TONY’S TAKE BEST. TEAM.? NEVER.!

Stephanie Apstein wrote an article this summer in Sports Illustrated about the Los Angeles Dodgers and their quest to become the best baseball team of all time based on their seasonal record. The story was 80% about Justin Turner, a red-bearded former utility infielder who has become a bonafide major league star during the past two years. Its narrative was rather shallow, barely touching on anything other than Turner’s personality and a brief overview of the Dodger’s reorganization of their front office, including the hiring of six former general managers. Like the Dodgers, the story was full of fluff. The winners of the past five Western Division National League pennants, the Dodgers are like the Texan who is “all hat and no cattle.” Five Western Division titles, no World Series. Ah! But they made the Series this year. Too bad. So did the Houston Astros. The Houston Astros once were the sartorical equivalent of the Miami Dolphins and San Diego Chargers. Their 60’s uniforms were a psychedelic sight to see. No one could take a team in those uniforms seriously and no one did. The team finally agreed to move to the American League some years back and no one really cared. Like the Mets and the Cubs, this team was a blip on the radar of professional baseball. But things change. For the Cubs and Astros, at least. Like St. Louis, this team built a strong farm system. But the Cardinals never produced the star power this 2017 Houston club features. This is one damn strong team, with a powerful Latino base and the hearts of a couple of former LSU players - reliever Will Harris and 3rd baseman Alex Bregman - to go along with two fine starters and a potluck collection of backup starters, parttime starters, middle relievers and short term closers. Funny how potluck sometimes tastes a lot better than filet mignon, which is the way most star-struck baseball writers cooked up the pitching staff of Los Angeles. Must have been a tough cut of that mignon, guys and gals. The Houston stockyards produced a lot better cut of pitching beef in the long run. And their manager handled it a lot better than the Dodgers. On All Saints night, the Astros exorcised their demons as they wrapped up their first World Series championship and sent the Dodgers back to the hills and beaches of Los Angeles with the Dodger Blues….this time with a sidecar of bitters. That’s 29 years and counting for any world championship for them Bums from Brooklyn. And maybe next year they will begin to realize that their pitching talent is tougher than

Kevin Spacey. But that’s next year. 2017 is an Astronomical high for a city that was devastated this summer by a terrible hurricane. They deserve this championship for all their citizens, fans or not. And for themselves. It takes more than talent and money to win the biggest prize and the Dodgers lack that extra something. This team reflects that lack. Their greatest player, Clayton Kershaw, has been the most outstanding regular season major league pitcher for the past five years. He’s also been one of the worst postseason pitchers of all time. Like that Texan, Kershaw is more hat than cattle when its time to go to market. This year’s performances were perfect examples. Kershaw is a victim of the metrics system of major league baseball that says pitchers shouldn’t throw more than so many pitches per game, regardless of their performance on the mound. That type of fuzzy thinking has cost at least two pitchers in recent years chances at no-hitters or perfect games, especially in Washington, where the Nationals treat Steve Strasburg like a child with a fragile arm. Kershaw pitched seven innings in the opening game in Los Angeles and won but couldn’t keep a four run lead on Sunday night as the Astros belted him around and chased him in the 5th. He did better in Game 7 but still did not conjure up any visions of Koufax, Hershiser or Madison Bumgarner. The Dodgers spend more money on name talent, then trade that talent away on such a regular basis that if a player gets more than a two-year deal in Tinseltown, it’s money in their bank when they’re shuffled away to another team, usually in a smaller, less expensive lifestyle market. And the Dodgers flounder. Dodger Blue remains in the red, championshipwise. They still have one of the best baseball stadiums in the game even though that stadium couldn’t be built today without offending the entire Latino population of Southern California. But this isn’t your father’s Dodger team. No, this team doesn’t have the heart or the will of the teams of the ’60’s and ’70’s that made them so great and aggravated the hearts of Giants fans like me. This team has no Ron Cey, Davey Lopes or Mike Piazza, certainly no Steve Garvey or Tommy Davis, mercy sakes no Orel Hershiser, Don Drysdale or Sandy Koufax. Those players were warriors, not ciphers regulated by baseball metrics or platooning. Those guys only knew one way to play and that was all-out. The Dodgers are a young team and some of their first to fourth year stars eventually may equal or exceed former Dodger greats in reliability and character. But

