Do-Little Crab Cakes

The New Year has begun, and ‘tis the season for fresh crab. Simply delicious crab patties are very satisfying and ready in minutes.
I’ll bet you’ve all made New Year’s resolutions; ready and willing to make changes for the better. As the weeks progress, the resolutions we made, the promises fade, and dreams begin to dissolve. So the solution is simple. It’s all about you, baby!
This is a great opportunity to begin eating well and becoming a healthier, happier YOU.

• 3/4 cup fresh crab meat
• 1 extra-large egg
• 1/3 cup Italian bread crumbs
• 3 tablespoons Parmesan cheese
• 2 tablespoons finely diced red onion
• 1/2 teaspoon sweet hot mustard
• 1 tablespoons Worcestershire sauce
• 1/2 teaspoon chili powder
• 1/2 teaspoon Tabasco sauce
• Salt and pepper, to taste
• 2 tablespoons olive oil
• Tartar sauce or red pepper jelly, to serve
In a small bowl, mix all the ingredients together except oil. Using your clean hands, form crab mixture to make about 7 patty-crab cakes, about 1 tablespoon each.
Coat a large nonstick skillet with oil, and warm on high heat for 30 seconds. Reduce heat to medium, and add crab patties to pan. Brown on one side for about 3 minutes. Using a spatula, gently turn crab patties and cook for 2 to 3 minutes. Serve with tartar sauce or red pepper jelly.
Yield: 7 crab patties
