Contents

This is the 19th annual survey of the UK food and service management industry, conducted by the British Hospitality Association and sponsored by Nestle FoodServices, and uses statistics compiled at the beginning of this year which relate to the operating year ending in 2006.

The survey is based on responses by the major companies in the food service management industry (17 in the current year).

As these include almost all the major contractors, it is estimated that it represents between 90-95 per cent of the total UK contract catering market. It is widely accepted that these figures are the most accurate statistics available but the sample base changes every year as a result of company mergers, acquisitions and re-organisations.

Not all companies are able to supply complete information and some calculations and estimates have had to be made.

Table 11: Branded outlets operated by food and service management companies, 1994, 1999, 2002-2007 Branding is the principal means by which FSM companies have achieved their success in recent years. It has encouraged the move towards more casual eating and highlights the influence of High Street trends, emphasising the importance now placed on more sophisticated consumer marketing and merchandising methods. It is significant, therefore, that the number of High Street branded outlets almost doubled in 2007, indicating that they are becoming a more powerful tool at the disposal of FSM companies; at the same time, the number of in-house brands declined; this may be due to some under-reporting but it may also be the result of operators switching from in-house to High Street names.

Table 7: Types of catering contract, 2005-2007 This table graphically illustrates the shift in food and service management in the last few years; indeed, cost-plus contracts represented over 60 per cent of the market in 1994 but this has declined to just under 28 per cent. Over 70 per cent of the FSM market is now commercially based – a trend which has clearly continued in the last three years. Although the figures relate to contracts, not to outlets, we have aggregated the outlets for consistency of comparison.

In nearly every case, the contract was dependent on the investment – another sign of commercial pressure being exerted on the part of clients. Not all the investment was made by the largest companies – approximately 10 per cent was made by smaller operators.

In 1982 as a First Class Bachelor of Arts Graduate in Jewellery, he embarked on an adventurous one year’s scholarship to India and, aged only 22, was honoured with the commission of a lifetime to create a richly bejewelled crown set with 25,000 diamonds. It was for the idol of the famous Hindu Temple, Tirupati, and before he could start the project he had to be blessed by the High Priests of Tirupati, while dressed in a ceremonial cloak previously worn by Mahatma Gandhi.

On his return to the UK he later established the world’s first specialist diamond and jewellery consultancy (Grant Walker from 1984 -2000) offering bespoke innovation and technical project solution to international diamond and jewellery brands, including De Beers, World Gold Council, Dunhill, Wedgewood and Links of London. He also established diamond and diamond jewellery trading relationships with the leading diamond retailers of USA, UK, Japan, Hong Kong and Middle East. He then spent much of the past 10 years (2003 – 2011) as a Director of H. Goldie & Company, a leading Diamond Trading Company diamond broker of more than 125 years old. Advising to and business building with several of the world’s leading diamond manufacturers, all with a collective turnover of more than £2 billion.

THE DIAMOND STORY Most of us know the song line “Diamonds are a girl’s best friend”, made famous

by Marilyn Monroe in the 1950’s but the mystique goes back much further in time.

Diamonds have only ever generally been found in a few isolated locations, scattered among the oldest part of the continents. For thousands of years the only source known to man was one remote area of India, where diamonds were first appreciated for their capacity to disperse light.

The first documented but modest discoveries of diamonds were made in Borneo in the 7th century but it wasn’t until a seemingly (by today’s standards) insignificant find in Brazil in the 18th century that diamonds were coveted. The ruling Portuguese marked the occasion with great rejoicing. Festivals and processions were staged in Lisbon, special masses said, and messages of congratulations sent to the Pope and European Monarchs.

More celebration came in 1866, when a significant source of diamonds was discovered in South Africa. Strangely, it owed nothing to the art of energy or the world’s eager prospectors. A farmer’s child was playing with some stones beside a river and one was later recognised as a diamond. This diamond was appropriately named ‘Eureka’ and marked the start of an amazing new chapter in the story of diamonds.

In 2011 the diamond mines of South Africa exported by volume approximately 6,655,000 carats (a carat weighs one fifth of a gramme) and by value circa £867 million of rough diamonds. billion. Between 2009 and 2011 world production has increased by only 3% and yet values have increased by 74%.

roadracer Fixed-gear bicycle (or fixed-wheel bicycle, commonly known as a fixie) is a bicycle that has a drivetrain with no freewheel mechanism. The freewheel was developed early in the history of bicycle design but the fixed-gear bicycle remained the standard track racing design. More recently the “fixie” has become a popular alternative among mainly urban cyclists, offering the advantages of simplicity compared with the standard multi-geared bicycle.

Most bicycles incorporate a freewheel to allow the pedals to remain stationary while the bicycle is in motion, so that the rider can coast, i.e., ride without pedalling using the forward or downhill energy of the bike and rider. A fixed-gear drivetrain has the drive sprocket (or cog) threaded or bolted directly to the hub of the back wheel, so that the rider cannot stop pedalling. When the rear wheel turns, the pedals turn in the same direction.[1] This allows a cyclist to apply a braking force with the legs and bodyweight, by resisting the rotation of the cranks. It also makes it possible to ride backwards although learning to do so is much more difficult than riding forward.

As a general rule, fixed-gear bicycles are single-speed. A derailleur cannot be fitted because the chain cannot have any slack, but hub gearing can, for example a Sturmey-Archer fixed-gear 3-speed hub,

in which case is a fixed-gear multi-speed arrangement. Most fixed-gear bicycles only have a front brake, and some have no brakes at all.

The track bicycle is a form of fixed-gear bicycle used for track cycling in a velodrome. But since a fixed-gear bicycle is just a bicycle without a freewheel, a fixedgear bicycle can be almost any type of bicycle.
