SIRLOIN & ASPARAGUS WITH COMPOUND BUTTER Jeremiah Oschwald of Overland Pioneers launches a new video series to document and share delicious, elevated, simple dishes. Enjoy this first episode of a fun cooking series where the focus is on using 10 ingredients or less but using higher quality food to have a better overland dining experience. The new Galley Sytstem on Jeremiah's Xventure trailer serves as the backdrop and workshop for this video series.

For the Steaks –
Seared Sirloin Steaks with Asparagus Spears and Garlic & Thyme Compound Butter by Chef Tim Horst 4 8 - 10 oz NY Strip Sirloins 2 Bunches Asparagus, woody ends removed Sea Salt Fresh Black Pepper Extra Virgin Olive Oil For the compound butter: 2 Sticks (1/2C) unsalted butter, softened 2T Fresh, minced Garlic 1T Fresh Thyme, chopped (can substitute dried thyme) Prepare ahead of time – Place the softened butter in a bowl Add garlic, thyme, ground sea salt and pepper to taste. Beat until smooth and evenly dispersed, but not melted Place a 12 inch piece of saran wrap on the counter, and spoon butter mixture into the middle of the end of one side, near the edge, leaving about 1 ½ inches to the edge. Fold the edge over the butter mixture until it meets the plastic. Smooth out so that the mixture begins to form a tube about 1 ¼ inches wide and 10 inches long. Roll the mixture up and seal the ends. Place in the refrigerator to harden. Wash asparagus and store.
Heat the griddle or pan. Place about a teaspoon of Olive Oil on each steak, and spread it. Season to taste with salt and pepper. Turn over steaks and repeat for the other side. Test the griddle for heat by dripping some water on it. If the water bubbles up and “dances”, you are ready to start. Place each steak on the griddle. After 2 minutes, turn the steaks. They should have a nice brown, even sear. If not, wait an additional minute or so. Once turned, make room on the griddle and add the asparagus. Add a little olive oil to them, plus salt and black pepper. Turn occasionally and cook about 4 minutes, or until done to your liking, mixing the asparagus into the steak drippings as they ook. Check the doneness of the steaks. To check for medium rare, make a fist with your none dominant hand, touch the fleshy part of the back of your hand at the base of the bottom of the V where you pointer and thumb wrap. The softness of that part when you are making a relaxed fist resembles the softness of rare meat. Remove the steaks and allow to rest. Remove asparagus and cover to keep warm Slice compound butter into disks about a ⅓ of an inch wide. Slice steaks and top with butter disks to melt. Serve with Asparagus.

The Wisconsin Overland campouts are a great way to see many styles of camp cooking and check out different pieces of camp kitchen gear in action. You will see everything from the trusty old Coleman white gas stoves, newer backpacking stoves, ovens, griddles, and the ubiquitous skottle. Everyone has a unique way to make coffee, too. In the misty morning as people are beginning to stir, out come the cowboy coffee pots. percolators, french presses, pour-overs, pods and aero-press devices. Here are a couple of our favorite recipes from past issues.
BISCUITS & GRAVY Jill Carr @1941_adventures Biscuits & gravy Breakfast sausage 2 TBSP flour 1-2 cups milk Salt, pepper & garlic powder to taste Biscuits Brown 1/2 to 1 lb breakfast sausage in a skillet and remove from pan leaving grease for the gravy. Add 2 to 4 TBSP all purpose flour to the pan and stir with a whisk or fork. Cook for 1-2 min but do not allow it to "Brown." Gradually whisk in 1 to 2 cups of milk, or more as needed while constantly stirring until you get the consistency you prefer. Add back in the sausage. Add salt, pepper, and garlic powder to taste. Pour over biscuits. You can make home made or use the store bought kind in the tube. We prefer to bake them in our Omni Oven, or our Coleman Camp Oven.
EGGS IN A POCKET Cindy Pope I make this in a Kovea Mini I got from Artemis Overland but I imagine it would work in any skillet with a lid. Make more or less depending on the size of your cooking vessel and how many you are feeding. Eggs in in the Pocket 1 can of hash or finely diced potatoes & breakfast meat(s) of your choice. 6 eggs Sautee' the hash on medium heat until it starts to brown. With a spoon, make 4-6 egg-sized indentations in the hash and then crack an egg in each divot. Cover and cook until the eggs are desired doneness and hash is crispy.
Midwest overlanding & off road expo recap by Jason Fletcher, all things overlanding You may or may not have heard of the MOORE Expo that takes place each year in Springfield Missouri. It’s only been around for 3 years now and it’s pretty new in the space of expos related to Overlanding and off-roading. However, the fact that it’s relatively new and perhaps not very well known, does not negatively impact the quality of the show or the number of vendors. The event starts on Friday and runs through the weekend, but the real action begins before the doors ever open. Vendors bring in their gear and show vehicles to spotlight the amazing stuff they make or sell. The atmosphere is tense, but with laughter permeating the huge space of the Ozark Empire Fairgrounds, anyone who is lucky enough to be a part of the set up of the booths knows that it’s going to be an amazing event.

