabama in causing chaos behind the line of scrimmage. Trevonte Valentine is all but gone; he hasn’t been playing and won’t play for the Tigers again. Thank God for Kendall Beckwith and Duke Riley at linebacker. They are the co-MVPS of this defense but they are both seniors. Jamal Adams is inconsistent at safety, having some of the same issues LaRon Landry had 13 years ago. Jamal, you are not Ronnie Lott and your tackling is not all that consistent. Get your head in the game or you will wind up like Landry in the pros….nothing special, just a journeyman defensive back for about ten years. Even though a local sports writer gave LSU an A- grade for its defensive line, it is much more like a C+ because of its inability to get to the quarterback and stop many critical rushing attempts. For the Tigers to go anywhere in 2017, they will have to be led by a true freshman quarterback or a really good transfer, plus the influence of a 21st century offensive coordinator. However, it’s over for 2016 except for another middlin’ bowl appearance and unless they can find at least three SECquality offensive linemen who can start next year, including one or more legitimate tackles and the same number of defensive linemen plus a couple of linebackers and a couple more DBs with skill sets and attitude, mark up next year as another day in Middle America college football. LSU recruiting has served the NFL much better the past ten years than it has the Tigers. Nick Saban gets his pound of flesh from his recruiting classes and the Tigers have been getting IOUs. If Leonard Fournette returns for his senior year, I will be more than surprised. In the SEC, misery loves company, and 2016 will go down as the most miserable year ever in this league. Even more pathetic than the Tigers: Auburn, Ole Miss, Mississippi State, Georgia, South Carolina, Arkansas, Tennessee, Missouri and Texas A&M. Vandy and Kentucky outperformed their usual terrible forecasts and Florida overcame injuries and LSU Tiger arrogance to become the leader of the Underachieving 13. Alabama - they must feel blessed to be associated this year with so many really lousy teams. Alabama wins another crystal football and no issues going into 2017.

The Slidell Police Department Reserve Division had the pleasure of working the St. Tammany Toys for Tots, on Dec. 3rd. This non-profit organization serves more than 2,500 local kids each year at their annual toy give away. Event coordinators and volunteer elves were on site to help each child find their perfect holiday toys as they walked through the toyland. Everyone was very excited to see Santa, Mrs. Claus, and their elf arrive on one of St. Tammany’s fire trucks. Local choir students provided those waiting with songs of the season. The smile on each child’s face as they picked out toys and sat on Santa’s lap showed just how much they appreciated all the volunteer’s hard work and donations made by citizens.

Feeling Warm & Saucey!

Chamomile~Caramel Sundaes - Serves: 6 1 Cup heavy cream 2 bags chamomile tea 2 Tablespoons confectioner’s sugar 2 pints vanilla ice cream Honey- caramel sauce 1 1/4 pounds stone fruit like plums, apricots, peaches, or sauté’ apples, pears or persimmons in a little brown sugar & cinnamon Heat cream just before a simmer. Remove from heat & steep tea bags 20 minutes. Remove tea bags & refrigerate infused cream for at least 1 hour. In a mixer bowl, add sugar and whisk until stiff peaks form.

As you drive around this season admiring all the colorful leaves, the persimmon tree stands out as a bare small tree with what looks like mini three inch dangling pumpkins. The bright orange fruit stands out against the fall sky. Persimmons grow with little attention all year, then screams”Pick me” around the same time we see pumpkins and pomegranates appear. But how many people really eat persimmons? The fruit fall into two categories. The astringent (sour until totally soft & ripe), heart-shaped hachiyas or the round, non-astringent, apple texture, Fuyus, appear in late September through December. This underrated fall fruit deserves the same hype as pumpkins! I prefer the Fuyu because they can be eaten as a quick snack and I don’t have to wait until they are very soft to eat. It’s like eating an apple with more health benefits. And the color is a spectacular orange! The flavor is sweet with an apple crisp and guava finish. They can be eaten raw, pureed, or dried. Use persimmons in any recipe you would use apples or even pumpkin puree. The leaves are used in teas. Persimmons can be baked in cookies, breads, cakes and puddings. They can also be added to salads and appetizers. Since more people are conscious about eating seasonal and local, the persimmon is gaining more attention. There is no waste when you cut into a persimmon. Just slice off the top and eat the rest. The visual brilliant orange flesh is enhanced with a beautiful star pattern. There is no core. Slice and eat the whole fruit , including the skin. Kids love to bite into this “little pumpkin”. Eating a persimmon a day is said to be better at preventing heart disease than eating an apple. Since we don’t have persimmons year round, now is the time to juice, mash and freeze. Persimmons are so pretty on the dish. For the holidays,

