SEXUAL PREDATORS CREATE NEW “FRANKEN STEIN” I’m as tired as you are about hearing the latest sex scandal out of Hollywood, Washington or a John Besh restaurant. But this time, the antics of those feeling entitled and belligerent has taken a new tack, if possible. How does someone supposedly as smart as Al Franken allow someone to take his picture while he fondles the breasts of a Los Angeles radio talk show hostess? And how does a slime bag like Harvey Weinstein not get “offed” by some offended lady over the decades of decadence he has authored?

Human relationship fears have come to this: most young people would rather interact with an electronic device than a human soul. Good luck with building character with that, buddy! And let’s put Frankenstein back in the laboratory and re-invent him by removing the danger this time.
Power begets privilege and privilege often is overcome by corruption, either morally or financially. It amazes me that fifty years of women’s rights haven’t done more to level the playing field for our distaff side. They still are underpaid in equal compensation situations, they are bullied as subordinates more than men and their attempts to do jobs skillfully that were previously reserved for men only is still under attack. Most women like their status as women. What they don’t like is being talked down to or pandered to or mistreated. Yes, its true that Madison Avenue and the coasts have done yeomen work in bringing down the masculinity of men, laying out guilt trips and attempting to feminize the average guy. But the same forces are complicit in making women look like Superwomen but without providing them the actual powers of same. My wife thought the term “Franken Stein” was one of my more brilliant puns. Taking the politician’s and movie mogul’s last names and combining them was almost inspirational. Perhaps ancestors of these two men were the actual creators of the Rumanian monster of movie lore. But these two are the real monsters of the 21st century. Heaven knows they are not alone. There are tens of thousands more just like them. But Franken and Weinstein stand out as among the most stupid of the cadre. Women proved their mettle in their roles of helping win the West and manning the war machines of World War Two. They are capable of subordinating their so-called feminine wiles in most business and leadership situations and most of them do so without sacrificing “viva la difference!” It’s well past time to return to the common courtesies and expectations most of us grew up with in the way we treat the opposite sex, man or woman. Do we really fear oppression, ridicule and lawsuits that much? Hasn’t feminism come to terms with male/female niceties? Have too many men

Surrendered when she was seven years old by an owner who could no longer care for her, Brandy, a chocolate lab, was adopted only to become a homeless dog again when her adopter passed away a little over a year ago. Brandy then lived in a foster home until yesterday when she was adopted and taken to a wonderful new home in Katy, Texas. Her new mom has a 13 year old rescued dog, as well as a rescued cat and kitten. Brandy loves other dogs and she gets along very well with cats too, so she should fit in just fine in her new home. It all began when Brandy’s new owner, after losing her 16 yr old lab, saw her picture on START’s Petfinder site and inquired about her. Then she filled out the online adoption application. We knew hers was the right home for our girl for many reason, including the lovely fenced yard and lab size doggie door, as well as the picture she sent of Brandy’s 13 yr old future friend standing by the sofa, as if to say, “There’s room for both of us here!” We are so grateful to all who helped with Brandy, but we are especially grateful to her wonderful foster mom, and to the very special person who drove over 10 hrs roundtrip to give Brandy a forever home.

Punched Campfire Filet Mignon Recently, I was up in the great north woods of New Hampshire, and it was just about dinner time. My buddy and I purchased a couple of thick filet mignons, and the plan was to cook both steaks over the campfire. I was not going to use a grill over the fire, but rather a maple wood plank that came two to a pack and one plank would be used for this dish. The wood planks provide a cooking surface, but it also gives a smoky taste to the meat. You can use any wood planks sold, mesquite, cherry, apple, hickory or maple. My Punched Campfire Filet Mignon was taking both steaks, and actually punching them straight down a few times with my fist on a cutting board. I must say it was a minor stress reliever, but my friend was more confused than anything by my actions, and by all rights he should be. I had a plan, and didn’t fill him in prior to my Rocky Balboa style meat beating. Punching a filet mignon is not a conventional way of tenderizing meat, but it worked better than both of us ever thought. Punching each filet broke down the fibers just enough, and made each filet a bit thinner; about 1 inch rather than 3 inches. This provided a faster cooking time working a fiery campfire. The wood plank is porous, and so is the meat. This allowed each steak to stick naturally to the plank without sliding off. This will be crucial when cooking, and moving the plank over the fire. Once the campfire is hot by using only wood to keep it going, it’s time to prepare the steaks. Sprinkle each with salt and pepper then rub a little olive oil on both sides. The punched side faces up. Place on the plank, and have a pair of tongs with you for moving the plank around the fire. You want the wood to burn around the edges and bottom lightly so do not soak the plank in water as the directions state. Fast cooking is the objective. Once you find a level spot on the fire, leave it for a couple of minutes, and watch it. You want the plank and steak to get direct flame. The fire will start coming around the ends of the plank, and over the top like a broiler. You will not need to flip this steak on the plank. Direct heat from the campfire is what you want to get your steaks cooking. Move the wood plank to fit the position so the entire steak or steaks are being cooked evenly. Once you see blood begin to appear on the surface of the steak that is a leading indication that your steak is medium-rare. Once you see this happen to both steaks evenly, pull the plank off the fire, and let the steaks rest so you can prepare the rest of your meal. On the stove add 1 tablespoon unsalted butter, and 2 tablespoons of extra virgin olive oil to a skillet. Once the butter melts, but not burn, gently remove the steaks from the plank, and place both steaks in the hot oil plank side meat first for 30 seconds and flip for another 30 seconds. Remove from heat, and allow your steaks to rest for 3 minutes. Serve the steaks plank side meat up. Tenderloins are known for having little flavor since there is not much marble and fat. That’s why a sauce usually accompanies a filet mignon in a restaurant. Add1/4 cup beef stock to the skillet, and scrape the pan for flavor for about 30 seconds with the pan on high heat. Pour the sauce on top of each steak. ENJOY!