Like most large events like this, by the time the public rolls in, all of the stress and disaster that may have accompanied the vendors’ travel or set up have subsided and the show must go on. This year, I was there a day early, on Thursday, and as I approached the door to the expo hall, I saw Rob from Revere Overland. He had a hand full of tools and was disassembling his CBI bed rack. He asked if I would mind helping him remove his roof top tent. I said sure and with the help of a couple of other passersby, we got it off. It turns out that he was working hard to install the new full height bed rack from CBI on his 2022 Toyota Tundra so that it would be ready to show off at the Expo. Entering the hall, there were many similar examples. People scrambling to set up their displays. Exhibitors running out to purchase last minute items from the local big box store because they forgot a display for their informational pamphlets or pencils to fill out a giveaway entry form. When the attendees show up, everything seems like it was no problem, but just know that these guys and gals are busting their butts behind the scenes to make it the best expo you’ve ever been to. One of the coolest things about this event is that there is something to see from all levels of the industry. From manufacturers themselves, to the folks that distribute their products, to the retailers that sell them in their shops, you get it all. Everything from larger manufacturers, to small mom and pop sole proprietors in the Overlanding and adventure space are well represented. Prior to the doors opening Friday morning, Chris Holloway, the creator of the event, comes on the PA system and hypes everyone up. The doors open and people flood into the indoor space. There is so much to take in and so many exhibitors to check out that it’s overwhelming in the best possible way for attendees. Most of us in the midwest also don’t have any access to Overlanding or camping gear that we can see and experience first hand. This event is a great opportunity to check out new or pricey gear you’ve considered purchasing, but couldn’t quite pull the trigger on because you weren’t sure if it would fit your set up.

Parked in a couple of long rows are the “Storytellers,” AKA YouTubers and content creators that make content about Overlanding. I was honored to be included in this group and had a ton of fun talking with subscribers, podcast listeners, other content creators, exhibitors, and more! The other area was an outdoor display area. There’s the SMORR to MOORE rally sponsored by Midland Radios which is essentially a mapped out series of trails that you can take to get some off road experience on your way to the MOORE Expo.
Also new this year was the Recovery Room brought to you by Overland Addict. This was a great addition because I personally spent 10-12 hours a day on my feet, so it was great to have a place to grab a drink and something to eat while enjoying some live music and taking a load off. Whether it’s talking to other Overlanders, seeing old friends, building relationships with gear vendors or content creators, you’ll have a blast at this event. I made a ton of great connections that will definitely open up future opportunities and help me learn more about Overlanding. Overall, MOORE is one of my favorite expos because of the huge number of vendors that you can check out, the “small town” and helpful feel of the event, and the people. Everyone is extremely welcoming and nice and it just feels like home. If you didn’t make it this year, that’s ok. But after seeing what MOORE Expo 2022 was like, I can’t wait to see how amazing 2023 will be!

The “Girl Talk: Ladies Overlanding Roundtable” meant so much to me because of that. I had been scrolling through the courses listed at the MOORE Expo and realized there weren’t any from a woman’s perspective. I immediately called Chris, and the ball started rolling. It was important to me that women in this