make a cheese board with a selection of a bleu, triple creme’, gouda and a pate’. Add slices of persimmon and grapes, crostini and crackers. Sprinkle large pecans all around. This makes a perfect hostess gift. Better yet, bring this with a persimmon tree as the gift. A gift that keeps on giving! Persimmons would be considered one of those oldfashioned foods that is now trending on restaurant menus. Have you heard of a persimmon gastrique? It’s a sugar and vinegar bubble-down, sweet and sour accent to complement beef, pork, shrimp or scallops and rice. Get adventurous and add chili peppers for some heat~Sweet, Heat & Pickle-ish condiment. Now go crazy and add it to a cocktail. I keep a jar of gastrique in the refrigerator to spice up any dish. On a simpler note, bake some persimmons, same as baked apples. Serve as a side with pork or chicken. On the savory note, slice persimmons with onions and shredded cabbage. Sprinkle with Herbs de provence and a drizzle of olive oil, salt & pepper. Place pork loin on top. Bake at 400˚ until the pork has an internal temperature of 140˚. Remove pork to a platter and cover with foil to rest. Place pan with the veggies & fruit back into oven and cook until golden. Slice pork and serve on the beautiful bed. On the sweet side, slice tops of persimmons and place them in an 8x8 pan. Sprinkle with brown sugar and cinnamon. I like to squeeze the juice of an orange or satsuma over the persimmons and bake at 375˚ until fork tender, about 25-30 minutes. Serve this as a side to pork or chicken or elevate it to a dessert by adding a scoop of ice cream and a caramel sauce over the top. Delish! Persimmons gets my Vote! Honey- caramel sauce: makes 1 cup 2 Tablespoons honey & 2 Tablespoons water 1/2 cup sugar 1/2 cup heavy cream 2 Tablespoons cold unsalted butter 1/4 teaspoon kosher salt 1/2 teaspoon vanilla extract Combine honey ,water & sugar in a medium saucepan Heat over medium heat to dissolve sugar Bring to boil until deep golden brown color, 5 to 6 minutes. Remove from heat & carefully whisk cream, butter, salt & vanilla. Mix will splatter! Let cool completely, Sauce can refrigerate up to 2 weeks & can reheat. Assemble: Ice cream, Fruit, caramel sauce & a dollop of chamomile tea! AGRODOLCE~ Sweet & Sour 1/2 Cup balsamic vinegar 1/4 cup pomegranate juice 3 cloves, peeled & grated 6 sprigs of thyme 4 Tablespoons honey pork chops, chicken, turkey Kosher salt & pepper to taste 2 Tablespoons olive oil 1/2 cup pomegranate seeds In a small sauce pan combine vinegar, ppmi juice, garlic & thyme. Simmer over medium heat & reduce by half about 5 minutes Add honey and simmer another 3-4 minutes to thicken ,slightly. Stir in cold butter & set aside. In a skillet with handle that can go into oven Season pork or fowl & grill on both sides until brown Baste with the agradolche on both sides. Finish meat in an oven 400˚ to 145˚ internal temp Serve meat with pomegranate seeds for decoration and crunchy fresh texture. GASTRIQUE– Sweet & sour The base of a gastrique is sugar or honey with vinegar reduced. You can add apples, satsuma, persimmons, berries, a spoonful of fruit puree at the end. Use seasonal fruit and flavors. Add some wine. A gastrique was made to use up excess fruit. So it is kind of a jeweled sweet & sour sauce. It adds color and that extra flavor over meat, fish, chicken or cheese. Gastrique is a term that refers to stomach troubles. It’s possible that the tartness of the syrup was thought to aid in digestion of a rich dish. A good basic recipe is: 1 cup sugar, 1/2 to 3/4 apple cider vinegar or rice wine vinegar (experiment with other vinegars) juice of a satsuma, blood orange or any orange or 2 Tablespoons pomegranate or cranberry juice or hibiscus tea for a red glow. In a small sauce pan, melt sugar to a light caramel color. Add liquids all at once and stir. Cook to reduce a little, to slightly coat a spoon. It will thicken more as it cools. Optional: Add 3-4 cups of fruits- persimmon, pumpkin, apples, diced 1/4 inch cubes. Cook a few more minutes to soften fruit ,but not mushy. The amount of vinegar you add will determine how sweet or sour your gastrique will be. Taste to see if you want to balance flavor with more sugar or vinegar. Add diced chili peppers to give it that pepper jelly taste!

