INGREDIENTS:

1 standing rib roast (about 1/2 lb per person)

1 Tbsp kosher salt

2 tsp black pepper

1 bunch fresh rosemary, divided

DIRECTIONS:

Step 1 - Remove rib roast from packaging and place in a large roasting pan. Let come to room temperature, about 30 minutes

Step 2 - Preheat oven to 450º Generously season all sides of rib roast with salt and pepper. Arrange roast in roasting pan fat side up. Arrange half of the rosemary in bottom of pan around roast.

Step 3 - Roast 30 minutes. Reduce oven temperature to 350º and continue to roast until an instant-read thermometer inserted into thickest part registers 110° for medium-rare, about 1 hour 30 minutes more (Plan on about 15 minutes per pound )

Step 4 - Remove roast from oven, cover with foil, and let rest 30 minutes.

Step 5 - To serve, slice along ribs to remove from roast, then separate each rib Slice roast against the grain Arrange roast, ribs, and remaining rosemary on a platter

If you have any leftovers, wrap and store in an airtight container in the fridge for 5-7 days That’s if it survives past an awesome steak & egg breakfast the next mornig!

PEPPERMINT PEPPERMINT BARK BARK

INGREDIENTS

12 ounces dark or semi-sweet chocolate (about 70%)

3/4 teaspoon peppermint extract, divided

8 regular-size candy canes

16 ounces (1 pound) white chocolate bars or discs

INSTRUCTIONS:

Prep Dish: Line a 9x13-inch baking dish with foil

Melt Dark Chocolate: Microwave 12 oz chopped dark chocolate in 30-second intervals (about 2 minutes), then stir in 1/4 tsp peppermint extract.

Set Dark Layer: Pour chocolate into dish, spread evenly, and refrigerate for 25 minutes until nearly set

Crush Candy Canes: Crush 8 unwrapped candy canes in a bag.

Melt White Chocolate: Microwave 16 oz chopped white chocolate (about 1.5 minutes), and stir in 1/2 tsp peppermint extract.

Combine & Set: Pour white chocolate over dark layer, spread, add crushed candy canes, and press lightly Refrigerate for 35 minutes

Serve: Break into pieces or cut after resting at room temp for 10 minutes.