Ingredients: (2) 8 ounce filet mignon 1 tablespoon unsalted butter 3 tablespoons extra virgin olive oil 1 teaspoon sea salt ½ teaspoon fresh black pepper 1 hardwood plank for cooking ¼ cup beef stock from the supermarket Method:
For the steaks, follow the directions that are written in the article. Please do not drop your plank with the steaks in the fire. That would not be good. You can cook the plank steaks on your grill, but it will take longer depending on the power of your grill, gas or charcoal. A blazing fire will always produce extensive heat. That’s the uniqueness of this dish having smoky Punched Campfire Filet Mignon. Remember, when the blood comes to the surface of your steak that is medium rare. Any cooking time thereafter your steak will becomes medium to medium-well or well done. You are looking for a perfect medium.

Once severed from their root system, the trees lose their ability to effectively take up water and nutrients. Remove ½ inch of the bottom of the tree using a sharp saw or chain saw. This cut is commonly referred to as a “fresh cut” and many businesses may offer to do this for you at no extra charge. This should be done right before you set the tree up in its location. If you have this done on location, then make sure you go home and immediately bring the tree inside for setup. Once adjusted to stand up straight and look good from every direction add water to the bowl and check it often in order to keep it full. Don’t worry with nutrient solutions, preservers and other type products. Just keep it full with plain water and you won’t have to worry about sweeping up many needles.

As the cool season arrives, so does our color selections. It is always about this time of year that we start to think about what will replace those old, worn-out periwinkles in the front bed by the window. Because as gardeners, we know that with the new season, a completely new selection of plants and flowers becomes available to us. Well, the carnation is a type of dianthus and you can grow them in your backyard with ease. The ‘Telstar’ series of dianthus is probably the most well-known by far and stay nice and short (about 8-10 inches tall). The flower colors come in a wide variety of pink, white and purple. ‘Telstar’ dianthus makes for a very low ground cover when planted in masses or border style plant when planted in lines. ‘Amazon’ dianthus is good choice for those who need a taller plant. They can get upwards of 2 feet and make for good choices in the back of flowerbeds. Back in the fall of 2010 the LSU AgCenter named the ‘Amazon’ series of dianthus a Louisiana Super Plant because of its dependability across the entire state. Some excellent single color choices are ‘Neon Cherry’ and ‘Neon Purple’ and for those looking for a multicolor, check out ‘Rose Magic’. The flower starts out white, turns pink, and then rose. Few days are more welcome in South Louisiana than the first week of October. The heat and humidity of summer are gone, along with the real threat of a major hurricane and the unwelcome invasion of love bugs from August. October is un-rushed; it follows the first segments of school and football and can take its time establishing itself. Whatever changes October brings are welcome: the pristine, almost painfully beautiful blue sky, the beginnings of a short but beautiful fall foliage season; the preparation for warmer, comfort food while maintaining the outdoor excitement of summer through tailgating and bug-free, humidityfree evenings on the patio or deck with the barbecue going, the last, hardy splashes in the soon-to-be-winterized pool. Halloween, October’s holiday, has become more intrusive but more adult and has become a major holiday celebration at home. The commercialization of Christmas is many weeks away. Air conditioner problems become smaller. October is spring for the older crowd. It brings on the anticipation of another day to accomplish things. Because winter is a sham in South Louisiana, the upcoming harsh season for most of the country is a non-entity here. The procrastination brought on by summer activities and the onset of school and football now is a non-factor and chores, improvements and investments follow the need to prepare for the holidays, the shutdown brought on by winter and the anticipations coming with the new year not that far away. October is the eye of the storm. It separates drudgery from achievement, fatigue from inspiration, routine from the unexpected. It is the hope eternal that next year will be better than this one, that unfinished future business gets done with a head start during October. October is maturity at its best. It’s retirement time for the year without the shiver of bitter December winds or the finality of the end of the year. It retains the optimism of youth tempered with the patina of experience and the satisfaction of success and jobs well done. It allows the last light of the end of the day without the last heat of the season. It offers the olfactory sensations of spring without the pollen; the comfort of the day without the increase of humidity. October has more of an identity than any other month. Spring’s onset gets muddled within the confusion of February and March turning into April and summer has no single month that identifies it. As mentioned, there is no winter flagship month because we have no real winter. Our fall is short but October makes it real.