They have been abandoned, left behind, surrendered, not because of anything they did but because their owners failed them. Lucy was one of those unfortunate dogs. Abandoned, unspayed, living on the street with a litter of puppies. She had to find food for herself and the pups. Not all of the puppies survived. Lucy was rescued when she was about 7 years old and taken to a foster home. Sweet, calm and quiet, Lucy is dog and cat friendly. She has been spayed and vaccinated, and she is on regular heartworm prevention. To adopt Lucy, please visit START’s website. An online application is available. Honey, a pretty tan lab mix, was living under a house with her ten newborn puppies. Although she was being fed by people nearby who felt sorry for her, she had another serious problem that needed attention. One of her front legs had been severely injured when she was hit by a car. Honey and all 10 of her puppies were rescued! This adorable little guy looks a lot like his mother. She has had surgery for her leg which could not be saved, but she recovering and getting around very well. Mother and puppies will be available for adoption after they have been spayed and neutered. Venison Shepard’s Pie

Its hunting season again, and the cool weather takes me back four decades when I shot my first deer at twelve years old. I could butcher my own deer by the time I was sixteen. My older brother got me involved early on since our dad was an avid hunter. I took down a handful of deer in my years, but by the time I moved to Hawaii at twenty nine, I gave up shooting animals with a gun, and began shooting with a camera. I still had the eye, and the patience that hunting taught me, but I literally stopped hunting cold turkey. I still enjoy cooking and eating wild game, but mostly I enjoy thinking back to those priceless years I spent with my older brother being shown the ways of the woods. At that age, it was some of the best times of my life. Venison is very lean, but it can have a gamey taste depending on the age of the deer. Usually, the old moto stands, the younger - the better. The dish I chose for this article was inspired by one of my staff who had given me a pack of fresh ground venison. Some of the meat I made hamburgers, and the rest I decided to make something unique, Venison Shepard’s Pie. Shepard’s pie or cottage pie as it was originally called centuries ago was made from leftover roast meat, beef, lamb or mutton. Cottage is a word that refers to a place where rural workers dwell. Once potatoes became known as an edible product and affordable for the poor, Shepard’s pie was a way to use potatoes, and ground meat. The old style recipe had potatoes on the bottom, and the top with meat and veggies in the middle. The modern way is to have the potatoes on top, and baked to create a crust. MY Venison Shepard’s Pie recipe is a wonderful way to use the venison that might be fresh or bagged during the hunting season from the previous year’s hunt. It’s a simple recipe that will feed the family at a menial cost. Serve it with a nice salad, and a glass of your favorite red wine, and you have a fulfilling meal fit for anyone. ENJOY!

Venison Shepard’s Pie Recipe - Meat Filling -

Ingredients: 1 ½ pounds venison, ground 1 cup onion, chopped 1 tablespoon garlic, minced 2 carrots, diced small 1 teaspoon sea salt ½ teaspoon fresh black pepper 2 tablespoons flour 2 teaspoons tomato paste 1 cup chicken stock 1 teaspoon Worcestershire 2 teaspoons fresh rosemary, chopped 1 teaspoon fresh thyme, chopped ½ cup corn kernels ½ cup frozen English peas 1 ½ lbs. Russet potatoes, cubed ½ cup whole milk ¾ teaspoon sea salt ¼ teaspoon fresh black pepper 1 egg yolk

Method: • In a medium pot heat the olive oil and add the onions, carrots and garlic. • Stir and cook for 2 minutes. Add the venison, salt and pepper and cook till the meat is fully cooked. • Add the chicken stock, corn, and peas. Stir to incorporate. • Cook for 2 minutes, and add tomato paste, flour, all herbs and Worcestershire sauce. Cook and stir for 1 minute. • Taste to adjust seasoning. Preheat oven to 400 degrees. • In another medium pot bring enough water that covers the potatoes to a boil. Add a little salt to the water, about 1 teaspoon. When the potatoes become tender, about 5 minutes on a rapid boil, drain. Return to the pot with fire off and add the milk, butter, salt and pepper. Use a potato masher and make smooth. Fold in the egg yolk. • In a baking spread a very little olive oil on the bottom, and add the venison mixture. • Spread gently the potato mixture and make sure all the ends are covered. • Bake for 25 minutes or until potatoes have a golden crusty top. • Let rest for 10 minutes and Serve Hot!