Holidays got you stressed out? It is that time of year again when we look forward to gathering with family and friends to rejoice in the spirit of the holidays. The joys of the season are also filled with lots of wonderful food, seasonal goodies, and merriment that can result in a few extra pounds that wrap around your middle. Research shows that most adults gain a few pounds over the holidays, lose one or two of those added pounds, but usually hold onto at least one pound each year. This slow and steady gain creep finds most adults overweight by middle age! This is supposed to be a joyous time, yet with so much to do---shopping, cooking, baking, events to attend---it’s difficult to find time to relax. Increased stress can lead to poor food choices, interruptions to exercise routines, and overall negative impact on your health. No need to worry! The following tips will leave you cheery in no time.

Tips for Enjoying Holiday Meals-Without Overdoing It • If you are preparing the meal at home, remember that leftovers can be eaten another day or frozen to enjoy again later. • Taste the foods offered that you really want but in smaller portions. At parties there is often much more food offered than at a regular meal with people still taking regular sized portions. • As a guest, tell the host/hostess that you are too full to eat all the food and ask if you can take some home for later. For example, take home a serving of a dessert you want to try. • During holiday gatherings don’t sit or stand next to the food table. This is where most people gather, and it is very easy to do a lot of mindless eating. Before you know it, you have eaten way more than you should have. • Sweets (candies, cookies, cakes) and other holiday snack foods (breads, cheeses, nuts) are temptations for snacking between meals. If you are given food as gifts, freeze some of the food to eat after the holidays. • When making holiday foods such as cookies, consider making just enough for gift giving and a little extra for you and your family. This way you will not have extra food temptations around. • When eating out during the holidays consider splitting some of the food with someone else. • Do not skip meals the day of a holiday party thinking that you will save calories! Instead, try eating smaller and lighter meals during the day. • Never go to a party hungry! • Eat breakfast or a snack before conquering the mall and bring a snack if you will be there for long periods. • For some, eating slower helps to cut down on the amount of food that they consume. Try sitting down and really tasting the holiday food. • Store holiday treats so that they are out of sight and aren’t temptations between meals. Instead, have plenty of cut up fruit and vegetables available. • Limit alcohol which adds calories and stimulates your appetite. • Stay hydrated. Being dehydrated can make you too tired to make healthy food choices. • At buffet tables, survey the table before selecting your food choices and try to limit to one trip. • Write it down. Taking time to write what you put in your mouth makes you more aware of how much you are really consuming. • Hold out for true love. Don’t give into urges to randomly nibble hors d’oeuvres, especially ones you don’t really care for. “If you don’t love it don’t eat it” • Consider modifying your traditional holiday recipes to reduce the fat, calories, or cholesterol.

Keep up your exercise routine It’s hard enough to exercise the rest of the year, but add holidays to the mix and many of us find exercise becomes less of a priority as to-do lists grow longer and longer. The last thing you want is more stress and, for many of us, trying to keep to our usual workout program does just that.

Skinny Pumpkin Pie Servings: 8 • Serving Size: 1 slice • Points+: 5 pts Smart Points: 8 • Calories: 172 • Fat: 6.5 g • Carbs: 31.5 Fiber: 2 • Protein: 3.5 g • Sugar: 21 • Sodium: 143 mg Ingredients: 15 oz canned pumpkin (or homemade pumpkin puree) 2 tbsp whipped butter, softened 3/4 cup light brown sugar, unpacked 1/2 cup fat free milk 1 large egg 2 large egg whites 1/2 teaspoon pumpkin pie spice 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tsp vanilla extract 1 frozen pie crust sheet, Pillsbury (thawed to room temperature) Directions: Preheat oven to 350°F. Lightly dust a large cutting board or flat surface with flour. Roll out a room temperature pie crust sheet, so that it becomes thin enough to cut off about 30%, so that your final crust is 5 oz. Place into a 9-inch pie dish, cutting off excess dough. (If you prefer to skip this step and use all the dough, increase calories and points+ to 6 per slice). Place pumpkin puree in a large bowl. Add butter, and mix well. Using an electric mixer, mix in brown sugar, milk, eggs, egg whites, pumpkin pie spice, cinnamon, nutmeg and vanilla. Beat on medium speed until mixture is smooth. Pour filling into unbaked pie crust. Bake about 70 to 75 minutes, or until knife inserted in center comes out clean. Cut into 8 slices and serve with whipped coconut cream or whipped cream if desired.

VOTE SATURDAY TO KEEP OUR NECESSARY HARBOR CENTER OPEN I’ll make it really simple. East St. Tammany parish has the best cultural and arts program on the parish. It has a huge leg up on the rest of the parish and the Northshore partly because of the Northshore Harbor Center. Even though its purpose covers the entire parish, the Center’s concentration is in the Slidell area. Now, this fine facility has less than 13 months left to remain open unless you vote on Saturday, December 10th, to renew a low millage that will cost the average homeowner in the area less than $40 for the year. Between Toys for Tots, supporting Habitat for Humanity, the United Way, Second Harvesters, school and church groups, veterans’ groups and breast cancer survivors, the Northshore Harbor is truly your center, supported as a nonprofit through low millage taxes. The Harbor also hosts corporate meetings, consumer shows, banquets, sporting events, festivals, business seminars, dance recitals, school dances, Mardi Gras balls, trade shows, artistic performances and dozens of other functions. The center created a $4.3 million economic impact in the Slidell area in 2015 - more than a 50% increase from 2014. After eleven years, the small, dedicated Center staff has really gotten it right. Do the right thing on Saturday and take ten minutes to vote “Yes” for the renewal. The facility has bookings through 2023 and it would be a shame to cancel them.

