President’s Message Greg Miller, CCE, President

As with many of you, we are working 24/7 preparing and working events. This time of year we don’t have a lot of time for tuneups and breakdowns, although they happen everyday. I read on Facebook everyday about friends who have engine problems, transmission problems, and numerous other issues. Do you ever wonder how we survive? Instead of using the words “there’s an app for that,” we can use the words “there’s a tool for that.” I was looking around the shop and wondering just how many tools I actually have and travel with. I thought the strangest thing I carried was a sink basin wrench. Then, talking to my friend Dennis Lilly one day, I realized he

carried one also. You never know what’s in the truck until you actually start looking for a fixit tool. Of course, we are all part of an industry that transforms a hay field into a city. As I talk about breakdowns, I look at the price of a new dually and wonder how much longer we can afford to purchase 65,000 dollar trucks. Is the day going to come that we all become forty milers? As I have said many times in the past, our bottom line is getting more difficult to maintain. I don’t want to sound like a Negative Nellie, but we need to keep working with our Fair partners to help insure this bottom line. Yes, we may arrive at a County Fair in a superfine dually truck, but remember that we are pulling concession trailers worth more than a lot of people’s homes. We must keep communicating our story and hope that others realize that behind the flash it takes a lot of cash. I don’t have much on my mind this month like most of you; I’m just trying to keep the lights on. Good luck and happy travels. ▲

Alta’s Soapbox Alta Mosley, Executive Director

You either have the best crew in the world or you’re saying, “What was I thinking when I hired this one?” You either have your family with you, As I said last month, or you’re driving 650 miles to see your child play “Time flies when you’re softball. You celebrate joyous occasions such having fun.” Seems that as weddings and mourn the loss of friends and just a few weeks ago we family. This year we’ve seen people come together were getting ready for the in support of others who were involved in tragic NICA Business Expo and accidents, as well as others who were battling the Food Show presented by Fare Foods, and the NICA serious illnesses. It doesn’t matter whether you know them personally or not, they are part West folks were kicking off of the Family and this Family Sticks Together. the Sysco Food Show as The industry as a whole is changing. While we part of the Western Fairs Association meeting. A blink of the eye and it’s embrace some changes, we struggle with others, time for Labor Day festivals and the Fall Fairs. but through it all, the changes are coming. The Everybody has been really busy and working hard task now becomes making that change work for for sure, but can you imagine your life if you were you. What is the solution? doing something you didn’t love to do? NICA was formed 21 years ago with There is no doubt that a Concessionaire’s life the mission of creating a better form of is full of ups and downs; it’s either hot and dry communication between the Fairs and the or rainy and cold; the trucks are either running Concessionaires. smooth or leaving you on the side of the road. ►► “Alta’s Soapbox” continued on page 6 September 2014 NICA News

“Alta’s Soapbox” continued from page 5 ►►

Communication is the operative word today, just as it was then. We can reach out to the Fairs and we can become the driving force of making our situations better. We may not change the world but we can improve our lives; we can make a difference. I read a post from one of my Facebook Friends a couple of weeks ago. He talked about being young and foolish and making mistakes. He came face to face with a person who could have “put him out the gate” for his past mistakes but instead gave him the opporunity to “make it right.” He spoke of how this had changed his outlook on the business, as well as reminding him to do the right thing, no matter what others were doing. He gave recognition to the other person, calling him a “Class Act” all the way. My friends, we can all dig up bones and find fault, myself included, but at the end of the day, what do you have to show for it? What can you be proud of? One of our own Concessionaires sums it up very well with these wise words: “The choices you make in life are what define you as a person.