Even though some might like to say we have a tropical climate, in reality we have a temperate climate here in South Louisiana. We have four distinct seasons throughout the year. As we approach the end of fall, cool fronts will continue as winter approaches and we all know that it will freeze from time to time. Plants don’t necessarily respond in the same way as people do to cold weather. They respond to certain environmental cues that occur every year like the shortening of day light, the change in quality of light, and decrease in temperature. Things get a little interesting when you start growing plants from Will Afton different growing climates. We have all experienced plant death from freezing temperatures in our gardens. Those beautiful tropical plants like hibiscus, mandevilla vine, and bougainvilla are not native to southern Louisiana and therefor are not able to prepare for the winter time like our native trees, shrubs and flowers. They will need some assistance in order to keep them from freezing. You will need to cover tropical and semi tropical plants with something to help keep the plants above freezing temperatures. You can accomplish this by using several different types of material. Plastic, frost cloth, Agri-Bond™, and household bedding are all effective. The trick is to make sure that you are covering them to the ground on all sides. The idea is to cover the plants late in the afternoon on the day before. By covering these plants we are actually making a temporary greenhouse and using the trapped heat inside to give tender plants some protection from damaging frosts. Last but not least, remember to remove the coverings as soon as temperatures begin to return to normal, especially if you used plastic type materials. The Other Holiday Plant Many of us think about evergreens, poinsettias and Christmas trees when it comes to this time of the year. Through all of the different shapes and colors of poinsettias, there is still an old favorite that many people like to give and receive during this time of year. Schlumgergera truncata, the “Christmas Cactus”, is in the forest cacti group. Many of the members of this group are naturally epiphytic, meaning they use tree limbs and other plants to support themselves in order to absorb light for photosynthesis. The Christmas cacti have flattened segments (about 1.5 -2 inches long) that resemble leaves. The blooms come in several different colors including: white, pink, red and purple. The plant gets its name due to the time of year when it flowers because they typically bloom from mid-November to late-January. One of the most common questions I received regarding the Christmas cactus plant is how do you get it to bloom after the first year? Most all of us know this particular plant as a houseplant which rarely ever makes it outside. With that being said, it will typically stay at the same temperature whether it is summer time or winter time. The trick to getting Christmas cactus in bloom is to simulate the original growing conditions to where there are originally from. Starting in June, move your Christmas cacti outside to a shady spot. Provide enough water so that the soil is able to dry out between waterings. By mid-September, let them dry even more between waterings. The next step is cool weather. Flower buds are initiated with cool night time temperatures around 55°F. Once the flower buds start to open up feel free to bring the cactus inside so that everyone will be able to enjoy! Also, make a note that they are easily propagated by stem cuttings. Growing plants from stem cuttings make for an excellent children’s activity.

WHEN MAN THROTTLES NATURE, TAKE IT INSIDE There are times it doesn’t matter what the conditions are or how much you’ve researched your trip. You may only catch a couple of fish or even get skunked. Lake Pontchartrain is being affected by the dredging underway in the lake about two miles off the shore. The fish that normally hug the shoreline on the north side are swimming around the dredging areas and congregating on the south shore. Fish like muddy water if it is created by Nature; man-made muddy flow is a no-no for them. Even a small dredging operation can mess things up in a big body of water like Pontchartrain. So it is Mr. Green’s thoughts to go inside and fish freshwater for a while. Suggesting a white perch search is premier in his mind. In fact, using Mo’Glow crappie baits by Bobbie Garland in a 1/16th or 1/32nd weight is his answer to harvesting a goodly number of these delicious pan fish. The rules for freshwater fishing follow those for brackish or saltwater - check the area for water depth, water movement, hiding and feeding structure and water cleanliness. Look for grass and keep the sun behind you to see your fishing areas in a better light. There’s a lot of trees down in the bayous and cuts inside. Green recommends fishermen cast outside of the tops of those partially submerged trees to search out the one to two pound slabs for best results. With the water “flipping over” from hot on top to hot below, cooler water on top, the fish are closer to the surface, even in 15 feet of water that can be found on the northshore. “Freelance” your casts, moving among the tree tops in the water but avoiding the branches that can rob you of your artificial bait. Use 4 to 6 pound test line. Fish the stumps closer than the tree tops and use spinner baits in your offerings. Fishing inside is more of an art because of the number of obstacles you encounter: stumps, branches, tree tops, floating logs, etc. If you haven’t worked on your casting during the year, your results will be less satisfying because you won’t be able to place your lure in the best possible location enough times to get a larger fish. Jigging the bait is okay but that’s almost cane fishing in this scenario. Work your rig like you’re fishing specks in the spring and you’ll get more of the results you’re looking for. This might be the best time of year to fish, with cooler weather, stable weather, little humidity, water movement and a chance to get your family to go on an outside adventure without the threat of too many bugs or too unpredictable weather. Most families are already into outdoor activities such as football and other participation sports and the fall always encourages activities while leaving the summer oppressive weather behind and doing things before the holidays hit and what passes for cabin fever sets into south Louisiana.