Restaurant Rendezvous Sunrise Bistro, the former Sunrise on Second, has closed. It is reported that the owner is seeking to reopen somewhere else locally in the near future, but don’t hold your breath. Meanwhile, Ricky Luke, whose Brisket and Broadway Dinner Playhouse held sway off I-10 in Slldell for many years, has taken over the cafe’ portion of the old Poole Funeral Home on Robert Street in Olde Towne where Sunrise was housed. Luke says he’ll open this month and will schedule performances in the main front dining room several times per year. Keith’s Seafood on Pontchartrain is opening a second location in Chalmette on Paris Road at Genie. They take over a former Lee’s Hamburger outlet on this very visible and busy corner. Surfer’s Rehab has moved and is running the restaurant and catering portions of The Dock across from Eden Isles after leaving their Highway 11 location. The disappointing Dock venue for years might finally have the menu and the energy to attract a steadier clientele under the crazy energy of Nick Neyrey and the whole Rehab gang. In Pearl River, Lorenzo’s and Nay Nay’s continue to offer great service and an affordable, varied menu since they took over the old Mama’s Kitchen and the empty restaurant venue by Jim’s Feed at the Hwy 41 Spur, respectively. A welcome addition to Slidell is Fatty’s, a really well-thought-out seafood restaurant where the old Cuco’s used to be. It’s their second location, following an opening in recent years in Picayune. It could be a positive move in this genre for Slidell, following the less than spectacular performance of the hastily-closed Zydeco’s a couple of years or so ago. Cafe’ Tini is also gone, another loss in Olde Towne for a fairly small but spunky establishment. The Usual Suspects, a Covington-based local establishment, has opened where Bear’s used to be, on Gause. It’s too early to say how this chicken specialty restaurant will perform in Slidell. As for Bear’s, it seems apparent they have the same problems Dreamland Barbecue has in Alabama: the original cannot be duplicated. But the best mention may be the last. Tina’s Food 4 Your Soul has opened on Old Spanish Trail at Tammany in that crazy triangle shaped center. I’ll have more on this wandering establishment that finally looks settled in after a false start on Robert Road and a year inside a local convenience store. This restaurant is more about down-home food than soul food but South Louisiana down-home. Open for all meals, Monday thru Saturday, 6AM - 8:30 PM. Take my word for it: it’s very good.

This was the year that Democrats were supposed to make huge inroads in the U.S. Senate since Republicans were defending 24 of 34 seats. Instead they will gain a mere two seats. On the House side, the Republicans will control approximately 241 seats, a strong majority once again. Democrats have also suffered greatly at the state level with only 18 Governors and the control of only 13 state legislatures. In fact, the Democrat Party of 2016 is a minority party with power bases on both coasts and in major cities. In between, the country is a sea of red as exemplified by the Trump presidential victory. He won 306 electoral votes in 31 states, whereas Hillary Clinton only won 232 electoral votes in 19 states. Democrats will maintain that Hillary Clinton won the popular vote with a margin of 2.1 million votes, but that number will not win the presidency. In 2000, Al Gore also won the popular vote and lost the presidential election. In fact, this election is the fifth time in U.S. history that a President has been elected while losing the popular vote. Democrats can continue to focus on the “popular vote victory” and a recount effort, but a better use of time would be to investigate what has happened to a party that a mere 8 years ago, wielded tremendous influence throughout the country. Maybe sensible Democrats will realize that the Obama presidency has harmed their party tremendously, leading to losses throughout the country. The President’s agenda has been rejected by the American people who do not like his policies such as Obamacare, higher taxes, more regulation, open borders and amnesty for illegal aliens. As President, Trump is promising to pursue popular policies that will turn back many of these Obama initiatives. This will only increase the troubles for the Democrat Party moving forward. Democrats are no longer the party of the working class, but the party of radical progressives, illegal aliens and special interests. In this election, Trump captured working class support from voters in Rust Belt states that had not voted for the GOP in a generation or more. Clearly, Trump will need to deliver for the working-class voters who entrusted him with the White House; however, assuming he is successful, the Democrats may be in the political wilderness for many years to come.