Lady.4x4 favorite camp meals The presenters of the Ladies' Roundtable want to thank the MOORE Expo for the opportunity to gather with other overland women at the Expo to grow and learn. We also want to thank the Ladies' Roundtable attendees and hope you enjoyed our discussion and these recipes! -Cara, Misti, Arla, Ashley & Cindy
Cara McClellan DUTCH OVEN LASAGNA INGREDIENTS 2 lbs ground beef 2 cups onion finely diced- 1 large usually 2½ tbsp Italian seasoning blend divided 1½ tsp garlic powder ½ tsp salt to taste ½ black pepper to taste 23 oz spaghetti sauce -2 jars 12 oz shredded mozzarella cheese divided 2¼ cups ricotta cheese ½ cup grated Parmesan cheese 13 lasagna noodles uncooked 1¼ cups hot water 1 tbsp fresh basil or parsley chopped (optional) ( We used a 12" Dutch oven.)
DIRECTIONS Outdoor Camp Oven • Heat coals in a charcoal chimney. • Once hot, place 12 coals on bottom (camp table, fire pit, etc). • Nestle camp oven on top of the coals. • Lasagna Construction (see below) • Cover with the camp oven lid. • Place heated coals over the entire lid. • Check for doneness by using a lid lifter, if not done, cook up to an additional 15 minutes. • When done, remove from coals and allow to rest for at least 10 minutes Lasagna Construction • Brown the ground beef, onion, 2 tbsp Italian Seasoning Blend, garlic, salt, and pepper. • Remove beef and add to large mixing bowl, discard any renderings from camp oven. • Add the spaghetti sauce to the beef and mix well; set aside. • In additional large bowl, add the ricotta cheese, ¼ cup Parmesan cheese, 9 oz mozzarella cheese, and remaining Italian seasoning; mix well. • Layer the camp/Dutch oven with four lasagna noodles so that they fit in the bottom; breaking as necessary to fit and fill holes. • Spread 1/3 of meat mixture evenly over the noodles. • Spread 1/2 of the cheese mixture evenly over the meat mixture. • Place five noodles so that they fit on top of the mixture breaking as necessary to fit and fill holes. • Spread another 1/3 of the meat mixture evenly over the noodles. • Spread the remaining cheese mixture evenly over the meat mixture. • Layer the remaining noodles and place over the cheese mixture breaking as necessary to fit and fill holes. • Spread the remaining meat mixture evenly over the noodles. • Sprinkle the remaining mozzarella and Parmesan cheeses evenly over top. • Pour the hot water around the edges of the lasagna. • Cook for 60 minutes. • Check for doneness per cooking method. • Allow to rest for at least 10 minutes. • Garnish with fresh basil or parsley. Serve and enjoy. Notes You can also use a separate 12″ cast iron skillet to cook the beef, onion, and seasonings. For ease during camping, I recommend precooking the beef, onion, and seasonings before trip begins and pre-dividing and mixing the two dried cheeses.
Cara McClellan lives in Arkansas, and you can mostly find her sharing adventures with her husband, Matt. Together, they are the creators behind Ozark Overland Adventures. Recently she started incorporating a weekly podcast into their content. This podcast is called Wander. Wonder. Repeat. For example, if the lid has the number 10 on it, add 21 hot briquettes on top. 5. Let cook for 10 minutes, being sure to check the Taquitos and move them around so they don't burn on the bottom. 6. Camping and off-roading were foreign words to me for a very long time. Even my first experiences with them were less than desirable. Once my 4Runner came into the picture, something seemed to click and it has been a passion ever since. I enjoy the road less traveled. Seeing things that most people may never see in their life. Building a capable rig to get to me to those remote places has changed the way I see new challenges. My main drive as of late, is to help others find their passion in overlanding as well. Just starting out can be very overwhelming and I love helping people gain the knowledge and experience needed to comfortably tackle trails on their own. That has been the inspiration behind the Women’s Wednesday show. I want women to know there are others out there who share the same passions and give them a place to learn new concepts and receive guidance. Hey I’m Arla aka Mrs. Bats Offroad. I love spending time with my little family overlanding and seeing our great country. In January 2019 I bought a new 2018 Jeep Wrangler JKU. David Zemla BUILDING A TIME MACHINE OF MY OWN CONSTRUCTION Bug Out Hauler Build - Part Four The Bug Out Hauler build is winding down with only paint and electrical to wrap before it is roadworthy! Frighteningly close to the Overland Expo West launch date, but looking like I’ll make it. So what has changed since the last installment? Let’s start from the bottom and work our way up. In its initial inception the trailer was to have utility inspired wood flooring, in a nod to weight savings I went with an expanded steel. Couple of challenges arose from that decision. FIrst off, the trailer is 55” wide, meaning a standard 48” wide sheet of steel could not efficiently be used. To make matters worse, I had neglected to take a hard look at expanded steel prices when making that call. Luckily a friend in the materials business took pity on me and not only cut me a deal, but cut the metal to size as well. That could have been an unanticipated $500 hit to the budget.

Big Iron Overland Rally 2022 is happening again on June 10-12, at the Big Brutus historical site in West Mineral, Kansas. This unique overland basecamp event is hosted by the same people who bring us the MOORE Expo. Founder Chris Holloway has booked musicians from all over the country to play over the weekend in addition to the vendors, classes, activities and giveaways scheduled. Photographer Nathan P. Anderson describes his experience at the inaugural event last June. "Capturing moments from the Big Iron Overland Rally has been one of the most enjoyable weekends I’ve had so far as a photographer. The atmosphere is alive with laughter and live music. CAMP WRITTEN BY Cindy Pope The change in the MOORE Expo dates from February to April brought a new opportunity to attendees coming in from all over the countrycamping at the Ozark Empire Fair. One can certainly stay at the many hotels in Springfield, but being able to camp as a community has given a whole new dimension to the event. Sure, you can chat up your favorite YouTuber or Instagrammer at the Expo, but having a drink with them around a campfire or a morning cup of coffee is a completely different experience. Camp interactions just feel more relaxed and intimate. Stories and laughter shared helps to bring new friends closer and strengthens bonds with old ones. Those extra moments feel like a bonus, allowing you to live the MOORE experience not just during the expo hours, but from the minute you wake up until the final goodnights. Another angle on the value of the addition to camping at the MOORE Expo for attendees is the gear swaps that happen in the campground. When someone comes back to camp with a new shovel or solar panel or camp chair- someone gets the old one at a great deal. We picked up a set of traction boards off of someone who upgraded, and a friend got a lightly- used Trasharoo after another one bought a new, waterproof one by Last U.S. Bags. I initially thought that used gear sales and swaps could possibly be detrimental to the vendors trying to sell new items but soon realized that some people are able to buy more things after getting rid of old stuff by selling or trading. Looks like a win-win all around. We also enjoyed being able to bring our dogs to camp and the convoy down from Michigan, Illinois and Wisconsin was a hoot- our line of rigs was breaking necks for hundreds of miles. Can't wait for next year, now that we have a shovel (if you know, you know.)