DESPITE AFFLICTION, CLARK REMAINS OPTIMISTIC HE CAN HELP FIND A WAY TO BEAT ALS As sad as the present San Francisco 49er situation reflects its immediate past, the sadder situation involves one of the most beloved players to wear the red and gold. In 1979, Dwight Clark was drafted, along with Joe Montana and others, and the team’s first two years with these future Hall of Famers were rough, to say the least. I must salute the rowdy New Orleans Saints for their role in turning this team around in 1980 when they led the 49ers, 35 to 7 at halftime in a Candlestick Park contest. Hearing the Saints players pounding on their common locker room wall, yelling“70 to 7!”, 49er coach Bill Walsh simply told his team “are you going to let that happen or do something in the second half to change it?” Better than a Knute Rockne pep talk, the 49ers roared out of their locker room and won the game in overtime, 38 to 35, inspiring a move towards their first Super Bowl appearance the next season while the Saints fans were relegated to bag heads. In 1981, I accepted the position of General Sales Manager of an AM/FM radio station company in New Orleans and after being embarrassed by a 48 to 7 whipping of LSU by Tulane, I was given a media press box pass to attend the last game of the 1981 NFL season, a Saints home game against the 49ers. San Francisco won the game easily and I was allowed locker room access to the team as they celebrated their inclusion into their first post season action in nine years. Trying to interview Joe Montana proved to be impossible with so many media types surrounding #16. I turned to see who else was available. I interviewed kicker Ray Wersching, defensive back Dwight Hicks and his Hot Licks (rookie defensive backs Ronnie Lott, Eric Wright and Carlton Williamson) and then saw an unassuming guy not much bigger than me. Dwight Clark was standing by himself, ignored by the other media. I walked up to him and congratulated him for his Clemson Tigers winning the national championship in college football that year. Clark seemed surprised and told me I was the first reporter to say anything about that. We spoke for a few minutes, I wished him luck in the playoffs and my final words to him proved prophetic.“Dwight”, I said, “I don’t know what it will be but I have a feeling you will have a great moment or two in the playoffs,” A few weeks later, sitting in an Oklahoma City airport bar, waiting to return to the Big Easy, I risked missing my flight to watch the last minutes of the Dallas-San Francisco NFC Championship game. Number 87, an average speed receiver, made a move in the back of the north end zone at Candlestick Park and caught a desperation heave from Montana to take the lead against the Cowboys. That moment was and remains the defining sports moment of my life. “The Catch” is one of the most iconic plays in professional football history. It took San Francisco off the loser’s snide and began a decades-long dominance in the NFL that only Dallas, Pittsburg and the New England Patriots have matched. It rescued the collective psyche of the San Francisco sports fan from decades of being the kid on the beach who had sand kicked in his face his whole life. It gave us pride and a bit more than swagger. It made my Dallas-based Braniff flight from OKC to Dallas insufferable for Dallas fans and they really deserved it back then. I ran across a Cincinnati Bengals fan at the DFW airport while waiting for my New Orleans flight and we toasted our Super Bowl teams. It was a Happy Dance moment. But there is no more Happy Dances for Dwight Clark. Dozens of former teammates and Niner personnel gathered at Levis Stadium last Sunday to pay what might have been their last visit to Dwight Clark. Clark has ALS, a disease Saints fans are ‘way too familiar with. Clark’s affliction was diagnosed in 2015 and although #87 looked good as he waved to his friends and fans, it was his words that said he wanted to see his friends “one more time”. The 60 year-old Clark said he thought football activity might have entered into his situation. He made his ALS announcement on March 19th of this year, the 40th birthday of Steve Gleason, the former active Saint player to be diagnosed with ALS. And, like Gleason, he’s doing all he can to fight and help find a cure for this affliction known as Lou Gehrig’s Disease. It’s Steve’s and Dwight’s now and we can only wish them the best in their efforts to capture another day away from its grip.

