Eurest Corner This Month’s Superfood Is… This month’s superfood is FISH! Fish offers a lean protein source that also contains health-promoting omega-3 fatty acids which are known for being good for our hearts and may also boost our moods.

Highlighted Recipes: Lemon Caper Mayo Grilled Salmon Sandwich Ingredients: • ¼ cup fresh lemon juice • 4 tsp capers, drained • ¼ cup light Just Mayo • 4 each, 4 oz salmon filets • 4 tsp ground pepper • 4 each, Sandwich Thins, 100% whole wheat • 2 cups arugula lettuce leaf Combine mayonnaise, capers and lemon juice in a small bowl.

Preheat grill to medium heat. Season salmon with pepper. Grill salmon until internal temperature reaches 145F. Spread caper mayonnaise on both sides of the wheat thin. Add the salmon and arugula to the sandwich.

Arctic Char with Kale and Walnut Pesto • • • • • • • • • •

6 oz Italian Parsley, Chopped 1 ½ ea Garlic Cloves, Crushed 1 Tbsp Walnut Halves & Pieces, Chopped 1/4 cup Almonds, Sliced 2 oz Parmesan Cheese, Grated 1/2 ea Fresh Lemon 1/8 tsp Salt 1/8 tsp Ground Black Pepper 2 Tbsp, 1/4 tsp Canola Oil 4 ea 4 oz. Arctic Char Filets

Pre-heat grill. Meanwhile, in a food processor combine the parsley, parmesan, salt, pepper, oil, lemon juice, almonds and walnuts until it forms the consistency of a thick sauce. Keep any leftover pesto in the fridge. Make sure the fish has no bones and is clean. Brush with oil and car efully place it on the grill skin side down. You should be able to cook it all the way with skin side down until an internal temperature of 145F is reached and the skin gets crisp.

Remove from grill and serve with the pesto.

If so, then show it with personalized license plates. The R&W has NIH organizational license plates for Maryland residents.

Plates are $15 and are MVA Non-logo NIH plates. There is an additional $5 service fee payable to the R&W. It’s easy to order, just fill out an application at the R&W Activities Desk in Bldg. 31, show your NIH ID and R&W membership, and drop off two checks (one payable to the MVA for $15 and another payable to the R&W for $5). Plates take 2-8 weeks to receive.

MD: NOAA Open House – February 10th - On Saturday, February 10th, from 9am – 4pm, explore your world and learn how NOAA, the National Oceanic and Atmospheric Administration, takes the pulse of the planet every day and protects and manages ocean and coastal resources. Your morning routine will take a little longer because you’ll need to get the frost, ice and snow, off of your car windows. Rather than allowing carbon monoxide to build up as you wait for the windows defrost, scrape and brush those windows clean with an NIH ice scraper, $3 at the R&W gift shops.

R&W Tax Preparation Service It’s that time of year again but don’t fret, we can help! The R&W is sponsoring our annual Income Tax Preparation Service through an independent accounting firm, Teti and Carswell. R&W Club Frederick Bus Trip to Longwood Gardens Join R&W Club Frederick on their trip to Longwood Gardens, an American botanical garden consisting of over 1,077 acres of gardens, woodlands, and meadows in the Brandywine Creek Valley of Kennett Square, Pennsylvania. The trip is $135 and includes lunch, entrance to the gardens, and roundtrip transportation. The bus will pick up at 8:30am in Frederick at 5202 Presidents Court.
