July is for BBQ’s and outdoor fun!!! This month I’d like to share some fun summer BBQ recipes with you. I know it can get difficult to think of things to make when visiting family and friends so here are some fun fresh ideas for you.

Ingredients:

• 3 cups watermelon, cubed • ½ cup shallot, chopped • 3 leaves basil, chopped • 1 small jalapeño, chopped • Lime juice and zest, to taste • Cracked black pepper, to taste Instructions:

Toss the watermelon, shallots, basil and jalapeño together in a mixing bowl. Season to taste with lime juice, zest, and black pepper. Chill at least 15 minutes, then enjoy!

Ingredients:

• 1 lb ground beef • 1 egg • ¼ chopped yellow onion • ½ tsp black pepper • 1 tbsp curry powder • 2 tbsp chopped cilantro • 1 tsp smoked paprika Instructions:

Add all ingredients to a bowl and mix well. Form the meat into patties. Preheat a grill pan or cast iron skillet over medium high heat. Add a bit of coconut oil to the pan, then add the burgers and fry for 3-4 minutes per side, or until desired doneness. Serve your curry burgers with lettuce, with sweet potato buns if you wish. Enjoy!