Although Wells said he was “honored” to be selected for the award, “since this award is tainted with the dishonorable actions of the NFL and its players, I cannot accept it. To do so would be hypocritical.” Instead of privately meeting with Mr. Wells to discuss the issue, the Saints issued a lengthy public statement blasting the retired Navy Commander. According to the Saints organization, Wells chose to “distract from awareness we hoped to build throughout our community.” Really, the team is criticizing a disabled veteran with over 20 years of service to his country for having the audacity to “distract” from their great “awareness” building. Instead of awareness, the team is building community resentment by their disrespectful protests. The Saints also called Wells’ actions “unfortunate and disappointing,” and “sad and divisive.” In reality, the Saints players are disappointing many of their fans and being divisive by allowing these protests to continue. The team is coddling spoiled stars who are paid millions of dollars to play a game. These stars are not the victims of discrimination and most of them are clueless as to why they are even protesting. According to Saints safety Kenny Vaccaro, the players are bringing “awareness to a cause.” What cause is that Kenny, communism or police hatred?

The protests have no place during the Saints pregame ceremonies. This is a time for both players and fans to show respect for America, sing the National Anthem, honor our military and first responders, and not engage in political statements. If players want to protest alleged social injustice, they should do it during their free time, not during games that hard working fans pay big money to attend.

The NFL owners should have taken a firm stand against these protests at their last meeting. The Dodgers also don’t have the field management or the front office acumen of the Astros. Need a winner? Throw money at it. Houston beat the Red Sox, Yankees and Dodgers to win this World Series and those clubs are the biggest payroll teams in baseball. They’ll remain in the hunt for the big prize but right now don’t bet against the Astros. The Washington Nationals? Led by underachiever Dusty Baker, the Nats were like gnats….lots of hitting and pitching, but metrics killed their pitching like its killing the Dodgers. Play ball, not statistics. Give me Elroy Face instead of Facebook, Orlando Cepeda instead of cybers. Get the fun back into the game and return the cavemen to the mound. This sport has turned into the kids living in their parent’s basement generation, complete with safe rooms and teddy bears. Complete games shouldn’t be a once a season event and 250 to 300-inning seasonal performances should be achieved every year, along with at least three or four 20-game winners. Overpaid players and underutilized personnel means baseball still sucks. At least the American League knows how to put runs up on the board and have pitchers extend their mound visits past 69 pitches. Give us a break!

TIDE ROLLS IN, TIGERS ROLL OUT….AGAIN There were no thoughts of playoff positioning the week before the LSU/Alabama game. The Tigers know their place in the SEC this year better than they have in the past 11 seasons: Good, but not great, improving but not complete, tough but not dominant, mentally focused but not willful. However, the Tigers took their 24 1/2 point underdog role seriously and for the first time in a long time, pushed the Tide back out to sea time and again. The Tigers made four ‘Bama players hurt enough not to return to the field Saturday night but the Big Hurts was the difference. If Jalen Hurts had been LSU’s quarterback Saturday night and Danny Etling had worn the Crimson and cream, the Tigers would have won. They were a better team on third down, defensively, they held ‘Bama to season lows on offense and defense and outrushed the Tide. But they don’t have a polished or sophisticated passing attack and so they have one that is erratic and undependable. LSU’s offensive line held firm; their freshmen starters became sophomores against the usually strong Alabama pass rush and run defense. But they didn’t have a quarterback that could help them like Hurts…or others of his ilk, who can read the field, pick out secondary receivers, air it out accurately and scramble when necessary.

