Many of the images in this book were photographed on January 7, 2025, the same day that wildfires engulfed Los Angeles, our home city. In the days that followed, we donated clothing and supplies to fire victims, and have continued to support California Fire Foundation , which provides emotional and financial assistance to families of firefighters and the communities that they protect.
This book was printed on carbonbalanced paper with the help of World Land Trust. They protect Earth's most threatened biologically significant habitats by restoring and guarding carbonrich wildlife in the tropics. To date, we've helped offset nearly six million pounds of carbon dioxide by paying to protect nearly 180 acres of endangered rainforest. This is a commitment we plan to continue growing annually. STUFFED TURKEY with VEGGIES & SPICES
By rolling turkey breast around a colorful stuffing of spinach, cranberries, nuts, and herbs, this dish transforms into a holiday showpiece that’s far less intimidating than roasting a whole bird. By pairing it with roasted seasonal vegetables, you can cook everything together in one pan and fill your kitchen with warm, aromatic spices.
Ingredients
–
2 large boneless, skin-on turkey breasts (about 2–2.5 lbs each)
– 3 tbsp olive oil (divided)
3 cloves garlic, minced
– 1 small onion, finely chopped
1 cup fresh spinach (or kale), chopped
1/2 cup dried cranberries (or cherries)
1/2 cup walnuts or pecans, chopped –
1 cup breadcrumbs (or cooked wild rice for a gluten-free option)
– 1/2 cup Parmesan cheese, grated
1 egg, lightly beaten
– 1 tsp salt
1/2 tsp black pepper
– 1 tsp dried thyme
1 tsp dried rosemary
– 4 medium carrots, cut into sticks
– 2 parsnips, cut into sticks
1 large sweet potato, cubed
1 red onion, cut into wedges
– 1 bell pepper, sliced
– 2 tbsp olive oil
– 1 tsp paprika
– 1 tsp garlic powder –
1/2 tsp cinnamon (optional, for warmth)
– Salt and pepper to taste
Directions
– Heat 1 tbsp olive oil in a skillet. Sauté onions and garlic until softened.
– Add spinach and cook until wilted.
– Transfer to a bowl and mix with breadcrumbs (or rice), cranberries, nuts, Parmesan, egg, thyme, rosemary, salt, and pepper. Set aside.
– Place each breast skin-side down on a cutting board. With a sharp knife, slice horizontally, stopping just before cutting all the way through, then open like a book.
– Gently pound to an even thickness with a mallet.
– Spread the stuffing evenly over each breast.
– Roll tightly, starting from the short end, and tie with kitchen twine every 2 inches to secure.
– Preheat oven to 375°F (190°C).
– Rub the outside of the turkey with olive oil, salt, pepper, and a sprinkle of paprika.
– Place seam-side down in a roasting pan.
– Toss carrots, parsnips, sweet potato, onion, & bell pepper with olive oil, paprika, garlic powder, cinnamon, salt, & pepper.
– Scatter around the turkey breasts in the pan.
– Roast for 60–75 minutes, until the turkey reaches 165°F (74°C) internal temperature.
– Stir vegetables halfway through for even roasting.
– Let the turkey rest 10 minutes before slicing.
– Serve with roasted vegetables on a platter for a festive holiday presentation.