The ability to learn from your bad choices will prove your character.” Travel safe my friends and remember: “Together We Can!” ▲

Thoughts

From a

This month, NICA News is showcasing the management philosophies of two NICA Members who have earned their Certified Concessionaire Executive designations: Michael Kennedy, CCE & Karon Kennedy, CCE

Michael Kennedy, CCE Old Time Saltwater Taffy CCE Earned in 2009

“The very heart of any successful business is communication. Whether it is in the daily operation of a concession business or in the dealings with help, vendors, Fair Management, or other concessions. Most any problem we encounter in our daily operation can be traced back to either poor or lack of proper communication. Beginning with myself, it is most important I become well versed in whatever I do. That is my responsibility. I am certain anyone who tends to shoot from the hip usually finds himself or herself in some sort of difficulty. In order to become successful, I will draw first on my own experience, and then my peers’ in whom I value their knowledge. I also will call upon those associated in the business such as Fair Management or those with knowledge in our business. With this communication, I am able to make informed decisions on whatever the circumstance. I have, over the years, found it was best to hire a person who could replace me. As an owner or manager, teaching, not training, is the best use of any person’s ability. Teaching allows the employee the thought process that encourages growth and stimulates greater evolvement in the success of any business. A person’s capacity to achieve is determined by their leader’s ability to empower (teach). Over the years I have been most successful in the teaching style of management.”

Karon Kennedy, CCE Old Time Saltwater Taffy CCE Earned in 2009

“Communications are, of course, the least understood part of management. We think we are only communicating when we talk or write. Not so; we communicate every time we smile, frown, grunt, glare, wink, with the clothes we wear, or how we wear the clothes. It’s in most everything we do. I always try to be aware of this in everything I do, working with employees selling the all-important customer. Just thanking a customer or even a vendor is a positive form of communication. Management is an extension of communicating our needs to those who we are working with. My biggest desire is to work with my employees, teach what I know about my business, and instill in them the same ethics I believe. These include managing time in order to arrive on time set up and ready to open, working closely with my vendors, as without them I could do little business, and dealing with Fair Management in a professional manner.“

The CCE application may be downloaded from www.nicainc.org. You may also call the NICA office to request an application be mailed to you. To be considered this year, the application and supporting materials must be submitted on or before October 1, 2014.

How to apply For the CCE Program The CCE program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the Fair and Festival business and indicates that the titleholder will perform with the highest level of professionalism. This prestigious designation is awarded only after a detailed application process has been successfully met. The Concessionaire who is seeking the distinction of Certified Concessionaire Executive must, prior to submitting their application, first meet the following requirements: 1. The applicant must be a current member of NICA and also a current member of one of the following associations – IAFE, IFEA or the WFA and at least one State Association. 2. The applicant must have a minimum of 7 years as a full-time chief operating manager of an independent concession business. 3. The applicant must then complete a lengthy 11-page questionnaire. The questionnaire uses a point system to determine their level of qualifications and industry involvement. They are also required to submit a 150-200 word personal philosophy of communication and management as it relates to the fair industry. The application, along with all of the accompanying documentation, is turned over to the NICA CCE Committee for rating and review. Once an applicant has been certified, said designation shall remain with him/her permanently unless revoked by the NICA Board of Directors. The CCE credentials are effective immediately. The official ceremony of presentation takes place during the Annual General Membership Meeting during Florida Week. 4. The Applicant must fax or physically mail the applications, supporting materials, and $90 administrative fee to the NICA Office by the October 1st deadline.

I enjoy seeing the concession job. I worked at a radio station and needed the business evolve. It’s hard work with long hours, extra cash. I was putting myself though school, yet it is better than being stuck in an office studying to be an electrologist. Dan & Virginia Duggan hired me as their secretary after the radio working 9-5. very expensive to keep my stands looking fresh and new, so I bought my sign equipment to keep the cost down. Every couple years my stands get a new look. I also make my own company shirts and hats. NICA: What’s been the highlight of your career? LP : The highlight of my career would be starting as Dan & Virginia Duggan’s secretary, then after a few short years becoming a partner, and then purchasing the business so I could become the proud owner of Dandy Souvenirs. I tell people (especially women) to take a chance and work hard. After all, I was just a little Mexican girl from the ghetto working as a secretary. It took a long time to earn the respect of men in the business. When I wanted to buy supplies, the men would tell me, “Let me speak with your boss.” Now, everyone knows I am the boss and I worked really hard to be where I am today. I met my long time boyfriend, Tom Stroud, out here working at the fair. I help him with his food concession business and he helps me maintain my equipment. I like to think I’m the strong woman behind his business too. To date, I am the largest woman-owned souvenir company on the west coast. I currently own 26 roll-off souvenir stands and nine kiosks. Currently I am working on some fresh new ideas to expand my business. You will all have to wait and see what happens next.