The Tigers usually battle the Tide tough and on the field conflicts Saturday night were as often as not won by the Tigers as they decided not to take any guff from this team. However, the personnel is not right for the Tigers to not only reach parity but to begin to take the advantage in this series, despite the presence of Nick Saban. They won’t beat the Tide next year either with Myles Brennan behind center because this kid doesn’t have mobility. The Tigers have one player at the position who might do the job and that’s the former St. James dual threat quarterback, Lowell Narcisse. Narcisse has had injury problems but physically he is similar to the 6’2”, 218-pound Hurts, coming in at 6’3” and 228. How dedicated he is, how football savvy he is, how coachable he is are still factors in the air. But the Tigers consider the 6’5” Brennan the second coming of Zack Mettenberger, “The Mett-siah”, who never quite got there, even with Odell Beckham and Jarvis Landry as prime targets. I don’t think Brennan will either. And ‘Bama will eat this kid up next year, like a lion bringing down a gazelle. Except Brennan is no gazelle more like a giraffe. The Tigers need the versatility of a tiger at the quarterback position to bring down the Red Elephants of Tuscaloosa. They need a little more intensity in recruiting, a little more personality and assurance similar to what’s offered in Tuscaloosa.

Coach Orgeron alluded to the fact that Nick Saban has had ten years in Tuscaloosa while he’s only had one in Baton Rouge. It’s a valid point but Red Bull and a raging bull does not equal focus, The Process and discipline. Orgeron has been dealt a lousy recruiting hand by Les Miles and it will take him time to right the ship. But rumbling off snippets of sentences and rambling on about obvious problems does nothing for the Tiger Nation. We don’t, for example, need to hear about two defensive linemen who will not suit up for LSU this year as to their fitness and condition. We need to hear more about the development of young linemen and their learning curves, the maturing of a green linebacking corps and the apparent jelling of a suspect secondary last September. We’d like to hear about those things in complete sentences and paragraphs, not barked out in a slew of verbal stew. Coach O is so much a better speaker than Miles, who never met an English teacher or grammar course he could be comfortable with. That says more about Miles’ retarded speaking style than it does about Orgeron’s bayou blustering. But Orgeron needs to slow down a little, be a little more conversational and personable and make us feel a little more confident about the Tigers’ fortunes down the road. In other words, we need short documentaries, not sound bites spoken on the run. It was even revealed that a Tuscaloosa broadcast station runs subtitles with Orgeron’s camera appearances. So it’s just not me speaking here. Speaking of Miles, the CBS experiment with the former Tiger coach failed miserably Saturday. Miles could do a few cutesy and doofus things while coaching that gave him a goofball following, but his lack of verbal skills, sophisticated football insights and inability to jell with his co-hosts had those two gentlemen doing everything they could to get a little life in the halftime show. I guess Miles thought “if Lee Corso could do it, I can do it!” Wrong, Les. Just like your efforts to return to meaningful coaching. I guess not listening to people who tried to steer you into a better way of communications all these years has finally borne the bitter fruit of living off your retirement ten years earlier than you hoped. None of this matters without talent and tenacity and the Tide showed both, as usual, in Bryant Denny Stadium last weekend. This ‘Bama team has similar defensive stats to what they had last year, even without the best all time college defensive line to ever take the field, which they had in 2016. It’s not even close. Nor are the linebackers of the usual Alabama quality. The secondary is. So is the offensive line, the presence of an All American receiver, several bruising runners and the biggest difference of all, a quarterback that has transcended “game management” quality and become a truly dangerous option player similar to All Americans in the Big 12, Pac 10 or Big 10. That hurts and that’s Hurts. As in Houston native Jalen Hurts, one of a half-dozen scary good college signal callers, who started for Alabama as a true freshman last year. Of course, the Tigers wouldn’t allow a true freshman to start when you reflect how badly the Tigers recruit this vital position. A freshman is lucky to see the field his first two years in Baton Rouge and then we get the mediocre play Tiger fans are so used to seeing for most of the past 15 years.