Don’t let impulse buying ruin your trip and your wallet. Remember - fishing is fun but like most disciplines, it takes practice to be successful. Hooking up a dead shrimp and casting under a cork with no action is not fishing….it’s relaxing with a fishing pole. It’s like a box of chocolates - you never know what you are going to get. But one thing you won’t get is successful.
Etling graduated in May with a degree in Mass Communications where he posted a 3.72 grade point average. Etling is a repeat selection on the Academic All-District Team as he was named to the squad last year. In addition to his academic accomplishments, Etling is also the Vice-Chair of the 2017 SEC Football Leadership Council as well as being a member of the 2016 SEC Community Service Team. Moore currently maintains a 4.02 grade point average in architecture where he’s on pace to become the first Tiger football player to graduate in that curriculum in more than 25 years. Moore has played in nine games this year, starting six times, and he’s caught six passes for 51 yards and a touchdown. Moore is a three-time member of the SEC Academic Honor Roll and was named the winner of the 2016 Charles Coates Award Winner, which is presented annually to the top student-athlete on the LSU football team. First-team Academic All-District honorees advance to the CoSIDA Academic All-America Team ballot, with first- and second-team Academic All-America honorees to be announced in December.

TONY’S TIGER REPORT TIGERS READY TO FINISH HO-HUM REGULAR SEASON AGAINST AGGIES The play against Tennessee during the first half by LSU continued to rival some of the worst exhibition of college football in 2017. For one half, LSU showed it didn’t really matter whether you were fielding four and five-star players against them or a bunch of walk-ons and camp bodies. The Tigers should be in social work; they make nearly every team they play feel that they have a chance to win against what should be a vastly superior team but one without the ability to find the jugular. LSU will finish their regular season against A&M and most likely the final game of their head coach, Kevin Sumlin. Sumlin has been unable to build the type of defense he thought he was getting when he hired John Chavis away from LSU a few years ago. The Aggies don’t stop people as they should, being a part of the SEC. Even though they have had two of the finest college defensive players in the country in the past five years, they don’t have enough, especially in the secondary, to stop most SEC teams. Don’t expect Chavis to be promoted to the HC position; he’s almost as difficult to understand as Orgeron and he doesn’t comprehend the offensive side of the game well enough to lead a program in College Station.
I’ll be at the Texas A&M game, hoping against hope that the Aggie band will perform. Along with Notre Dame and Ohio State’s units, this band is worth the price of admission alone. But two years ago, Joe Alleva voted to not have the cadets take the field. His reasoning, honed from years of listening to Les Miles and making sound athletic decisions at Duke that were only 180 degrees wrong, kept the band home. This year….who knows? Alleva will have his first postseason hiatus from the controversy of either replacing a football or basketball coach but it won’t make any difference on how this department is run. Meanwhile, several Florida bowl choices loom. Let’s hope one of them is not another matchup against Michigan State. How about Michigan this time….or maybe Iowa State? It would be fun to match up with Penn State or Oklahoma State or Stanford. Maybe even West Virginia. Don’t hold your breath. The Tigers are in a rut of middle age expectations and middle age ambitions. There’s a reason they have 18 consecutive years of eight or more wins, a football record, but only one signature dominant season, in 2003. Even then, it took an overlooked Kansas State team in the Big 12 championship game to show the Tigers that a good to great defense could stop an overrated Sooner offense. That 2003 LSU team and Oklahoma’s defense actually had more defensive All Americans combined than the fabled 2011 Alabama/LSU matchup. 2007? Miraculous, Ohio State-type wins and two dumb overtime losses, one solely attributed to the stupidity of Les Miles, and an unlikely final week of the season let the Tigers back into a championship game against an equally overrated Ohio State team. Heat water and sugar to boil, to dissolve sugar. Remove from heat, add lemon juice and zest. Add chopped lemon herbs, stir and freeze in a 2 inch high, 8 x 11 plastic container. Remove granita out of freezer a few minutes before scraping into small cups or empty lemon shells. Can scrape granita into cups and place back into freezer before friends arrive.

10 lemons, peeled 1(750) bottle of vodka 3 1/2 cups water 2 1/2 cups sugar Peel lemons in long strips, avoid the pith. Pour vodka into a large pitcher, with peels. Steep for 4 days. Mix water and sugar in a pot to melt sugar. Cool, then add to lemon peel vodka. Steep 1 more night, then strain and pour into bottles. Serve chilled in a cordial glass or crush lemon drop candies and line a rim of a martini glass, add champagne.