NICA: What has been most influential to your success within the past five years? LP : Dan & Virginia were always the most influential persons in my success. They are the persons who gave me the chance, have always believed in me, and encouraged me to be the very best person I can be. NICA: What is the funniest thing that has happened in your concession career or through your Concessionaire travels? LP : Everytime I’m working, it’s an adventure full of funny stories. I’ve fallen off my truck and I’ve gone partially bald from stress, but whatever happens, good or bad, I make it into a funny story. I enjoy making people laugh and putting a smile onto their faces. Sometimes I like to have the face painter paint a mustache on my face and I’ll walk around Lucia sporting the Fair, which draws business her favorite and makes people smile and be moustache more friendly. NICA: What do like to do in your free time? LP : I really enjoy going to the movies. When I go to the movies it relaxes me, and I don’t think about anything else going on in my life. It’s my escape. I also enjoy making signs and fixing up my stands. I feel as though I’m working on arts & crafts, being creative.

NICA: How has the Concession business changed since you first started out? What’s something you wish you could change? LP : There is a lot more competition. Too many vendors sell similar items and Fairs don’t monitor

NICA: What do you like best about NICA? LP : I like the discounts that are offered to us from all the different companies.

The NICA Good Neighbor Award Goes to…

Nate Janousek Submitted by Rey O’Day

The NICA Good Neighbor Award will be presented to Nate Janowsek by Rich Brander during the LA County Fair. Enjoy reading the nomination letter below: Date: August 1, 2014 From: Richard Brander Re: NICA Good Neighbor Award Nomination Dear NICA West Council,

Rich Brander, Brander Enterprises, and Nate Janousek, Fun Biz Concessions, visiting at the Texas Donut stand in OC County Fair.

I, Richard (Rich) Brander of Brander Enterprises, Inc would like to recognize Nathan (Nate) Janousek of Fun Biz Concessions for the NICA Good Neighbor Award. Prior to the San Diego County Fair I had two truck drivers back out on me at the last minute. They were lined up to haul my concession trailer with a large truck to the Fair. I then made arrangements for a third driver, but then found out the night before the trailer was to be hauled that the third driver’s truck was too small. After a conversation with Nate about my dilemma, Nate offered to not only lend me his truck to haul the trailer, but to also go with me to pick it up. I would like to take this opportunity to thank Nate and his wife Stephanie for taking time out of their busy schedule during their San Diego County Fair set up to help out a friend. It is because of big hearted and generous people like this in our industry that we are all able to make it from one Fair to another safely and to get set up on time; especially when we are in a tough, time-sensitive situation. ▲ “Retailer” continued from page 15 ►►

NICA: What are looking forward to this year? LP : I have acquired some new Fairs this year: Arizona State Fair in Phoenix, Sonoma County Fair & Exposition in Santa Rosa, Kern County Fair in Bakersfield, and Silver Dollar Fair in Chico. I am looking forward to making new relationships with these managers and being part of their Fair family. NICA: Is there anything else you would like to share with NICA members? LP : I am honored to have been selected for this month’s issue! I hope it gives people encouragement to step out of their comfort zone and become the best they can be regardless of where they came from; hard work really does pay off. Help your neighbor and try to be a better person. ▲

A July Road Trip Through

Northern California Fairs By Rey O’Day, NICA West Executive Manager

After breakfast at the Ferry Building in San Francisco, it was time to cross the spectacular, newly-built Bay Bridge and head to the Alameda County Fair, in Pleasanton, where CEO, Jerome Hoban was there to greet us. In his first year as CEO, he is already making his mark by bringing back the Fourth of July Fireworks Show, making it clear he wants clean, attractive volumeproducing food stands, hosting the Oak Tree Race meet, and producing a community celebration multimedia experience at the end of the evening. His Business Development and Event Operations Manager is Faye Cater. They both express beliefs in professionalism that include principles of fairness and good communication. He has a beautiful canvas that includes grass and trees to begin what he does best: make capital improvements that enhance fairgrounds (see his work at the Orange County Fair). The Fair has a diverse variety of food on which to graze. Kaiser Lola Ramirez, JLQ, serving Permanente “Healthy up Aqua Fresca’s at the Picks” are showcased Alameda County Fair throughout the fair, which I discovered is a very Northern California thing to do. I arrived just after the Alameda County Fair Snackdown. NICA members were serious contenders, but NICA member Anthony Verdone of Cardinali Concessions was the champ and recipient of the gold buckle for his Spaghetti Ice Cream. The Fair was Cardinali Concessions decked out in an array of red, white, and blue Won the Alameda County Snackdown bunting. 18

The Central Washington State Fair The annual Central Washington State Fair, September 19-28, in Yakima, Wash has become the number one family entertainment event in all of Eastern Washington, attracting over 300,000 people to the ten-day Fair in late September. Started back in 1892, the Fair has a deep heritage in showcasing the agricultural products of the fertile Central Washington region. In fact, it was the original State Fair of Washington during the 1900’s. The 20-acre fairgrounds, now known as State Fair Park, is one of the most beautiful and picturesque in all of the Northwest, and every year visitors from around the country comment on the unique beauty of the grounds. With acres and acres of grass and trees, the park-like grounds is the perfect venue for a Fair. And, as it has been for over 100 years, the fruits, vegetables and livestock grown in the region are all on display during the ten-day Fair, creating quite an impressive group of exhibits in the beautifully renovated historic buildings and 14 livestock barns.

Of course the fair wouldn’t be a fair without entertainment. This year the Central Washington State Fair is presenting almost non-stop entertainment at different venues and stages around the grounds. A great mix of music and comedy will be awaiting fans at this year’s Fair. A diverse group of well-known entertainers will be performing during the ten-day Fair including: the blues rocker George Thorogood; 70’s rock group Kansas; country stars Joe Nichols and Neal McCoy; rock band Trapt; rock artist Joan Jett and comedian Louie Anderson. The Fair will also be presenting two days of Latin music featuring A.B. Quintanilla and the Kumbia Kings and a performance by Mexican/ Tejano artist El Coyote. The headline performers will be playing at the Budweiser Stage as part of the U.S. Cellular® Concert Series. Another group of new entertainers will be performing during the Fair at the Pacific Power But there is more to the Fair than just the Community Stage. Scheduled to perform as the agricultural displays. Each year, over 70 different headliners on that stage this year are: musical food vendors present unique and yummy edibles dance group Street Beat; Eagles tribute band Hotel to Fairgoers. For those looking for a unique item and a good California; AC/DC tribute band Hell’s Belles; and Aerosmith tribute band Draw the Line. deal, over 100 commercial vendors participate in “We’ve stepped up our entertainment budget the Fair each year, some set up in tents around the to provide even more for people to enjoy at the grounds, while others fill the giant Yakima Valley Fair this year,” said Fair President and General SunDome with dozens and dozens of booths selling everything from furniture to hot tubs, hand- Manager Greg Stewart. “Our patrons will definitely notice the difference.” made candies to Western art. 20

September 2014 NICA News

Add to that two nights of Sprint Car Races, a Monster Truck Show, and a Demolition Derby, all free with Fair admission, and patrons really get a big bang for their admission. Along with the unique and new entertainment on the Pacific Power Stage, the Fair will feature some other new free entertainment and attractions include the Racing Pigs and the walk around entertainment of Maxx the Robot. Fair favorites returning again this year include Walk on the Wild Side, an exhibit which features a number of exotic animals and reptiles at the Pepsi Plaza. Also returning to Oak Park is the popular interactive display called Barnville, where children can milk a cow, see chicks hatching, and experience other barnyard animals. These will be part of the Fair for the entire ten-day run.

The Fair is also bringing back the favorite mega exhibit “Candy Nation” to Pioneer Hall. This huge exhibit brings back a historical look at all the favorite candy from the mid-1900’s and they will have many of those favorites on sale during the Fair. The Central Washington State Fair also presents one of the best carnivals around. Thrillseekers of all ages enjoy ten acres of midway attractions from Butler Amusements including some of the most current hair-raising rides and challenging games. This year, the 161st Ohio State Fair ran from July 23-August 3, 2014. According to their latest press release, this year’s fair had an attendance of 916,724 visitors, which is a slight increase over last year’s number. Hopefully, that meant better business than normal for NICA Concessionaires! NICA Director Don Kenna was able to take a few photographs while he was there.
